This semester I learned that being an editor requires a lot of dedication and time. Time has to be set aside just for the class. Whether it was getting up before sunrise or staying later than my release time. I also learned that even though there is a whole staff to work with, inevitably I had to get what I needed on my own. I needed to be prepared for when people didn’t show up with their work and be ready to do it on my own. Last year, I was only a staff writer and I rarely had anything to do. I would write my stories and I had days that I could do other things like homework for other classes. This year, as an editor, I rarely had time in class to do anything other than newspaper work. It was extremely stressful at points and was seen as dreadful, but most of the time it was bearable. Some challenges when editing stories were when writers did not work with me. I would try and tell them their errors and what I wanted from them, but I would just get ignored. New writers tend to take the criticism of their writing personal. The most common mistakes that I saw were writing the story about the wrong thing, not writing enough, and quoting people incorrectly. Many times I would go to edit my stories and see that someone had written their story about the wrong topic or just didn’t understand what to write about. To prevent that from occurring I made sure that I explained my stories to each writer beforehand and if they still didn’t understand I would write bullet points on what I wanted them to research on their story. When it came to not writing enough it appeared quite often, but it tended to be an easy fix. I would just let the writer know what I wanted to see added. Quoting is a hard concept to learn when you are new to journalism so I understand the struggle. I usually found missing last names, the whole name would be missing if it was a teacher, or the students grade would not be included. I would just make the suggestion and leave it for the writer to see what they did wrong.
Editing
Leading I like to talk to the new staff members and show them that we are willing to help them. I feel that I do the most that I can do for them. Some challenges that I experience with peers is that they can be unreliable and lazy. I try to set up my writers for success, but the rest depends on them. I personally think it’s more important to be respected by my peers, but due to the new staff being immature they look up to popularity more. Respect allows for you to be seen as a friend and someone to look up to. I like being a leader in the sense that I know what everyone is doing and I can help others to produce their best work. The challenge of leading is that there will always be people who will not listen to you and there is nothing you can do about it. You are also held to a higher standard when leading which doesn’t allow for leeway on your behalf. Personally, I think an award winning publication requires a good design, but in reality it depends more on the quality of writing. To make an award winning publication I believe preparation and diligence is necessary. Everyone is required to be a hardworking journalist to produce the best stories. I think that we contribute good story ideas, but fail to execute the writing to its full potential. Interest is lost as time goes on and the due date inches its way closer. To be a leader is to be able to look after all of their members and encourage them to move forward.
Design I am most proud of the December spread. This issue turned out to be really good looking and the stories were all interesting. There is a lot of color integrated into both pages and it works well. All of the photos are visually appealing and relate to their designated stories. I was very happy that I didn’t have to cut any of my stories, which is something that I normally have to do on production day. I also enjoy the nice Christmas feel to the page. There was a nice mixture of humor and information on each page that tied the whole thing together. I am the least happy with the October issue. The pages have photos that are extremely lacking and don’t show the whole picture of each story. I had to cut out a lot of stories on production day which is something that I like to avoid. I am strong in making the design of the page colorful and organized. I excel at making things interesting looking and I try to be as creative as possible. I have learned all the basics of indesign this year as an editor. I could use more training in the little details like crediting and pull quotes.

Seemingly simple bread has an extensive history and diverse background. Bread is a food made of flour, water, and yeast, or another leavening agent, mixed together and baked. Other leavening agents that can replace yeast are sourdough starter, buttermilk, kefir and yogurt. These leavening agents are one of the most important ingredients and are used in the longest step when making bread. Fermentation, also known as the rest process, is the scientific process of yeast feeding on the simple sugars from flour and results in carbon dioxide and ethanol being released. That carbon dioxide is what makes the bread rise and ethanol is important for flavor and the maturing of the dough. This process can last from ten minutes to two or three days. Making bread is overall a long and strenuous activity, but the end results make it worthwhile. “I enjoy making bread because I love to see the after product of my hard labor,” said Cara Walden, a senior The length of time depends on what kind of bread is wanted. Specific cooking methods and certain ingredients can also affect the outcome of the bread. For some, making bread is a difficult task due to how long the process is. Nevertheless, making homemade bread instead of buying bread from the store is shown to be
beneficial. “There are less chemical preservatives in homemade bread, and the ingredients you can use are versatile,” said Rebecca Lusk, a culinary arts teacher Some different kinds of breads are rye, whole wheat, sourdough, baguette, focaccia, brioche, and many more. As time has gone on, new ways of making bread are discovered and spread throughout the world. Evidently, bread has been an essential part of everyday life for thousands of years. Ancient Egyptian civilizations have survived off of bread for decades. They used special types of thick, non-porous bread as containers for other dishes. This bread was easier to bake than leavened flatbreads since it didn’t need a vertical oven. They had excellent trade relationships with the Greeks and exported bread wheat. Bread has been a traditional food in different cultures and religions for centuries and continues to be used in practice in modern times. “For an entire day my family and I prepare Challah on Christmas eve, so we can eat it on Christmas Day,” said Haylee Phillips, a senior. In some religions, bread has a symbolic meaning of the body of christ. It also represents God’s Supreme gift to humankind, eternal life. There are also numerous cultures that introduce new types of bread. Bolo-Rei, Challah, Julekage, and Panettone are all examples of festival breads.

