A
s winter gradually thaws into spring, so dwindles the communal appetite for those rich comfort foods that pack on ‘extra insulation’ during the frosty months. With beach weather rapidly approaching, ‘tis the season for detoxification and adhering to a stricter diet. What if the Master Cleanse and fasting aren’t particularly your cup of laxative tea?
Although St. Patty’s Day is just around the corner, healthy eating demands a lot more than mere luck. Instead of green beer and party platters, this month we explore local restaurants serving up some substantial verdigris. After all, the federal diet recommendation is at least three cups of leafy greens per week. Thanks to the culinary creativity of our local chefs, eating green is no longer punishment—and it tastes exponentially better than it ever did in the school cafeteria! 6 | BOROMAG.COM | MARCH 2013

Wakame, a naturally sweet edible seaweed, is often consumed by nursing mothers for its rich supply of calcium and iodine. Recent studies in Japan reveal the presence of compounds that speed the burning of fatty tissue. At Linn Japanese Restaurant, the wakame salad is also tossed with red and blue seaweed and drizzled with a subtly tangy miso vinaigrette, resulting in one of the most delicious versions around. You say pasta is your weakness? Why not try a relatively guilt-free and nearly gluten-free version? Made with hemp flour (chef Giuseppe Viterale also blends a small amount of wheat flour), the pasta is sautéed in a little olive oil with garlic cloves and sundried tomatoes, which bring out the natural nuttiness of the hemp. A substantial source of protein, hemp contains all 21 known amino acids in quantities significant enough to meet the body’s needs. The hemp fettuccine can also be served in pistachio cream sauce—the little green nuts are popular for increasing antioxidant levels and preventing hypertension.

Bok Choy, also known as Chinese broccoli, is commonly found chopped, diced, wilted, and fried as an accent on most Asian take-out menus. One of the most nutritious of all leafy greens is the distinctly bitter and crunchy Swiss chard. High in Vitamins A, K, and C, along with iron and several other minerals, chard is also rich in dietary fiber and protein. At The Sparrow Tavern these luscious leaves are sandwiched between crisped corn tortillas with leeks, dill, and a subtle dusting of manouri and fontina cheeses, creating a velvety, crunchy, creamy, and all-around delicious vehicle for consuming one of nature’s richest greens.
While the words ‘green beans’ may evoke hesitant grimaces from children across the country, Il Bambino transforms these haricot verts into a crunchy, fresh, delicious tapas. Baby string beans are lightly tossed in a tangy, earthy truffle vinaigrette, served in a bouquet over toasted croutons, and then blanketed with a snowfall of shaved parmesan. Not a bad way to take in iron, calcium, magnesium, and potassium, which aid the body in metabolism.

Ukus is one of Astoria’s best-kept secrets, known primarily for their homemade Balkan sausages and steaming pastry pies (the spinach pie makes any spanakopita look wimpy in comparison). Also worth considering is the braised stuffed cabbage—rich in beta-carotene, Vitamin C, and fiber—filled with tender spiced ground beef and rice. Or perhaps the stuffed green pepper? Begova corba, a traditional hangover soup, is chock-full of okra in a lemony herbed chicken broth with a dollop of sour cream. The Kanom Jean Gang Kow Noodles are blanketed in a fiery green curry with eggplant, bell pepper, chicken, and Thai basil, all sweetened with coconut milk. On the milder end of the spectrum, the Zucchini Yad Sai arrives with two boats of halved zucchini, piled with a tomato-coconut bolognese of savory minced chicken. With NYC boasting the largest number of Irish Americans of any U.S. city, the holiday means a lot more than a rowdy party here. As Queens dwellers, we are fortunate to be in one of the most ethnically diverse areas in the world. A wealth of nationalities have made their mark on the borough, and the Irish are no exception. For those in search of a quality Irish pub in our neighborhood, options abound. Here are some of the top spots where the Big Apple and the Emerald Isle meet.

BORO talked to bartenders at some of Astoria’s premier cocktail destinations and got recipes for Irish-themed drinks that will be sure to impress your guests!

The whole idea of this shot is the layering. Pour 1 part Irish Cream, the heaviest of the ingredients, into the bottom of the shot glass. Using the bar spoon, layer 1 part Frangelico on top of the Irish Cream, and top the shot off with 1 part Jameson. If you’re feeling especially festive, you can garnish with a four-leaf clover for good luck! The layering can be difficult, so if you want to maintain the flavor of the shot but are less concerned with its visual aesthetic, you can chill a mixture containing equal parts of the three ingredients to pour shots at your party.

Begin by making thyme simple syrup. Stir 1 cup brown sugar into 1 cup water and let the sugar dissipate as you bring the water to a boil. Bring off heat, add thyme liberally, and let the mixture steep for about an hour. This simple syrup will keep in the refrigerator for up to a month. In a cocktail shaker, combine ice, 1 ounce Powers Whiskey, 1 ounce Applejack, ¾ ounce thyme simple syrup, ½ ounce lemon juice, 1 ounce apple cider, and a dash of Angostura bitters. The East River Ferry takes off from the former Harry’s Water Taxi Beach in Hunters Point (visit www.nywaterway.com for routes and schedules) and stops at Greenpoint, Williamsburg, Brooklyn Bridge, Wall Street, Governors Island (only during summer weekends), and 34th St in Midtown. $4 lets you on and off one time between any two stations, or $12 buys a full-day hop on-hop off pass. Bring along your camera for great pictures of Queens, Manhattan, Brooklyn, and the vibrant waterway and bridges along the way. The entire roundtrip journey takes almost exactly one hour. There is even a free ferry shuttle bus that connects at the 34th St terminal, crossing over to 6th Avenue and circling Midtown. 7 The Museum of the Moving Image is free on Fridays from 4 to 8 PM, so there’s no excuse not to stop by Astoria’s outstanding tribute to film, television, and digital media— with over 130,000 artifacts relating to the art, history, and technology of the moving image.
