Much of our country's beautiful landscape is now snow covered and our backyard projects are hibernating. Winter is here and we are wondering how we will survive the cold, snow and bitter wind. We comfort ourselves by cocooning by the fire while planning our next design project (See our Fireplace Design Boards on page 60). Our dining table turns into an interchangeable design board filled with color swatches, fabric samples and tile. As I ponder my next design project, I look to past projects for inspiration and through our current issue to stay on top of the trends coming down the pipe (See Top Trends on page 42). This fall, we celebrated two years of living in our current home. Its renovation was a labor of love (See Ask an Expert on page 68 for professional renovation advice). The other day Mandy and I sat in our living room and reminisced about our prolonged home makeover. We started with the most important rooms in the house, the bedrooms. It was important that we had a haven while the rest of the home was being ripped apart. Living in the middle of a reno is not easy; you need a place to escape at the end of the day. I like to be very hands-on during the reno process so being close by made it easy to chip away at the project. It came with its challenges but all in all, I'm glad we did it that way. I have one room left to renovate in the entire house and I've been dreading to start again. It's the bathroom beside our guest bedroom. I have been dreaming of color schemes, perusing tile samples and scrolling through product images of plumbing fixtures (See Jo Alcorn's Trends 2 Watch on page 18). I'm debating whether I should give this bathroom a spruce up or a major overhaul hence why my dining table has turned into a massive design board.

DIY Ways to Incorporate Plant-life Into Your Bathroom Keep your bathroom toxin - and allergen-free with any one of these four DIY-able ideas. 1. HANG THEM Got a spider plant kicking around? We’ve got a DIY for that… What you’ll need: a plastic planter, clothesline ropes, a drill and drill bit. STAND THEM If you don’t have accident-prone little kids or pets who might knock this over, you might like this chic “mid-century inspired” planter idea. BATHROOM statement pieces Now more than ever, the bathroom is being seen as an extension of living area; a place for refuge, as well as refuse. And as the lines between living and bathing continue to blur, so does the furniture. Embrace the bourgeoning bathroom furnishing trend with any one of these six statement pieces. 1. An Ottoman An ottoman in the bathroom … unconventional? We think not! According to recent trends, it’s not so outlandish to rock a living room staple in your powder room. Prim, powder, and paint your nails comfortably with a cozy perch like this one. 2. A Lounge Chair Though the bathroom isn’t a room typically known for its lounge-ability, maybe it should be! We sat down with Designer Jack Creasy from Bloomsbury Fine Cabinetry to ask him some questions about this space. CANADIAN HOME TRENDS CAN YOU TALK
ABOUT THE KITCHEN'S DESIGN AND LAYOUT?
JACK CREASY The kitchen needed to function as
the heart of the home for this busy family of four. We designed a beautiful central island for entertaining, holiday baking or arts and crafts with the kids. We included lots of organized, well laid out storage features and drawer inserts - every inch of space was maximized! The backdrop to the island is a stunning decorative range hood with a mantel ledge for display, flanked by antique glass cabinets to display the homeowners' beautiful collection of crystal and serving ware. CHT WHAT INSPIRED THE OVERALL DESIGN? JC The design inspiration was a relaxed Cape Cod style that was warm and inviting. Soft warm whites, natural wood tones, and subtle blue/gray accents lend themselves towards a Hampton's seaside vibe. CHT CAN YOU TELL US A LITTLE BIT ABOUT THE HOMEOWNERS? JC The homeowners are experienced real estate agents. They have seen thousands of high-end homes and their 26

