Seasons change A

s our team sat down to discuss the features for this latest issue of ReFINEd, it was still mild outside, the kids in my neighbourhood were playing street hockey until long past sunset, and I was spending most of my evenings on the soccer field with my three children. Now, fall is here. I hope you’re as eager to welcome the change of seasons as I am! (I have to admit, my excitement may or may not have something to do with the new leather jacket I spotted — and subsequently bought — at one of Kingston’s many incredible stores). Alas, I know fall isn’t all about fashion, so I made sure our team included tons of stories in this issue that will help all of our readers happily welcome the new season. ast weekend, my family and I arrived home after a crisp walk through the fallen leaves to the amazing smell of stew simmering in the slow cooker. With a warming glass of red wine in my hands, an immediate sense of contentment reminded me just why fall is my favourite season. There’s something magical about the vibrant colours of autumn, isn’t there? Here at ReFINEd, we’re welcoming the change of season with stories on the top fall fashions for women, and stylish outerwear options for men. or some, the arrival of fall means quiet moments sipping rich and creamy pumpkin spice lattes. For others, it means swapping lightweight sundresses for cosy knit sweaters. For others yet, it means it’s time to refresh their tresses and embrace a new hair colour. We spoke with Andy Boyd, owner of Kingston’s Dolce Bella Spa, and one of his stylists, Angela Fohry, to help you make the transition into colder weather with these trendy colours perfect for the enchanting crispness of autumn.

Falls Fiercest Colours A hair colour trend taking 2016 by storm, bronde is the newest craze sweeping through Hollywood. Blake Lively is just one of many fans. “This is a balayage technique of soft transitional blonde and brown,” explains Fohry. And the trend isn’t going anywhere, she adds. “Balayage is a softer, subtle look and it’s here to stay. It is flattering and low-maintenance.” Not familiar with the term balayage? “Balayage” is a French word meaning “to sweep” or “to paint.” The technique, when done by a trained stylist, allows for a natural-looking hair colour with softer, less noticeable regrowth lines. Fohry also predicts baby lights will be extremely popular this fall. “This is going to be favourite trend for many,” she explains. “These soft, subtle ultra-fine highlights soften roots on solidcoloured hair.” For those wanting something a little more dramatic, cinnamon shades are also hot this fall, explains Boyd. “This hair colour is a warm golden brown fitting with rich fall colours,” he explains. Choosing Your Best Colour While the best shade for you is always the one that makes you feel the most confident and sexy, a stylist’s professional advice can’t hurt. “Women can determine what colour will work best for them by consulting their stylist,” says Fohry. “By analyzing your skin tone and eye colour, your stylist will be able to tell which tones and hues of a popular hair colour trend will be the most flattering on you.” Everyone can rock red hair, for example, but a trained stylist can tell you if a warm copper or a cool wine colour is best suited to you.

The Art of Pampering

Tousled Texture Once you’ve determined your perfect shade, you might begin to wonder how to style it. While sleek locks have had their moment to shine, this fall, it’s all about waves, says Fohry. “You’ll be seeing everything from highly stylized waves that echo the style seen throughout the 1920s to messy bohemian waves,” she says. To get the bohemian look, apply a light mousse and rough-dry your hair. Once it’s dry, wrap sections of your hair around a large-barreled curling iron and alternate them so the waves go toward and away from your face. Use your fingers to tousle the curls — you want them to look undone.

Prepping Your Mane For Frigid Temps “Keeping your hair healthy in the fall and winter starts by cleaning off dry damaged tips,” says Boyd. “Summer sun can take its toll on your hair.” Because the winter months involve more outings and formal events (like Christmas parties and New Year's Eve), work with your stylist to find a thermal protectant to use when styling your hair throughout this busy season. Any outfit can be transformed into a slew of different looks by teaming them up with the right accessories. An amazing pair of shoes, a great belt, eye-catching jewelry and a statement bag can completely transform an outfit. Shoes Casual your dress down with a pair of sneakers or canvas runners, or play dress up with a pair of great heels and glam jewelry to go from all-day urban warrior to cocktail party diva. Belts Belts are essential accessories for pants, dresses, sweaters, skirts and shirts. Yet think beyond the simple belt that holds your pants up. There are so many options out there from classic prints, to metallic links, to thick and hip-riding leather belts with interlocking buckles. Our favourite is the distinctive concho-style belt. It’s a functional work of art. You can wear it with anything any season and look smashing. Scarves Scarves are like shoes: you can never have too many. From lightweight silky textures, to warm and cosy for cooler weather, these are a necessity adorned by men and women alike. Far from just providing warmth, they offer a pop of colour or a little bit of flirty style that can finish off a look. And with 100 ways to tie them, the versatility is endless. Jewelry Bring out your favourite features with a great pair of statement earrings or necklace. Love your décolleté? Wear a longer necklace that draws attention to your assets. Have a beautiful jawline? Large statement earrings that end at just the right point are fantastic for accentuating the lines. Bags The only suggestion I would offer is to remember scale: the scale of your body, what outfit you are wearing, and the event you are attending. Anything from a cross strap body to a shoulder tote style is always a good bet. A great market bag can be colourful and oversized, but your everyday purse should probably be more versatile and classic. In the End… Don’t stress about it, and try not to be ‘matchy-matchy.’ You don’t need to match your shoes to your bag anymore. Style is the manifestation of your personal signature. The great thing about modern style is that there are no rules except the ones you choose to apply.

Suit Up in Style Here’s an inside look at how you can build a professional wardrobe with just a few essentials.

The Suit It all starts with the suit — two, in fact. A suit is the most important clothing investment you’ll ever make. Clean, neat and comfortable, a suit is the uniform of success that inspires confidence. Today’s suits are trim (not tight) under the arm, hug the shoulder, fit slightly narrower through the sleeve and are paired with pants whose silhouette follow the line and proportions of the jacket. If you own only one suit, choose a medium-weight, allseason grey suit in a high-twist (wrinkle-resistant) purewool fabric. You can cover the full year with a mid-grey, banker’s grey or charcoal grey in either a plain fabric or one with a tiny pattern. Versatile, neutral grey is less stark than black. It works beautifully for day and evening with a variety of shirt colours, and it pairs nicely with black or brown shoes. Plus, the jacket can be worn separately with trousers or jeans. Meanwhile, an elegant, well-fitted navy suit lets a man make a statement without saying a word. Nowadays, the navy suit is worn with more than a white shirt. The addition of colour — through your shirt, tie and pocket square — adds energy and sophistication that will keep you in style. Shirts and Ties Shirts and ties are the spice in your two-suit wardrobe. Chosen strategically, your shirt selection will maximize your options for dressing each day. With two suits, the ideal ratio is six shirts and four ties, which provides a shirt for every business day plus an extra. Start with two white shirts, and then build your inventory around a colour theme. Diversify within your colour scheme by choosing a selection of classic patterns, including a solid, a gingham or Tattersall check, a Bengal stripe and a banker’s stripe. Ties With ties, start with a beautiful plain in a subtle tone that coordinates with your core shirt colour, then add a stripe and one with a small medallion, all of which will work with your shirt choices. From there, choose a blue pattern (paisley or floral) or a new colour, like a red, burgundy, pink or yellow. You’re All Set With these basics, you’ve got weeks of clothing before you’ll grow tired of dressing for work each day.

The Eyes Have It

We’ve all heard the old English proverb, “The eyes are the window to the soul.” So it’s only natural, then, that we’d want our eyes to be as beautifully framed as possible. If you have barely-there brows or lashes that lack length, there are a couple of quick-fix solutions designed to make getting ready in the morning a breeze: eyelash extensions and microblading. Read on to learn more. Microblading Sometimes called brow embroidery, microblading is a semi-permanent form of tattooing that provides a naturallooking solution for those with sparse eyebrows. Using a hand-held machine, a microblading specialist (ask for recommendations before making an appointment with anyone!) draws tiny lines into the superficial dermis of the skin that mimics individual hairs. The process — which takes around two hours — leaves brows looking beautifully fuller. The results are defined, fuller and natural-looking symmetrical eyebrows that blend flawlessly with your natural brow. Only a year ago, microblading was virtually unheard of, but it has experienced a surge in popularity. While it varies from person-to-person, microblading usually lasts around 18 to

36 months, and is a relatively painless process. Eyelash Extensions Spa technicians don’t bat an eye at the huge popularity of eyelash extensions. There are three types of lash extensions, including mink (or faux-mink), silk and synthetic. If properly cared for, mink lashes last the longest (around eight weeks) and they look and feel the most like natural eyelashes. As a result, mink and faux-mink lashes are becoming the No. 1 choice for most women. It’s important to note that real mink lashes do not come curled, and are not animal-friendly. Meanwhile, faux-mink lashes are man-made, and many women love that they don’t need to wear mascara with these types of lashes. They are elegant and beautiful. Silk lashes, which are also very popular, can give women a very dramatic appearance, or they can be made to look natural; it just depends on what look the wearer is after. According to a study done in the U.K., the majority of men change their hairstyle just three times throughout their lives, while women like to switch things up around four times a year. If you’re a Canuck craving a different look, perhaps one of these styles will serve as some inspiration.

