ith work-from-home opportunities, climate change, and accessibility to dream locations, this means luxury real estate may continue to expand throughout the country as consumers search for homes that best fit their needs as a whole.
ith the summer fast approaching, the real estate market is getting hot (unlike Chicago temps). The U.S. luxury real estate market is getting a significant boost from an increasing number of wealthy individuals who are showing a deep appreciation for owning multiple homes. As a result, luxury real estate is growing. The sales of single-family luxury homes, defined as the top 10% of any given market, climbed nearly 15% in 2021, and prices increased 20% from 2020, according to a report published in March by the National Association of Realtors.

hat does that mean for those of us in the suburbs? Due to this migration of city dwellers out to the country, there will be lots of new developments on the horizon. New shopping centers, grocery stores, and recreation opportunities. My advice is to gear up for a warm summer ahead with some new friendly faces in the neighborhood.

here has been a renewed focus on home for fulfilling a range of needs from security, escape, community, work, and wellness—and this has led to unprecedented demand for bigger and better homes in new locations. As a result, luxury is no longer concentrated in a few major cities; there are luxury homes popping up everywhere!

DENTAL TECHNOLOGY UPDATE

ew technologies help shape our future. Dentistry’s future is no exception. With advances in electronics, software and 3D printing, dentistry is on track to bring these technologies to patients and make a visit to the dentist more comprehensive than ever. 3D printing does not need any introduction. Its incorporation into healthcare has been newsworthy with the technology’s potential to print medicines, prosthetics, and even organ replicas. Its importance was further highlighted during the COVID-19 crisis to bypass supply chains to meet hospitals’ demands. As the technology is set to become an integral part of healthcare practice, it will also become incorporated in dental labs. Computer-assisted design (CAD) and computer-assisted manufacture (CAM), including 3D printing, are already changing the way dental lab technicians do their work. Traditionally, when a patient
needs a crown, a dentist must make an impression of the tooth, ship it to the dental laboratory and then wait for them to make a permanent crown. With CAD/CAM technology, the tooth is drilled to prepare it for the crown and a three-dimensional scan is taken of all the patient’s teeth. This image is then emailed to a laboratory that CAD designs the new tooth and begins the process of creating an oven fired glass-like crown. With a 3D printer doing the hard work, dental labs eliminate the bottleneck of manual modeling and can get the final product back to dental offices faster than ever before. 3D printers are also able to produce orthodontic models, surgical guides, aligners, retainers and more dental equipment faster and precisely; tasks that would take longer with traditional methods. This helps in improving workflows and reducing errors. While there is currently CAM, that allows a dentist to have a crown milled right in the office, the materials in the final product do not have the same glass-like finish as the materials that are created in a dental lab. But as 3D printing materials improve, the dental office may be able to completely bypass the dental laboratory all together. The dental profession is always looking for ways to improve the care of its patients. Technology is paving the way for making a visit to the dentist more comprehensive than ever. CHILD SUPPORT A 2017 Illinois statute changed child support calculations and could decrease payments despite an increase in the payor’s salary. Attorney Michone J. T
here has been a substantial change in child support. The change affects both the payor and the recipient, and of course, the children. Some people who are requesting the court increase child support due to a change in circumstances are finding support is reduced instead. These reductions can be traced to a 2017 change in Illinois’ child support statute. The new statute’s effect was initially unclear. Almost five years later, it has become evident that in higher-wage-earning families, child support has been reduced for the recipient. In most cases, the reduction is drastic. Illinois previously calculated child support as a percentage of the payor’s net income. Net income was calculated as gross income less only federal, state, Social Security, and Medicare taxes. The payor paid 20 percent of his net income as child support for one child, 28 percent for two children, 32 percent for three children, and so on. If the payor made $200,000 per year ($16,667 per month) and the recipient made $100,000 per year ($8,333 per month) and the parties have three children, then under the old statute the payor’s child support obligation was approximately $3,750 per month. This calculation was based on the payor’s net income of $11,705 per month times 32 percent. The new statute requires the Illinois Department of Healthcare and Family Services (“HFS”) to adopt rules establishing child support guidelines and a schedule of basic child support obligations that reflect the amount of combined net income that parents living in the same household in Illinois ordinarily spend on their children. Included in the new calculation are the number of children, both parents’ incomes, and the number of overnights each parent has with the children in a year. This information is entered into a formula that no longer uses the standard percentages. The amount of child support for a family who lives in Lake Forest, Winnetka, or Barrington is the same as that for a family who lives in southern Illinois. Under the new statute using the above example, if the payor has at least 40 percent of the overnights with the children, (146 or more nights out of 365) the new child support paid to the recipient would be $1,287 per month. If the payor has less than 40 percent of the overnights, the child support amount would be $2,304 per month. Either amount is drastically less than $3,750, the original amount calculated under the pre-2017 statute.

