In the past 30 years, as I’ve stood in the lobbies of some of the world’s greatest hotels, I’ve seen a transformation in luxury travel driven not only by technology but by a shift in lifestyle. This transformation has made time one of life’s most precious commodities, if not the most valuable one. The separation of a person’s professional and personal life has become blurred as devices keep people connected anytime, anyplace. It is no longer a choice; it’s a reality. The Resort & Club understands today’s luxury traveler and aims to reconcile this blurring of the lines with exemplary personal service and ease of communication. We encourage you to text us for a hypo-allergenic pillow or a consultation with one of the Resort’s Enlightened Living (EL) nutritionists; and your request will be handled by the personal concierge team. Or, if you prefer the more traditional approach, you can always call the Resort & Club’s renowned concierge staff; it’s your choice. The addition of Mizner’s Quest is delighting families with a scavenger hunt of sorts, with interesting nature and architectural factoids found on the Resort & Club’s 356 acres. In 2014, the historic Cloister building will have completed a $30 million renovation, as the original 1926 construction was modernized to meet today’s luxury traveler’s standards. Pink Rink

Only at the Boca Raton Resort & Club does a winter wonderland turn pink, the Resort’s signature color, courtesy of its original architect, Addison Mizner. This year the Resort debuted a new sparkling pink ice skating rink, open from Nov. 1, 2013 through Jan. 1, 2014. The Pink Rink, which is expected to be an annual tradition, kicked off the Resort’s holiday season, from family events and entertainment to ice-skating and fireworks. The Pink Rink is the real thing—an ice rink measuring 85 feet by 40 feet, which can accommodate up to 100 skaters. There is skating during the day and evening, as well as special lessons and appearances by figure-skating camps. An added draw in the rink’s inaugural year were appearances by World Professional Ice Skating Pair Champions Frank Sweiding and Anita Hartshorn, who were on hand throughout the season to perform figure skating shows. An ensemble from Lynn University’s Conservatory of Music provided holiday music on Nov. 15 and Dec. 1. So just when you think you can’t have it all during the holidays, the Resort skates to the rescue—with a magical flurry of winter.

1928: The inn is

purchased by Philadelphia utility magnate Clarence Geist and expands to include more guestrooms, the former Cabana Club and a new golf course.

1930: The Cloister Inn 1940: U.S. Army reopens after $8 million in renovations as the Boca Raton Club and is run as a private club, open seasonally from January to March until Geist’s death in 1938.

Air Corps trainees occupy the Resort during World War II, remaining for four years and terming the property “the most elegant barracks in history.”

1944:

Real estate and theater entrepreneur J. Myer Schine buys the club for a paltry $3 million and reopens it as the Boca Raton Hotel and Club.

1956: On March 1,

1956, Arthur Vining Davis, former Alcoa CEO, buys the hotel for $22.5 million. He later forms Arvida Corp., which operates the hotel for 27 years.

FoR THe BIRdS

Monkey Man Addison Mizner is the iconic architect of Boca Raton and Palm Beach, and it is his vision that defined the Boca Raton Resort & Club in the early years of the Florida land boom. Aside from his legendary architecture, Addison Mizner is also known for his love of exotic pets, specifically a spider monkey named Johnnie Brown. Legend has it that Mizner—clad in silk pajamas, with Johnnie Brown on one shoulder and a macaw or a toucan on the other—would wake the hotel’s chef late at night for a midnight snack he invented, the “Bocaroon,” a chocolate, orange and coconut macaroon. Mizner ate the chocolate himself, gave the monkey the orange and shared the coconut with his bird. Today, Johnnie Brown is buried in Palm Beach—one of only two graves on the island. He was laid to rest in the courtyard of Via Mizner, Addison Mizner’s self-styled home off Worth Avenue. His epitaph reads: “Johnnie Brown, the human monkey.”

1993: The Boca

Raton Management Company replaces VMS Realty Corp. as the general partner for the Boca Raton Hotel & Club Limited Partnership.

1996:

Guest rooms and suites in the Cloister and Tower undergo renovation, and a $10 million tennis and fitness center opens; construction begins on Mizner Center.

Led by Joe Postel, director of golf course maintenance, the Resort invited a local Boy Scout troop to help build birdhouses, a butterfly garden and a native area of the Resort golf course for natural wildlife. And it’s green on the inside too, with “green meetings” that use water coolers and pitchers (instead of bottles), recycled paper products, and local, organic or fair-trade menus.

H. Wayne Huizenga and Florida Panther Holdings Inc., purchases the resort for $325 million; Gene Bates completes a $6.5 million redesign of the Resort Golf Course.

1998:

Mizner Center opens as a comprehensive meeting and conference facility, featuring four unique ballrooms and 80,000 square feet of flexible function space.

2000:

The Grand Piazza is completed, including Bar Luna, a renovated Malone’s Magic Bar, the Tuscan restaurant Lucca and more. A complete renovation averages $30,000 per room.

2001: Featuring 22 treatment rooms, the palatial Spa Palazzo is unveiled, while a twostory golf clubhouse debuts with a casual restaurant and luxurious locker rooms.

ASSET & LAWSUIT PROTECTION 8 Ways to Protect Everything You Own – From Everyone, Every Time! Hillel L. Presser, Esq., MBA Lawsuits have become big business, especially since the economic downturn. They’re a cheap way for people to make lots of money, often with an investment of just a few hours’ time. Consider -- a plaintiff may never even have to prove a thing; the prospect of spending hundreds of thousands of dollars in legal bills can scare a defendant into opting for a settlement without ever putting up a fight. Even if he did nothing wrong. More than 100 million lawsuits are filed each year; one in three people will be sued in the next 12 months. No one’s immune, but people with a lot of assets showing are especially vulnerable. If someone thinks you’ve got a lot to lose – and thus, they’ve got a lot to gain – you become a choice target. People who are less affluent are vulnerable in a different way: If a person with $100,000 in assets gets sued for $1 million, they’ll be wiped out, whereas the person with $5 million can survive a $1 million lawsuit. The time to protect your assets is before you get sued; it’s much more enforceable, costs less and you’ll have more options available. Here are some tips to help guide you: 1. Inventory your wealth. Most people have a lot more than they think. Take stock of valuable domain names, telephone numbers, intellectual property, potential inheritances, and other liquid and non-liquid assets. 2. Convert non-exempt assets into exempt assets. State laws protect some personal assets from lawsuits and creditors. Those assets typically include your primary residence; personal items such as furniture and clothing; pensions and retirement funds; and life insurance. Find out the exemptions for your state and convert non-exempt assets (i.e. cash) into exempt assets (i.e. life insurance). 3. Don’t rely solely on liability insurance. Buy as much insurance as you can; it’s cheap and it helps you sleep at night. But realize that 70 percent of claims are not covered. Your coverage may be inadequate for a particular suit; your insurance company may go bankrupt. Having insurance and an asset protection plan is the belt and suspenders approach to hanging onto your pants. 4. Don’t title your assets solely to your spouse or to “straw men.” They may have more financial problems than you. 5. Protect your assets with liens. What is a $100,000 car worth if you owe $95,000? What is a $1 million house worth if you owe $950,000? Take out lines of credit. Record mortgages against your property. Make all of your assets valueless. Become an unattractive candidate for a lawsuit. 6. Transfer your assets to a protective entity. The key to asset protection is to own nothing while controlling everything. Transfer any nonexempt assets out of your name to protective entities such as trusts, LLC’s (limited liability companies), limited partnerships, etc. 7. Utilize international asset protection. Enjoy an even greater degree of privacy and debtor protection with the many additional legal and procedural obstacles that creditors have to face in international jurisdictions. 8. Keep your plan up to date. Laws change every year. Have your plan reviewed yearly. But beneath the surface are literally dozens of steps, decisions, techniques and ingredients, all chosen, performed and managed by chefs who’ve developed their knowledge and honed their skills in the remorseless meritocracy of the professional kitchen. For this issue of Mizner’s Dream, we’re going to peel back that onion to show just how those skilled and knowledgeable chefs take their restaurants’ signature dish from just another plate of food to something that delights your taste buds and touches your soul. AdAm pile, lUCCA The meAT of The mATTer “We use 50 percent beef, 25 percent pork and 25 percent veal. If you use all beef, it’s going to be dry. We also grind pancetta and add it to the mix for the fat and that cured meat flavor. It carries throughout the dish.” The veg of The mATTer “We start out with hand-cut vegetables— onions, celery and carrots. You have to take the time to caramelize the vegetables, to develop the sugars. I slice garlic thin. I’m not big on minced garlic; every time you cut it you add that in-your-face garlic flavor.” YoU sAY TomATo, i sAY sAn mArzAno “I like the sweetness of San Marzanos. Ours are grown in volcanic soil in Sicily. They have a nice, natural tomato flavor even though they’re canned. They almost taste like the sun.”

