editor’s letter

T

he call came while I was sitting in Miami traffic. A friend from the Miami Herald was on the line. She’d heard through the Magic City grapevine that I was back in town after two decades of living and working in Los Angeles and New York, and reached out to tell me about an upscale lifestyle magazine the paper was planning to launch. “Would you help us?” she asked. Hearing those words instantly made me smile. I’d worked for so many years at major national magazines, but had always fantasized about making a magazine right here, in the city I always called home. I jumped and said yes! From the beginning, when we conceived INDULGE four years ago, we set out to create a magazine that was different. One that truly focused on Miami, the people, places and experiences unique to us, the things that make living here special and unlike living anywhere else in the world. There were so many stories to tell, but the ones that profoundly touched me were always about the people. The heroes, the entrepreneurs, the fashionistas, the chefs, the builders, the designers—those on the frontline of transforming this magical city, infusing it with new spirit and ideas. We knew there were plenty of Miamians you probably already knew, so we made it our mission to show you a side of them you Betty Cortina-Weiss Editor in Chief might not recognize—a deeply personal, human side. Just as important, we wanted to introduce you to new people. My biggest hope for every issue was always that, when you finished reading it, you’d feel you had learned something or met someone new. As we planned and produced, interviewed and photographed, I was endlessly humbled and inspired. Humbled to share Miami with such towering talent, inspired to work with the brilliant INDULGE crew who embodied the spirit of teamwork and embraced the idea that we never do anything but our very best. But now, after four of the most amazing, satisfying years any editor could wish for, I am stepping down as INDULGE’s editor. There’s no mysterious reason. It’s just time for me to do something new, to tell stories in a different way. Indeed, I find it rather appropriate such a change occurs with this issue; spring, after all, is the season of new beginnings. I leave the magazine in the wonderfully talented hands of Evan Benn. Readers of the Miami Herald already know him as the gifted food editor who transformed the paper’s culinary coverage. He’s sharp, savvy and energetic, and I am so excited to see him take INDULGE to new heights. Lastly, I thank you, our loyal readers. Thank you for embracing our message and our style, for always sending us words of encouragement and praise. Above all, thank you for having allowed me to make the magazine I’d always dreamed of in the city that embraces us both. ‘The Two-Character Play’

Tennessee Williams’ award-winning “The Two-Character Play” comes to Miami via Miami Theater Center for a MainStage run through April 24. RULES TO DYE BY Bridgette Hill, the celebrated lead colorist and salon creative director at Four Seasons Resort Palm Beach, had to change her whole approach to hair when she moved from Manhattan. “All the sun here causes color to oxidize, leaving it brassy, dry or simply washed-out,” she said. So while Hill paints up the hottest spring trends (think glamour-punk soft pastels and subtle metallic tones), she’s also a stickler for maintenance, offering INDULGE her top five tips. “Even if your hair looks healthy, treat it like damaged hair,” she said. “Gorgeous color is less about the shade than the canvas.” Rule No. 1: Don’t shampoo every day — just rinse between washes. No. 2: Everyone needs conditioner. If you have baby-fine hair, condition before you shampoo. No. 3: Beware of heated styling tools. Use no more than three times a week. After 25 years in business, Anna and Eddie Fuentes continue to curate some of the best South Florida-inspired home décor at their Victoria’s Armoire in Coral Gables.

T

heir business began with a bubble bath and an antique pine dresser. The year was 1991, and Eddie and Anna Fuentes were shopping for their first home. Fixated on a piece she had found but discouraged by its posh pricing, Anna slid into a warm bath to recover from a frustrating shopping day. An idea struck: “What if we took new furniture and made it look older?” With that novel notion, Anna and Eddie took over the second floor of his family’s architectural print shop in Coral Gables. “We literally started with 500 or 600 square feet on a second floor. Free rent from Dad, no windows, and six or seven pieces of furniture,” Anna said. In those pre-HGTV days, they hardly predicted that Victoria’s Armoire would be thriving, 25 years later, in that same space on Ponce. Victoria’s Armoire is much larger today. The owners converted a mammoth warehouse behind the shop into an impeccable showroom. Customers weave through displays of thoughtfully laid out, cream-color

linen sectionals and sandalwood hutches, teak wood coffee tables and beach-inspired art installations. Technically he didn’t pay me, but there were a lot of benefits. I think that’s where I developed my love for creating something.” GREATEST ACCOMPLISHMENT “Building Bristol Tower was a big accomplishment, because I was very young, and so was Miami, so it was really an uphill battle. I think finding out I got the financing was one of my best days on the job. But when I look back I still wonder how it happened, and how lucky I was that everything went smoothly.” ON MIAMI’S EVOLUTION “In Miami 30 years ago, there was nothing. If I wanted mozzarella I had to go grocery shopping in New York. But I saw the potential of the location. I always believed Miami would grow and become a major metropolis because of its proximity and appeal to Europe and Latin America. We just needed to build the infrastructure for people to come. Today, Miami is probably surpassing the quality of life in Los Angeles.” BUILDING PHILOSOPHY “Never overdo it. I never do more than one project at a time, two max. I pay a lot of attention to detail, and I keep my feet on the ground, because the most important thing is to build something that is functional for the people who live in the building. You can’t just create a piece of art and ignore the interior. You have to build a building from the inside out.” VITALS 55. Born in Milan, the eldest of two sons. His father owned an Italian industrial-materials empire while his mom mostly stayed at home after selling a lighting company. Well-traveled and internationally educated, Colombo went to boarding school in Lausanne, Switzerland, before becoming a University of Miami Hurricane in 1983. He graduated with a degree in Business Administration and began buying, selling and managing apartment buildings before founding CMC Group in 1986. Teri Williams The President and COO of Miami’s OneUnited Bank is laser-focused on fostering an economic renaissance in America’s urban cores.