One would assume there must be a point at which the payor has to pay more child support than they paid under the pre-2017 statute. However, even a large raise for the payor does not get the recipient back to the pre-statute amount. What occurs if the payor receives a 250 percent raise and begins making $500,000 while the recipient continues to make $100,000? Under the new statute, if the payor has at least 40 percent of the overnights with the children, the new child support amount would be $2,276 per month. If the payor has less than 40 percent of the overnights, the child support amount would be $3,046 per month. Again, either amount is drastically less than the original $3,750. The recipient who has been receiving child support under the old calculation will find it difficult to adjust their budget if a court finds there has been a substantial change and applies the new statute. Most people would anticipate that child support would not be reduced due to the payor receiving a raise. In Illinois, however, if a court finds that there has been a substantial change in circumstances, like a change in income, the court will apply the new statute even if the result is nonsensical. Our child support system is gathering input as the state prepares for its regular review of the guidelines. The Illinois Child Support Advisory Committee and HFS are sponsoring a series of virtual town hall meetings to gather information from the public relative to the quadrennial review of the Illinois child support guidelines. These meetings will be held on Wednesday evenings through June. The QR code below has a link to the website where parties can register. Obtaining community input through greater attendance and participation at the meetings will lead to more meaningful conversations as the state conducts its review. Class Act Actor and Hoffman Estates native Eltony Williams reminisces about his winding road to success

riving through the Grand Canyon, Eltony Williams flipped from radio station to radio station. He heard static. More static. And then from the relentless fuzz arose a deep voice that said, “God has already given you everything you need to do what you want.” The sermon faded out but Williams was still listening. “In 15 seconds, it all became clear. God has given me all I need to do what I want. And I just started doing things that I didn’t know I could do.” The seasoned actor, best known for his role as Dr. Randal Holmes on Tyler Perry’s hit If Loving You is Wrong, has found success listening to the sage advice of others and tuning out the fuzz. Freshman year at Hoffman Estates High School, Williams scored a part in The
Pajama Game, but dropped out when the musical conflicted with gymnastics. The following year, his drama teacher, Kathy Wandro, said, “Theater is meant for you. You are making different decisions this year,” recalls the HEHS class of ’98 graduate and homecoming king. Trading tumbling for theater led Williams to Northern Illinois University, where he immersed himself in the college’s intensive Meisner acting program. In 2002, while still in his senior year at NIU, Williams booked his first play at the Steppenwolf Theatre— the lead role of Grant Wiggins in A Lesson Before Dying. The part required Williams to be present on stage for the entirety of the play. Of that huge undertaking, Williams remembers, “Although the weight of the show was on me, I don’t remember feeling a lot of pressure.” When the cool-under-pressure thespian stepped out from

under the hot lights of the Steppenwolf stage one night, he found his high school drama teacher in the audience. “I hadn’t seen her in five years. She came and surprised me. I still called her Mrs. Wandro,” recollects Williams with a smile. In 2005, after performing in a second Steppenwolf Theatre production, Tennessee Williams’ One Arm, directed by Moisés Kaufman, Williams took advice he received at Northern Illinois University. “A guest speaker had told me to ‘get where you want to be as soon as you can,’” Williams recalls. Los Angeles was where Williams wanted to be. Williams was ready to trade the stage for the silver screen—television was calling to him. “At the time,” Williams says of the early aughts, “there was more of a ceiling in Chicago and you could only go so far.” So the then-20-something picked a date in the near future to move, preparing to leave a hometown that Williams fondly remembers as a place where, “without many distractions you could nurture your creative side.” On a frigid January day in 2005, Williams embarked on the two thousand-mile journey from Chicago to Los Angeles in a stick shift Ford Mustang, pockets lined with $800 borrowed from friends and family. “It’s all I had to my name,” says Williams. He couch surfed before finding a cheap West Hollywood rental. He worked at Macaroni Grill with a broken arm. He went to casting call after casting call. For many aspiring Hollywood actors, the story ends here. But for Williams, whose personal mantra is “don’t procrastinate, just create,” his Hollywood story was just beginning. Suddenly, the roles starting pouring in. Williams landed small parts in ER, Criminal Minds, House, and The Ghost Whisperer, and soon after a guest star on Bones. But Williams hit pay dirt when he auditioned for the role of psychologist Randal Holmes on Tyler Perry’s If Loving You Is Wrong. “I did not expect to get the role. I did an audition and went to the gym to shake it off. I got a call right away that tomorrow I was going to meet Tyler Perry for the callbacks. Tyler Perry is enormous—6’5”—his hand is the size of a catcher’s mitt and he’s intimidating.” The next day Williams says, “As I was driving down the hill home [from the callback] I got a call from my agent saying I booked it. Tyler Perry knew I was the guy for it. It kinda changed my life right there.” The season premiere of If Loving You Is Wrong was the highest rated in The Oprah Winfrey Network’s history. Williams spent five seasons playing an unhinged psychologist with infidelity and anger-management issues, a clear standout on a show about husbands and wives living in the same fictional neighborhood of Maxine. During lulls in filming If Loving You Is Wrong, Williams branched out to screenwriting and producing. “I really enjoy the storytelling process. I always have a new scene I want to come up with and can come up with stories with a snap of a finger. My mind works in a weird way,” says Williams. Last summer, Williams filmed his supernatural thriller Book of Cain, loosely based on the Bible story of Cain and Abel, in the bayou of New Orleans, knee deep in a mosquito and alligator infested swamp. “I wrote it, produced it, directed it, and starred in it. Juggling everything
was fun but different. It was fun having the full creative control, but it’s a lot of hats,” says Williams. “Seeing my artistic vision come to life is a dream.” Williams credits his transformation from starry-eyed teen in drama class to Hollywood actor, writer, and producer to his strong work ethic and moral compass. His advice to anyone with a dream? “You work hard, you put in the work, and you check in and ask yourself, ‘am I doing the right thing?’ Things fall into the right place when you are doing the things you are supposed to be doing.”

