Consistent with today’s developers, Mizner built the Cloister Inn (the east side of the Cloister building) to give homebuyers a taste of what the Boca Raton lifestyle would be. Fast-forward to today, as city leaders make Boca Raton an example of modernizing a city while retaining a great respect for its past. The visionary development that continues in 2016 will make Boca Raton one of the top pedestrian-friendly, affluent waterfront communities in the country. The Boca Raton Resort & Club has run a parallel course with the city in terms of its own modernization, one that we can only trust would make Addison Mizner proud. 90 YEARS & COUNTING! This year, the Boca Raton Resort & Club celebrates its 90th anniversary. Since its inception, the Resort has been a cornerstone of Boca Raton—and has set the bar for Boca’s legendary lifestyle. Designed by eccentric society architect Addison Mizner, the Resort put Boca Raton on the map as South Florida was coming to life in the 1920s. One of the most expensive hotels of its era, it became an international destination—and a byword for Old World Mediterranean elegance in its early days. During World War II, the Resort housed soldiers when the U.S. Army Air Corps expanded, and in 1969, it added the 300-foot pink tower, the tallest building between West Palm Beach and Pompano, and a precursor to later renovations. In the decades since, the Resort has undergone sweeping changes, from the addition of a glamorous Beach Club and surf school to its array of world-class restaurants and its visionary Enlightened Lifestyle initiative.
Its technological innovations bring the guest experience to new levels of ease and luxury, and its location on the Atlantic Ocean and the Intracoastal Waterway offer an unparalleled Florida experience. The Resort may be celebrating 90 years, but we think it’s just getting started.
Boca Raton Resort & Club Historical Timeline 1926: On Feb. 6, 1926, the Cloister Inn, modeled by architect Addison Mizner after a Spanish castle, opens as the most expensive 100-room hotel of its day at $1.25 million.
1920s
1928: The inn is purchased by Philadelphia utility magnate Clarence Geist and expands to include more guestrooms, the former Cabana Club and a new golf course.
1930: The Cloister Inn reopens after $8 million in renovations as the Boca Raton Club and is run as a private club, open seasonally from January to March until Geist’s death in 1938.
1940: U.S. Army Air Corps trainees occupy the Resort during World War II, remaining for four years and terming the property “the most elegant barracks in history.”

1956: On March 1, 1956, Arthur Vining Davis, former Alcoa CEO, buys the hotel and surrounding property for $22.5 million. Davis later forms his namesake company, Arvida Corp., which owns and operates the hotel for about 27 years.

1988: The property becomes known as the Boca Raton Resort & Club and acquires the Boca Country Club on Congress Avenue, about seven miles from the Cloister, featuring luxury homes and condominiums, a championship 18-hole golf course, tennis courts, a fitness center and dining facilities for hotel guests, club members and property residents.
1991: The Boca Raton Resort & Club undergoes an $11 million renovation, bringing the total refurbishing expenditures to $55 million since 1983.

2001: Featuring 22 treatment rooms, the palatial Spa Palazzo is unveiled, while a two-story golf clubhouse debuts with a casual restaurant and luxurious locker rooms.
2003: The new Salon di Palazzo opens; a new golf practice green and a new croquet green debut; and a new children’s playground and water park are added to the children’s activities.
2002: The eight-story Yacht Club opens with 112 water-view guest rooms and suites. The new marina, with 32 mega-yacht slips, opens at the base of the Yacht Club.
2004: An affiliate of The Blackstone Group, a private investment banking firm, purchases BRI in December for $1.2 billion. Blackstone has a history of investing in its properties, significantly enhancing services and amenities, and the same is anticipated for the Boca Raton Resort & Club and its sister properties in the Boca Resorts collection.

A Golfing Legacy For close to a century, golfers from around the world have come to play the revered course at Boca Raton Resort & Club that was once played by some of the game’s greatest legends, like Tommy Armour and Sam Snead. Resort guests and club members have two layouts from which to choose, the Resort course and the Country Club course, as well as two golf schools. Dave Pelz is golf’s go-to instructor for all things short game, with a school at the Country Club course that offers one-day clinics, two- and three-day golf schools and private group lessons. Here are a few new upgrades for your vacation stay. • Boca Meet 360°: This new meetings app offers an in-depth virtual site tour of the Resort, including its meeting rooms, accommodation styles, leisure activities and amenities. Much like a gyroscope, the app provides a floor-to-ceiling panoramic look at 15 key points of interest to meeting and wedding planners, a live Facebook feed, a LinkedIn Group feature, an interactive “plan your meeting” tool and contact information. The Boca Meet 360° app can be downloaded from the App Store or bocameet360.com. • Shuttle tracker: Resort shuttles have all been equipped with GPS tracking, and iPads have been installed at each shuttle stop so guests can now conveniently track the timing of shuttles. • Guest texts: The Resort has a new texting service, the Guest Experience Platform built by Kipsu, designed to personalize and enhance guest interaction. ASSET & LAWSUIT PROTECTION to Protect Everything You Own From Everyone, Every Time! Lawsuits have become big business, especially since the economic downturn. They’re a cheap way for people to make lots of money, often with an investment of just a few hours’ time. Consider -- the plaintiff may never even have to prove a thing; the prospect of spending hundreds of thousands of dollars in legal bills can scare a defendant into opting for a settlement without ever putting up a fight. Even if he did nothing wrong. No one’s immune from lawsuits, but people with a lot of assets showing are especially vulnerable. If someone thinks you’ve got a lot to lose – and thus, they’ve got a lot to gain – you become a choice target. People who are less affluent are vulnerable in a different way: If a person with $100,000 in assets gets sued for $1 million, they’ll be wiped out, whereas the person with $5 million can survive a $1 million lawsuit.

