s I sit and write this note, I wonder if this March will prove true to the adage, in like a lion and out like a lamb. All around us in Barrington signs of spring slowly start to show themselves and this issue is full of ways to begin to ready ourselves for a fabulous spring season. In this issue, we first and foremost pay tribute to beloved community member, Richard Duchossois of Barrington Hills. Duchossois passed away recently, and yet his legacy will live on forever. The greater Barrington and Chicago community is mourning the recent loss of Richard L. “Dick” Duchossois, a decorated war hero and horseracing icon. WORDS BY SHERRY THOMAS / ILLUSTRATION BY ROBERT RISKO
L
ong-time Barrington Hills entrepreneur and businessman Richard L. “Dick” Duchossois, more famously known as “Mr. D,” died peacefully at his home January 28. He was 100 years old. Born Oct. 7, 1921, to Ernestine and Alphonse Duchossois in Chicago’s Beverly neighborhood, Duchossois followed a path in life that took him from the battlefield to the board room to the race tracks of Arlington International Racecourse, leaving a legacy that will never be forgotten. The second of four children, he attended Morgan Park Military Academy, an institution Duchossois credited for teaching him the discipline to overcome obstacles and win. He attended college at Washington and Lee University before being drafted into the U.S. Army at age 20 at the height of World War II—serving as a commander of a Tank Destroyer Company under General George S. Patton. Duchossois went on to serve in five European campaigns, including the Battle of the Bulge, achieving the rank of Major and earning a Purple Heart and two Bronze Stars. Seventy years later, on the anniversary of D-Day in 2014, Duchossois also received the Legion d’Honneur award from the French government. In business, he founded what would become The Duchossois Group, a multibillion-dollar enterprise where he was known for his double-breasted suits and pocket scarves. He married twice (losing his first beloved wife Beverly to cancer in 1980) and established his family at Hill ‘N Dale Farm in Barrington Hills (from Flossmoor)—which eventually became one of the premier thoroughbred breeding farms in Illinois. In 1983, Duchossois purchased the then floundering Arlington Park, two years before an electrical fire would destroy the entire facility. While others might have walked away, the always-determined Mr. D rallied the troops. Just days after the devastating fire, he led the team to initiate the Arlington Million race, helping the track garner international acclaim and elevating it to a Grade 1, world-class horseracing destination. Horseracing legend now refers to this Hail Mary act as the Miracle Million. According to his obituary, Duchossois lived and loved by the Miracle Million team’s motto, which he has printed on postcards—“Quit? Hell no!” Country magazine had the privilege of speaking to Mr. D in 2019 when he was inducted into the National Museum of Racing Hall of Fame. And as demonstrated throughout his life, he was the epitome of
humility and grace. “It’s quite a great honor,” he said. “I don’t know how I deserve it.” Three years after losing his wife, Beverly, Mr. D and his family established The Duchossois Family Foundation. They became major donors helping to establish first the Beverly E. Duchossois Cancer Care Center, and later, the Duchossois Family Institute in 2017— both at the University of Chicago Medicine. “Hill ‘N Dale Farm is the most wonderful place I ever lived,” he said of life on his farm in Barrington Hills. “Out here, with the open spaces, everyone is down to earth and friendly, and it’s a wonderful place to be.” He is being remembered throughout the Chicago area and the nation as an honored veteran, entrepreneur, philanthropist, husband, father, uncle, grandfather, great-grandfather, and friend. Among his survivors is wife Mary Judith (nee McKeage) of Barrington Hills, who he married in 2000 and who has lovingly stood by his side for all business, philanthropic, and family endeavors. He is also survived by his son Craig J. Duchossois ( Janet) of Chicago; daughter Dayle Duchossois-Fortino (Ed) of Chicago; daughter Kimberly Duchossois of Barrington; and stepsons Steve Marchi (Sherrie) of Palatine; and Paul Marchi ( Judy) of Palatine. Duchossois had seven grandchildren (and spouses), two step-grandchildren, and 14 great-grandchildren. They were enamored with the beautiful, open spaces and the bonus of having family in town. When Van Daele, an executive with Neiman Marcus, made the switch to full-time mom to daughters Reese (4) and Anna (2), she knew she wanted to put her professional skills to work helping in the community. An active member on the Executive Committee for Barrington Junior Women’s Club since moving to the area, Van Daele co-chairs Community Service and Outreach for BJWC where she enjoys partnering with many local organizations and non-profits like The Community Meal, BACOA, Meals on Wheels, and Sunny Hill Elementary to help make an impact. A
