Thank you for taking the time to look through West Kentucky Community and Technical College’s fall 2017 Community Education catalog. It’s hard to believe we’re already in our sixth year of creating the catalog. With the great feedback we’ve receive each year, we strive to improve the catalog, including its current online format. As always, printed copies of the catalog are available upon request. We continue to offer a variety of subjects for all ages, many you will recognize and several new choices as well. Community Education reserves the right to limit the enrollments or cancel any class due to insufficient enrollments. For this reason, please register early to reserve your place in the class of your choice. Every effort will be made to notify registrants that a class has been canceled. Registrants may choose alternate courses or receive full refunds. Space in a class is reserved on a first-come, first-served basis when a paid registration is received. Absolutely no saved spaces will be accepted. In order to reduce paper waste, no registration confirmations or class reminders will be mailed.
CANCELLATION/REFUND POLICY Cancellations can be made up to five business days in advance of the class starting date. If your cancellation jeopardizes the minimum number needed to hold the class, no refund will be issued. Refunds generally take about four weeks to process. Failure to attend class does not constitute cancellation. The College reserves the right to cancel any class.

Tots will experience how an astronaut adapts to the unique environment of space. Activities include working in gloveboxes and eating space food.

Expedition: Moon $40, $45 with lunch July 20, 2017 8:30 a.m. – 3:30 p.m. Challenger Learning Center Age: Rising 4th – 7th grade Be among the next generation of space travelers to arrive on the Moon! Campers will Return to the Moon™ as they fly a mission in our hands-on simulator. They will explore just what it takes for astronauts to survive in the Moon’s desolate environment. This is a one-day camp. Rocket Camp $90, $100 with lunch July 12 – 13, 2017 8:30 a.m. – 3:30 p.m. Challenger Learning Center Age: Rising 5th – 8th grade After learning about the basics of rocketry, participants will build and launch several different types of rockets including eggstronaut rockets and model rockets. This is a two-day camp.