HE GROWTH OF fruits and vegetables is reliant on the specific growth periods and seasons. Mild winters allow for crops that are sensitive to extreme cold, but require cool temperatures to produce the fruit or vegetable. The extremely hot summers help make citrus sweet, chiles spicy, and dates ripen. “I love growing my own vegetables during the season. Everything tastes better when fresh, which is why I grow my own stuff,” said Ava Hernandez, a sophomore. So, before I empty my plate of weirdly-shaped cookies into the trash, I want to give a warning to any aspiring bakers out there. Instead of going in blind, learn from my mistakes. Actually read the directions. Anybody can follow the pictures, but what’s important to note is that bakers choose their words extremely carefully when they write their recipes. When they say “large bowl”, that means the largest bowl in your house. When they say “combine thoroughly”, that means whisk until your arm falls off, and then regret not just buying a stand mixer. After all, that would have been way cheaper than paying to get your arm reattached.
Mistake #2 Baking is a delicate process. You’d think a massive ball of flour would be able to soak up as much water as it wants, but even just half a cup of water is able to turn what was once a flaky, clumpy dough into a soft, squelchy mess. Which is not something you want when too much water means it will stick to the rolling pin, and too much flour means it will crumble into dust.

Behind the cafeteria windows and lines of kids, the employees work hard to feed the school. “I love to cook, and it gives me joy feeding the kids,” said Shirley Fuss, manager of the kitchen. According to Fuss, the school cafeteria serves around 700 kids a day, which can be a challenge, but she likes the fast-paced work. However, the number of kids being fed each day varies, and sometimes the cafeteria gets more numbers than expected and they can run out of food. Fuss’s main goal is to not run out of food, and ensure that every student who wants a meal gets one. She loves the craziness of her job and getting to see the kids every day. Fuss has four kids of her own, for whom she has always enjoyed cooking for. She got into cafeteria work through her love for children and cooking, which is a perfect combination of the two. “The timing is a big challenge, getting the kids fed on time and the food out on time,” said Susie Marsman, cafeteria cashier. Marsman was in need of a job, and decided cafeteria work was the perfect fit for her. Her favorite part of her job is her co-workers, and she says they have a really close-knit bond. Cookies need to stay level headed, just like you do. By the time it came to rolling out the dough, I was just about ready to smash every glass window in a five mile radius. As a result, the dough was rolled out half-hazardly and ended up varying wildly in thickness. This made the cookies fat and doughy on one end, and burnt to a crisp on the other. So to save you the headache, make sure to take a break from baking if your kitchen window starts to look extra breakable, and take your time with your dough.

backs when things get crazy in the kitchen. When lunch actually begins, it can get hectic behind the counters. Students often cut the lines, which Marsman states can be challenging and is unfair to the kids who have been waiting. Stealing is also a problematic issue at times for the workers, as it messes with their numbers and takes food away from other kids. “Recently, administration has been helping with the lines and keeping kids in check, which makes a huge beneficial difference,” said Fuss. As for the actual food, certain criteria must be met by the cafeteria. US Foods states that the meals must have a protein, a meat, a fruit, and a vegetable. It is required to have a minimum of three of these components, but Fuss always likes to have more. At times, Fuss gets to choose certain meals, such as hamburgers, and alternates this choice from time to time. The food served to kids is high quality and nutritional. “I get hot lunch almost everyday, I hope the workers are doing well, and I just want to say ‘thank you’”, said Daniel Bloedow, a freshman. Getting food out to hundreds of students every day can be difficult, but the cafeteria workers love what they do and love the kids.

The main takeaway from this story should be that anyone can bake, as long as they know what they are getting into. Or maybe it’s the opposite, and you should never trust a random staff writer to bake cookies for an award-winning newspaper. Either way, I hope I could help you bake better cookies than I could.

Homemade Guacamole
Start by prepping the veggies. Finely chop the onion, jalapeno, garlic, tomato, zucchini, and cilantro. Filet the bell pepper to remove the bitter pith, and wash the kale thoroughly under cold water before
finely chopping. Pit the avocado and set aside for later. Empty the black beans into a small pot over medium-low heat. Generously season with salt, pepper, chili powder, and cumin. Stir in cilantro and apple cider vinegar. Add a squeeze of lime, and leave the pot to simmer. Spoon the avocado into a small bowl, and mash it into the side of the bowl with a large wooden spoon. Once it begins to resemble guacamole, season generously with salt, pepper, cumin, and paprika to taste. Add minced garlic, onion, cilantro, and a squeeze of lime before stirring thoroughly to incorporate. Pour neutral oil into a saucepan over medium heat. Add the plantbased chorizo and stir occasionally
to achieve even browning. Remove from heat once lightly browned. Add the remaining oil to another saucepan over medium heat. Immediately add onion and garlic, then add bell pepper, zucchini, jalapeno, cilantro, and kale once the oil turns glossy. Sautee occasionally until the veggies begin to turn soft, then remove from heat. Empty the queso jar into a small saucepan over low heat. Stir every few minutes until warm. In a small bowl, mix raw onion, tomato, and cilantro until evenly combined. Layer the ingredients from bottom to top according to the ingredients list. Add sauces and toppings to taste.