s a Senior Specialist and the Director of Hindman’s sales of European Decorative Arts, the category of collecting that includes furniture, sculpture, carpets, ceramics, mirrors, and more, I am often asked what’s “in” and what’s “out.” My colleagues and I advise our clients on acquiring for their collections, how to furnish a historic or a brand-new home, and how our firm can help them with transitions in their lives. Regrettably, the word “collecting” has a public relations problem. People today are turned off by the concepts of
collections and clutter … yet people are collecting. They do it on Instagram—collecting images, collecting ideas, collecting digital art, collecting people. Our job is to teach this new audience how easily the hoarder’s instinct (it is inside all of us) can be applied with great pleasure to physical objects. You might think “I am not interested in antiques,” but historic objects absolutely belong in contemporary rooms. Incorporating something with the patina of age adds personality and character; a single rare object casts its glow across everything else in a room. I would advise you should never hire a designer who only buys from manufacturers’ showrooms. Historic design and decorative arts are as cherished now as they were in our grandparents’ day—what has changed is the way we use them in our homes. It is out of fashion to fill a house with collections and formal furniture; many people will buy two or three very good things, the best of the best, and juxtapose them against more inviting furniture in open rooms. If you bring home a 1740s gilded Rococo mirror with opulent details, give it room to breathe. It needs a stark white wall or an uncrowded room to show itself off. Auctions bring modern and historic designs from all over the world to one’s doorstep, at a range of price points from entry-level to major commitment. It is possible to own near-museum-worthy examples of the finest furniture ever made, often for less than the cost of something from the Merchandise Mart and without waiting fourteen months in this supply chain-challenged climate. However, you should not expect instant gratification. Dynamic rooms with meaningful works of art take years to build; the process cannot be rushed. There is a strategy to buying at auction, and the advice is the same whether you are spending $1,000 on your first chair or $100,000 on a major work of art. Do all your research and decide how much you want to spend before the auction begins. Bidding moves at light speed; only with preparation are you guaranteed to get what you want at a comfortable price. Be aware of the premium, a commission you pay to the auction house on top of the hammer price. Get a second opinion before making a big purchase. Seek the knowledge of an art adviser or a trusted and impartial dealer, who can protect you from paying too much, buying something fake, or otherwise making a mistake. Be aware that items may need “freshening” before they are ready to bring home. You or your designer should have preferred upholsterers, refinishers, framers, and restorers. Lastly, do not approach the auction looking for something. Have an open mind and let yourself be moved by something new. Experienced collectors do not look for anything specific, rather they say, “show me what you think is the best.” They are looking for beautiful objects made from costly or exotic materials, fine workmanship, or sometimes just a better version of something they already own. Above all, have fun. Collecting is an encyclopedic experience that brings a lifetime of enjoyment. Find a friend or a partner who likes to learn, and you will never be bored. Both grew up in the southwest suburbs but have lived in Barrington for the past five years. “The book is a memoir of my mom’s childhood and it’s all about experiencing and encountering death, from a child’s perspective,” says Rose. “I started it about twenty years ago and picked it up and put it down and added more and put it in the closet,” says Sheila. But the book always remained in her head and her heart. So when Rose published her recent book, The Creativity Gene, Sheila couldn’t help but think, “hey, my daughter could help me get this out there.” “My mom grew up living above a funeral home (the Blake-Lamb Funeral Home in Oak Lawn) and during her childhood years she was obviously exposed to all these different cultures and different types of grieving, all while trying to live a normal life,” Rose says. “I have been telling the kids different stories of living above the funeral home their whole lives,” Sheila says. In addition to Rose, Sheila also has two sons. “I said to Rose, ‘I will just relive my moments and then you put it all together and let’s write a book.’ Rose actually kept me on task and would send me emails, saying, ‘this is what you need to do this week or you need more stories or this needs to be elaborated on.’ ” “Once we decided to actually do it and finish it, it didn’t take long. It was just a matter of me sitting down and walking through these different experiences.” The book covers a wide range of Sheila’s equally humorous and incredibly moving stories. The funeral home was a family business in every sense of the word. She says that they often had 12 different funerals going at the same time and her mother insisted on feeding entire families, frequently over 100 people a night. Rose also grew up in the funeral business. But as she says, “not to the extent of my mother, who would play hide and go seek in the caskets.” Sheila and Rose already had a wonderful mother-daughter relationship prior to working on this book. But the process has brought them even closer. “Rose and I are best friends,” Sheila says. “Rose often said that she had no idea that’s how I grew up, because we were also in the funeral home business while my kids were growing up but they had a ‘normal’ upbringing. It wasn’t above a funeral home.” “We had a lot of fun working on this. In fact, when we finished it, I said to her, ‘well, now we’ve got to write a second book because we have so much fun together.’” The book, published on Amazon, is available in both paperback and e-book formats. The book is divided into 13 chapters and the chapters are broken up into different stories or experiences that Sheila had while living above the funeral parlor. Sheila wants the book to illustrate how much her childhood experiences informed her adult attitude of making the most out of life. “Everybody knows that death is sad and that the worst thing that can happen to you is a loved one dying. None of that needed to be explained. What I wanted to explain was the delight that happens behind the scenes in the funeral home. And for me, what I learned through it is, I don’t have a regret in the world. I don’t regret anything because I saw so many people stand over caskets and say ‘I wish I said this.’ I learned to live without regrets. I take every opportunity asked of me. Someday, I’m going to die. I might as well just take this opportunity. I really don’t worry about anything. There’s nothing we’re going to do about it. It’s what happens, it’s why we’re alive and being able to experience that every day. It was drilled into my head, enjoy your life.” Rose is grateful she was able to share this journey with her mom. “It was an incredible opportunity to be able to take my mom’s stories and put them down. This is my first time that I’ve ever done a book like this. My book The Creativity Gene was very research-based and this was personal life experiences, so it was a really fun challenge and to be able to take all these stories and know that we’re just going to bring so much humor and laughter to so many people’s lives is such a gift. And I loved the time that we spent writing it.” Both mother and daughter indeed make the most of every moment.

Northfield resident and former Barrington High School tennis player Bob Hayward has emerged as an ace IPO lawyer at Kirkland & Ellis in Chicago. But he’s also a resounding hit as a father of three sons and longtime supporter of Northwestern University Pritzker School of Law and NU’s football program.

ock star. Wimbledon champion. Lawyer. Transactional lawyer, specifically. Bob Hayward, the youngster, envisioned all kinds of careers while growing up in Barrington Hills and playing three years of varsity tennis at Barrington High School (Class of 1990). But the vocation that ended up luring him more than the others was the one that required, more or less, dress shoes and combed hair on most days. Besides, Hayward didn’t exactly attack the guitar like Eddie Van Halen did, and his backhand fell more than a few miles-per-hour short of Bjorn Borg’s. “I was fortunate,” says Hayward, now 49 and a Northfield resident since 2002. “I had a front-row seat in the presence of an outstanding transactional lawyer—my father (retired Thomas Z. Hayward Jr., who had managed the law firm Bell Boyd and served as president of the Chicago Bar Association). I watched him. I watched how hard he worked and how much he valued interactions and professional relationships. I always knew, were I to pursue law, I’d shoot to become a deal lawyer, not a litigator. “I didn’t want to argue for a living.” What’s inarguable: Kirkland & Ellis partner Bob Hayward,