fair share of poorly designed and installed kitchens. They knew when it came time for their dream home, that the only kitchen for them was a Bloomsbury framed kitchen! CHT CAN YOU OFFER WORDS OF WISDOM TO READERS LOOKING TO REDESIGN THEIR KITCHEN? JC The most common mistake I see people making is not budgeting properly for their dream kitchen. During any renovation or new build, there are a lot of expenses and typically overruns. Always budget 20% for contingencies. What I commonly see is homeowners overspending on items in the beginning, usually exterior elements that don't have the best return on investment. By the time they get to the kitchen, the heart
of the home where most families spend the majority of their time, they have to slash their budget and skimp on their dream kitchen. Source your dream kitchen at the beginning of your project, budget for all those organizational features you've been dreaming of, and spend your money on the fixed items like cabinets and appliances. Then streamline the budget on other, less important areas of the home. Also, early planning with a professional kitchen designer will help you avoid costly mistakes during the renovation. KITCHEN REMODEL A kitchen needs to work with you and your family’s lifestyle. Here are some things to consider before starting a kitchen renovation. DO YOUR RESEARCH. Visit kitchen showrooms and start getting an idea of the different styles of kitchens and their differing costs. Start collecting images of kitchens you love from interior design magazines or websites. SET A REALISTIC BUDGET on what you can afford based on your needs and lifestyle. Are you a budding chef, an entertainer or does the thought of cooking send you into a panic? Once you have a budget in mind, add another 10 – 20% on top of that for unplanned expenses. HIRE A PRO. You may want to consider hiring a kitchen designer that will manage the renovation and construction phase especially if structural changes will be made. Furthermore, a designer will help you choose your finishes so your kitchen will have a cohesive look. PRACTICAL AND FUNCTIONAL. The kitchen layout is one of the most important factors to consider in the designing stage. Whenever possible, try to make use of the classic work triangle which is the most convenient layout because it saves unnecessary steps. This means arranging the sink, refrigerator and stove, the three appliances used the most, in a triangle pattern. A KITCHEN SHOULD LAST AT LEAST 20 YEARS so always buy the best you can afford. You want to have high quality appliances. Don’t go crazy buying gadgets you may never end up using and that may take up valuable storage space. IF YOU ARE PLANNING ON MOVING in the next few years, consider some cosmetic changes versus a full-on renovation. TALK ABOUT THE KITCHEN'S DESIGN AND LAYOUT? ALEEM LADHA This small bungalow went through a major transformation. The kitchen walls were completely removed, a vaulted ceiling was exposed and supported by dark wood beams which added grandness to the main area of the home. The kitchen design incorporated built-in appliances and ample storage and counter top space. Open shelves replaced upper cabinets to give this large kitchen a focal point. The island houses a gas cooktop, open shelves for cook books, as well as an attached table that seats three people. The table legs are made of the same material as the counter top which gives the island a seamless feel. A bar area was created with glass cabinets, an auxiliary sink and a wine cooler. CHT WHAT IS YOUR FAVORITE DESIGN ELEMENT IN THIS KITCHEN? AL My favorite details are the high ceilings and wood beams because they ground the room and bring a natural element to the space. CHT WHAT ARE COMMON MISTAKES PEOPLE MAKE WHEN DESIGNING A KITCHEN? AL Don't overcrowd the space with too many items. Keep counters as free as possible from clutter. We incorporated an integrated fridge and dishwasher with door design panels. Also, we used downdraft venting on the island cooktop, eliminating the visible hood fan. CHT CAN YOU TELL US A LITTLE BIT ABOUT THE HOMEOWNERS? AL The homeowners were a design oriented couple with two children who knew exactly what they wanted. Their fun personality came out when choosing furniture for the space.

