he last day of 2020, ironically, ended quietly for many. With no big New Year’s Eve celebrations, many of us spent the last night of the holiday season at home with family. We popped champagne bottles, celebrated the passing of a relentless year, and eagerly welcomed the fresh start. If 2020 taught us anything, it was to expect the unexpected. Despite the havoc wreaked in this past year, 2021 offers us hope and a chance to start anew.

he Barrington Country real estate market this past year was booming and buyers had to respond quickly. In the Barrington area, the total inventory of homes was down 47% year over year in December with closed sales up 50%.

he month of February, also known as the month of love, brings us a fitting holiday for the times: Valentine’s Day. I feel that Valentine’s Day can be appreciated on a different level this year, similarly to how special the 2020 holiday season felt. With everything happening in our world today, I think everyone needs a bit of extra love in their lives. I can’t count how many times I’ve said this to myself already, but it really is true that little things like being kind to each other are what is going to get us through these difficult times.

T

he thyroid is a gland located in your neck just over the trachea or windpipe. When a problem occurs with the thyroid gland, it can become underactive also known as hypothyroid or overactive also known as hyperthyroid. Thyroid imbalances are more prevalent in women and about five percent of the population globally is affected by this condition. Hypothyroidism is the more common thyroid imbalance. Often it is caused by Hashimoto’s thyroiditis, an autoimmune disease, that tends to run in families. Common symptoms of hypothyroidism include cold intolerance, chronic fatigue, dry skin, forgetfulness, constipation, and depression. Although there is no cure, this underactive condition is often easily treated with supplemental thyroid hormone tablets. Hyperthyroidism refers to when too much thyroid hormone is produced. The most common cause is Graves’ Disease and can sometimes be noticed on a physical exam by an enlarged thyroid gland, or goiter, or by bulging of the eyes. Symptoms include nervousness, weight loss, irritability, increased sweating, heart racing, hand tremors, anxiety, difficulty sleeping, thinning of skin, fine brittle hair, and muscle weakness. Treatment is by drugs known as antithyroid agents—methimazole and propylthiouracil are ones prescribed by physicians. There are potential side effects with treatment and close monitoring of the thyroid level is required for the best management of thyroid imbalance. An endocrinologist is a specialist that can

be helpful with patients that have more complex conditions to manage out of the scope of a primary care physician. Many patients are medically managed by their internist or primary care physician. Diagnosing a thyroid imbalance is typically done by a detailed patient history and physical exam, along with blood testing of thyroid hormone levels. In some cases, a thyroid ultrasound may also be needed. Thyroid cancer often does not cause symptoms early on, but could cause a neck lump or nodule, voice changes, difficulty swallowing, neck and throat pain, or swollen lymph nodes in the neck region. Thyroid imbalance is on the rise due to increased public awareness and more consistent testing being done by physicians. If you think you are having symptoms related to thyroid imbalance, first seek out proper medical attention with your primary care physician. If you are diagnosed with a thyroid condition, consider having a discussion with your family, in case they should be tested as well. Think about the ways we select a dentist. Some will ask a friend or neighbor. Others will go online and check reviews. Some will even respond to advertising that comes in the mail. But even with all of these methods, we cannot be sure how good their work is. This is where accreditation comes in. Imagine that your dentist’s work could be evaluated by the top dentists in the world. They would have to submit their work for evaluation and it would have to pass the highest of quality standards. The American Academy of Cosmetic Dentistry (AACD) has a program that performs this exact type of screening. For 35 years, the AACD has offered this credentialing program.

Accreditation serves to set the standard for excellence in cosmetic dentistry. Achieving accredited status from the AACD requires dedication to continuing education, careful adherence to the protocol, and a resolve to produce exceptional dentistry. Over the past 35 years, thousands of dentists have attempted to complete the process but only 400 have been able to meet the standard. Of these 400, only 200 in the world still practice dentistry today. The process begins with a written examination. If the candidate passes the written part, they can then start the clinical portion. This involves completing five different reconstructive procedures that are pre-determined by the association. Each case is photographed under high magnification and also requires a written report. Once the documentation is complete, the case is submitted for evaluation. After the clinical portions are passed, a final oral examination is conducted along with a review of all the clinical photography and reporting. Only after passing all of these steps does the dentist receive his accredited status. When you are ready to look for a new dentist, let AACD help you. C