named “Lawyer of the Year in Illinois” by Global Law Experts in 2020 and 2021, was the busiest and most active Chicago-based lawyer for IPOs from January 2020 to July 2021 by more than 12 times, according to Deal Point Data’s list of the 20 most active lawyers for IPOs. He was also the only Midwest-based lawyer on the list, with others hailing from New York, Hong Kong, and the West Coast— traditional major financial centers, all of them. Think of a parka salesman pacing the U.S. in sales in Tampa. That’s kind of what Hayward is doing in the IPO realm in Chicago. Hayward’s practice primarily involves counseling publicly traded companies and private equity funds and their portfolio companies in all transactional aspects—IPOs, mergers and acquisitions, securities law, corporate governance, stockholder activism, and general corporate matters. In the third week of July, Hayward quarterbacked a team of Kirkland lawyers that engineered the Ryan Specialty Group IPO. Former Aon Chairman and CEO Patrick G. Ryan—a Northwestern University alumnus, like Hayward—founded the group. That week ranks as the second-busiest in U.S. capital markets history, and the Ryan Specialty IPO was the largest that week. “What I love most about what I do is helping great American JWC | COUNTRY 43

companies achieve a milestone through collaborative efforts and storytelling,” says Hayward, who joined Kirkland & Ellis in 2000 and became partner three years later. “There’s a creative element to initial public offerings that’s challenging and exciting. Then, following the IPO, I get to see a company succeed and grow.” After earning a degree in Communication Studies at Northwestern and graduating from NU’s Pritzker School of Law, Hayward, the young man, went West and landed a summer associate position at Snell & Wilmer in Phoenix. He worked there for three years before returning to Chicago to interview for a position at Kirkland & Ellis. “I called Snell & Wilmer and asked someone to rank Bob, the lawyer, on a scale of 1 to 10,” says Richard Porter, the Kirkland & Ellis corporate partner who hired and mentored Hayward. “I heard, ‘Bob’s a 12, the best we’ve ever seen.’ The minute I met him, I knew Bob was someone special. Poise, presence, professional attitude— Bob, all Bob. As a lawyer he’s dogged, determined to work hard to find solutions and to stay on top of the law. He’s got that drive, that competitive drive,” Porter adds. “Total star. No surprise. He’s a Hayward, man. All the Haywards are like that.” Bob Hayward was a fourth-generation Northwestern man, joining older brothers Tim, now chief of surgery at the VA hospital in Indianapolis, and Wally, a Chicago-based marketing executive who served the Chicago Cubs as an executive vice president from 2009-2012. The first Hayward with ties to NU? A great aunt, who graduated in 1879, after being one of the first women admitted to NU. The fifth-generation Hayward? NU sophomore Trevor, 20, one of Hayward’s three sons (also Charlie, 17, and Griffin, 14) with wife Liz, a Northfield native and crack paddle/tennis player who met her future husband on a blind date: a Northwestern home football game in 1995, the day after a blinding snowstorm. “Wally set me up. Saturday home football games at Northwestern have always been big in our family,” says Hayward, a past president of the NU Gridiron Network and member of the network (the program’s football board) for more than 10 years. “We played Iowa on the day I first met Liz, and Northwestern beat Iowa in its run to the
Rose Bowl that season. You don’t forget a game like that. It was the day I saw Liz for the first time, and it was Northwestern’s first win over Iowa in 16 years.” Five million dollars. NU’s Pritzker School of Law won’t forget that. That’s the amount Kirkland pledged to the school in 2012, to ease the financial burdens faced by the next generation of lawyers. Hayward played an instrumental role in generating the gift. NU’s Pritzker School of Law bestowed “2021 Volunteer Service Award” honors to Hayward, recognizing his exemplary leadership of the Garrett Corporate & Securities Law Institute and Boardroom Forum, his participation on many NU advisory committees, and his service as a dedicated liaison to Kirkland. But there’s more to Bob Hayward than work, work, work. Way more. Family means the world to him. Practically every May, since he turned 30, he has joined his father for Los Rancheros Visitadores (“The Visiting Ranchers”) horseback trek in California. The event starts at Mission Santa Ynez and ends about 30 miles north at a ranch. A social club, Los Rancheros Visitadores had 12 members when it formed in the 1930s; its membership exceeds 700 today, and a recent trek featuring nothing but pink-clad riders raised money for breast cancer research and awareness. Concerns related to the pandemic scrubbed the annual trek in 2020 and 2021. “I remember, as a child, Dad disappearing for a week each May,” Hayward says. “It’s such a special trip, spending time there and bonding with him and my brothers. A big part of my childhood was getting to go on exciting trips abroad and in the U.S. with my mom (Sally), dad and brothers. My wife and I like to do that with our kids. You could say I’m following my father’s work-hard-play-hard mentality.” Years ago Tom Hayward gave advice to his son. It was simple. It was daunting. It was, “Make a difference every day.” Loving father and husband. Grateful son. Top-notch lawyer. Philanthropist. Northwestern stalwart. Daily difference-maker. Bob, all Bob.