TALK ABOUT THE SPACE' S DESIGN? AMI MCKAY This home doesn' t have one square inch that isn' t utilized. The dining area needed to not only fit a family of five, it also needed to fit a bustling household of neighborhood kids coming and going, arts and crafts with homework sprawled out, and of course, having friends over for family style dinners on the long table. CHT CAN YOU TALK ABOUT WHAT INSPIRED THE OVERALL DESIGN? AM The homeowner has three paper mache giraffes her children made for her and she adored them! They are quite bright and whimsical, just like the family! That was the inspiration for the room. They wanted the space to be a place everyone could enjoy. CHT WHAT IS YOUR FAVORITE DESIGN ELEMENT IN THIS SPACE? AM I like the color palette; soft and subtle, yet bold and impactful. We clustered their existing art collection behind the sectional and added the light and basket. The linen window treatments added warmth and pulled the natural tones in the room together. CHT WHAT UNIQUE SOLUTIONS DID YOU WORK INTO THIS SPACE? AM The room was long which made it difficult to work out an area for the children to watch TV. We didn' t want the TV to be typically hung above the fireplace, so we made two separate areas; one seating area in front of the fireplace and the second with the sectional facing outward towards the TV. The lounge part of the sectional allowed seating for both areas.

TALK ABOUT THE KITCHEN'S DESIGN AND LAYOUT? SEPIDEH MESHKIN The existing kitchen had a very dated 1970's feel with closed in spaces, dark built-ins and a lack of storage. We opened up the entire layout and custom-designed new kitchen cabinetry, providing more storage and maximizing the existing space. CHT WHAT INSPIRED THE OVERALL DESIGN? SM The overall design was inspired by a modern classic style and was created to make the homeowners actually feel at home in a comfortable, family-oriented, updated setting. CHT WHAT IS YOUR FAVORITE DESIGN ELEMENT IN THIS KITCHEN? SM A favorite design element was being able to open-up the boxed space and bring in the natural light. By removing the walls and the old-fashioned kitchen pass-through, the homeowners can now enjoy the magnificent views of the Vancouver skyline while using their kitchen. CHT WHAT IS A COMMON MISTAKE PEOPLE MAKE WHEN REMODELING A KITCHEN? SM The most common mistake homeowners make when embarking on a renovation is not using a professional designer and a reputable contractor with quality workmanship and warrantied work. CHT WHERE DID YOU SAVE AND WHERE DID YOU SPLURGE? SM We were able to provide the homeowners substantial savings by using local suppliers for their custom kitchen cabinetry instead of importing expensive products. By supporting local businesses we saved the homeowner money and headaches. 34

DAVE JURINIC The homeowner spends half of the year in Argentina in a very modern home and wanted an updated, modern look for his Downtown Toronto condo as well. The goal was to create a simple, modern space that was welcoming and luxurious. CHT TELL US ABOUT THE KITCHEN'S DESIGN. DJ We chose a modern, flat panel slab door style for the kitchen, carrying the cabinets all the way to the ceiling. The doors feature touch to open hardware to keep the look clean and modern without visible hardware.

OF WISDOM TO READERS LOOKING TO RE-DESIGN THEIR CONDO? DJ Renovating a condo is different than a detached house. This condo was the last suite at the end of a long hallway and required a lot of pre-planning to accommodate limited parking, working hour restrictions and elevator use rules. CHT WHERE DID YOU SAVE AND WHERE DID YOU SPLURGE? DJ We saved by reusing existing furniture as much as possible which freed up extra budget to splurge on high-end appliances!

TALK ABOUT THE SPACE' S DESIGN? NEGAR REIHANI The space was reconfigured by putting the dining area next to the window overlooking the park and enlarging the kitchen. The office was moved upstairs so the owner could use the complete privacy of the second floor for his bedroom, bathroom and office. The room next to the kitchen, previously the office, was turned into the 2nd bedroom.

