Hebrew Academy Miami JV Boys Basketball Team Clinches Championship at Chai Five Tournament, Shows Strong Support for Israel (Courtesy of Hebrew Academy) Last week, the JV Boys Basketball team representing Hebrew Academy Miami secured victory at the Chai Five Basketball Tournament and Community Event, hosted by Project 24 at Scheck Hillel. The tournament, which aimed to connect Jews worldwide through impactful projects addressing the aftermath of the October 7th massacre, featured four local South Florida Jewish Day Schools (Katz Yeshiva, Scheck Hillel, David Posnack, and Hebrew Academy), along with two teams from the Israeli Hapoel HOF Ashkelon Travel Team. Over Forty Rabbis of Israeli Communities From Across North America Come Together at 2nd Annual ‘Mekusharim’ Event in Miami By Community Voice Editorial Staff

This week, the Hilton Miami Airport Blue Lagoon in Florida played host to a momentous event as it welcomed over forty rabbis and heads of Israeli communities from across the USA and Canada for the second annual Mekusharim gathering. The gathering, marked by spirited discussions and impassioned speeches, aimed to address pressing issues related to Judaism and the Torah way of life facing Israeli communities throughout the continent. The highlight of the event was the presence of Maran HaGaon Rabbi Yitzchok Ezrachi, the esteemed Rosh Yeshiva of Mir in Israel. Despite his advanced age, Rabbi Ezrachi traveled from Israel to personally address the gathering, underscoring the gravity of the challenges facing Israeli communities in North America. In his fiery speeches, Rabbi Ezrachi did not mince words, describing the current situation as “quite a holocaust” and emphasizing the P. 1 8 / T S F C O M M U N I T YVO I C E . C O M

urgent need for action. Rabbi Ezrachi’s decision to atend the gathering in person, rather than optiing for a virtual appearance by video hookup, underscored the gravity of the issues at hand and the importance of taking urgent action. His presence served as a rallying cry for participants, inspiring them to take proactive steps to address the unique needs of Israeli communities and the need to broaden and expand the net of sanctity around their communities. From addressing communal challenges to exploring opportunities for collaboration and growth, the gathering provided a platform for leaders to chart a course forward. One of the key outcomes of the gathering was the opportunity for leaders to identify and prioritize the specific needs of Israeli communities in North America. By coming together and sharing their insights and experiences, participants gained valuable perspectives that will inform their

future efforts to support and uplift their constituents. As the event concluded, participants departed with a renewed sense of purpose and determination. The connections forged and ideas exchanged during the gathering are expected to serve as a catalyst for positive and urgent change within many of the Israeli communities scatered across the continent. In essence, the second annual Mekusharim gathering served as a testament to the resilience and unity these communities can and must have in the face of formidable challenges. As participants return to their respective communities, they do so with a shared commitment to building a brighter future grounded in the principles of faith, unity, and collective action that will build a solid foundation and secure the Torah future for the next generation.

The Kosher Foodie BUBBY’S FISH N CHIPS By Judy Waldman

What a great place to take Bubby! Or your kids or a date. Bubby’s Fish N Chips has proven itself to be an appropriate venue for a variety of occasions if you’re looking for quality, fresh kosher food in a setting with a warm and friendly ambiance. With bright lighting, fresh laminate floors, and non-intrusive background music, Bubby’s is the place to go if your primary focus is fresh products and a delectable meal as good as, if not better, than homemade. And that’s no fish tale! The menu is intentionally simple but that doesn’t mean a shortage of selections. Breakfast choices are the standard eggs, omelettes, pancakes, bagels and the prerequisite shakshuka. The rest of the menu offers a variety of foods for either lunch, dinner, or the motzei Shabbos melava malka (Bubby’s is open til midnight on Saturday nights!) When Schneur Borenstein opened Bubby’s in September of 2019, there weren’t many kosher restaurants in North Miami Beach, but Schneur wasn’t just looking to reel in the local Yidden, he wanted to offer real true fish’n chips with the added bonus of being gluten free. (Yes! Bubby’s is open for Pesach!) Most of the items on the menu are gluten free, but what makes the fried fish particularly special is the homemade batter. And the homemade tartar sauce. In fact, all of the sauces except for the ketchup are homemade. The focus is not just on healthy, but also on fresh. The storeroom housing boxes of whole cabbage testifies to the coleslaw’s origin. Particular attention is paid to the French fries. Perhaps it is details such as being hand-cut that add to Schneur’s claim of being the best FF’s in South Florida. They got my vote! But Schneur’s real pride is in his fish. The pelagic choices are salmon, cod, corvina, halibut, tuna, and seabass. All fish, except the salmon, is wild caught by commercial fishermen who deliver P. 2 0 / T S F C O M M U N I T YVO I C E . C O M