P

ainted on a mural atop the beige wall of OneUnited Bank’s Miami headquarters, images of Mike Brown and Trayvon Martin echo the frustrations of a black community that is more galvanized than ever around economic empowerment. Nestled at a corner of Northwest 79th Street and 33rd Avenue, OneUnited’s goal is to foster financial literacy in hopes of stirring an economic renaissance in America’s urban communities, considered by many to be the final phase of the Civil Rights movement. It’s what drives Teri Williams, OneUnited’s president and chief operating officer. “The bank was actually created out of the Civil Rights movement, to help us garner our spending power and use it to benefit the community,” Williams said on a recent Friday evening inside her office. As head of the nation’s largest black-owned bank (OneUnited has an estimated $650 million in assets), Williams is succeeding in fostering her company’s mission. “We believed that one of the ways that we could achieve greater wealth was to re-circulate our dollars within our community,” Williams explained. “We’ve now realized part of that dream, but more is yet to come.” THE NEXT STEP Her children's book, I Got Bank! What My Granddad Taught Me About Money, seeks to spread that message in the classroom. And OneUnited's new "Yes! In Our Backyard" initiative has pledged $1 million to help firsttime homeowners in and around Liberty City. Williams speaks with a reassuring tone, one that compels an understanding of her customers’ struggles to attain financial stability. Many of OneUnited’s patrons come from urban enclaves of Miami as well as Boston and Los Angeles, where the bank has branches. She is most optimistic of Miami’s economic future, a city she calls “ahead of the curve” for urban entrepreneurs. A SWEET START Growing up poor in the predominantly black Booker Park section of Indiantown, Florida, Williams was the first in her family to attend college. Williams credits her great-grandmother’s sweets for her business acumen. It was in the matriarch’s candy store, juke joint and barbecue pit where Williams was inspired to make dollars make sense. The elderly, small-town entrepreneur sold penny candy in segregated Indiantown, where black and whites lived on opposite sides of the railroad tracks. She bought goods for her tiny store in bulk from whites who respected her business savvy. Williams worked the counter, selling candy to the kids who stormed the store after school. Two generations of Williams’ family survived off her greatgrandmother’s earnings. “She taught me how to make money and how to do it gracefully,” Williams said. THINKING ABOUT PURPOSE Upon entering Brown University on a scholarship, Williams experienced her first New England winter without a coat. “I couldn’t even relate to the black people at Brown,” she said. “I had zero money. It was such a cultural shock.” After Brown, Williams went on to earn an MBA from Harvard. These days, Williams relays her personal experiences to bolster better spending habits in the black community. She seeks to overcome a consumer mindset that is too focused on what’s tangible and what looks successful instead of focusing on building wealth. Williams said she attributes that predilection to “going without for so long.” “In college I was trying to look prosperous, but the white kids were wearing dirty sneakers and cutoff jeans, and their parents had millions of dollars while mine had none,” she remembered. “You should be thinking about the purpose and not the actual money.” TEXT BY PETER BAILEY / PHOTOGRAPHY BY ANDREW INNERARITY

Jose Luis Ferreira de Melo

The patriarch of a Miami development family is at home among his herd of elephants.

I

’m not quite sure why elephants caught my eye,” Jose Luis Ferreira de Melo said, smiling warmly. “I saw one that I liked and kept collecting them during my travels. Then friends from all over the world kept buying me elephants.” Today, more than 100 elephant figurines and other pieces of elephant art grace Melo’s collection, which he exhibits at home and in the office. One arrived in an enormous, life-size box from Italy. “I had no idea that a huge ceramic elephant was inside,” he said. Four elephants, carved in wood from his native Argentina, form the base of a coffee table in his living room. FAMILY FIRST Melo leads The Melo Group, the real estate development firm his father founded in 1948 in Buenos Aires and that Melo expanded to Miami in 2001. The Melo Group’s scores of high-end projects have added more than 5,000 residential units to South Florida. Melo, who is President, works with sons Carlos, an architect, and Martin, a CPA and general contractor, and daughter Laura, the group’s business manager. An elephant image is prominent in The Melo Group’s logo, and even eldest child Carlos acknowledges that the animal has been in the family longer than he has. “We were born with elephants,” he said. LOYAL AND COLLABORATIVE The Melo patriarch, who this year celebrates his 50th wedding anniversary, said he’s blessed to be married to a loyal partner. “Every man has a great woman by his side.” Melo tries to treat his employees like family, too, and has worked with some of the same construction crews for more than a decade. “Good people are like a herd of elephants, taking care of their own and collaborating,” he said. “You can tell a lot about society this way.” ALWAYS MOVING FORWARD Melo lives in an oceanfront condo and enjoys spending Sundays on the beach. Some weekends, he drives to visit his firm’s completed buildings, admiring them and checking on them like a doting father. He speaks about the intuition and mystique of elephants. And he compares the revered, wild animal to a herd that’s closer to home. “Intuition isn’t magic,” Melo said. “It’s a kind of intelligence. It’s the sum total of what you know. “The Melo herd is intelligent and compassionate, always moving forward with solid steps. In addition, we have resource coordinators and counselors, all of whom are licensed mental health therapists or social workers. And since many of our guests are children, we also have child therapists, who help children overcome the traumas they’re experiencing at this young age.”

Constance Collins A high-powered career in commercial real estate led to a lucrative turn as a developer. But the founder of Miami’s Lotus House gave up constructing condos and hotels to focus on building futures.

C

onstance Collins recalls being on site at a commercial real estate project in Coral Gables that her company at the time, Starwood Urban Investments, was developing. A homeless woman had been bathing in one of the property’s fountains. “She came every day, and eventually I started speaking with her and asked why she didn't go to a shelter,” Collins remembered. “She said she was fearful. She thought she'd be a target. So I researched options, and I learned that there really wasn't a safe haven for homeless women in this community.” In 2004, Collins left the real estate game and made Miami her permanent home, founding the Sundari Foundation to serve Miami’s homeless women and children. In March 2006, the Foundation opened Lotus House and welcomed its first 24 guests, who were cared for by a small group of passionate volunteers. Today, the Overtown shelter houses more than 250 women and children, and plans are set

to break ground in June on Lotus Village, a 1.3-acre, brand-new space that will nearly double the amount of people the organization can serve. Lotus House offers much more than a safe haven — it empowers disadvantaged women and victims of abuse to take back their lives. On Lotus House’s 10th anniversary, INDULGE talks with Collins about the plight of homeless women in Miami, her holistic approach to counseling and her ideas for the next decade. Why do homeless women and children need specialized care? “When you look at the facts that contribute to women being homeless, we know that it’s genderspecific. Their lives are fraught with violence and trauma. They are on the edges and the margins, and they haven’t had opportunities to obtain the education that is so critical to development of careers, often because of abuse or neglect they experienced as children. Once they’re homeless, they only experience more violence because they’re vulnerable among men at shelters and on the street. It’s a cycle, and there’s a reason it’s called

that. That kind of trauma requires an intensive wraparound system, a system that breaks this cycle.” What is behind Lotus House’s message of empowerment? “One of the things I've been conscious of is the way words have meaning. The word ‘guest’ implies that you're here because you want to be and because we want you to be here. The underlying premise is that this is an experience you have that's voluntary and by agreement. To me, that's empowering. And at Lotus House you hear a whole range of these kinds of references that remove the connotation of our guests being nothing more than a case or a file. We’re empowering our guests with knowledge and job training. We’re giving them the tools to be able to get on their feet.” What are some of the resources you provide to guests? “We focus on education here because we know knowledge is power. We offer GED programs, and we offer vocational programs in various fields. We also train our guests in retail and barista services with our Lotus House Thrift program,