Just because pasta is fresh doesn’t mean it’s better.” finishing ToUChes “Always toss the pasta with the sauce to coat it. We finish it with [fresh] basil, parsley and Parmesan, but we don’t add any herbs until we pick up [the order]. TAKAO SOEJIMA, MORIMOTO SuShI If there’s one chef in this country whose name is synonymous with sushi, it’s Masaharu Morimoto. So what other dish to feature in his namesake restaurant? After all, says chef de cuisine Takao Soejima, “We’re a sushi bar, right?” ThE RIcE STuff “We use No. 1 brown rice, and we have a rice polisher inhouse. [Polishing the rice, or removing the outer layers] keeps the rice very fresh. You don’t need too much water to cook it. I think the only restaurant that does this is Morimoto.” KEEpIng yOuR cOOl “We have a two-top freezer to keep fresh fish. Some fish we keep at minus 70 to 80 degrees Celsius. Very, very cold.”

There are plenty of other ways to thicken it; we put in a little heavy cream and reduce it down. You don’t want any of the mealiness you sometimes get with roux.” simpLy LoBsTER “We use a brioche roll like a hot dog bun. We slice it down the middle, butter the sides and heat it up. Then we squirt a little lemon aioli with paprika and cayenne in it on the bottom, add the lobster meat on top, and then we sprinkle a mixture of parsley and cayenne. White miso gives [the fish] a nice color and tastes better. It’s not grainy.” GOING GREEN “We serve it with an edamame puree. And we add a little spinach because edamame won’t give you that nice green color. Season it with just salt and pepper.” LOOkIN’ GOOD “We sauté mushrooms, baby bok choy and baby carrots with a little sesame oil. Put the banana leaf down on the plate, then the edamame puree, then the black cod. Then put the bok choy, mushrooms and carrots on one end and serve with a carrotginger sauce that’s been put through a strainer so there are no remnants.” FISh FINDER “Our black cod comes from Alaska. or many couples, deciding where to have the wedding is a lot like falling in love; they know they need to do the research, and they always encounter a few duds before they find “The One.” That’s why a wedding specialist like the Boca Raton Resort & Club’s Jillian Stevens is invaluable in helping couples narrow it down. The first thing she asks every bride to do? “Look at the overall vision of your wedding and determine what’s most important on that particular day—whether it’s the quality of the food and beverage, whether it’s a grand ballroom or having a facility that can provide a destination-type feel for all of your guests so no one has to leave,” she says. “Everything else can kind of fall into place.” The second question is always about the

number of expected guests. Just knowing those two things can go a long way to getting a couple started—and with the many options available at the Resort, the rest is a piece of (wedding) cake. “Truly, there is something for every bride who walks through the door,” Stevens says. Recently married bride and groom Julie Galante and Alex Gulick found their inspiration in the Royal Palm Ballroom. Building on the longstanding relationship her family had with the Resort as members, Galante felt that the place she had experienced so many memories over the years was the ideal location to make new ones. For those less familiar with the Resort’s many special venues, we’ve broken down a few of the highlights in the pages that follow.

The Beach Club is all sleek and contemporary elegance. This serene seaside area is secluded from the main resort, with ceremonies hosted on the cabana pool deck or directly on the beach. The Dunes Ballroom at The Beach Club can provide couples with more privacy for their special day—and an extravagant chandelier that is second only to the ocean view in terms of jaw-dropping impact. “It has a very beautiful and unique chandelier, which is surrounded by an LED light treatment. The LED lights can change color to really enhance the space,” Stevens says. “Some couples hire lighting specialists to achieve the same effect, and the Dunes Ballroom already has it.” More important than the ocean views or the high-tech lighting is the overall feeling of laid-back luxury that only a seaside location can provide. The Resort offers weddings with a coastal backdrop

Wedding Trends dJ Live: Combining DJ tunes and live music, this concept enhances traditional songs with accompanying vocalists, percussionists, saxophonists, etc. “It really adds a lot of dimension and excitement to the DJ experience, especially during a cocktail hour or dinner period,” Stevens says.

Family style dining: Looking to provide a more home-style experience to dinner, brides are staying away from buffets and stations. However, in an effort to still allow people to choose what’s on their plate, they’re opting for family-style passed plates.

Traditional decor: “Brides are still in the realm of traditional, using a lot of lace, creams and blushes and looking into antiquetype influences like antique china,” Stevens says. “But I foresee that modern trends will be coming back … probably in 2015.”

The Cloister area of The Resort, built in 1926, offers this with two distinct ballrooms. With a grand staircase entry, the Valencia Ballroom calls to mind 1920s and 1930s elegance. “The Valencia Ballroom has an existing stage, which is a wonderful attribute because you can put your entertainment right up onstage and feel like you’re in a supper-club-type environment,” Stevens says. The Cathedral Room provides a different ambience but is equally steeped in historic charm. Its name is derived from the soaring coffered ceilings, gold-leafed pillars and striking stained glass windows—all designed by the Resort’s original architect, Addison Mizner. When complemented with softly glowing candles, the room is especially romantic, with the dreamlike ambience of an ancient Spanish monastery.

Both were attending college at the University of Florida, and to strike up a conversation, alex asked Julie about the photo she had on her phone of her Doberman Pinscher, Diesel. they made a date to meet at the dog park the next day, where Julie (and Diesel) were introduced to alex’s dog, Kaia. after spending the day together, it was clear that something special had taken place. the rest, as they say, is history—or really just the beginning. When it came time to choose a location for their wedding, they had no doubt that it would be at the Resort. after a brief stint in Boston, the couple was pining for warm weather. and since the Resort already had been an important part of Julie’s life, the choice was obvious. as members, her family enjoyed countless dinners at the Resort and weekends at the Beach Club that amounted to many fond memories. Although the Resort accommodates any style of wedding in these spaces, the locale and decor are distinct and upscale. “They’re very refined settings,” Stevens says. “A lot of couples that choose this area have blacktie weddings.” Add a few masks and acrobatic entertainers, and guests could easily feel as though they’ve somehow stepped into a mysterious yet alluring masquerade.

SMALL-PARTY PLANNING Weddings don’t have to be big to be fabulous. Small parties can still take advantage of Resort amenities without being swallowed up by large ballrooms by hosting events in one of the on-property restaurants. Luca Trattoria, Cielo and 501 East all have private rooms. “It’s a more ideal environment for 10 to 40 guests who are looking for an intimate setting that is equally luxurious and unique,” Stevens says.

Key Feature: royal Palm Ballroom accommodations: From 250 to 600 guests Best For: Larger weddings with opulent decor The Mizner Center has four separate ballrooms, but the most popular by far is the Royal Palm Ballroom. Its 22-foot-high ceilings and crystal chandeliers give the space a grand feeling that extends beyond the ballroom itself and into the foyer entry. Known as the Royal Assembly, this foyer area greets guests with rich tones of blue, a huge fireplace and a series of great hall archways reminiscent of the Moorish-style palaces in southern Spain. “It’s a very popular focal point for a cocktail hour,” Stevens says. “When people enter that foyer space, it’s a nice point of interest. It’s a great setting for a food station, place cards, etc.” What the entire combined space allows in great supply that the other venues don’t is the room and grand ambience required to stage an event with every amenity and all the trimmings. Larger weddings with extreme lighting packages, layers of draping and large orchestras would be well served here.

spa with a purpose the resort’s spa says goodbye to the name spa palazzo and digs deeper into its spanish roots to enhance the experience.