INSPIRED THE OVERALL DESIGN? NR The unique location of the house that faces a tree lined park with a serene pond in the middle and a beautiful view of the False Creek, evokes a sense of peace that inspired a modern rustic theme. It inspired me to choose light misty greys, blues, warm wood tones and natural stone hues. The color scheme is neutral and masculine and the contrast is kept to minimum to avoid breaking up the space. I kept the window frames black to add an industrial accent to the space. I introduced similar finished elements like a dark iron chandelier, and oiled rubbed door levers and cabinet hardware to make the window frames look like a planned design element. CHT WHAT IS YOUR FAVOURITE DESIGN ELEMENT IN THIS SPACE? NR My favorite space is the kitchen. The lower cabinets with dark taupe shaker doors mixed with walnut open shelves – which is modern take on a traditional concept – is an unusual combination. The stacked beveled, subway tile adds the final touch and pulls everything together. CHT WHERE DID YOU SAVE AND WHERE DID YOU SPLURGE? NR We saved on plumbing by keeping the location of the fixtures the same. We splurge on custom millwork which is always my #1 recommendation. We also put about 30 pot lights on the main floor as there was only one chandelier in such a large space.

SWAP OUT OLD TEXTILES This could mean anything from updating the linens in your bedroom or replacing the food-stained tablecloth in your dining room to swapping out worn out throw pillow covers and replacing your curtains. These small touches can make a bigger difference than you might think!
TOUCH-UP YOUR BASEBOARDS Speaking of baseboards, which are notorious for collecting scuffs, chips, and scratches on a frequent basis, there’s a simple and fast way to refresh them too! The key to a clean and professional-looking paint job has to do, once again, with the prep: clean thoroughly with soap and water, sand them smooth, and tape above and beneath the boards using Painter’s Mate Green tape.
PAINT AN ACCENT WALL If you want to lend a little drama to a room, a strategically placed accent wall might just do the trick. Select your accent wall based on the natural focal point of the room, and steer clear of walls with windows, doors, or other like obstructions. A particularly important step in painting an accent wall is prepping it. If you’re going with a contrasting color, and even if you’re not, it’s important to tape generously and using quality tape, such as Painter’s Mate Green. Use PMG to tape around all four sides of your accent wall, including the ceiling and baseboards.

in the West Vancouver area are known for a certain aesthetic congruent with earthy-influence and beachside vibes. This home, which the designer refers to as the “20th. Avenue Project,” was no different. Flooded with natural light and generally unencumbered by wall divisions, the home in its present state is simple and logical, but above all, quality-driven, down to the last detail. For the homeowners, both eye doctors with an obvious affinity for interior design, curating the perfect living space for them and their four daughters was all about designing a home that would grow with the family, taking the kids from grade school to university while maintaining maximal functionality. Jamie Banfield, of Jamie Banfield Designs, was introduced to the project well after the specs for the new-build were formulated. “The home was already inspired for a modern take on a West Coast style. Very clean, sleek, and timeless,” says Banfield, an accoladed designer, recently recognized by the National Kitchen and Bath Association as being one of the industry' s top “30 Under 30.” He and his team were tasked with completing the millwork in the home, including cabinetry, counter tops, and all other hard finishes. From the start, Jamie recounts, “It was a pretty big collaboration.” When asked about the layout of the home, Jamie points out an interesting feature, geared towards the couple' s four daughters, who are close in age. “One of the really cool things about the home is that the girls' bedrooms are identical, down to the windows.” This was an intentional measure taken by the couple to ensure that the setup was CANADIANHOMETRENDS.COM

above all, fair. This wasn't the only feature geared towards the family's unique dynamic. The finishes in particular were selected with wearand-tear in mind, especially on high-traffic elements, such as door handles and counter tops. “She initially wanted marble for the kitchen island,” says Jamie. In anticipation of everyday cooking-related messes, the couple opted to go for a product called Dekton by Cosentino, a material which is comprised of a high-performing blend of glass, porcelain, and quartz. The counter tops and cabinetry found in the kitchen were locally-sourced, built by Jamie's company. He describes the budget for the project as being generous, but intelligently allocated to fine details, such as the automated functions in the home. The refrigerator door, which consists of wood paneling with an inlayed piece of metal on the inside, allows the kids to post their assignments and artwork on the fridge – a feature that, in later years, will be completely invisible when not in use. Says Jamie, “There was a very good understanding of little ways to add personality, while also keeping it timeless.” While trendiness doesn't govern his projects, he indicates that there is certainly a place for it in the industry, referring to the all-white kitchen as one of the trendier aspects of the design. “I think white can be trendy, as well as classic, but I think those types of trends give the project overall longevity. We want to ensure the home is going to pass the test of time.”