Why is expansion necessary? “Right now we’re turning away more than 2,000 women a year, and our new facilities will allow us to house double our capacity. It will also provide a much more enhanced space for programming, like a computer library, an art-and-activities lab, a salon, a working classroom kitchen and an exercise room. I see affordable daycare services and healthcare services as viable resources for preventing homelessness, and the program at Lotus Village will serve both the shelter and the Overtown neighborhood with a daycare and health clinic. My goal in redevelopment and expansion is to bring our work to another level, in capacity and quality.” What motivates you? “Half of our staff members are alumni of the program, and they offer a unique perspective to inspire and motivate other women through their dedication and hard work. The McChug, a play on chefowner Michael Beltran’s “Chug” nickname, layers a fried egg, sliced cheese, and juniper- and cinnamon-spiced venison and pork sausages between pancake-like bread that’s infused with maple syrup. That’s reflected in the high-end coffees poured at their Coral Gables and new South Miami restaurants, and in their popular dish Emperor Nasi Goreng, which means fried rice in Indonesian. “It’s traditionally made with slow-cured pork, but ours has diced chicken and shrimp,” Nick said. For Grato, his new pasta-and-pizza restaurant on the mainland, Palm Beach chef Clay Conley (Buccan, Imoto and formerly of Azul at the Mandarin Oriental Miami) knew he needed to utilize his massive pizza oven during brunch. Thus, the breakfast pizza with prosciutto cotto was born. “I’ve always loved eggs on pizza,” Conley said, noting that his rich béchamel sauce serves a dual purpose. “It binds the blend of fontina and mozzarella cheeses and keeps their oils from pooling into a soggy mess.” High-gluten flour from Utah’s Central Milling further ensures a chewy crust. Hummus home run

Chef Daniel Ganem partners with the My Ceviche team to open Zuuk Mediterranean Kitchen in Brickell. He shares a recipe that he’s been perfecting for years.

D

aniel Ganem and Samuel Gorenstein were meant to work together, it seems. The chefs’ paths first crossed at Laurent Tourondel’s BLT Steak at the Betsy Hotel in South Beach. Gorenstein ran the kitchen, Ganem was his executive sous chef, and their cooking earned a 3½-star Miami Herald review. They eventually went their separate ways: Ganem to open Restaurant Michael Schwartz at the Raleigh and Gorenstein to help launch the My Ceviche mini-empire. But an opportunity to team up on a restaurant concept that’s near and dear to both of their hearts has brought them back together. The two, along with partner Roger Duarte, have opened Zuuk Mediterranean Kitchen in Brickell, next to My Ceviche at 1250 South Miami Avenue. Besides their passion

for cooking, Ganem and Gorenstein share a Middle Eastern background. Ganem’s grandfather was born in Jifna, near the West Bank of Israel, and the family emigrated to Chile and then the United States, while Gorenstein descends from Syrian Jews who eventually made their way to Colombia. In his grandmother’s kitchen, Ganem learned to cook Palestinian staples like stuffed grape leaves and zucchini filled with ground meat and spices. At Zuuk, they’re putting the flavors of their heritages on display, paired with the fresh-casual approach that My Ceviche does so well. Customers can start with ovenwarm pita or a bowl of rice, grains or greens, add spreads like hummus, tzatziki and baba ghanoush, then top off with spiced lamb, slow-roasted beef, baked falafel, grilled chicken or roasted seasonal vegetables. Sauces keep the customization going, and

Ganem and Gorenstein give a nod to their Latin roots by putting lime and cilantro in Zuuk’s tahini dressing. Ganem said he experimented with dozens of hummus methods before landing on the two — a classic and a red-pepper variation — that Zuuk serves. To achieve their hummus’ complex, creamy flavor, he and Gorenstein turn to Soom Tahini, a sesame paste from a Philadelphiabased, women-owned food company. “The flavors are the same as we tasted on our research trip to Israel,” Ganem said. “It made us both say, ‘Wow!’” Here, Ganem shares with INDULGE a personal favorite hummus recipe from his home kitchen, where he incorporates gently roasted carrots from Homestead’s Verde Farms. “Great carrots are in season during spring,” Ganem said. “Once you roast them, their sweetness shines and adds a nutty note to the hummus.”

Meet the chef Miami native DANIEL GANEM, 33, was born and raised here but spent time as a teenager living in Santiago, Chile, where his parents served as diplomats. In Santiago, he worked after school at local restaurants and bakeries, sparking a love of food that would propel him to culinary school, around the world and eventually back in Miami. He studied at Le Cordon Bleu in Orlando, externing at Norman Van Aken’s acclaimed Norman’s at the Ritz-Carlton. Ganem went on to apprentice for Michael Mina in San Francisco, work at hotels in Panama and Bolivia, and train under Michelin-starred chefs in Spain’s Basque region before returning home to Miami. He helped open Mina’s Bourbon Steak at the Turnberry in Aventura. Ganem later earned a 3½-star review for his cooking at Restaurant Michael Schwartz, which he left in 2014 to lead the kitchen at BLT Steak. He has been working since 2015 on opening Zuuk Mediterranean Kitchen, where he is executive chef and cofounder. Zuuk is a fast-casual spot that opened last month in Brickell.