Inventory your wealth. Most people have a lot more than they think. Take stock of valuable domain names, telephone numbers, intellectual property, potential inheritances, and other liquid and non-liquid assets. Convert non-exempt assets into exempt assets. State laws protect some personal assets from lawsuits and creditors. Those assets typically include your primary residence; personal items such as furniture and clothing; pensions and retirement funds; and life insurance. Find out the exemptions for your state and convert non-exempt assets (i.e. cash) into exempt assets (i.e. life insurance). Don’t rely solely on liability insurance. Buy as much insurance as you can; it’s cheap and it helps you sleep at night. But realize that 70 percent of claims are not covered. Your coverage may be inadequate for a particular suit; your insurance company may go bankrupt. Having insurance and an asset protection plan is the belt and suspenders approach to hanging onto your pants. Don’t title your assets solely to your spouse or to “straw men.” They may have more financial problems than you.

Protect your assets with liens. What is a $100,000 car worth if you owe $95,000? What is a $1 million house worth if you owe $950,000? Take out lines of credit. Record mortgages against your property. Make all of your assets valueless. Become an unattractive candidate for a lawsuit. Transfer your assets to a protective entity. The key to asset protection is to own nothing while controlling everything. Transfer any non-exempt assets out of your name to protective entities such as trusts, LLC’s (limited liability companies), limited partnerships, etc. Utilize International asset protection. Enjoy an even greater degree of privacy and debtor protection with the many additional legal and procedural obstacles that creditors have to face in International jurisdictions. Keep your plan up to date. Laws change every year. Have your plan reviewed yearly.

ddison Mizner’s beautiful hotel—the Boca Raton Resort & Club—will celebrate its 90th birthday in February. But the number 25 is also big—that’s how many years Resort executive chef Andrew Roenbeck has been at the helm. “I never thought I was going to be here that long,” Roenbeck says. “Chefs are a little like nomads. We take our bag of tricks that we’ve learned over the years—we usually last three, four, five years—and we move onto something else. But this place is interesting. We push ourselves. Our clientele is constantly changing and demanding. It’s the perfect scenario for a chef like me. It has allowed me to stay here as long as I have because we have the ability and the freedom to develop and to change with the times versus being dictated to from a corporate side of things.” Roenbeck, who studied at the Culinary Institute of America in Hyde Park, currently oversees a $70 million food and beverage operation. In a given month there can be upward of 200,000 covers at the Resort—some 2 million per year. He oversees 190 cooks, 16 area chefs and 65 stewards at the 13 food and beverage outlets.

But it didn’t start out like that. He started out as an executive sous chef, and as he evolved into his role as executive chef, so has the dining scene. Today at the Boca Resort, each restaurant has a different identity to provide the perfect experience for what the guest is craving at that moment: Mediterranean-inspired Tuscan at Lucca; “sea to table” at the SeaGrille; sophisticated New American at The Blue; California cool at Shaka. The list goes on. The emphasis? Each restaurant should be outstanding. Roenbeck attributes the changes in Resort restaurants to a well-traveled clientele. “(They) understand what good quality food is and what poor quality food is,” he says. “There’s nowhere to run, nowhere to hide.”
How is Resort dining different now from when you started here? The Resort was transitioning from a MAP hotel—Modified American Plan—of the old Grande Dame hotels. They used to include in your room rate breakfast and dinner because there was nothing else around. So if we had 900
people in the Resort, we knew we’d have 900 people for breakfast and 900 people for dinner. As Boca Raton started to develop, the business travelers became much more knowledgeable about food, and their expectations and demand level began to increase. The Resort could no longer provide food like that. It wasn’t acceptable; people wanted options. Just as I started at the hotel, that program stopped, and we started to develop individual restaurants here on the property. We had a term— each restaurant had to swim in their lane. If we’re going to develop Lucca, then we’re going to have a Tuscan restaurant— and it’s going to be the best Tuscan restaurant we can provide.
served so much prime rib early in my career, you kind of OD’d on it. At a restaurant on a busy Friday or Saturday night, or large banquet back then with 800 or 900 people, everyone ate a 12to 14-ounce slab of prime rib. I can’t give away prime rib today in that same venue. Now the total opposite end of that would be a dryaged, prime New York bisteca, marinated 48 hours with olive oil, garlic, rosemary, aged-balsamic and black pepper, and it gets a really heavy char and crust on the outside of that bisteca. That New York strip is then sliced 3/4-inch thick, block-cut, straight down on a nice shingle—versus a 14-ounce huge honker of meat. Big difference today.

what great operations do. Great resorts are constantly looking to evolve and to reestablish themselves. You’re talking about a property that was built in 1926. We could really sit back on our laurels and say we’re the big old bad historic Boca Resort & Club. If we served food or even tried to serve food that was acceptable 25 to 30 years ago you’d be fired as a chef here. Quickly. You’d be gone.
Where are you headed in the next few years? I think true hardcore farm-to-table is proving more challenging than people think. I also think that with education and knowledge, people are really starting to get a true grasp of what 100-percent organic food is and what it’s not. So we’re going to see a little softening of that. But where food is going is in a great positive direction. I think we’re going to continue to see an expansion of great grains—farro, spelt, lentils. And understanding that food and the robustness of flavor is going to come from vinegars, acids and spice. That bold spice is going to come through lots of different avenues. There’s a spice out there that we use more and more called togarashi—it’s an Asian spice that a couple of years ago people wouldn’t know what the heck it was. But to sprinkle that … to get into a much more dynamic multilevel spice like the togarashi—that sense really is umami, and that’s where we’re looking to bring food.
Takao Soejima
{ Chef of Morimoto } Cooking for Iron Chef Masaharu Morimoto demands exceptional skill and dedication. Luckily, chef Takao Soejima has plenty of both; no wonder he’s been in command of the stylish restaurant since it opened. His culinary education began as a child at his mother’s side, preparing rice and miso soup. He then went on to work in sushi restaurants on the East and West coasts before taking a position at Morimoto in Philadelphia, where he rose to be head sushi chef. • Signature Dish: Miso soup. “This soup was the first thing I learned to make in my cooking class in fourth grade. It is very easy to make, but it’s really hard to make it well.” • Words to Cook By: “We don’t take any shortcuts to make good food. It takes time and skill and lots of love, but the result is so obvious that it separates us from that ordinary sushi place down the street.”
Which is your favorite restaurant to dine in? Asking the executive chef that question is like asking whom your favorite child is. But we all have our favorite. And I would say my favorite is Lucca. Just because, if I have a preference, that tends to lean toward Mediterranean preparation. I love how the food is simplistic in its preparation: It’s all about the food and the flavor. The flavor of that great quality food needs to speak for itself. It doesn’t need to be over-complicated.
What’s your signature dish? A cauliflower stir-fried rice, but there’s no rice, with seared sea scallops on top with a sweet soy and miso drizzle. We grate raw cauliflower with a box grater so that it looks like rice, then stir-fry it very quickly in a hot pan with sesame, garlic and ginger. It’s got a tremendous flavor profile—so no carbs, great robust flavor—clean and bright.