D

uring its transition to a full-fledged Waldorf Astoria spa, the sumptuous pampering facility at the Resort dropped the name “Spa Palazzo,” which it had for more than a decade; it’s now known simply as The Spa, says its director, Cindi Moreno. In fact, the new experiential cues and additions at The Spa fit so well with its Spanish-inspired design and legacy that it’s easy to imagine that they’d been there the whole time. Soothing Spanish music plays in the hall waiting area; out by the pool, the scent of Mediterranean citrus permeates the air. The juice bar features a tapas menu and a selection of cavas, and small nibbles like olives and cheeses are served throughout the day. Combined with the striking Alhambra-inspired architectural details, these nuances create a well-rounded Spanish vibe that’s more readily felt than before. “Every detail has been examined,” Moreno says. “It’s much more memorable.” The attention to detail continues during treatments. The Spa has brought in Barcelona-based luxury spa brand Natura Bissé for all face and body treatments. “We wanted to condense everything to make it an

easy experience,” Moreno says. “We want to meet the needs of our clients without overwhelming them with too many products.” One treatment choice destined to stand out is the HydraFacial, launching at The Spa in early 2014. The HydraFacial uses the power of gentler “hydradermabrasion” to simultaneously exfoliate and rejuvenate the skin. This resurfacing technique is different from earlier generation microdermabrasion because it incorporates water instead of abrasive materials. “We’re finding that microdermabrasion can be almost too hard on the skin. So now there is HydraFacial, which uses water as an extractor and a delivery system,” Moreno says. That means it removes impurities without any need for squeezing or pinching the skin with an extractor. It’s less painful and irritating, so you can get this treatment done in the afternoon and attend a special event that evening with glowing skin. Plus, this same device helps push hydro peptides and serums into the skin for deeper delivery that is visibly noticeable post-treatment. While she’s very excited to be offering new treatments, Moreno says a

visit to The Spa isn’t just about the treatment menu. Creating a memorable experience while meeting people’s wellness and rejuvenation needs is at the heart of The Spa’s mission. The signature Spa Ritual, a multistep bathing process using steam, deluge and soaking to detoxify the body and loosen muscles to prepare guests for treatment in a palatial bath setting, is just one of many ways The Spa achieves this. Moreno calls it “spa with a purpose.” It means that during booking, guests are asked questions that guide them to the most appropriate treatments to meet their needs. “It’s our job to find out what you’re hoping to achieve out of your spa experience,” Moreno says. That experience continues after regular spa hours with the Spa After Dark series of events. Once a month during season, The Spa hosts events that allow guests to mingle in a spa setting. Past events have included Zen Den Cinema, a movie night at the spa pool, complete with cavas, tapas and treatments; and a flamenco dance party. All these experiences, from the scents and sights to the treatments and events, culminate in a spa experience based on the notion of living well as opposed to an occasional indulgence. Tapping into that mentality, The Spa is working with other areas of The Resort, including fitness and nutrition, to develop a larger wellness umbrella so visiting families can embrace this lifestyle in fun ways (like putting on chef coats and taking a cooking class about eating healthier). Regardless of their specific goals, guests (both newcomers and longtime members) will continue to find what they’re looking for. “The experience is only getting better. Make the Most out of your spa visit Give yourself time. “i would arrive at a spa at least an hour in advance of the booked treatment. that way you can enjoy the facilities such as the sauna and steam room. i find that it takes almost an hour to actually put the phone down and truly unwind,” moreno says. hen looking at the paintings, photographs and sculptures in the Waldorf Astoria Chicago, you may feel you’re in the company of spirits paying their respects to a hallowed edifice. In the lobby, flanking the hotel’s iron gate, two sculptural busts by Javier Marin look like the roaming heads of apparitions fixed in an ageless limbo. In the lobby lounge, Marilyn Pappas’ tapestry “Victoire and the Life of Beauty” features the rest of the supernatural body—an angelic, headless being floating in a floral miasma. In Mark Sheinkman’s “Union,” positioned on the third floor, white ribbons intermingle like dancing plumes of incense—or like a spirit manifesting itself. These selections date back to the hotel’s 2009 origins, when it was called The Elysian, fashioned to resemble a vintage French chateau. These wisely curated works seem to be having conversations with one another, reverberating the same themes and textures, haunting the floorboards with an implacable ethereality. If there’s something unreal about most of these pieces, they are of a piece with the Waldorf Chicago’s fantastical architecture designed by renowned architect Lucien Lagrange with a $280 million budget. Today, the space emulates the grand hotels of 1920s Paris, with its impressive colonnades and spires and its focus on café culture and period fashion. As befitting a Waldorf, the beauty is in the details, particularly its adherence to the styles and fabrics of the era’s trendsetters, Coco Chanel and, later, Christian Dior: The lobby’s iconic chandelier was modeled after a brooch that Chanel famously wore, and the lounge’s marble floor was inspired by Chanel’s apartment; the backs of Dior dresses inspired the drapes in the lounge. Wandering through this faux chateau, it’s hard to resist daydreaming that you’ve stumbled into a glamorous European time warp, a la “Midnight in Paris.” “These wonderful elements create a story, and every corner you go around, there’s something unique and noteworthy,” says Sean Lynch, director of sales and marketing for Waldorf Astoria Chicago. “Within this modern age,

sometimes you get designs by a committee, and what you end up with is very bland. But here we have something that’s very unique and has an aesthetic that is immediately pleasing to all, and not cookie-cutter in any way.”

If It aIn’t broke… When it opened in Chicago’s historic Gold Coast district in December of 2009, the Elysian Hotel was most definitely not broken. The visionary concepts behind the art and architecture were just some of the powerful elements the 188-room hotel had going for it when Waldorf Astoria obtained the property in early 2012. So why fix them? “The pieces were so amazing and so new, there was no desire to switch anything out,” Lynch says. “People come and ask specifically to see some of the paintings and images.” Another signature element of the Elysian was that tipping was not permitted; likewise, it’s not permitted at the Waldorf Astoria Chicago. “Regular guests had become accustomed to that, so it was important for us to keep that legacy that they left us,” Lynch says. “People ask us, ‘Does that affect our service?’ And the reality is that no. Our team is here to deliver an exceptional experience for our guests, and tipping is not a motivating factor.”

What did change with the acquisition is that the property now features True Waldorf Service—the personal concierge service that began in the Waldorf’s flagship location in New York, and which guarantees VIP treatment from pre-arrival to checkout. It’s safe to say the branding transition has gone smoothly: Under different names in 2011 and 2012, the hotel won the title of Top U.S. Hotel by Condè Nast Traveler, and in 2013 it made the luxury travel magazine’s Gold List as one of the best hotels in the world. “Chicago is phenomenal for the number of great hotels that it has,” Lynch says. “For a city this size, it has some of the best hotels in the country, so we’re very competitive and want to remain up there. The [awards] help drive our spirit and attention to detail. They’re a boon for us, because they drive a distinguished guest who is well-traveled and looking for the very best.”

