Jersey Food Festival Saturday 18th May – Sunday 26th May 2013 Welcome to the third Jersey Food Festival. Once again we welcome visitors to the Island and Jersey residents to join our local food heroes in a week of foraging and feasting! The festival aims to showcase the very best of local produce and talent and offers participants the chance to explore the coast and countryside in the company of chefs, producers, farmers and fishermen. Indulge in fine dining in some of the Island’s Michelin starred restaurants or experience low water rambles, foraging for limpets and seaweed, food and ale trails, brewery and farm tours, chocolate tasting as well as a ‘cider and sausage’ evening under the stars and a ‘pop up’ feast of luxury seafood paella by the beach! The emphasis remains on the iconic Jersey Royal potato, as well as the Island’s fantastic dairy and award-winning shellfish sectors. Enjoy Jersey hospitality as you immerse yourself in the very best the Island has to offer from bite size to banquets!
Activity taking place throughout... Jersey Turbot Tours Jersey Turbot is a family-run business started in 2000 by former deep sea fisherman Dave Cowburn. The farm is uniquely located in a former World War II German gun emplacement and bunker at St Catherine’s in the east of the Island. It houses about 6,500 turbot at any one time, ranging from tiny 50p-sized fish to four-year-old turbot weighing several pounds. Tours are offered daily throughout the festival: Who? Longitude and Latitude Menu – Grand Jersey Longitude and Latitude of Jersey – a 3 course menu in Tassili prepared by Michelin star chef Richard Allen and his team. Devised entirely from ingredients originating from Jersey including the stocks, sauces, salt and sweetening which is no mean feat! Rock salt from the Jersey shoreline, locally produced wine and Black Butter from La Mare Wine Estate, seafood and shellfish line caught in the waters around Jersey and from the day boats around the coastline, all the meat from Jersey farms including Darren Quenault at Classic Herd. Salty Dog Bar & Bistro Dining at the Salty Dog Bar & Bistro in St Aubin is an experience that stimulates all the senses, so this year they are presenting a stunning “Menu du Terroir” featuring the very best food Jersey has to offer at this time of year. Chef and owner Damon Duffy excels in this field of cuisine and has mastered the subtle skills in reproducing beautiful classic dishes giving them a contemporary twist, retaining authentic tastes but with a kick. Expect the Salty Dog “Menu du Terroir” to be BIG on flavour and BIG on spice with Genuine Jersey produce in abundance sourced from local suppliers including Jersey Oyster, Faulkner Fisheries, Hamptonne Farm, Fungi Delecti and Classic Herd. Hens Have Never Been Happier! – The Grouville Food Trail One of Jersey’s most attractive parishes, combining a long stretch of sandy beach, fertile low-lying fields and hills providing spectacular views across to Mont Orgueil Castle and the Normandy Coast beyond, Grouville is one of Jersey’s most beautiful parishes winning the ‘best small coastal town’ in last year’s ‘Britain in Bloom’ competition. Jersey Ormer Farm Tour Explore one of Jersey’s most innovative ‘farms’! The Jersey Ormer Farm, housed in an old quarry near Gorey, breeds the local delicacy – the Jersey Ormer – for the local and export markets. The ormer is considered to be the most valuable seafood on the planet and is very difficult to farm. Wild ormers thrive far down the intertidal zone and can only be collected
around low-water during specified spring tides in the autumn, winter and spring so the farm meets a culinary demand and will provide “Genuine Jersey” fresh ormers which are truly delicious. Fun-filled Foodie Films at Grand Jersey The Danish/French Babette’s Feast is based on a story by Isak Dinesen. Stephane Audran plays Babette, a 19th century Parisian political refugee who seeks shelter in a rough Danish coastal town. Philippa (Bodil Kjer) and Martina (Birgitte Federspiel), the elderly daughters of the town’s long-dead minister, take Babette in. As revealed in flashback, Philippa and Martina were once beautiful young women who’d forsaken their chances at romance and fame, taking hollow refuge in religion. Babette holds a secret that may very well allow the older ladies to have a second chance at life. This is one of the great movies about food. Join Jersey Dairy’s Managing Director, Eamon Fenlon in this rare opportunity to visit the new Dairy, see its operation and taste its delicious products! At 3,000 square metres it is nearly as large as two football pitches. The Dairy produces luxury and low fat yoghurts, cream, butter, cheese and ice cream. Participants will then walk (approx 20 minutes) to nearby Trinity Manor with walking guide Arthur Lamy where they will meet Trinity Manor’s Farm Manager and some of his charges, Jersey’s most beautiful residents – the Jersey cow! Food and Wine Pairing Dinner: Harmony and Balance – Grand Jersey A six course degustation dinner with wines There is much hype and controversy related to food and wine pairing that is, to a certain extent, the blame of many wine writers and sommeliers over the years. Learning what to match with certain foods has been a learning experience for many wine lovers who were handcuffed by the classic ‘rules’ of the colour coding; red wines with meat, white wines with fish and poultry. While there is a certain inherent value to these time honoured values, they leave little to the imagination and discourage the notion of mixing and matching. Once this became apparent many enthusiasts took the notion to the extremes, believing that they could serve whichever wines they wanted to whatever dishes they desired. This extreme method encouraged an experimental spirit, but led to more misses than hits, and when a memorable match occurred, the diner did not know why. In food and wine pairing, there are many processes involved in understanding the attraction both food and wines have together. We look at two methods; ‘Harmony’ is basically looking for similar characters in both, whilst ‘Balance’ looks at the notion of ‘opposites attract’. Royal Rewards – The Genuine Jersey Royal Potato Growing Competition Awards Ceremony Join the finalists at the award ceremony for this year’s Genuine Jersey Royal Growing Competition. Now in its sixth year, the award-winning competition is organised by the Jersey Royal Company, supported by the Genuine Jersey Products Association and the States of Jersey Health Promotion Unit. This year 232 classes from 31 primary schools have been growing potatoes in buckets and studying Jersey Royals since growing kits were distributed back in January. The three schools that have grown the heaviest weight in a single bucket will be at the award ceremony to find out who will be crowned this year’s overall winner. It is not just children who have competed this year; all twelve parish Constables took up a parochial challenge and for the third year running there has been a hotly-contested competition among the local media. Join Kazz at 16:00 hrs at Grand Jersey where a mini bus will take participants to St Ouen to forage the land and then back to Grand Jersey for drinks and dinner. Coastal Forage This coastal forage along a stretch of St Ouen’s beach taking in the tide and shore line will identify edible plants, seaweeds and shellfish as we go. We will also track down some coastal plants. Cooking on a beach fire, we will then prepare the foraged foods and learn about any healthy properties they may hold. This is a good reason to head out to Britain’s biggest oyster and mussel farm in the Royal Bay of Grouville. Hear about the fascinating history of the oyster fishery and the cultivation of shellfish in Jersey.