Ray Dolan
{ Restaurant chef of 501 East, oversees Shaka } Ray Dolan, who grew up in Chicago, was on a very different trajectory less than a decade ago. In his previous life, he was in school for prelaw. He recalls the classes being horrendous, so he took a personality test—and “culinary” popped up. He enrolled in a class, and Dolan fell in love. At 501 East, he’s been turning his attention to the American-style steak house, focusing on getting the most true flavors out of the ingredients while simplifying the menu. “Obviously, (we have) lots and lots of beerinfluenced items, so a lot of the items appear very gastro-pubby,” Dolan says. “We do have 50 craft beers on tap, many of them local to Florida.” • Signature Dish: The low country-inspired classic, barbecue spiced shrimp and grits, is always a crowd-pleaser. • Kitchen Philosophy: “Do what you’re told when you’re told—what my old football coach used to tell me.”

Christie Tenaud
Christie Tenaud’s vision of her New American restaurant on the 27th floor of the Resort is limited only by her imagination. “That’s what I like most about my role within this restaurant: We can do whatever we want,” Tenaud says. That comes out in homemade pasta dyed pink with beet juice or scallops crudo, reinvented shrimp étouffée influenced by her love of Louisiana, and Asian-inspired mussels or oysters cooked five different ways. Then there’s the claw bar—overflowing with king crab legs, seasonal stone crab claws, Maine lobster claws, shrimp and four to six different oysters. Tenaud remembers being 6 years old and “taking orders” for a cheese sandwich for her mother. “I think it was that, trying to make people happy with food, not just for the purpose of feeding, but seeing their faces when they taste something they like,” Tenaud recalls. Much later, she worked for James Beard winner Melissa Kelly as her chef de cuisine at Primo in Arizona. • Signature Dish: Oven-roasted Maine lobster • Kitchen Philosophy: “It is just playing with food. That’s why I love doing what I do. It’s making people happy with food.”

Oversees the Palm Court, Serendipity, Bar Luna, The Spa Café, the main kitchen and production Newly hired restaurants chef Adam Parker hit the ground running at the Boca Resort, bringing with him a cadre of little ideas that pack a big punch. As restaurants chef, he’s responsible for the research and development of driving business—“making the areas that I’m in better,” he explains. But as he jumps into explaining the projects he’s working on, it’s clear that he’s having a lot of fun. Classically trained at the Culinary Institute of America in Hyde Park, he’s worked for The Breakers, Aramark and The Sagamore Resort in upstate New York. In addition, he has created more than 1,400 different ice sculptures. At the Boca Resort, he’s implemented a yogurt bar that focuses on acai and includes six different types of granola; bottled a special hot sauce (more than 4,000 bottles, medium heat); and developed custom-built eggs Benedicts and chocolate silk-screened plates with the Boca Resort logo. There’s also wheatgrass-blended juices served in the mornings at the Palm Court, courtesy of him. Look for his ice sculptures coming soon. • Signature Dish: “Banana fritters. I was finding I couldn’t get enough banana flavor, so I would roast the bananas, put them in a milk and then puree them. Then you get banana all the way through. Adam Pile started out at the Resort as a student-extern 12 years ago and worked his way up to executive chef of Lucca. (He’s also the executive chef of Bar Luna.) Since he started at Lucca four years ago, he’s watched the restaurant grow—from number of diners to the quality of the food. Lately, that means making organic whole-wheat pizza dough and fresh, homemade pasta daily. “We try to keep things simple, let the ingredients speak for themselves, make sure we’re sourcing good quality ingredients,” Pile says. • Signature Dish: Grilled Mediterranean octopus with sunchokes, leeks and fennel pollen • Words to Cook By: “We always try to be as seasonal as possible, that’s kind of our main goal—to make sure we’re appropriate for the seasons. We’re changing; we’re always evolving.”

LIFE IS A BANQUET studded in both creativity and quality. For example, there’s “The Big O”—an all-organic, all-natural lunch where the Resort literally brings a farm to the resort, turning a ballroom into a veritable market where guests can walk up and down the “fields” choosing lettuces that are snipped directly and added to their plates. Roenbeck has noticed a significant change at how events are attended, which he largely attributes to the popularity of the Food Network and the average person’s sophistication when it comes to the quality of food and ingredients. Now, people want many, many more live action stages versus the formal plated events. “They want interaction, they want to talk about ingredients, they want to see that one-on-one so they can smell and see it being cooked in front of them,” Roenbeck says. “Eight out of 10 events we do are done in that format.”

“There’s a difference between banquet food and hosting events. We do events,” says Andrew Roenbeck, executive chef of the Resort. “That comes from the attention to detail that is placed with doing events. Even though they can be large volume—1,000 people, 1,500 people—what differentiates us is that we view our event food the exact same way as our restaurant/a la carte experience. “Statistics show that 80 percent of an event planner/company or group’s main decision on selecting a resort or hotel is made of food or beverage,” Roenbeck continues. The Resort did 80 weddings in 2015, served up 25,000 pounds of shrimp, 30,000 pounds of live Maine lobsters and 80,000 filet mignons. To execute these star-quality events, Roenbeck relies on Tim Gilberry, Scott Manocchio and Bret Hines. Each has his own role, and together they pull off events

Gonzalo Rivera grew up harvesting fruit in Northern California, earning $1 for every bucket of prunes. “I have a very, very huge respect for product,” Rivera says. It was his grandma who taught him about cooking; she demonstrated how to make tamales and the art of a fresh tortilla.