here is a thing about walls talking and the stories they’d tell. In the case of The Anvil Club in East Dundee (an insanely charming hidden treasure of a small town, just a few miles west of Barrington), these walls do talk. They tell the tale of how an early 20th century blacksmith shop (hence the name) was acquired by a group of prominent area businessmen in 1954 with the dream of opening a very exclusive—and very private—supper club where they could enjoy a cocktail or two, smoke cigars, and dine on only the finest cuisine. Rare antiquities were secured from throughout the Chicago area to curate the ultimate dining experience—whether it be a spectacular bar from the old Oriental Theatre, a leaded-glass window that survived The Great Chicago Fire, or an ornate door in the equine-themed “Saddle Room,” believed to have once belonged to a Chicago establishment frequented by Al Capone (bullet hole in the glass and all). A formal dress code was established, along with a strict members-only policy and an elite, insider vibe that was nothing less than speakeasy chic. And that’s the way it would be then, from 1956 until
last December, when The Anvil Club opened its iconic doors to the public for the first time in history. “I still treat every guest like we’re a private club,” says long-time club manager Joe Robinson. “We’re keeping the best of our past with a bold vision for the future.” Part of that vision is reimagining The Anvil Club experience for the next generation. As such, the once-strict dress code has been eased to “business casual” and an acclaimed new head chef is presenting a more modern, elevated take on supper club classics. The club is also opening its doors to hosting more special events (everything from bridal showers to birthday parties) in one of its many private nooks, whether it be the wine cellar on the lower level or the elegantly appointed Lincoln Room. A recent visit to The Anvil Club—with a special five-course menu created by Chef Tino Almaraz himself—revealed that something truly special was emerging on the Chicago-area dining scene. We started with Chef Tino’s take on shrimp de jonghe, which bakes four wild jumbo shrimp with a house made de jonghe butter sauce and garlic crostini. It was paired with another unexpectedly

DINNER DATE| F OOD & TRAVE L decadent appetizer of grilled Nueske’s bacon with maple syrup and fresh rosemary. It doesn’t take long to figure out that the club’s new star chef has had some French influences so we weren’t entirely surprised (though still impressed) to learn that Chef Tino got his start with Chef Jean Banchet at the one and only Le Francais in Wheeling—renowned globally and in its heyday, considered one of the finest restaurants in Chicago. The next course, a tasting of the club’s famous lobster bisque and Chef Tino’s baked french onion soup, is equally delicious. Chef Tino says the french onion soup is made “the real French way,” with beef broth made in-house and the finest cheese. From there, we are presented with the delightfully loaded Anvil wedge (think crispy Applewood bacon, crumbled bleu cheese, tomatoes, red onions, and scallions topped with house-made bleu cheese dressing) along with an heirloom tomato salad, a simple but elegant creation with tomatoes, fresh mozzarella, herbs, and vinaigrette. And just as we were feeling like we couldn’t eat another bite, the entrees were delivered to our table (No. 24, by the way, which was apparently a club favorite because of its position opposite the fireplace). It’s hard to know which was better, the 16-ounce ribeye served with au jus or the pan seared scallops, served with creamy leeks, roasted shitake mushrooms, and a Meyer lemon beurre blanc sauce.