chains around the U.S have struggled with shortages in food over the recent months. The food industry is a high demand market, and requires large shipments of product to specific locations by a certain deadline. If not met, it can cause issues within restaurants and other small food businesses. One of the largest suggested reasons for this shortage is due to the covid-19 pandemic, which
caused a lockdown worldwide, and slowed production of many valuable items. With the economy back up and running, there is still ground to make up for the time that was missed, and it’s starting to catch up. “The restaurant I work at has had food shortages over the past few months, and it has been frustrating to lack the proper resources to keep the business running,” said Erin Heileger, a junior, who works at Keelers restaurant. The lack of food and shipments has caused replacement items to come into the picture. Separate shopping outside of work at a
grocery store is one of the most common ways to help cope with this shortage, however it is costing more money when items aren’t being bought in bulk. “I have had to run to the store multiple times during work to go purchase food items that we were in need of,” said Tyson Deters, a food expo at All American Modern Sports Grill. Things such as condiments, vegetables, and ice cream are amongst the many different items that employees are sent out to purchase for the restaurant. This problem hasn’t shown much sign
of improvement, but with the economy returning to its prepandemic ways, it should start to become less of a problem over the upcoming months. Many restaurants have increased pricing on items with low inventory to help make up for the lost cost. Pricing is skyrocketing as shipments continue to take longer than expected to arrive and business continues to strive. With the pandemic being passed, people are returning to their old habits of going out to eat, which is causing food to decrease in inventory quickly.

It turns out, you don’t need to sacrifice flavor or texture for the health benefits that come with a vegan meal.

“I typically eat out with my parents as often as I can on the weekends,” said Jayden Bahora, a senior. Restaurants count on specific food items to be delivered, and when there is a different number of those items than expected, it can cause mayhem within the establishment. It is unsure when this problem will truly be resolved, but in the meantime, employees and restaurants have learned ways to cope with this issue and plan to continue to do so until the food is no longer in a shortage.
With schools starting early and homework coming in the piles, it’s no secret that students are exhausted from all of the work. To keep up with the uproar of work, students look towards a caffeine condensed solution, energy drinks. While energy drinks can be helpful within the moment when one needs the extra push to step towards their goals, too much of something is never beneficial. When consumed in large amounts as we see in the present setting with many students, the downsides start to kick in. According to the Harvard T.H. Chan School of Public Health researchers, the over consumption of energy drinks can lead to poor mental health, substance abuse, diabetes, tooth decay, high blood pressure, and kidney damage. Due to the high caffeine contents, energy drinks can change the acidity within the stomach and attack the stomach lining. A senior, Faith Riddler, drank only 1-2 energy drinks per day. The potency of the drinks attacked her stomach lining and Riddler had to go to the hospital to get her esophagus numbed. Since then she has become clear of the effect it can have. “Try to regulate how much you’re drinking because even now when I drink it I get super anxious. Just don’t over consume or you’ll be dependent on it and end up being in my case” said Faith Riddler Energy drinks are also outright unhealthy containing very high sugar contents. Including also high amounts of caffeine that is regularly unneeded, standing between 200-400 mg per drink.
The girl’s health teacher, Alex Wampfler gives her insight on why we drink them so often and some alternatives to energy drinks that are much more healthy and give less harmful amounts of caffeine and sugar. “I think students feel tired because they don’t sleep enough, which I get because we start really early here, but if we drink water and eat healthy food we usually get the energy that we need. Or they could choose a little
lighter caffeine option like tea or coffee” said Wampfler. As for the students, they do look to energy drinks as an option to balance the stress and tiredness that they experience to get through the day. With too much caffeine, people can develop a dependency on them to where when they don’t drink them, they are off the entire day. Sydney Borso, a senior, who regularly drinks energy drinks gives her take on why she drinks energy drinks. “Definitely need them to feel awake in class with school starting so early, not a dependency, just more irritable without them” said Borso. It’s never good to consume 4 Chris Alexander so many energy drinks so often because of the numerous health risks and mood shifts they can create. Switching to coffee or tea can dramatically increase the health benefits and still get the caffeine from it.

Numerous foods carry essential vitamins inside of them, categorized into two different types, water-soluble and fat-soluble vitamins. “A healthy diet will include foods rich in vitamin C, vitamin A, vitamin B6, potassium, vitamin K, vitamin B12 and magnesium,” said Bootz, culinary teacher. According to Harvard Health, vitamins are defined as organic substances produced by plants or animals which are essential to humans because they are not synthesized in the body, excluding vitamin D. Vitamins are split into two different groups, water-soluble vitamins and fat-soluble vitamins. Water-soluble vitamins include the eight B-vitamins, B1-B9, B12, and vitamin C. Fat-soluble vitamins include vitamins A, D, E and K. Water-soluble vitamins come from foods like fruit, vegetables, dairy, and grains. Foods that are animal products or contain fat,
such as milk, butter, vegetable oils, eggs, liver, and oil fish, contain fatsoluble vitamins. “Fruits and vegetables have a lot of vitamins that are necessary to maintain a healthy lifestyle and to keep your body healthy,” said Arielle Nelson, a senior. Vitamins are essential for human growth and development. For example, vitamin A helps the body’s natural defense against illness and infection. Foods rich in vitamin A include eggs, orange/yellow vegetables and fruit, and dark green, leafy vegetables. According to Family Doctor, a trusted medical site, vitamin C, or calcium, is an antioxidant that helps protect cells against the effects of free radicalsmolecules produced when your body breaks down food. Fruits such as oranges, kiwis, strawberries, and guava, are foods with very high vitamin C levels. Some other forms of vitamins found in foods include potassium and fiber. Potassium is one of the most important vitamins in

