Also, try using a rainbow of colorful fruits and vegetables to include a wide range of antioxidants that can help fight many diseases including cancer and heart disease. Use smoothies as a way to consume vegetables which you and your family may not eat otherwise. You will be surprised at how well the taste of many vegetables can be masked by the flavor and sweetness from the fruits that you mix in. Freeze fruits such as berries, mangoes and peaches when they are in season and drop the frozen fruits into the blender for a delicious frozen drink that you can enjoy year round. Add ice to make a slushy-like smoothie, or yogurt to get a milkshake consistency in your smoothie. In this section you will find recipes such as Banana. It’s kind of funny how the invention of one thing results in the invention of something else.

T H E I N VEN T I ON OF S M O O T HI E

For hundreds of years Mediterranean and Eastern cultures have served pureed fruit drinks that resemble what we call smoothies. It was not until the invention of the blender and refrigerators in the 1900’s that thousands of Americans began experiencing the joy of blended juices the rest of the world and adventurous travelers had known for some time. Refrigeration became available for the home in 1915, even though commercial restaurants had refrigeration for a decade before that. The leakage of certain gases (like ammonia) used in commercial appliances made refrigerators generally unsafe for home use. It wasn’t until the 1930’s that refrigerators became safe, gained in popularity and dropped in price. The timing couldn’t have been better. As Americans were discovering the joy of frozen food, fruit and fresh milk in their kitchen, Stephen Poplawski was inventing another popular kitchen appliance – the blender, originally intended to be used as a mixer. Kitchen appliances and cooks had long been chopping, mincing and dicing, but Poplawski’s blender was the first appliance to put a spinning blade at the bottom of a container to do so, making it easier to make milkshakes and soda fountain style drinks at home and in drugstores. In 1935 Fred Osius improved on Poplawski’s idea and invented the now famous Waring Blender. When Osius told a reporter the mixer would “revolutionize American drinks”, he had no idea how true his prediction would be! Prior to refrigeration in the home, the flavors of most smoothies were limited to the fruit that was in season. This meant flavors like bananas, pineapple and strawberries were the most popular and available flavors, and still are. Blueberries, raspberries, cranberries, pomegranates and other more exotic fruit flavors came later, when the fruit could be frozen and stored for use during the off-season. With the invention and use of both blenders and refrigerators, the smoothie began to gain in popularity during the 30’s, 40’s and 50’s. However, what boosted the smoothie’s popularity was the growth of the macrobiotic and health food movement of the 60’s. According to Dan Titus, the director of the Juice and Smoothie Association, health-food stores began to sell fruit juices and fresh fruit drinks to meet the demand and interest more and more people had in macrobiotic diets and health.

c A blender (sometimes called a liquidiser in British English) is a kitchen and laboratory appliance used to mix, purée, or emulsify food and other substances. A stationary blender consists of a blender jar with a rotating metal blade at the bottom, powered by an electric motor in the base. Some powerful models can also crush ice. The newer immersion blender configuration has a motor on top connected by a shaft to a rotating blade at the bottom, which can be used with any container. c Countertop blenders use a 1–2 liters (4–8 cups) blending container made of glass, plastic, stainless steel. Glass blenders are heavier and more stable. Plastic is prone to scratching and absorbing the smell of blended food. Stainless steel is preferred for its looks, but limits visibility of the food as it is blended. c Countertop blenders typically offer 3–16 speed settings, but having more choices in speed settings is not an indication of increased utility for all users. c In cases where the blades are removable, the container should have an o-ring or gasket between the body of the container and the base to seal the container and prevent the contents from leaking. The blending container is generally shaped in a way that encourages material to circulate through the blades, rather than simply spinning around. c The container rests upon a base that contains a motor for turning the blade assembly and has controls on its surface. Most modern blenders offer a number of possible speeds. Low-powered blenders require the addition of some liquid to operate correctly. In these blenders, the liquid helps move the solids around the jar, bringing them in contact with the blades. The blades create a whirlpool effect which moves solids from top to bottom, ensuring even contact with the blade. This creates a homogeneous mixture. High-powered blenders are capable of milling grains and crushing ice without assistance.

INSTRUCTION

Place the banana, strawberries, whole milk, milk powder, malt powder, wheat germ and sugar into your smoothie blender and process until the mixture is pureed and sugar dissolved.

INSTRUCTION

Place the orange slices, banana, strawberries and spinach into your smoothie blender and process for approximately 30 seconds.

SPINACH YOGURT SMOOTHIE Mom always told you to eat your spinach, so here's an unexpectedly delicious way to get the green vegetable into your daily diet. If fresh spinach is not available, frozen spinach can be used, but it should be heated and left to cool before using it in your smoothie recipe.

INSTRUCTION

Heat the oil in a pan and heat the spinach over medium heat until the spinach wilts. Let the spinach cool to touch, then process finely with the Greek yogurt.

Alcohol is a depressant which in low doses causes euphoria, reduced anxiety, and sociability and in higher doses causes drunkenness, unconsciousness, stupor, or death. Long term use can lead to alcohol abuse, and physical dependence. Alcohol is one of the most widely used recreational drugs in the world. For instance, in 2015, among Americans, 89% of adults had consumed alcohol at some point, 70% had drunk it in the last year, and 56% in the last month. Generally, Alcoholic drinks are typically divided into three classes—beers, wines, and spirits—and contain between 3% and 48.5% of alcohol content. Alcoholic drinks are a source of food energy. The USDA uses a figure of 6.93 kilo calories per gram of alcohol for calculating food energy. In addition to alcohol, many alcoholic drinks contain carbohydrates. For example, along with approximately 96 calories from alcohol in 12 US fl oz of 5% ABV beer, there are usually 10–15 g of carbohydrates. Excessive daily calorie intake may contribute to an increase in body weight and so called “beer belly”. In addition to the direct effect of its caloric content, alcohol is also known to potentiate the insulin response of the human body to glucose, which, in essence, “instructs” the body to convert consumed carbohydrates into fat and to suppress carbohydrate and fat oxidation. Ethanol is directly processed in the liver to acetyl CoA, the same intermediate product as in glucose metabolism. Because ethanol can only be metabolized and consumed by the liver, chronic excessive use can lead to fatty liver. This leads to a chronic inflammation of the liver and eventually alcoholic liver disease. Not only are these revitalizing concoctions loaded with juicy fruit, antioxidants, and fiber, but they’ve got what some might call the most important summertime ingredients. Whether you’re lounging by the pool with friends on a hot day or trying to cool off at a BBQ on a warm night, a glass or two better-for-you mixes can satisfy your summer cravings.