The sprawling 12-room spa, modeled after ancient Greece, is accented by granite, natural stone and water centerpieces. It includes a hair and nail spa, a health club with a Pi-

lates and Gyrotronic studio, a lap pool and a refreshment bar. For first-time visitors, Lynch recommends the Elysian Massage, which can run 60 or 90 minutes, and provides the opportunity for each customer to discuss his or her problem areas and intentions with the masseur. “The spa prides itself on tailoring its services to the customer,” Lynch says. “It all ties into what oil they use, what type of treatment. … We have a fabulous market where we’re not tied to any one product. Part of the tailoring is that they choose the best in the marketplace that they want to feature.” Unlike some spas, the Elysian was designed with men, as well as women, in mind. The Gentlemen’s Lounge, colloquially referred to as the Man Cave, serves beer in front of a television and fireplace, while guys wait for their “Mantenance” package. “There’s nothing froufrou about it,” Lynch says. “We’ve found that all of that New Age stuff puts a lot of men off. It’s very simple, uncomplicated and tailored. Our men enjoy that.” The hotel puts just as much care into Balsam, its New York Times-approved full-service restaurant. Described as a contemporary casual bistro, it serves market-driven food with seasonal ingredients, which the chefs personally handpick from local green markets twice weekly. The restaurant is known for its flatbread—Lynch recommends the bacon, onion and crème fraîche variety—and its expansive dinner menu, divided into categories like “bitter,” “sour,” “salt,” “salt2” and “crisp.” Make sure to indulge in the Sunday Supper, which includes four dishes, two sides and a dessert—including, sometimes, a whole chicken hung and prepared for four days prior to the meal.

When in the Windy City If and when you choose to leave 1920s Paris, Chicago offers plenty within walking distance of the hotel, including Oak Street, which is known for its luxury shopping: Hermès, Prada, Barney’s, Marc Jacobs and others await. There is a beach fewer than 10 minutes away, and you’re a 15-minute cab ride from the world-famous Millenium Park and most other Chicago attractions, including Wrigley Field, the Steppenwolf Theatre, Chicago Theatre and Lincoln Park Zoo (O’Hare International Airport is 18 miles from the hotel). Festivals celebrating just about everything sprawl across downtown streets weekly during high season. “Chicagoans love food, fun, sports and culture, probably in that order,” Lynch says. “There’s a strong culture of festivals and festivities that are ongoing. It’s definitely worth checking with the concierge as to what is going on in the city, because there are some really wonderful events that are worth fitting into your schedule.”

RichaRd hayduk The new man in charge makes sure the Boca Resort is always one step ahead.

R

ichard Hayduk describes his entry into the hospitality business as a “Caddyshack moment”—his fate determined by a putt on the 18th hole at The Breakers’ golf course. This was in 1985, and Hayduk was 22 at the time, fresh out of college at Old Dominion University in Norfolk, with a degree in labor relations and few opportunities on the horizon. He had no interest in continuing his father’s commercial laundry business, which supplied the bedding and towels for more than half of the hotels in Manhattan. So his father set up him with one of his hotel friends, a former general manager at New York City’s Plaza Hotel, who happened to have relocated to The Breakers. “He said, ‘How about this: I’m going to send you a round-trip ticket, and I want you to bring your best golf game, because while I’m going to interview you, I need you to empty the pockets of these two guys who have emptied my pockets for years,’” Hayduk recalls. “We got down to the 18th hole, a long putt. I sunk it. He won all the money, and I got the job offer.” Hayduk has remained in the hospitality industry for 30 years, becoming one of its most-admired managers and presiding over properties across the United States, Europe and the Caribbean. But he’s especially pleased to be in his newest position: president of the Boca Raton Resort & Club, replacing outgoing leader Steve Ast last January. “I met my wife in Palm Beach, all three of my kids were born in Palm Beach County, my in-laws were in Palm Beach County,” he says. “So, in essence, this was coming home for us. But more so, I was in this market for more than 16 years, so I know who our customer is, I know the members, I know the environment.” It’s an environment that has changed since his 14-year tenure at The Breakers. People are more active on their downtime, for one, and resorts today appeal to a broader swath of vacationers. Hayduk is cognizant of these new demographics, and he’s already pushing the Boca Resort in a direction that mirrors them.

“What I noticed was that there was this incredible resort and club that was operated well, with high-quality people––but that there was no messaging,” he says. “And I felt that the messaging was somewhat antiquated, especially as it relates to who Boca Raton is today. You look at Boca Raton today, and it is what I call luxury with an edge. We are, figuratively and literally, between Palm Beach and South Beach. And I think the people who elect to live and play in Boca Raton don’t mind having a foot in either Palm Beach or South Beach.” Hayduk’s initiatives at the Resort adhere to that mind-set. He’s hired a resident DJ four nights a week in the Palm Court. He brought in a surfing school, partnering with the renowned surf company Billabong, out of Australia. He installed an ice-skating rink in November and December, and he launched Mizner’s Quest, an educational scavenger hunt that introduces children to the property. “We’re creating a lot of chaos with these initiatives, and we preach to our leadership team that we’re a lot like a bicycle,” Hayduk says. “If the bicycle’s not moving, then it’s on the ground. What I mean by moving is not staying on the hamster wheel—I mean ice-skating rinks and surf schools and, in the past, we’d close restaurants when we slowed down. Now we’re not closing restaurants, but we’ll revise the menu. We’ve made some leadership changes because we have to equip ourselves in the direction we’re going.” With a 12-hour-a-day schedule that includes two out of three Saturdays and the occasional Sunday, Hayduk seems intent on pedaling the bicycle faster. His job is so gratifying, that he doesn’t even see it as work. “This is my hobby,” he says. “When I’m off, I’m studying about food, studying about what’s going on in the world, because the worst-case scenario is for Boca to do what everybody else is doing. It should be that we’re the leader in many categories. God forbid we’re lagging behind.”


RichaRd hayduk on: Trends in The resorT indusTry: “The good news is the effects of 2008-2010 are further diluted. Leisure travel is steadily on the rise, and the Boca resort is getting more than its fair share. But what 2008-2010 caused the business community to do is to be smart and scale back and don’t become undisciplined. What we’ve seen are that meetings are slightly shorter. The meetings are a lot more disciplined. The game of golf [as part of a business meeting] is declining. W

ith the Atlantic Ocean and Lake Boca as its playgrounds, the Boca Raton Resort & Club is home to a growing list of water sports options, including a new surf school. Morgan Baer, whose company Costa del Este runs the Resort’s water sports program, says surfing is a natural, considering the Resort’s location. The warmer, generally calmer, waters that hug South Florida’s coastline are inviting for people of all ages and abilities who want to surf, paddleboard, kayak, snorkel, sail, drive a Jet Ski and more. “The proximity [to water] is incredible,” Baer says. “There’s no other resort that has the ocean and Intracoastal options.” Baer should know. The son of an oceanographer and a South Florida native, Baer’s relationship with the local waters runs deep. He’s a national champion swimmer and competitive water polo player. He grew up only a short boat ride from the Resort on Hillsboro Mile, where he’d free-dive for fish and lobster. He started surfing at age 13, is a longtime surf instructor and owned a surf shop before starting his water sports business about five years ago. The new surf school is a partnership with Australian surf wear company Billabong. Aspiring surfers—children and adults—learn to ride the waves at the Beach Club. Members and guests may choose among three-hour weekday clinics, private lessons and one-hour daily surf classes. Everyone leaves with

goodies, including a Billabong rash guard, which is a sun-protective T-shirt that helps prevent rashes when paddling a surf board; a customized video to view online; photos they can post on Facebook or Instagram; as well as a one-hour surfboard rental, to practice their new surf skills. “Everybody leaves with something to remember their surf experience by—something cool,” Baer says. “Billabong and the Waldorf Astoria came up with a [rash guard] design strictly for the Resort. So guests walk away with something that you can only get at the Boca Raton Resort & Club.”

From Standing to SurFing Among the surf school’s goals is to build confidence on the water, not to give a crash course on the sport, Baer says. “We [help students] learn, have fun and see what surfing’s about,” he says. “Guests don’t have as much time, so we want to make sure guests leave stoked, like they accomplished something.” Surf school first-timers learn how to stand on a surfboard, usually on the sand, to build confidence before venturing out into the rolling waves. Once students have their surf legs, Baer and his staff guide them into the waves, where they can safely test their skills and ride waves to shore. “As you move on with us, you can learn how to catch a wave on your own,” he says. The three-hour program offers a more in-depth surfing experience,

Baer says. Students learn about tides and timing, how to paddle out into the waves, duck dive (which is going under or over waves) and catch the right waves. “Timing is everything with surfing. They’ll learn the timing of when to go and when not to go. They’ll learn what to do when they wipeout—how to be safe,” he says.