CARROT HUMMUS WITH TAHINI SAUCE Serves 6 as an appetizer

FOR HUMMUS 4 cloves garlic, peeled ½ cup olive oil 2 carrots, peeled and roasted 2 cups garbanzo beans, cooked or canned and rinsed ½ cup Soom brand tahini ¼ cup fresh lemon juice ¼ cup cold water Kosher salt, to taste FOR TAHINI SAUCE ½ cup Soom brand tahini 3 tablespoons fresh lemon juice ¼ cup cold water Kosher salt, to taste 1. Place garlic cloves in a small pot with ¼ cup of olive oil. Warm over low heat until garlic is tender, about 45 minutes. 2. Remove garlic from oil and add to food processor along with roasted carrots; process until smooth. Add garbanzo beans to food processor; while processor is running, add tahini, lemon juice, water and remaining ¼ cup olive oil. Process hummus until smooth, and season to taste with kosher salt. 3. To make tahini sauce, whisk together tahini, lemon juice and water in a bowl until smooth and homogeneous. Season to taste with kosher salt. 4. Plate the hummus by spooning it into a bowl, leaving a small well in the center. Drizzle tahini sauce in the center well. Garnish, if desired, with roasted baby carrots and fresh-picked cilantro and mint.


Carrots from Homestead's Verde Farms do double duty in this hummus. Roasted carrots get pureed with chickpeas for a sweet smoothness, and baby carrots top off the dip for a textural crunch.

THE COLA Fresh from a rum-research trip to Panama, Steven Minor of Mandarin Oriental Miami’s MO Bar spills five ways to enjoy his current spirit of choice — no rum & Cokes or frozen daiquiris need apply.

love rum,” Miami native Steven Minor told me as we walked through a sugarcane field in Panama. The cocktail creator for MO Bar at the Mandarin Oriental Miami, Minor was researching the spirit and trying his hand at custom barrel blending for a project MO Bar is unveiling in May. “Rum is the tropical spirit, and it is much more versatile than many believe,” he said. “If you got to know rum through a frozen daiquiri, you don’t really know rum at all.” In Miami, Minor’s customers take in splendid vistas of Biscayne Bay as he stirs, shakes and garnishes, like an alchemist creating gold. Heighten the experience by asking Minor to pour you one of these five drinks that he picked to showcase rum’s hint of sweetness, myriad flavors and seductive texture. 1. HEMINGWAY DAIQUIRI “Clément Rhum Agricole Canne Bleu from Martinique is my favorite un-aged agricole-style rum,”

Minor said, describing rums made directly from sugarcane rather than molasses. “The raw cane notes mingle beautifully with the maraschino in this drink,” a twist on the classic lime daiquiri that also includes grapefruit. 2. MOJITO “A cool technique used to make Bacardi’s Facundo NEO rum is to charcoal-filter an aged rum,” so the spirit is stripped of color but not its barrel-aged richness. “Its light coconut, vanilla and banana overtones pair well with crisp mint, effervescent soda and acidic lime.” 3. MANHATTAN “I love how rum can be substituted in classic cocktails that were traditionally bourbon and rye whiskey-based.” See Minor’s recipe, below. 4. OLD FASHIONED “As an ode to Havana, I created an Old Fashioned with a rum spin,

NEAT “One of my favorite rums to drink neat is Ron Abuelo Centuria, a blend of rums aged solera-style up to 30 years in Jack Daniel’s oak casks. It has exquisite notes of toffee, banana, caramel and pepper, and it is ideal for a pairing with a nice robusto cigar.” Minor visited the Ron Abuelo distillery in Panama, touring the warehouse with Director of Aging Rogelio Castillo before settling on one cask. “I picked my favorite barrel, and it will be ready for debut in late May, a MO Bar custom 12-year-old release. SoFi

The southernmost tip of Miami Beach, where the Atlantic Ocean meets Biscayne Bay, wasn’t always so picture-perfect. Back in the early 1990s, even as renaissance fever gripped the rest of South Beach, the area south of Fifth Street (SoFi to those in the know) still felt seedy. It seemed like a danger-fraught adventure trying to get to the one beacon amid the decay: the legendary Joe’s Stone Crab. But 103 years after it opened, Joe’s remains a destination for the city’s power brokers and visitors alike. And the wealthy, vibrant neighborhood that materialized around it has shed its seediness while retaining a low-key, beachy vibe.

Dr. Kimberly Feinberg, resident anesthesiologist at Mount Sinai Medical Center and a University of Miami Miller School of Medicine graduate, has lived in SoFi for more than a decade, watching the neighborhood go from posh to, well, ultraposh. But to Feinberg and her wife, a psychoanalyst with a practice in Coral Gables, SoFi’s greatest allure is its small-town vibe, perfect for the couple as they raise their daughter. Their condo is steps away from South Pointe Park and the picturesque swath of the Atlantic by Second Street that’s known by locals as the spot for surfing. Perhaps no one loves walking around SoFi more than the family pooch, a dachshund named Sigmund. Feinberg, who was born in New York and grew up there and in Boca Raton, said SoFi has a familiarity that keeps her anchored there. “We love that it’s urban, and that we can walk to most things. But as upscale as South of Fifth can be, it’s very family-friendly and also very Cheers-y: Just about everywhere you go, everybody knows your name.”

Of course, there’s Prime 112, but I prefer Prime Italian, across the street. It isn’t quite as over-the-top as Prime 112, where it’s impossible to get a table and huge limos pull up and 25 people spill out, all dressed to go clubbing after dinner. But Prime Italian still draws the ballers and celebrities and that whole happening crowd. The food is quite good, and they serve the same steaks as they do at Prime 112. A

lmost everything about the new Langford Hotel, which made its grand debut in late March at 121 Southeast First Street, reminds visitors of the restored building’s storied history. The one-time home of Miami National Bank still bears its original Beaux Arts-style façade, a remnant of its 1925 opening. The bank’s name remains visible on the exterior, along with carvings of bald eagles and coins atop stone columns. The check-in desk resembles a bank teller’s counter. Look beyond the bank relics, and you’ll find original crown molding on the lobby ceiling and marble flanking the elevators. And the flashy gold mailbox in the lobby? It’s also from the original structure and welcomes guests to send specialty postcards (check your room!) the old-fashioned way.