the catch fresh rather than the standard “flash freeze” method. So whether you choose to have your delicacy grilled or fried, know you will be enjoying the highest in quality. Schneur Borenstein isn’t sure where his commitment to health-conscious food comes from, but he smiles as he tells about the restaurant’s name. Schneur’s parents are Chabad Shluchim in upstate New York. It was a difficult childhood growing up frum in a non-religious community. But through all of his many challenges, he remained close to his Bubby. It is in her zchus that he proudly has her name displayed. Bubby is in her nineties, kein ayin hara, but Schneur is still hopeful she will be able to visit soon. Schneur feels it is a name to live up to. He says, “The restaurant is what you make it. I wanted a unique concept, fresh-fish based that is affordable, casual, and would appeal from the middle to upper echelon clientele with consistency. I am grateful to have been able to accomplish that.” Schneur’s accomplishments aren’t just seen on the tables. Bubby’s Fish N Chips is scaling new heights and has become a much requested caterer for sheva brachas, customized private dinners, shuls, brisim, wrap-platter lunches for the nearby yeshivas, and recently served a 250 bocherim breakfast to one of the schools. Catering accounts for approximately 15-20% of Bubby’s clientele. Takeout and Uber Eats makes up an additional 25-30%. Maybe instead of carryout, we could consider it catch and release. The overflowing crowds appear at Yeshiva Week and Pesach. As is obvious by the yeshivas that use Bubby’s as a caterer and by the returning annual visitors during Yeshiva week, kashruth is an integral part of Bubby’s success. Under the Kosher Miami (KM) supervision, all products served are Cholov Yisrael, Pas Yisrael, Yoshon, and Bishul Yisrael. Additionally,

Schneur buys all products (except for the fresh fish) from kosher distributors. Supporting the local markets is one way of giving back. When asked about how else he gives back to the community, Schneur responded that he is very transparent, but one thing he doesn’t talk about is his tzedakah. The implication is that he gives generously and humbly. I witnessed this by one walk-in customer who left with a bagged lunch. Schneur and the cashier gave each other mutual nods acknowledging that there was no charge. Speaking of staff, many have been at Bubby’s since the beginning. That did not come as a surprise as Schneur’s sincere and pleasant demeanor is surely a factor in his success. As I was leaving, I stopped by a table to schmooze with some diners to get opinions of their meal. No, I wasn’t fishing for compliments. The group of eleven came from Savannah for a week of warm weather and kosher food. The adults ordered three different fish meals so they could compare the various species. They ranked the corvina, cod, and halibut all as equally excellent. Was lovely to see this family enjoying the rarity of kosher fish n chips. This beautiful family consisted of Mom and Dad, a slew of kinderlach, and their Bubby! Am waiting with baited breath to meet Schneur’s special Bubby, one who merited having the hailing rights to broadcast her name. Would I go back for another scrumptious meal? To Be or Not to Be: Life, Old Age, and the Hospice Conundrum By Chavie Drang