There’s more Surfing is one in a wave of water sports activities at the Resort, ranging from simple equipment rentals to classes and guided tours. The water sports department at the Resort rents paddleboards, kayaks, giant catama-

rans, snorkel gear, Jet Skis, Boogie Boards and more. “You name it on the water, and we pretty much rent it,” Baer says. Resort visitors have all kinds of options for water fun. One example: banana boat rides, where kids—or kids at heart—sit on a tube pulled by a Waverunner. Not only are there choices about what water sports to experience, but also where to experience them. Baer says choppy waters in the ocean are no problem when you also have the calmer waters of the Intracoastal. “Here in Florida, the ocean is calm from about 160 to 200 days a year. [Having access to the Intracoastal] gives us the opportunity to give a guest the ability to go out on the water without having to worry about the waves,” he says. “They can still come out, enjoy the Intracoastal, see the beautiful homes and enjoy the wildlife.” The Resort offers kayaking and paddleboarding for individuals and groups. Guided tours run about 90 minutes, and kayakers and paddleboarders often get glimpses of local wildlife, including manatees and spotted rays. “A lot of bait fish come right through the inlet, which draws some of the bigger fish. So, we see tarpon, amberjack … and lots of schools of fish,” Baer says. Snorkeling is a popular choice among visitors and members, especially at the rock piles on the south end of the Resort’s beach area, according to Baer. “There’s a nice reef where you can go with just a mask and snorkel. It’s in waist-high-deep water most of the time,” Baer says.

Baer says Resort water sports professionals are experts who do more than distribute equipment and gear. They create an experience for guests and members, whether they take them on a tour, teach them a water sport or educate them about where to go, how to use the gear and the rules of local waters. “We’re incredibly safe and thorough with what we go over in our regulations,” Baer says. “It’s a healthy respect that we all have for the ocean, which is very important.” In 2014, the Resort will offer more new options in water sports, including an introduction to scuba. “It’s an introduction for people who have never tried scuba before. It’s not a certification, but it’s a scuba experience,” Baer says. Those who join in the Resort’s scuba experience will discover what it feels like to breathe underwater and what it’s like to wear a buoyancy compensator (BC) and other equipment. “From start to finish, it’s a cool interaction with the water,” Baer says. “Of course, if you get excited, that will lead you into seeking open-water certification, and, for that, we can help guide you in the right direction.” For more information on Resort water sports, call extension 3385.

america’s rum-swilling, aloha shirt-wearing love affair with tiki culture has deep roots— past and present—at the iconic Mai-Kai in Fort lauderdale.

t looks like a production of “South Pacific” run amok. Inside the Mai-Kai Restaurant in Fort Lauderdale, sailors in white uniforms are spinning Betty Grable look-a-likes on the dance floor, while guys in loud Hawaiian aloha shirts and women in Polynesian-inspired dresses cavort over huge tropical rum drinks. Both sexes show off tattoos of palm trees, hula girls and South Sea scenes on their arms and legs. Not the temporary kind, either; the real deal, cousins to the ones Sailor Jerry used to ink on Hotel Street in Honolulu back in the 1940s. In a corner of the Molokai Bar, a lithe, blonde contortionist in a grass skirt and bikini top does a burlesque routine, arching her back until her golden locks are almost sweeping the floor, while a goatee-bearded bandleader with a beatnik air pounds out a jungle-tinged tune on the vibes. Welcome to Hukilau. The event, held each spring in Fort Lauderdale (the 2014 edition runs from June 12-15), is the largest annual gathering of “Polynesian pop” devotees on the East Coast. “This is my favorite part,” says Christie White. “Looking at everyone that has spent their money and their time coming from all over the world to celebrate with us, and seeing them have a good time. That’s when I know I’ve done

my part.” White, a buxom redhead who is, by turns, cheerful, demanding and doting—one gets the feeling she’d make a great Cub Scout den mother—is the co-founder and organizer of Hukilau, which launched in 2002. Tonight, she’s wearing a vintage 1960s sleeveless print dress, the better to show off the tattoo on her upper right arm. “It’s my tribute to Eli Hedley,” White explains. “He carved the Moai tiki outside the Aku Aku Restaurant in Las Vegas, which is now gone. So I decided to get the whole Aku Aku sign, and that was done by an artist by the name of Hoffa.” From somewhere in the crowd, White hears her nickname, “Tiki Kiliki,” and she spins away. For the uninitiated, Polynesian pop encompasses all facets of America’s 20th-century obsession with the South Pacific. It’s more than just aloha shirts, tattoos and dashboard hula girls—it’s also rum cocktails, backyard luaus, Martin Denny records and, of course, tikis, those ubiquitous carved representations of island gods. The fascination with the latter is such that popsters refer collectively to their various pursuits as tiki—or “tiki culture”— and to themselves as tikiphiles. This near-religious fervor for paradise, Polynesian-style, might seem a bit odd, until one recalls how big a phenomenon tiki was the first time around.

1 ounce fresh lime juice 1 ounce Rhum Clément V.S.O.P. the rum ConneCtion The man who kick-started it all was Raymond Ernest Beaumont Gannt, a peripatetic Texan who’d spent the 1920s hotfooting it around the Caribbean before opening a bar in Hollywood, Calif., in 1934. Gannt’s idea was to capture the romance of the South Sea—which had long been a lure for artists and writers, including Paul Gauguin and Herman Melville—and pour it into a glass. To do it on the cheap, he relied on the one spirit in oversupply following the recent repeal of Prohibition: rum. “People bought rum during Prohibition because it was the only bonded alcohol they knew wasn’t going to kill them,” says Jeff “Beachbum” Berry, noted author of numerous books on tiki mixology. “After Prohibition ended, the rumrunners had tons of this stuff that they could no longer unload.” Gannt bought the suddenly plentiful spirit by the barrel and mixed it with different combinations of fruit juices and syrups, taking as his inspiration the Cuban daiquiri and other Caribbean drinks he had encountered on his travels. “He took the holy trinity of Caribbean mixology—rum, lime, and sugar—and turbocharged it,” Berry says. “All of a sudden, a three-ingredient drink became a 14-ingredient drink.” Gannt called his creations “rum rhapsodies,” christening individual concoctions with such fanciful names as the zombie. So what if the drinks had nothing to do with Polynesia? Nobody had to know. While he was at it, he invented a new persona for himself, one that fit the business. Because “Raymond Ernest Beaumont Gannt” was a mouthful— and no doubt would have made for a very expensive sign—he decided to call his place Don the Beachcomber. His new name? Donn Beach, naturally. The extra “n” was a flourish, like the flower garnish on a tiki drink. Don the Beachcomber, located near Hollywood’s Egyptian Theatre, reeled in the swells, including Tinseltown’s A-list: Charlie Chaplin, Joan Crawford, Marlene Dietrich and Howard Hughes, among others. It wasn’t long before imitators cropped up, stealing not only Donn’s drink concept but his decor, a kind of beach-shack chic dominated by bamboo furnishings and nautical elements. One of these imitators was an enterprising saloon owner from Oakland, Victor Bergeron, who, ripping another page out of Donn’s book, took to calling himself “Trader Vic.” His eponymous restaurant would grow into a national chain and do for Cantonese cuisine what Don the Beachcomber had done for Caribbean drinks—convince people this was what they would find in the islands of the South Pacific, if only they could get there. (Bergeron also made a lasting contribution to the tiki drink menu: the mai tai, which he unveiled in 1944.) The Polynesian-themed restaurants were a brilliant novelty, to be sure, but one that might have died out had it not been for World War II. “Almost all of the GIs who fought in the Pacific, the ones who made it back, had fond memories of Hawaii,” explains Berry. “It was this wonderful new world they could have never have hoped to see.” One of those GIs, writer James Michener, mythologized the experiences of his fellow soldiers in Tales of the South Pacific. Published in 1947, the book became an instant best-seller and won the Pulitzer Prize. Two years later, the musical “South Pacific,” with songs by Rodgers and Hammerstein, opened on Broadway. By the 1950s, Polynesia was a national preoccupation. Hundreds of themed restaurants sprang up coast-to-coast, each with a more elaborate design. “One of the things that fascinates me about tiki style is how these places inspired each other,” says Sven Kirsten, author of the influential The Book of Tiki, which helped launch the current tiki revival (and coined the term “Polynesian pop”). “They had giant tikis, huge Easter Island heads

with flaming topknots, and waterfalls. Tiki was a unique way of reinventing Polynesia; people could really go wild with their imagination.”