Later on, he learned the art of composing dishes from a different teacher: famed chef Michael Mina, with whom he studied for seven years. He went on to work in Mexico, Los Angeles, San Francisco and at the Tides Hotel in Miami. “We eat with our eyes first,” Rivera says. “You always want to compose a dish that’s just beautiful.” At the Boca Beach Club, where Rivera’s responsibilities include overseeing the culinary operation of Beaches, SeaGrille and the Ocean Bar, Rivera is implementing a menu filled with cool ceviches and crudos, beautifully composed fruit salads and seasonally inspired dishes. He’s excited about bringing in a little canoe and showing off the catch of the day—a little fish market to greet diners. “We want to make this place very seasonally inspired cuisine, from room service to breakfast to lunch to dinner. With my background I believe we can do that very well.” • Signature Dish: Grilled banana leaf-wrapped yellowtail snapper, kaffir lime-scented basmati rice, sugar snap peas, dried pineapple, warm spicy mint and sesame vinaigrette. • Kitchen Philosophy: “I try to use my heritage (he’s from Mexico) with my ceviches and crudos but give them my own spin.” • Words to Cook By: “Chef Sean Brock says it best: ‘Cooking’s fun.’ It’s a lot of fun. { Executive Pastry Chef }
For Jordi Panisello, taking over the role of pastry chef of the Boca Resort is a bit of a homecoming. It was just 18 years ago that he moved from New York to Florida for the job as assistant pastry chef at the Boca Raton Resort. “I always wanted to come back,” he says. “I always loved this property and liked the people. I’m very fortunate to be here.” Since moving to Florida 18 years ago, Panisello has worked at some of the region’s finest hotels, including the Ritz-Carlton in Fort Lauderdale and The Loews Miami Beach; he also had the honor of opening The Mandarin Oriental in Miami. Panisello is from Barcelona originally, and he got his first job in pastries when he was 14. He was studying electronics to become an engineer, and his grandfather informed him that a bakery 30 minutes away needed an apprentice. “The hours were tough, but there was something that caught my eye, and I caught a passion for it,” Panisello remembers. “Just seeing and working with the bread—the flavors of the bread! We used to deliver it, and seeing the expressions of peoples’ faces when we’d deliver it, I knew this is what I wanted to do.”

How one long-distance couple started its Happily Ever After at the Boca Resort.
C
atherine Blais and Anthony Milano came from different countries and cultures (Montreal, Canada and Chicago, U.S.A., respectively), and lived an ocean apart for an entire year of their courtship while Anthony worked overseas in London. But early in their relationship they knew they had something special. Before he left Catherine in Montreal, Anthony brought her to Chicago to meet his parents; he also showed her the Ferris wheel at Navy Pier. They were reunited a year later when Anthony accepted a

permanent job in Montreal. The following summer, they again made a trip to Chicago for a family wedding. “We went to Navy Pier, as we hadn’t been back since that first summer at the beginning of our relationship,” Catherine recalls. “While we were at the top of the Ferris wheel, Anthony surprised me and proposed, promising that we would never have to be apart again.” After overcoming the challenges of a long-distance relationship, they weren’t afraid to plan their wedding from afar. They had always

imagined an outdoor ceremony by the water and quickly decided on the Boca Raton Resort & Club for their destination wedding. “I loved that the Resort and the Beach Club provided two completely different experiences and backdrops for our wedding: the timeless elegance and beautiful architecture of the Resort, and the modern, clean look of the Beach Club,” Catherine says. The location has the best of both worlds, agrees the Resort’s director

surprised his bride by writing his own vows in French (Read: He’s not a native French speaker). Personalized wedding items and favors were shipped ahead of time and set up by the staff, and as the sun set during their ceremony overlooking the ocean, Catherine couldn’t believe how lucky they were. “Our wedding was more beautiful and perfect than we could have ever dreamed,” she says. Part of making wedding dreams come true is the ability to cater to a variety of wishes and styles. With many different venues for hosting everything from intimate on-thebeach events to large-scale, grand affairs, there really is something for every couple. Slightly apart from the Resort and situated on a secluded beach, the Boca Beach Club almost feels like an independent location. “Because it’s more of a private venue, and you just have that one ballroom, you pretty much take ownership of the club that evening,” Petrocelli says. Add on a half-mile private beach and there’s a wonderful recipe for relaxed luxury.
• Ideal wedding size: 50-100 guests • Why it’s unique: Two ballrooms, the Amalfi and the Venetian, both have open terraces overlooking the Intracoastal Waterway. “The big attribute there is the terrace, because you can make it an indoor/outdoor event,” Petrocelli says. “You can do cigar rollers on the terrace or have after-hours hospitality and enjoy the evening looking out over the lake and some incredible yachts.” • Best for: Sophisticated formal events. Large, floor-to-ceiling windows and doors opening onto the terrace allow guests to appreciate the striking views of the water and yachts moored in the marina. Some couples take full advantage of the space by setting up their ceremony on the Yacht Club terrace and hosting a reception in one of the ballrooms.

Elements of the decor from the ceremony are repurposed for the reception, and voila! “We do this all during the cocktail reception,” he says. “People come back into the room, and they don’t believe it’s the same room they just left. … It’s great because the whole epicenter of the event is all in one location.” And with the Cloister Rooms recently finishing a $30 million renovation, couples who choose to get married and stay here can enjoy both historic and updated luxury in the same place.
Royal Palm Ballroom • Ideal wedding size: up to 750 guests • Why it’s unique: High ceilings and crystal chandeliers give it a grand ambience, and with the adjacent spacious foyer (perfect for cocktails) accented with rich blue hues and great hall archways, the space evokes the feeling of a royal event. • Best for: Large-scale events. With such a large, beautiful space, there really are no limitations. If you want an entire big band orchestra to perform at your wedding, this is where you can do it. “We can support the most outrageous ideas [here],” Petrocelli says. “Surprise entertainment, huge guest lists, creative design, lighting or any type of decor.”
The Spa Garden • Ideal wedding size: 50-100 guests • Why it’s unique: With tall Italian cypress trees and lush palms surrounding the pool, spacious patio and Moorish-style architecture, the Spa makes guests feel like they are in a beautiful palace garden. It’s a unique choice for couples who can be a little flexible about the timing. • Best for: Smaller outdoor weddings. “You can still have a band, DJ and dance floor and the things you expect at a wedding, but the time of day has to be right, and it has to be the right time of year for good weather. It’s a great space for food stations, too,” Petrocelli says. “I like having Mediterranean cuisine for events there.”

