he reminds me of a young Natalia Vodianova.” That was INDULGE style editor Claudia Miyar’s reaction as we scanned the portfolio photos of Belu Bergagna, the extraordinary model who graces the cover of our annual Fashion Issue. She was right — both Belu and Vodianova, the Russian supermodel-cum-philanthropist, have a natural beauty that radiates sophistication and confidence in front of the camera. But Belu, who is from Argentina and now calls South Beach home, has the added benefit of being a real Miamian. She played that role perfectly for our 12-page fashion spread (p. 76), which photographer Felipe Cuevas shot on location at the massive new Brickell City Centre’s Reach condominium and East hotel. Narciso Rodriguez: An Exercise in Minimalism Known for his clean, crisp lines, Narciso Rodriguez rose to international fame 20 years ago after designing close friend Carolyn Bessette’s wedding gown. Since then, Rodriguez’s talent and innovation have made him a force in American fashion. Co-curated by Elle magazine creative director Alex Gonzalez, the show — the first couture exhibit for the Frost Art Museum — features more than 50 of Rodriguez’s designs as well as works of art that complement, and have inspired, the designer’s aesthetic. The Festival III Points

The fourth annual music, art and technology fest takes over Mana Wynwood for three days this month. The new Pool Lab Show on Miracle Mile in Coral Gables gives Spanish expat Beatriz Carrillo a canvas to display her European designer discoveries.

E

verything about Pool Lab Show exudes European style. Its garments, which hang in seamless waves of patterns and colors, come from the minds and hands of mostly Spanish as well as French and Italian designers. Its owner, the charismatically poised Beatriz Carrillo, is from Spain. Even its location, Coral Gables, is inherently European, with its Mediterranean revival architecture and pedestrian-friendly streets. “Coral Gables is a very local area, and I wanted to have local customers and give them the kind of product that you can’t find anywhere else here,” Carrillo said. “Coral Gables is the most similar to a European city. The integration of a walkable community around Miracle Mile. It’s a European neighborhood.” Inside Pool Lab Show — the name is an abbreviation of sorts for “group (pool) experimentation (lab) showroom (show)” — Carrillo has stocked the store with pieces from a handful of high-end European designers, namely six from Spain that she sells exclusively. Examples include Cortana and Juan Vidal, both revered by the country’s jet set and its fashionable monarch, Queen Letizia Ortiz Rocasolano. The focus here is on brands with an unmistakably feminine appeal. Carrillo said her clientele transcends nationalities, yet all share a similar

