Hanukkah Shaped Latkes We have a custom to eat potato latkes or fried potato pancakes on Hanukkah because of the miracle of the oil in the temple. I was looking at my normal latke recipe and thinking that I could totally spruce these up. After all, I love edible crafts! A dreidle latke?? Oh yah! Yummo!! Who wouldn’t love a menorah latke?? This is such a simple idea and will enhance your Chanukah celebrations.
Here’s a how you make these super simple delicacies.
First you gotta make the batter. Simple Latke Recipe: 5lb bag of potatoes 1 large onion 4 eggs ½ cup of flour 1 Tablespoon of salt ¼ Tsp black pepper
24
jCreate Magazine
www.jCreateMagazine.com
You want to keep your potatoes in ice cold water after you peel them so they do not turn brown. Once you finish blending all the potatoes and mixing in the ingredients, drain all the extra water out. Add oil to your frying pan – about half way up so your pan is half full with oil. You can make sure your oil is ready by adding a little batter into the oil and seeing if it sizzles. Put your cookie cutters into the pan and scoop the batter into each of the cookie cutters. You know that they are ready to flip when they no longer stick to the bottom. Try moving the latke. When they are brown on both sides they are ready to take out of the pan. Let the latkes cool for a few minutes. Those cookie cutters are HOT! Take your knife and cut along the edge of each of the latkes to help separate them, then just push them through. They should come out easily. They are so delicious and yummy.

What You Need: White aprons, tote bags, t-shirts White printer paper Permanent marker Scissor or exacter knife Spray fabric paint (or fabric paint and brush) Freezer paper Iron Embellishments such as puffy paint, rhinestones, fabric glitter
26
jCreate Magazine
www.jCreateMagazine.com
Get Started: 1. Choose the design you want to paint on your apron, tote bag or t-shirt. Draw or print your chosen design. You can choose latkes, dreidels, menorahs and other Hanukkah themed images. 2. Face the freezer paper over your drawing, shiny side down. 3. Trace the image onto the freezer paper using the permanent markers. 4. Cut the design out of the freezer paper, removing the negative space and leaving just the outlines of the design. 5. Iron the apron, bag or t-shirt so you are working with a flat surface. 6. Take the freezer paper template, shiny side down and iron it onto the fabric. The freezer paper will stick to the fabric. Remove all bubbles to ensure that the fabric paint does not seep through. 7. Cut out the details of your design such as the letters of the dreidel and iron them on to the fabric where desired. You may want to add letters to the dreidel. 8. Choose your colors. Spray your paint all over the graphic print. 9. Peel off the stencil to reveal the design. Your negative space (white outlines, lettering, etc) is now highlighted in the design. 10. Embellish with puffy paint, glitter or rhinestones. You can also personalize the design with a name. 11. Allow to dry for 24 hours. Wash the finished apron in cold water only and hang to dry.

Crockpot Mushroom Barley Soup 2 pieces flanken (short ribs) 1 tbsp olive oil 1 onion, diced 4 cloves garlic, minced 2 stalks celery, diced 2 parsnips, diced 2 carrots, diced 1 container button mushrooms, cleaned & sliced 1 container baby bella mushrooms, cleaned & sliced 5 sprigs thyme 1 tbsp soy sauce 10 cups beef or chicken broth 3/4 cup barley salt and pepper, to taste
Method:
In a hot pan, sear the flanken, browning it on all sides. Add it to the crockpot. To the same pan, add oil and saute the onion, garlic, celery, parsnip and carrots, scraping up the bits of the flanken as you go. Add to the crock pot. Saute the mushrooms (add more oil, if needed) and add to the crockpot. Add remaining ingredients and cook on low for 6-8 hours.
Variation: To make this soup pareve, omit the flanken and cook on low for 4-6 hours. Substitution: If you don’t like thyme, you may use 2 bay leaves instead. Shabbat Option: to make this for Shabbat lunch, just add 2 cups of water or stock and cook
on low overnight.
Note: If you don’t have a slow cooker, you may cook the soup in a pot. Bring to a boil, then reduce heat and simmer for approximately 2 hours, until barley and flanken are tender.

