Lancaster Rotary Club - For 100 years, the members of the Lancaster Rotary Club have put service above self for the local community. Delicate Chocolate Cheese Cake: Ingredients: 1 1/2 cups finely crushed animal crackers cookies 3/4 cups white sugar 1 Tablespoon Instant coffee granules 1/4 cup melted butter ( Land Of Lakes Butter ) Cheese Cake: 1 1/2 cups white sugar 1/3 cup unsweetened cocoa powder 2 tsp.instant coffee granules 3 Tablespoon corn starch 3 ( 8 ounces ) package cream cheese, softened 4 eggs 1 tsp vanilla extract 1/2 cup chopped pecans Topping: 1/2 cups semisweet Chocolate chips 2 Tablespoon’s milk 1/2 cup marshmallow creme 1/4 cup chopped pecans Add all ingredients to list Preheat oven to 350 degrees F ( 175 degrees C ). Grease a 9-inch spring form pan with cooking spray. Mix together the animal crackers crumbs, 3/4 cup sugar,and 1 Tablespoon instant coffee granules in a bowl.

Pour in melted butter and mix until evenly moistened. Press into the prepared spring form pan and set aside.

To make filling, combine 1 1/2 cups of sugar, the cocoa powder, 2 teaspoon instant coffee, and the cornstarch in the bowl of an electric mixer; stir until well blended. Add the softened cream cheese and beat until the sugar mixture has been incorporated and no lumps of cream cheese remain, Beat in the eggs, one at a time, adding the vanilla extract with the last egg.

Fold in 1/2 cup of chopped pecans,then pour into the prepared crust.

Bake in the preheated oven for 15 minutes; reduce heat to 200 degrees F ( 95 degrees C ) and continue baking 2 hours. Turn off oven, and let the cheese cake stand in the oven for two hours more before opening the door. Remove and cool to room temperature. Once the cheese cake has cooled, melt the chocolate chips and milk in a small saucepan over low heat. Remove the cheesecake from the spring form pan and spread the marshmallow cream evenly over the top. Spread or drizzle the chocolate over the marshmallow cream and sprinkle the cup of chopped pecans over top. Chill completely before serving. Prep 40 m cook-4 h 20 m ready in 10 h.

Irritable Bowel Syndrome, or “IBS,” is a chronic condition that causes diffuse, cramping abdominal pain associated with bowel movement disorders.

Some people with IBS may have frequent, watery bowel movements (diarrhea), others may complain of constipation. Some patients switch back and forth between diarrhea and constipation.

The most common symptoms include: Stomachache and cramps related to and often relieved by bowel movement, diarrhea or constipation and bloating.

Diagnosis of exclusion is made based on clinical presentation only since there is no specific test to confirm IBS. Your doctor can figure out if you have IBS by asking you a few questions, and by running tests to make sure you do not have something other than IBS. Many medical conditions can cause the same symptoms as IBS, so it is important that your primary care provider check for other possibilities.

You can help yourself by keeping track each day of what you eat, what you did, and how you felt. That way, you can figure out if anything specifically that you do or eat makes your symptoms better or worse. Stop eating foods that might be making your IBS worse. Start by giving up foods that give you gas. Then give up milk, ice cream, and other foods that have traces of milk for two weeks. Eat more fiber, if you have constipation. You can do this by eating more fruits and vegetables. Or, you can take fiber pills or powders.

Studies show that being active and exercising for 20 to 60 minutes, three to five days a week helps improve IBS symptoms. Medicines can ease the symptoms of IBS, too, but no treatment can cure the condition. Counseling might also help with IBS because stress and anxiety can worsen the condition.

Medications that can help with IBS symptoms include: Medicines to ease diarrhea, medicines to ease constipation, antidepressants – these medicines work by blocking pain. When used to treat IBS, they are given at a much lower dose than would normally be given to treat depression. Additionally, your provider might prescribe medicines called “antispasmodics”, or antibiotics as these medicines sometimes help with bloating and diarrhea in some people.

Most individuals with IBS have the condition for the remainder of their life. Even so, most people find ways to improve their symptoms. The key is to keep working with your care provider to find an approach that works best for you.

Humor, at a Time Like This?

There are a lot of articles written about the hospice philosophy, hospice care, who is eligible for hospice care, etc. Having been a FairHoPe Hospice patient contact volunteer for over 20 years and a paid employee for over 11 years, I know that hospice is serious business. I also know that FairHoPe Hospice and Palliative Care, Inc. celebrates life, and life may involve laughter. But I haven’t seen many articles are written about humor, or laughter, in the hospice setting.

We’ve all heard the overworked phrase, “Laughter is the best medicine.” It may be an overworked phrase, but it is also a well documented truth. Laughter is just as necessary in life as are tears.

Humor used correctly does not disrespect the situation nor diminish its gravity. It can allow what is happening to begin to be discussed.

Humor may open the door to acceptance and healing. I remember comedian Steve Martin saying something similar to, “First the doctor told me the good news; I was going to have a disease after me.”

Humor may be in the form of a funny situation or a joke. Since I could never remember a joke, I began writing them down years ago after I would hear one that I liked. I’ve kept them in a binder.

After I get to know a patient and it seems like the right thing to do (sometimes it is not), I will bring that binder with me when I visit them.

I’ll ask the patient and family if they’d mind if I read from my binder.

It has never failed when I bring the joke binder we all have a great time. They invariably tell me that they haven’t had a good laugh like that in quite a while.

There was a particular family I visited, as a patient care volunteer, who requested a “groaner” type joke when I arrived for my weekly visit. A groaner-type joke would be for example, “Why did the cowboy buy a Dachshund?” Answer, “Because he wanted to get a ‘long little doggy’” (groan). The patient would then ask me something like, ”Did you hear about the cartoonist who was found dead? Details are sketchy.” Exchanging bad jokes was fun and it made the patient, his wife, and I think of a silly joke before my weekly visit. Yes, the patient and spouse knew he was terminally ill, but we had fun in spite of it.

One of FairHoPe’s chaplains, Karl Hartmann, tells the story of a terminally ill patient who is lying in his bed at home and smells the aroma of cookies wafting through the house.

“Honey,” he calls out, “Those cookies smell so good, may I have one?”

“Certainly not,” she replies, “Those are for your wake!”

A study of humor in the hospice setting by Dr. Herth in 1995 found that humor helped to maintain a sense of belonging. It helped patients to relax. It offered a feeling of warmth, lightheartedness, and delight. Humor was a life-enricher and a life enhancer.

FairHoPe Hospice and Palliative Care, Inc helps people to celebrate life. One way to celebrate life is to enjoy the moment, regardless of the circumstance. Laughter is a very effective way to do that. I’m often asked, “How can you work at Fairhope? Isn’t it sad?”

It’s hard to believe that not only is it very rewarding to be associated with FairHoPe Hospice and Palliative Care, but sometimes it can also be fun.