affinity for items that are graceful but not frilly, elegant but not fussy. “My customers are curious and are always ahead of fashion a bit,” she said. Pool Lab Show’s clients tend to be women with a clear vision of who they are and what they want — much like Carrillo. She spent 10 months rounding up the designers she wanted to highlight at Pool Lab Show, a concept she hopes to replicate from its Coral Gables roots to as many markets as she can. “In Spain we’ve always had this problem: We don’t know how to sell ourselves,” Carrillo said. “I don’t know why. And now, thanks to Zara, ‘made in Spain’ is very in fashion. It’s our opportunity to show everyone here that we have great designers in Spain.” Carrillo’s clean and artful Pool Lab Show perfectly parallels that simple, chic, effortless aesthetic that we associate with her cosmopolitan continent across the Atlantic. The eldest son in an immigrant Chinese family, Ng spent his childhood learning the restaurant business at his family’s shop, Canton Chinese, one of South Florida’s most-beloved Chinese restaurants. He graduated from Palmetto High and studied hotel management at Cornell University, where he met his wife, Christina. After graduation, Ng took a post at the Miami office of Ernst & Young, balancing a long-distance relationship with Christina while she studied law in California. He left corporate life and opened a burrito-and-smoothie shop in South Miami. A steep learning curve inspired a search for a new direction. Ng reinvented his struggling restaurant with a radical new sushi menu in 2000, calling it Sushi Maki. Precisely cut fish on rice, consistently excellent maki rolls and other fresh flavors have catapulted the brand. Ng’s business acumen has led to several high-profile partnerships, paving the way for Sushi Maki’s presence at Miami International Airport, AmericanAirlines Arena, Whole Foods, University of Miami and Baptist Health. In addition to five standalone Sushi Maki locations in Miami-Dade and a sixth on the way (in Coconut Grove), the company’s 10,000-square-foot commissary in Medley caters a seemingly endless stream of sushi to South Florida hotels, supermarkets, arenas, bar mitzvahs and more. Sushi Maki and Canton Chinese continue to be family-run businesses; Ng’s parents, his sister, his brother-in-law and Christina all play crucial roles. The Ngs live in Pinecrest with their three kids: Kyle, Lindsay and Jacquelyn. CLAIM TO FAME Took a leap of faith that sushi would be the Next Big Thing in Miami — and nailed it. “It’s hard to believe that in 2000, South Miami and Coral Gables did not have a lot of sushi bars.” COMING TO MIAMI “Dad came to this country from Hong Kong with $70 and a high school education. A friend persuaded them to move to Miami, so Mom and Dad scraped together and opened a small Chinese takeout restaurant, which eventually became Canton Chinese. RETHINKING DINING “We signed a lease in the Monty’s plaza in Coconut Grove, and we’re transforming our Brickell location. People are dining in restaurants differently today. They’re more compressed for time. In areas that are more urban or vertical living like Brickell and Coconut Grove, I think we need to create an experience that’s a bit faster. We call it ‘service-casual,’ and it’s an evolution of Sushi Maki. It’s still the same, great, sustainable seafood served in china and glassware, but you order it at a counter, enjoy it and go.” MOMENT YOU KNEW YOU MADE IT “A friend told me that when he landed at MIA, walked through the terminal and saw Sushi Maki, he knew he was home. That was very gratifying for me. That he equated being home in Miami with Sushi Maki proved we did a lot of things right along the way.” BEST ADVICE RECEIVED “One of my mentors, Leonard Abess, said, ‘The tortoise wins every time.’ My business was growing rapidly, and he encouraged me to focus on the fundamentals rather than to chase every deal or opportunity.” GREATEST EXTRAVAGANCE “Coming up in an immigrant-founded business and later a scrappy startup, I’ve only recently spent extravagantly on a business-class ticket overseas. It makes all the difference, especially when you have back-to-back meetings in a far-flung destination.” MOST TREASURED POSSESSION “I have a pair of Nike running shoes, and I earned them through a bet with my personal trainer. It’s a great pair of shoes, but what they represent is cool because it’s something I earned through sacrifice and hard work.” GREATEST ACCOMPLISHMENT “I’m proud that I’ve been able to continue to have strong relationships with my sister, parents, my brother-in-law and my wife. When you work with family, everybody’s interests are generally aligned, but it certainly has tested the normal parent-child or sibling relationship. the movers HELPING A NEIGHBOR Ali returned to the United States and earned a degree in psychology at Nova Southeastern University. She was eager to start a nonprofit to help women and children when, in November 2006, motivation literally came knocking. A neighbor pounded on Ali’s front door, screaming for help, her forehead bleeding. She told Ali that she had been abused for the past 10 years, raped by her father-in-law. Ali used the savings from her acting career to hire a divorce lawyer, rent an apartment and pay for school so the woman could become a home health aide. The experience led Ali to found No More Tears with the mission to help survivors of domestic violence. When women and men call the nonprofit, Ali coordinates emergency shelter, medical assistance, restraining orders, job searches and school placements. No More Tears works with therapists, doctors, dentists and an optometrist who provide services at significantly reduced rates.

The one-time Bollywood actress and model stepped away from the bright lights to be a beacon of hope for survivors of domestic violence and human trafficking.

T

his October, in addition to a sea of people wearing pink in support of Breast Cancer Awareness Month, some — like Somy Ali — will be donning purple. She’s doing so during Domestic Violence Awareness Month to make that affliction part of the national conversation. Ali is the founder of No More Tears, a Miamiand Plantation-based nonprofit that has saved more than 2,600 children, women and men from physical and sexual abuse since its inception in 2007. Her goal is to set them on paths toward independent, fulfilling lives. “Giving them a bed is not enough,” Ali said. “No More Tears’ model is we give them the tools. We’re going to teach you how to fish.” Ali was born and raised in Pakistan. She moved with her mother and younger brother to the United States when she was 12, but the stubborn girl had a crush on a Bollywood actor. Determined to meet him, Ali moved to India. She became an actress and model, and she was even engaged to the actor for a time.