ou can’t make positive choices for the rest of your life without an environment that makes those choices easy, natural and enjoyable,” says Deepak Chopra. The health and wellness guru couldn’t be more right—and he could very well be describing the Enlightened Lifestyle program at the Boca Raton Resort & Club. EL is an initiative that brings together the property’s health and wellness services and amenities in order to improve the health and well-being of members and guests. EL’s objective—from the spa and restaurants to fitness, golf and tennis centers—is to help people optimize wellness through education and behavioral change. “To address the growing interest in health and wellness, the Resort launched Enlightened Lifestyle to support members’ and guests’ healthy lifestyle,” says Jodi Sullivan, senior director of fitness and wellness at the Resort. “Wellness varies by individual guest and member values, but nearly all seek some form of wellness during their stay and as part of their Resort memberships.” Participants may enjoy special programming and activities year-round,

including sports stretching and flexibility clinics, lectures by experts on topics ranging from women’s health to stress reduction, and consultations on setting fitness goals and safe usage of equipment. “We really want to educate members and guests and provide them with a destination to maintain or start a healthy lifestyle,” Sullivan says. Mindfulness—a huge component of wellness, according to Chopra—is the goal of regular meditation and yoga classes as well as specialty classes like sunrise, sunset and full-moon yoga; yoga on the beach; “hip hot” yoga on the lawn with a DJ and post-workout refreshments; candlelight yoga in the spa garden; and more. These events have become hugely popular on the property, changing with the seasons or as demand dictates. “There are so many benefits of meditation, especially for travelers,” Sullivan says, “so we’ve really expanded our offerings in that area.” Guests can enjoy more rigorous specialty classes in cutting-edge techniques, such as vibration power plate, TRX, functional training and more, in the improved Health Club, which recently underwent a $1 million renovation and now features all new equipment. (A beach boot camp is also in the works.) This new health club with a purpose, Sullivan says, can easily replace—and eclipse—one’s regular gym off property. “With the state-of-the-art equipment and amazing environment, it’s a great place for members and guests to get motivated about fitness and even learn new workouts,” Sullivan says. Even guests who are only staying at the Resort for a night or two can avail themselves of EL’s offerings thanks to its a la carte menu of services. Through the Spa with Purpose program, for example, a guest with back pain could enjoy a massage treatment targeting areas of concern. The same goes for fitness: Guests can participate in very specific personal training programs for corrective exercise tailored to their needs.

CUSTOM PROGRAMMING Formerly senior director of global fitness for Hilton Worldwide, Jodi Sullivan is tasked with developing customized solutions and wellness programming, utilizing her background as a competitive figure skater, certified personal trainer and NASM Fitness Nutrition Specialist—as well as her education and training in areas of corrective exercise and functional training. “Through a collaborative approach ... we’ll bring purposeful healthy solutions to life,” says Sullivan, who is managing Enlightened Lifestyle alongside Cindi Moreno, director of spa and wellness at the Resort. Members and guests can look forward to even more wellness events and programming from EL in the coming months, including health-related speakers, cooking demonstrations, golf and tennis clinics, spa events with mini-treatments and more. Health club
As Sullivan says, “nutrition is key,” and EL has introduced culinary programs throughout the property, beginning with healthy menu options at the majority of the Resort’s restaurants, denoted by special icons for easy ordering. The property’s highly skilled and experienced chefs have designed these dishes to be low in calories and fat yet high in protein, Sullivan says. Members and guests can enjoy further nourishment at Serendipity with fresh juices, an acai and frozen yogurt bar with healthy toppings in the mornings, and a salad bar brimming with healthy proteins like salmon and shrimp in the afternoon. “We want to help members and guests stay focused and productive throughout their day,” Sullivan says. Another new addition is the chiropractic clinic of Dr. Ira S. Wenzel, in the newly renovated West Cloister wing of the main hotel. The boardcertified chiropractic physician specializes in sports medicine, orthopedics, musculoskeletal injuries, exercise physiology and more, focusing on the neck, back, spine, knees, hips, shoulders and ankles.

MAKING A SPLASH The Resort’s water sports are redefining the vacation experience.

ack in 1926, when the Boca Raton Resort & Club first opened its doors, water activities were likely limited to a leisurely boat ride or the occasional lakeside stroll. Fast-forward 90 years, and the Resort is rocking the Salt Life, from surfing and paddleboarding to the exhilarating FlowRider™ wave simulator and in-pool scuba diving lessons. “What we’re trying to do here is bring the old and the new together,” says Richard Marin, the Resort’s pool operations director. For visitors who come to South Florida for the water, the Resort offers a wide collection of activities. Those with a need for speed can rent one of several WaveRunners or motorboats, while others who want to catch a wave can rent a board or take lessons in one of the Resort’s surf clinics. Popular stand-up paddleboards, kayaks and Hobie Cats are available for rent, and children can enjoy a banana tube ride in the Atlantic Ocean. The Resort’s location makes it possible to offer water-based opportunities on both the ocean and in Lake Boca Raton, which is a wide part of the Intracoastal Waterway leading to the inlet.

“All of the activities offered here are what sets the Boca Raton Resort & Club apart,” says Mike Engle, an owner of Costa del Este Water Sports, which operates the Resort’s water-based activities concession. “It’s not just golf and tennis anymore.” In fact, these days guests have more of a taste for adventure, exemplified by the wildly popular FlowRider™ dual-sided wave simulator. “It’s an exhilarating ride,” Marin says. “It’s snowboarding, skateboarding and surfing all rolled into one. And there’s a cool factor that comes along with the FlowRider. It creates memories.” Riders range from children as young as 8 to guests in their 60s. Trained and certified instructors help all guests learn how to enjoy the experience; they’ll also ride along with anyone apprehensive at first, using hand-to-hand instruction or a towrope. “By the end of the day, most people have given up their fear and are very comfortable on the FlowRider,” Marin says. He added that, “now our guests are able to have fun at the ocean and also come to the Flow House Boca to relax, while sending their children to the FlowRider.” Not all the action is on the surface, however. The Resort also offers the PADI (Professional Association of Dive Instructors) Bubblemaker, a onehour program that introduces guests to scuba diving—in the safety of a swimming pool. “The PADI Bubblemaker program is a great way to introduce children to scuba diving,” Engle says.

