elcome to the Cooking Under the Tuscan Sun Experience!

My cooking school offers you one day cooking class, cooking vacations and fun!

Silvia Baracchi The classes celebrate traditional Tuscan recipes and are designed by Silvia Baracchi, Michelin Star chef and owner of Relais& Chateaux Il Falconiere & Spa. You will learn to cook authentic Tuscan cuisine in focused, spirited classes in our residential style kitchen, using local ingredients personally selected by the Chef under healthy, ethic and protection of the land criteria. Following your cooking class you will enjoy a seated, served dinner in our charming dining room, in which we will enjoy the food you have prepared. When you walk through the front door of our kitchen, you are walking into a house. We carefully designed the Cooking Kitchen to avoid comparisons with stainless steel dominated restaurant kitchens and Cookery Schools. We want you to feel relaxed and at home and so our courses are designed around the sort of cooking you would do in your own kitchen to entertain family and friends: our aim is to inspire you and send you home with new and exciting recipes whilst at the same time giving you time to cook with like-minded people. It doesn’t matter what level you are, just come along and enjoy the experience! You'll learn how to make delicious bread, pasta, stress free main courses, impressive starters and tempting desserts.


COOKING UNDER THE TUSCAN SUN DAY 1 Welcome cocktail with Silvia, your host for the week. “The stylish and fun Baracchi family, Riccardo and his wife Silvia, with their son Benedetto, own the sybaritic country inn and restaurant Il Falconiere. The hospitality of the family reveals the depth of their joy of living. What feast they produce! I was flattered when Silvia named her school “Cooking Under the Tuscan Sun.” Silvia is a cutting-edge chef with intact, deep country roots. Whatever I think I know how to do, Silvia can knock it up a notch” Their inn is a second home for us. Riccardo makes highly prized wines and a Champagne-method sparkling wine that inspires Ed to write sonnets.” From the Tuscan Sun Cookbook of Frances and Edward Mayes. The aperitif will be followed by a delicious Gourmet dinner in our Michelin star restaurant. DAY 2 At 10.00 a.m. departure for a guided sightseeing tour of Cortona for a visit of this charming city, setting of the book and movie “Under the Tuscan Sun.” Lunch at Bottega Baracchi and come back to the Relais for your first cooking class: “Tuscan cuisine transports, comforts, entices, and speak to the friendly, genuine. And Improvisational spirit of Tuscan life. Both Cooking and eating in Tuscany are natural Pleasures”… Today Special! : Eggplant roll with prosciutto and bufala mozzarella, Pici pasta with cherry tomatoes, Pork medallion with black olives and orange aroma, Tiramisu. Dinner with your creations matched by great Tuscan wines. DAY 3 At 10.00 a.m. ready for the second Cooking lesson followed by the lunch. “Tuscan food tastes like itself. Ingredients are left to shine…So, if on your visit, I hand you an apron, your work will be easy. We’ll starts with primo ingredients, a little flurry of activity, perhaps some glasses of O’Lillo! of the Baracchi Winery, and soon we’ll be carrying platters out the door.” Zucchini flowers with ricotta cheese and basil, Gnudi of Ricotta with baby vegetables and saffron sauce, Chicken with Tuscan flavors, Cantucci. In the afternoon at 6.00 p.m. Tour of the vineyard and winery of the Baracchi estate followed by the sabrage and wine tasting dinner in the restaurant. DAY 4 Enjoy your breakfast … Arrivederci to next year!
