Wow! Going to take the kids across the country for a tour? We’ve got some ideas for you. Is this the year you can only take a couple of short day trips? We can help with that as well. This issue will make you want to pack your bags after perusing through the beautiful photography and tantalizing aritcles. I also want to introduce you to My Intentional Success (MIS), a new company geared toward teaching young people how to run a business, invest, save, and grow their careers before they are even old enough to vote? Crazy? NO! Smart. Very, very smart. One of their ventures is a magazine called The Successful Life. Their first issue is planted right in the middle of these pages. It is our honor to help them get it off the ground and wish them much success as their own publication grows.

Another little treat for you this month is JorDaw Publishing’s debut of Mommy and Me. Take a Vacation?
Everyone needs a break from their stressful lives. You need a break from work, and your kids need a break from school. Going on vacation at least once a year can give you that break. Getting away for a week can actually help you feel more satisfied at work, relieve your stress, and improve your health. Most jobs allow time off or vacation days of some kind and you should use them. According to a study involving 13,000 men, those who skip vacations for five years in a row are 30 percent more likely to have a heart attack. Framingham Heart Study found that women who do not go on vacation often have a higher risk

of heart disease and heart attack. Whether money is tight or you feel like you have too much to do, taking a vacation at least once a year is worth your while to relieve stress and improve your health. Vacations mean spending more time with your family. In everyday life, you may not see your family more than a few minutes or hours. With a vacation, you have plenty of time to sit down and spend quality time with everyone. There is no better way to grow as a family than to go on a vacation. So, pack your kids into a car or plane, and then enjoy all the fun times and memories you will have together.

For this issue, it seemed appropriate that this space be dedicated to Moms & Dads all over Lubbock. Isn’t it the Moms who get up early to help everyone get out the door in the mornings? Aren’t Dads all over town helping with homework & coaching ball games? Do you see parents everywhere teaching manners, buying treats, & just plain loving on their kids? Yes-there are parents that don’t care as they should. There are parents who do not set good examples. However, it appears that there are even more parents who actually DO care. The driest place on earth offers many opportunities for you adventure-seekers. Start by sand boarding down the 100-meter high dunes of Death Valley. You may end up a bit bruised, but the risk involved is what makes this adventure thrilling. Walking through the El Tatio geyser is another adventure offered here. Beware: you will ascend icy, winding roads to get there, but once at the highest geyser field in the world you will be in awe. Standing among pools of the earth’s steam ascending is pretty neat. These destinations are not for the weak. Unleash your adventurous self as you wish at any of these places.

Zambia, Africa What could be better than an adventure in Africa? Here you can interact with wildlife like nowhere else! Feel strong and elegant like the cheetah by taking a walk or two with a couple of them. If that’s not enough, then go bungee jumping off the Victoria Falls Bridge. It’s only a 364-foot drop. ometimes, all you want to do on vacation is to relax. There are so many places you can go to relax, but here are a few that blow other relaxation spots out of the water. Maldives, a country of around a 1,000 isles is the perfect place to enjoy crystal-clear waters, tropical life, and extraordinary coral reefs. A few islands are so small they feel like your own personal resort. So, if your idea of the perfect vacation is clear waters and sand, the Maldives is the perfect place for you to nap in a hammock while you enjoy the sound of the sea. Clear blue skies, are everyday occurrences in the Argentinian City Of Patagonia. Warm weather and nice people are also always present in Patagonia. This destination is perfect if you like to relax by the views of great mountaintops. If silence is what you need, you should visit the resort Silence, in Tonga. Silence has the perfect mix of modern and ancient facilities. Waiters serve all meals, so you never have to fix a thing. The surrounding area of Tonga is untouched, leaving a picturesque view to look at while you unwind.  Chiang Mai hotels and guesthouses are shaped like temples and palaces from various cultures and dynasties of North Thailand, creating an interesting atmosphere to relax. Chiang Mai also has lakes full of flowers like the lotus, a water lily associated with relaxing and known for its clean and pure beauty. Between the wonderful buildings and delightful ponds, Chiang Mai is the perfect place to pamper yourself. Tremendous lawns, small water ponds, showering fountains, and jogging tracks litter the Lodi Gardens in New Delhi. The gardens are tranquil and perfect if you want to escape your stressful life. This is the perfect place to take a slow walk through peaceful gardens, if silence and tranquility are what you’re looking for in a vacation. Calm and beautiful beaches, blue skies, and silence await you at any one of these fabulous destinations. There is no question- New York is one of the best places to shop! After all, it’s one of the fashion capitals of the world. It houses some of the most famous designers and stores. Be ready to drop a load of cash here. For something different and less expensive visit China Town. There you can find treasures and designer surprises for great prices.
One thing you may not know about London is that it has some of the best thrift stores. Yes, thrift stores. Retro clothes are in, and London’s local thrift stores know it. A few good ones to visit are Beyond Retro, Absolute Vintage, and Blitz.
Marrakech, Africa If it’s a unique shopping experience you want, then look no further than Marrakech. For new pieces for your home visit Akkal in the Quartier Industriel at Sidi Ghanem. My Intentional Success Entrepreneur Summer Camps For students who are completing 6th, 7th or 8th grade in May 2015. Why MIS Summer camps?
Week 3- June 15-19. Sales. Nothing happens until somebody sells something. This week our campers will get to learn sales techniques from local entrepreneurs and sales professionals. Meanwhile, each small group will work closely with a local business owner and make plans to do a sales day at that owner’s business (The Apprentice style). Each business owner will give a portion of their proceeds to a local charity. Therefore, each team is working hard to help out their cause.
The world is changing rapidly. The US and most of western civilization are spiraling into deeper and deeper levels of debt. Moreover, central bankers are making things worse by continuing to print trillions upon trillions and devaluing their respective currencies. The U.S. national debt is over 18 Trillion dollars and growing faster than ever. At the same time, Americans are carrying 900 billion dollars in credit card debt and 1.2 trillion in student loans. Where and how does the madness end?
Week 4- June 22-26. Investing 101. Now that you’ve made some money, what do you do with it? Campers will learn about investing in stocks, bonds, annuities, life settlements, real estate, gold, silver, and more. Local professionals and experts will share their tips for getting and staying ahead. Campers will learn the power of residual and passive income. This will include field trips

This is a chance to learn, get inspired and really start making plans for a bright financial future.

