This is always my favorite time of the year. Few things make me as giddy as waking up to hear the Mariah Carey’s voice come flying through the air from the speakers on Steinway, where the street lights and lamp posts transport me to a whole different time and place. Nothing makes all of the neighborhood’s cultures seem more vibrant and alive than the holidays, and Western Queens is like an enormous treasure chest of the world waiting to be explored. Whether your gift this year will be membership at the newly opened Workout Factory or Unlimited Body, a city silhouette necklace from Lockwood, or perhaps a visit to the LIC Flea or the nearby newly opened outpost of Cannelle Patisserie, our neck of the woods is the gift that keeps on giving. “Happy Holidays!” No matter who you are or what holiday you celebrate—if any—the phrase immediately causes a reaction when we hear it. Even if just a reminder of that rumble in your stomach as you look forward to chowing down on some Christmas ham, or the stress over what to buy Aunt Betty for Chanukah. The holiday season overall is a time for celebrations with those we love. But what about the folks in the service industry? The cab drivers, the retail workers, or the staff of your favorite food establishments and watering holes? What happens to their celebrations, given they are very often working through most of them? How do they manage to find the time and energy to enjoy some holiday cheer? Kevin Farrell, a bartender at Astoria Tavern (33-16 23rd Avenue, www.theastoriatavern.com), is disappointed he missed Thanksgiving with his wife. “I’ve always loved Thanksgiving. It’s like Christmas without the hassle of having to buy presents!” Ah, the Irish. The payoff—spending this Christmas in his native Ireland, where the entire country apparently shuts down for a week. Fear not—the pubs only close Christmas Day. Bar owner Mike Krawiec finds holiday joy in making everyone who comes through his doors happy—whether it’s at Sweet Afton (30-09 34th Street, www.sweetaftonbar.com) or the newly opened Bonnie (29-12 23rd Avenue, www.thebonnie.com). “To me, what makes this all worthwhile are the relationships you make with the customers as well as to each other.” He ain’t kidding—he introduced two of his customers who later married. That’s what I call gracious hospitality. Despite having to work Thanksgiving and Christmas, Igloo Cafe (22-26 31st Street, www.igloocafe.com) owner Lisa Panagiotopoulos loves knowing how happy she is making others. Daughter Christina helps out along with her grandchildren, who sometimes make coffee for the customers. Son, Harry, will be working a few doors down on Christmas at his sports bar and restaurant, the Sweet Spot (22-72 31st Street, www.sweetspotastoria.com). a few short hours in between the madness to have some turkey and catch-up time. But Lisa doesn’t complain. “I’m well. My children are well. Nothing else matters. It’s a blessing.” Amen to that. Over at Martha’s Bakery (36-21 Ditmars Boulevard, www. marthascountrybakery.com), working the holidays is simply a given. Thanksgiving and Christmas are Martha’s two busiest days, and owner George Stertsios is pulling all-nighters on the eve of both holidays, and will remain to greet arriving customers the following mornings. But he loves it. “We make a lot of people really happy during the holidays. It’s very, very gratifying.” George’s face lights up when describing his smiling customers, as they pick up their pies and assorted desserts. And boy does he make pies. His normal 300-400 pies per week increased to 4,000 the week of Thanksgiving at each of his three bakeries. As a server, I’ll be working Thanksgiving and Christmas, and since I’m a Jewish Italian, it’s a double whammy of missed celebrations. The consolation prize? My second annual “Hallmark Holiday Movie Extravaganza,” with my gal pal Betsy and her dog Hannabelle, where we will watch Hallmark holiday movies ad nauseam. My coworker Shaheen Ahmed, a twenty year Astoria resident and practicing Muslim, positively beams when discussing the holiday season. “I love the holidays! It’s a celebration and it’s a holiday, even if it’s not my holiday. So we all get together—every time, every year, we choose one of our houses.” And this year will be at Shaheen’s house. This holiday season, pay attention to that server handing you a goat cheese tartlet at your company’s annual Christmas party or the salesperson who wrapped your Chanukah present for Aunt Betty so perfectly. Keep in mind what they are sacrificing to make sure you have a jolly holiday. Let them know they are appreciated for what they do. A heartfelt thank you to a service industry professional is a small price to pay for making their day brighter and a whole lot merrier. Peace!

a few weeks ago, they opened their second location just a block from the Long Island City waterfront. Owner and baker Jean-Claude Perennou was eager to give us a tour of the newest facility. And although most of the pastries are baked in specialty ovens in East Elmhurst, the LIC location will feature many exclusive items only available there. “Most of the breads here are a little more labor-intensive,” explains Perennou. “And we will feature four versions of our Christmas logs,” he smiles.