the body because it helps regulate fluid balance, muscle contractions, and nerve signals. Potassium-rich foods include bananas, avocado, spinach, and broccoli. Fiber is beneficial because it normalizes bowel movements, lowers cholesterol levels, helps control blood sugar levels, and aids in achieving healthy weight. High-fiber foods include beans, whole grains, popcorn, and berries.
“It is highly important to make fiber a key part of your diet, because it has numerous health benefits and increases the quality and length of life,” said Tawny Schnorr, a Grand Canyon University student studying nutrition and health. Another important vitamin found in foods is magnesium. Magnesium benefits normal daily functions, such as regulating muscle contractions and heart rhythm. Foods high
in magnesium include greens, nuts, seeds, dry beans, whole grains, wheat germ, wheat and oat bran. According to Cleveland Clinic, a non profit American academic medical center, the recommended dietary allowance for magnesium for adults is 400-420 mg per day. Overall, consuming vitamins in foods daily is severely beneficial to one’s health and quality of life.
Writing My most significant piece for this year was most definitely my low rise jeans story for the style page. I think this is my best work because I had to overcome a lot of hurdles to produce the final draft for this story. Originally, I didn’t even want to write this story, but I was assigned it last minute due to stories having no writers. I couldn’t comprehend how I would write 400 words about low rise jeans let alone make it interesting. Fortunately, Katelyn, the style editor, and I are very close friends. I went to her multiple times to ask about how I would start the story. She provided me with helpful feedback that made it possible to start writing my story. I asked many people about who I should interview as well and after a few days I got three good candidates for the story. When researching the history of low rise jeans there was barely anything to work with. I spent multiple days just scanning through pages and pages of low rise jeans articles. The first draft was a mess due to how long it took me to actually start writing. I had a few basic ideas and my interviews, but that was it. It lacked the interesting factor that makes people want to read the article. I spent a few days writing, deleting, and restructuring the whole story continuously. Thankfully, my dedication and the helpful editing from Katelyn led me to what I believe is a good story. I am glad that I was successful at making a generic topic, such as low rise jeans, into an intriguing story.

"I'm heavily inspired by my friends and celebrities such as Britney Spears and Rihanna," said Maddie Swansiger, a senior. Throughout the 90’s, a multitude of celebrities such as Britney Spears, Christina Aguilera, and Mariah Carey, popularized these denim pants. These celebrities were the main inspiration for the Y2K fashion style that includes low rise jeans. Some current celebrities that have hopped onto the trend are Bella Hadid, Ciara, Dua Lipa, and Willow Smith. Now that low rise jeans are coming back into style many clothing brands are offering their own pairs of low rise denim. Some large brands that offer low rise jeans are Urban Outfitters, Aéropostale, Levi’s, and Hollister. Each pair of jeans can range from $20 to $60 depending on the design and cut. Some jeans can be straight legged, flare, and even baggy. There are countless ways to style low rise jeans and it all depends on personal style. Hailey Bieber was seen with low rise jeans on, a colorful tank top, and a matching pair of heels. Katie Holmes was seen with a long sleeve sweater, low rise jeans, and black boots. Emily Ratajkowski styled her low rise jeans with baggy pants and a matching blazer. These pictures prove that low rise jeans can be styled anyway possible and leave room for creativity.

Homemade Guacamole
Start by prepping the veggies. Finely chop the onion, jalapeno, garlic, tomato, zucchini, and cilantro. Filet the bell pepper to remove the bitter pith, and wash the kale thoroughly under cold water before
finely chopping. Pit the avocado and set aside for later. Empty the black beans into a small pot over medium-low heat. Generously season with salt, pepper, chili powder, and cumin. Stir in cilantro and apple cider vinegar. Add a squeeze of lime, and leave the pot to simmer. Spoon the avocado into a small bowl, and mash it into the side of the bowl with a large wooden spoon. Once it begins to resemble guacamole, season generously with salt, pepper, cumin, and paprika to taste. Add minced garlic, onion, cilantro, and a squeeze of lime before stirring thoroughly to incorporate. Pour neutral oil into a saucepan over medium heat. Add the plantbased chorizo and stir occasionally
to achieve even browning. Remove from heat once lightly browned. Add the remaining oil to another saucepan over medium heat. Immediately add onion and garlic, then add bell pepper, zucchini, jalapeno, cilantro, and kale once the oil turns glossy. Sautee occasionally until the veggies begin to turn soft, then remove from heat. Empty the queso jar into a small saucepan over low heat. Stir every few minutes until warm. In a small bowl, mix raw onion, tomato, and cilantro until evenly combined. Layer the ingredients from bottom to top according to the ingredients list. Add sauces and toppings to taste.