Starting Your Own Business- work in small groups, spend a week with local entrepreneurs and professionals, learn how to evaluate a business idea, create a business plan, determine financing and capital needs, and presenting your idea to a panel of local business owners, professionals and entrepreneurs (our own version of Shark Tank).

Week 2- June 8-12. Creative Marketingwork in small groups, learn from local
• 2 snacks will be provided business owners, learn about free and inexpensive ways to promote a business, write a marketing plan for a local business with a small budget, and present your plan. The business involved will pick the winning plan and implement the plan of the winning team. Meaning, you will get design a real marketing plan for a real business.
• Comfortable, but modest summer attire is acceptable, unless instructed otherwise for presentation or field trip days. Field trip transportation will be a limo ride by Purple Tie Limos.

Why My Intentional Success? By Shayne Webber, Ph.D.
O
ne day a 9-year old boy starts looking over the shoulder of his father. He asks his father “what are you doing?” His father explains that he is evaluating stocks and briefly explains what stocks are and why people buy them. The boy has always liked money and continued to ask follow up questions. After about an hour of this, the boy nudges the father to leave and starts evaluating stocks. After another hour
passes, he retrieves his father and tells him he has found a stock his father should purchase. Sure enough, the boy had followed the rules his father taught him and it looked like a smart buy. In fact, the father did buy some of the stock. Thirty days later, the father sells the stock for about a $900 profit and shows this to his son. The son asks about his “cut.” And the father replies, “Your cut is the education. That was my money at risk.”

This was the start to My Intentional Success. The boy in the story above is my son and this actually happened about 4 years ago. Yes, I made $900 from this experience, but I learned something really important. I have been an entrepreneur for many years and spent a great deal of time studying and learning about the accumulation of wealth. Why was I not spending more time teaching this to my 4 children? Maybe I thought they were not ready? Whatever it was, the experience above changed that and we started talking about stocks, bonds, options, gold, silver, real estate, life settlements, annuities, business ventures, budgeting and much more. Yes, sometimes my kids’ eyes would roll or gloss over with boredom. The problem was that it was my money and not theirs (although they were spending more of it than me). As they say, they needed some skin in the game. Everything is more interesting with some personal investment. As entrepreneur, I recognized this situation as an opportunity for creative problem solving and the result has been My Intentional Success. Now, at My Intentional Success (MIS) we have the students invested. MIS is an after school program, where we teach 6th-12th graders money management, investing, business development, leadership skills, community service and more. Our students are invested with their own efforts and money. Parents are not allowed to pay tuition. Parents only pay a $99 per semester materials and enrollment fee. Students earn the $199 a month tuition through small business projects and fundraisers (like this magazine). Money means something different when you earn it yourself and we didn’t want to single out any students for needing tuition assistance. They all have to work for it. With the additional profits we make10% is given to a charity, 15% goes to