The miraculous canelé

Pink spirals of coco fraise reach toward the ceiling, golden domes of mango and kiwi glisten in the pastry case, napoleons conceal sweet creams beneath zigzags of chocolate and vanilla frosting in flaky thin layers of pastry, slivers of apples rest cheek to cheek beneath blankets of sugary glaze, and pies of pecans, pumpkin, and chocolate mousse beg to be chosen to take home. Cannelle Patisserie has been a beacon of Parisian baking in East Elmhurst for over seven years, and just

For the requisite sampling, we decide to savor the bakery’s namesake—one of the canelés. These mysteriously magnificent little domes originated in Bordeaux, though they are commonly found throughout Paris. The source of endless myths and legends, some say they were developed by a tiny convent of nuns in Bordeaux, while others attribute the origins to the winemakers of the region who utilized only the egg whites, leaving behind the yolks for the pastries. Regardless from where they came, we are thrilled they can now be purchased on 47th Avenue. The crisp, crunchy, caramel casing gives way to an airy, rum-kissed pastry laced with custard. These little two-bite treats are simply exquisite. Patrons can also select various quiche and croque monsieurs from the fridge—and they are offering soups as well—most recently French onion. Everything is worth a try, so come prepared for a line—especially on the weekends. The best part? Dogs make my heart happy. Period. If you’re like me, you’re already wondering what special something to get that special “furry friend” in your life. Well in my case, I have many furry friends. Lockwood Style opened its doors to Astoria a few weeks ago with much fanfare. Locals were invited to check out the widely varied selection of clothing, shoes, perfume, handbags and jewelry. When asked to describe the shop, owner Mackenzi Farquer said, “Lockwood Style is really approachable. I think a lot of fashion stores I would pass by, and part of my intention was to build it so that it was a comfortable space. We have every size, we are open to feedback, and we carry a large selection. It’s not just clothes, it’s handbags, it’s shoes, and it’s jewelry. It’s a one stop shop and the only all size boutique in NYC that I am aware of.”

Why a clothing shop in Astoria? “I opened the shop,” replies Farquer, “because far and away it was the feedback that we were getting that people wanted a clothing shop in the neighborhood. I wanted the stop to be a children’s store and move the kids’ stuff out of Lockwood, and I got a lot of negative feedback about that. It blossomed when we had the opportunity to make the store.” Farquer signed the lease in September and Lockwood Style was open by the first week in November. “You know how I roll. I opened Site in 30 days,” she shared.

Some of the highlights of items in stock include the vegan leather bags and coats, sold for their affordability and animal cruelty-free option. The store will try to carry a varied selection of clothing, perfume, and jewelry that is locally made. Gifts have the option to be beautifully wrapped in-house, and none of the stock is duplicated with what is sold at Lockwood. Shopaholics will enjoy the fact that new items are received every week, several times a week. Upcoming events include a trunk show on December 7th with Emily Shapiro jewelry—an Astoria resident. There are plans for more trunk shows and some shopping nights leading up to Christmas.

When asked what it was like owning the two shops side by side she responded, “Having both stores side by side has been awesome, and this is closer to Broadway. It all ties to Lockwood. It’s designed to look like Lockwood. I wanted it all to be a cohesive brand. This is really inspiring to me. I like coming here, and I like working at Lockwood. I never thought in my wildest dreams I would have a clothing store.”

Nick Cave once crooned about the torturing nature of love with his song, Let Love In. The name of the song stayed with Evan Roumeliotis for many years, and when the time was right, he used it for his latest venue, The Letlove Inn. “I was saving the name for a look I had in mind, but after building and finishing the bar, I decided it fits this look too” said Roumeliotis, owner of Sparrow Tavern and Mar’s, both in Astoria. “The bar could best be described as turn of the century elegance that has been worn out throughout the years. Like somebody found it, dusted it, and moved right in.” Stepping into the Letlove Inn is like stepping back in time. “The bar we found was underneath layers of the old bar. It was under two layers of wood paneling. This bar was originally built after the prohibition. Local legend is that the bar was the third bar issued a liquor license after prohibition. We took down the sheet rock ceiling, and it was a tin ceiling. There were plaster walls underneath the layers of wallpaper,” explains Roumeliotis. The Letlove Inn is going to be all about the music, and everyone employed there is a musician. The neighborhood can look forward to live music and playlists from a few experts. Bartenders Chris Theodorou and Hugo Gasc have a long career in playing music, and cocktail creator Joshua Everett Johnson has been writing music for over twenty years. Calling this the most traditional bar he has ever built, Roumeliotis—with Johnson—has