Oakville-based designer, Kate Davidson, is known for creating sophisticated and contemporary interiors for her clients. Following suit, is Kate' s work on a generous, 4,000 square foot home, located in an established community in Mississauga, Ontario. The three storey, five bedroom property boasts an open concept main floor and includes a combined living and dining area, and a connected kitchen, family room with eating area on the main floor. Kate was also tasked with renovating the family' s spacious basement; it now includes an entertainment space, a kitchen, and a spare bedroom. Of course, spaciousness is key when you are working with a family of five; two working professions, and three kids, two of which
being twins. However, when the couple approached the designer, their hopes for the home transcended mere livability. “Although the homeowners have a busy young family, they are very organized and tidy and take great pride in their home,” says Kate. “They live an active lifestyle and they enjoy entertaining quite frequently. I got the sense that they wanted a more sophisticated space.” With sophistication as the goal, Kate did not hesitate in using more delicate finishes, such as glass and cream furnishings, throughout the home. This included the two matching cream sofas and the neutral rug in the main living area. Kate reveals that although the large furniture pieces were moderately priced, the family splurged on elements such as the draperies, artwork, and wallpaper
in the adjoining dining room. “We were thoughtful of the budget when putting this room together,” mentions Kate. “I often recommend my clients spend a little more on a few key pieces that will make a large visual impact on the space.” When asked about the predominately neutral color scheme, Kate again brings us back to the aspirations of sophistication and elegance, noting the use of bright and rich accent hues, and the use of mixed metals as a means to that end. Says Kate, “The various
shades of blue found in the artwork, pillows, and accents, bring the space to life and add personality and flair.” She credits the abstract blue floral art piece, displayed in the living area, as being the inspiration behind the accents used throughout the home. When designing for an open concept home, Kate stresses the importance of cohesion. By means of the accent pieces, she suggests employing diverse, reoccurring tones, patterns, and textures throughout the space to create, a polished
and pulled-together look. Though she' s all for epitomizing creativity and her clientele' s personality via her work, she suggests approaching any home renovation with a practical mindset, “The thing about designing a room with a neutral backdrop of creams and greys, is that it allows you to easily change up the accents if you grow tired or want to switch things up throughout the year or seasonally.”

Kim, Fix My House! BUFF CITY Scratches, dings and dents in your wooden furniture can make your place feel unkept and outdated. Using furniture paint markers to minimize the appearance of any damage is an easy and quick solution. There are a variety of brands and colors on the market so be sure to pick up a few samples in order to find the best color match. Use a light touch and keep the buffing cloth nearby to make sure that you don' t go overboard. In case of deep scuffs that are harder to cover, color or clear wax sticks are the answer as they fill in any gouges or small holes resulting in a shinier, smoother look. FOUR-LEGGED FRIEND Where would our tables be without their chairs? After years of being pushed and pulled from the dinner table, chairs can often suffer from loose joints and rungs popping out of their legs. The simple solution is to re-glue them. Make sure to remove the old glue first and then sand the end of the rung to create the best surface for re-attachment. You can add clamps to hold the rungs in place while the glue dries though most wood glues these days dry faster than you realize. This fix should last you several more years. PACKET OF SUGAR An uneven table is annoying when you are out at a cafe or restaurant. It' s even more frustrating when you' re trying to enjoy a meal at home and a folded napkin tucked under the faulty leg just won' t do. Luckily, there' s an easy fix and it doesn' t involve shortening any of the table legs nor adjusting your floor. Instead, purchase glides at your local hardware store and affix them to the problem leg. Glides are essentially a small pad with a nail in it that can be attached to the bottom of a table leg. Though they are designed to keep the legs from scuffing the floor, they are also extremely useful to level an uneven table. HANDLING IT YOURSELF After continuous and prolonged use, door handles can loosen and come off in your hand without warning. The problem is that the holes holding the screws have become enlarged over time from constant pulling and they need to be fixed. The easiest solution is to buy wood putty, remove the