chains around the U.S have struggled with shortages in food over the recent months. The food industry is a high demand market, and requires large shipments of product to specific locations by a certain deadline. If not met, it can cause issues within restaurants and other small food businesses. One of the largest suggested reasons for this shortage is due to the covid-19 pandemic, which
caused a lockdown worldwide, and slowed production of many valuable items. With the economy back up and running, there is still ground to make up for the time that was missed, and it’s starting to catch up. “The restaurant I work at has had food shortages over the past few months, and it has been frustrating to lack the proper resources to keep the business running,” said Erin Heileger, a junior, who works at Keelers restaurant. The lack of food and shipments has caused replacement items to come into the picture. Separate shopping outside of work at a
grocery store is one of the most common ways to help cope with this shortage, however it is costing more money when items aren’t being bought in bulk. “I have had to run to the store multiple times during work to go purchase food items that we were in need of,” said Tyson Deters, a food expo at All American Modern Sports Grill. Things such as condiments, vegetables, and ice cream are amongst the many different items that employees are sent out to purchase for the restaurant. This problem hasn’t shown much sign
of improvement, but with the economy returning to its prepandemic ways, it should start to become less of a problem over the upcoming months. Many restaurants have increased pricing on items with low inventory to help make up for the lost cost. Pricing is skyrocketing as shipments continue to take longer than expected to arrive and business continues to strive. With the pandemic being passed, people are returning to their old habits of going out to eat, which is causing food to decrease in inventory quickly.
“I typically eat out with my parents as often as I can on the weekends,” said Jayden Bahora, a senior. Restaurants count on specific food items to be delivered, and when there is a different number of those items than expected, it can cause mayhem within the establishment. It is unsure when this problem will truly be resolved, but in the meantime, employees and restaurants have learned ways to cope with this issue and plan to continue to do so until the food is no longer in a shortage.

The aftermath of energy drinks

With schools starting early and homework coming in the piles, it’s no secret that students are exhausted from all of the work. To keep up with the uproar of work, students look towards a caffeine condensed solution, energy drinks. While energy drinks can be helpful within the moment when one needs the extra push to step towards their goals, too much of something is never beneficial. When consumed in large amounts as we see in the present setting with many students, the downsides start to kick in. According to the Harvard T.H. Chan School of Public Health researchers, the over consumption of energy drinks can lead to poor mental health, substance abuse, diabetes, tooth decay, high blood pressure, and kidney damage. Due to the high caffeine contents, energy drinks can change the acidity within the stomach and attack the stomach lining. A senior, Faith Riddler, drank only 1-2 energy drinks per day. The potency of the drinks attacked her stomach lining and Riddler had to go to the hospital to get her esophagus numbed. Since then she has become clear of the effect it can have. “Try to regulate how much you’re drinking because even now when I drink it I get super anxious. Just don’t over consume or you’ll be dependent on it and end up being in my case” said Faith Riddler Energy drinks are also outright unhealthy containing very high sugar contents. Including also high amounts of caffeine that is regularly unneeded, standing between 200-400 mg per drink.
The girl’s health teacher, Alex Wampfler gives her insight on why we drink them so often and some alternatives to energy drinks that are much more healthy and give less harmful amounts of caffeine and sugar. “I think students feel tired because they don’t sleep enough, which I get because we start really early here, but if we drink water and eat healthy food we usually get the energy that we need. Or they could choose a little
lighter caffeine option like tea or coffee” said Wampfler. As for the students, they do look to energy drinks as an option to balance the stress and tiredness that they experience to get through the day. With too much caffeine, people can develop a dependency on them to where when they don’t drink them, they are off the entire day. Sydney Borso, a senior, who regularly drinks energy drinks gives her take on why she drinks energy drinks. “Definitely need them to feel awake in class with school starting so early, not a dependency, just more irritable without them” said Borso. Numerous foods carry essential vitamins inside of them, categorized into two different types, water-soluble and fat-soluble vitamins. “A healthy diet will include foods rich in vitamin C, vitamin A, vitamin B6, potassium, vitamin K, vitamin B12 and magnesium,” said Bootz, culinary teacher. According to Harvard Health, vitamins are defined as organic substances produced by plants or animals which are essential to humans because they are not synthesized in the body, excluding vitamin D. Vitamins are split into two different groups, water-soluble vitamins and fat-soluble vitamins. Water-soluble vitamins include the eight B-vitamins, B1-B9, B12, and vitamin C. Fat-soluble vitamins include vitamins A, D, E and K. Water-soluble vitamins come from foods like fruit, vegetables, dairy, and grains. Foods that are animal products or contain fat,
such as milk, butter, vegetable oils, eggs, liver, and oil fish, contain fatsoluble vitamins. “Fruits and vegetables have a lot of vitamins that are necessary to maintain a healthy lifestyle and to keep your body healthy,” said Arielle Nelson, a senior. Vitamins are essential for human growth and development. For example, vitamin A helps the body’s natural defense against illness and infection. Foods rich in vitamin A include eggs, orange/yellow vegetables and fruit, and dark green, leafy vegetables. According to Family Doctor, a trusted medical site, vitamin C, or calcium, is an antioxidant that helps protect cells against the effects of free radicalsmolecules produced when your body breaks down food. Fruits such as oranges, kiwis, strawberries, and guava, are foods with very high vitamin C levels. Some other forms of vitamins found in foods include potassium and fiber. Potassium is one of the most important vitamins in