Extra-long Locks Perhaps knowing there is something inherently sexy about men with lustrous, long locks, designers Giorgio Armani and Roberto Cavalli had their male models sport hair that reached their shoulders on their fall runways. It’s a little untamed, but it’s definitely cutting-edge. Need some convincing? Just think of swoon-worthy celebrities like Brad Pitt, Chris Hemsworth and Joe Manganiello. Can you even begin to imagine Thor with short hair? I didn’t think so.

Slicked Back If you believe long locks are best left to the likes of the stars mentioned above, a more controlled, gentlemanly look may be more your style. On the Gucci, Prada and Versace runways, the models sported meticulously slicked-back hair reminiscent of Leonardo DiCaprio in The Great Gatsby. Try slicking all your hair back for an intensely smoldering look. If it’s a bit much for everyday, a side part can soften the look considerably. Make sure your cut is always fresh (most men should go about once a month, but for this look, you might need to go more often), and use a pomade to ensure your style stays in place all day.

Denim Jacket Lightweight and durable, a denim jacket can be worn to death; indeed, the more you wear it, the better it’s going to get. Choose one in a light blue as opposed to something in a vibrant hue to ensure you get the most wear out of it. And don’t discount the power of denim-on-denim. To avoid the notorious “Canadian tuxedo” look, just pair your jacket with a pair of jeans in a different shade. Puffer Vest While pumpkin spice lattes, the crunch of leaves underfoot and hearty stews simmering on the stovetop are all true hallmarks of fall, perhaps the appearance of the puffer vest lets everyone know autumn has officially arrived. Whether you choose to pair yours with jeans and a hoodie, or slacks and an Oxford shirt, you’ll be stylish and warm all season long. Mastering the Art of Smartphone Photography

Look around you. Whether you’re at a rock concert, a park, or having dinner at an elegant restaurant, the chances are pretty good that someone around you is using their cellphone to take a photo. There seems to be a growing need for us to record our lives; perhaps for someone else to see where we were and what we are doing. Sometimes, though, it’s just to get a great picture!

I have a few suggestions to help those who wish to get a great shot with his or her smartphone. After all, the best camera is the one in your hand at the time the picture is conceived.

Look Toward the Light Selfies work better if the back of the phone is toward the sun and you are facing toward the light.

Clean the Lens Remove the debris on the lens, which makes your images soft, almost as if you are looking through a foggy window. Do not reach for the nearest piece of paper towel. Gently wipe the lens clean with a wipe made for eyeglasses.

Stabilize Your Shot When light levels get low, the camera’s shutter speed will slow down. This causes blurry shots. Try stabilizing your hands; place your elbows on a table, for example.

Turn Your Back Always have the sun at your back when shooting outside, unless you are going for that ‘blown out’ look. Shooting with the sun behind your subject will make them appear as a dark blob in the middle of your image. Use Both Hands Use two hands to take the shot of a lifetime. As the saying goes: “Stability in numbers.” Two hands are always better than one. Tap It Tap the screen to tell the phone where to focus or it will hunt around for a while trying to figure it out. This is called shutter lag. Turn on the Flash – Sometimes Turn the flash on when you find yourself with a backlit condition. The camera still thinks there is enough light to take a shot only because the surrounding light is bright. Here’s where things might get a little tricky: to avoid your subject looking like a white blob, don’t get too close to them. But don’t stand too far away, either. That’s when they become a red-eyed devil. Aim to shoot about five to eight feet away; that’s your sweet spot for the flash.

Don’t Zoom You may want to, but don’t do it! Crop once the image is taken, unless the phone has an optical zoom first followed by a digital zoom component after that. Always remember this: digital zoom: bad; optical zoom: good. Keep an Eye Out for Distracting Objects Always check the background of your subject so that poles, lampshades or Christmas ornaments are not sticking out of your Uncle Ed’s head. Grids are Good Turn on the grid lines. This will help you with composition. Line up the horizon with either the top line or the bottom line. If you’re shooting a flat sky, for example, use the top one. If, however, there are tons of fluffy clouds, use the bottom line. Try to not to stick the horizon in the middle of your frame. And there you have it! Enjoy your smartphone camera and happy shooting.

On the day I meet Tammy Dixon at Chill Lifestyle for Kids — her trendy new baby and children’s store — I spot a pigtailed toddler, her teensy fingers painstakingly fashioning a tower of colourful blocks that wobbles precariously. When they come tumbling down, her adorable squeals of delight fill the entire store. The innocent, uninhibited pleasure is a wonderful sight, to be sure, but it’s one Dixon has become all too familiar with since opening her store in historic downtown Napanee earlier this fall.

As the doting mother of two youngsters — twoyear-old Edmund and nine-month-old Penelope — Dixon found it hard to locate unique and quality gifts, as well as modern décor, toys and furniture for Edmund and Penelope’s nurseries. With a background in education, making the decision to open her own store was an easy one. “I was eager to give kids the opportunity to be imaginative and creative with their clothing and environment,” she says, giving me a oneon-one tour around the delightfully decorated store. I’m looking to promote exploration and imaginative thinking.” Indeed, the toys found on the shelves at Chill are much different than what many parents and caregivers have become familiar with. With all the newfangled gadgets and gizmos these days, children have little opportunity to actually play. “When I want to bring something in, I first ask myself, ‘What’s special about this product that will get kids thinking?’” Dixon’s method is clearly working; it’s hard to resist plopping down on the floor myself to give some of the toys a whirl.

A Bright Future Anyone from the area knows that Napanee has experienced a surge of revitalization in recent years, with tons of unique shops opening their doors to shoppers. Whether you’re a sprightly 20-year-old student, a wearied 30-year mom, or a lively 80-year-old, a professional can develop a regime that will not only improve your ability to navigate everyday living, but also help you to improve your overall strength and stability, torch those pesky excess calories, and build muscle strength. According to the Mayo Clinic, strength training can also help manage chronic conditions such as arthritis, back pain, obesity, heart disease, depression and diabetes. The Mayo Clinic also suggests strength training can sharpen your thinking skills.

Anytime, Anywhere Strength training can be done pretty much anywhere; whether you’re on the beach vacationing this winter, or have the advantage of a home gym, there are no excuses to miss a workout. Use your own body weight to do pushups, pullups and leg squats, or purchase inexpensive (and lightweight) resistance tubing that offers resistance when stretched. If you wish, pick up some free weights or dumbells.

Start Slow If, like many, you’re new to the world of weight training, there’s something you should keep in mind before plunging into a new fitness regime. “Take it slow,” advises Maveety, who is a certified personal trainer. “You will reach your goal. Here, fitness gets back to the basics. “I am a true believer in full body movements,” says Maveety. “I believe in power movements, in using your whole body as one and not being stuck on a machine built for one style of body.” Maveety has been passionate about fitness his entire life; following a successful stint as a kicker for Bishop’s University and then the Hamilton Tiger-Cats, he began playing for the St. Lawrence College soccer team. For those familiar with Maveety’s avid sports skills, his success as a soccer player came as no surprise; he’s been well-known throughout the soccer and football community his entire life. Upon his graduation from college, Maveety made the transition to personal training and hasn’t looked back since. “I love seeing people progress,” he says, helping a client stretch out following an intense one-on-one workout. “I like to see where they are physically and watch them reach their goals.”

The personal training process begins with a complimentary fitness evaluation that determines your strengths, weaknesses, imbalances and goals. “From there, we develop a personalized fitness program that encompasses muscle rehabilitation and toning, strength training and overall core development,” says Maveety. For Maveety, who can be seen on the sidelines coaching the Queen’s University kickers, it’s important to begin a training program knowing where his clients stand. “It’s nice to bring them in to see what their goals are. It’s amazing to get my clients to the point where they are feeling confident.” It’s easy in a gym that focuses on providing a friendly, welcoming atmosphere. There are no pretenses here, no airs about the trainers, instructors and nutritionist on board who are all there to see you succeed … to help you transform your mind, body and your life. “This is a community, family-based gym,” says Maveety. “I am very close with my parents, and I wanted it to feel like that. It’s nice to walk in and feel welcomed.”