arl Tommaso is riding hard. Boots in the stirrups and right arm up high, he whirls a lasso overhead, ready to rope a steer. Interventional cardiologist by day and cowboy in the margins, Barrington Hills’ Tommaso has been riding horses and roping steers in the competitive sport of team roping for more than 25 years. “People ask me, how did you get into this?” says Tommaso. “And I say, listen, once you leave Cook County, this might as well be Nebraska—Illinois is a farm state, and team roping is fairly widespread here.” A skilled cardiologist who at his busiest performed 800 or more heart operations a year, Tommaso says the sport of team roping has been a huge stress reliever throughout his career.

One of the first generation of cardiologists to specialize in interventional surgeries (angioplasties and stents), Tommaso has been practicing as part of the NorthShore University HealthSystem for more than 25 years. “I love the practice, but it is a very high stress occupation,” he says. “Team roping takes me to a completely different place, meeting people from all different walks of life.” Although Carl and his wife Helen, an ICU nurse now working with the pulmonary practice at Northwestern Medicine Lake Forest Hospital, are planning to retire in 2021, Tommaso says he will keep riding and roping. The sport itself is a rodeo mainstay. It grew out of cowboys’ work-a-day method for “stretching” steers when they needed treatment or care from a vet or owner. the steer with one rope, followed by another cowboy (the heeler) who lassos the hind legs of the animal with a second rope. In competition, champion team ropers can complete the entire procedure in less than 4 seconds. Like the more than 150,000 others who’ve fallen in love with the sport nationwide, Tommaso has competed in rodeos and traveled all over the country to participate in team roping events. But the ones he’s enjoyed most happened in his own arena. For much of the 23 years since Tommaso built his family’s house on a five-acre spread here that includes a horse barn, and regulation-sized arena, Tommaso hosted team roping sessions Tuesdays and Thursdays, as well as “Ropings”—yearly events where locally based team ropers competed for the chance to win saddles and other prizes. Tommaso’s beginnings with team roping were a natural outgrowth of his love for horses and a sporting life. “When my two daughters were young, I wanted them each to choose a sport,” he explains. “Sports can really enrich your life. When I was little growing up in New Haven, Connecticut, I wanted to be the second baseman for the New York Yankees,” he says, smiling. While the Yankees didn’t happen, Tommaso did make it to the semi-pro level, playing short-stop and second base in the Connecticut Twilight League. In response to her dad’s request, Laura, who is now a physician for Northwestern, said she wanted to learn to ride horses. Tommaso got Laura her first horse, Rosie, shortly after. When Laura outgrew Rosie, Carl just kept riding the horse. Sometime later, on a family vacation to a guest ranch in Wyoming, roping came into the picture. “One day after a trail ride, we came back and one

of the wranglers had left his rope and a steer dummy sitting by the barn,” says Tommaso. “I picked the rope up and started throwing it. The wrangler came back and offered to show me how. I just got hooked on it. So that year for Christmas I got a plastic steer head and a rope, and I would just sit in the backyard throwing.” As his skills progressed, so did the number of horses—and cattle—at Tommaso’s homestead. “We’ve had as many as five horses here, and 15 head of cattle,” he says. Along the way, Tommaso learned from some of the best in team roping, including former world champion Bobby Harris. Now a good friend, Harris has Tommaso out to his ranch in Wyoming every summer. “I take both my horses and we just rope all day for an entire week,” says Tommaso. For her part, Helen has been supportive of her husband’s leisure-time pursuits. “The horses and the team roping have meant so much to Carl over the years,” she says. “I think everyone should have something that helps them grow, meet new people, and stay active. For Carl, team roping has been that, and more.”