VICTIM-BLAMING Despite the organization’s good work and the proven need for such services (see Abuse in Florida, below), getting the message out has been an uphill battle, Ali said. “It’s a very, very difficult mission to sell, because people have a mindset of victim-blaming. That infuriates me to no end.” In many cases of domestic abuse, Ali said, survivors are often in positions that make it hard to leave their abusers, whether it be financially, or due to children being involved, or being physically trapped in their homes. Some women have met men online who promise to file a visa for them to live in the United States to get married. When they arrive, there is no visa, and the abuser threatens to call the authorities if they don’t obey. South Florida is considered the nation’s third-busiest hub for human trafficking, and No More Tears works with local and federal law enforcement agencies to rescue children. “I had a case where a girl was put in a dog cage,” Ali said. “She wanted to become a model. She saw an ad, came here. They gave her coconut water. And then she woke up in a cage, naked.” Not only does Ali’s nonprofit stand out for the work it does, but also for its model: There are no employees. Everyone is a volunteer. Ali makes a living by renting two properties. PERSONAL EXPERIENCE What keeps Ali going? She has firsthand experience with physical and sexual abuse, and she saw others keep abuse quiet when she was growing up. “My mom’s friends that were socialites, they were wealthy and educated,” she said. “They all came with bruises to our house. ‘Aunty so-and-so fell down the stairs.’ Fell down the stairs. The victim-blaming just kills me, and that’s been our biggest obstacle thus far, but somehow we survive.” Ali remains optimistic and motivated, like when she was a teenager with dreams of being an actress. In December she will launch the Somy Ali Foundation, with a mission to reduce hunger and provide education to underprivileged kids in India, Pakistan and South Florida. “I’ve met the worst people doing this work,” Ali said, “and I’ve met some amazing, amazing people.” nomoretearsusa.org. Martha Valdes’ deep understanding of Miami culture comes through in her Martha of Miami designs. Starting her business a year ago was a dream come true for this Miami girl. “I love designing shirts that make people say, ‘That’s so Miami,’” said the 26-year-old Valdes. “I think that’s what people like most about my brand, that it’s very Miami, it’s about us, our city, our lifestyle.” Her first and most popular design, the piña colada, is a visual play on words: a pineapple perched next to a small white cup of Cubanstyle colada. Her Miami AF, Mimosas with my Chismosas, Chancleta Survivor and Croquetas, Coladas y Cubanas are also strong sellers. “When customers tell me they were stopped on the street because of their shirts and asked, ‘Wait, what does that mean?’ or told, ‘Hey, I like your shirt!’ it makes me so excited for the future and motivates me to think of new designs,” Valdes said. Talk about motivation: When Valdes unveiled her first design to her Cuban-born parents, owners of the seven-store discount retailer Valsan, her dad said he’d sell it in all their stores. Valdes turned him down. “I told him, ‘Thank you, Papi,’ but I decided I wanted to make it on my own,” she said. Valdes said her next dream is to expand her online operation into a brick-and-mortar boutique complete with a custom T-shirt printer, bakery and ventanita. Lauren Abele can’t pinpoint the exact moment she decided to start a Miami-inspired baby and children’s clothing line. But she clearly remembers shopping for baby clothes when her nephew, Oliver, was born two years ago. “I was looking at onesies and found a few that I thought were way off. It was something like a taco saying ‘Gracias.’ That doesn’t make sense, and it’s not funny,” said Abele, a web developer, who was born in Miami but is of Guatemalan descent. She turned to her mother, Ana, and her sister, Kristin. They both fell in love with Lauren’s idea for Guava con Queso: a line for little ones that celebrates Miami’s Latino culture. “We couldn’t find any cute children’s clothes that represented our upbringing in Miami as well as our Latino heritage,” Kristin Abele said. “So why not make them ourselves?” The sisters, with help from Mamá, of course, began creating cartoon-like designs based on their favorite things about Miami: la playa, palm trees and cafecitos. And drawing inspiration from cultural sayings, songs and foods, all reminiscent of their childhood in the 305. Some of their most popular designs include Arroz con Frijoles (the rice and beans are cartoon characters holding hands), Hecho en Miami, Tres Leches, Coco Frio and Dimelo. And though they don’t make adult sizes yet, the sisters say it could happen soon. What do you know now that you wish you knew when you started? “When I started I knew nothing about fashion. I was only 21, and didn’t really study fashion. I have always tried to stay savvy and start conversations and ask industry leaders for advice. However, I wish I had reached out to more.” alvinvalley.com.