Jai alai baskets hang in the second-floor Sky Lobby at the new Langford Hotel, a nod to old-school Miami. Rooms feature herringbone wood flooring and antique-style trunks and dressers.

the life DESIGN TOUCHES Rooms feature antique-style trunks and valets, as well as headboards made to look like 1950 Cadillac seats. White herringbone floors lend a classy, 1920s feel. The Sky Lobby on the second floor, with a coffee bar, concierge and library, is a nod to old-school Miami, with replicas of Pan American airplane propellers and hanging jai alai baskets. Designers Bloom Miami made the space feel like it had always been a hotel. In reality, it housed two banks before being converted to offices in the late 1930s. Renamed for its builder, George Langford, the landmark property has been on the National Register of Historic Places since 1989. The building had been abandoned and exposed to the elements for more than a decade when Daniel Peña Giraldi bought the site for $2.7 million in 2013. “It’s a lot easier to build a new building than to restore a 100-year-old building,” Giraldi said, acknowledging construction and permitting delays. “This project is a labor of love. There aren’t many historic buildings in Miami, and I’m a firm believer that a city like Miami needs a strong downtown.” PUBBELLY, TOO At $259 a night, the Langford’s room rates satisfy a mid-market niche in the area, Giraldi said. He predicts a mix of workweek business travelers, drawn to the convenience of nearby office towers and an on-site meeting space, and weekend tourists. Of course, locals already have been itching to get in to PB Station, the first mainland Miami restaurant from Miami Beach’s Pubbelly Restaurant Group, located off the hotel’s lobby. PB Station, a modern American restaurant that features new dishes from the Pubbelly Boys as well as favorites from their mourned PB Steak in Miami Beach, operates in tandem with Pawn Broker, the hotel’s rooftop lounge and terrace with craft cocktails and small bites. “What we are trying to do is bring downtown back,” Giraldi said, “and this is going to be one of the first places to start with that.” TEXT BY LAUREN COMANDER / PHOTOGRAPHY BY FELIPE CUEVAS

Once a stop en route to the Galápagos Islands, Quito and the rest of mainland Ecuador are heating up.

H

umble Ecuador is roughly the size of Nevada but boasts more ecodiversity than destinations twice its size: Deserts, snow-capped peaks, and tropical beaches and rainforests are all within a few hours by car. Since its oil economy hit a downturn, Ecuador is putting its best foot forward in tourism and hospitality. INDULGE explores three jumping-off points to help guide your next South American jaunt. QUITO Alleviate altitude sickness in Ecuador’s capital with a strong cup of coca tea when checking in to Casa Gangotena. Named for the family that built its Beaux Arts mansion on Plaza San Francisco, the boutique hotel combines luxury and sense of place. Décor enthusiasts marvel at ornate interiors, which took 500 workers five years to restore. An orchid-strewn solarium for afternoon tea and a formal garden — a rare refuge from Quito’s traffic-choked streets — feel like sets in a Merchant Ivory period film. Still, guests are encouraged to learn about local

customs, with guided help on eating exotic fruits and chef demonstrations on brewing agua de frescos, a traditional hangover cure made with local herbs and flowers. Book Live Like a Local day tours and energy-balancing treatments by a limpiadora, an Andean healer, from the nearby market. Thirty-one rooms hold unique charms. Three to ask for when booking: 102, a former dining room with hunting murals; 204, with a prime view of the square; and 208, in the rotunda for more windows and gilded moldings. Big breakfasts at Cédron, the hotel’s restaurant, fuel guests until dinner. Take a nightcap — the clubby Brit bar concocts an excellent canelazo, the country’s official drink of heated, cinnamonspiced aguardiente and naranjilla fruit — to the rooftop terrace before falling asleep to the lullaby of church bells. No time for museums? Stay amid gobs of religious and European art, including an 18th century Italian tapestry, at Hotel Casa San Marcos, a private colonial home that goes over well with bohemians, historians and anyone who loved the game Clue as a kid. The original design by José Jaime Ortiz, a Spanish pioneer who left his mark on Quito’s convents and churches, has been altered through the ages for a bonus crash course in architecture. Of six ample guest rooms, two face El Panecillo hill, topped with a Madonna statue to sightsee from bed. Jan Niedrau and Michelle Svoboda, a couple who met at Turnberry Isle Resort in Aventura, began reinventing Quito’s culinary landscape a decade ago with haute gastronomy restaurant Zazu. Their fifth venture, Zfood, celebrates simple pleasures from the country’s coast and indigenous people. Servers roll ceviche carts to tables for customized orders (just like the guacamole trend stateside) to eat on enamel-glazed tin dishware with accompaniments from popcorn to ají, a spicy sauce present at every Ecuadorian meal. It’s also “z” spot to sample local seafood like lionfish and prawns, a major export, in Jack Daniels- and chipotle-infused butter.

Chez Jérôme’s chef-owner, a Frenchman from the Basque country who craved good bread and croissants, expanded next door with Hay Pan. A coffee snob, too, he sources beans from a single, small grower in Ecuador. Native women work the open-air stand with a few tables to bite into roast beef and ratatouille sandwiches on fresh-baked baguettes. A young entrepreneur who attended the Culinary Institute of America transformed his grandparents’ steel wire factory into Laboratorio for rotating pop-ups. His inaugural banh mi menu, featuring braised oxtail and homemade pâtés, is launching as a bona fide sanduchería in the nearby La Floresta neighborhood; the artisanal concept also houses a brewery and ice cream parlor. A Danish toque pops up at Laboratorio in April; spread the word about the opportunity to your favorite Miami chefs. A group of art, design and antique dealers founded Galería Artik in a two-story Art Deco abode. Each curates a section, and their eclectic tastes are evident in pieces like a portable secretary with Moorish wood inlay dating to colonial times and contemporary chandeliers by U.K. brand Tom Dixon. Ecuadorian artist Araceli Gilbert’s Mod prints and her Swedish husband Rolf Blomberg’s blackand-white photographs hang in the gallery.

Quito’s heavily Catholic heritage really sets in with the number of churches, enough to visit a different congregation nearly every week for a year. There are centuries-old convents, too, like Museo del Carmen Alto, where nuns shoot hoops and make organic sweets and skin-care products to sell in the gift shop between prayers. Stroll the quiet cloister’s stenciled halls and chapels for a glimpse into their order’s past. Or follow the sound to El Carpazo, an annual music festival with Argentinean and Chilean headliners on April 23. RAINFOREST A nature-loving philanthropist rescued the 3,200-acre Mashpi Rainforest Biodiversity Reserve, situated about a three-and-a-half-hour drive northwest of Quito, from loggers. Cloud mists, average temperatures in the low 70s and large swaths of virgin forest create an ideal habitat for a quarter of Ecuador’s 1,600 bird species — not to mention travelers who aren’t fond of humidity.