oms Not Forgotten, a nonprofit organization supporting birth mothers post-adoption placement, is hosting its third annual Mother’s Day Tea on May 7 from 11 a.m. to 2 p.m. in Oswego. This yearly tea party is traditionally held on the Saturday before Mother’s Day, which is otherwise known as National Birth Mom Day. The organization was created in 2019 by founder and president, Jennifer Mueller, who is a survivor of childhood ovarian cancer. Mueller knew with her condition she would have to get creative in having children. She carried her first child through egg donor and in vitro, but due to complications in her Tea party pregnancy doctors tablescape recommended she not carry again. Years later, the Muellers welcomed their daughter from a loving birth mom and four months later they were told another daughter was on the way from the same birth mom. After both her daughters’ placement, Mueller wanted to find a way to recognize her daughters’ birth mom—to give thanks to her for the life Mueller had always imagined. This gave birth to Moms Not Forgotten and the idea of sending out “Bags of Hope” to birth moms to remind them they are seen and ultimately not forgotten post-adoption placement. “Moms Not Forgotten was born out of the desire to support birth moms post-adoption placement,” says Kristy Hamilton, vice president and a hopeful adoptive mom. “We are pleased to send out ‘Bags of Hope’ to birth moms across the country that are filled with small gifts of encouragement.” Each bag is assembled through Bag