After graduating from Miami Beach Senior High, Rob Pellegrino and a group of friends were starting a record label. “We did the logo and a bunch of shirts, and we were using the acronym D.A.D.E., for Down and Dirty Entertainment,” said Pellegrino, a graphic designer. The record label never took off, but the shirts were a hit. “Two years went by, and people were still wearing the shirts we had made. That’s when I knew we had something,” Pellegrino said. “We decided to change our name to Down and Dirty Ethics and design more shirts. And from shirts we went to snapbacks and caps and pins and have evolved from there.” Despite D.A.D.E. Wear being a one-man design, order-fulfillment, shipping and e-commerce management operation, Pellegrino said he remains close with his former record-label partners, who continue to pitch in from time to time. “We’re still the D.A.D.E. family,” he said. “We always want to give people from Miami something that’s as recognizable as the Yankee logo is for New York.” Of nearly 150 designs, Miami Bass Line, Fear and Loathing in Miami, and neighborhood-specific shoutouts to Wynwood and Little Havana are among D.A.D.E. I

n a competition for Miami’s prettiest dishes, it’s hard to imagine the new Bachour Bakery + Bistro’s La Causa Salad not winning the gold. The art-on-a-plate composition from chef/partner Henry Hané is one of more than a dozen items on the menu at this Brickell World Plaza hotspot that look too good to eat. Almost. Since opening the restaurant in the spring with chef/partner Antonio Bachour, Hané said La Causa has been warmly embraced by customers. “It is by far our No. 1 selling salad,” Hané said. “The presentation has that wow factor. As soon as the first one goes out, a lot of tables are curious about what it is, and they order it.” Peruvian-born Hané grew up eating causa, a unique mashedpotato terrine that’s seasoned with ají chiles and usually served cold as a starter. “Every time I travel to Peru, I make sure that my aunt makes her version for me, which is always the best, hands-down,” the chef said. At the restaurant, his interpretation of the classic dish begins with a silky smooth, vibrantly yellow spread of potato infused with ají amarillo. He uses that as a canvas

onto which he layers ají-spiked aioli, soft-boiled egg, purées of avocado and olive, lump-meat crab, grilled and marinated shrimp, pickled onions, crisp vegetable coins and — here is where the artist comes out — gold leaf and edible flowers. The beauty of La Causa is, you can make it at home and leave off the over-the-top garnishes, or you can go to the restaurant and let Hané spoil you. For the home cook as for the professional chef, the salad’s success depends on having the right ingredients and preparing them with care. The ingredients in La Causa can all be sourced at most supermarkets. Be sure to make and reserve the individual elements, then let your inner artist combine them on the plate. No matter if your finished salad looks as good as Hané’s does, the end result is guaranteed to be delicious. “The combination of the fatty elements — the aioli and the avocado — pairs great with the acidity in the potato,” he said. “The seafood elements are very traditional, and I put my spin on them by grilling the shrimp. That adds a smokiness.” When you go to the restaurant, saving room for dessert is not a cliché, it’s mandatory. Bachour, the restaurant’s namesake, is the

