A Cup of Tea = A New Start in Life One-on-One with Theda Zieglar, Director of Taste and See Ministries
SMW: What inspired you to start the Tea House in 2003? Theda: I saw a need at Anna Ogden Hall. The women that were transitioning out of the program had virtually no work experience. Some had been in prison or had felonies and employers did not want to take a chance on them. I saw that through the Tea House, we could help them with practical training to help them get ready to re-enter the work force and to be able to put something on a resume. SMW: What is your long-term vision for the Tea House? Theda: My vision is to see us have a new intern every 3 months and ultimately put more women through our program before they re-enter the community. Beyond the women we are trying to train/help, I am hoping that women like those reading this magazine will begin to see the Tea House as a “go to” place for an afternoon with friends and family. We need to pack it from opening to closing so we can continue the program. SMW: So tell me more about how local women can get involved and help? Theda: Again, we need customers! Women can help by coming in and supporting the Tea House. Bring your book club, Bible study group, birthday parties, or just your friends. SMW: Can you share a story about a woman who has directly benefited from the training she got through the Tea House? Theda: Kimmi is a prime example of what we do at the Tea House. She came to us with a very low confidence level but she was eager to work and learn all about running a restaurant. This amazing woman wanted to start a café of her own to do exactly what the Tea House is doing. Kimmi took every opportunity to learn about the business and soon her confidence level rose and she became a natural when dealing with the public. After her internship at the Tea House, she got accepted to the culinary school at the Union Gospel Mission. She is now working with a respected chef here in Spokane and is planning on pursuing her business degree. Kimmi says that working at the Tea House changed her life. She changed ours too. About the Taste and See Tea House Taste & See recently moved to 521 E. Holland. They are now offering a “walk-in” area where you do not have to have a reservation, and continue to offer their Full Afternoon Tea where you will enjoy a four course tea with china, sterling, crystal and linen napkins and all the trimmings from 11:00 to 1:00 Tuesday through Saturday. Football and Tailgate Party Foods from the Hispanic Food Network
Mexican-style Pizza
This savory thin crust pizza is made with large tortillas and homemade fresh tomato chile sauce. ingredients: 4
12-inch flour tortillas, or 6 8-inch (makes 2 large or 3 small pizzas) 1 lb. chorizo sausage, casing removed 3 dried guajillo chiles 2 dried ancho chiles 3 large fresh tomatoes 4 cloves garlic, rough chop 2 Tbl. tomato paste 1 cup water 1 large green bell pepper, chopped 8 oz. Mexican Oaxacan string cheese, sliced (substitute mozzarella) 4 oz. Mexican Queso Cotijo, finely crumbled (substitute parmesan or feta) 2 tsp. Mexican oregano 1 tsp. salt or to taste 1 tsp piloncillo or raw sugar 1/2 tsp. Spanish smoked paprika 1/4 cup fresh basil, chopped (optional)
directions: Prepare chile puree: Rehydrate the dried chiles by filling a small saucepan with water. Bring to a boil, submerge the guajillo and ancho chiles in the boiling water. It may be necessary to put a weight on the chiles to keep them submerged. Reduce heat to medium and simmer for five minutes. Set aside for 15 to 20 minutes to steep. Drain the chiles, remove the stem and scrape out the seeds. Place the chiles in a blender with the tomatoes, garlic, and a half cup of water. Blend until smooth. Prepare pizza sauce: Place a deep skillet over med-high heat. When hot add Ÿ cup of vegetable oil. Strain the contents of blender directly into the skillet. Push the puree through the sieve with a wooden spoon. Add the tomato paste, oregano, salt, sugar, paprika and ½ cup water. Turn heat to medium and let simmer for 15 minutes. Add more water if the sauce is too thick and adjust seasoning

(salt) if necessary. Assemble pizzas: While the sauce simmers, fry the sausage thoroughly over medium - low heat, breaking up the sausage as it cooks. Drain in a colander or with paper towels. Spread a little sauce on the top of two tortillas. Place another tortilla on top of each one. The sauce holds the two tortillas together. Slather each with the prepared sauce and cover with the chorizo sausage. Place the sliced Oaxacan cheese randomly on pizzas. Add the chopped green pepper, then sprinkle the cotijo cheese. Add a little more crushed oregano over the pizzas. Bake in a hot 400 degree oven for about 15 minutes or until crisp and the cheese is bubbly. Chopped fresh basil may be added 5 minutes before it comes out of the oven. Slice with pizza cutter and dig in! Go to our website for more delicious tailgate recipes. Coleen Smith Helps Women Overcome Western Health Challenges with an Eastern Touch One-on-One with Point of Origin’s Coleen Smith