BOCA RATON: CITY WITH A HEART Beyond the glamour and the glitz is a community that cares.
S
ure, we’re tanned and nice looking. (Usually.) And yes. We like tennis and golf and a night on the town. (Or, better yet, a getaway weekend at the Boca Raton Resort & Club.) But those of us who live in this fair city of 85,000 know that we also have a constant hankering for hometown goodness. PTA meetings. Cancer runs. Galas and silent auctions to help pay for hospitals and libraries and children’s charities. Philanthropists like to say this city has a big heart. So we peeled back the layers, and—lo and behold—look at what we found. You can’t understand Boca Raton—its urban design, its founders, its present-day lure—without understanding a bit about Addison Mizner, the brilliant and revered early 20th century architect who from day one billed Boca as a city rich with fun, sun—and wealth. For Mizner, a peculiar man who had a misguided reputation as a grand playboy but was actually a light drinker, a devoted friend and a hard worker,
this city he designed in the mid-1920s was the perfect place to create both beauty and opportunity for him, investors, and rich Northern buyers. And, oh, the plans he had. Using his now trademark designs of barrel-tiled roofs, stucco walls and decorative wrought-iron accents, Mizner had wanted to build a miniVenice on this very spot—although the canals and gondolas were eventually to have gone farther west. He had already created a commerce center in Palm Beach, where he’d built the Everglades Club in 1918. That club slightly to the north was a smashing success, not just enticing members to the exclusive resort but also creating jobs for his now-famous designs. Local workers built the columns and the tiles and the iron gates that went into his spectacular homes. The money still pouring into South Florida from the land boom, Mizner and his investors moved a bit south, eventually buying two acres of oceanfront land in Boca Raton. There, they set up plans for a city of riches.

Two acres. That’s all it took. But first, Mizner’s investors needed a place to stay. Scaling back his ultimate plan for a massive oceanfront Ritz-Carlton hotel, Mizner built a smaller—but still magnificent—hotel. It was called The Cloister Inn, and it’s where homebuyers stayed as Mizner and his team built their enchanting and intriguing new mansions. Know what the Cloister Inn is today? The Boca Raton Resort & Club. For those who have earnestly studied and documented Boca Raton’s founding days, Addison Mizner’s early attitudes and architecture still drive the city’s national—and international—reputation. Historians say Boca Raton pretty much broke Mizner. The Depression hit, the land boom fizzled, and Mizner died at age 61, a poor man on Palm Beach. If only he knew how we still rave about him. “In my opinion, the early impression of Boca Raton as a place that was all glamour and glitz started with Addison Mizner,” says Mary Csar, executive director of the Boca Raton Historical Society. “He’s the one who made us all hoity-toity.” Through the years, that reputation of Boca Raton as being magical, upscale and even a bit snooty has worked as both blessing and curse. For starters, when the city plans events and tries to attract vendors, sponsors and attendees, no one ever has to point out where Boca is on the map. “People certainly know where Boca is,” Csar says. But those same outsiders also think Boca is a vacation destination, a magical place of pink—from the stucco buildings to the golf attire to the clouds at sunset.

Csar insists she’s not kidding when she says she’s met out-of-towners “who are surprised to find out that people actually live here.” And, boy, do they. “There have always been just regular people who have lived in Boca, and I have to laugh when people tell me what they think of Boca, because it’s just wrong,” she says. Boca’s public schools are some of the best in the state, if not the country, and the private schools are globally revered. Forty years ago, Boca city officials bought up 5 acres of oceanfront property, meaning that city beaches are pristine, safe and well-maintained. Shopping is magnificent. You have to buy beautiful things somewhere. Restaurants are on the culinary map. City parks and recreational facilities are always teeming with families and after-school sports. Family life is big here. Synagogues and churches are well connected within their neighborhoods, which means a strong charity network for those in need. Yes, Boca is like any city and has residents in need. The local economy is not only financed and fueled by tourism, but also through its strong business base. (Watch out, Silicon Valley.) Higher education is tops, and it’s sailing even higher. Medical services are fantastic, and philanthropists have led the way on much of that new infrastructure. And pushing all this along are the residents who call Boca Raton home. “It’s a fabulous place to raise a family,” Csar says. “There are great schools, great businesses. There are creative things going on.” But before we get to that—and all the generosity that has made so much change possible—let’s understand a little bit more about Boca’s past.

The truth of the matter is, Boca Raton was really made strong by farmers. After Henry Flagler made Palm Beach County a stop on his northsouth railroad, some of the first settlers to arrive in northern Boca Raton were Japanese farmers. This small cadre of adventurers raised, or tried to raise, vegetables. They named their community Yamato Colony, Yamato being the ancient word for Japanese. But Florida weather, as it is wont to do, had other plans. The fierce Florida sun, an inhospitable agent for growing crops, along with crop disease, eventually chased away most of those early settlers. Some 65 years later, George Sukeji Morikami—one of the few who stayed—donated his land to Palm Beach County. His wish? That it be preserved in memory of the Yamato Colony. Today, it’s the Morikami Museum and Japanese Gardens, one of the city’s finest jewels. Real farming enterprises began to take root, if you will, in the 1930s, when migrant farm families began spending the winter months in and around Boca. One of them was Tom McMurrain, whose family began coming to the area in the 1930s. Their crop source was primarily string beans and bell peppers, and they farmed alongside some 30 or so other farming families, most of whom moved north to Georgia and North Carolina in the summer. Each Saturday during the winter months, the farmers would haul their crop to the market in Pompano Beach, where it was poked and prodded, then (hopefully) bought and
shipped to cities like New York and Chicago. “The farmers all had big respect for each other,” McMurrain remembers now. “We were controlled by the farm—and by the weather.” Eventually, these migrant families stayed in the area year-round, changing their crops with the seasons. When World War II hit, the locals—not to be distracted by the enormity of war in the states and abroad—were able to collect their wits and think about how to keep war money here at home. The city’s coastal location, reasoned a few key thinkers, made it the perfect location for an Army base. The military agreed, eventually taking over the Boca Raton Club for offices, classrooms and barracks. The government eventually collected 6,000 acres from 100-plus property owners to build an airbase. During WWII, it was the only radar-training school in the country. Seven years later, city fathers still thinking on their feet, Boca bought that same airfield, promising the federal government they’d keep it a civilian airport. Today—you guessed it. That’s the location of the Boca Raton Airport, a facility that is state-owned and open to the public. The stage now set—and beautifully, at that—more mainstream residents began to move here and call it home. In the postwar days, the city didn’t necessarily draw rich investors or hardworking farmers. American families began to move to Boca Raton, a trend that essentially forced the growth of schools, hospitals, businesses and tourist attractions.