created a playful cocktail list that will include a take on the classic cocktails. “We are going to have classic cocktails that are going to be a refined version of the 80’s cocktails, like the Woowoo, the Kamikaze, the Fuzzy Navel, and the Sex on the Beach,” he explained. Johnson elaborated further, “There are about 8 cocktails that we are working on that will be narrowed down, and we will add some classics in. We are excited about them, and excited about the opportunity to create cocktails again.” Based on experiences in Austria, Roumeliotis will also be featuring a high end schnapps cocktail selection. “We are going to introduce New York to the world of schnapps. There are a lot of beautiful, delicious schnapps that nobody knows about. Everybody thinks of the syrupy schnapps that their parents were drinking in the 70s and 80s.” As Astoria continues to grow and expand, the Letlove Inn will be able to provide what every neighborhood needs—quality cocktails and live music. Roumeliotis, a long time Astorian with instincts that have made him a trendsetter in the community, predicts “I have a feeling 23rd Avenue is going to change a lot in the next year or so. The neighborhood has been changing, as we all know, and we are here to cater to the new Astorians.”

BORO recently sat down with owners Ruari Curtin and Michael Krawiec to talk about The Bonnie—Astoria’s beautiful new gastropub, and sister to Sweet Afton.

BORO: How did you get involved in the bar business? RC: I don’t know how I got into the bar business. I always kinda wanted to. I was a strange kind of kid. Everyone else wanted to be a policeman or fireman. I’d never been inside a bar—I wasn’t brought up in that environment. I always had an attraction to the hospitality business. I would be at home or in school and I would be drawing bar designs. It was a bit strange. I was never a 9 to 5 corporate guy. I opened the first bar a little over 10 years ago and I never looked back.

MK: For me it was necessity, college, bartending. I had no money so I decided to start bartending, as most people do. I moved to New York after going to school in Philly. I was working in advertising, and I had to supplement my income. I ended up bartending and traveling for a while, and then I started running bars. BORO: How did Sweet Afton come about? RC: Sweet Afton opened five years ago in Astoria. Myself and Mikey were roommates. We were great friends. We always had to go to the city if we had to get a drink

somewhere nice. We saw an opportunity, we knew there were great people here, and we just felt that it was a neighborhood that was under served, and we knew could bring something fresh. And that’s what we did with Sweet Afton. MK: Ruari was a big part of me owning a bar. I was living with Ruari at the time and he had just opened Bua down on St. Marks Place. We talked about how I was managing and bartending and going up and he asked me what my plan was. I told him I wanted to do my own thing, so we put a business plan together and started looking in Astoria.


I saved my money. Begged, borrowed, and stole, and opened Sweet Afton. BORO: Why Astoria? MK: I’ve never lived anywhere else other than Astoria. I have been here ten and half years. I have always kinda loved it here. There’s not much pretension and there was a need for it. The neighborhood was a little underserved as for a downtown Manhattan vibe. BORO: And now, The Bonnie… RC: The Bonnie is our most aggressive and biggest project to date. It took five months to build the Bonnie. What we were trying to do was keep the general aesthetic of our other bars. As we grow as a business, we try to continually challenge ourselves with every element of what we do. Along the way, we picked up a lot of talented bartenders and mixologists. BORO: What is the difference between Sweet Afton and the Bonnie? MK: Inherently the design is different. The space is a lot bigger. You can tell that it’s in the family but it has a more polished approach compared to Sweet Afton. It has a different kind of soul then Sweet Afton does. We do a little more food. All in all, people don’t know we opened another bar. They walk in and they see me and they are like, “You opened another bar? We kinda thought it was Sweet Afton.” BORO: What can you share about the cocktails? RC: Everything is botanical based when it comes to the menu. Four different ice machines for different types of ice. Little things like the ice cubes make a big difference to the drink. Both quality of the drink taste, and aesthetically as well. MK: I knew when I sat down with the guys that we wanted to bring in a botanical feel, as we have the garden. One of the bartenders, Mike Ditota, went to school for horticulture, so I approached him and we had a few concept meetings. I let him know that I wanted things to be a little more botanical and floral. He ran with it. We wanted to do something different, so there are more syrups, and a lot more infusions. The cobblers were something that we put together when we expected to open in the summer. Something a little sweeter with the crushed ice. An old school drink that no one is doing right now.