handle and fill the holes with the putty. Make sure that you check on the label that you are using putty that can be drilled into. Once the hole is filled and dry, drill fresh holes in the hardened putty and re-attach the handle. SEAMLESS INTERVENTION Sometimes
older furniture can start to separate at the seams where two pieces of wood come together. A simple solution is to add flat corner braces to the problem areas. Braces are inexpensive and readily available at local hardware stores and home centres. Affix the brace in an inconspicuous location like the back of the piece that needs repair. This addition eliminates the need to drive screws through a seam in the hopes of pulling the gap closed and possibly ruining the finish. THE COMMITMENT If you truly love a piece of furniture despite the burns on its surface or severe water damage, then it' s time to bring out the heavy artillery, roll your sleeves up and make a weekend of it. There' s no easy or quick fix but once you decide to do the job right, you will be thrilled with the outcome. Start by stripping the finish, then sand the surface and finally, apply a new finish. Lots of elbow grease is required but it is not terribly complicated and it is so worth the effort. - Text by Kim Bartley
I am crunching the numbers for my bathroom renovation and I was wondering which areas should I allocate the biggest part of my budget? How much should I keep for unexpected expenses?
You first need to decide whether you are planning to install an acrylic tub/ shower versus a tiled walk in shower. You also need to decide whether you prefer high-end versus budget friendly vanities and counter tops. If you plan to install tile on your walls and floor, set aside 60% of your budget. Open, airy, and flooded with light, is how you could describe the basement of Christie Bartram and Ryan Charron's custom-built bungalow. Since making the move from the suburbs to a rural community, the family of five, including their Golden Retriever/Labrador Retriever mix, have since made the 12-year-old home their own, enlisting the expertise of designer, Christine Elliott to renovate their unfinished basement. Located on three acres of land, the spacious bungalow was one the Charron family had a flexible design vision for. According to Christine, "The homeowner wanted to create a family-friendly space that they could enjoy with their boys and entertain in. Though they didn't articulate a
specific design vision, they knew they wanted it to be functional and aesthetically pleasing." "We wanted a space that wouldn't feel like a basement. And we wanted something that was unique and not typical and boring," says Christie. Uncharacteristic of a conventional basement are the high ceilings and four small, yet effective, windows which invite welcomed brightness into the communal areas. “The entertainment area is our favorite space,” says Christie. “It's used a lot because it is so incredibly comfortable and we love to spend time there as a family.” Decorated with a minimalistic mindset, the decorum in the entertainment area is focused on function, featuring only a few decorative accent pieces, such as a ladder
resting against a far wall, a rattan basket next to the sectional, and succulents dispersed throughout. When asked about the rustic cohesion to these pieces, Christie says, "We really wanted to highlight the environment that we live in because we love it! We moved from the suburbs to the country for the quiet, tranquil atmosphere and wanted to have that as a part of our indoor living space." According to Christine, she specializes in comfortable places to gather, and whimsical children spaces and it seems as if this project follows suit. It brings the outdoors inside, yet it's still chic." Paying further homage to the outdoors is the elected color scheme. Handsome pops of blue liven up an otherwise muted palette, comprised of timeless shades of gray and strategically employed white. While Christie cites the color scheme to be on the cool side, Christine refers to the diverse textile use as a tactic to lend hominess to the space. "By including natural wood elements and textured pieces like the velvet chairs, sheepskins, and the linen fabric on the sectional, we were able to create a very cozy and comfortable space for the family." Post-renovation, Christie, Ryan, and their little ones are admittedly thrilled with their like-new basement. Says Christie, "The end result is even more beautiful than all the pictures we originally pinned on Pinterest. We were, and still are, floored by the transformation." 92