Packing Parties where volunteers and members wrap small gifts, pack the gift bags, and then pray over each bag. “Our goal is that all birth moms, no matter where they are in their post-adoption journey, would feel loved, cherished, and known for choosing life and choosing adoption for their child,” says Hamilton. “We recognize that adoption can be born out of great loss and sacrifice.” The entire team at the organization has a heart for adoption and desires to educate and support adoption in the local communities and beyond. Not only is Mueller an adoptive mom and Hamilton a hopeful adoptive mom, but their treasurer, Katie Haslow, is adopted herself. “We also have the privilege of working with amazing volunteers, including birth moms, who are guiding our outreach programs,” says Hamilton. This year’s tea party is themed “Crowned in Love.” With an anticipated 225 attendees, guests will look forward to enjoying a traditional tea while hearing from speakers and birth mothers. In addition, Moms Not Forgotten is thrilled to welcome special keynote speaker, Tori Peterson, Mrs. Universe 2022. Peterson grew up in the foster care system and will tell her powerful story and her unique perspective on adoption. “Through the work we do at Moms Not Forgotten and from listening to the stories of birth moms, we are constantly inspired by their tremendous strength and fortitude,” says Hamilton. “Often we are excited for the adoptive family as they bring that sweet little baby home,” says Hamilton, “but all too often the birth mom can be forgotten and not recognized or celebrated for her act of selfless love.” Moms Not Forgotten desires to change this by providing further services to include birth-mom support groups and in-person events so that these women can feel loved and supported. ive years ago, when Barrington’s Gianna Keuer first encountered indoor sky diving at Naperville’s iFly, she had no idea that one day she would be competing in a World Cup Competition. On November 13, the first-ever all-female 4-Way Dynamic Indoor Skydiving team, Volare, won the silver medal at the 2021 U.S. Indoor Skydiving Nationals at iFly in El Paso, Texas. This win qualified the team for the World Cup Competition in Belgium next month. Keuer and teammates Kiana Adamson of Colorado, Bella Capra of Oregon, and Jill Knutson of New York are the fliers making up the team. Keuer is a sophomore at Woodlands Academy of the Sacred Heart, an all-girls college-prep day and boarding high school in Lake Forest. “One goal of my team is to inspire girls to work hard and follow their dreams, and I believe that my experience at Woodlands has helped me do just that,” she says. Working hard and training weekly at iFly is preparing Keuer for the big competition. Training consists of learning the physics of wind movement, which is the driving force of indoor skydiving. Participants wear flight suits and helmets while facing winds that can approach 160 miles per hour inside a vertical glass 14-foot-wide tunnel. To be successful in this sport, Keuer says that several skills come into play. “First you have to be able to stay stable in the tunnel in different positions before you can start to carve and use more fluid movements. You have to get a feel for how the wind works, and it’s hard to know how to do that at first because there is so much wind and it can be confusing. Staying stable requires mental focus, core strength, and agility.” Keuer notes, “For speed, you can adjust how much surface area you use, like the wind in a sail. If you are on your stomach, you will go high, but if you’re straight up exposing less surface area, you will drop. Using your body to catch the wind, pushes
you where you want to go, but like anything, this takes practice.” The sport is touted as one of the most exciting and fastest-growing sports worldwide. In 2014, indoor skydiving was recognized by the World Air Sports Federation (FAI) with competitions now being held around the world. The sport is also being promoted as a future Olympic event—something Keuer would love to see. “Being a part of this amazing team and representing the United States at the World Cup is a dream come true,” Keuer says. Another team Keuer is part of is the nonprofit organization Hope’s In, where she focuses on educating and empowering at-risk teenage girls who live in the Guatemala City Garbage Dump Community. As a fluent Spanish speaker, she communicates easily with the girls she has met while volunteering for the past five summers and hopes to inspire them to follow their dreams. ifelong Barrington resident Betsy Wintringer has found one silver lining of the ongoing and ever-evolving pandemic. “It shined the light on the fact that it’s okay to not be okay,” explains Wintringer, who currently serves as the Executive Director of Barrington Youth & Family Services (BYFS). “A large portion of our mission has always been to reduce the stigma associated with (mental health) and remove any barriers to asking and seeking help. And over the last two years, people found themselves in a heightened state of crisis and in need of help. And luckily, we have been there for them.” It is this very truth that will be celebrated on June 25, as BYFS enjoys its annual gala, which this year will recognize its 50th year of helping build a healthier community by providing counseling and preventative programming to children, teens, couples, and families that focuses on supporting the social, psychological, and emotional well-being of all they serve. “The importance of this particular gala cannot be understated,” says Chris Pepper, co-chair of the BYFS Auxiliary board and one of the original creators of the annual gala routinely held at Barrington Hills Country Club. “We’re really pushing ourselves to try to raise $300,000 this year.” After holding a virtual event over the past two years, the annual gala is back in person, but will be held outdoors to give ample space for attendees to spread out and enjoy a night under the stars. And while the event itself has evolved over the years, so has the needs of the community in which BYFS serves. “Funds raised at this year’s event will help to support the increase in clients we’ve seen over the past two years,” remarks Pepper, a longtime fixture in Barrington’s philanthropic community. “It will also allow us to offset the cost of counseling services for anyone in need, regardless of their ability to pay.” Once known as Barrington Youth Services, BYFS was originally created in 1972 to fulfill a need identified by community leaders to counsel young people with the many stresses of the time, which included everything from bullying to self-harm to suicide. Today, while these stresses certainly continue, they are now also joined by the somewhat overwhelming stresses of a still evolving pandemic. “Our mission and goals have never changed over these 50 years,” explains Wintringer, who took on the role of BYFS Executive Director back in 2018. “We’re a community agency created to serve the community, funded and supported by the community
so that we can reinvest in the community. The only thing that has changed a bit is how we’ve delivered the services and to whom we’ve delivered the services.” Indeed, the need for mental health services has put an enormous strain on BYFS as of late, with the nonprofit social service agency finding that there are just not enough therapists to take on the massive load of need. There is also a cost barrier for many to receive the mental health services needed, a burden that is certainly lessened via the work of BYFS. “Insurance unfortunately is just such a wild card when it comes to behavioral health,” remarks Wintringer. “People can have great insurance coverage for medical, but it doesn’t always translate to behavioral health. So, for us to be able to not only support these families on the treatment journey, but also be able to remove that barrier, is a great help for so many.” BYFS has long enjoyed a strong relationship with the Barrington 220 School District, working alongside them to identify those in need of their wide variety of services. “We can be there at the school, so they don’t have to worry about transportation,” Wintringer says. “We also have kids that just walk over after school and we’re able to send them back with a pass to get back on a bus, so it takes a little less toll on the whole family.” And it is the hope of BYFS that the coping mechanisms taught today will prepare children better for all their tomorrows. “These kids are going to be more in tune with how they feel on a daily basis,” concludes Wintringer, who recently received a thank you note from a student who benefitted from the services of BYFS nearly forty years ago. “Those are things that are positives in our book.” And it is these positives that will be celebrated come June, when community members come together to not only celebrate all that BYFS is, but all that they once were back in the seventies at their initial inception. “Everyone is really excited about the 70’s theme for this year’s gala,” chuckles Pepper. “I wish I would have saved some of my clothes from college…especially the bell-bottoms.” Tickets for the June 25 BYFS gala will be available online in early April. rad Gamss must have heard a chuckle or two when he opened Rahl Jewelers in Hanover Park on, of all dates, April 1, 1982. That same store—which moved to its current 3,000-square-foot location in Hoffman Estates in 2007—turned 40 on the first day of April this year.
No foolin.’ “Still going strong,” says the amiable Gamss, who started his career in the industry as a 17-year-old Von Steuben High School student, picking up repairs as a delivery boy/runner for a Rahl Jewelers in Chicago. “I framed the first dollar bill we earned on the day after Fool’s Day, all those years ago.” In 2021, a year ahead of its Ruby Anniversary, Rahl Jewelers enjoyed its best year in sales ever.
“I love what I do,” says Gamss, whose attentive staff includes his wife, Nancy (sales and marketing), and their son, Ryan, Rahl Jewelers’s manager and a graduate diamond gemologist. “People who enter our store usually do so because of a happy occasion—engagement or birthday or anniversary. I see happiness and excitement every day. It’s a store with a casual and friendly atmosphere. How fortunate am I? We’re family-oriented and we know a lot of our customers’ first names. We’re not stuffy, not pushy. We value great relationships more than anything else. “And whether it’s a customer who is looking to buy a $100 item, or a customer who’s looking to purchase something for $100,000,” the Palatine resident continues, “we’ll treat each the same way.” Stacey Hake, another graduate diamond gemologist, serves as Rahl Jewelers’s assistant manager, and Custom Jewelry Designer Tony Carone has worked with Gamss since 1994.