For Maveety, personal fitness is not a destination; it’s a way of life. “It’s such a good stress reliever,” he says. “These days, everyone is so stressed out about money, about providing for their families, about keeping their jobs. It’s okay to put yourself first so that you can be there for everyone else. Everyone needs an outlet. It’s important to get those endorphins going, and allow our bodies to relax and feel strong.” With an original dream of becoming a teacher, it seems Maveety has found his true calling. “This is just how I decided to help people,” he says. “I just love to see how far clients can go. And once they reach a goal, it’s finding out what the next one is. I love to push boundaries and watching my clients strive to be the best they can be.” RK

The Importance of Using Proper Form When Exercising

F

irst and foremost, I believe there are no bad exercises, only bad exercisers. Any movement can be beneficial when done right with proper form, focus and appropriate resistance or weight. However, incorrect weight training techniques can lead to sprains, strains, fractures and other injuries that may sideline your weight training efforts. The majority of issues associated with bad form are a result of the exerciser using resistance that is beyond their abilities. Here are some helpful tips: -Lift an appropriate amount of weight. Start with a weight you can comfortably lift 12 to 15 times. As you get stronger, gradually increase the amount of weight. -Learn to do each exercise correctly. When lifting weights, move through the full range of motion in your joints. The better your form, the better your results. Proper form also decreases the likelihood of you hurting yourself. -When you’re doing squats, don’t let your knees drop inward. This common mistake can be remedied by actively pushing your knees apart. -Remember to breathe. Many people are unaware they hold their breath when lifting. Focus on breathing out as you lift and breathing in as you lower the weight. If you’re just getting started, or you’ve been weight training for a while, consider booking time with a training specialist to review your technique and identify any changes you may need to avoid any risk of injury.

a coach and counselor, I meet endless people who don’t have enough time to get everything on their “to do” list done. As a result, they experience anxiety and stress, and their personal relationships are directly affected. This is no way to spend the holiday season; it’s time to start doing things differently. Create a vision of what you want the holidays to be like, then set goals and make plans for them to happen. Nobody can tell you what that vision should be. Here are some tips to get you started on a new path:

Extreme stress during the holidays can ruin the whole month of December, but it doesn’t have to. It’s time for you to stop playing “the stress game” and start enjoying the holidays again.

Eliminate old traditions and begin new ones. The traditions you and your family celebrate during the holidays are as unique as your fingerprints. But if these rituals cause you anxiety, they are no longer valuable. Simplify things and eliminate timeworn traditions in order to begin new ones that fit your family and lifestyle now. Start saying NO! Say no to some events; endless shopping; overeating; over drinking; and over spending. If you begin saying no, you open yourself up to more time and space for things that bring you true happiness. Be vigilant about self-care. Ensure you are doing things that make you feel good. Take a bath; book a spa day; read your favourite novel; work out regularly; and get lots of sleep.

Get outside. During the winter months, we are not exposed to vitamin D as much as we are during the warmer months. Put lemon or orange essential oil on a cloth and keep it with you. Smelling these essential oils help your brain produce norepinephrine, which will help boost positive feelings. Try to stick to your regular daily routine as much as possible. A predictable schedule may help set your mind at ease. Eat more spicy foods. They trigger the release of endorphins (more ‘feel good’ stuff). Don’t go for sugary, quick ‘pick-me-ups.’ Opt for fresh vegetables and fruit, or a handful of almonds for a healthy, tasty snack. Spend time with the people you love. Time is the most valuable commodity.

If you want to change your life, become a runner.” — Unknown If you’re a runner, you might be tempted to trade the snow-covered roads for a treadmill in a climate-controlled gym this winter. Don’t. With the right gear, nothing compares to an outdoor run; the fresh air and Vitamin D may be all you need to avoid the all-to-common winter blues. An added bonus? You can blast the fat that seems to easily accumulate easily during the cold winter months. We’ve rounded up a few necessities for pounding the pavement to make sure you’ll stay safe and warm this winter. Start on the Right Foot The right pair of shoes ensures you can take on the snowiest, iciest roads with ease. To stay safe, toasty and dry, opt for kicks with picks on the sole, and Gore-Tex and waterproofed uppers. Try on several pairs to ensure they’re not only comfortable, but also lightweight, breathable and offer lots of cushion. Need some extra motivation to get out the door on a dark winter’s morning? Choose a colourful pair of runners; they may just give you the extra boost you need when you’d rather duck back under the warm blankets. With winter’s shorter days, early mornings and evenings — popular running times — are dark. Reflective gear will ensure drivers can spot you in the darkest of conditions. The Pants Look for leggings with heat-trapping construction to keep you warm. They’ll help you avoid that awful stinging sensation that follows during your hot post-run shower. Bottoms with stretch and moisture-wicking properties are equally important; even though it’s cold out, you’ll still sweat. Moisture wicking will ensure you can dial up your workout even when the snow is flying. For even more warmth, look for a running skirt that’s wind-resistant and will trap all the

heat where we seem to need it the most: our thighs and bum. Top it Off Look for clothing that offers breathability, waterproofing and thermal insulation. It may seem like a lot to ask of your clothing, but the trick is layering. Try starting with a fitted shirt that offers moisture wicking to keep you dry and comfortable, and topping it off with a fleece pullover for added warmth. Finally, add a cosy, down-filled vest. You’ll still have range of motion, but you’ll be protected from the harsh winter elements. Accessories No outfit is complete without accessories — even when it comes to your running ensemble. Begin with finding a hat, headband or balaclava to prevent heat loss. Remember that keeping your ears covered is key; the cold temperatures and wind can cause major discomfort and for some, even pain. To ensure they’re well protected, look for hats with contoured ear coverage. Many companies, such as ASICS, Nike and the North Face, offer plenty of options that are breathable, lightweight and can easily be tucked into a pocket if you begin to overheat. When it comes to gloves, look for options that not only repel wind, but also fend off water for added warmth. Some companies even offer technology-friendly thumb and forefinger tips so you can track your kilometres and crank up your tunes with ease. Pick a pair with reflective strips if you’re planning to run in the dark. Finally, pair your running shoes with some technical socks designed for logging miles during the winter months. Outside, rain is falling softly. Its rhythmic sound is soothing; its earthy smell is sweet and fresh. Long associated with emotions and cleansing, the shower is quite fitting on this particular autumn day. For inside, a small group of women are sitting comfortably on soft sheepskin rugs, a fire softly illuminating their faces as they work together to awaken their power, magic, passion and creativity. They’re there with the nurturing support of certified wellness and personal growth coach Cheryl Hiebert, who is passionate about helping all women discover their source of power with Jade Egg Practice.

that the fire was lit within her to avidly pursue her goal. “The universe was literally giving me a bump on the head to slow me down,” she says, adding that as a menopausal woman, she was also unfortunately becoming all-too-familiar with what so many menopausal women experience: uncomfortable, painful sex. “The gift in all of this was that I started to explore other things I was interested in.” One of those things was Jade Egg Practice. Green Tea There have been endless studies done on the health benefits green tea, and there seems to be a general consensus that it can boost metabolism, prevent cancer and ease the pain commonly associated with arthritis. Studies also suggest it can also help those suffering from IBD, lower cholesterol and reduce inflammation. No wonder it’s been touted as a wonder drink! The University of Maryland Medical Center suggests adults (it’s not recommended for children) drink two to three cups a day to achieve optimal health benefits. Caffeine-free versions are available.

Black Tea The most popular type of tea, black tea contains the most caffeine with around 40 milligrams per cup. (To put that in perspective for you, coffee has roughly 50 to 100 milligrams a cup.) Scientific studies have shown regularly drinking black tea can help to reduce the risk of stroke and may also lower the risk of high cholesterol, kidney stones, osteoporosis and Parkinson’s disease. Oolong Tea Hoping to shed some pounds? Try drinking oolong tea, which some studies suggest can aid weight loss because it activates an enzyme

responsible for dissolving triglycerides, the form of dietary fat that’s stored in fat cells. According to the Linus Pauling Institute at Oregon State University, oolong tea may also “protect against cardiovascular disease, osteoporosis and dental caries.” Other studies have indicated oolong tea lowers blood sugar levels, which might help people with diabetes maintain good glucose control.

F

ollowing an impressive career with the Kingston Frontenacs, Sands went on to play hockey for St. Thomas University in Fredericton, and then enjoyed a one-year stint in Austria, where he played with the Salzburg Red Bulls. Following a knee injury, he made the trek back to the Limestone City, where he eventually settled in as a successful realtor and loving father. Although his days on the ice as a star player may be over, his fierce, competitive spirit continues to influence our community in innumerable ways. As the head coach of the Kingston Jr. Frontenacs AAA minor atom team, Sands is shaping the hockey players of tomorrow to be the best they can be; to experience success not only athletically, but also academically and professionally.

Teamwork

Player of the Game Following games, the players routinely troop out of their dressing room sporting matching shirts, ties and jackets. But one player – donning a pink vest with yellow stars and a jaunty top hat — always sticks out. It is, after all, most certainly not an outfit most eight and nine-year-old boys would wear with pride, but this is the exception. The zany outfit is an honour, explain the coaches. “Every game, we announce a Player of the Game. It’s not necessarily the guy that scores the most goals or has the most assists, but the player that most exemplifies what our team stands for: sportsmanship, hard work and doing the little things that normally go unnoticed by a lot of people.”

The Importance of Development

Fresh off the road from a game in Markham, the Kingston Junior Frontenacs were already prepping for a match against Barrie as of press time. With a 36-game season (not counting tournaments and playoffs), there’s not much time for rest and relaxation.

Despite their season getting off to a rough start (they lost their first four games), the kids have since pulled up their hockey socks, so to speak. But Sands and the rest of the coaching staff aren’t letting that get to their young heads. Winning is great, says Sands, but it isn’t what’s most important. So what is? The overall development of every player, no matter their skill level.