I received an interesting call last week from a man named Mr. Levine (not his real name). His centenarian father, Senior Levine (we’ll call him Senior for short) lives in a nursing home under longterm care, and Mr. Levine visits every day to check in on him. Unfortunately, Senior was sent to the hospital with breathing problems, and Mr. Levine wanted some guidance regarding next steps. Specifically, one of the options presented to him by the case manager was switching his father over to hospice care. Luckily, rather than blindly following this suggestion, Mr. Levine called me to ask for my advice. “Was there a new diagnosis that prompted the suggestion to consider hospice?” I asked. “No,” Mr. Levine said. “I think they just see that he is older and suffering, and they offered me this beautiful package of palliative care to help him be comfortable and have all of his needs taken care of. But it sounds like there is a catch. What’s the catch?” Hospice, sometimes referred to in more euphemistic terms as palliative care, places a strong emphasis on providing compassionate end-of-life care, prioritizing comfort and dignity for people with terminal illnesses. It focuses on making the journey easier and respecting the person’s wishes. This approach aligns with broader Western values surrounding autonomy and quality of life. On the contrary, traditional Jewish values tend to emphasize the preservation and sanctification of life. In Judaism, every moment is seen as an opportunity for spiritual growth, and the duty to preserve life is paramount. This creates a potential conflict with the principles of hospice, which may involve decisions to forego life-sustaining treatments in favor of comfort measures. As Rabbi Hauer has written an article on this sensitive and nuanced topic to help guide end-of-life decisions: “Four core values: The pursuit of life, and the valuing of life of any P. 2 4 / T S F C O M M U N I T YVO I C E . quality or duration. Recognition that there is a time to die, and that in the pursuit of life modern medicine cannot ignore pain and suffering. These values are always at play and often in conflict.” Once Mr. Levine took a step back and explored these ideas, he had many questions. Why was his father referred to hospice? What defines “terminal illness”? Is the advanced age of 100 enough of a reason for someone to go on hospice care? This reminds me of the famous quote by Benjamin Franklin: “In this world, nothing is certain except death and taxes.” Putting taxes aside for a minute, Franklin was saying that life itself is the main risk factor for death. A recent Italian study by Elisabetta Barbi et al. entitled “The Plateau of Human Mortality: Demography of Longevity Pioneers,” which was published in Science, a peer-reviewed journal, found the following: a person’s risk of dying, also referred to as mortality, starts increasing at age 30 and continues to rise until 80, at which point mortality actually begins to decline. And if one lives to the ripe old age of 105, as the recent study shows, mortality actually plateaus. At that point, very old people get to hit the “cruise control” button on life! Now let’s get back to Mr. Levine and Senior. Mr. Levine and I had a conversation

about what his values were and what type of care he wanted for his father. I encouraged Mr. Levine not to feel pressured or rushed into any decision, and to speak with his rabbi about the implications of beginning hospice care. As Mr. Levine discovered, hospice was not a good fit for his father, at least not at this juncture. Mr. Levine wanted to make sure that Senior received any and all medical treatments available to continue fully living his life. With this in mind, I suggested that he speak to his father’s physician about the option of being discharged to an LTACH (long-term acute care hospital), rather than going straight back to the nursing home. Like many, Mr. Levine was not familiar with this type of facility. An LTACH is like a step-down hospital for patients that have stabilized but require more time to recover at their own pace. Mr Levine was so grateful that he was able to receive the guidance he needed to make this decision at this critical time. Hospice can be wonderful and appropriate for patients that are truly endof-life. However, as this story demonstrates, Western medicine often writes people off before that time has come. By recognizing this, and by following the underlying Judaic values that guide our lives, we can make informed healthcare decisions. And then, at some point, we’re going to have to take care of our taxes, too!

The Showdown Begins: Who Will Be The Winner By Shmuel Shayowitz

Superbowl mania is in the air, and so is election fever. In fact, this year, we will once again have a rematch as we did in 2020. As of now, it will be Donald Trump vs. Joe Biden and The Kansas City Chiefs vs. the San Fransisco 49ers. Last year’s Super Bowl was the mostwatched broadcast in history, and it is likely to set new records this year as well. As for the electoral stage, it will continue to be a spectacle until year’s end. As the political showdown begins, so does the economic slowdown! The Federal Reserve, often miles behind the pulse of the economy, had its first meeting of the year. As expected, no interest rate actions were taken. More than that, it seems to have telegraphed that there will be no rate cut in March either – which is what I have been saying for months. Chairman Powell declined to commit to specific rate forecasts, saying, “It would depend on the data.” And so, the showdown commences. But who will be the winner, as the reported economic data doesn’t reflect what is actually being seen in reality? These days, you can’t view a news report without reading about new layoffs in almost every major sector from tech, manufacturing, finance, construction, leisure and hospitality, transportation, utilities, health services, retail, and pharmaceuticals – to name a few. Employment continues to look strong, but P. 3 6 / T S F C O M M U N I T YVO I C E . C O M

