Fluffy Buns & Hidden Treasures Yum Cha, literally ‘to drink tea’, is a fundamental part of Cantonese culture. It’s a chance for family and friends to come together over porcelain cups of Chinese tea and tiny dishes called dim sum, to gossip, laugh and catch up. From construction workers pulling apart fluffy steamed char siu buns, through to bankers feasting on delicate har gow dumplings over a contract signing, yum cha successfully transcends the social boundaries and hierarchies that dominate so much of Asian culture. It’s also one of the most recognisable meals for visitors to seek out. In Hong Kong, there are lots of unique ways to enjoy yum cha. In Stanley Street, at the heart of Central, Luk Yu is an esteemed – and infamous, as it was once the scene of a high profile triad murder – traditional tea house that has been serving the city’s tea drinkers since 1933. Known for its Art Deco stylings and colonial-esque pomp, only loyal, long-term customers have the privilege to dine downstairs in the unofficially reserved dining room, leaving visitors climbing the stairs to the second floor for steaming sui mei parcels, rice congee with ‘century’ egg, and lo mei gai, chicken and rice steamed in a lotus leaf. From the intimate couple’s booths and wood panelling to the marble tabletops and the ancient staff – many of whom have worked here for decades – Luk Yu is as close as you can get to authentic yum cha as it once was. It’s a bit of a contrast to Tim Ho Wan, the world’s cheapest Michelin-starred restaurant. Awarded one star in the 2012 Michelin line up, Tim Ho Wan is located in an unassuming street in Mongkok, a thriving, heaving entertainment and shopping district in Kowloon, far from the limelight such an accolade would usually afford. And that’s the beauty; yes you might have to wait for up to four hours to get a coveted seat within this tiny dumpling canteen, but the dim sum dishes, created by former Four Seasons master Mak Pui Gor are positively indulgent. If you listen carefully over the din of Mongkok by morning and the grumbles of those still queuing outside, you just might hear a sign as the signature char siu pork buns fall apart in a cloud of steam and sweet aroma. Kong, home to the three-starred Lung King Heen, a stunning Chinese restaurant renowned for the quality of its dim sum (after all it’s where Mak Pui Gor cut his teeth). Complemented by captivating harbour views, the decadent menu is laced with gourmet dishes, from baked goose ‘puffs’, and lobster and scallop dumplings, to siew yuk roasted pork belly, and pan-fried rice rolls with a coveted home-made XO sauce. Talk of the Town Whereas once all the stellar restaurants in Hong Kong could be found in luxury hotels, increasingly the best spots for fine wining and dining are a little harder to track down. Hong Kong Island has some of the highest rents in the world, pushing would-be restauranteurs away from Central and Soho, and into peripheral locales like Wan Chai and Sheung Wan. In the slightly cheaper confines of new foodie precincts, chefs and restauranteurs are creating – or in some cases recreating – culinary icons that become destinations unto themselves. Star Street in Wan Chai, and its sister laneways Sun and Moon, were named for the city’s first electric street lamps. Now, huddled between towering, weathered apartment blocks, one of the city’s most exciting foodie nooks is evolving. The modern Spanish leanings of The Principle, which recently received its first Michelin nod, is one of Star Street’s stand outs. A Canary Island native who honed his skills at some of Spain’s top eateries, chef Jonay Armas has created an ingredient-driven menu that is part home cooking, part molecular homage, and is laced with new techniques and palate-swooning combinations. If you’re not in a hurry, your taste buds will thank you for trying Armas’ degustation, with the likes of slow poached free range egg with cepes and black truffle; and juicy suckling pig with tangy lemon purée. For dessert a violet sponge with honeycomb and a pistachio purée, is a sweet yet peculiar touch to a dining experience which seduces the palate and tempts – rather than ravishes – the senses. Down the road, Chez Patrick, once a stalwart of the Central dining scene, has moved east, setting up in new dig and giving itself much needed room to breath in the process. The new Queen’s Road East location features soaring ceilings, muted tones punctuated with hand-painted gold wallpaper, bespoke furniture and and intimate www.jetsetter.hk