Despite the exhaustive schedule, the young players are clearly doing something right; they’d won an impressive six of their last eight games. It’s a testament not only to Sands’ coaching abilities, but also the inspirational training of coaches Mike Laughlin, Philip Maclean, Rich Lakins and Warren Picken, as well as, of course, the skills of the players themselves. They take the game of hockey — and the teamwork the sport requires — very seriously.

As such, it’s important to both coaches that each player sees ice time. “I always say development is No. 1, then fun, then winning,” he says. “I have been true to my word… but let me tell you, it’s easy to say but not always easy to do, especially when you’re in a game driven by wins and how your team does. But if your weaker players are not developing, you’re not going to win when the time comes.”

“They’re a team, before anything else,” stresses Sands during a practice at the INVISTA Centre. Watching the kids skate with ease around the rink and expertly handling the puck, his face beams with pride. “Win or lose, we all stick together. We’re a team.”

From Young Players to Successful Adults Sands knows firsthand how sports can shape your life; how they can influence you to work harder, play harder, and to be the best you can be.

“My father always told me, ‘You’re going to be a person a lot longer than you’re going to be a hockey player,’ so I try to instill that into my kids, as well,” he says. As such, Sands and Laughlin jointly insist their players commit to being healthy, getting proper rest, and excelling in school. “Doing well in school determines how well we do on the ice,” says Sands. “School is No. 1, and hockey is No. 2. If you don’t make the NHL, you have to have something to fall back on. I want my players to learn from a young age that if they have good results on the ice and in school, they’ll have good results later on in life, too.”

“There’s nowhere else we’d rather be.” Practices take place bright and early at 6 a.m. It’s a dreadfully early start, but the coaching staff doesn’t seem to mind one bit. “We’ve always loved teaching the kids,” says Sands. “We wouldn’t want to be anywhere else that early in the morning! There’s just something about seeing those 17 faces smiling up at you.”

The Oxford dictionary defines elevation as “the action or fact of raising or being raised to a higher or more important level, state, or position.” It’s fitting, then, that Ryan Lewis, owner of Elevation Music Studio (EMS), would want to incorporate this inspirational word into his business’ name. The recording studio and music school is located on the west end of Kingston, and exists to pass-on Lewis’ true love. It also allows him to both create and teach what Plato once said gives soul to a universe, wings to the mind, flight to the imagination, and life to everything: music. “Music has always been an outlet for me,” says Lewis, recalling his early exposure to the melodies of Stevie Wonder and Eddie Grant. “More than two decades of musical experience has showed me how music can be a catalyst for community and relationship building and increased self-confidence.” A Safe Space for Musical Development EMS operates outside the parameters of a conventional music school. “It is liberating to

freely express the emotion of the heart through exercising one’s imagination and creativity, in a safe space, where there is an allowance for vulnerability and absent judgment,” says Lewis. This is both the heart and mandate of Elevation Music Studio. “Having a judgment-free zone is important for development of any nature,” explains Lewis. “When students know they can be uninhibited and are free to make mistakes with the assurance that I won’t judge them, half my job is done.” A Different Learning Experience Lewis recognizes vocal and music lessons themselves are a dime a dozen; you can easily find thousands for free online. So he does things much differently than one might expect. “It’s not just a music lesson,” he says. “It’s a place where people can create friendships, share ideas, learn new things, and gain an understanding of how the music industry works.” Whether it’s learning how to conduct interviews with the media, discovering how to market

themselves and their art, or gaining mechanical live performance experience, truly experiencing how it all comes together is vital, says Lewis. “The soft skills they acquire from these sessions can easily be transferred to any career they endeavour to pursue in the future. It’s not just a music lesson environment; it’s a training ground to procure hands-on experience in the industry and build self-worth. It’s not just about the vocals.” A Promising Future Despite being in business for just three years, Elevation Music Studio has already worked with some of Kingston’s most promising artists, including the adorably precocious Claire QUTE, who recently worked with the likes of Natalie Portman, Susan Sarandon and Jessica Chastain in the filming of The Death and Life of John F. Donovan. It’s a testament to what sets Elevation Music Studio apart: its dedicated teacher.

H

er father was killed in the war. Her mother was raped by soldiers and later died from her injuries. Her step-father perished in a car accident. And yet, dressed in a pink sweater that swallows her tiny

body, the little girl — who ended up begging on the streets for food to survive — somehow still stands, still smiles.

S

he is just one of the orphaned children from the city of Goma in the Democratic Republic of Congo. Just one of the children being cared for under the VMC Congolese organization whose face stares back at you from local artist Heather Haynes’ Wall of Courage. The idea for this installation project happened by accident. Three years ago, Haynes began painting the orphaned children she was raising funds to help build a home and find sponsors for. These sponsors would allow the orphans a safe place to sleep, eat and get a good education. At that time, she’d completed 15 paintings, each measuring 24”x 36”, and decided to take photos by laying them out on the floor of her studio. In that moment, everything changed. Haynes realized she needed to paint all 80 children being cared for under the VMC Congolese organization. “I realized it was just the beginning of the project, and that it would take me years to create this wall,” recalls Haynes. “I just had this real, deep knowing that it was exactly what I needed to do. I knew it would be a work that would draw you in; one that you couldn’t walk away from.” She was right. When assembled, the wall is 40 ft. long and 12 ft. high. Some of the children pictured are smiling, while some simply stare back at you with sad, weary eyes. Whatever their expression, Haynes says they all have one thing in common: courage. And it’s that courage — to persevere, to live — that makes it hard to step away, to turn your back to the heart-wrenching stories that are told beside the portraits of these orphans. “I don’t know what the stats are, but we take something like 1.5 seconds to look at a piece of art, and then we move on,” says Haynes. “But

when you see 80 paintings of children looking at you, holding words of courage, and their stories are written on this canvas, you have to sort of engage with it. At first, you’re not sure you want to, but it’s intriguing, because there’s hope in it.” The response to Haynes’ Wall of Courage has been “overwhelming” so far, says Haynes, who admits that as a mother herself, it was difficult to learn the devastating stories of the children she painted. “I think it’s seeing yourself in another,” she says, taking a deep breath. “You put yourself in that position as a mother who has lost a child, or a child who has lost a mother… you imagine your children without you for a moment, and then you imagine your children outside of this county, where we have support. You imagine all this, and there is fear – fear of that would feel like for a child. And every child is somebody’s child.” We all know art has the power to move us, to stir our emotions. But very seldom does art evoke action. And yet, that’s exactly what the Wall of Courage has done. Since Haynes undertook this project, even more children came under the care of the VMC Congolese organization, bringing the total up to 120. This project also spurred off a Women’s Training Centre and an agriculture project, as well as the construction of an elementary and secondary school. As an artist, it’s more than Haynes ever thought possible. “It wasn’t what I set out to do. I just set out to be honest, and truthful to this process, and where this inspiration took me.” It’s Haynes’ hope the Wall of Courage will tour around the world to raise awareness of the ongoing conflicts in the Congo. She also hopes it shows people that if we all could step into our courage we could create a better

world, and that the power of one should not be overlooked. “I hope it inspires people to really know themselves, to know what their purpose is, or at least, lean into their curiosity and follow it. I think we’d all be a lot happier, and our world would be a happier place if we did that instead of struggling and fighting. “When I decided to help these children, I had to step outside of my fear, and believe my intuition was right, because none of it made sense. But now, it does. If everyone could be more in touch with their intuition, more things like this could happen every day.” Beginning on Nov. 11 during the Evening of PeaceQuest event (which takes place 7:30 to 9:30 p.m.), The Wall of Courage will be on display at the Isabel Bader Centre for the Performing Arts for one week during regular opening hours. An artist talk will take place at the centre Nov. 15 from 6:30 p.m. to 9 p.m. Haynes hopes Kingstonians will take the time to see the wall, and attend the free event. “It stands for possibility,” she says. “It shows small steps can create big change. It shows that the act of one matters, that saving one matters. Viewing this wall gives people the chance to experience possibility, hope and courage.” Heather Haynes spearheads Worlds Collide Africa, a social enterprise project inspired from travelling to Uganda, Tanzania, Kenya, Rwanda and the Democratic Republic of Congo. Boys and Girls Club Has Long-Lasting, Positive Impact on Community By Katrina Geenevasen-Garlough Photos Stephen Wild

in the early 90s, The Boys and Girls Club of Kingston and Area has had a very clear mission: Provide a safe, supportive place where children and youth can experience new opportunities, overcome barriers, build positive relationships and develop confidence and skills for life.

“Truth be told, I don’t think I would be alive today, but that is a story for another time,” says Sunama, now 25. “I went through some hard times as a young person and the Boys and Girls Club always provided a safe haven for me. When I was there, I belonged and I could be and do whatever great thing I envisioned.”

In an effort to highlight the incredible work this organization has accomplished throughout the years, ReFINEd Kingston spoke with Boys and Girls Club alumni Brittany Almeida and Prince Sunama. With admirable poise, intelligence and grace, these two young adults prove anything is possible with the right support team behind you. Together, Almeida and Sunama show that the Boys and Girls Club of Kingston has taken their mission very seriously over the years, and continues to do so to this very day.