Meet a new friend on an excursion to the Galápagos. For total comfort, the philanthropist constructed the all-inclusive Mashpi Lodge. Resembling a posh, glass-and-steel birdhouse, its 22 suites and rooms, full-service restaurant and bar, and newly remodeled spa were an incredible engineering feat given the remoteness and steep inclines. Native guides who grew up with machetes in hand lead excursions as mindblowing as pedaling a sky bike to observe orchids, bromeliads and wildlife in the treetops up close; a gondola is in the works. Swim in waterfall pools and spot exotic birds, including several toucans and tanagers, and at least 26 types of hummingbirds that whizz by like jewel-toned rockets. Toast your achievements with a Mashpi mojito of Ecuadorian gin, Midori and yerbabuena as green as the tree frogs. Instead of turning on TV like back home, watch a live insect drama unfold outside the bar’s enormous windows, as surreal moths flutter about. HIGHLANDS While New Yorkers and Miamians have the Hamptons and Florida Keys, Quito residents head to the Andean Highlands for fresh air and recreation. Many of the Spanish conquistadors’ grand haciendas, Ecuador’s plantations, remain

in varying degrees of upkeep. A British expat refashioned Hacienda Cusin as a 40-room resort with garden cottages, a converted 19th-century farmhouse and more accommodations in a new section modeled after a historic monastery. After a prix-fixe dinner, return to a roaring fire set by attendants and snuggle under blankets hand-loomed by local weavers warmed with hot water bottles. Foxgloves compete with air plants and succulents in walled English gardens, displaying the owner’s British roots and Ecuadorian surroundings. Guests can harvest a salad from garden beds outside the kitchen and take cooking classes to learn to make locro, the region’s signature potato soup, and ice cream hand-churned in a huge copper paila. Feeling extra adventurous? Get outfitted at the on-site stable for a two-day ride on horseback to its sister resort. To see more of the area, it helps to hire an insider. Guides like Enrique Portilla know the best hiking trails and weaver ateliers and make sure wares are authentic rather than Chinese imports at the weekly mega-market in Otavalo. As our city’s glimmering performing arts center celebrates its 10th anniversary, we visit the treasured Miami home of Adrienne Arsht, the woman whose name graces the building and whose philanthropy helped spark a Magic City cultural revival.

t had been a while since Adrienne Arsht spent time in the library of her Miami home, a while since she’d taken a close look at her beloved book collection there. So when she recently stood in front of her pristinely organized shelves, her eyes excitedly darting from one title to the next, she stumbled on a particularly special tome. Opening the cover slowly, she discovered a treasure inside: a handwritten note from her late mother, quoting the famed feminist American poet Edna St. Vincent Millay. “My candle burns at both ends; It will not last the night; But ah, my foes, and oh, my friends — It gives a lovely light!” Moved as much by the serendipity of the moment as she was by the weight of the words, Arsht read the poem aloud and a gentle, nostalgic smile spread across her face. “That,” she said, “is me.” Art. It’s where Arsht so frequently finds herself. Nowhere is that more true than in Miami, whose recent cultural renaissance was sparked, many believe, by a singular philanthropic act Arsht performed eight years ago, when she gifted $30 million to a then-struggling performing arts center. The donation not only secured her name on the glimmering downtown building, it helped turn the center into one of the world’s most highly regarded stages, catapulted the Magic City into serious artistic circles, and cemented a spot for Arsht in a new stratosphere of society and philanthropy. She has since given away more than $70 million to non-profits around the country, and now lives between Washington, DC, New York and Miami, the better to spread her influence around the causes she holds dear to her heart. Yes, she famously cares about art, but she’s also interested in foreign and domestic policy, ethics, education and healthcare in the Hispanic community and more. (Aside from sitting on the boards for the Kennedy Center in Washington, where she funded a musical theatre program, and the Lincoln Center in New York, where she funded the Alice Tully Stage, she has also joined the Center for the Study of the Presidency and Congress, the Center for National Policy and the Atlantic Council, where she also funded a Latin American initiative.) “I’m told that I am a philanthropist, but I don’t think of myself as one,” she said, sitting in her Vizcaya-adjacent home, the place where America’s who’s who often visit when they’re in Miami. “I just think I have passion for things and I support them. There are consultants who help people give their money away, but that’s not for me. I know what I believe in. I know what matters to me, and I do what I can financially to advance those projects. I tell my two investment advisors to keep taking risks and to keep making money because I want to give more away.” It is something she does even when no one is looking, when her name goes unspoken. Case in point: for the last five years, the Arsht Center has been the recipient of an annual $1 million anonymous gift. It was only recently revealed that Arsht was the person quietly making the donation. Why break the silence now? “Because ultimately I want to inspire others to give what they can too.” Her timing is no coincidence either. This year the Arsht Center celebrates its 10th anniversary — they’re honoring her at its official gala on April 21 — and Arsht herself celebrates the 20th anniversary of having arrived in Miami. She came in 1996 to run TotalBank, a small chain of banks she and her late husband, Mike Feldman, owned — and said she instantly fell in love with the city’s cultural diversity, its internationalism and energy. “When I first came down, I’d go back up to Washington to talk to my friends there and I’d rave and say ‘Miami is the city of the future!” she recalled. “It’s the leading example of what the rest of America should be.” Now, as she prepares to commemorate all that’s happened since those early days, Arsht invited us into her home to talk life, legacy and what she loves most about her historic Magic City home.