it continues to trend lower, even on paper. We have seen lower wage-pressured inflation in each of the last 19 months. Of note, the “premium” companies were paying to recruit new employees has dropped significantly lately, indicating less incentive to switch jobs – a critical indicator of future economic woes. The Employment Cost Index measures the cost of labor to employers. It’s an indicator that Jerome Powell studies diligently and is known as one of former Fed Chairman Alan Greenspan’s favorite measures of wage-pressured inflation. It was up quarter over quarter but significantly lower than the expected increase. Then, there is the real estate market. Many are bracing for a housing slowdown. (not me!) The Case Shiller Home Price Index, the “gold standard” for appreciation, showed that home prices rose 0.2% in the latest monthly reading and have been on the rise since January 2023. The home price index has continued to set new all-time monthly highs in home prices since July 2023. Similarly, the FHFA (Federal Housing Finance Agency) released its House Price Index, which measures home price appreciation on single-family homes with conforming loan limits. Unlike Case Shiller, it does not include cash buyers or Jumbo loans. The FHFA reported that prices rose 0.3% in the latest reading and are

up 6.6% year over year. The FHFH index has set new record highs in monthly home prices since February 2023. Indeed, there is a battle on the playing field between housing, employment, and the broader economy, which is buckling hard. My biggest recommendation to everyone at this point is to get their “house in order.” Yes, for every home, that means something different, but regardless, I implore each of you to take heed and prepare for a showdown.

The Art of Interaction, Sales By Shalom Markman

I had the opportunity to be the expert in the room recently and brought in a nice client because of it. It stated with a call in August from a restaurant in the West Coast. Recently changing ownership, they were looking at what expenses could be reduced. Their conversation with me was a simple one. If I was able to save them money on their merchant processing fees while keeping their current processing hardware and software in place, they would make the switch. What is credit card procesing anyways? When you shop at your local pizza or sushi joint and swipe your card, it’s not your credit card that funds that restaurant. Rather, it’s the merchant service that the restaurant or any business for that matter uses. The merchant service is tied into the in-store hardware or online software used to take your card info. The transaction then gets routed to the merchant service funding bank for approval and funding into the restaurants bank account. That’s what I do in a nutshell, funding businesses for the credit card transactions that you swipe. The most important piece of hardware and software for a restaurant is their POS or Point of Sale. This particular restaurant used a brand which I had no experience with, Aldelo. A POS system, or point-of-sale system, is a set of devices and software designed to manage customer purchases, accepts payments and provide receipts, along with tracking inventory and running reports. It’s essentially an integrated payment system that allows a business to facilitate in person credit card transactions. If I was in my first year in sales, I might have tapped out right away. Partially because I would’ve been too nervous about messing up their current software and partially because that initial call wouldn’t have gone anywhere. I wouldn’t have given over the impression of confidence to my new potential client. The next step in the process for me was to look over their merchant statements. This provides me with the data necessary to improve rates such as card brands used by customers. Each card brand and type within the brand carry a customized base cost before any additional fees are tacked along by the processor. Looking this data over therefore would allow me to help determine available savings for this restaurant. Before sending me their merchant statements, however, they wanted me to also be certain that I could indeed integrate, without me needing to update their systems. This included hardware and software. Reassuring that this wouldn’t likely be an issue, but still might require some technical internal programming, we went back and forth for days with different screenshots of their current system, before finally being able to verify that I would indeed be a good fit. All we would need, was to provide them with our VAR (Value Added Reseller) information into their POS, upon approval. This is the coding from their new processor, me, that is to be updated into their hardware which then reroutes P. 3 8 / T S F C O M M U N I T YVO I C E . C O M