Sunama joined the Boys and Girls Club after it was recommended to him by a family friend. Although he admits to being somewhat intimidated at first, it wasn’t long before he began to feel part of what he knew was something special. “My siblings and I immersed quickly within the group of youth attending,” he says. “Everyone was inclusive and welcoming — youth and staff members alike.”

Ultimately, Sunama attributes where he is today — working as a successful behavioural technologist with the Correctional Service of Canada — to the Boys and Girls Club. The Club not only supported his post-secondary education through monetary grants, it also provided mentorship and various networking and professional development opportunities.

He says he felt safe, and quickly garnered a sense of belonging. He learned how to speak English (French was his first language), and in no time at all gained what he says were meaningful friendships and mentorships. “I began to find my niche, so to speak,” he recalls. Before joining, Sunama says he was struggling to find his place in the world.

“Without their financial support, I would have had a difficult time completing my studies and would have accumulated even more student loan debts than I currently have,” he says. “I am forever grateful to this organization for believing in me and holding me accountable. When people around you believe in you and remind you that you are capable of accomplishing

“I would like to say that I was a pretty wellrounded teenager at the time, however, teenage years can be confusing times and can lead to an identity crisis as one tries to find their place in this large world,” he says. “I think my involvement with the Boys and Girls Club provided a safe environment for me to develop my identity. They believed in my dreams and fostered a positive sense of self.”

A Positive Influence Queen’s University student Brittany Almeida, 21, is as full of praise for this amazing organization as Sunama. She first joined the Club when she was 11; many of her friends had joined and she says she didn’t want to miss out on the experience. “The atmosphere at the Boys and Girls Club was always full of energy,” she says. “The devoted staff was engaging, fun, approachable and genuinely warm-hearted. The atmosphere was contagious and kept me coming back to the after-school program as a child.” It’s also what made her want to become a Boys and Girls Club staff member, which she continues to be to this day. “Being at the Boys and Girls Club made me feel like I was a part of something special,” recalls the fifth-year global development studies student and varsity soccer player. “The Club fostered an environment of community and acceptance. As a young child, it gave

As a young, impressionable child, Almeida says she began to take on the core values the Boys and Girls Club promotes: honesty, fair play, inclusion, a positive attitude, cooperation, and respect for self and others. As she’s gotten older, those values have continued to influence her. “The leadership and life skills the club provided me with have had a long-lasting, positive impact on my life as a university student and young adult.”

Meanwhile, Almedia says she truly believes the work the Club does for the Kingston community and its youth is something special. “The Club is a place where youth can experience new and exciting opportunities, build positive relationships, overcome barriers, and develop the confidence to fulfill their potential and achieve their dreams,” she says. the clock at City Hall heralds the beginning of another evening in Kingston, dusk settles in, the twinkling stars emerge from their hiding places, and the downtown core springs to life. Lit from within, restaurants hold the steady and true promise of good food, good times and good friends. Casa Domenico and Woodenheads, owned and operated by Nick Romeo, Wayne Goodwin and Jim Colden, are most certainly no exception.

Open for 29 and 23 years respectively, Casa Domenico and Woodenheads have quite rightfully earned their places as two of Kingston’s most celebrated restaurants. It’s not difficult to determine how and why that happened. With menus lovingly and expertly curated by two of the city’s best chefs, Marc Halverson and David Faroldi, it’s no surprise at all the restaurants have earned high praise from countless patrons. While there is, of course, a strong emphasis placed on the food itself, the owners of Woodenheads and Casa Domenico are equally passionate about providing atmospheres that are conducive to what most (if not all) diners are pursuing when they go out: a good time. “It’s really that simple,” say the owners. “For a lot of people, restaurants are not just a place to eat out. It’s also about entertainment. So when they walk out the door, we hope they’re saying they had a good time.” Woodenheads

seen, the place to meet up with good friends, share a romantic meal à deux, or just enjoy a plate of astounding food solo. However you choose to dine, you can be sure you’ll leave impressed, and no matter how full you are, wanting more. There’s always room for dessert here. With an ambience and atmosphere that rivals that of big city restaurants, Woodenheads is equal parts sophisticated, urban and trendy. And while that’s all great, it doesn’t hurt that the restaurant has the best wood-fired pizzas around. “Everyone has a passion for it and everyone works hard to do their best when they’re making it. Each pizza is individually crafted,” explains Halverson, expertly sliding the eternally popular Margarita pizza into the hot oven during our interview. While Woodenheads is famed for its gourmet pizzas, the menu offers an impressively wellrounded array of options. So many options, in fact, that it’s hard to slot the restaurant into any particular category. If you enjoy fare with an Asian influence, give the Kai Mekong a try. Are you an Italian fan? The Pollo alla Saltimbocca is to die for.

Halverson explains he had a vision when he created the menu all those years ago, and it’s proven to be startlingly effective over the years. “The food has to be fun, and it has to have the best flavour and presentation possible.” After all, you can get coconut shrimp anywhere, he adds, but you can’t get his coconut shrimp. “The flavour profile is a huge dynamic,” he says. “So I approach everything by asking myself, “Is it going to be unique?’ You can’t reinvent the wheel, of course, but you can certainly make a better wheel. That’s what I’m trying to do.” You only need to dine at Woodenheads once to know he’s succeeding. Casa Domenico Situated across from Kingston’s historic market square is Casa Domenico, one of the best Italian-inspired restaurants you’ll find outside of the boot-shaped country itself. Its head chef, the impossibly talented David Faroldi (who is also an owner), knows his stuff, and you only need to be in the restaurant on any given night — whether it’s a Monday or a Saturday — to know countless others feel the

same way. It truly buzzes with life and laughter and the air is filled with ridiculously delicious smells. “You can want to be a chef, and you can be a good chef,” say the owners, “but if you’re not truly passionate about what you do, you’re not going to succeed. You might have all the right papers, and have worked at all the right places, but you just won’t be able to do what David does. He has a true passion.” It seems Faroldi was born into the art of cooking; both his parents taught him from early on the skills he’s worked hard to perfect over the years. As such, the menu is a reflection of him and his childhood. “It’s what I like to eat,” he says. “A lot of it brings me back to certain childhood dishes.” With his talented team working alongside him, Faroldi seamlessly blends a classical approach with modern elegance in food preparation, emphasizing freshness and quality in the ingredients of each menu item. Many items he works with, including the olive oil and salami, are imported from small producers in Italy, making his food taste that much better and leaving diners in pure ecstasy.

I

t’s a bone-chilling evening in the Limestone City; one of the coldest nights Kingston has seen yet this year. But as I open the door to Le Chien Noir Bistro, I’m instantly hit with the incredible smells that emanate from the kitchen of one of our city’s most beloved restaurants.

it has become for countless Kingstonians. “Eric has come up through the ranks here and I’m so glad he’s been able to come into this position,” says owner Tim Pater. “He brings a lot of great energy to the role, and is passionate about what he does.”

With candles flicking on the tables, cool lounge music sounding from the speakers, and the lively chatter of diners enjoying their meals, it’s almost as if I’m at a bar in Paris, ready to enjoy délicieux steak frites.

Recently, Le Chien Noir, known for its farm-totable comfort food, revamped its menu, and now offers an impressively large selection of French gastropub fare. The only problem with the restaurant’s new modern brasserie menu is choosing which item to try first. Will it be the Rainbow Trout 'Meunière', or the Bouillabaisse? I opt for the Cassoulet 'Marocain': duck confit, 'Pig & Olive' merguez lamb sausage, ras el hanout spiced chickpea-tomato stew, green olives and preserved orange. My choice, it turns out, is an excellent one. With friendly pricing for any occasion, there is also an exciting new 'Sharing Plates' section, perfect for drinks at the bar with friends.

While there is certainly something to be said about Le Chien Noir’s outstanding ambience – the exposed bricks walls and sparkling chandeliers above the well-stocked bar, for starters – the restaurant’s success can largely be attributed to its head chef, Eric Brennan. Working behind the scenes at the restaurant for more than six years, Brennan didn’t always know he wanted to be a chef. He began working at the restaurant part-time as a dishwasher, but before too long, his skills as a cook could not be ignored. He took some time to hone his skills at George Brown College, and returned with the know-how to make Le Chien Noir the go-to restaurant that

The team at Le Chien Noir says the new menu is one of the best to date. I’m thrilled to report it’s true. “All the menus we have offered have been so good for many different reasons, but this one has the most flow to it,” explains Brennan, preparing some Seafood Croquettes for a diner while we chat. “It has a standing

theme consistent throughout the menu; it brings everything back to the brasserie/gastro pub atmosphere we’re offering.” What makes this Kingston gem even more special is the importance it places on using fresh, high-quality, seasonal and whenever possible, local ingredients. “If you use the best quality ingredients it makes your food taste that much better. You don’t need to dress anything up,” says Brennan. It’s part of why he loves his job, but there’s also something to be said about knowing he gives every guest an incredible encounter with each dish. “It’s just a great place to have an experience,” he says. “At the end of the day, you can come in and have super delicious food and know you’ll be taken care of.”

ou can almost feel the youthful energy at Atomica.