the body because it helps regulate fluid balance, muscle contractions, and nerve signals. Potassium-rich foods include bananas, avocado, spinach, and broccoli. Fiber is beneficial because it normalizes bowel movements, lowers cholesterol levels, helps control blood sugar levels, and aids in achieving healthy weight. High-fiber foods include beans, whole grains, popcorn, and berries.
“It is highly important to make fiber a key part of your diet, because it has numerous health benefits and increases the quality and length of life,” said Tawny Schnorr, a Grand Canyon University student studying nutrition and health. Another important vitamin found in foods is magnesium. Magnesium benefits normal daily functions, such as regulating muscle contractions and heart rhythm. Foods high
in magnesium include greens, nuts, seeds, dry beans, whole grains, wheat germ, wheat and oat bran. According to Cleveland Clinic, a non profit American academic medical center, the recommended dietary allowance for magnesium for adults is 400-420 mg per day. Overall, consuming vitamins in foods daily is severely beneficial to one’s health and quality of life.

Low rise on the rise
Low rise jeans have been around for decades, with different ways to style and wear them coming into play. “Kids wore low rise jeans as a nod back to 70’s bell bottoms and wanted a different way to wear denim,” said Elissa Ericson, a fashionable dance teacher. Between the 1960s and 1970s low rise pants were created and named hip huggers. Young men and women would be frequently seen wearing these hip huggers with belts. These pants exposed the navel to fit into the sexual revolution that demanded for a free, and loose style to express one’s sexuality. As history moves forward these pants will be seen coming back into fashion on multiple occasions. In the early 1990s, an English fashion designer named Alexander Mcqueen created a line of ultra low rise jeans, and at the time were called dumpsters. run Senior Assassins competition began this year on September 1st, continuing the long held tradition of pitting seniors against each other for the chance to win a cash prize. “I wanted to be involved with Senior Assassins and create a safe, but fun environment for everyone playing,” said Annie Bugbee, the senior in charge of Senior Assassins.

“I am hoping that I can avenge my partner, but I don’t even know where the kid lives,” said Christian Waters, a student participating in senior assassins. Each week the teams are assigned new targets and the goal is to eliminate them. One of the challenges is that each teammate has a safety item that will protect them from being eliminated. The objective is to find the target without their safety items on. It is required to record the “kill”, take a photo with the person “killed”, and submit it to the senior assassins Instagram. Each member of the team must meet the kill quota by the end of each month to stay in the game. “My daughter almost got killed while getting out of her car at

work, but luckily that was a safe zone,” said Zebulan Schnorr, a parent of a student participating in Senior Assassins.
Safe Zones
One of the rules is that no players can be eliminated in a safe zone. Some of the safe zones are school grounds, school parking lot, places of employment and places of worship. Other areas that are safe zones include sporting events, sports fields, fine art center, gyms, school events and sponsored events. The players are still safe when they are in their homes, on a bike or motorcycle, in a car if all windows are closed, and in a hospital or any place of emergency or medical treatment. Some days there will be special days such as purge day, zombie
day, and free for all. Purge day is when safety items are no longer in play and the player can target anyone. The only places that remain a safe zone are the school campus, school parking lot, and when a person is working at their place of employment. A zombie day is when those who are dead are given the chance to get back in the game if they can kill 2 living people. All safe items and spaces are still in effect on zombie days. Free for all is when all targets are disregarded, but safe spaces and items remain in effect. A bounty system is also in the game. Someone can place a bounty on an individual or team that is required to be completed within a certain amount of time.
To place a bounty on someone a person must pay at least $1. If the kill is made the person who did the killing earns the money and 1 kill point. The person the bounty gets 2 kill points. There is also an opportunity to avenge a teammate. Day of the dead, or Dia de los Muertos in Spanish, is a traditional Mexican holiday celebrated on the first and second day of November. Over these couple of days, families come together to honor their dead family members by creating memorials and serving up feasts. To honor family members that have passed, altars called ofrendas are created and filled with candles, pictures, and food offerings to commemorate the dead. “Día de los Muertos is important to my family and I because it’s a happy way of remembering the people we love and honoring them with happiness instead of sadness,” said Crystal Beltran, a senior.