Starting with homemade pasta sheets, we will stuff ravioli with three different stuffing and sauces. Menu: Basic Sweet Italian Sausage with creamy vino sauce, Ground Beef and Spinach with marinara sauce, and Sweet Potatoes with brown butter sauce. Our side dish is Southern Italy’s famous Arugula, Parmigianino and Prosciutto Salad. Italian bread will be served with herb butter and olive oil, and our Italian meal will conclude with easy almond paste cookies. Cajun Night $45 September 28, 2017 6:00 p.m. ATB Culinary Kitchen and Bistro Age: Adult Instructor: Anita Granier Anita shares her Deep South heritage with the infamous dish of Cajun cuisine…Gumbo. This hands-on class allows students to make Chicken and Andouille Gumbo. You will learn how to make a roux, a mixture of flour and oil. It is the basis for many Louisiana dishes, particularly gumbo, but also etouffee, sauce piquant and more. Another favorite New Orleans delicacy is Beignets. Learn to make these delectable doughnuts and taste the true flavor of Beignets served at the Café du Monde. (No box mixes!)
Cake Decorating Go Wild! Cake Decorating – Course 1 Building Buttercream Skills $69 September 11, 2017 – October 2, 2017 6:00 - 8:00 p.m. ETC Cyber Café Age: Adult Instructor: Linda Mayes Learn how to decorate cakes and sweet treats with basic buttercream techniques and six simple-to-pipe flowers that transform ordinary cakes into extraordinary results. Your Certified Wilton Method Instructor will help you pipe classic buttercream decorating techniques to create modern and traditional cake designs. Fee includes student kit and guide. A list of optional supplies (approx. $40) will be provided the first night of class. This class will meet four consecutive Mondays. Lesson 1 – start with the basics and learn how to make buttercream icing, stars, rosettes, bag striping, professionally ice a cupcake and so much more. Lesson 2 – Learn how to ice your cake and decorate with dots, pulled dots, piping gel pattern transfer and more. Lesson 3 – Learn different borders like zigzag, easy ruffle, shell and bead. Cake Decorating – Condensed Course 1 Building Buttercream Skills $34.50 November 6, 2017 6:00-8:00 p.m. ETC Cyber Café Age: Adult Instructor: Linda Mayes In this condensed version of Building Buttercream Skills, you will learn a variety of basic decorating skills featuring buttercream decorating. Whether you are new to cake decorating or have been decorating for years, when you have completed Course 1 you should be able to: make buttercream icing ideal for decorating, understand and apply the Three Essentials of the Wilton Method of Cake Decorating, fill and use decorating bags, identify and understand decorating tip families and their key uses. ServSafe Manager Training & Certification $135 3rd Thursday of each month 7:30 a.m. – 4:30 p.m. Emerging Technology Center Age: Adults Instructor/Proctor: Tina Carver This course of training is designed to develop an understanding of the basic principles of food sanitation and safety and to be able to apply them in the food service operations. Personal hygiene habits and food handling practices that protect the health of the consumer will be reinforced. A picture ID along and a valid email address is required. Basic computer skills are helpful because the exam is web based. The book required for these sessions is the ServSafe Manager 6th Edition book with the 2013 Food Code - available at the WKCTC campus book store. ServSafe Manager Certification – Retest/Recertification Only $67.50 3rd Thursday of each month 2:30 – 4:30 p.m. Emerging Technology Center Age: Adult Instructor/Proctor: Tina Carver This offering is for those needing to re-test due to failing of exam after having had the eight-hour course or for the current certificate holder whose certification is soon to expire requiring re-certification. A picture ID and a valid email address is required. ServSafe Food Handler Certification $35 Each Monday 8 a.m. – 12:00 p.m. Each Friday 11:00 a.m. – 3:00 p.m. Emerging Technology Center Age: Adult This course is the solution to meet any food handler training needs. Whether you are an employee seeking your Food Handler Card or an operation seeking a compliant solution for your employees, the ServSafe Food Handler Certification is the product for you. Course covers five key areas: Basic Food Safety, Personal Hygiene, CrossContamination and Allergens, Time and Temperature, Cleaning and Sanitation. Benefits to training: increased business growth, less employee turnover and increased overall customer satisfaction to name a few. Course includes book. Registered Nurse Refresher Online Course $800 Dates: Open Age: Adult Instructor/Facilitator: Paula Isenberg This course is designed to prepare the inactive registered nurse to return to nursing practice and to provide a review and update of knowledge and skills necessary to care for the patient in the acute care environment. This course is a KBN approved RN Refresher Course. If you are an inactive RN whose license has lapsed, this course is in compliance with guidelines to award 120 contact hours. The course allows you to work at your own pace through a modular format. You access lessons and tests online. There will be one day that you will need to come to WKCTC campus to review and demonstrate competency in nursing skills and to complete a simulation lab experience. Central Sterile Processing - Online $1250 Dates: Open Instructor/Facilitator: Deborah Swain The Central Sterile Processing Course is designed to prepare central service technicians to sit for certification through IAHCSMM. The program consist of 80 contact hours. The course allows you to work at your own pace through a modular format. You access the quizzes and test online. Prior to enrolling, each student must complete 8 hours in the surgical suite and complete the form that is required for verification.