Featuring fresh Italian food, contemporary cocktails and modern design, Atomica is located just steps from Historic Market Square in downtown Kingston. While its hip ambience is great for meeting with friends any time of day or night, its head chef, Grace Knight, is a large part of the restaurant’s incredible success. “Grace has been a mainstay at Atomica for five years now, and has breathed new life into the restaurant,” says owner Tim Pater. “Her dedication to working with local suppliers has been incredible, and she has a great imagination.” With her creative sprit guiding her delectable creations (she’d originally planned on becoming an artist), Knight has taken traditional antipasto, paninis, salads and pastas and put her personal spin on them. “Cooking is a familyoriented thing,” she says. “My family is Arabic, so we do a lot of family cooking, and we have get-togethers often, and so I learned from my grandmother, my mother, and my aunts.” Spices like cinnamon, all spice and mint complement her traditional Italian dishes, and give them a special flavour you won’t

find anywhere else. Whether you opt for the Spaghetti Carbonara (a mind-blowing combination of jumbo shrimp, green peas, sundried tomatoes, Italian bacon and parmesan), or the Flank Steak (my personal favourite, an incredible combination with mushroom risotto, prosciutto, broccolini and truffle butter), you absolutely cannot go wrong with any of the delectable menu choices. While a lot of it has to do with the skill of Knight and her talented team, the fresh ingredients used in the dishes at Atomica don’t hurt, either. “We strive to work with a lot of farmers and producers in the area,” she says. “Knowing the ingredients on your plate were in the ground less than 24 hours ago makes the taste incredible,” she says. In fact, what is in season, what’s provided by local farmers, determines the daily specials. It’s part of what keeps clients coming back time and time again. Recently, Atomica also launched a new menu. “Everything on the menu is so exciting,” says Knight. “With this menu, we combined traditional Italian with a modern flair that’s all our own.” It’s no wonder diners are responding positively. Especially popular is the skillet braised chicken and new starters like the PanSeared Oceanwise Jumbo Shrimp with smoked

prosciutto and salsa rossa. We’d be remiss not to mention Atomica’s fantastic artesian pizzas. Made with Italian double-zero flour, the crust features tasty dark bubbles. Their slightly smoky essence only enhances the pizza’s flavour, says Knight. Italian director and screenwriter Federico Fellinini once said, “Life is a combination of pasta and magic.” Be sure to experience the magic (and the pizzas, salads, entrées and paninis, of course!) at Atomica.

A Love Affair with Italian Fare

Serving both traditional and contemporary Italian fare, the family-run restaurant — owned by husband and wife team Deanna Harrington and Stev George — places a huge importance on sourcing local ingredients, inherently understanding that fresh food just tastes better. “It’s really that simple,” says Harrington. “There are various social and economic reasons why you should buy local food and support the local economy, and those reasons are obviously important, but the great side effect is that it’s just fresh food, and it tastes better.”

Harrington and George – who met and fell in love in college while learning how to become chefs some 20 years ago — share a deep love of Italian food, and they’ve passed that passion on to their team. They make a point of taking regular trips to Italy to get inspired, sometimes even bringing their team along. While immersed within the culture, everyone learns not only how authentic Italian food tastes, but also how it’s served. The trick? Keeping it simple. Food prepared well with quality ingredients doesn’t need special attention or fancy garnishes, explains Harrington. “We do as little as possible to the food to really showcase the ingredients,” adds George.

During our interview, which takes place at the restaurant’s rustic, wooden-topped bar, it’s no surprise to learn Olivea has become widely known for their gnocchi, which talented chefs make in-house almost daily. Soft and fluffy, it practically melts in your mouth. They’re equally famous for their antipasti boards, which feature a delectable mix of local and European cheeses and meats.

It comes as no surprise Bella Bistro has developed such a loyal following throughout the years. Since opening 11 years ago, the west-end, family-style restaurant — known for its warm and welcoming environment — has placed considerable importance on offering customers food that’s not only good, but good for you. Their chicken and turkey is air chilled, and vegetable and grain fed. “It’s food we feel good about giving to our own kids, so it’s food that we can feel good about providing to customers,” says Muller, who seems to have come from a foodie family: his grandfather was a baker, and his sister runs a bakery in Stratford.

A Personal Touch on Each Recipe If you’re a carbohydrate enthusiast like myself, you’ll appreciate Bella Bistro’s scrumptious bread and pizza dough, which is handmade from scratch. The homemade pizza sauce doesn’t hurt, either. Creating dishes from scratch was important to the chefs from the very start. “We both feel our personal touch on recipes is what people are looking for,” says Muller. “You’re not going to be known for anything if it’s not made in-house. Making our food from scratch is what really sets us apart from commercial chains.”

Bella Bistro serves local craft beers (including Mackinnon Brothers Brewing and Stone City Ales), as well as wine from Sandbanks Winery and Norman Hardie Vineyard and Winery. he season of cosy sweaters, warm drinks and awe-inspiring colours is finally here – autumn. Many welcomed the season with a delectable meal (some enjoyed several!) during Prince Edward County’s fall edition of Countylicious.

Now in its 10th year, Countylicious celebrates fine dining each spring and fall with inspired fixed-price, dinner-only menus for $40. This season, a total of ten restaurants took part, including Agrarian; Amelia’s Garden; Clara’s at the Claramount Inn; The Drake Devonshire; East & Main Bistro; The Hubb; Merrill Inn; Gazebo Restaurant; and Portabella.

“Fall means harvest season for us in The County, and that means a bounty of fresh produce,” says Rebecca Lamb, a co-organizer of Countylicious. “With such an abundance from our own backyard — including Lake Ontario — the chefs had both the joy and challenge of building a dynamic menu.”

While both visitors and locals certainly have favourite places to feast, Countylicious provides a unique chance to enjoy a brand new dining experience. “It’s a great opportunity to visit restaurants and chefs that you don’t frequent and see how they get creative with a locallyinspired menu,” explains Lamb, who is also

the destination development and marketing coordinator for The County of Prince Edward. “Something different is being offered each year and each season.” It’s also a fantastic way to support local businesses across Prince Edward County, explains Lamb. “Beyond the restaurant, your meal could be connected to cattle farmers, fishers, cheese producers, beekeepers and apple growers.” While Countylicious only happens twice a year, participating restaurants have teams working hard year-round to serve up quality County-inspired food, says Lamb. “It’s a time to

celebrate and have some fun,” she says. “Aside from locally-inspired foods making it to the plate, many restaurants pick a theme to craft their menu around.” It’s no surprise the event has seen the success it has throughout the years. “We hear a lot of people look forward to Countylicious and plan a visit every year, sometimes twice,” says Lamb. “Reservations for the fall session already started coming in over the summer.” Every year, she adds, organizers hear of some enthusiasts attempting to make it to each of the participating restaurants. It may be a lofty goal, but it sure is a delicious one. “Ten years — that’s 20 menus for some of the participating restaurants — is an impressive length of time to feature an event like Countylicious,” says Lamb. “It really shows how it has become a staple for locals and visitors who have come to anticipate it.”

It also illustrates how locally-inspired food offerings are something people are looking to build a trip around, even in early spring and late fall, she says. “We often have diners from Toronto, Ottawa and Kingston coming for Countylicious and making a weekend of it. This event has been built up over the years by so many organizers, chefs and owner/operators. Elevate this humble cookie to create an unforgettable and simple desert.

Place one scoop of coffee or chocolate ice cream in your favourite bowl or pretty mug and top with two shortbread cookies. Drizzle with Bailey's or your favourite liqueur and add a generous dollop of fresh whipped cream. Don't forgot to sprinkle with chocolate shavings.

175g butter, softened 85g golden caster sugar 200g plain flour 2 tbsp cocoa powder 100g chocolate chips, milk or dark Method Mix the butter and sugar together with a wooden spoon. Stir in the flour and cocoa, followed by the chocolate chips – you’ll probably need to mix it together with your hands at this stage. Halve the dough and roll each piece into a log about 5cm thick. Wrap in cling film and chill for one hour or for several days. Can be frozen for up to one month. Heat oven to 180C/160C fan/gas 4. Slice logs into one cm-thick rounds, transfer to a baking tray lined with baking parchment and bake for 10-12 mins. Cool on the tray.

Bring two cups of water to a boil in saucepan and add tea leaves, cloves, cardamom, cinnamon sticks, black peppercorns, ginger, fennel, star anise and nutmeg.