Global News anchor Farah Nasser and her husband moved into a new two-story home on an established street in North Toronto. It was almost perfect for them. All that was missing was family-friendly furniture, for their two young children and visitors, that blended with their home' s modern aesthetic. “The homeowners had upsized and really just needed to decorate,” comments Designer Yvonne Whelan. “Their existing furniture wasn' t perfect for the new modern spacious style of the house. They needed help making it a home.” Gray is the key note color throughout the home. Yvonne notes, “I like grays that have beige in them — ` Greige.' It works with most accent colors and is like a warm hug. I use slightly different hues of the same color which, along with texture and pattern, brings warmth to a room.” “It took a little while to sell it to my husband but we' re thrilled with the look,” Farah notes of the master bedroom. floor' s paneling are softened by nestling pillows whispering soft tufts of blush. The glimmering chandelier, lamps, and accessories add a spritz of sparkle. “The key to a successful marriage is compromise right? Yvonne struck the perfect balance between my husband' s taste and my own,” Farah observes. “It' s my favorite room in the house.” The walk-in closet, off the bedroom, is efficiently organized with a chic vanity bench. Light from the window, and a chandelier originally from the dining room, along with the wardrobes' long lines, visually expand the room' s height and depth. Initially, they wanted in the dining room a sleek modern table that was going to be custom made. But the couple could not part with their dining table. The concept for the dining room was changed to combine both traditional and modern. They splurged on the drapery, and chose a well-priced light fixture. 96

Yvonne remarks “I wanted the drapery to add dimension as dining rooms have the propensity to look boring and we couldn' t have that.” Comfortable drama makes for a living room that is warm and inviting, yet elegant. “The bones of the room were incredible,” Yvonne comments, “So we just wanted to complement what we had.” The lines and breadth of the furniture balances the soaring fireplace. Yvonne advises “Try not to have too many focal points as it can take away from a room.” Metallic color, and laced effects add artfulness to balance the room' s solid squares and rectangles. “Farah loves turquoise so it was an easy choice. We used grays and whites to ground the room and to give it a timeless look.” Farah notes that she and her husband were pleased and excited! "The space is modern and functional but at the same time warm and welcoming. A perfect mix.”

Start with a saucepan and heat two tablespoons of olive oil on moderate heat.

Next add in your vegetables, beginning with onions. Once the onions have softened, add in peppers and garlic, adding in more olive oil as needed, and fry for five minutes, or until the contents of the pan are soft and caramelized. At this stage, begin to add in your spices, including salt and pepper, as well as your tomatoes, which should be in both purĂŠed and diced form. Leave the contents of your pan, lid off, to bubble on moderate heat for ten to fifteen minutes, before adding a pinch of sugar. Next, use a ladle or spoon to make wells, or slight concaves, in the mixture, and then crack an egg into each well. You want to leave the yolks whole. Cook the mixture, along with the eggs, for another five minutes, or until the yolks have set. Once cooled slightly, season with coriander. The popular brunch staple gets a holiday appetizer makeover in this phyllo-crusted pocket version. The avocado toast is a delicious combo of creamy avocado, fresh tomato, onion and tart lime, and is beautifully paired with a cilantro-sour cream for dipping. Serves eight for less than $0.70 each.
Avocado Toast Pockets Prep time: 20 minutes Cook time: 10 minutes Serves: 8 (5 pockets each) 2 1 ½ cup ¼ cup 2 tbsp. 2 tsp 1 ½ tsp 6 sheets 2 Tbsp. 1 2/3 cup ½ cup
avocados, diced plum tomato, seeded and diced frozen corn, thawed minced red onion lime juice, divided chili powder garlic clove, grated and divided salt, divided phyllo pastry salted butter, melted egg, lightly beaten sour cream cilantro, finely minced
Heat oven to 375F (190C). Line two rimmed baking sheets with parchment. Stir together avocado, tomato, corn, red onion, 2 tsp (10 mL) lime juice, chili powder, half the garlic and 1/4 tsp (1 mL) salt in a medium bowl. On a clean counter top, place one sheet of pastry. Brush evenly with butter and top with another sheet, smoothing to flatten. Brush second sheet with butter and top with a third sheet. Cut sheet along the long edge into 5 even strips. Cut each strip in half crosswise and in half again to make 4, 3-inch (8 cm) squares. Repeat with remaining strips. Fill one half of each square with 1 tbsp. (15 mL) filling, leaving a 1/2 inch (1 cm) border. Brush border with egg wash. Fold pointed edge of unfilled half over to create a triangle and press firmly to adhere to egg-washed edges. Place on prepared sheet and brush triangles with egg wash. Bake until golden; about 10 minutes. Repeat with remaining pastry sheets and filling. Meanwhile, mix sour cream, cilantro, remaining lime juice, garlic and salt in a small bowl. Serve with pockets.