It would be hard not to begin by asking you about this magnificent house. I actually built it, I didn’t buy it. I bought the land in 1996 and we spent about a year building. I moved in during the summer of 1997. The only thing that is original is the swimming pool, which was built in 1920 and is very historic. Is there a room you spend most of your time in? Not really. That’s never been true for any house I’ve lived in. It depends on what I’m doing. On many days, I will sit at the island in the kitchen just working, on my computer and on my phone. What do you love most about the house today? The privacy and tranquility, and the location. There’s something magical about the land it’s on. I feel so much Florida and American history right here. Next door is the William Jennings Bryan house and this land itself was once Tequesta Indian land, which is why it’s called Indian Springs. There is just a powerful sense of America here, yet it’s a part of our history that often gets forgotten. With all the notable names that have walked through your doors, you’ve obviously witnessed some highly memorable moments here. But the ones that are most important to you are the more personal occasions. Yes, like a birthday party I had with a Mardi Gras theme. That was fun! And another one I hosted for a friend whose father had passed just a couple of months before. He wasn’t planning on celebrating his birthday, but I told him he couldn’t just let it go by, that we would do something here. His whole family came and we had a barbecue and there were kids in the pool. It was a very special day. When you lived here, you were known for hosting the best breakfasts in town and you would famously connect people — then offer up the ultimate party favor: the names and contacts of everyone who attended. Other hosts might have guarded that list. Well, I just like to follow the golden rule. Do or say what you would want someone to say or do for you. If I went to an event and met someone who I thought could be helpful to me, who was a kindred spirit, I’d want to know how to get in contact with that person. So I want to help make sure that happens. I really enjoy bringing people together. And sometimes you do it in more random ways. Yes. Not long ago, after I had thrown out the first pitch at a game at Marlins Stadium, I was standing in front of the cabinet where they keep the bobblehead dolls of the players. This little boy, about 11 years old, came up to me and said, “Are you the building?” I thought it was the cutest thing ever! We’ve become friends. He’s in high school now, and wants to study Jewish klezmer music. It turns out one of the champions of klezmer music is Itzhak Perlman, who’s coming to the Arsht Center to perform in a few weeks. So I made sure the boy, along with his two grandfathers, could attend the performance. They’ll sit in my box, which will also be seating Julio Frenk, the new president of the University of Miami, and Shelton Berg, Dean of UM’s music school. Now that’s putting together an experience for everyone: for the new university president, for the head of the music program and for the kid who wants to go to music school!

It’s the Arsht Center’s 10th anniversary. How did the decision to make such a transformational gift to them happen? I had been involved with the performing arts center since I’d moved to town so I knew they were in trouble. One day, while I was traveling in Madrid, I just woke up and thought about it. I called the chairman of the center’s foundation and asked, “What will it take to save it?” He said “$30 million.” And I said “Okay, let’s do it.” Just a few weeks later it was done. You’ve long had an emotional connection with musical theater, right? Yes, though it’s hard to remember exactly when I saw what. “Oklahoma!” is one of the first things I remember listening to in our living room as a child. There’s a song in it called “Poor Jud is Dead” and, once, when it came on, my father lay down on the floor and pretended to be Jud. I apparently burst out in tears, sobbing. For years, when someone played the Oklahoma! album we’d have to lift the needle and skip that song. And for a long time it was difficult for you to listen to classical music as well. My sister committed suicide when she was 29. Classical music was something she and I had shared for a long time. So for years, I couldn’t sit alone and listen to it. I think of this music as exquisitely beautiful and it

was hard for me to understand how much pain my sister must have been in that she decided life was not worth living, that she was willing to give up something as magnificent as our music. Somewhere along the way the music seeped back into my life because today it’s no longer a problem for me. What do you hope people learn from you about giving in general? That they should pick something about which they’re passionate, and find a way to benefit it. Make a difference. Improve something. Help it along. And if you don’t have money to give, try giving time. How do you think people perceive you? You would have to ask them. How do you perceive yourself? As the little girl who grew up in Wilmington.


Do you think you are successful? Success is a word I don’t use. Success is what other people say about you. You embody something that they would like you to be so you’re “a success.” I don’t see it like that. The only success I think of is if I manage to lose five pounds. Everything else to me is waking up and putting one foot in front of the other. Every day. What about the fact that your name is on a building. Isn’t that important? Yes, because when you put your name on something it communicates to others that this is something you believe in. And I believe in everything that building represents. I understand you carry with you a copy of the U.S. Constitution. Why? I have it in my purse with me at all times. I don’t necessarily have a favorite line in it. I just love the fact that it exists. That it demonstrates how we are

a country of laws. When we change presidents, it is a civilized experience. And it reminds me of how grateful I am to have been born an American. For the generation of people who might not know the woman behind the name on the building, and for future generations, what do you want them to know about the Adrienne Arsht name? That I cared deeply about this community. That in my own way I was one of the women who helped define Miami. What do you hope for our city a decade or two from now? It’s hard for me to think that far down the road. Not because I don’t think I’ll be here, but because change occurs so fast now. Fifteen years from now is almost incomprehensible to me. The Arsht Center has been in existence for only 10 years and look at how much the city has changed in just those few years. It would have been hard to imagine that. Could anybody have told you we would be what we are today? ☐

Miami’s busiest foodie, Lee Schrager moves into a stately Coral Gables home, where timeless elegance blends deliciously with modern art. He invites us in for a tour and a tasty morning meal. TEXT BY BETTY CORTINA-WEISS

The French Country Village section of Coral Gables is steeped in history, originally conceived in the 1920s by the city’s legendary developer, George Merrick, who wanted to create architectural variety in the city he was building. The picturesque homes that dot the area’s graceful, tree-canopied streets are inspired by rustic French farmhouses and romantic villas, a three-block sliver of provincial charm surrounded by urban sprawl. It is here that, for years, Lee Schrager, the famed founder of the South Beach Wine & Food Festival and Vice President of Corporate Communications and National Events for Southern Wine & Spirits, dreamed of living. “I used to drive by,” he recalled, “and I always thought that one day I’d buy one of these houses.” Then, in the fall of 2014, Schrager, also a prolific cookbook author, decided it was time to write his next chapter, time to make the dream come true: so he sold the modern, waterfront Bay Point home where he’d lived for two decades with his partner, a doctor, and bought a stately, French Village two-story built nearly a century ago. “It wasn’t even on the market at the time,” Schrager said with a laugh. “So we had our lawyers contact the owners to see if they’d be open to selling — and they were.” And while the home was “toothbrush ready,” Schrager still spent the better part of a year making adjustments and improvements: a new pool went in the ground, a sumptuous pool-house bathroom was built up. The yard — almost as wide as the house itself — was fenced in and, naturally, an outdoor kitchen was installed. Inside, the design and decor blended effortless chic with casual comfort, thanks to help from Schrager’s interior designer Michael Christiano, with whom he collaborated on the entire house.