When it comes to wine,

its vintage is key. It’s the most salient factor in determining the quality of the product. And yet, there are many misconceptions about what, exactly, vintage wine is. To lessen the confusion, we spoke with Brian Hanna, the in-house sommelier at Huff Estates. What is a Wine’s Vintage? “A wine’s vintage simply tells you which year the grapes were grown and harvested,” explains Hanna, expertly pouring me a scrumptious merlot to sample while we chat. Contrary to popular belief, Hanna tells me a wine’s vintage has nothing to do with the year the wine finally comes to the market. “It is essentially the birth certificate of the wine,” he clarifies. So can a wine still be decent, or even good, without having a specific vintage? “Some winemakers can make the case that producing non-vintage wines allow them to take what is best from every vintage and build upon their strengths,” explains Hanna. “It’s not a case of making an inferior wine, but making the best possible wine he or she can from their grapes.” So the next time you pick up a bottle of vintage wine, you might wonder if you should pop the cork straight away, or cellar it to enjoy later. Wonder no more. “One can safely say 95 per cent of the vintage wines offered at your LCBO are ready to be consumed that evening,” says Hanna. “Vastly improved vinification methods have paved the way to instant gratification. Blue chip wines worthy of aging account for roughly 5 per cent of vintage wines on the worldwide market.” Ontario Vintage Wines A huge fan of Ontario wines myself, I had to know if our province is suitable for producing vintage wines. “In varying degrees, of course,” says Hanna. “Ontario is home to cool-climate viticulture. It is a

question of finding the right grape that is best nurtured given the soil and sun-units we receive.” In Prince Edward County, for example, wineries find clay or loam or marl over limestone. “Limestone provides the key,” says Hanna, adding that certain grape varietals do best – Chardonnay for whites, Pinot Noir for reds. However, Niagara boasts world class Rieslings and stellar cabernet francs. Common Misconceptions Misconceptions abound when it comes to wines, explains Hanna. However, one issue continues to engender controversy and discontent: the ‘cellared in Canada’ label fiasco. “It is a designation that allows Canadian Vintners to import up to 75 per cent of grapes from abroad to Ontario and 100 per cent in British Columbia under the ‘cellared in Canada’ signage,” he says. “These ‘cellared in Canada’ wines are often positioned next to VQA wines, compounding the misinformation for the wine consumer, and is in fact, grossly misleading.” These products, says Hanna, often in the $11 per bottle price range, may have labels that read ‘a blend of Canadian and International grapes.’ “It is important to note here that a wine made with foreign juice, bottled in Canada by a Canadian winery in a Canadian cellar does not mean that the wine is Canadian,” says Hanna. His best advice? Look for the VQA label. It tells you the grapes are grown and vinified entirely in Ontario or British Columbia. It’s essentially your ‘good housekeeping seal of approval.’

Have a Business Plan in Place According to the Government of Canada, a business plan is “a written document that describes your business, its objectives and strategies, the market you are targeting and your financial forecast.” So why are they so important? They not only help you set realistic goals, they can also help you secure external funding, measure your success and elucidate operational requirements. In short, having a plan in place helps you focus on how to operate your new business — giving you the best chance at a successful future. While all business plans will, of course, vary, they all have a few things in common. An “executive summary” describes your business concept, competitive advantage, legal structure, the market and your own experience. You’ll also want to include a business and marketing strategy, as well as sections on your operational and human resources plan. If accounting is not your forte, for example, hire an accountant. “The business owner needs to focus on what their passion is, and on managing their business,” says Vanderburgt. “Because if they’re not managing their business, it’s managing them.”

Be Flexible Vanderburgt believes anybody can become a successful entrepreneur. “Some people think you are born with the attitude, but I believe you need to be flexible and open to risk. You need to be able to duck and weave and come out strong on the other side,” she says. That being said, business ownership isn’t for the faint of heart. “It’s an emotional ride,” says Vanderburgt. “Things won’t always go as planned, there are going to be fluctuations and changes as you get started. Sharing your bounty – give to receive

our philanthropic gift is always important, no matter the amount of your assets or the size of your income – but to make the best use of your contributions, to preserve your legacy, and to minimize taxes and/or estate fees, a sound charitable giving plan is the way to go. Let’s look at your options. Name a charity as a beneficiary: The simplest option. In your will, leave a bequest of money or gift in kind (securities or artwork, for example) to a recognized charity and your estate will receive a charitable donation tax receipt that could reduce or eliminate the income tax on your final return and possibly on the immediately preceding return, as well. Establish a Donor Advised Fund: As the donor, you receive an immediate tax receipt for all contributions made to the fund and you also retain the rights to select the charities that are to receive your fund’s annual income. Establish a Charitable Remainder Trust: This is an irrevocable trust that can hold assets such as cash or mutual funds. All the interest and dividends are paid to you as taxable income. Upon your death, the trust assets (known as the remainder) go immediately to the charity you have designated. When the trust is established, you receive a donation receipt for the ‘remainder interest’ of the trust.

Donate publicly funded stocks or securities: You will pay no capital gains tax on the donated securities and will receive a tax receipt for their full value. Establish a Charitable Life Annuity: You will continue to receive a lifetime income from the donated assets for yourself, or for you and your spouse. Much of the annuity cash flow is tax free and you’ll receive a charitable receipt for a portion of the donations based on the amount of annuity income you receive and your life expectancy. Establish a Private Foundation: If your donation is very substantial, this option allows your name or family’s name to be permanently associated with the causes you’ve chosen. Ask your professional advisor for help in establishing a planned giving strategy that makes the most of your bounty for your charities and for you. According to the Canadian education campaign, Be Car Care Aware, preparedness ensures small problems don’t become big ones. “Preparing ahead of time before the temperature drops can ensure small problems are fixed and wear and tear from long summer drives are resolved,” says the campaign’s website.

Pre-winter car maintenance is vitally important, says the campaign (which is a licensed program operated by the Automotive Industries Association of Canada), because it can help drivers avoid collisions and prevent them from being stranded in harsh winter conditions. We only need to remember all the motorists that were trapped on Highway 402 near Sarnia in 2010 to realize just how important emergency preparedness is. So what should be your first step? “A thorough inspection of your vehicle during the fall months will go a long way toward ensuring safety and dependability when temperatures drop and severe winter weather strikes,” according to the fall car care tips provided by Be Car Care Aware. “A routine maintenance program also makes financial sense, extending useful vehicle life and helping avoid costly repairs down the road.” Be Car Care Aware has come up with a list of the top 10 basic maintenance procedures to keep your vehicle operating at its best. Heed the solid advice not only for your protection, but also for the safety of others:

1. Check all fluids, including engine oil, power steering, brake and transmission as well as windshield washer solvent and antifreeze/ coolant. 2. Check the hoses and belts to make sure they are not cracked, brittle, frayed, loose or showing signs of excessive wear. 3. Check the battery and replace if necessary. Make sure the connection is clean, tight and corrosion-free. 4. Check the brake system annually and have the brake linings, rotors and drums inspected at each oil change. 5. Inspect the exhaust system for leaks, damage and broken supports or hangers if there is an unusual noise. Exhaust leaks can be dangerous and must be corrected without delay. 6. Schedule a tune-up to help the engine deliver the best balance of power and fuel economy and produce the lowest level of emissions.

7. Check the heating, ventilating and air conditioning (HVAC) system as proper heating and cooling performance is critical for interior comfort and for safety reasons such as defrosting. 8. Inspect the steering and suspension system annually including shock absorbers, struts and chassis parts such as ball joints, tie rod ends and other related components. 9. Check the tires, including tire pressure and tread. Uneven wear indicates a need for wheel alignment. Tires should also be checked for bulges and bald spots. 10. Check the wipers and lighting so that you can see and be seen. Check that all interior and exterior lighting is working properly and replace worn wiper blades so you can see clearly when driving during precipitation. RK

apidly growing in p o p ularity, river cruises are setting the new gold standard for luxury travel. Whether you’re planning the trip of your dreams, or just dreaming of a vacation, a river cruise promises an authentic, immersive journey into the heart of some of the world’s most beautiful cities. The Rise In Popularity “Those who want the comforts of cruising but want to see the heartland of the area find river cruising a great option,” says Linda Doyle, senior travel consultant with Marlin Travel Service Guaranteed. Whether you want to discover quaint towns along the Seine, see ancient

temples, tombs and local villages in Egypt, or experience the Amazon wilderness in Peru, river cruises promise an unforgettable escape totally out of the ordinary. “Travellers are looking for a different cruise experience, so are turning to river cruising,” explains Doyle. Typical ocean liners — which can carry up to 5,000 vacationers — are veritable resorts; roaming islands with endless activities, restaurants and entertainment. While some ships even boast skating rinks, casinos and multiple pools, the unbelievable size of them limits them to docking at coastal ports.