With all that growth came the next important chapter in city history. Boca—that glitzy place once largely known for its beautiful buildings, wealthy visitors and sparkling ocean waters—was now a thriving community, in every sense of the word. Residents pitched in to help build the infrastructure, forming garden clubs, PTAs, and charity events for hospitals and libraries. In 1956, Arthur Vining Davis, founder of the Aluminum Company of America, began buying real estate as the Arvida Development Corporation, setting the aesthetic tone for future development, both commercial and residential. In the early 1960s, all these hands would gather on deck to mark some major changes in the city. One of those key players was Thomas F. Fleming, a one-time mayor and the founder of the city’s first bank, who is credited with providing the fundraising and political muscle to open Florida Atlantic University in Boca in 1964. When President Lyndon B. Johnson came to Boca for the dedication of FAU, Florida’s fifth public university, Fleming received the first Distinguished Service Award. And then came IBM. In 1966, the company bought 550 acres of land from Arvida, built a giant circular lake—rather unheard of in those days—and began to design that not-so-little something called the personal computer. IBM’s addition to the community was a game changer. Thousands of new company employees made Boca their home, enrolling their kids in schools, shopping locally and buying up residences. IBM wives quickly went to work, raising money for causes big and small. Within 15 years, the landscape had changed drastically, and by the time IBMers introduced the first PC to the world in 1981, Boca had a new hospital, a historical society, and had even been to the U.S. Supreme Court in an expensive effort to try to slow down expansion, even just a bit, with city laws that put restrictions on growth caps. When city fathers lost that effort, they created the Community Redevelopment Agency a few years later to take a look at its downtown and keep an encouraging eye on growth. The CRA still has an important touch on development today.

As growth untangled, moving farther and farther west, so did residents’ needs. And so did civic pride and civic giving. Here are some key examples of our wonderful community spirit through the years: * Perhaps the most spirited and motivated organization in town is still the Junior League of Boca Raton, taking on cause after cause after cause, giving time and money to more than 15 local nonprofits—everything from the historic Sandoway House Nature Center to the Farmworkers’ Children’s Council. This group of 700-plus women knows its city, its roots and the power of its community spirit. You always thought the Junior League was a bunch of pretty women who sell their hand-me-downs at the local thrift store? Think again, good citizens. * Over the past 30 years, Boca philanthropist Christine E. Lynn has supported nursing, health care and education with what many call “an unstoppable energy.” The widow of insurance magnate Eugene M. Lynn, she is one of the city’s most notable givers. The Women’s Health & Wellness Institute at Boca Raton Regional Hospital—a stone’s throw from the Eugene M. & Christine E. Lynn Cancer Institute at the hospital—was made possible after her $10 million donation. Always thinking of those before her, Lynn endowed that money in honor of Gloria Drummond, a woman who half a century ago led the drive to build Boca’s hospital. Red Reef Park * Boca’s favorite son, Dick Schmidt, and his wife, Barbara, are the largest private donors to Florida Atlantic University, and the family name is everywhere on campus: the Charles E. Schmidt College of Science, the
Charles E. Schmidt Biomedical Center, the Charles E. Schmidt College of Medicine, the Dorothy F. Schmidt College of Arts and Letters and the Schmidt Gallery. The Schmidts’ philanthropy to FAU started in the early 1970s, when Dick Schmidt’s parents, Charles and Dorothy Schmidt, donated $3 million to endow two professorships and 80 scholarships. In 2014, the family foundation gave $16 million, the largest donation in FAU history, to build The Schmidt Family Complex for Academic and Athletic Excellence. And there are others of great note: Former Home Depot CEO Bernie Marcus, whose $25 million grant led to the Marcus Neuroscience Institute at Boca Raton Regional Hospital; businessman Bobby Campbell, long known for giving back to Boca, who funded a new soccer stadium at Lynn University; and Countess de Hoernle, whose community donations have—at least by some estimates—totaled more than $40 million through the years. Yes, from working parents who support their kids’ classrooms with in-kind donations of paper, books and tissues to the wealthy who are more capable of giving sizable endowments, Boca’s sense of community is real. Very real. “We’ve always had citizens who care about this community, and they’ve always gone out of their way to make it better,” says Csar, our go-to historian who has lived in Boca Raton for nearly 40 years. “These are the people who have always seen the future.” And they’re still out there, keeping watch.