BORO: What is the signature cocktail of the Bonnie?

RC: I would consider the Bobby Richardson the signature drink of the Bonnie. MK: Probably the Imperial Dandy— It’s what everyone seems to order. It was named after Imperial Dandy marble. BORO: You mentioned a garden… MK: The garden is 1,000 square feet. We could fit about 75 people there. We wanted to do something to bring the inside to the outside and make it an extension of the bar itself. There is going to be a side that’s communal, and another side with nooks and crannies and smaller tables. RC: The garden will open in the spring. A lot of the aesthetic here at The Bonnie is driven by the outdoor space of the garden. We want that to be what we do. We want to bring the elements of botanical bartending into what we do. BORO: What are some differences between 30th Ave and 23rd Ave?

RC: It feels very old school on 23rd Ave. It’s a little more family, a little more community around here. As there is everywhere in Astoria. I just love the community that Astoria is. BORO: What makes the Bonnie different from other bars? MK: We put everything we had into it. I think that comes across. You have to put a personality to a bar; it’s a living thing. I think that makes a difference. I think when you put everything you have into it, people appreciate it.

Picasso Jack Maiorino is a meticulous sketch artist who has mastered filling tiny spaces with intricate renderings of everything from architecture and monuments to woodland creatures, landscapes, and even portraits. Over 150 drawings fill out his portfolio— all of which could fit in a binder the size of a gentleman’s wallet. The sketches were initially inspired while he was on vacation in Maine with his son. “I worked as a security officer for the courts, and worked overtime.” Gesturing toward a triptych of three outdoor sketches, “I doodled these three with a pen that was on the desk one night. This one was my first.”

After a little encouragement, Maiorino entered them in a small competition at work, and won. The rest is history. The security officer also holds an associates degree from New York Tech in 1974, and he draws mostly from photographs that he takes. Post-its from Maine, Coney Island, Santa Monica Pier. Some are even commissioned. And though Maiorino now sells his art at Flea Markets and art shows, he always returns home to his space on 30th Ave a few blocks east of Steinway. He duplicates his favorite original pieces, and you can purchase them at affordable prices at the LIC Flea.

As previously promised, this month I am excited to share with you the opening of LIC’s newest boutique fitness studio, The Workout Factory. Martin Kerestes and Zhana Galjasevic, the husband and wife team behind the hugely successful Yoga Room Astoria and Yoga Room LIC, have now expanded their brand to provide more services to the health-minded residents of Long Island City. A fixture in the Queens fitness community for eleven years, Zhana was gracious enough to spend some time with me touring her businesses and discussing this new venture. BORO: The Workout Factory is a bit of a different direction than your other businesses. What inspired you to open this type of studio? Zhana Galjasevic: We wanted to create a boutique fitness studio where you can keep yourself in top shape while having a lot of fun. We wanted to address the needs of our Yoga Room clients who wanted dedicated equipment in a Pilates space, and more physical challenges than yoga. We have been doing Equipment Pilates at The Yoga Room for almost 10 years and the Workout Factory is a better home for this program. Pilates and small group fitness classes go well together. There is nothing like it anywhere in Queens. BORO: Tell us about the space. What is your ultimate vision for the business? ZG: The space’s look is industrial-chic. That is the reason we called it Workout Factory—it used be an industrial warehouse along the lines of the old warehouses in LIC. We have decked out the place with mirrors, six Pilates machines, tons of fitness props, the best mini trampolines in the world (Bellicons), and a great disco light and