Gamss jumped to sales after two years as a runner, got promoted to manager, and, at the age of 27, bought Rahl Jewelers-Hanover Park from a business partner. “I never drew a salary in my first six months,” Gamss recalls. “I reinvested the money in our Hanover Park location. Vendors knew me and trusted me. Eight months after we opened in 1982, right around Christmastime, I handed a check to my business partner to complete the purchase of the store. “He was dumbfounded,” adds the former Von Steuben athlete, who, as a baseball player, competed on city … diamonds. Gamss once went out of his way, happily, to drive an engagement ring to Chicago for a grateful couple the day before their wedding. He once spent six months on a project—making sure the design of a $700,000 ring pleased his customer—and never tires of seeing a future bride cry happy tears at the sight of a striking Rahl Jewelers engagement ring. A
mericans love their apple pie, but in Britain, pork pies rule the pastry roost. Brits spend more than £165 million on pork pies every year, according to statistics from the Kantar Worldpanel—more than they shell out for any other pie variety there. And among pork pies, the Melton Mowbray variety is king. Melton Mowbray, a town in rural Leicestershire, England, calls itself Britain’s “Rural Capital of Food” for the pork pies and Stilton cheese, both having been granted protected designation of origin (PDO) status by the European Commission. That distinction means anyone outside the 10-mile radius surrounding the town, and anyone using cured meat in the recipe, can’t officially call their pork pie a Melton Mowbray. With that in mind, our Melton Mowbray-style pie uses handminced, uncured pork like the original, mixed with salt, pepper,
sage, and a squirt of anchovy paste. Tucked into a traditional hot water crust with rich stock poured in through the vent hole to seal the meat, it’s a filling, portable feast. That portability made the pie a favorite bring-along on foxhunts as far back as the late 1700s. But the flavor of the pie took it nationwide. To make it here, I adapted the recipe from Linda Collister’s wonderful, The Great British Book of Baking, with American measurements in mind (i.e., a “rasher” of bacon is what we know as a “slice.”) My boys, who love anything that looks like it came out of The Wind in The Willows picnic hamper, give the result a big thumbs up. While traditionally eaten cold or room temperature, we like the pie warmed a bit with a pile of cornichons and strong mustard on the side. Note: You will want to make the jellied stock the day before you bake the pies. Makes six, 3 ½-inch pies