Let’s just say you should order both and take home the leftovers. Our meal concluded with crème brulee, perfectly prepared, and a signature dish for The Anvil Club—brandy ice, a Prohibition-worthy concoction of soft-serve ice cream (the club has its own machine) and Christian Brothers brandy. If there was any regret upon closing out the evening, it was that we couldn’t stay longer. And that’s the way any good supper club should be, always leaving you wanting one more cocktail, one more walk through the history of a city, and community, you’ve adopted as your own. P.S. If you haven’t already made plans for St. Patrick’s Day, Chef Tino has something unique in store for those lucky enough to get reservations. In addition to corned beef (of course) cooked with broiled cabbage and a creamy, house made horseradish sauce, he’s elevating the prix fixe menu with homemade Irish soda bread and unexpected touches like duck ravioli with Jerusalem artichoke sauce and duck confit. A
mere 60 minutes away from Barrington, nestled in the rolling hills of Wisconsin, lies The Grand Geneva Resort & Spa. Exiting the highway, my family and I entered the resort’s property and were immediately taken in by its breathtaking grounds. The long, winding drive to the resort passes wooden fences, green golf courses, and tall stands of beautiful trees. The excitement grew in our car as the resort—our home for the weekend—slowly unfolded itself before us. After check-in, we settled into our beautiful suite—discovering its nooks and crannies including a separate bar area, delightful fireplace, and outdoor patio overlooking the stunning golf course grounds. The ease of walking to dinner from our suite was not lost on us the first night, and we arrived at Ristorantè Brissago—the resort’s Italian restaurant—in plenty of time for a cocktail first at the resort’s airy bar. There we enjoyed an aperitif while sitting in front of a wall of windows overlooking the most beautiful grounds. Ristorantè Brissago’s contemporary take on traditional Italian cuisine combines authentic flavors and creativity. Just as in Italy, here the chef is in tune with the seasons, creating dishes (using seasonal ingredients) inspired by regional recipes from all over Italy. From a barbabietola insalata of roasted beets, arugula, Door
County cherries and more, to a dish of grilled octopus with a citrus chickpea puree the antipasta menu is robust and delicious. For our entrees, we chose an herb parmesan reggiano crusted halibut with a side of roasted tomato risotto and a Mediterranean sea bass with Castelvetrano olives and artichokes—both a delicious pairing. Speaking of pairing, the comprehensive wine list complemented each course, subtly enhancing the flavors of the dishes. And their elevated children’s menu provided ample choices of Italian fare for the littler ones in our group. After dinner, we took advantage of the trolley—it runs non-stop throughout the resort transporting you to wherever you wish. When we parked our car for the weekend, we didn’t return to it until it was time to say goodbye. Hopping onto the trolley we headed for the outdoor bonfire to roast s’mores in the starlight. Depending on the time of year you go, keep an eye out for seasonal activities on the resort—like a haunted hay ride during Halloween that drives you on a tractor through a completely spooky and haunted forest full of characters doing their best (and succeeding) in delightfully scaring the tractor’s passengers. When Saturday dawned, my husband took in a round of golf— enjoying all the amenities offered at Wisconsin’s top golf resort.