Braised Short Ribs 4 servings
meat
4 (2 x 8-in pieces) boneless flanken
kosher salt, for sprinkling
coarse black pepper, for sprinkling oil, for sautéing
1½ cups barbecue sauce
1½ cups apple juice
Recipe from Secret Restaurant Recipes From the World's Top Kosher Restaurants by Leah Schapira and Victoria Dwek Reprinted with permission from the copyright holders: ArtScroll/Mesorah Publications
Method: Preheat oven to 300°F. Season flanken with salt and pepper on both sides. Heat oil in a sauté pan over medium-high heat. When oil is hot, add flanken and sear, about 2 minutes per side. Transfer meat to a baking pan. In a small bowl, whisk together barbecue sauce and apple juice. Pour over flanken. Cover baking pan with a double layer of plastic wrap, then cover the plastic wrap with a double layer of aluminum foil. Be sure to crimp the edge of the foil over the plastic wrap, covering it completely to prevent plastic wrap from melting. (This technique will help seal in the moisture; see page 12.) Bake for 3 hours. Remove from oven. Raise oven heat to 375°F. Before serving, brush ribs with a thin layer of additional barbecue sauce and bake, uncovered, for an additional 20-30 minutes. Serve over Yukon Gold mashed potatoes and crispy onions. The restaurant makes its own version of barbecue sauce, but Chef Aryeh recommends Jack Daniels #7 Sauce for the home cook It is preferable to use heavy-duty plastic wrap when using this technique (see page 12). Ordinary plastic wrap can be used, although it does not hold up as well; it will tear easily as you remove it from the pan.
“Season and reseason at every stage of cooking. If you sweat onions, add salt and pepper. When you add other ingredients, add salt and pepper as well. As a chef I always season in layers, adding a little at a time.” - Chef Aryeh Goldenson, Estréia jCreate Magazine

2 cups fresh spinach, chopped finely
½ cup beef stock
1 small onion, chopped finely
28 oz. can crushed tomatoes
1 egg
14 oz. can diced tomatoes

www.jCreateMagazine.com
Instructions Homemade Tomato Sauce Heat the olive oil over medium-high heat in a pan with high sides then add the onion, pepper and garlic and sautĂŠ for 5 minutes, until soft and beginning to brown. Add the beef stock and scrape the bottom of the pan to pick up any bits from the cooked vegetables. Add the crushed and diced tomatoes, balsamic vinegar and spices and bring the sauce to a boil. Lower the temperature to medium-low and simmer the sauce uncovered for 15 minutes. Spaghetti Squash While the sauce is simmering, prepare the spaghetti squash and meatballs. Slice the spaghetti squash in half width-wise and scoop out and discard the seeds. Place half of the squash in the center of the slow cooker, cut side down. If you have a small spaghetti squash or a huge slow cooker, you can add both halves but only half of my squash fit. Make sure you have room for the sauce and meatballs. Spinach Meatballs Chop the spinach in a food processor and add it to the ground beef. Stir the spinach and meat together with the onion, egg and spices. Assembly Pour the tomato sauce in to the slow cooker, around the spaghetti squash, and roll the ground meat mixture into balls and place them on the sauce. You might have to squish them in a bit around the squash. Cover the slow cooker and cook the meatballs and squash on high for an hour and a half. Remove the spaghetti squash and scoop out the center with a spoon. Place the squash on to a serving dish, cover it in the homemade tomato sauce then top with the spinach meatballs.

Crock Pot Turkey Meatballs in Tomato-Spinach Sauce

2 lb ground turkey
1 teaspoon oregano
1 large onion, finely diced

Instructions: Heat oil or spray oil in a large frying pan. Form the turkey into balls (it will be hard to work with, so don’t worry if they aren’t perfect balls). Fry in hot frying pan on all sides until they are browned. The middles will still be raw, but they will cook in the sauce, so that’s fine. Don’t overcrowd the pan, rather work in batches. Remove the meatballs from the pan and place in the pot of your crockpot. Add a bit more oil to the pan, and add the diced add
onions. the
Next,
chopped
spinach and sauté for a few minutes. Pour the vegetable mixture over the meatballs in the crock pot. Pour the crushed tomatoes over into the crockpot. Add the spices and water. Stir the entire mixture gently, being careful not to break up the meatballs. Cook the meatballs in the crock pot on low for at least six hours. Serve hot over rice or spaghetti. Note: browning the meatballs might seem like an extra step, but it gives the meatballs the most incredible texture, so don’t be tempted to skip it! Enjoy!

Tu B’shvat Tree Collage Take your camera on a beautiful journey surrounded by nature! This project will keep you in touch with the life cycle of the trees and the changing seasons.
You Will Need: A tree. Select a tree with a simple background. A good quality camera.
Photograph your tree in the winter! At this time of year your subject, a big tree, will have a very few of its leaves remaining. Photograph your tree on a clear but snowy day to get the perfect picture of your tree with snow-capped branches. Alternatively, opt for a clear sunny day where the tree stands, bereft of its leaves.
44
jCreate Magazine
www.jCreateMagazine.com
Next, photograph your tree in the springtime as it begins to blossom. The spring portrait may be more difficult but spring offers many opportunities to go out and experiment. When summer is in full swing, catch the tree at the height of its glory. The green leaves and bright scenery bring out its true beauty. This photo will provide a stark contrast to its winter counterpart.

The fall photo brings us full circle. As school starts and the leaves begin to change colors, the beautiful foliage is an opportunity to capture the art in nature and appreciate the miracle of the seasons. Print your four photos and display them side by side. Printing on canvas is a great way to decorate any space in an artsy, upscale and decorative way. Your one of a kind tree collage will be cherished for many years to come.