R ECIPE| F OOD & TRAVE L INGREDIENTS FOR THE JELLIED STOCK • • • • • • • •
2 lbs. meaty uncured pork bones 1 large onion 1 large carrot 2 bay leaves 5 peppercorns 8 cups water (or enough to cover the bones and veg) Salt to taste 3 large eggs (you will use the whites for clarifying the stock; save and refrigerate the yolks for the pastry wash)
FOR THE FILLING
• 2 ¼ pounds boneless pork shoulder, finely minced to make 4 cups packed • 3 slices of uncured bacon, finely chopped to make 1 cup • 2 Tbsp. dried sage leaves, finely crumbled • 1 tsp. anchovy paste • ½ a nutmeg, finely grated • 2 tsp salt • 2 tsp freshly cracked pepper
FOR THE HOT-WATER PASTRY CRUST • • • • • • •
4 ½ cups flour, sifted 1 ½ tsp salt 6 Tbsp. solid white rendered bacon fat 4 Tbsp. unsalted butter 6 ounces milk 4 ½ ounces water 3 egg yolks (saved from clarifying the stock) to brush on the pastry
MAKE THE JELLIED STOCK
Place all ingredients in a heavy-bottomed stock pot over medium heat. Heat to boiling; reduce heat to a simmer. Skim off and discard foam. Partially cover pot and simmer for five hours. Remove from heat and strain stock through a colander into a fresh pot, discarding solids from the colander. Cool stock. Skim off and discard any fat that has collected on the surface. To clarify, separate three eggs, saving the yolks to brush on the pastry crust. (Cover and refrigerate yolks.) Whip egg whites until soft peaks form. Stir egg whites into the pot of cooled stock. Heat over medium heat until stock begins to boil. The whites will float to the top of the stock, pulling soup impurities with them; stop stirring and boil the stock until has reduced to about 3 cups of liquid. Remove and discard the eggwhite raft. Pour stock through fine mesh strainer. Season finished stock with salt. Refrigerate.
MAKE THE FILLING
On a clean work surface using a very sharp knife, mince pork shoulder into tiny pieces. Finely mince uncured bacon. In a large bowl, mix meat with crumbled sage leaves, anchovy paste, salt and pepper. Cover lightly with a towel and let rest while you make the crust.
MAKE THE HOT-WATER PASTRY
In a large cooking pot over medium-low heat, add butter, solid rendered bacon fat, milk and water. Heat gently until the fat has melted, without allowing the mixture to boil. Place sifted flour mixed with salt in a large bowl and create a well in the middle. Using a wooden spoon, stir the warm liquid into the flour until the mass comes together into a soft dough ball, knead slightly. Cut dough in half and roll half of the dough out to about 1/8 to ¼-inch thickness. Coat the insides of six, 8-ounce straight-sided baking crocks with vegetable shortening. Cut parchment paper strips and circles and press into the sides and bottoms of the crocks. Cut 3 circles of the dough about two inches larger than the crocks; ease and fit dough into the first three crocks, pressing firmly to mould the dough to the sides of each crock, leaving no air pockets. Leave about ½ inch of dough sticking up above the edges of the crocks. Repeat with the second half of the dough and remaining three crocks. Preheat oven to 400F. Fill each pastry-lined crock with the meat mixture. Press together and then roll out remaining dough. Cut pastry “lids” for each crock, making each circle about 1 inch larger than the circumference of the crock. Cut a ½ inch circle in the center of the top of each pastry. Place each pastry lid over each crock. Tuck and fold the edge of each pastry lid over the bottom pastry extensions, pinching and tucking to seal. Decoratively flute the edge of each pastry, pressing with thumb and forefingers. Cut six, 6 x 2-inch strips of aluminum foil. Wrap strips around your forefinger to create little metal tubes. Poke each tube into the hole in the top of each pastry to create a vent. Place filled crocks on a baking sheet. Beat egg yolks and coat the top of each pie with egg yolk. Bake at 400 for 15 minutes. Reduce heat to 350 and continue baking for 45 to 50 minutes until liquid is bubbling through the vents and crusts are a deep golden brown. Remove from oven. Cool. When pies are cooled, the meat filling will have pulled away from the inside of the crusts. To fill this gap, slightly warm 1 cup of the reserved jellied stock, just until it is pourable. Pour a small amount of stock into each pie through the metal vent. Remove and discard vents. Refrigerate pies for several hours to solidify the jellied stock. Serve pies cold, or at room temperature. Or, place a pie on a plate and warm slightly (the jellied stock will spill out when you cut warmed pies.) JWC | COUNTRY 59

AMSTERDAM ^ BUDAPEST Stroll the streets of two dynamic European capitals and luxuriate in historic and centrally located accommodations. WORDS BY DUSTIN O’REGAN

AMSTERDAM In the 17th century, The Dutch Golden Age, Amsterdam emerged as one of the world’s most important centers of trade. With that came wealth and with wealth, a blossoming of culture and the city’s expansion. The Dutch masters thrived, producing some of the world’s most treasured masterpieces, while storybook row houses sprung up like Dutch tulips along winding canals. The city continues to be steeped in culture and retains the beautiful architecture of centuries past, but it also feels modern. Just beyond the historic facades, we found swanky hot spots and modern luxury. Our first encounter with a thoroughly modern Amsterdam took place while traveling from the airport to the city center. During this quick 25-minute ride, we spied massive glass structures lining the highway. Those occupying these glass houses? Many of today’s tech giants, including Google. I wasn’t expecting a modern landscape as an introduction to the historic capital, but it helped explain Amsterdam’s thoroughly hip vibe. This vibrant city is easily walkable (or bikeable). It possesses 165
idyllic canals flanked by fairy-tale gabled houses—some with a hint of tilt disclosing the dwelling’s marshy underpinnings. We spent many an afternoon strolling the cobblestone streets, crossing bridge after bridge in this charming city. Our favorite neighborhoods were De 9 Straatjes (Nine Streets) and Jordaan, both full of leafy canals, art galleries, boutiques, and cafés. You could spend years exploring these neighborhoods and not exhaust the possibilities of their quaint storefronts. Everything is very close, the only area requiring a bit of a walk from our hotel was Museum Square and Vondelpark, one of the city’s largest green spaces. The museums were worth the extra steps and the scenery en route can’t be beat (you’ll pass an Instagram-worthy, canal-side flower market on the way). I promised my daughter this trip would be more of an “enjoy the city” adventure with fewer visits to churches and museums. However, I could not pass up Rijksmuseum, an architectural treasure housing many of the Dutch masters’ work. We saw several Vermeer