EntEr thE Mai-Kai In 1956, two brothers from Chicago, Bob and Jack Thornton, influenced by boyhood visits to Don the Beachcomber’s Windy City outpost, went wilder than anyone had before, plunking a million-dollar bet on a nearrural stretch of U.S. 1 in Fort Lauderdale. Their vision? That this three-acre tract would become America’s grandest Polynesian palace: the Mai-Kai. They started with the architecture. Diners, the Thorntons decided, would sit under an enormous A-frame roof—a modernist interpretation of a native hut—while in the outside garden, giant tikis would keep watch over a tropical jungle of palm trees, wild orchids and waterfalls. The whimsy would extend to the Molokai Bar, just off the main dining room, where sarong-clad serving girls would move about in a space rigged to resemble the below-deck of a sailboat riding out a storm at sea, complete with faux rain streaming down the windows. The rain, like everything else, was an illusion; a pump system kept the water going. (It still does.) Eventually, every inch of the place would be covered with tiki carvings, masks, and other Polynesian artifacts. “There’s a design, something going on in every corner of this restaurant,” says current owner and general manager Dave Levy. “It’s like Disney World—for grown-ups, of course.” He’s referring to the drinks, another element the Thorntons spared no expense in developing. Or maybe developing isn’t the right word. “They poached a guy named Mariano Licudine, who was one of Donn’s most trusted employees,” recounts Berry. Licudine, a Filipino who reportedly once worked as a chauffeur for Stan Laurel and Oliver Hardy, had been the number two bartender at Don the Beachcomber’s Chicago restaurant since the late 1930s. That long tenure meant he knew exactly what went

Marina the Fire-Eating Mermaid

meet the fireeating mermaid If the tiki scene has the equivalent of a Bond Girl, it’s Marina the Fire-Eating Mermaid, the redheaded siren who performs regularly at the Sheraton Fort Lauderdale Beach Hotel’s Wreck Bar (equipped with porthole views of the pool) and whose adventures, underwater and on land, have developed a cult following. Growing up in the Caribbean, Marina Duran-Anderson began free diving at the age of 3. From there, her life seemingly became one adventure—and occupation—after another: firefighter, emergency medical technician, Polynesian dancer at the Hawaiian Inn in Daytona Beach and later at the Mai-Kai. Most recently, she became ringleader of the “MeduSirena Pod” at the Wreck Bar (a Fort Lauderdale institution ever since its star turn in the spring break classic “Where the Boys Are”). How exactly does one become a fire-eating mermaid? “Naturally, I’m a swimmer first, but I thought it would be interesting to be a glamour girl that ate fire,” Marina says, matter-of-factly. “For the most part, fire-eating performances tend to be rough around the edges, but to have a girl in an evening gown doing a fire-eating act? I thought, ‘If no one else is doing it, I’m going to start.’ So it just kind of came together.” Naturally. While she keeps the swimming and fire-eating separate, Marina notes the two share an attraction inherent to Polynesian pop: “Transporting people and letting them forget about their immediate surroundings is the whole basis of tiki—to feel like you’re someplace else, like you’re experiencing something new. into Donn’s rum rhapsodies—even though those recipes were so jealously guarded that the bar staff mixed drinks from a batch of numbered, not labeled, bottles. Licudine’s résumé earned him near carte blanche with his new employers. “The Thorntons were building the restaurant when they got him, and they said, ‘Here’s where the bar is going to be. How do you want it?’” Berry says. “They were so grateful to have this living key to the tropical kingdom of secret knowledge.” The Mai-Kai—it’s a Hawaiian expression meaning “the finest”—opened on Dec. 28, 1956. It was a hit from the start. “The first night, they had to have the police out here, because the traffic was a half-a-mile backup in each direction,” recalls Mariano Licudine’s son, Ron. Four years later, the Mai-Kai added the only thing it was missing, a Polynesian stage show. One of the first dancers brought in was a striking Tahitian named Mireille, who, it turned out, never intended to be a dancer. “A friend and I came for a New Year’s Eve party,” she remembers, “and the next thing I know, I was told to go practice for a show. ‘But I’m not a dancer,’ I told them. My friend said, ‘Just do it.’ So I did.” All of this happened while Bob Thornton—of the two brothers, the more hands-on owner—was away in Europe. When he returned, he called Mireille into his office. “He told my interpreter, ‘You tell her, she’s beautiful, but she’s not a dancer,’” she says, laughing. However, Mireille had gotten to like Fort Lauderdale, “so I start crying, and Bob starts rubbing his chin. He says, ‘Please tell her not to cry. I can’t stand it.’” He agreed to give his beautiful nondancer two weeks to improve. She did. “I was very determined to have that job,” Mireille says. She was equally determined to keep it. She went from being one of the show’s featured performers to its choreographer. Along the way, she also became Mrs. Bob Thornton. (They remained married until Bob’s death in 1989; Mai-Kai owner Dave Levy is her son from a previous marriage.)

Rise and Fall With the floor show in place and Mariano the Master behind the bar, the Mai-Kai became a must-stop on the South Florida party scene. Celebrities from Johnny Weissmuller to Jackie Gleason to Joe Namath came to soak in the atmosphere—and the rum. “The Mai-Kai served the most rum of any restaurant in the United States,” says Ron Licudine, who would know. “That’s a fact. You could go through 300 bottles in one night.”

Trader Vic’s closed many of its locations. Of the great midcentury palaces, only a handful survived: the Tonga Room in San Francisco, the Mai-Kai and (until it was demolished in 2000) the Kahiki in Columbus, Ohio. Only 20 years after the high point of tiki, evidence of America’s once boundless love affair with Polynesia was hard to find, save maybe for “Magnum P.I.” and old Don Ho albums people hadn’t bothered to throw away.

Back to the Future That all changed in the 1990s, when 20- and 30-something creative types in Southern California—where Polynesian pop had been most pronounced and where there were still echoes of the past, like the famed Tiki-Ti bar on Sunset Boulevard in Hollywood— began embracing the playful sensibility of 20th century tiki. Among the earliest of the new-wave adherents were Kirsten, a cinematographer, and Berry, a Hollywood script doctor; the artists Shag and Kevin Kidney; and event promoter Otto von Stroheim. Too young to have swigged rum rhapsodies during tiki’s heyday, they were nevertheless just old enough to remember those fantasy-fueling restaurants from their respective hometowns. In some cases, this childhood curiosity was reawakened by the casual discovery of an item at a garage sale or local thrift store: an old menu, postcard or mug from one of the demolished palaces. That’s when the digging began. “People were

Johnny Carson, another regular, was known to imbibe more than his share, and occasionally get carried away with the stage show. “He sometimes cutline just took his shirt off and danced a little bit Tahitian,” reminisces Pasefika Iosia, a fire dancer and musician who performed at the Mai-Kai for 40 years. “Everybody would stay until 2:30 or three in the morning.” Carson and company weren’t the only ones having fun. Tiki culture became the escape hatch for the American postwar middle-class. “It was a form of anti-modernism,” Kirsten says. “It was the opposite end of the modern world of chrome and plastic, the world of the man in the gray flannel suit. You could go to these places, which were like caves, and become a primitive again.” By the early 1960s, tiki—in all its guises—was arguably the biggest pop culture phenomenon in the U.S. On TV, “Hawaiian Eye,” a series about a detective agency based in America’s newest state, was a smash. Elvis Presley, back from his Army hitch, went native in “Blue Hawaii.” And piano player Martin Denny, leader of the house band at Henry Kaiser’s Shell Bar in Oahu, became a recording star with a series of albums that combined Latin rhythms with croaking frogs and shrieking birds. Then came the second half of the ’60s: the Civil Rights struggle, women’s equality, Vietnam. It was too much for tiki. For the younger generation, the action was elsewhere: at antiwar rallies, Monterey and Woodstock. The restaurants that had driven the craze were torn down or converted;

