Ingredients:

½ c. shortening ½ c. butter 1 c. brown sugar, packed ½ c. sugar ½ tsp. baking soda ¼ tsp. salt 2 eggs 1 tsp. Mexican vanilla or pure vanilla 2 ½ c. all-purpose flour 1 bag semi-sweet chocolate chips ½ c. cocoa (optional)

Step One: Read over the recipe. This is an important step. Be sure to read through the ingredients, and instructions. Gather ingredients needed and set them on the counter (head to the store to grab anything you might not have readily on hand). Mixing the dough by hand is not recommended so be sure to have a hand mixer or stand mixer (stand mixer is the preferred method).

Step Two: Preheat your oven to 375°. It is important to do this prior to mixing the dough so the oven will be ready when the dough is done. Do not put the cookies in the oven until it comes to temperature. Putting them in while the oven is still preheating will cause the cookies to bake unevenly.

Step Three: Combine shortening and butter in mixing bowl. Beat for 30 seconds (do not over beat). Add brown sugar, sugar, baking soda, and salt. Beat until combined. Beat in eggs, and vanilla until combined with butter and sugar mixture. Careful not to over beat.

Step Four: Add flour (if adding optional cocoa add with the flour). Mix. Check to make sure dough is not to sticky. If it feels to sticky add a tiny bit more flour. Mix again. Repeat until dough is a good consistecncy. The more you make the cookies the better you’ll get at telling when just the right about of flour has been added to the dough.

Step Five: Stir in chocolate chips with a wooden spoon (Ghirardelli semi-sweet chocolate chips are the best ones to use though any brand is acceptable).

Step Six: Using a cookie scoop, scoop 1-inch balls of dough. Line them on an ungreased cookie sheet. To insure they are not too close create four rows of three cookie dough balls following the shape of the cookie sheet. Careful to not place the dough to close to the edges of the cookie sheet.

Step seven: Bake the cookies for about 8 to 10 minutes, or until the tops turn a slight golden color. Remove cookies from the oven. Bang the cookie sheet on the stove top lightly when finished baking to set the cookies.