F IR ST CL ASS| F OOD & T RAVE L and Frans Hals masterpieces, but the museum’s most celebrated work is Rembrandt’s The Night Watch. The painting is breathtaking in scope and size. We popped in next door to The Van Gogh Museum established by Van Gogh’s nephew. This light-filled building showcases the short and tortured life of Vincent Van Gogh. The incredible breadth of Van Gogh’s work paints a portrait of the man himself, and you will glimpse the artist through the eyes of his family. Be sure not to miss The Rembrandt House Museum, home to many of his etchings, and The Anne Frank House. The latter is very popular amongst tourists, so reserve your tickets in advance. If you are going to visit several museums and attractions on your trip to Amsterdam, you may consider buying the I amsterdam City Card. It includes admission to a whole list of museums, sights, and a canal boat tour. This tour of Amsterdam’s UNESCO-protected canal ring is a delightful way to experience the city. As a home base, we chose the Anantara Grand Hotel Krasnapolsky located in the heart of the city and marrying historic significance with modern luxury. In 1865, Mr. Krasnapolsky, a charismatic Polish tailor, opened a tiny coffee house on the site that is now this grand Amsterdam’s hotel. Our spacious and modernly appointstorybook gabled houses ed Royal Suite offered glorious views of the along a canal National Monument, Dam Square, and the Royal Palace. As a nod to Mr. Krasnapolsky’s chosen trade, “The Tailor,” a beautiful indoor/outdoor cocktail bar located off the reception hall, offers tailor-made and bespoke cocktails. A perfect locale to relax after a day of sightseeing. We began our days feasting in The Wintergarden, a 19th-century glass-ceilinged courtyard, once the backdrop of a royal wedding. Just across the hall, lies The White Room. Here under the watchful eye of three-starred Michelin chef Jacob Jan Boerma, the restaurant showcases refined modern cuisine using only Netherland’s freshest ingredients in a historic setting. As we dined on the most splendid food in
Amsterdam, I envisioned gallant guests of long ago. With all the walking, desserts are well deserved—the hotel boasts a resident chocolatier who creates decadent delicacies. Upon arrival, a chocolate Christmas stable was waiting for us in our suite—a signature Anantara touch. We found it almost too beautiful to eat, but the scent wore down our resolve. If you have time for a day trip, The Hague is only an hour away via train and the trip offers breathtaking views of the Dutch countryside. Be sure to visit Andrew Carnegie’s Peace Palace, the seat of the United Nations International Court of Justice, and the Mauritshuis museum, home to Vermeer’s Girl with a Pearl Earring. We found The Netherlands utterly charming and look forward to a return. Recently, Amsterdam has sought to reshape its anything-goes reputation. The campaign has been a success; during our trip, we saw none of the raucous behavior sometimes associated with the Dutch capital’s red-light district and cannabis coffee shops. We loved every minute. Leaving Amsterdam we set our sights on another golden city, Budapest.

BUDAPEST Once Buda and Pest were separate cities on either side of the Danube. In 1873, Buda, Pest, and a third town, Obuda, were united to become Hungary’s capital city. The Buda side extends into the hills on the west bank of the Danube, crowned by Castle Hill. On the east, the former Pest lies in the lowlands and is home to the immense Parliament building. 1896 is the year to remember as most of the city’s buildings were erected for the city’s 1,000th-anniversary celebration. During Hungary’s millennial celebrations, the spirit of entrepreneurship, art, and literature was at its zenith. Throughout the city, you’ll find a treasure trove of architectural styles from that time including Baroque, Neoclassical, and Art Nouveau. We stayed on the Pest side in the beautifully renovated 5-star Neo-Baroque-style Anantara New York Palace, home to the famed New York Café and located just a quick 20-minute drive from the airport. The café boasts Belle Époque décor that has dazzled visitors for more than 120 years. Its frescoed ceilings, Venetian chandeliers, and gilded balustrades reflect the grand atmosphere of the Habsburg coffee houses. No
wonder this landmark was a favorite of artists, writers, and aristocrats. The hotel is an ode to Europe’s Belle Époque period—a grand marble façade adorned with ornate carvings features an impressive clock tower, while inside the lofty central courtyard/lobby is surrounded by open terraced floors reaching toward a vaulted glass ceiling – transporting you to the golden era in which it was built. Off the central lobby is the 100-year-old Poet Bar, overlooking the White Salon Restaurant. With its red-hued, intimate ambiance, it was the perfect place to unwind with a cocktail after a day of sightseeing. The 185 rooms and suites are accented by centuries-old art and antiques, Murano glass chandeliers, and sumptuous marble bathrooms. Our suite with its spectacular city views overlooked the bustling and elegant Erzsebet Korut, one of Budapest’s most important boulevards and one that would carry us to many sights. Budapest is an easily navigable city with plenty to see. A few musts are the Neogothic Parliament, an