the incoming credit card transactions through our funding bank instead of through the previous merchant service bank they used. The technicality is when the POS company gets contacted to input that updated data from me. They’ll often try to get that merchant account to stay with them causing my hard work to go in vain. I had to work out a way internally for us to seamlessly drop that coding in their system from our end without outside help from their POS company. More on that later. Once statements were reviewed offering attractive savings and I confirmed that their hardware and software integration would be seamless, they had another request. It was crucial that funds get deposited by next day. The only problem was that in order for this to happen, they required a late batch time, not before 11PM PST. For those unfamiliar with the term “batch time”, a business that takes credit card as payment known as a merchant, submits one, thru multiple authorized credit card transactions run through their hardware, such as a POS in our case, to its payment processor at a single time. It’s often an entire day’s worth of transactions at a time. It then gets funded into the merchants’ bank account. These transactions that get sent out to the bank for funding are known as a “batch” while the time of this process is known as the “batch time”, which typically takes place when the business closes. Those funds are then received by the bank. The bank looks over the batch and if all checks out, those funds are approved and then deposited in one of two ways. Either in full to the business while the fees get taken out at months end, or if desired, deposited minus the fees, which are removed, known as daily discount. The deposit of credit card transactions can take place even as soon as that same day, and up until 3 days removed from the initial transaction. Getting back to our story, I advised that the funds can be deposited on the schedule that they’d like, even as soon as that same day. Because they wanted all funds to come at the same time based off each day of processing, I set up their batch for after 3AM. Funds would then hit their account before noon of that same day. After the account was approved with its own

headaches, (if no headaches, watch out) getting this merchant to be busy with inputting the VAR coding into their POS, Aldelo, was impossible. They simply didn’t want to be bothered with it. If I could do it, great. If not, they couldn’t be busy with it. On each call I attempted to schedule with the merchant, the timing didn’t work out. Two months went by. Meanwhile I had brought this up with others in my industry to see what could be done remotely while having their POS system assisting. The answers weren’t reassuring. “Aldelo”, I was told, “would probably take the account if I brought them in.” One day, recently, this restaurant received a few visitors. In walked a contingency from my company, Fidelity Payment. They were recruiting a few potential sales guys and decided to stop for lunch by only the best. Of course, being a mentch and in sales, they started shmoozing with the owner. It wasn’t long before the restaurant’s POS system was brought up. “I have a guy from Fidelity that’s working on it”, mentioned the owner. With our company representative explaining that this delegation in his restaurant was a Fidelity one as well, a new level of friendship was made. I got a buzz that afternoon by the group, excited about the Hashgacha Pratis, letting me know that I had a real chance if I continued to stay in-front of this hopeful future client. I had actually practically given up, but now considered taking a flight out for the five minutes of labor it would require. I gave one more push with the assurance of my tech support team. I requested the Aldelo password from the owner. I aimed to update all the coding remotely without the help of their POS, Aldelo, hoping all would go off without a glitch. The only problem was that the previous owner was still the gatekeeper on that POS system. We’d have no access. “Hang on” said the owner, who by now, had their trust in me, “let me talk to the previous owner and see if he can upload that data for you.” Well, the VAR was uploaded that day. Their first full month of processing just saw them save two times my initial projection. Plus, their Fidelity Aldelo POS integration is seamless. The lessons are many. Be willing to learn on the job while creating a sense of confidence. Remember, you’re the expert in the room and no one has to know otherwise. Be confident in your value. Don’t be hesitant to follow up. So, follow up, follow up, follow up with space of course. Most just don’t want to be bothered. If you can take them out of all involved, which isn’t always easy, and be the one doing the work instead, you’ll be a magician for your clients. Referrals will undoubtedly follow.

SHEET PAN CHALLAH FRENCH TOAST

The best thing about having challah each week on Shabbos is having the leftovers to make delicious French toast! INGREDIENTS • 4 large eggs, beaten • ½ cup heavy cream • 1 tablespoon sugar • 1 teaspoon pure vanilla extract • 1 teaspoon cinnamon (optional) • 8 slices challah • 2 tablespoons extra virgin olive oil, such as Colavita • Silan or maple syrup, for serving • Greek style yogurt, for serving

PREPARATION 1. Preheat oven to 375°F. 2. In a large mixing bowl whisk together eggs, cream, sugar, vanilla and cinnamon, if using. Dip challah into mixture and allow to sit in mixture up to 30 minutes. 3. Brush a baking sheet with oil and heat in the oven for 10 minutes. Place challah slices on the baking sheet and bake at 375°F for 6 minutes. Flip challah and bake 5 minutes more or until golden brown. bake an additional five minutes, until golden brown. 4. Serve warm with silan and/or Greek yogurt.