executive pastry chef of the St. Regis Bal Harbour, where his textbookbeautiful and boundary-pushing desserts have earned him worldwide acclaim. At the bistro, Hané handles the savory side of the breakfast, lunch and early dinner menus, while Bachour is responsible for the picture-perfect sweets. Meet the chef HENRY HANÉ, 34, was born in Lima to a Colombian father and Peruvian mother and had an extended family of passionate eaters and restaurateurs. He moved to Boston at age 18 to study computer engineering and architecture, cooking for friends and roommates in his spare time. Hané found that he had more interest in kitchen gadgets and recipes than coding and blueprints, so he enrolled at Johnson & Wales University in North Miami. The culinary-arts program led to work in the kitchens of Michelin-starred and other highly rated restaurants in England, Spain and Peru. Back in Miami, Hané has made a name for himself working for gourmet catering firm Le Basque and alongside celebrated chefs Michelle Bernstein at her dearly missed Sra. Martinez and Giorgio Rapicavoli at Coral Gables favorite Eating House. Hané’s global influences and his mix of classic and modern techniques translate to fresh, vibrant dishes at his Bachour Bakery + Bistro.

LUMP CRAB MIX ½ cup lump crab meat 2 tablespoons ají aioli OLIVE PURÉE ½ cup Kalamata olives, pitted 2 tablespoons Kalamata olive juice AVOCADO PURÉE 1 Hass avocado 2 tablespoons lime juice 2 tablespoons chopped cilantro 1 pinch salt 1 tablespoon olive oil GARNISHES 4 grilled shrimp (optional) 1 soft-boiled egg, peeled and quartered Thinly sliced pickled onions Thinly sliced radish coins Thinly sliced carrot coins Chopped romaine lettuce Cilantro leaves 1. Cook unpeeled potato in boiling salted water until soft, about 45 minutes. Peel potato and pass through a tamis or food mill until smooth. Once potato has cooled, add lemon juice, oil and ají amarillo paste and mix until incorporated; reserve in refrigerator. 2. Mix mayonnaise, ají panca paste and lemon juice in bowl and whisk until incorporated; reserve. 3. Fold together crab meat and 2 tablespoons reserved aioli. 4. Put olives and olive juice in a blender and process on high until smooth; reserve. 5. Put all avocado purée ingredients in a blender and process on high until smooth; reserve. 6. Spread about 5 tablespoons of the cooled potato mixture onto a salad plate. Put spoonfuls of the crab mix on top of the potato spread. Continue to garnish plate with shrimp (if using), egg, onions, radishes, carrots, romaine and cilantro. Add alternating dollops of olive purée, avocado purée and reserved aioli.

MEZCAL Whether in cocktails or sipped straight, tequila’s smoky, sultry cousin is the craft spirit of the moment. Three drinks experts point us to premium mezcal in Miami.

A

t the buzziest bar in town, John Lermayer takes a break from organizing bottles to make a point about mezcal’s surge in popularity. “In my experience, no spirit category has garnered this much attention. Ever.” It’s a bold pronouncement, but Lermayer knows what he’s talking about. The veteran Miami and New York bartender is owner of Sweet Liberty Drinks & Supply Co., the Miami Beach saloon named Best New American Cocktail Bar at this summer’s annual Tales of the Cocktail confab in New Orleans. “Smoke is the hot new flavor,” he said. “Mezcal has high alcohol, but there is no burn, no heat and this wonderful residual feeling that you are drinking something different, something unique.” And why would this spirit from the remote wilderness of Mexico’s Oaxaca state, distilled on small farms for hundreds of years, find newfound fame? “It’s the ultimate craft spirit,” said Nic Carmona, general manager of South Miami’s TacoCraft and an occasional visitor to Oaxaca. “In mezcal, you taste the earth — what a wine lover would call terroir.”

MEZCAL V. TEQUILA ●

Mezcal uses any kind of agave; tequila uses only blue agave. Most mezcal is made in Oaxaca; most tequila in Jalisco. Agave for mezcal is pit-roasted; for tequila, it is baked or steam-cooked.