MIS and 75% goes to the MIS students. Remember, they need money to invest. Of the money going to the students, they get 25% to do whatever they wish and the remaining 75% is sent directly to their very own investment accounts. They learn investing, by investing. They learn small business development, by working small business projects. And, they learn about community contribution by participating in community service. Living on One Dollar By Jonah R. and Dante P. MIS students
A
s part of an assignment at My Intentional Success, we watched the documentary “Living on One Dollar.” The film follows four college students (Chris, Zach,) as they set out to live on just $1 a day for two months in in small village in Guatemala, called Pena Blanca. They struggle with hunger, contaminated water, and a multitude of hardships as they attempt to live as closely as possible to their native friends. The harsh reality of this experience is that over a billion people in the world live at this level of poverty. In the film, you meet several amazing people: Rosa, a 20 year old woman, Chino, a 12 year old boy and Anthony, the
only person in the village with a reliable job. Rosa wants to be a nurse, but had to drop out of school when she was young to work. Chino also had to leave school, because his family could not afford the necessary $25. And Anthony is a kind and generous young man (early 20s). Anthony shares food with the Chris’ group and helps a neighbor get much needed medicine for his wife. The people of Pena Blanca are hardworking, kind and generous. They just need a boost. The film created feelings of gratitude in us, but also anger. We can and should be doing more. Now, what can a group of MIS students in Lubbock, Texas do? We will find out.
We started by visiting www.livingonone.org and inquiring about an interview. We were able to secure and interview with Chris Temple from the documentary. Chris grew up in Connecticut and said that this was by far the most difficult thing he had ever done. Chris lost 22 lbs. and returned with parasites in his stomach. He and his friends took the trip to try to learn firsthand about poverty and make a few short videos to share on Youtube. They did not set out to make a complete documentary. However, while they were still in Guatemala they posted several videos and they began to go viral. At this point, they decided to do their best to make full blown documentary from their experiences. At one point in the film, the young travelers are experiencing the very tough reality of hunger. When asked about this experience, Chris explained that he expected it to be difficult, but the mental aspects were “a bit of a shock.” Chris explained that they felt weak, lethargic, and felt like they were swimming- “like you can’t think.” This helped Chris to have a better understanding of how poor nutrition, no bed to sleep in, and no clean water make it very difficult to find a way out of poverty or to improve your situation. Chris expounded, “I learned that you have to be incredibly talented and driven just to survive in extreme poverty let alone to advance in your life, because you’re physically and mentally being held back. You are being held back by a lack of opportunity and resources.” Since the experience, “it has been empowering to see what small changes can do for someone. A simple change like proper nutrition gives people a chance to pull themselves forward.” Chris thought that to more closely understand the struggle of someone living on a dollar a day, it is important to know, they don’t actually receive and spend a dollar a day. In almost all cases, their income is sporadic and it simply averages out
to a dollar a day. The hard part is how do you budget when you’re hungry and don’t know when you will have income again? To replicate this in the film, Chris and his friends drew a random number each day. They placed numbers in a hat to give them the “opportunity” to make anything from $0 to $9 for the four of them. This way, they averaged $1 each per day, but made their money sporadically, like the locals. While watching you find yourself hoping that they pull a big number, so they can get food and other essentials. But what is it like to really not know when you are going to make money, eat, or be able to feed your children? Chris explained that the people of Pena Blanca actually spend a great deal of time thinking about money. He said he was impressed with their innovation for saving and purchasing larger items. One such innovation is called a savings club and is illustrated in the documentary. A savings club is a group of individuals/families who commit to saving a predetermined sum each month. Then each month someone in the group is randomly chosen to receive the entire amount saved by the group. For example, 12 families each save $12 a month and one family is awarded $144 each month until each family has received a lump sum payment. This allows the family to make a larger purchase, like a stove, or even to invest in a business. The idea of microloans was actually born from these types of groups. We are grateful for Chris and his friends and their impact on the poverty stricken in Guatemala and elsewhere. If you haven’t see the film “Living on One Dollar”, it is available on Netflix. Making Human Connections By Britton W. and Jonah M.
I
n an effort to learn more about Microloans we interviewed Alex McCue, Program Coordinator for Human Connections (HC). HC is a fairly new non-profit in Bucerias, Mexico. It is about 20 minutes North of Puerto Vallarta. For this interview, we were able to skype with Alex for about 30-minutes. We found Alex to be very informative and helpful. Alex is somewhat of a local talent gone international. He grew up in Albuquerque, attended Harvard University and now is working to have a positive impact through his work with Human Connections. Alex explained to us that the goal of Human Connections is social change. They hope to have an impact by inviting travelers and students to experience firsthand the lives of local artisans, tradespeople and business owners in western Mexico. With the money they earn from these visitors, they pay the local artisans for their time (visits from travelers) and teach classes. They teach English to help locals get jobs in
and around tourism and teach them basic business skills. We asked about what we might expect when we arrange for a trip for My Intentional Success students. Alex explained that they would cater to the experience we wish to have, but suggested that we come and visit some of their artisans and tradespeople and take part in a community project. The artisans and tradespeople sound a lot like entrepreneurs here, only they don’t have our resources. Therefore, by necessity, they have to be creative problem solvers to get the materials, money and skills they might need. When we go to Bucerias for a Human Connections academic seminar, we will have a chance to meet such business owners. We are certain this will be inspiring. Human Connection is also working with other organizations that build schools with repurposed materials, like old tires or coke bottles filled with sand, and we might be able to volunteer to assist in such a project. Of course, we will share with you our experiences after our trip. We also asked Alex about what businesses are being
started in the area and having success. Alex explained to us that many of the businesses in their area are supported by tourism. This means that locals who can make art or souvenirs of some type are having success. They just have to be more resourceful to get the start-up money and raw materials necessary to build their craft. We asked for a specific example of a success story and Alex told us about a gentleman named Don Carmello. Mr. Carmello comes from a rural area called Jalisco, an area that really struggles with severe poverty. Years ago, Mr. Carmello arrived in the Puerto Vallarta area with his wife and 8 children. He had 50 pesos to his name, which is about $3.29 in U.S. dollars- not much for launching a new business. The day he arrived he helped a local fisherman catch fish. Afterwards, he bought some of the fish for 30 pesos and used the rest to purchase vegetables. With these ingredients,
he made a dish called ceviche. He then sold the ceviche to workers building a resort and at the end of the day had 950 pesos (about $62.48). Now, he is one of the most successful restaurant owners in the area. Don has expanded to 10 children and provides food for prisoners in the local jail. Now that is an entrepreneur. So, next time you think you are in a bad spot with very few options, think of Don Carmello- a man with $3.29, 8 kids and a wife. People are really incredible and we hope to meet Don Carmello when we complete an academic seminar with Human Connections. Microloans and the Future of Entrepreneurship
An Interview with Bart Reagor

