The Aussie Gourmet: Cheese Noodle Kugel

My friend Esti Kafra gave me this recipe years ago. It’s my go-to dairy dish to serve when breaking a fast. This recipe makes three kugels, and they freeze well. It’s the “cook once eat twice” prep ahead concept that also makes it a winning dish for me.
Ingredients
b1 package (10.5 oz) fine egg noodles b1 package (10.5 oz) medium egg noodles b2 tablespoons of butter b16 oz. farmer cheese b16 oz. cottage cheese b8 oz. sour cream b8 oz. cream cheese b1½ cups sugar b2 tablespoons of sugar b8 eggs CRUMB TOPPING b¼ cup butter b1½ cups panko crumbs b1 cup sugar b½ tsp ground cinnamon
Preparation
1. Preheat oven to 350°F. Cook noodles according to package directions.
Drain but do not rinse. 2. While noodles are cooking, make crumb topping. 3. To make the topping: Melt butter in pan and add crumbs, sugar, and cinnamon. Mix to form coarse crumbs. Remove from heat as soon as ingredients are combined. Set aside. 4. Place remaining kugel ingredients in a large bowl and mix well (you can use an immersion blender or hand mixer). Add cooked noodles and stir well until everything is combined. Line three round 9-inch pans or an 11-inch x 16-inch roasting pan with parchment paper and pour batter into it. Cover with crumb topping. Bake 1½ hours. Smaller kugels may take less time to bake, so check them after an hour of baking.