TASTE THE DIFFERENCE Both tequila and mezcal are distilled from the agave plant. But while tequila by definition can be made only from blue agave, mezcal producers have at their disposal more than 30 varieties of agave, each with unique characteristics and flavors. “The altitude at which the plant was grown, the amount of water available, the shape of the oven that roasts the agave, the approach of the distiller — these are all things that impact the final spirit,” Lermayer said. Agave plants take eight to 12 years to mature before the starchladen piña or heart can be harvested. To make tequila, blue agave piñas are oven-baked or steamed to convert their starch to sugar, often an industrial, mass-production process. For mezcal, piñas are slow-roasted — sometimes for days — in clay ovens or pits, using wood charcoal and volcanic rock to create the spirit’s distinctively smoky profile. “It’s a time-consuming process to make good mezcal,” Lermayer said. “It’s the most honest spirit on Earth when it’s well-made.” A COCKTAIL TO START Where to find good mezcal in Miami? Start by looking at bars with good bottle selections and a passionate aficionado on hand. At Coya, the Peruvian restaurant in Brickell, beverage manager Maria Pottage fills that role. Although the native Peruvian has a soft spot for pisco, she said mezcal also has a place for her affection. “Demand for mezcal is skyrocketing,” Pottage said,

“but mostly in cocktails.” That’s also true at TacoCraft, where Carmona said mezcal cocktails are a good way to feature “a hint of smoke and the spirit’s smoothness.” Some purists may turn up their noses at the notion of mixing mezcal. Nonsense, says Lermayer. “If it wasn’t for cocktails we wouldn’t be talking about mezcal. Cocktails create awareness. Cocktails spread the story.” He’s found a way to appease both camps at Sweet Liberty: “Whenever we serve a mezcal cocktail,” Lermayer said, “we offer a little sip of the mezcal straight, so the customer tastes the spirit on its own as well as in the cocktail.” WORDS BY LYN FARMER / PHOTOGRAPHY BY NICK GARCIA

There’s something dreamy about Coral Gables. When Mitchell Kaplan founded Books & Books on Aragon Avenue in 1982, little did he know he was doing more than opening a bookshop — he was creating a community. Kaplan’s literary embrace of South Florida led to Miami Book Fair International, an annual event that has become the biggest of its kind in the country, drawing hundreds of award-winning authors and thousands of readers. Books & Books has grown to include locations on Lincoln Road in South Beach, at Bal Harbour Shops, at Miami International Airport and at the Adrienne Arsht Center for the Performing Arts. But the Coral Gables store is where it all started. It’s also where you’ll find Kaplan most days, engaging in conversation over a working lunch at the courtyard café, recommending books to longtime patrons or introducing authors at nightly readings. “My heart is here,” he said of the neighborhood where he met his wife, Rachelle, and where their three children were born. These guestrooms are set to be renovated soon, ushering in more of a Swedish feel. Catherine Cumings, director of sales and marketing, hints at “different window treatments, more minimalist furniture and painted walls instead of wallpaper” as some of the changes to come. So who’s the Swede behind it all? Luxury condominium builder Bo Jertshagen purchased the property in 2008 after visiting and falling in love with the area. He and his family are known to catch a direct flight from Stockholm to Fort Lauderdale for a quick check-in, but the hotel is managed by Noble House Hotels & Resorts. Jertshagen’s Scandinavian influence is everywhere, from the moose sculpture mounted on a wall in the spa (“Moose are sacred to the Swedes,” Cumings explained) to the Swedish-themed events the hotel hosts throughout the year. His daughter, Cassandra Jertshagen, launched PURE Spa in 2015 and was so pleased with the concept, she brought it back to Sweden. Centered on the Scandinavian sense of well-being, the spa embraces the outdoors with massive windows overlooking the ocean, whitewashed wooden floors and green-accented walls. “Unlike other spas, it’s light and bright,” Cumings said. “It’s where Scandinavia meets Florida: an upscale, minimalistic look.” FUN, FOOD & DRINKS For more relaxation, head downstairs to the veranda by the beach, where guests can grab a cocktail and recline in one of the classic rocking chairs. After living in the shadows of New York and Washington, Philly is proving that it’s more than ‘Rocky,’ cheesesteaks and a certain Danny DeVito show.