W
hen we contacted, Joe Landin, Director of Marketing for the Reagor Dykes Auto Group, about getting an interview with Bart Reagor, he was quick to respond and get us scheduled. Once we arrived, Bart was great. Bart took us on a tour of the property, answered all of our questions, and then took us for a ride in a 1967 Mustang. Yeah, it was AWESOME! We will tell you more about the car later. Bart Reagor opened the original Reagor Auto Mall in 2003. Twelve years later there is a car empire on the move. Now they are selling half a billion dollars-worth of vehicles each year and looking to grow. Bart is a real entrepreneur with dreams of being the largest car dealer in the history of the world and he wants to create more millionaires than any other business has… ever. So, they haven’t grown to the size they are without some BIG dreams. Now, we didn’t know Mr. Reagor when we started this. All we knew was that Reagor Dykes is “Your Friend in the car business” and they can get you “Any Car You Want.” However, in-person, we found Mr. Reagor to be friendly and genuinely interested in us and our work with My Intentional Success. He even offered us a job. We may need to complete middle school first, but maybe we will call him in a few years. He is clearly more than a “car guy.” He is a Christian, a husband, a father, a philanthropist and an entrepreneur. Bart really began his entrepreneurial career
in grade school. He would purchase candy and sell it for a profit to classmates. Unfortunately, the Reagor Candy Mall business was cut short. One day Bart arrived to school with a pillow case full of candy, and the principle revoked Bart’s candy selling license. Too bad though, we would have been happy with “Any Candy You Want.” He went on to his own lawn mowing company and roofing company, before the start of the Reagor Dykes Auto Group. Mr. Reagor reported to us that he is driven by his faith and desire to do what is right. This is probably why he sells so many cars. And he told us that he is a “right now guy.” He explained, “We all need to try to make as few mistakes as possible. However, if there is a problem in your business or you’ve made a mistake, you need to take care of it as soon as possible.” He further explained that he has learned that it is more problematic to ignore your mistakes or problems as they become larger and larger issues. When we asked Bart if he uses any skills in business that he gained from his time as a football player at Texas Tech University, Mr. Reagor said “Yes, I do. Vertical jump.” I think he was joking, but maybe he jumps after people buy a car from him. He went on to tell us that he believes that the same qualities that made him successful as an athlete have helped him in business. As an athlete he said he was undersized, not the fastest guy, but made up for it by being relentless, high energy, tough
and having a tolerance for adversity. He explained to us that he believes that football and business ownership both require a toughness and work ethic that not everyone has. Bart also made it clear to us that family, friends and community are important to him. He loves to give and does it because he can. He told us that God has given him a great deal to manage, and it seems the more he gives the more he is blessed. He advised us a young entrepreneurs to have faith and release all fears. He explained that if we are truly faithful, we will not have fear. Maybe one day we will build something like Mr. Reagor or maybe we will join forces and be one of his millionaires. Either way, we are glad to have met and visited with him. Back to the car…After the interview, Mr. Reagor took us for a ride in a beautiful, black 1967 Mustang that he had restored. It was amazing. We now really have a “Friend in the Car Business” and we can’t even drive yet.

icroloans (micro finance) is just like it sounds- small loans for entrepreneurs. Microloans are being provided all over the world primarily by non-profits. Micro finance allows hardworking people the chance to move from dependence and poverty to self-sufficiency. And, every life changed by a microloan creates a domino effect as it changes the plight of their children and generations to come. The great news is that anyone can contribute to making microloans, because you can start with as little as $25. We have done a little research and there are multiple companies making microloans that will let you join in for as little as $25. Moreover, once you get paid back, you can loan it out again. Think of how many people you could help simply by loaning out the same $25 over and over. Now, most of these sites do not charge the lenders any interest- making payback easier. This means that you will not make any interest, but what you lose in interest, you make up with positive impact. How awesome would it be to directly impact someone in the U.S. or anywhere in the world, by
helping an entrepreneur get the money they need to launch or expand their business? At MIS, we have started an account at Kiva.org. We are going to keep adding money from our profits, so we can loan out more and more money. However, there are other sites out there and we challenge you to contribute to the microloan community. The cool thing is that you get to pick the person and business to which you loan money. The entrepreneurs on these sites have profiles with information about their lives, their business and their plan for the money. This is a very real opportunity to impact lives with a very small amount of money. And, if you have been blessed and can loan out more than $25, you can help more people make their dreams come true. Day Trip! Taking a trip does not necessarily mean one has to go far. There are many places to go and sights to see just down the road. The small towns surrounding Lubbock have lots to offer! By Danielle Hathcoat
Brownfield Levelland The city of mosaics is a great place to visit for a quick getaway. Begin by taking the self-guided tour of the mosaics throughout Levelland. A brochure with each mosaic stop can be found on Levelland’s Chamber of Commerce Website or in person at the Chamber of Commerce. This tour is a scavenger hunt for the mosaic artwork around the whole town. Visitors love it! Be sure to also visit the Mallet Event Center. There are always different events held there from livestock shows and other agricultural activities to Cinco de Mayo Concerts. The downtown area is great for shopping and hosts the Historical Walking Tour every May. This is another self-guided tour that allows those taking it to know what Levelland was and how it has shaped what Levelland is today.
This small city has so much more to offer than imaginable! Brownfield is housed in Terry County, the grape capital of Texas. There are many vineyards to visit here. Choose a couple, or see them all! Texas Customs Wine Works is a wine making facility that hosts a wine festival every year. You can learn to crush gapes and visit the bottling center. Brownfield also has a brand new aquatic center that is open all summer long! It features a lazy river and slides. This aquatic park is perfect for family fun! Adjacent to the water park is a skate park, a disc golf course, and a small park for children. The Terry County Heritage Museum offers a rich history of Brownfield, and so does the Quanah Parker Trail. There is so much fun to be had!

Post
Plainview One attraction in Plainview is the Centennial Circle of Honor. The city celebrated its centennial quite a few years ago, but has placed a legacy of hard work and dedication to Plainview in this circle. Future generations can see all the people who made Plainview what it is today. The Museum of the Llano Estacado is also a must-see. This museum on the Wayland Baptist University Campus has many interesting exhibits that begin with the formation of the region during the ice age and go all the way until the early irrigation era of the 1930s. The museum also houses the Hale County Hall of Fame, which features extraordinary people of the area. Jimmy Dean, the maker of sausage who also was a singer-songwriter and actor is one of those people. There is also a full-size teepee for children to explore. Founded by the originator of Post cereal, C.W. Post, Post is a city full of history and great attractions for all ages! One of the bestknown things to do in Post is the Trade Day Downtown hosted down Main Street on the first Saturday of each month. There are many shops with unique finds at trade day. Post is also home to the OS Ranch Museum where exhibits change about three times every year, so you can visit over and over. During Easter, a special exhibit of FabergÊ, Waterford Crystal, and Lalique eggs is open. Post’s annual Christmas Parade is also a popular attraction. There is always something to do! Post is also home to Historic Hotel Garza which hosts themed murder mysteries several times a year. Explore this city for yourself!