Urban Archaeologists: The advance guard of the revival, these popsters treat tiki as a lost civilization, unearthing any and all signs of what once was: postcards, menus, matchbooks and souvenirs from the Polynesian palaces of yore. Collectors: Close cousins to the archaeologists, tiki collectors can be found trolling eBay late at night, thrift stores in the afternoon and estate sales on the weekend. Brian Marsland, who has close to a thousand vintage tiki mugs in his collection, says competition for the rarest specimens can be fierce: “Somebody out there has probably paid $1,200 to $1,500 for some mug at some point.” Vintage Mavens: The male maven favors aloha shirts, 1960s sport coats and straw fedoras; the female maven, Polynesian and Asian-inspired dresses and midcentury jewelry and handbags. Tattoos are optional. Artists: Polynesian pop draws creative types of all stripes— photographers, filmmakers, graphic designers, tattoo artists and tiki carvers. Among the most prominent artists are Shag, Kevin Kidney, Bosko, Mark Ryden and Derek Yaniger. Scenesters: Connoisseurs of exotica music and rum rhapsodies, these tikiphiles can be found at Polynesian palaces and tiki events the world over: the Mai-Kai, the Tonga Room in San Francisco, any Trader Vic’s and, of course, Tiki Oasis and Hukilau.

obsessed with finding out everything they could about these lost places,” says Brian Marsland, an early participant in the tiki revival who now lives in Melbourne Beach. Eventually, these nascent tikiphiles began finding each other on eBay— where competition for Polynesian pop artifacts was stiff—and on websites like Tiki Central, a kind of cyberspace neighborhood lounge. It was on Tiki Central that the disciples of Donn Beach and Trader Vic began giving themselves nicknames. “Everybody was called something different than who they really are,” says Hukilau organizer White, explaining that her handle, Kiliki, simply means “Christie” in Hawaiian. Other tikiphile names are more evocative: Bamboo Ben. Basement Kahuna. Tipsy McStagger. For some, the growing subculture had its roots in an earlier one. “If you look at the punk rock scene in the ’80s, I think the bottom line was, ‘I want people to know that I’m an individual,’” explains Denny Moynahan, who performs regularly at tiki events as King Kukulele, a ukulele-strumming, wisecracking emcee. The 48-year-old muses that now that he and his friends are “a little too old for shocking people,” the way they once did as punks, they set themselves apart by donning vintage Hawaiian shirts and other tiki accoutrements. The West Coast tiki set mixed a love of exotica and free-flowing rum with other pursuits, like historic preservation. One particular effort, a weekend party in 2000 intended to convince the owners of the tiki-themed Caliente Tropics motel in Palm Springs not to redo the property in a Southwestern style—the thought still gives tikiphiles the creeps—eventually grew into Tiki Oasis, the largest Polynesian pop gathering anywhere. Organized by von Stroheim and now held in San Diego every August, it attracts between 2,000 and 3,000 of the tiki faithful. That party scene is what White and Tim “Swanky” Glazner, both in their 30s at the time, were looking to re-create, albeit closer to home, when they came up with the idea for Hukilau. “Those of us on the East Coast would hear about a tiki event at the Tonga Room, or that people were going to get together at Otto’s house for a backyard luau, and we were just craving that need to be around other people like ourselves,” says White, who lives in Alabama. The first Hukilau, in 2002, wasn’t meant to be much more than an extended Friday-night happy hour at Trader Vic’s in Atlanta. Much to the amazement of its two organizers, however, the get-together turned into a weekend-long happening. “It was a huge success,” says Glazner, a systems analyst based in Knoxville, Tenn. Quite a few tikiphiles made the trip from Florida and, according to Glazner, all said the same thing: “You’ve got to come to the Mai-Kai.” A dancer at the Hukilau

It only took one visit to the restaurant to convince White and Glazner that Hukilau—named for a Hawaiian tradition in which villagers engage in communal fishing, followed by a celebratory feast—should be an annual event, with Saturday night at the Mai-Kai as the centerpiece of the festivities. “I’m not a religious person at all, but when I walked into the Mai-Kai, I was overwhelmed with emotion,” White says. Hukilau relocated to Fort Lauderdale in 2003, and now draws around 1,000 attendees, with Glazner (who no longer organizes the event) estimating that “half come from Florida, a quarter come from California, and the rest come from all over the world: Italy, France, Germany, Spain, Canada.” Today, Hukilau is far more than a weekend party. It’s more like a fullscale tiki conference, featuring an art show and bazaar, as well as seminars that wouldn’t be out of place in a college curriculum. In 2012, these included

(There’s also the equivalent of tuition: Tickets for Hukilau 2012 ranged from $15 for individual seminars to $150 for an all-access pass.) The crowd is diverse, to say the least, attracting not just hardcore tikiphiles but almost anyone with a passion for mid-20th century Americana. “The people that come to Hukilau are vinyl fanatics, hot rodders, rockabilly and surf music fans, people that are into mod culture,” White says. “Basically, [they’re] people who want to experience a fun-filled weekend that they think would have happened back in the ’50s—because that’s really what we’re re-creating.” That, according to Kirsten, is the essence of the tiki revival. “All people need are games worth playing,” he says, quoting a favorite philosopher. “And tiki is just a great game, encompassing art, graphics, decor, architecture, food and drink, music, fashion, social gatherings. It’s a great role-play; that’s what inspires people.” The tiki revival has been good for the Mai-Kai. In fact, it might have helped save the iconic establishment. “The family wanted to retire and sell the Mai-Kai,” says owner Dave Levy, referring to a couple of years ago. Levy asked the real estate reps what they thought might happen to the restaurant once it sold. They told him some furniture-store chain would probably level it to put up a showroom. His reaction: “No way.” Levy had witnessed firsthand how Hukilau had brought back the kind of buzz not felt around the restaurant since the 1960s. Tikiphiles, he says, “talk about the Mai-Kai around the United States; they talk about it around the world.” Inspired by their devotion—and the increasingly frequent visits from Polynesian popsters passing through Fort Lauderdale—Levy spent several months “kind of taking over, redoing the whole restaurant inside and out, and advertising that we were here for good.”

Back at the Mai-Kai on the final night of Hukilau 2012, there seems to be little doubt of that. The different dining rooms, each bearing the name of a Polynesian island, have been converted into makeshift music clubs. Surf guitar chords and jungle drumbeats mingle as waitresses with trays held aloft struggle to work their way through the throng, making sure to keep their drink orders and bikini tops straight. In the Molokai Bar, Swanky prepares to dive into a flaming cocktail, while Basement Kahuna chats it up with friends near an improvised dance floor. Nearby, Beachbum Berry, wedged into a booth in the corner, explains the intricacies of tiki mixology to a group of star-struck pilgrims. Her work for the weekend almost done, Tiki Kiliki surveys the scene, a smile as golden as a Hawaiian sunset spreading across her face. “To spend time at the Mai-Kai with all these people?” she says. “That’s the draw. The Resort’s Baker Sponder Gallery kicked off 2013 with a major sale. A visitor from Austin, Texas was debating between two large-scale sculptures and ultimately settled on Henry Richardson’s “Orb,” a glass, planet-like sphere 48 inches in diameter. But there was a hiccup. “We delivered the piece,” recalls Gallery co-owner Deborah Sponder. “It was to go into his Four Seasons penthouse. We got it onto the elevator just fine, but the door to his place was a single door. There was nothing we could do, because [the piece] was welded. He looked at it and said, ‘You know what–take it to my beach house’ on an island. Right away, we put it on the truck and delivered the sculpture. “He’s thrilled with its placement by the pool. He sent us pictures with his dog, who loves it.” “This illustrates,” Sponder says, “just how accommodating our patrons are.” And while there may be occupational hazards in transporting massive sculptures to and from the Resort grounds, it’s safe to say the results speak for themselves. Case in point: In the past year, an important sculpture by Jedd Novatt formerly exhibited at the Resort, is now on loan to the Boca Raton Museum of Art. “Jedd has just installed a major outdoor work in the courtyard of the new