The Boca Raton Resort & Club is its own vacation village.
I
n 1926, the Cloister Inn was a blip of Mediterranean-styled luxury among miles of orange groves, cow pastures and undeveloped land—an architect’s opening salvo in his blueprint of paradise. Ninety years later, the Boca Raton Resort & Club is synonymous with the bustling city that bears its name. And like Boca Raton itself, it’s a fully functioning, autonomous community whose nearly 2,000 employees work tirelessly to keep Mizner’s dream intact. BY THE NUMBERS We go beyond the pink facades to meet a few of the team members who keep the Resort’s • Acres: 356 gears turning, its towels • Square footage: 3.5 million laundered and its restaurants buzzing. • Buildings: 20

“Logistically, a lot of hands touch [this],” Graham says. “It’s rooms, because guests get affected. It’s banquets, because nobody can be in the Great Hall area in case something were to fall; it’s convention services, security, executive offices and pool operations, because the pool and FlowRider both had to shut down. It touches every department within the 1,800 employees that we have. “For a property this large, even though it looks like it’s very calm and organized—and it is—there’s always something else happening behind the scenes,” he adds. “And 98 percent of the time, I would say that none of that affects the guests.” The success of the invisible maintenance and cleanup of the property is thanks to Graham’s efficient and specialized staff. He has plumbers, air conditioning technicians, boiler technicians, laundry technicians, carpenters, upholsterers, painters, general mechanics, welders and more, on call at any time. “In order to run a facility of this size, it has to be self-sustaining,” he says. Two office administrators handle the specific requests, which are filtered through a Web-based app and dispatched immediately to the appropriate technician. “Team members are using iPads to receive work orders or take pictures and put notes into the system, so now they can see guests’ names before they get to the room. It’s changed dramatically our response times to get to guests. We’re getting to every guest’s call within 15 minutes 70 percent of the time. “Coordinating the efforts of our staff to maintain and beautify the Resort is sometimes taxing, but the team works like a family,” he adds. “We’re always looking after one another to make sure the guests are happy and that the Resort is better today than it was yesterday.”

As the Resort’s director of bars and restaurants, Kevin Ives likens his workspace, which covers dining facilities from one end of the Resort to the other, to a football field. Only he wouldn’t deign to call himself the quarterback. “I use the analogy of block and tackle. My job is to run 10 feet down the field as [the chefs] have got the ball, and remove things in their path so they can get to the end zone,” Ives says. “Some of those things may be helping them identify a problem and then working with them on how to correct it, and removing the proverbial white noise from their life so they can focus on the things that are most important. I’m the bulldozer out in front of them.” Ives always has a lot on his plate, so to speak. To achieve functional harmony with such a broad array of dining establishments—from the casual comfort food of Shaka Bar and Grill to the fine Japanese cuisine of Morimoto—he relies heavily on chefs he reveres, allowing them to be

{ Giving Back } It could happen to anyone. When an employee at the Boca Raton Resort & Club—let’s call him Jason—lost his home in a fire, it wasn’t just the real estate that went asunder. He lost all of his possessions for himself, his wife and his two children, who suddenly didn’t have a pair of clean clothes. That’s where the Boca Resort’s CARE Fund came to Jason’s rescue. Established in 2011 as a way for fellow team members to fill gaps left by state and federal assistance, the CARE Fund began as a series of fundraising events, such as garage sales and T-shirt sales, but “we have gone above and beyond that,” says Betsy Lopez-Gonzalez, human resources manager at the Resort. Today, employees can request payroll deductions to support the fund, and in a company with 1,800 employees, even just a dollar per paycheck goes a long way. When an unforeseen crisis like Jason’s tore his life apart, the CARE fund helped him put it back together. “The hearts of our team members are amazing,” LopezGonzalez says. “We provided food, clothing, furniture and helped find a new apartment, so that when he was able to find a new place to live, he didn’t have to worry about, ‘where are my kids going to sleep,’ or ‘how do I dress my kids to go to school?’ Our culture and our values focus on respect and taking care of each other. camel on a beach. We’ll do Harley parties. Our coolest event is Rock the Block, a big New Year’s Eve block party, that starts at 501 and goes past the convention center. People book a room just to come. “The fact that it’s private and exclusive” makes the Resort an ideal location for conventions and events, Sergio adds. “A lot of people find that mysterious—it’s like forbidden fruit. You can’t have it otherwise. From a corporate standpoint, there’s a sense of security, of safety.” Sergio’s department includes hundreds of employees, and she works closely with Boca by Design’s Lisa Coccoli, whose resident team of 57 is responsible for the floral arrangements, decor, music and entertainment at Resort events. She prides her company’s ability to customize events to guests’ and members’ desires, from a “Bangkok in Boca” party or a “Pirates of the Caribbean”-themed shindig to beach Olympics and paddleboard yoga. “Other companies tend to put out packages with prefab ideas or party concepts,” Coccoli says. “But if you went to a bar mitzvah a month ago, you don’t want to see the same caricature artist or the same activities that the other one did. I have five designers who do the sales part of it; they are constantly having to keep up with the trends to have the edge over the next company.” Even though Coccoli handles more than 1,000 events per year and has the mechanics of event management down to a science, she still encounters requests that surprise her, and she tries to make possible even the wildest of ideas—from flying Elvises diving into the pool to literal dancing bears. “You have to discover what the property is willing to bear when you have the events,” she says. “We were trying to have a bar mitzvah boy be flown in on a helicopter, but we were having trouble landing him on a pad that’s safe enough that the wind will not incur damage to the party,” she says. As a compromise, the family “settled” for a Jet Ski arrival instead.
Ninety years ago, Addison Mizner helped put Boca Raton on the luxury and hospitality maps with his Cloister Inn, which later became the Boca Raton Club, which later became the Boca Raton Resort & Club. For nearly a century, this standard-setting property—which happens to be the oldest extant business in Boca Raton—has been inextricably linked with the development and aesthetics of the city itself. It’s no surprise that this jewel of a property is also a key focus area for the Boca Raton Historical Society, which hosts bimonthly tours of the Resort from January through May (visit bocahistory.org to sign up for one). “We have some well-trained volunteer tour guides, who have a lot of experience and energy,” says Historical Society curator Susan Gillis. “You view primarily the historic sections of the hotel and the features that are still intact, as well as some of the dramatic additions that have happened over the years, like the Tower. They also point out some of the really fun

One of the legends is that Mizner’s workmen installed them upside down, because they’re top-heavy. But that’s not true, because if you look at them, they have lions and griffins, and if they were upside down they’d be standing on their heads. • A lot of famous golf pros are associated with the hotel, like Sam Snead and Tommy Armour. The first Virginia Slims tennis tournament, which made women’s tennis back in the day, was played at the hotel.