Asian Lettuce Wraps Ingredients: 1 lb of ground meat: can use chicken, beef, pork or turkey 16 romaine or butter lettuce leaves 2 cloves garlic, minced 1 bunch of green onion ¼ cup hoison 1 tablespoon soy sauce a dash ground ginger 1 can of water chestnuts 1 large, shredded carrot 1 tablespoon sesame oil crushed red pepper flakes (optional) Directions: In a large skillet or wok, heat up the sesame oil and brown the meat. Season the meat with a pinch of salt and pepper. Transfer the meat into a bowl and set aside. Drain the skillet or wok and place it back on the burner. Slice the green onion and place it in the skillet for 3 minutes. Add the garlic, hoison, soy sauce, ginger, water chestnuts, carrot and red pepper flakes. Cook all of the ingredients until heated through. Add the cooked meat back in to cook in the sauce and veggies for a couple of minutes. Wash and dry the lettuce leaves. Plate the wraps by placing a spoonful of the meat in the middle of each leaf of lettuce. This recipe is sure to refresh and satisfy your taste buds!

French Honey Lavender Ice Cream Lavender honey is a French specialty made by bees that feed only on lavender plants. Try it in this delicious dessert. Ingredients: 1/3 cup lavender honey 5-6 egg yolks 1 ½ cups whole milk ½ cup heavy cream ¼ cup sugar a pinch of salt
Directions: Put egg yolks into a bowl and beat on a medium setting with an electric mixer. Slowly add sugar and beat for a couple minutes until the mixture is very thick. In a medium saucepan, scald the milk and heavy cream over medium-high heat. Once the milk is scalded, slowly add the egg and sugar mixture and begin whisking immediately. Add honey and whisk until dissolved. Turn the heat to low and stir the mixture constantly until it is thick enough to coat a wooden spoon. Make an ice bath by pouring cold water into a large bowl with ice. Put the ice cream mixture into a smaller bowl, and then put it into the ice bath. Let the ice cream chill in the ice bath while stirring from time to time. After 45 minutes or so, pour the mixture into an ice cream maker. When it’s done, garnish it with some dried lavender. Note: Lavender honey can be purchased in a variety of places online, or make it by placing dried lavender in a clean jar and pouring honey over it. Use about two tablespoons of lavender for every cup of honey. Allow the lavender to infuse in the honey for at least five days.
Easy Italian Ice What is better than a cold treat in the summertime? Ingredients: 2-3 cups of fruit of choice ½ cup sugar 2 cups water 1 tablespoon fresh lemon juice cups ice
Directions: Stick a shallow baking dish in the freezer before beginning. Then, place the water in a saucepan over medium-high heat. Once the water comes to a simmer, add the sugar and turn the burner down to medium. Stir the water and sugar until the sugar is dissolved and the mixture becomes syrupy. Blend fruit, sugar water mixture, lemon juice and two cups of ice in a food processor or blender until it is somewhat blended. Add the last cup of ice and blend until smooth. Take the shallow baking dish out of the freezer and pour the contents of the blender into it. Place it back into the freezer for 30 minutes. After that, pull the Italian ice out of the freezer and scrape it with a fork until it reaches a slush consistency. Put it back into the freezer for two hours. Scoop the Italian ice into paper cups and enjoy! If you don’t have a fruit of choice, mix and match some. Try strawberry banana or a mixed berry using blueberries, raspberries and blackberries. Mexican Fresas con Crema (Strawberries and Cream) Fresas con crema is a Mexican delicacy found in many food shops in Mexico. It is a must-try summer snack! Ingredients: 1/8 cup sugar ¼ cup powdered sugar ½ cup milk ½ cup Mexican crema or table cream 4 cups strawberries ¼ cup sugar
Directions: Slice each strawberry in half and mix in a bowl with ¼ cup of sugar. Set it aside, and let the strawberries natural juices mix with sugar for at least 30 minutes. In a medium bowl, mix 1/8 cup of sugar and the powdered sugar with milk and Mexican crema. Place a cup of strawberries in a small bowl or a tall cup and pour enough of the cream mixture to cover them. Top it off with whipped cream and cinnamon for an extra touch. This recipe will not disappoint!

English Pea Salad Cool off with this fresh pea salad brought to your kitchen all the way from London. Ingredients: 4 slices bacon 1 package of frozen English peas, frozen and thawed ¾ cup shredded cheddar cheese ½ cup finely chopped celery 2 hard-boiled eggs ¼ cup mayonnaise salt and pepper to taste 2 teaspoons of fresh lemon juice ½ onion chopped
Directions: Cook the bacon in a large skillet over medium heat until it is crispy. Place it on a plate lined with paper towel to cool. Bring water to a boil in sauce pan, and put the eggs in it. Boil the eggs for about 15 minutes. In the meantime, break the bacon up into small pieces. Put all the ingredients except for the eggs into a medium bowl. Once the eggs are ready, chop them into small pieces and add them. Toss everything together and enjoy!
South American Shrimp Ceviche Ingredients: 1 lb medium shrimp one medium red onion one jalapeño pepper ½ cup cilantro leaves 2 tomatoes juice of 2 lemons juice of 2 limes 3 large ripe avocados 1 mango salt to taste 34 | HOME & FAMILY MAGAZINE 2015
Directions: If the shrimp is not precooked, bring a pot of salted water to a boil. Add the juice of one lime, and boil the shrimp for one to two minutes. Drain the shrimp and rinse with cold water. De-vein the shrimp and cut tails off. Chop the onion and tomatoes into small pieces. Also, mince and remove seeds from the jalapeño. Combine onion, tomatoes, jalapeño and shrimp in a large bowl. Cut the avocado and mango into bite-sized pieces and add them as well. Toss all the ingredients together with the juice of the remaining lime and the two lemons. Add salt to taste and garnish with chopped cilantro leaves. Enjoy this ceviche with tortilla chips or in a corn tortilla as a taco.