an artistic field trip sponder also made news this past year by opening an eponymous gallery in MiaMi’s design district–a space that she calls “5,000 square feet of magnificence.” Elaine and Deborah now count their galleries at four, including a sculpture project at the ritz-carlton Key Biscayne and the flagship location at gallery center in Boca raton where they represent an international spectrum of established and mid-career artists in painting, sculpture and mixed media. However, it’s the new Miami locale that Deborah is most excited to introduce to visitors of the Resort gallery. “We’re happy to drive guests to any of our locations,” she says. “It’s another activity in addition to our guided tours.” The Design District space is at 151 N.E. 40th St., Suite 200, Miami, 561/350-0004. Perez Art Museum, Miami,” says Elaine Baker. The gallery also began working with the self-described “hip pop art” of the U.K.’s Mauro Perucchetti, who creates socially conscious resin sculptures of skulls, hearts, pills and people in every color of the rainbow. The gallery invested $17,000 to ship his sixpiece “Jelly Baby Family” from London to the Resort, where the smiling characters stand guard like vivid sentinels between Serendipity and Morimoto. “I travelled to London last summer to meet Perucchetti. I was not allowed to know the addresses of his studios because of the intense process that has taken him years to develop. Many artists have tried to copy the formula,” Sponder says. “His foundry was the size of the Resort lobby.” The addition of this and other Perucchetti pieces–like his compelling “Power of Love,” a resin heart bisected with a metal strip and grenade pin–serve important functions for the Resort. They are significant pieces with something to say. “The work evolved around 1985, when Dolly the sheep was being cloned,” Sponder says. “It was his response to the controversy over human cloning. They might be spewing them out similar shapes; however, they’ll never be completely the same, so the colors are different.” Secondly, thanks to new president Richard Hayduk’s efforts to revamp the Resort’s fun factor, the pieces add pop and color to its sculptural repertoire–ditto to Julien Marinetti’s “Doggy John,” a massive bulldog keeping watch just outside the main entrance, and a giant red rabbit made of recycled materials, from William Sweetlove, which sits at the Beach Club. “[Management] added a lot more fun to the Resort,” Sponder says. “They’re taking more chances and stepping out in a lot of ways.”

tHe HeaRt of “eLite HeaLtH” If you go through the Cenegenics program, which has 22 centers around the U.S., you can decrease your risk of age-related disease, increase physical and sexual vitality, improve sleep quality, increase muscle tone, decrease body fat and sharpen mental acuity, according to Willix. Some of this involves tailored workouts with an exercise and lifestyle counselor like Nick Balestriere, and other programs are focused on changes in diet and lifestyle. “Just because you’re 60 doesn’t mean that you have to function like a 60-year-old,” he says. “We’ve learned ... how to improve the health of a 60-year-old, so he or she feels more like they did when they were 35. Once you reach 35 years of age, you should maintain the health of a 35-year-old throughout life. Whether you’re 50 or 90, you should have the same vitality of a 35-year-old, and that includes your mental sharpness, your physical appearance, body fat and muscle mass. It includes your risk of chronic illness.”

tHe pRoCess Cenegenics clients, who include Resort visitors and members, start by going through a seven-hour evaluation, which includes testing mental acuity and measuring muscle mass, body fat, strength and agility. The evaluation includes an exercise evaluation, where clients’ oxygen consumption is measured while bicycling, as well as a blood test analyzing some 90 factors, looking at specific markers for nutrition, inflammation, hormone levels and whether or not one’s organs are functioning and how well they’re functioning. Clients then go through a complete physical with a Cenegenics physician. So begins a long-term relationship between Cenegenics clients and the health care team, which includes a physician, nutritionist and exercise specialist. “That team monitors your progress with blood work, by re-measuring your body fat and your other parameters over the course of years,” Willix says. “Every year, you come back for a re-evaluation based on the same principles.”

he physicians at Cenegenics in Boca Raton believe age really is just a number, and you don’t have to experience the senior years in varying degrees of sickness and frailty. Instead, they’ll coach you to maintain the mental, physical and spiritual vigor you feel at 35—even as your chronological age climbs. Robert D. Willix, Jr., M.D., chief medical officer of Cenegenics Medical Institute and president of Cenegenics in Boca Raton and Miami, says he gave up a career as a cardiac surgeon 30 years ago to dedicate his life to a vision that medicine should be more preventive then reactive. “Medicine has always concentrated on treating symptoms of disease, rather than on prevention. We at Cenegenics have a mission to change the paradigm of medicine from a disease-oriented system to one of proactive health,” Willix says. Cenegenics at the Resort caters to managing the aging process for clients older than 30, according to Willix. And while the emphasis of the medical institute has been more on men’s health in the past, it will launch a women-specific health program in 2014. “We are designing a specific program … to improve the cardiovascular health of women, because we feel that women haven’t been a primary focus for medicine, as far as prevention is concerned. Now, more women die of heart disease than men,” Willix says. While Cenegenics’ physicians might look at similar aspects of health among female clients, they’ll evaluate testing in a way that most benefits women’s health. For example, Willix says, in women, there are markers for certain hormones and inflammation that are different than in men.

mental health deterioration, cellular aging, loss of physical strength, hormone imbalance and more, according to Willix. “Stress-related illnesses, from physical, mental and spiritual stress, deteriorate the cellular function in your body. Stress is probably the number one accelerator of aging,” he says. Mental health does not have to decline with age, and keeping that sharpness is largely in our control, the doctor says. Certain foods and essential fats help protect the brain from deteriorating. And exercises help to train the mind, much like exercising trains the body. Part of the Cenegenics evaluation and approach involves testing clients for their biological versus chronological ages. Why? “Your telomeres, which are the ends of your DNA, are a predictor of how well you are aging,” Willix says. “If I can maintain my biologic age, younger than my chronologic age, then I’m slowing down the aging process and reducing my risk of all diseases.” Achieving elite health means testing a person’s health at the cellular level, which is where disease begins. Cenegenics’ physicians look at whether vessels are thickening in the carotid arteries and if there is arterial system inflammation and work toward improving or maintaining health at the cellular level, he says. Another important aspect of preventive health: the endocrine system and hormones, such as testosterone in men and estrogen and progesterone in women. “For example, the adrenal glands are rarely addressed in traditional medicine, because there are very few diseases of the adrenal glands, but as the adrenal gland levels of DHEA fall or cortisone levels go up, it’s important for us to balance those to protect your immune system and decrease illness and distress,” Willix says. “[Hormones] are all interactive in maintaining normal muscle mass, strength, joint integrity, heart function, brain function.

Hormones are very important in maintaining normal mental sharpness, as well as physical health.” Measuring, maintaining and improving muscle mass, agility and stamina help to prevent falls and ultimately loss of independence among those who are aging. According to Willix, most falls occur because of a medical condition called sarcopenia, or loss of muscle mass. “As we age, we lose muscle mass. As we lose muscle mass, our tendons and supporting structures become stiffer, less agile. By maintaining muscle mass, strength and the agility of your joints, you reduce the potential for the debilitation that occurs when someone at the age of 70 falls and breaks a hip,” he says. “The perfect example of that is a person like Jack LaLanne, who lived well into his 90s, living a vigorous life. That’s really the way most of us want to go. We want to live into our 90s or 100s, and we don’t want to be debilitated by disease.”