music system. You will never be bored while working out. We want our clients to be super psyched to come work out with their friends, and build a sense of community, like we have at The Yoga Room. Once our first location is successful, we would love to open more Workout Factories in the boroughs—perhaps Astoria? BORO: What would you like the local community to know about The Workout Factory and how it is related to the Yoga Room? ZG: Workout Factory is a separate venture and a separate membership. Many of our existing Yoga Room Pilates clients are already taking classes at Workout Factory. I think that a lot of our students will be attending classes at both locations. We are super excited to bring another boutique studio to the LIC community. Walking down 23rd Ave, just south of 28th street, you may have noticed a small change to the streetscape. The large green Seek Fitness awning, a fixture on this block since 2010, has a new face. It now reads Unlimited Body LLC, Massage Therapy and Personal Training. I believe that small businesses are the backbone of every community, and upon first hearing that Seek was closing, despite never having had the opportunity to spend any time there, I was disappointed. According to reviews and word-of–mouth, it was a loved and well-received business. Upon further research, I was pleased to discover that it would remain a fitness facility and be led by a member of Seek’s former staff, Daniel Berrios. Danny was kind enough to give me a tour, share information about his services, and tell me about his hopes for the business.

About The Owner, From the Owner “I started my personal training career back in early 2001 working out of a big gym. I worked there for almost 5 years climbing my way up the corporate ladder. Working in a corporate environment made me realize how much big gyms do not really care much for their members. So I started training

people out of their homes and gyms. I did that for another 3 years. I then decided to expand my knowledge of the human body by attending Queens Borough C.C. and studying Massage Therapy. After school, I began working for a massage therapy company where I was able to expand my skills in therapeutic massage. I did learn about how to run a business there, too, which made me realize I could start my own private practice. In 2011, I created Unlimited Body NY LLC, intent on showing the community how beneficial the massage therapy and personal training combination is to your health; to break away the limits put on us from injuries and jobs that abuse our bodies. A New

Leaf Basil Brick Oven has always been a family affair, but the helm of this über popular pizzeria has recently been taken over by Costabile Martuscelli, his uncle Raffaele Censullo, and Carlo Illiano. The pizzeria grew to fame when it transformed from a fourteen-seat pizza shop to take over the frozen yogurt space next door, as well as the apartments at the back of the building. The Giannola Brothers first built the space to cater to the needs of the tenants of the surrounding properties, and great pizza, service, and ambiance took it to a whole new level. Now that Martuscelli has taken the reigns after the former chef recently moved out West, some exciting new changes have taken 50 | BOROMAG.COM | DECEMBER 2014

place. While the menu no longer boasts over fifty varieties of pies, he believes in quality over quantity. “I would get of school each day and head to my father’s store to make pizzas,” he explains. “When I graduated high school, I was still working every weekend. Some people make pizza, and it’s all about the money. That’s not what it’s about for me at all.” “Thank God I have my uncle Ralph here and Carlo. I do the adjustments, and that’s all I have to do,” laughs Martuscelli. Raffaele runs the pizza oven, and Carlo conducts the kitchen.


Raffaele has been tossing pies in the air since 1974, and learned from the same the guy who taught Dom DeMarco at DiFara—which is commonly heralded as one of the best pies in the whole city. After trying a margherita pie and a few of the new signature dishes, it is safe to say the space is in exceptional new hands. The pies are decidedly more Neapolitan, and the pastas are each made from scratch. Behind every great dish is a great recipe, and behind that is a great chef, who sources quality ingredients from the right markets, who purchase those products from the right farms that boast the best farmers, and the list goes on and on. For December, we traced the roots of Basil Brick Oven Pizzeria and found one particular family at the beginning of it all. So we sat down with some members of the Giannola family, and asked them to tell their story. This is that tale, and the cast of characters the credit for a helping them along. The Community Builder

Luca Di Ciero is the Property Manager at NY Space Finders, and one of the most genuinely friendly guys you could ever hope to meet. He also just moved his office from Steinway to right next door to Basil. “We cover a large spectrum of the commercial real estate, we do a lot of business brokering, we do a lot of industrial, retail, investment properties. We also specialize in boutique new construction developments. Just in Astoria alone, we represent 56 properties we have seen built from the ground up and leased. We grew so busy, in fact, that we recently opened a property management company called Real Estate Management Associates, which manages 11 new properties.” Born and raised in Astoria, Di Ciero grew up riding his bike through the neighborhood and has lived here for 33 years. “I think in the last ten years Astoria has really evolved.” He remembers finding Bareburger their first location on 31st Ave and 34th Street. One of his most recent finds was the home of The Bonnie, as well. I love all of the enthusiastic new energy in the neighborhood. And I enjoy bringing good concepts to the neighborhood. Something to Bank On