The stylish touches, big and small, perfected what’s already become an idyllic backdrop for the many scrumptious festivities Schrager hosts for friends and family. Among his favorite meals to whip up for his crowds: breakfast. In fact, his newest cookbook — out on April 5 — is titled “America’s Best Breakfasts: Favorite Local Recipes From Coast to Coast.” Writing the tome had him traversing across the country taste-testing everything from eggs Benedict to biscuits and breakfast burritos. It’s not easy for him to pick a favorite — “there are so many!” — but his list tops off with one that’s close to the heart: his mother’s scramble of eggs, bacon, onions, peppers and potatoes. “I love breakfast because it’s the meal you can actually have at any time during the day,” he said. And while he gathered recipes from some of America’s most beloved chefs, home cooks and restaurants, local Miami eateries have their due place in the book too—from local celebrity chef Ingrid Hoffman’s hearty yuca buns to the decadent quiche Lorraine from the Buena Vista Deli, to which Schrager “swears allegiance above all others.” To celebrate both the book and the completion of his home, Schrager invited INDULGE in for a tour. Ever the host, he greeted us with an impressive homemade spread and even shared his recipes. The deliciousness starts on the next page.

Schrager prepared a delicious morning spread worthy of his grand yard and elegant pool area. Homemade granola, fresh croissants and freshly brewed coffee — it’s all part of the Miami foodie’s favorite meal of the day.

Schrager’s new home may have been move-in ready, but he and his partner — who share the house with “The Browns,” also known as Charlie, a 4-year-old English sheep dog, and Stanley, a 1-year-old French briard — wanted to put their personal stamp on it. While the structure of the existing home was not altered, they did have a pool installed and they built a beautiful, coastal-inspired pool-house bathroom. Since the new home is larger than the one they lived in before, some new furniture was a must, but much of what appoints the house today has history, having been with Schrager for many years. The long, rectangular sunroom at the front of the house — where he spends much of his scarce downtime — is home to a banquette that had been custom made for his former abode but that “fit perfectly in this space. It was like it was meant to be there! I took it as a sign.” The formal dining room, too, houses a decade-old, custom-made, granite-topped round table, a certain witness to countless meals and fêtes Schrager has hosted. Hanging above the table is an antique lamp he “bought in Paris more than 20 years ago. It’s an antique and I had to have it wired and I had the parchment shades made as well.” Off to the side stands a stunning, carved armoire — also a purchase from Paris — that for years served as a closet in Schrager’s bedroom. “When we moved here, we had it repainted in the same color as the dining room walls, fit it with shelves so it could hold crystal and now it goes perfectly.”

After two decades of living in the same Bay Point house, when it came time to decide what was kept and what was left behind, “I didn’t want to be sorry about giving something away without being sure. I’m in love with everything I’ve ever bought.” So decorating the new space became an exercise in mixing old and new. Case in point: the living room. The couch, coffee table and rug are all new, but are flanked by swivel chairs Schrager had reupholstered and raised by four inches. The white Barcelona chairs once graced the sunroom of the old house. “We didn’t bring with us anything we didn’t love. We have so many pieces that have special meaning.”



Making pizza at home is elevated to an art form in Schrager’s yard, where he keeps an outdoor wood-burning oven he had shipped in from Italy. “It weighed 4,000 pounds!” he said. “But it’s amazing!” A small dining nook flanks the home’s open kitchen and provides a surface for weekday morning breakfasts.

SUMMER GRANOLA From Sofra, Cambridge, MA Makes 6 cups

Cooking spray 2¾ cups old-fashioned rolled oats 1½ cups unsweetened coconut flakes ½ cup golden flax seeds 1½ cups sunflower seeds cup demerara sugar, such as Sugar in the Raw ½ teaspoon fleur de sel or other flaky sea salt 3 tablespoons unsalted butter cup orange blossom honey or other mild-flavored honey ¼ cup coconut oil 1½ cups dried blueberries 1. Preheat the oven to 300°F. Line a large rimmed baking sheet with parchment paper and coat the parchment with cooking spray. Combine the oats, coconut flakes, flax seeds, sunflower seeds, sugar and salt in a large bowl.

In a medium saucepan, cook the butter over low heat until it starts to smell nutty and turn brown, 3 to 4 minutes (watch closely, as it can burn quickly). Remove the butter from the heat, add the honey and coconut oil, whisk until smooth and pour over the oat mixture. Toss the oats with a rubber spatula to coat completely. 2. Spread the mixture in an even layer on the prepared baking sheet. Bake for 10 minutes, stir to break up the granola, then continue baking until dark golden and fragrant (the granola will get crispy once it cools), an additional 15 to 20 minutes. Cool completely, stirring occasionally to prevent the granola from sticking together. Transfer to a large bowl, add the dried blueberries and toss. The granola will keep, stored in an airtight container, for 3 to 4 weeks.

FOR THE CRUST 2 cups all-purpose flour, plus more for the work surface 2 tablespoons sugar ½ teaspoon kosher salt 10 tablespoons cold unsalted butter, cubed, plus more for greasing the dish cup ice water

2. On a lightly floured work surface, roll the dough into a 15-inch round using a large, floured rolling pin. Roll the dough over the rolling pin, then unroll it over the dish and adjust to fit. Trim the dough, leaving a 1-inch overhang. Fold the excess dough underneath, pressing to seal the 2 layers together. Using your fingers, crimp every inch around the perimeter. Refrigerate the dish for 30 minutes.

FOR THE FILLING 2½ cups shredded Gruyère cheese 2 cups finely diced thick-cut ham 4 thin slices of prosciutto di Parma, chopped 4 large eggs 2 cups heavy cream ½ cup whole milk ½ teaspoon freshly ground black pepper ¼ teaspoon grated nutmeg ¾ cup shredded mozzarella cheese 1. Make the crust: In a food processor, combine the flour, sugar and salt. Add the butter and pulse until the crust resembles coarse sand, 10 to 15 pulses. Add the water and pulse just until the dough comes together. Gather the

Sprinkle the mozzarella cheese over the top. Bake, rotating midway through cooking, until light golden and the center sets, but is still soft, 80 to 90 minutes. Transfer to a rack for 10 minutes, cut into 6 wedges and serve. ☐