Surprisingly, there are many options for the traveler who wants to see the world without going bankrupt. When you choose the right area of certain countries, you can travel with a light wallet. Here are five travel destinations that won’t cost you more than $30 a day.
Indonesia You can often eat meals here for as little as 50 cents and no more than one dollar. Street food is recommended for a cheaper stay, and it’s delicious! Your biggest expense will probably be the hotel. However, some budget hotels are as low as eight dollars a night. Pretty good, huh?

within Central America are great costeffective places with the exception of Belize, Panama and Costa Rica. Budget hotels are around ten dollars a day and food is affordable. Backpacking is a great activity to do here, and it will not break the bank.
Thailand Thailand does have some costly tourist islands, but avoiding those areas will be easier on the checkbook. Thailand has incredibly delicious but inexpensive food. You can stay in extremely clean guesthouses for as low as ten dollars a night. However beware, don’t buy alcohol there. That’s where they will charge the big bucks.
Romania The famous home of Dracula is another option under 30 dollars. There is scenery for all your moods. Feel like going to the beach? There are plenty of beaches. Feeling like you would rather be in the hills? Southern Bukovina has beautiful hills to enjoy. Feel like enjoying beautiful rocky peaks? The Transylvania Alps can help with that. Low cost bed and breakfasts in the homes of locals are the best places to stay.

aving babies or small children in your family doesn’t have to stop you from having a vacation. In fact, there are many places that are smallchildren friendly. Beaches are a great vacation spot for families with young kids. Make sure to pick a spot with calm waters and clean sand (for making wonderful sand castles). Cruises are another great way to vacation with little ones. Cruises are great about catering to families with young children by providing large indoor play areas, and kidfriendly foods. Of course, you can’t beat the great theme parks like

Disneyland and Disney World. They have tons of kidfriendly areas and a baby daycare facility. You can even rent a stroller. Sesame Place in Pennsylvania is also a great theme park if your kids are fans of Sesame Street. The park has great attractions like Cooke Monster World and Elmo’s world. Other exceptional vacation spots for families with young kids are water parks, all-inclusive resorts, or farm and ranch retreats. No matter which vacation spot you choose, it is certain to be a fun time. Don’t let the age of your kids stop you from going on memory-making vacations. The Grand Canyon, one of the Seven Wonders of the World, has nearly two billion years of geological history. The mile-deep canyon is sure to educate and wow your kids. Mount Rushmore is a mountain with history actually carved into it. A beautiful sight to see and you can teach your children about four of America’s great presidents George Washington, Thomas Jefferson, Theodore Roosevelt, and Abraham Lincoln. Cleveland literally rocks, because it is home to the Rock and Roll Hall of Fame. The exhibits in the hall of fame are sure to interest and enlighten any age. Some of the exhibits feature The Beatles, Elvis, and Chuck Berry. If you’re a baseball fan, take your family to the Baseball Hall of Fame in Cooperstown, New York. Travel Agent? Which Works For You?
Planning a trip can often be a daunting task. As a result, many resort to paying a professional to plan the trip instead. For those of you trying to decide if your next vacation needs to be planned for you, here are some pros and cons of using a travel agent. by Danielle Hathcoat
Pros: Save time and money. When planning a trip yourself, you often must spend lots of time on the internet or on your phone comparing prices and finding deals. Travel agents usually have access to better deals than you can find. No hours of searching for you! Knowledge is power. Travel agents are knowledgeable on basically any travel question you have. Want to know the best time to travel to your destination? Or how about sights to see? Your agent will be able to answer these questions for you. Airline Ticket Tricks. Travel agents can help find the best airline tickets for the best prices. At times when your preferred flight is “unavailable,” an agent can get the “unavailable” flight for you.
Cons: What’s better for me? Some travel agents do what is better for them rather than what is better for you. Some of them will use their preferred hotels, airlines, etc. who will give them a bonus for booking you with them rather than what best suits you. Extra fees. You pay extra fees to your agent to travel through them. Travel agents often charge fees for planning your trip and for booking flights. These fees end up taking some money you were planning on using as spending money on your trip. Your trip is out of your hands. You’re putting great trust in someone else. Are you okay with letting a third party plan and dictate your own trip? Some may not be okay with this.
In some cases, a travel agent can wash away the trip planning blues. In other cases, not so much. Analyze your situation and choose the arrangement that works best for you. 54 | HOME & FAMILY MAGAZINE 2015