By comparison, river cruises promise a decidedly more intimate experience. Because the boats need to negotiate the locks on rivers, riverboats are considerably smaller, holding around 60 to 200 passengers. “You don’t have to walk the length of a football field to get to your stateroom,” says Doyle. “They do not have rock climbing walls or skating rinks. There are no formal nights, it is casual attire on board.” River cruises also offer more all-inclusive options than ocean liners, explains Doyle. In fact, most include a guided excursion each day, and a glass of beer or wine with meals. And unlike coastal cruises, which usually have multiple days at sea, river cruise passengers are guaranteed

HGTV Canada’s hit series Income Property sees its handsome host help cash-strapped homeowners feather their financial nest by transforming their existing properties into income generators. Not only do income suites help with mortgage payments, they can also increase the value of a home. “Secondar y suites for the most part are appealing because of the income,” says Jeff Easton, a Realtor with Re/Max Finest Realty. “It is getting harder for first-time home buyers to afford the higher-priced homes. Having a secondar y suite can ease the burden of the high mortgage costs and also help with the increasing utility bills.” It ’s no wonder the popularity of income suites has gone through the roof; according to a 2015 survey completed by Altus Group, which relies on research from the Financial Industr y Research Monitor, roughly one in 20 Canadian households own some type of rental property. According to Second Suites: A Homeowners Guide, secondar y suites have a variety of tenants. “Some may house aging parents who want to remain independent, but need support, or adult children who have completed their education and are starting their careers. Others provide affordable housing for tenants in established neighbourhoods, close to jobs, transit and shopping.”

If you’ve decided you want to add a secondar y suite to your home, ensure your property complies with the requirements of the City of Kingston’s zoning by-laws before you do anything else. According to the City of Kingston, if your property complies with the zoning by-law, the next step is to complete and submit a building permit application. Unsure if your location is suitable for an income suite? We have some good news for you: pretty much anywhere within the Limestone City is safe. “To be honest, anywhere in Kingston is a good location,” says Easton. “The vacancy rates have been low for a long time.” If you want a sure bet, says Easton, some really popular areas are northwest and central Kingston, and the downtown core. When it comes to what renters are looking for in a suite, consider what you’d seek out and go from there. “In my experience, renters want all-inclusive payments, parking, Internet, and laundr y if it ’s not downtown,” says Easton. And consider a fresh coat of paint and a thorough cleaning before listing your suite. “To get good tenants, in my experience, the suite needs to be clean, bright and well taken care of,” says Easton.

For those undecided as to whether or not they wish to add a secondar y suite to their home, this may just seal the deal: the City of Kingston offers a Secondar y Suites Affordable Housing Program in order to stimulate homeowner investment to create alternate housing options within the City. “To complement existing affordable housing programs available within the City, the Secondar y Suites Grant Program is now being offered to allow homeowners to participate in the creation of additional modestly priced rental housing within the city,” says the City of Kingston’s website. “Participants of the program must commit to renting the suite at an affordable rate for an agreed upon period of time, to a household that meets certain household income criteria.” Provided these two requirements are met, there are no other conditions or requirements on who can rent the suite, says the city. The program includes two different funding streams. Quartz Quartz – also called engineered stone — is incredibly popular among today’s homeowners, perhaps because it’s seen so much on home renovation shows.

Granite is my personal favourite; I have it in every room in my home. Because it’s a natural stone, it can withstand incredible amounts of heat and abuse – which is perfect if you’re a klutzy cook. It’s second only to diamonds in terms of hardness in natural materials. If you somehow manage to scratch or chip granite, it’s usually repairable.

It’s incredibly durable and shouldn’t scratch or stain (it stands up well to everything from juice and oil to wine, tomato sauce and coffee, for example), and there are endless designs and colours to choose from. When it comes to quartz, you’ll easily be able to find something to go with any style of kitchen.

Contrary to popular belief, most granites do not have to be sealed. I like to compare it to waxing your car; waxing isn’t necessary, but it helps to protect your vehicle and keep it clean. Sealing granite keeps your countertop sanitary and closes up natural pores, so it won’t absorb anything (like that second glass of cabernet sauvignon) that spills on its surface.

While quartz is perfect for those who have a preference for uniform colour and a rich and luxurious look, it’s important to note it’s simply not quite as durable as granite. You have to be mindful of placing hot pots and pans directly on its surface. Are you a perfectionist? Keep in mind that seams are sometimes less noticeable in quartz countertops.

Many homeowners – myself included – like that it’s a natural stone that was made by nature over thousands of years. Its one-of-a-kind, organic beauty simply cannot be recreated by any machines. Each slab is unique in colour and characteristics, and can have mineral inclusions and veining that contribute to its unrivaled beauty. You can stare at some of the colours for hours. It’s like having a van Gogh painting in your kitchen.

ccording to the Heating, Refrigeration and Air Conditioning Institute of Canada, space and water heating accounts for 80 per cent of all residential energy use. If you’re building a new home or completing some renovations this fall, it’s only natural you’d want do to your research before deciding what type of heating is best for you and your family. Read on to learn more about the most common types of heating found in Canadian’s homes Forced-Air Furnace Natural Resources Canada says, “Forced-air furnaces are the most common home heating technology used in Canada.” Because these furnaces are much more energy-efficient than the ones in the past, homeowners are able to conserve energy and reap cost savings at the same time. The majority of homes with forced-air furnaces are fired by natural gas, while the rest run with oil or propane. So why are they so popular? Mainly because of their ability to heat the house quickly. Electric Heating The second most popular heating option in the county, electric heat is most commonly generated in baseboards and in recessed floor- or wall-mounted heaters. What homeowners love about this type of heating is that it’s 100 per cent efficient; all of the energy consumed by the heaters is converted to heat. Initially, it’s cheap to purchase, which makes it a tempting option. But keep this in mind: long-term operating costs can be pricey. In fact, heating electrically can cost hundreds of dollars a year more than running a mid- or high-efficiency natural-gas furnace. Hot Water Heating According to the Heating, Refrigeration and Air Conditioning Institute of Canada, hot water heating, which is widely used in Europe, is making a comeback in North America as it provides reliable comfortable heat.

Home Heating System Cost Calculator The Government of Canada offers an online calculator that allows you to compare the costs of your current home heating system with the savings offered by newer equipment and other sources of energy. It is for homes using one heating source: electricity, natural gas, propane or oil. The results should be used only as a guide. Many homes built prior to the 1950s feature hot water or hydronic heating systems, which typically use a boiler to supply hot water to cast iron radiators. While the basic equipment has stayed pretty much the same throughout the years, there have been some technological advancements. Fuel pumps and burners are built to be more efficient than ever before, and automatic dampers and circulating pumps have boosted boiler efficiency levels. One form of hydronic heating that is becoming more popular among Canadians is radiant floor heating, which, I’m sure we all agree, is perfect for persistently chilly feet. With this type of system, a boiler or hot-water tank warms the water that runs through pipes that have been installed beneath the floor. Some homeowners choose to heat their entire home this way, while others yet opt to install the heat in specific rooms. While the initial price tag might give you sticker shock (especially since you need to install an air conditioning separately), consider this: it can be up to 30 per cent more efficient than forced-air heating, depending on how well insulated a house is.

Fireplaces There’s nothing like snuggling by a warm fire when the temperatures plummet. If you’re thinking of installing a fireplace, you have options to consider: wood burning, gas and electric. Wood Burning Fireplaces Many Canadians use wood as a source of heat. It’s a renewable resource, and can make a cold Canadian winter feel somewhat cosy. Just close your eyes and imagine the flickering coals, crackling sounds, and that amazing wood burning smell.


Today’s wood burning fireplaces are cleaner burning and more efficient than their predecessors and can be very powerful. They are, however, quite expensive to install. ith the summer behind us, kids back at school and the leaves changing colour, plans to get away from our cold winters are soon to be in full swing. If you’re crossing the border to the U.S. or another destination, it is important to ensure you have the proper Out-of-Country (OOC) emergency medical insurance. This coverage protects you from the high medical costs of having an unexpected or unforeseen medical emergency while outside your home province or country. There may also be some coordination services included your coverage (ie: returning rental cars, childcare for children of a parent who is hospitalized, flying a loved one to be with an insured person who is hospitalized for a number of days, etc.).

Typically, there are two ways to secure this coverage: Group Insurance: If you are covered by an employee benefits plan with your employer, you likely have OOC insurance within the healthcare coverage*. Standard OOC coverage within a group insurance plan will cover the employee and their dependents year-round with a maximum per trip limitation of 60 days and an overall coverage maximum (generally from $1,000,000 to Unlimited). Individual Travel Plans: If you are self-employed, do not have access to group insurance coverage through your employer or are retired, you will need to

investigate your options for a personalized emergency out of country insurance plan. These types of coverage can be tailored to your travel plans. Do you need coverage for a single trip, an annual plan that allows you to take a number of trips with certain per trip duration limitations, or maybe a combination of both? Meeting with an insurance advisor can help you determine the type of coverage that is right for you. Pre-existing Conditions: As mentioned at the beginning of this article, OOC insurance provides coverage for expenses arising from unexpected and unforeseen medical emergencies. If you have a medical condition that you are being treated for or have recently been treated for, a medical emergency arising from that condition may not be eligible for coverage if it is considered unstable. Generally, the stability clause states any new condition for which an individual is treated for or a change in treatment for an ongoing condition within 90 days of departure would not be eligible for coverage. Examples of an unstable condition could be one where you have received treatment from a medical professional or simply changed the dosage or frequency of an ongoing medication. It is important to note if you have an unstable condition, it would only be emergencies as a result of this condition that would not be covered; other unrelated medical emergencies would be eligible. *Disclaimer: Every insurance policy is different. If you have questions about your coverage, talk to your insurer prior to traveling outside of Canada