immense structure situated on the banks of the Danube. The world’s third-largest Parliament building is spectacular inside and out. It contains close to 700 interior rooms, ten courtyards, almost 100 statues of Hungarian rulers on its façade, and 12.5 miles of staircases. Be sure to book a tour to learn its history and to view King Steven’s crown jewels. During our visit, Budapest’s landmark Chain Bridge, the first permanent stone bridge connecting Buda and Pest, was under renovation so instead, we crossed the Margaret Bridge with its beautiful views of the Parliament and Castle Hill. En route to the Royal Palace, we stopped at Fisherman’s Bastion. This decorative fortification offers splendid panoramic views of Budapest. Its seven turreted towers Anantara NY Palace symbolize the seven Budapest Hotel Lobby Hungarian chieftains who founded Hungary in 895. Leaving the site, you will come upon the 800-year-old Gothic-style Matthias Church, the site of the coronation of two kings. A short walk away lies the Royal Palace; its grounds are home to beautiful fountains, gardens, and views of the city. Be sure to take the funicular back down the hill—this fan-favorite was originally built in 1870 as a way to ferry workers to and from the palace.

On our walk back to the hotel, we stopped at the large indoor market – yet another building built for the 1896 celebration. This vast space houses stall upon stall offering meats, cheeses, and of course, Hungarian Paprika, which you will find in all forms, sizes, and intensities. Famished from our day of touring, we booked an Anantara Spice Spoons experience. Overlooking the beautifully illuminated Parliament building, we feasted on traditional Hungarian fare at the Chef ’s Table. We sampled variations of hearty Hungarian breads slathered with a variety of spreads. Next, was a plethora of sausages and potato moodily. Then, we donned aprons and joined Chef Andras Wolf behind the grill to prepare langos, a traditional Hungarian street food. After mixing and kneading the pizza-crust-like dough, we fried this delicious treat and topped it with sour cream, grated cheese, and paprika. During the meal, we tasted various palinka, a traditional Hungarian fruit brandy, and ended on a sweet note sampling desserts made with traditional cottage cheese (a Hungarian favorite). On our last day, we headed in the opposite direction of Buda toward the 1896 fairgrounds. At the park’s threshold, is Hero Square, a large plaza bookended by the National Museum and the Palace of Exhibitions. Beyond the square, you will find a large city park, a zoo with fun Art Nouveau décor, and a “Transylvania castle” boasting a hodge-podge of architectural designs. Finally, we visited the famed Neo-Baroque Széchenyi Baths, Europe’s largest medicinal bath sourced by two thermal springs. For the perfect ending to our European escapade, we visited The New York Palace spa – beneath the hotel’s lobby lies an expansive spa housing steam rooms, saunas, a surreal swimming pool, and relaxation rooms. As we enjoyed a warm mud massage inspired by Budapest’s thermal bath heritage, memories of sights seen danced in our heads. This proved the perfect finishing touch to a fantastic visit. A
bout a mile west of the heart of the Village of Barrington, gentleman farmer Harry Stillson Hart and his family spent their summers relaxing, watching as their cattle grazed their property. His son-inlaw, Harold Byron Smith, went on to become the founder of the Village of Barrington Hills in 1957 and served as its second mayor. He and his wife, Pauline Hart, for whom Hart Road is named, lived in Barrington Hills their entire lives. Their granddaughter Gillian—herself a lifelong resident of Barrington Hills— married Rob Stoettner and together they continue the long-standing tradition of raising their children in Barrington Hills. Stoettner recalls the Village of Barrington not changing much from when she was younger, “it is still very quaint and self-contained.” However, the areas around Barrington have exploded with developments and population since then. “Barrington is synonymous with my identity, especially because of my family heritage here,” Stoettner says. Stoettner continues to uphold her family’s values of giving back to the communities they hold close to their hearts. Currently, she sits on the Barrington Hills Planning Committee; the Board of Trustees at her alma mater, the University of Lynchburg; and also volunteers at Rush University Medical Center. Stoettner’s family involvement with Rush University Medical Center dates back to 1872 with six generations of family members volunteering or sitting on the board of trustees. “In my family we have been taught for many, many decades that we give back to the community,” said Stoettner. For the past 21 years, she has been on the board serving in some capacity with jobs ranging from the head of finance to serving as a member on the ticket committee. Now, Stoettner is the Event Chair of The Woman’s Board of Rush University Medical Center’s 27th Annual Spring Luncheon, which will be held on May 9.
The luncheon will be the Woman Board’s first in-person event in two years with Ali Wentworth, an acclaimed actress, comedian, author and producer, serving as keynote speaker. Members of the board are looking forward to Wentworth enriching the experience with shared happiness and laughter. “I could not think of anyone better to host this important event. She is funny and well-rounded and sure to be an exciting host,” says Stoettner. The hospital partners with the Woman’s Board to ensure that the funds raised go to departments within the hospital and community that will make a powerful impact. The luncheon highlights the work being done in support of the Woman’s Board 2022 Principal Project, The Woman’s Board Fund for Excellence in Cellular Therapy. Rush is aiming to become one of the nation’s first clinical trial sites for tumor-infiltrating lymphocytes, or TIL, therapy which is a potential treatment breakthrough for solid tumor cancers showing earliest promise in lung cancer and melanoma.