C

reatives, millennials and other trailblazers have sparked a rebirth of Philadelphia’s urban core. And now the city that hosted a Pope Francis visit and the 2016 Democratic National Convention has grabbed the world’s attention. UPGRADE YOUR STAY Right before the DNC in July, the Ritz-Carlton unveiled a $25 million makeover of its Philadelphia property, the brand’s only hotel in a former bank. When the vault has become a ballroom and the boardroom serves as the Club Lounge, an obvious theme emerges. Nickel, copper and green — the color of money — decorate interiors, including 301 rooms. The domed lobby’s Greek key pattern pops up in rooms’ table bases and throw pillows. Power laptops and iPhones and sip martinis around the circular bar in the lobby, where tellers once

handled money from a central oculus. Dense plant material and crystal partitions break up the soaring space with nooks for a tête-à-tête. Mexico City chef Richard Sandoval’s Aqimero completes the new vibe of the renovation. Its Miami connection exceeds Sandoval’s Toro Toro restaurant in downtown Miami’s InterContinental; Aqimero chef de cuisine Garrett Welch attended Johnson & Wales University in North Miami and started as a saucier at Mandarin Oriental on Brickell Key. Diners can watch Welch fire up the wood grill for a selection of meats and marinades. Parties reach for seconds of his lobster tacos and adobo-rubbed Jidori chicken with watercress salad. Craving Florida fish dips, Welch makes a version with smoked swordfish. The Rittenhouse is forever upgrading in some fashion. After creating Park Suites, named for their straight-on view of Rittenhouse

Square’s trees, the 118-room hotel tapped the touted Alexandra Champalimaud again to redesign its sky-high R floor. Measuring 575 to 1,700 square feet, the floor’s 15 rooms and suites are as exquisitely understated as the locals’ colonial townhouses and Main Line manses. No detail is left out, such as the limestone baths’ Acqua di Parma amenities. For the next level of pampering, book the rose and diamond dust body polish and massage with Natura Bissé products in the revamped Spa. The team also thought, why have an ordinary gift shop when you can have a lifestyle concept curated by Kate Egan of Egan Day fine jewelry boutique? Local designers like society florist Matthew Muscarella and Teresa Chang, whose hand-thrown clay dinnerware is collected by Martha Stewart, account for half the wares. Culinary options expand as well. In addition to Lacroix, a fine dining restaurant where wine director and advanced sommelier Justin Timsit can be spotted on the floor fresh from winning New York’s best sommelier, Scarpetta opened in September. MIAMI-PHILLY FOOD CONNECTION Restaurateurs are following powerhouse Stephen Starr’s migration from Philly to Florida. CookNSolo, chef Michael Solomonov’s hospitality group whose marquee restaurant Zahav jumpstarted the Middle Eastern food movement, brings Federal Donuts to Wynwood this winter. One of its Philadelphia locations sits across from the group’s Dizengoff, where queues form for authentic hummus like the kind sold along its namesake street in Tel Aviv.

The group’s adjacent Abe Fisher focuses on the cuisine of the Jewish diaspora, as if famous delis, from Schwartz’s in Montreal to the defunct Wolfie Cohen’s Rascal House in Miami Beach, melded in an upscale interpretation. Your grandpa’s fedoras decorate walls, while flowing cocktails would shock your bubbe. The two-seat chef’s counter peeks into a new era for chopped liver and potato latkes. Montreal short ribs, the house specialty, are smoked, sliced and stacked on rye bread with a trio of mustards. Minding Jewish mothers everywhere, meals begin and end with carbs — schmaltz rugelach and spiced blondies. Solomonov and partner Steve Cook’s Sansom Street monopoly grows soon with Rooster Soup Co., a sustainable luncheonette that turns Federal Donuts’ chicken carcasses into broth for matzoh ball soup. MJS Restaurants founder Michael Schulson makes his Florida debut at the Diplomat Resort & Spa in Hollywood by year’s end with Monkitail, a Japanese-style izakaya. Until then, visit Double Knot, his new subterranean izakaya on the same Philly block as his Sampan and Graffiti Bar. Schulson spent months collecting nautical lighting, singeing wood and dripping candle wax to cultivate its steampunk patina.