A new bank is slated to open within the month at 18-21 Astoria Boulevard. As 30th Ave, Broadway, Ditmars, and even 31st Ave have recently started approaching saturation, the trend has been to move westward in Astoria toward the park and river. The Letlove Inn and The Bonnie are just two recentl examples of this trend, and it seems this is only the beginning—especially with so much new housing scheduled to appear over the next few years. At least that’s the opinion of Vito Giannola, Vice President of Sussex Bank and part of the second generation of American-born Giannolas. “Small community banks connect people and connect businesses,” smiles Tony Labozzetta, the President and CEO of Sussex Bank. “It’s all about relationships and interpersonal interactions.” In response to what Astorians can anticipate from the opening of Sussex, Labozzetta explains the bank as “high-tech, high-touch.” He continues, “for me, holy grail is finding that efficiency while maintaining a personal touch—combining the tools someone may need to bank anywhere, at any time—but you also have to be able to reach out to them so they know they are appreciated.” “Now we are in a position to expand—it’s a whole new model,” smiles Labozzetta. “Now we have technology that isn’t even yet seen in banking today.” Look for a grand opening announcement soon. Keeping it in the family Story by

The story starts in March of 1962, when Vito and Nancy Giannola first moved to New York City from Italy with their three children—sons Joe and Tony, and daughter Josephine. Within just a week of landing, Joe found work at a barbershop in Astoria, Tony soon found a position as a mechanic, and Josephine enrolled in school. Joe stayed at the barbershop for the next four years, prior to being drafted and serving both in the states and overseas. “When I came back home, I ended up buying the business—and that’s how we started.” Soon thereafter, Tony bought the gas station across the street, and the wheels were set in motion for the birth of one of Astoria’s ambitious families. Meanwhile, in 1964 the three siblings were blessed with yet another brother, who was named after his father. Vito was the first of the family actually born in America, and his education would also lead the siblings beyond ownership into substantial property development. What began as just a single barbershop has now stretched into several properties, and even three new living complexes within the past decade. “Slowly we started buying property in the area,” recalls Joe. “And then what followed,” adds Vito, “because [my brothers] were in the neighborhood for so many years, people started coming to them as they were selling their homes.” The end result is an impressive real estate portfolio, which now also includes their own developments—Hoyt South, Bridge Side, and Hoyt Plaza. Landscape architects are adding the finishing touches to the driveway at Hoyt Plaza, a stunning 34 unit property ranging from studios to three bedroom penthouses, complete with a lush driveway, gym, rooftop gardens, and pool. A fireplace and water features will great residents at the entryway, and the view from the windows and rooftop offer sweeping panoramas of Astoria Park, the waterfront, the Triboro, and Manhattan. Studios in the Giannola properties begin at $1,500 with penthouses reaching $3,000 and more. And while the rent may seem high to some locals, this isn’t a case of outsiders trying to raise rent. The reality couldn’t be further. “We try to see what Manhattan offers,” explains Vito, “and then offer a little more than that for a lot less.” That’s a large part of why they built Basil Brick Oven a few years ago, to provide a new dining option for their residents. Now their own children are actively involved in the business, and the tables at Basil Brick Oven are full of smiling kids and grandkids recalling family holidays, grandma’s cookies, and Sunday ragout. Yes, the cookie recipe is still in the family, and believe it or not, nearly 100 friends and family will gather for a Christmas potluck this December at Vito’s house. S Cookie Recipe 5 lbs flour, sifted 1 lb Crisco 4 C sugar 1 oz baking powder 1 Tbsp vanilla extract 12 eggs, slightly beaten 2 ¼ cup warm milk confectioners sugar 2 Tbsp lemon juice a little warm water

Preheat oven to 400 degrees, and grease baking sheets Blend warm milk and sugar in a large mixing bowl In a separate bowl, mix the Crisco and flour with your fingers until it resembles a coarse cornmeal Add eggs, vanilla, and baking powder, and mix Add the milk and sugar, and combine—but do not overwork dough Let sit, covered, for about an hour Form into ropes a ½ inch thick and 3 inches long Shape into “s” and place on baking sheet Bake for 15 to 20 minutes Combine confectioners sugar, lemon, and water to make glaze. Gently glaze cookies and let chill on parchment paper