Thousands of people every year attend events celebrating Day of the Dead. Many Latin American countries are seen annually celebrating Day of the Dead in their own distinct ways. Nevertheless, one common practice that usually occurs during the celebration is the cooking of food. “Last year my mom and I dressed up as La Catrina and El Calavero and invited family members over for dinner,” said Roger Vasquez, a senior. Food plays an important part in this holiday as it is used partly as offerings for family members. Food offerings are made to entice those who have passed on to come back for a visit. A standard ofrenda is sugar skulls. A sugar skull, also known as a Calavera, is an edible representation of a skull that is traditionally made out of sugar. Sugar cookies decorated as skulls are also popular treats found during Day of the Dead. More traditional Mexican dishes that are made are tamales, atole, as well as menudo. One of the many dishes is called Potato Pan de Muerto, it is a form of sweet bread. “We will sometimes eat the person’s favorite food so that it can range and depend on how many people will come over,” said Beltran, a senior.
The 2021 Arizona State Fair has come to town and brought tons of food with it. This year, the Arizona State Fair was back with a lot of changes, it is located off Mcdowell Rd and N 19th Ave. It’s going to be here from October 1 to October 30. “Three things I consider essential to bring to the fair are probably money, water and your phone to take a bunch of pictures,” said Cadence Presta, a junior who went to the fair. The fair consists of 58 rides and attractions for guests to enjoy. To get on the rides or play any of the games tickets are required. Along with all the fun games and rides, they have over 75 food stands for people to enjoy. To start off, the Cheesy Bacon Bombs was a breakfast option provided at the festival. That dish consisted of deep-fried pepper jack cheese cubes wrapped in bacon with garlic butter french fries. Another one of the funky foods was an “‘’All American Funnel Cake.” The price for one of those was $16. It had scoops of strawberries, blueberries and whipped cream. With the temperature averaging around 90-degrees, the fresh juicy watermelon was a nice treat to cool off with. The watermelon was hollowed out to make room for the pineapple soft serve, which came covered in chamoy sauce and spicy Tajin. The leftover watermelon that was removed was cut into thick slices and served for eating.

Día de los Muertos was first celebrated 3,000 years ago. Originally, the Aztecs had a festival dedicated to the Goddess named Mictecacihuatl. The Spanish conquistadores were Catholic and did not agree with the Aztecs practices so they attempted to eradicate all the indigenous beliefs. Ultimately, the Aztecs resisted the influence of the church and compromised by intertwining both cultures. This resulted in the creation of All Saints’ Day.

Preheat the oven to 350° F, then line a baking sheet with parchment paper. Add 6 quarts of water to a pot. Add 1 ½ tablespoons of salt and bring to a boil. Cut the pumpkin in half. Scoop out the seeds and place them into cold water to clean. Add the pumpkin seeds to the boiling water. Simmer for 5 minutes before draining. Dry the seeds by laying them out evenly on a sheet of paper towels or a dishcloth. Transfer the seeds to the baking sheet. Add 2 tablespoons of olive oil and bake until golden brown. Add harissa powder to taste.

With fall comes pumpkins, and with pumpkins come drinks. Specifically the Starbucks Pumpkin Spice Frappuccino and the Dutch Bros Pumpkin Pie Freeze. Both coffee and delicious, but which is better? Comparing the mid-sized drinks from both companies, the Grande at Starbucks is priced at $5.45, and medium Dutch Bros is priced at just $3.50 both a 16 oz drink. Dutch Bros is consistently better about the cost of their drinks. If you like strong pumpkin pie then the Pumpkin Pie Frost is for you. Your first sip hits hard with pumpkin pie, with a hint of eggnog. When you first start drinking it, it’s not bad. If you love sugar, then you are going to love this drink, because it has 122 grams of sugar in the medium. So this gets super sweet, super fast. But later down the road it gets probably too sweet even for someone with a major sweet tooth. If you take a lot of time to drink your coffee then the taste won’t be that bad. I would rec-
ommend sticking with a small or medium, a large would just be too much. The Starbucks Pumpkin Spice Frappuccino dials down the pumpkin a lot. It has the pumpkin taste that it promised but not enough for it to hit you hard. You would not have to take this drink slowly to enjoy it, though it may not be the 122 grams of sugar that the Pumpkin Pie Frost has, it still has 65 grams, so for the sugar lovers, this could be the drink for you. I may even recommend the venti size because it tastes great. What are the similarities? They both taste like pumpkins of course, they have the nutmeg and cinnamon sprinkles on the whipped cream, which the Pumpkin Spice Frappuccino has more of. And of course, every opinion needs personal preference. If you love Pumpkin pie, then the obvious winner is the Pumpkin Pie Frost. If you like a hint of pumpkin in your coffee then Pumpkin Spice is for you.

Preheat the oven to 325° F and line a baking sheet with parchment paper. Add 6 quarts of water to a pot. Add 1 ½ tablespoons of salt and bring to a boil. Combine sugar, instant coffee granules, and cocoa in a food processor. Pulse until combined. Add the pumpkin seeds to the boiling water. Simmer for 5 minutes before draining. Dry the seeds by laying them out evenly on a sheet of paper towels or a dishcloth. Whisk egg white in a bowl until consistent air bubbles appear. Stir in pumpkin seeds. Coat evenly with mocha mixture. Spread out the seeds on the baking sheet, bake until dry.

One side effect of the supplementation is Hypercalcemia, which is an exccess of calcium in the blood. This directly relates to loss of appetite, diarrhea and consumption, as well as nausea and vomiting. A second and more severe side effect is Kidney damage. Kidney damage in some severe cases causes kidney failure which can sometimes even cause death. Overall, Vitamin D deficiency supplements help more than they hurt but, it is always a good idea to take the side effects into consideration.

