Deviled California Avocados Prep time: 30 minutes Cook time: 15 minutes Total time: 45 minutes Serves: 4 Ingredients: 2 slices sourdough bread 4 tsp. extra virgin olive oil, divided 2 cloves garlic, peeled 4 hardboiled eggs, de-shelled 2 Tbsp. parsley, chopped 2 Tbsp. chives, minced 1 lemon, zested and juiced 1 tsp. kosher salt, divided 1 tsp. coarse black pepper, divided 2 ripe, Fresh California Avocados, peeled, seeded and halved 4 Tbsp. pepitas or pumpkin seeds, toasted and chopped 2 tsp. nutritional yeast 1 tsp. smoked paprika 10 leaves watercress or arugula

1. Preheat oven to 300 degrees F and brush sourdough bread with 2 tsp. olive oil.

2. Once oven is heated, toast bread until crunchy, about 15 minutes.

3. While bread is still warm, rub 1 garlic clove on toasted bread and let cool.

4. Once cool, add toasted bread to a food processor or smash in a plastic bag with a rolling pin, to create breadcrumbs.

Set aside until ready to assemble.

5. For egg salad, separate the hardboiled egg yolks from the hardboiled egg whites, and chop each coarsely.

6. In a large mixing bowl, add hardboiled egg yolks and whites, parsley, chives, 2 tsp. olive oil, 1/4 tsp. of lemon zest, 1/2 tsp. of lemon juice, 1/2 tsp. salt, 1/2 tsp. pepper and mix well.

7. Season avocado halves with 1/2 tsp. of lemon juice and remaining salt and pepper.

8. Divide the egg salad between each avocado half, filling them where the seed once was.

9. Top stuffed avocados by sprinkling with breadcrumbs, chopped pepitas, nutritional yeast, smoked paprika, and finish with leaves of watercress or arugula. **Large avocados are recommended for these recipes. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.

Isn’t there time for that later when they’re older?

Cyndi Dear Cyndi, I firmly believe that one of the best ways you can make sure your kids are ready to face adulthood when the time comes is to teach them how to handle money at an early age.

The reason? Learning about money, and how to manage it in a wise, mature fashion, is about a lot more than just dollars and cents.

There’s a quote from author Andy Andrews I really love. He says, “The goal is not to raise great kids. It’s to raise kids who become great adults.” If you think about it, there’s a subtle but powerful distinction here. Kids might behave well out of a sense of obedience or even fear, but that doesn’t mean they’ll do what’s best for them once they’re on their own. To raise kids who later become great adults, you have to begin instilling good character traits in them at an early age.

Work equals money.

When you teach kids

to work, you’re teaching them responsibility. Whether it’s chores around the house or a job at the mall, work involves accountability and following through on tasks. Work shows kids they are in control of their actions, and that they will reap the rewards or consequences of those actions.

Teaching kids to save teaches them patience.

Today’s world is one of instant gratification, and saving money makes you slow down and think. It also shows kids they can’t have every little thing they want the moment they want it.

When you teach kids to give, you’re teaching them generosity.

A willingness and desire to give doesn’t always come natural to us when we’re young.

Parents should encourage and model the act of giving, because generosity is a wonderful character trait and a powerful weapon in the fight against selfishness and greed.

Finally, teaching kids to spend responsibly is a great way to teach wisdom. All kids totally get the idea that spending money is fun.

That’s a no brainer. But when you get involved in teaching spending as

something that should be thought through and done with care and reason, you’re imparting the idea of using good judgment and thoughtfulness before taking action.

4-H Dog Project Begins

(CANTON Would your Child be interested in learning to train their dog?

Van Zandt County 4-H is searching for youths, ages 9-18 to be a part of making history in 2021 as we kick off the new year with a newly formed 4-H Dog Project group.

Nancy Szabo and Shari Curran both have over 30 years of dog training experience and will be facilitating this fun filled learning adventure!

Regardless of whether they have a mixed breed or purebred, all kinds of dogs are welcome in the 4-H Dog Care and Training Project. They can learn about puppy care, grooming, caring

for mature dogs, training, showing, therapy dogs, service dogs, agility training and working dogs.

Obedience classes will be offered so the children can learn how to train their dog!

They will also learn about daily care and health of dogs. Most important of all is having fun as they build a bond with their dog and make friends who love dogs too!

Texas 4-H Dog Show is a state event held each year in July, and offers classes in agility, rally, obedience, costume, tricks, drill, showmanship, and conformation.

(NAPSI)—The video game industry has a Texas-sized effect on the Lone Star State’s economy.

A new study by Entertainment Software Association (ESA), shows the video game industry in Texas generates $4.15 billion in annual economic output, either through direct industry output ($1.8 billion) or via other participants in the video game ecosystem, such as suppliers and other supported output ($2.4 billion). What’s more, the industry accounts for about 25,000 jobs in the state, either directly through industry jobs (about 9,800) or through supplier and other supported jobs (about 15,200).

Overall, the U.S. video game industry’s annual economic output is $90.3 billion and accounts for nearly 429,000 jobs.

These are among several key findings from “Video Games in the 21st Century: The 2020 Economic Impact Report,” a review of the industry and its wide-ranging impacts released by the

Entertainment Software Association (ESA). The report outlines ongoing advancements in technology and vast participation in gameplay that transcends all demographics (in fact, one in three citizens of the world play video games).

Video games are vital in numerous other aspects of Texas life. Americans across age, gender and other demographic measures find many positive benefits to video games.

For instance: •More than 214 million Americans play video games •64% of U.S. adults and 70% percent of those under 18 regularly play video games •The average age of a gamer is 35-44 years old.

Further, the report outlines video games’ effect in developing innovative, far-reaching technologies, such as virtual reality, advanced computing and machine learning.

“Video games are a source of much-needed entertainment, stress relief, escape and social interaction,” ESA President and CEO Stanley Pierre-Louis pointed out.

“The statistics in this detailed report reinforce the significant impact video games have on the U.S. and state economies, including job creation and providing family-sustaining wages in a wide array of careers.”