SMW: So I have got to tell you when I learned I was going to be interviewing you – I got really excited. You are quite the local legend when it comes to successes in using natural methods to treat the “ills” many women face during the course of life. I know you have been an RN for sometime but what inspired you to develop an expertise in Oriental Medicine to help your patients? Coleen: Truthfully my interest in Oriental Medicine had a more selfish origin. I had an ill son and Western medicine was failing him. We went through 36 different doctors including specialists over a 4-1/2 year period but nothing was working. Finally a friend suggested herbal medicine. Within three-months of seeing a doctor of natural medicine – and switching to herbal medicine and supplements – my son was completely better. He is now 20 and hasn’t been sick since his astounding recovery. That was my “aha” moment. I knew I needed to learn more about herbal medicine and help spread the word about its amazing healing properties. SMW: So from a patient’s perspective when should a person consider acupuncture or Eastern medicine as opposed to traditional medicine? Coleen: I definitely feel there is a role for both. Eastern medicine does not replace traditional Western approaches. Acupuncture is a complementary medicine. And as an acupuncturist I want to present patients with more options and more natural choices. By educating my patients they are able to take charge of their health. SMW: So do you have any specific advice to women considering acupuncture for the first time? Coleen: Don’t wait to try it! The healing properties of acupuncture are amazing. It brings about a better sense of well being and it is very relaxing. I wish I had discovered it sooner. SMW: What about treatments for women who have passed the child-bearing age and are dealing with the symptoms of menopause and/or hormones in general? Coleen: I see many women who are dealing with the “change of life.” One 50-year-old patient stands out in particular. She was seeking relief from hot flashes which had become unbearable at night. She had also put on 20 pounds and simply felt irritable. Acupuncture has helped her deal with all of these symptoms. She now sleeps at night… she’s losing the unwanted weight… and she simply feels better. The irritability is gone. In fact I am now treating many of her friends. I love happy patients! About Coleen Smith Coleen lives with her family – including six children ages 3-22 -- in Liberty Lake. When not running her practice, Coleen fills her time with “kid-oriented” activities. The whole family enjoys swimming and taking long walks around Liberty Lake. Get organized with these easy tips from Shelia Keen of Keen Klean Cooler weather is once again upon us and with the changing of the seasons brings transitions to households and backyards alike. The biggest issue many people find themselves facing is a lack of adequate storage for holiday decorations, school aged kid’s projects, mail that piles on kitchen tables and counter tops and unfinished projects left out in the open. Half our cleaning time can be spent by picking things up and putting them away. Get rid of clutter to lighten the cleaning load. • Designate one room or area where the inevitable clutter can accumulate: a place where model airplanes can be built, the jig saw puzzles assembled, or crafting projects worked. • Place containers where clutter collects: a large toy box in the playroom, a filing cabinet for mail that otherwise collects on tables • Sort through your belongings a few times each year and give away anything you haven’t used recently. • Wall systems can be one of the most efficient solutions to storage problems with optional fittings to accommodate different storage needs with drawers, dividers, drop leaf panels to be used as a desk and display lights. Stacking modules are usually smaller and can be rearranged into a variety of configurations and built to different heights and are easily moved if needed. • Bedroom storage can be utilized with neatly stowing clothing under the bed in drawers or plastic tote containers designed to slide under beds. When shopping for storage units make sure to pre-measure the space between the bed and the floor to maximize the space under the bed. Built-ins can go a long way in maximizing storage in the bedroom with drawers for clothing, shelving for books and display lighting. • Christmas decorations can be stored in labeled tote bins and placed on upper shelving in garages, storage sheds or in basements. Utilize garage space by adding a floor in the rafters to hold additional decoration items. • For more storage space use small trunks or chests as coffee tables and side tables in the living room, den and as tables in the bedroom.