When Philadelphians want to get away, they have a wealth of naturally beautiful regions, from the Jersey Shore to the Brandywine Valley. North Carolina’s Outer Banks is another treasured vacation spot, where the quieter off-season still offers excellent beach days on top of kayaking and hunting. That’s how the town of Duck got its name. Surrounded by multimillion-dollar homes between the Atlantic Ocean and Currituck Sound, the 120-room Sanderling Resort unveiled its full renovation in summer. Book a floor-through penthouse suite in the Beach House for sunrise coffee and sunset vino on dual waterfront balconies. The north wing is designed for young families, with connecting rooms and a kids’ pool, while couples appreciate the south wing’s king beds and adults-only tranquility pool. But kids of all ages receive a s’mores kit to take down to the fire pits. Part of the upgrade, the 6,000-square-foot spa partnered with Babor skin care for exclusive facials like Fancy A’ Lift, a 50-minute attack on gravity with its line of HSR creams. Dan Grunbeck, chef de cuisine for the property’s Kimball’s Kitchen, waits for this time of year when yellowfin tuna runs 10 miles off the coast and scallops taste sweeter, especially wrapped in his homemade prosciutto. He shops the farmer’s market for butternut squash and cabbages, and pumpkin may end up as a cobbler with toasted marshmallow. On October 22, the restaurant celebrates Robert Mondavi’s 50th anniversary with a prix-fixe menu featuring wagyu, foie gras and the winery’s reserve cabernet sauvignon. The Lifesaving Station, the resort’s casual, all-day eatery, preserves a piece of this treacherous coast’s history. Patrons will never say no to his edamame dumplings in truffled sake dashi, the dish that made him a star 15 years ago. But they equally approve of Schulson’s seared albacore tataki in ponzu, and shaved hearts of palm dressed in yuzu vinaigrette. People pick off every last morsel of hamachi collars slathered in fermented miso paste, too. The shokunin negroni’s subbing of Junmai sake for gin lightens the classic aperitif. Fall mochi flavors finish off the wild strawberries. Since starting with Andalusian tapas at Amada, Jose Garces has explored Mexican street food, burgers and farm-to-table fare. For The Olde Bar, his ode to New England seafood, the chef didn’t mess around much with the 19th-century home of the shuttered Old Original Bookbinder’s. Take in the dark bar’s ornate wood carvings with a cocktail list that made it all the way to this year’s James Beard semifinals; and a bowl of sherry-laced turtle soup garnished with a quail egg. Garces, who operates restaurants aboard the Miami-based Norwegian Escape along with Miami Beach’s Pubbelly Boys, has hinted for years at opening one of his Philadelphia concepts in Miami. In the meantime, he’s sticking to the city he knows: He’s preparing to roll out an à la carte finedining menu for Bar Volvér, plus open El Studio for events and cooking classes in his headquarters as well as 24, a wood-fired pizzeria in a LEEDcertified residential tower. It’s a good thing for beer drinkers that the term Pennsylvania Dutch is a misnomer and actually refers to German settlers who transformed Philly into a beer capital long before Milwaukee. As we know, Benjamin Franklin was quite the

October schedules a Matisse symposium and the premiere for “Live and Life Will Give You Pictures: Masterworks of French Photography, 1890-1950.” The annual DesignPhiladelphia festival also returns this month with dozens of events for subjects about the tiny house trend to the Rail Park, Philly’s answer to the High Line. Mix in black beans, cheese and cilantro until combined. 2. Divide black bean mixture evenly over half of each tortilla (about ½ cup each). Fold tortillas in half. 3. Heat large griddle or skillet over medium-high heat. Brush with oil. Place filled tortillas on griddle. Cook, carefully flipping once, until tortillas are golden brown and crisp and cheese filling melts, about 5 minutes. 4. Cut quesadillas into wedges. hat does it mean to have It? Rudyard Kipling defined the ephemeral quality of this charismatic appeal in a 1904 short story. “It isn’t beauty, so to speak, nor good talk, necessarily,” he wrote. “It’s just It.” This usage bubbled beneath the surface as British slang before showing up in popular culture by the 1920s. The Elinor Glyn novella It and the 1927 film of the same name that starred Clara Bow gave rise to the term “It girl.” Glyn had an older sister, Lucile, who was a fashion designer (and Titanic survivor). Lucile is credited with being the first designer to reveal her new styles with lights and music, inspiring the modern runway show. Fitting, then, that the fashion world would be become a major arbiter in defining what — and who — has It. Remember the ’90s, when there was a frenzy over It bags, the designer purses with rabid followings?
