The coconut is a versatile fruit enjoyed in the Caribbean. The water inside can be sipped straight from the shell. When you split it open, you can use piece of the shell to scoop the soft, sweet jelly inside. The hardened jelly of older nuts is used to make sweet treats, such as ice cream and sugar cake, or to create coconut milk –a staple in Caribbean cooking for dishes like peas, rice and curries.
A snowcone is a refreshing treat made of shaved ice smothered in sticky, sweet syrup.
Vendors in the Caribbean operate trolleys using a machine to grind down large blocks of ice to a texture like snow. The colourful syrup is made from tropical fruits such as guava, tamarind and pineapple. A topping of condensed milk can be added for extra sweetness. Snowcones are a perfect cool down on a sunny day.

This fruit can be eaten fresh off the tree or cooked to make jams, chutneys and other tasty treats. There are many types such as Julie, Starch, Rose, Long and Coco-bef. They can be large or small and a rainbow of colors - green, yellow, orange or red. When ripe, they are juicy and you can smell the sweetness from the outside of their skin!
This hard-shelled crustacean dwells in swamps around the islands.
Blue crabs bear 8 legs and 2 claws or gundys (local name). This land crab typically walks sideways and has eyes that extend out of its body. In many of the islands the blue crab is part of a yummy feast, enjoyed in curry, jerk spices or the meat can be seasoned and stuffed back into shells to make crab backs!

The Caribbean supports one of the largest leatherback nesting populations worldwide with an estimated 6,000 visiting its shores annually.
Leatherbacks, like all sea turtles, start out as eggs buried in sandy nests. Hatchlings face many predators as they scamper seaward. It is estimated that only one in one thousand leatherback turtles survive to adulthood.