It doesn’t take a shopping basket full of ingredients to create something delicious. Take this soup for example; creamy, comforting and very easy to make, this corn-coconut soup has a hint of sweet, followed by some savory goodness. You can make this in about 30 minutes, start to finish.

In a large saucepan over medium heat, add the butter, then the onion and celery. Cook until soft and translucent. Add the corn and broth. Bring to a boil. Cover and simmer for about 20 minutes. Purée the soup in a blender. Strain through a sieve if you want it extra smooth. Return to the pot. Add the coconut milk, adjust the seasoning. Garnish with bacon and asparagus when served.

Preserved lemons are not a new thing. If you don’t want to buy some, they can be easily made. As a favorite ingredient to Moroccan cuisine, preserved lemons add a next level of intensity to this marinade and the results are mouthwatering.

preserved lemons, rinsed, and finely chopped 2 red chillies, finely chopped 2 Tbsp. ground cumin 6 Tbsp. olive oil cup honey 1½ Tbsp. lemon juice, fresh 2 tsp garlic, minced 2-3 lbs chicken pieces, skin on Finely chop preserved lemons and red chillies. Combine preserved lemons, red chillies, cumin, olive oil, honey, lemon juice, and garlic. Season and coat chicken, cover and leave in the fridge for 4-12 hrs.

Remove the chicken from the refrigerator and let it sit at room temperature for about 30 minutes. Meanwhile, heat the oven to 400°F and arrange a rack in the middle. Place the chicken in a baking dish or a sheet pan with parchment paper. Make sure all the chicken pieces are skin-side up. Bake until the chicken is starting to brown and is fully cooked, about 30-40 minutes.
ZUCCHINI HEAT
1. Slice a zucchini into ½” thick wheels. 2. Sprinkle a little of your favorite cooking oil over the wheels. 3. Lightly layer of seasoning, preferably something with a little heat. You can add a little cayenne along with salt and pepper. 4. Set the wood pellet control to low, and turn the gas burners on high. 5. Lay the wheels out and grill until the zucchinis are soft to your liking.

1. Get a couple racks of pork ribs; spare or baby back. 2. Season them with your favorite rub. 3. Preheat the grill for 10 minutes. 4. Set the wood pellet control to 300°F and cook the ribs for one hour, bone side down. 5. Turn the wood pellet control off and turn the gas on low. 6. Wrap the ribs in tinfoil and add half a cup of apple juice to each package. (Make sure there are no leaks). 7. Cook for one hour, flipping the packages every 15 or 20 minutes so the bottom side doesn’t burn to the tinfoil. 8. Take the ribs out of the packages and add sauce. 9. Caramelize the sauce for 15 minutes.