lighting. Culinary elements of the former venue remain, with signature dishes like the smoked trio of foie gras, salmon and yoghurt; and fresh tuna carpaccio with pastis and lime, found on a dedicated signature menu. But a host of new selections, including marinated Hokkaido scallops with watercress and wasabi dressing; French ‘’Charolais’’ beef fillet with dauphinois gratin; and a mild ginger and orange zest comfit soufflé are winning over a host of new diners thanks to chef Patrick’s clean, fresh and innovative take on provincial French cuisine. Down the road, local hotelier Yenn Wong has teamed up with celebrity chef Jason Atherton to open 22 Ships, a chic street side tapas joint that has been turning heads across town. “22 Ships is meant to be a bit of good fun,” says Atherton. “I personally love the idea of good food in a casual environment. I think Hong Kong already has some great five star fine dining restaurants and really the trend right now is the hip neighbourhood venue.” Prepare to queue for a coveted perch at this intimate 32-seat

venue, but we assure you it’s worth the wait, with a playful menu of para picar, or small bites, including smoked bone marrow with onion jam and relish butter; scallop ceviche with a zesty yuzu dressing; and char grilled Ibérico pork and foie gras burgers. Look for the likes of olive oil brioche, chocolate ganache and the ‘PBJ’ made from peanut ice cream, blue fruit and salted peanut caramel for dessert. From street side to new heights, and the avant-garde cuisine of Paco Roncero, who has opened View 62, the city’s only revolving restaurant. The high flying Spanish master’s intelligent, innovative and thoroughly artistic nouvelle cuisine is right at home here, amidst elegant interiors by Ricky Hung Wai Lung of Un Design. Chef Tasting menus are available each evening and are guaranteed to have you captivated as enthralling, thoroughly artistic creations are served with precision. Dishes like the XXI Century Omelette, layers of slow-cooked onion and creamy egg yolk sabayon; and the Carbonara Egg Nest of wispy beef consommé noodles holding a frozen egg shell of bacon cream, offer a sensory journey; a visual symphony of complex, multi-layered flavours that has diners nibbling, poking and marvelling. Across town, on the cusp of Sheung Wan, you’ll discover a deliciously contrasting affair at the aptly named Salted Pig. The homecooking restaurant is the newest innovation by the Shore Group, owners of the successful Shore steak restaurant-cum-cocktail lounge in the same building. The Salted Pig is all about the humble hog, combining authentic, European provincial fare with a rustic chic design persona that features tables at one end, and deep booths at the other, perfect for bouts of carnivoric camaraderie. The restaurant’s designers have done a good job converting an office building into a scene from River Cottage, with the use of beaten enamel pots and pans, traditional tin-style plates and plenty of timber accents. The surrounds prepare diners for the likes of Ploughman’s Platters piled with homemade pork terrine, pickles and prosciutto; massive pork tenderloin stuffed with dried plums, pine nuts, sage, sausage and walnuts; or the slightly spicy “Rub n’ Tickle” sous-vide pork belly, all of which are crowd pleasers. Seek and You Shall Find You’ll also find plenty of comfort food hidden away in Hong Kong’s community of private kitchens. Traditionally homes that moonlight as restaurants, the private kitchen scene now has as many faces as there are cuisines and innovative chefs to cook them. TBLS, an innovative 18-seat hideaway in Central, is the creation of Vietnamese American chef Que Vinh Dang, who, in true private kitchen style, serves up ever-changing tasting menus in one coveted sitting. “Private kitchens are a good way to go for chefs who want to cook what they’ve always wanted to cook, but don’t have the budget to start a proper restaurant,” says Dang, who changes his menu monthly. “Diners are always on the lookout for new and interesting places to eat, and private kitchens offer that element of curiosity.” At TBLS guests wait with baited breath for the next issue, but at other private kitchens, groups of dinners might not even initially notice the service over the revelry. One such place is Le Marron in Causeway Bay, where tables of all sizes, manned by a hodge-podge of secondhand antique dining chairs, are divided by bed sheets, creating a venue that’s half eatery and half shadow puppet show. Simplistic yet sumptuous Provencal-styled cuisine proves popular with groups celebrating within their candlelit, bed sheet setting. Another crowd pleaser hidden away in Sheung Wan is Magnolia, home to the city’s best Cajun cooking. Dinner starts with cocktails in the kitchen as staff put the finishing touches on racks of ribs, fluffy corn bread, heaped bowls of jambalaya and rich, heady gumbo. The the actual meal takes place in private rooms upstairs. No corkage at many private kitchens, including Le Marron and Magnolia, mean wine lovers can play mixand-match with a few bottles from the local wine shop, and the spiced pumpkin and pecan pies served as dessert leave a very sweet palate for any Hong Kong-bound foodie.