Seemingly simple bread has an extensive history and diverse background. Bread is a food made of flour, water, and yeast, or another leavening agent, mixed together and baked. Other leavening agents that can replace yeast are sourdough starter, buttermilk, kefir and yogurt. These leavening agents are one of the most important ingredients and are used in the longest step when making bread. Fermentation, also known as the rest process, is the scientific process of yeast feeding on the simple sugars from flour and results in carbon dioxide and ethanol being released. That carbon dioxide is what makes the bread rise and ethanol is important for flavor and the maturing of the dough. This process can last from ten minutes to two or three days. Making bread is overall a long and strenuous activity, but the end results make it worthwhile. “I enjoy making bread because I love to see the after product of my hard labor,” said Cara Walden, a senior The length of time depends on what kind of bread is wanted. Specific cooking methods and certain ingredients can also affect the outcome of the bread. For some, making bread is a difficult task due to how long the process is. Ancient Egyptian civilizations have survived off of bread for decades. They used special types of thick, non-porous bread as containers for other dishes. This bread was easier to bake than leavened flatbreads since it didn’t need a vertical oven. They had excellent trade relationships with the Greeks and exported bread wheat. Bread has been a traditional food in different cultures and religions for centuries and continues to be used in practice in modern times. “For an entire day my family and I prepare Challah on Christmas eve, so we can eat it on Christmas Day,” said Haylee Phillips, a senior. In some religions, bread has a symbolic meaning of the body of christ. It also represents God’s Supreme gift to humankind, eternal life. Mild winters allow for crops that are sensitive to extreme cold, but require cool temperatures to produce the fruit or vegetable. The extremely hot summers help make citrus sweet, chiles spicy, and dates ripen. “I love growing my own vegetables during the season. Everything tastes better when fresh, which is why I grow my own stuff,” said Ava Hernandez, a sophomore. Tucson, Phoenix, Scottsdale, and Flagstaff all have differentiating times where produce is in season. The heat of the desert allows fresh dates to grow and produce fruit that is ready for eating. Water quality and irriga-

Behind the cafeteria windows and lines of kids, the employees work hard to feed the school. “I love to cook, and it gives me joy feeding the kids,” said Shirley Fuss, manager of the kitchen. According to Fuss, the school cafeteria serves around 700 kids a day, which can be a challenge, but she likes the fast-paced work. However, the number of kids being fed each day varies, and sometimes the cafeteria gets more numbers than expected and they can run out of food. Fuss’s main goal is to not run out of food, and ensure that every student who wants a meal gets one. She loves the craziness of her job and getting to see the kids every day. Fuss has four kids of her own, for whom she has always enjoyed cooking for. She got into cafeteria work through her love for children and cooking, which is a perfect combination of the two. “The timing is a big challenge, getting the kids fed on time and the food out on time,” said Susie Marsman, cafeteria cashier. Marsman was in need of a job, and decided cafeteria work was the perfect fit for her. Her favorite part of her job is her co-workers, and she says they have a really close-knit bond. They always have one another’s

backs when things get crazy in the kitchen. When lunch actually begins, it can get hectic behind the counters. Students often cut the lines, which Marsman states can be challenging and is unfair to the kids who have been waiting. Stealing is also a problematic issue at times for the workers, as it messes with their numbers and takes food away from other kids. “Recently, administration has been helping with the lines and keeping kids in check, which makes a huge beneficial difference,” said Fuss. As for the actual food, certain criteria must be met by the cafeteria. US Foods states that the meals must have a protein, a meat, a fruit, and a vegetable. It is required to have a minimum of three of these components, but Fuss always likes to have more. At times, Fuss gets to choose certain meals, such as hamburgers, and alternates this choice from time to time. The food served to kids is high quality and nutritional. “I get hot lunch almost everyday, I hope the workers are doing well, and I just want to say ‘thank you’”, said Daniel Bloedow, a freshman. Getting food out to hundreds of students every day can be difficult, but the cafeteria workers love what they do and love the kids.

Actually read the directions. Anybody can follow the pictures, but what’s important to note is that bakers choose their words extremely carefully when they write their recipes. When they say “large bowl”, that means the largest bowl in your house. When they say “combine thoroughly”, that means whisk until your arm falls off, and then regret not just buying a stand mixer. After all, that would have been way cheaper than paying to get your arm reattached.
Baking is a delicate process. You’d think a massive ball of flour would be able to soak up as much water as it wants, but even just half a cup of water is able to turn what was once a flaky, clumpy dough into a soft, squelchy mess. Which is not something you want when too much water means it will stick to the rolling pin, and too much flour means it will crumble into dust.

Cookies need to stay level headed, just like you do. By the time it came to rolling out the dough, I was just about ready to smash every glass window in a five mile radius. As a result, the dough was rolled out half-hazardly and ended up varying wildly in thickness. This made the cookies fat and doughy on one end, and burnt to a crisp on the other. So to save you the headache, make sure to take a break from baking if your kitchen window starts to look extra breakable, and take your time with your dough.
