DOLMA
( Stuffed Turkish Grape leaves ) Ingredients : Ground beef Rice Parsley Onion 1 egg Salt & pepper Garlic Bread crumbs Tomato and Red Pepper paste Dried mint Grape leaveYogurt Pita bread
Filling: Knead well till smooth and pasty : ground beef , bread crumbs , crushed garlic , rice, chopped parsley and onion, egg , salt & pepper to taste. Submerge each grape leaf in boiling water few seconds to soften . Stuff grape leaves with one teaspoonful of filling and squeeze in palm to seal .Place several left over grape leaves to cover the bottom of a baking pan , brushed with melted butter . Arrange stuffed grape leaves in the baking pan and cover with six cups of beef stock , tomatoe and pepper paste , chunks of butter . Bake in very slow , low , simmering heat till done.
Serve with plain yogurt mixed with crushed garlic and pita bread .