here was once an assistant principal who joined in on a school trip to Disney World in Florida. He embarrassed all of the high school students going on the trip because he looked like a total tourist. Here are four tips for you to avoid doing the same. • Speak normal and with a low voice volume. One mistake many American tourists make is the way they speak to those in places they visit. We often go to other countries speaking loud and slow. Not a good idea. • D itch paper maps. We have a great new technology these days called GPS which allows you to follow a map on your phone. You are less likely to look like a tourist when walking through streets on your phone rather than with a map. • N o backpacks. It’s hard to carry everything with you when traveling, but there are great travel bags that can fit all of your needs. Backpacks make tourists stick out like a sore thumb. • P ut your camera away. We all want to document our trips and that’s fine, but to avoid looking too tourist-y snap your pictures then put your camera away. Wearing your camera around your neck makes it easy to steal. 1. Costa Rica. So many tourists visit this country that it has become one of the safest places. More tourists visiting has resulted in the decline of crime. Sounds twisted, but it’s true. This makes it safer than ever for you to visit solo. 2. Iceland. Foreigners coming to this country are often able to adapt quickly to their surroundings once here. The Iceland natives also treat those who visit very well. Any location where natives treat foreigners well is perfect for solo travel. No worries about mistreatment there. 3. Singapore. This city has extremely low crime rates. Citizens in Singapore even took a vote with 98% saying they feel safe walking home at night. If the locals can feel safe, tourists should too. 4. New Zealand. New Zealand is said to be built for solo travel. Not only is it safe but there is much to do. Since it’s known for solo travel, it is also a great place to meet other solo travelers. If you visit here, you will likely end up making friends.

Traveling Safely Sometimes when you are ready to travel, your friends and loved ones are not able to accompany you. Traveling solo can be fun yet nerveracking. Women often feel most unsure when traveling alone. These are seven of the safest places for you women who are itching to get out of the country with no traveling partner.
5. Canada. People don’t often speak of traveling to Canada, but it’s a great place to go! This is one country you can go to without sticking out like a sore thumb. Blending in often
means you are less likely to be taken advantage of. You will not have to worry about a language barrier when visiting Canada, either. It’s a win, win! 6. Cuba. Cuba is one of the new “hot spots,” and it is ideal for the solo female traveler. Locals will treat you as one of their own. With many tourist spots come scams that can become harder to deal with when traveling solo. Not to worry! Some Cubans try to scam tourists, but when compared to scams in other countries they are harmless. 7. Morocco. The Moroccan king has cracked down more and more on crime and scamming foreigners in markets that travelers frequent, which has made them much safer than before. Be sure to wear clothes that keep your arms and legs covered in order to respect local culture. Don’t let the fact that you do not have a traveling buddy keep you from seeing the world! These places are great to begin traveling solo. They may even help you discover that you would rather travel solo. You never know unless you try.

Road Trip! Road trips can be a great way to get the family together for a vacation they won’t forget. There is no better way to bind a family together than through a long trip in a car. By Blaine Hill
T
here are many great routes for a road trips. You could do the classis Route 66, which winds across America and travels close to home, through Amarillo. “The mother road” is home to one of the oldest truck stops, Dixie Truckers homes, which has some amazing eats. Four Women on the Route, also on route 66, is a great stop in Galena, Kansas. It has a great snack bar, and it houses an old authentic boom truck that locals say inspired Tow Mater from the movie “Cars”. Traveling the Columbia River Gorge to see the second-longest river in the U.S can be a beautiful sight if you love crisp river air. Columbia River Highway was
the first scenic highway in America. The views on the highway do its “scenic” title justice with killer green drop-offs looking down to the river. Drive Highway 61 if you want a musical themed trip on the highway of blues. This highway offers many places to hear wonderful live music and taste wonderful barbecue. Especially in Clarksdale, where you can stop and check out the “who’s playing” board to see where the blues are being played. Then, you can listen while you sit down to some of the best barbecue chicken. However, if you want to stay in Texas, you can take the scenic route through the Texas hill country. This trip winds through some small towns of Texas that are just perfect for sightseeing. The trip starts in San Antonio then makes its way through Kerrville, Fredericksburg, New Braunfels and Gruene. Finally, California’s pacific coast highway is perfect if you want a beach road trip. This route only takes about five hours, so you can plan in plenty of time to explore. It goes through Carmel-by-the-sea, which is a great place to shop and visit the local beach. Before you go on any road trip, you should think about how much money you’re going to spend on gas, food, hotels, events, and equipment. Factor how much you are going to spend on

each, that way you can figure out how long your trip can be without breaking the bank. For some road trips, it may be easier to hop in your car and go. For others, it may be more cost efficient to hop in a plane, and then rent a car once you’ve reached your destination. Including how to deal with all the bumps a road trip can bring, and how to enjoy the fun times you will have along the way. Mount Desert Island, Maine. The largest island off of
Anastasia State Park in St. Augustine, Florida.
Maine’s coast is a beautiful spot to set up camp. This camp site is “modern” in nature with some campgrounds featuring wifi. When you camp here, you can enjoy the beach and water activities such as kayaking, fishing and swimming. Hunt for fresh blueberries to put into your morning pancakes. In the afternoon, fish for your dinner.
Not only is this campsite beautiful, but it also has much to offer. Anastasia has four miles of beaches to explore. When camping here you can make a splash in the ocean, rent a paddle boat, rent a sailboat, and go kayaking. You can also go biking and observe all of the birds along the Birding and Wildlife trail. Nearby is the St. Augustine Amphitheater which hosts live music and art shows along with a weekly farmer’s market.
Balmorhea State Park in Texas. One of the coolest campsites is not far from our own backyard. In Balmorhea State Park is Texas’ very own desert oasis. The main feature of the park is the freshwater pool built around the springs. This is one of the few places you can scuba dive in Texas. How cool is that?