Beekeeping Course 2: Honeybee Husbandry – A continuance of “Keeping Honeybees, Beginning the Process” $100 September 5, 12, 19, and 26, 2017 6:00 – 8:00 p.m. ETC, Room 140 Age: Adults Instructor: Kent Williams This course picks up where Course 1 left off. Topics in this course will include choosing the type of honeybees for your operation; knowing the enemy Part 1; the need to feed; developing and maintaining a sustainable honeybee business and more. There will be an opportunity to visit Kent’s beekeeping business and take part in a “hands-on” lesson in beekeeping. All participation is voluntary, and protective gear will be available if needed. Course meets four consecutive Tuesday evenings.
Sexual Harassment and Rape Prevention $85 August, 12, 2017 9:00 a.m. – 5:00 p.m. ETC, Room 109 Age: Adult Instructor: John Driskill The Human Factor Research Group (HFRG) Sexual Harassment and Rape Prevention (SHARP) course has been specifically designed to meet the needs of women when control methods and assault prevention methods are required. Principles and strategies for effectively reducing the likelihood of assault through actual techniques of countering an attack are stressed in this program. Utilizing efficient and effective methods of subject control that do not rely on size and strength, HFRG has developed a training system that can be used by just about everyone who is interested in personal safety.
Beekeeping – Beginning the Process $85 November 7, 14, 21, and 28, 2017 6:00 – 8:00 p.m. ETC, Room 140 Age: Adults Instructor: Kent Williams Join Kent Williams, Eastern Apiculture Society certified Master Beekeeper as he discusses what to expect in the first year of keeping bees. Topics in this course will include potential for honey production; potential for colony loss; pitfalls to avoid and triumphs to exploit. Necessary equipment and supplies needed for keeping bees and the attending costs; and different methods of obtaining bees. Course will also cover equipment options; pros and cons; costs per hive for different hive types; yield potential vs labor needs relative to different type hives; equipment assembly workshop; basic economics of keeping bees and more. Course meets four consecutive Tuesday evenings.
Creative Drama $200 August, 15 – October 31, 2017 6:00 – 9:00 p.m. Clemens Fine Arts Theatre Age: Teenagers and Adults Instructor: Ken Owen Creative Drama is a class that introduces students to the stage through a variety of on-hand instruction. Its major purpose is to help participants gain knowledge in both the technical and the acting area of live performance. Students will become aware of theater vocabulary, script selection, cutting a script, stage movement, building a character, effective stage make-up and performance. Included in this course is learning to work with a budget, developing the audience area, and seeking the support of patrons. Effective art work with a certified teacher will also be introduced in this course of study. Class meets 12 consecutive Tuesdays.
Beekeeping courses disclaimer: These courses of study are not meant to promote any particular method of beekeeping over other methods, but is instead intended to promote beekeeping as a whole by giving a “real-world” picture of all aspects of honeybee management and to educate those involved in the study as to how to deal with the principle of “cause and effect” as it applies to each method of management. It is the intention that each participant comes away from these courses with the confidence that they can successfully manage their beekeeping project regardless of what type hive is used or what style of management is employed.
Basic Floral Design $89 October 12, 19, 26, November 6, 2017 6:00-8:00 p.m. Emerging Technology Center, Room 222 Age: Adult Instructor: Maryann Cain Maryann will introduce you to the world of floral design. This class will focus on how to arrange fresh flowers and how to make bridal bouquets and boutonnieres, wreaths and holiday arrangements. You will learn how to make bows, step by step; floral design; creating your own style and ultimately make your own arrangements that will be the envy of family and friends. Class meets four times, three consecutive Thursday evenings and one Monday evening. Students will be responsible for some supplies.

Chair Yoga $39 August 3, 10, 17, 24, 2017 or 8:00 – 8:45 a.m. September 7, 14, 21, 28, 2017 ETC, Room 109 Age: Adult Instructor: Karen Splane Bad back? Arthritis? Osteoporosis? Bum knees? This class is for you! Chair Yoga is designed for anyone of any age. It is safe and accessible for everyone, everywhere. It is a practice that includes seated poses on the chair and standing poses using the chair for balance and support. You don’t have to get down on the floor! Chair Yoga integrates the yoga postures (known as asanas) with mindful breathing techniques to bring awareness and balance to the mind, body, and breathe. Studies have shown yoga can: • Reduce pain • Improve mobility • Improve balance and walking ability • Decrease stress and anxiety • Increase focus and concentration • Improve sleep What to bring/wear: • Yoga mat (If you do not have one, one can be provided) • Water • Hand towel • Comfortable fitted clothing to allow stretching and bending • A positive attitude to improve your health! The music has beat and tempo changes that move the workout from one toning, strengthening or cardio move to another, and targets every major muscle group in the body. Zumba uses dance styles such as Salsa, Merengue, Mambo, Hip Hop, Tango, and more. Class meets each Monday afternoon from 4:45-5:45 p.m.
PADUCAH SCHOOL OF ART & DESIGN Introduction to Weaving $109 (includes $10 fee for studio supplies) August 12 or October 7, 2017 9:30 a.m. – 3:00 p.m. PSAD 2D and Graphic Design Building; 905 Harrison Street, Room 205 Age: Adult Instructor: TBD This fiber art workshop provides a basic introduction to weaving and its application to create art with or without any looms. The course will build concepts and skills toward more advanced projects using the looms. Student supply cost will depend upon choice of materials with which to work.