Two award-winning courses are available to play: The Brute, rated one of the best in the Midwest, and The Highlands, a Scottish link-style course. Both courses are as challenging as they are beautiful. I opted to start the morning with a luxurious Hanakasumi Signature Spa Treatment at the spa. Inspired by Japanese tradition, this relaxing body ritual starts out with a warmed exfoliating cherry blossom and rice powder cream, followed by an exfoliating towel to soften skin and invigorate the body. A unique foot massage based on reflexology revives vital energy and just when you think you could not relax more, shea butter is worked into your skin for ultimate hydration and blissful relaxation. This was the perfect yin to start the day with as next we were headed to the yang of the waterpark. Taking in the scene from a private cabana poolside, I cannot emphasize enough how much fun the entire family had at the Timber Ridge Waterpark. As it’s located on the Grand Geneva’s property, we also took the trolley there. After wearing out our children on all the water slides, they talked us into some arcade playing just steps away from the waterpark’s entrance. Heading back to our suite via the trolley, we had a moment of respite before dining at the Chophouse that evening. Hand-selected steaks, custom-seasoned, and prepared to perfection in an open-hearth grill, makes the Chophouse one of the best restaurants in Lake Geneva. With wines cultivated in one of the world’s premier wine-making regions and strategically chosen to complement the cut, they’ve mastered the art of satisfying the palate. Similar to the

night before, the appetizers were a wide range of flavors enticing you to try them. We chose a tempura cauliflower with sweet chili, cilantro, togarashi and lemon-basil—definitely put it on your list to try, along with the crab cake with a sweet corn maque choux and red pepper coulis. We moved to the Skuna Bay salmon with a farro tabbouleh and citrus-mint yogurt, and a center cut, melt-in-your-mouth filet. Truly a wonderful way to end our fun-filled day. Since the drive home was so quick, before we left, we had yet another action-packed day. We began the day renting mountain bikes and exploring the ample trail system available. So many gorgeous trails to get lost in while biking through forests and alongside gorgeous green meadows. After our two-wheel adventure ended, we headed to the archery course where we all took a shot (pun-intended) at learning the mechanics of shooting a bow and arrow. Such a unique and fun activity for the family to do together. There was so much to do at the resort for a weekend getaway as a couple, a family, friends, or to meet another family there. We’re already planning what is on our docket for when we return soon—will it be the indoor sky-high rock climbing wall, renting scooters to tour around Lake Geneva, a round of tennis, or skiing down their slopes and warming up inside in the gorgeous resort? C
ase Holsworth seems to have a knack for aligning his personal passions and good business. As the founder and CEO of Safe + Fair, the runaway hit of a company that makes delicious, allergy-free foods—he’s inspired by the meals he enjoys at home with his family. “I’m obsessed with everything Courtney makes,” Holsworth says of his wife, lifestyle influencer Courtney Holsworth, who has made a name for herself sharing simple, clean recipes on her Instagram account @alifefromscratch. “Courtney cooks all of these amazing meals for our family and I realize that’s not only a treat, but such a privilege we have. We get to eat these homemade, clean recipes right in our house every day.” So Holsworth, himself a gluten-free eater, decided to take this idea to market—the concept of making craveworthy foods with clean ingredients, at a price point that doesn’t scare consumers away. Safe + Fair’s clean label, plant-based foods are made free of the top nine allergens—egg, milk, soy, wheat, peanut, tree nut, fish, shellfish, and sesame. So every product that bears a Safe + Fair label—from its kids’ protein powders and flavored granolas to its drizzled popcorns and dessert mixes—is put through the strictest allergy testing in the world. As part of Safe + Fair’s commitment to making allergen-free products, three percent of its proceeds are donated to the Sean N. Parker Center for Allergy and Asthma Research at Stanford University. “At Safe + Fair, it’ so important that our customers trust us,” Holsworth explains. “We want people to know exactly what they’re eating,” he says. “If they’re buying our Strawberry Shortcake Granola, they’re getting real strawberries—not strawberry flavoring. It’s not always easy to make this happen, but we do.”
Safe + Fair’s head chef Jess Grelle is also based in Barrington and uses her home kitchen to test out ideas before the recipe is commercialized. Jess takes inspiration from her favorite recipes to make irresistible food, like Safe + Fair’s Honeycrisp Apple Pie Granola, Key Lime Pie Drizzled Popcorn, and Birthday Cake Granola. “I just love the idea that Jess is using recipes that work for her family or work for mine and uses them as a starting point for the products we make at our company,” he says. “That’s exactly how it should be.” Typically, it takes 14 weeks from Holsworth having an idea for a Safe + Fair product before it hits store shelves. “This is pretty incredible,” he says, having worked in the food industry for companies like Pepsi where it can take years to bring a new product to market. “But we know when we do things the Safe + Fair way, 80% of our current online customer base will buy a new product when we launch it. We’re always so excited and so proud of our food— we can’t wait for people to try it.” Holsworth also takes pride in knowing that his son Chad—a graduate of Saint Anne Parish School, Saint Viator High School, and the University of Chicago Booth School of Business—is watching over all of these online sales as Safe + Fair’s head of E-commerce.