Potty training is a daunting task. Wouldn’t it be so much easier if parents received training for potty training? Look no further. Your trainer is here. Here are 5 tips that will make potty training easier. By Danielle Hathcoat

Know when your child is ready. Not every child is ready to potty train at the same time. When your child is physically ready, he or she will prove ready. Some of the signs to look for are: they urinate a good amount at one time, they have well-formed bowel movements at somewhat predictable times, and they have “dry” periods of at least two hours. Show what the potty is for. Once your child is somewhat familiar with the potty, it is time to show him or her what it is for. Begin by sitting your child on the potty without clothes on. After a few days, when they have a dirty diaper, have them watch you dump it in the potty. Explain that urine and stool belong in the potty. Look for signals and run. Your child likely will begin showing when they need to go. Look for these signs, and respond quickly! Help your child become familiar with the fact that when he or she begins doing this, it is time to stop whatever they are doing and go to the potty. Don’t forget to praise them for telling you when they need to go. Ditch the diaper. After several weeks of success, it may be time to move on to underwear. Good job! Take your child to the store to help pick some underwear out. Show them how great it is that they get to do this. Just remember that daytime control of going potty often comes before mastering it in the night. Know when to stop. If your child does not master using the potty within a couple of weeks, it’s okay. Take a little break from trying. Pushing them when they are not ready will only stress them out. Try again later.
Potty training can be made easier by following these steps. Don’t forget to reward your child for each step he or she takes. Even if they don’t make it, praise them for trying. This will lead to greater accomplishments.

Co-Sleeping To sleep with baby in your bed? Or to not sleep with baby in your bed? That is the question. Whether or not your baby should sleep with you is a hard decision to make. Even celebrities (ahem Kourtney Kardashian) struggle with it on television. Here are some pros and cons to help you make the decision right for you.

Pros It allows you to have extra time and closeness with your baby. This means you and your baby are likely to develop a stronger bond with each other through co-sleeping. This is also extremely helpful if you work away from your baby most of the day. Co-sleeping encourages breastfeeding by making night time nursing more convenient. You are able to breastfeed your baby more comfortably throughout the night. It is proven that babies will nurse for longer and that you and baby are more likely to doze off while nursing when co-sleeping. It gives your child a sense of security. Sharing a bed with mom and dad gives your baby a sense of security which likely means less crying and less waking up during the night. This is great news for both you and baby!

Sleeping with a wiggly baby is not for light sleepers. Sleeping with baby could mean you are awakened often. That may not be the experience you are looking for. It can affect your love life. If your baby is sleeping in the bed with you and your hubby, then chances are you are neglecting your time of intimacy. You and your spouse still need time for each other without baby being in the middle. There are potential risks. The American Academy of Pediatrics advises against sleeping in the same bed for safety purposes. They recommend taking your infant to your bed for nursing, comforting and bonding. However, in an effort to reduce the risk of SIDS they say to put baby back into his crib once you are ready to go back to sleep.
Whether or not your infant sleeps in your bed is ultimately your decision. What you decide will be correct for you. Use these tips as a guideline to make that tough decision. MOMMY & ME MAY-JUNE 2015 | 70

The Recycling Bin: It’s the same idea as the magic box, but with more items. It could be anything from a cereal box to a milk carton. Challenge them to make something creative from it like a rocket, a car, a hat, or an animal.
Bath Time: Fill your bathtub up with water, throw in some cups or bath toys, and watch your kids play! (until the water gets cold of course)

Digging: Give your kids a spot in the backyard where they can dig to their hearts content. Think about adding a sand box if they really enjoy digging.

With just a few minutes of prep time, or a few bucks at the store, you can have few minutes of freedom.

Paint bag on the window: Place a little bit of paint in a gallon zip-lock bag, seal it, and tape it to the window. It’s mess free, but it will keep your kids busy. Put two colors in the bag and watch your kids mix the colors.

ecoming a big brother or sister is a big milestone for your child, but it also can be a confusing time. Imagine your husband coming home and telling you he is bringing home a new wife. You don’t want to be selfish with your husband, do you? Not to worry, according to him you will have nine months to prepare to share. He tells you he will still love you the same and you will get to help set her room up and buy her gifts. This sounds crazy doesn’t it? Well, it is close to what your child hears when you say the same about a sibling. Here are 5 ways to better prepare them for what is to come. Use books. A great way to help prepare your child for their new sibling is to read them books about it. Even if it is a book about a bunny rabbit getting a new sister your child will relate. Your child will enjoy the way he or she relates to those book characters. I’m a “big kid” now. A great way to get your child excited about being a big brother or sister is by letting them do things only “big kids” are allowed to do. Tell them their
new baby brother or sister won’t be able to do this but they can because they are big. Bring on the babies. Let your child get used to the idea of having a baby around by letting him or her spend time with another baby. Have a friend or family member bring their baby over for a few hours to give your child that experience. Gift exchange. Take your child shopping for a gift for the new baby. Explain to them that when their sibling comes, they will give it to him or her. It also helps if your older child receives a gift from their new sibling at the hospital. Make one-on-one time. After the new baby arrives, your child can feel forgotten. Make sure you set aside some time to be with him or her one-on-one. This time will not go unnoticed. This is a tough process that you can make easier on your family. Prepare yourself for a variety of reactions, and the one you get may not take you by surprise. Growing your family is exciting! Greetings, Friends! Welcome to the premier issue of Mommy and Me. We are excited to bring you Lubbock’s only full magazine exclusively for the mom-to-be and the new mom. This edition debuts during Mother’s Day which seemed to be the perfect time to not only celebrate motherhood, but to bring new mothers expert information. Having begun my journey of motherhood many years ago, I can tell you that I read everything I could get my hands on to answer all those questions that flood a young mom’s mind. Hi, I’m Moochie! I absolutely love mommy and me magazine because I love my mommies and all that they do. I represent every child out there. I am the most adorable thing you will lay your eyes on… besides your own children. However, don’t let my appearance fool you. Like every child, I am adorable but monstrous. I put up my toys just to throw them across the floor again. I allow carrots to be put in my mouth just so I can spit them out. I let my people give me a bath so I can get myself really dirty after. At the end of the day, all there is to do is love me. I take a lot of time and energy out of those who encounter me, but one can’t help but look at me with anything other than loving eyes.