A STUDIO OF ONE’S OWN Some might think opening a new interior design and art gallery at the height of a pandemic is terrible timing, but for Edyta Szlezak of North Barrington, it could not have been more perfect. hen judges of a children’s art contest in the northeast Poland town of Grajewo saw Edyta Szlezak’s colorful rendition of the fantastical village in her favorite cartoon, The Smurfs, they had a hard time believing that a fifth grader could create such a complex work without the help of an adult. So they disqualified it. “I made a scene of the Smurf village that put the characters in a magic, invisible bubble because I was always upset with the evil wizard, Gargamel, trying to get them,” recalls Szlezak, who now lives in North Barrington with husband, Mario, and teen daughters Lexi and Nicole. “They said this is a kids’ contest and this was not done by a JWC | COUNTRY 35

kid, so they told me I could not submit this piece. I tried to explain that this was my work and they still didn’t believe me.” This memory has stayed with her, and in many ways, has informed that path she would take after immigrating to America. “I remember it specifically because it really hurt me, in a way. I was very sad about it,” she says. “But what I tell my kids is that sometimes in life you may end up having a situation like this, but you should never get discouraged. I kept trying, and never gave up.” Flash forward to November 2019 and Szlezak, now an accomplished interior designer and fine artist, was ready to lease a property Gold Monument Mixed Media 90” x 36”

at the intersection of Main Street and Route 59 in downtown Barrington that she’d had her eye on for some time. With 2,000 square feet of open space and a basement, it was the perfect location for something she’d been dreaming of for years—a retail studio that could double as her interior design office and art gallery. “As I was walking around, I was envisioning this place and what I’d do with it,” says Szlezak, explaining that in her mind, she knew there needed to be a cozy spot for clients to sit, a fireplace as a focal point, cabinets, a work space with desks, and comfy chairs for gathering and design consultations. “Then when I saw the spacious basement, I got so excited because I saw the potential of turning it into a work space to create my art work.” By the time 2020 started, work on her dream studio—Edyta Fine Art and Design—was well underway. Everything was going exactly as planned. Then came March, and an obstacle no one could have predicted. “All of a sudden, we’re on lockdown,” she recalls, joking. “What a great time to build a business.” However, the same spirit of resilience that pushed her through back in Poland kept her focused on overcoming all the hurdles the global pandemic was sending her way. “I kept busy, and even though I couldn’t open the studio, I kept working,” Szlezak explains. “It was quite a challenge in the beginning. I like to meet with people face to face. But having the studio space to work on my art during this time was a dream come true.” With her daughters doing school online, and everyone stuck indoors, her usual routine of creating art pieces in the family kitchen just wasn’t going to work. “I have to wear a respirator a lot of times when I’m using resin,” she says. “The counter is pretty spacious but by the time kids come back from school, I have to wrap everything up and put it away. Szlezak refers to it as “the icing on the cake.” “When I meet with my clients, I get to know them, and I know exactly what they like and exactly what we’ve done,” she explains. “When it comes time to put in window treatments and art work, people struggle finding a piece that they can appreciate.” In addition to her original pieces, Szlezak specializes in creating custom mixed media creations to match any décor. “Some people like glitter; some people like more masculine pieces,” she says, adding that she likes to incorporate metals and even her own handmade crystals into her work. “Sometimes I also do oversized pieces on canvas and that’s what helps me build this relationship with my clients—helping them find that dream piece they can’t find anywhere else.” With the year ahead looking brighter, Szlezak looks forward to welcoming more customers into her new gallery and to continuing the work she has loved since a child—imagining three-dimensional worlds and creating art that’s all her own. “I wake up earlier and work longer hours now, but it gives me pleasure because I have built something for myself,” she says, adding that her husband has given her unwavering and unconditional support throughout this journey. “I do what I love and my kids see me happy; there’s nothing better than that.”

out and leave when I’m done.” As the “stay at home” order was lifted and people tiptoed back into downtown shops again, Szlezak began to welcome long-time clients and new customers into the new gallery and showroom. “Because of the pandemic, foot traffic is not at peak yet but most of my business continues to be referrals and repeat clients,” she says. “People are shopping differently right now. I might get a recommendation from a friend of a friend, but mostly it’s word of mouth. As for new clients who popped into my gallery, all I hear is a lot of ‘wow’.” Early feedback is that downtown Barrington needed a space just like this, a sleek, carefully curated showroom not only for those seeking interior design services but also a gallery where Szlezak’s contemporary art pieces can be showcased for buyers and collectors. “Before, if you wanted a piece like this, you’d need to drive to downtown Chicago,” she says. ”And I feel that when you have a local business, it helps to improve the community as a result. I’m happy to be a part of that—especially during these times.” One unexpected benefit of the pandemic has been a shift in how Barrington area residents are thinking about their homes, and the expert interior design services they are seeking. “People are spending Edyta Fine Art and Design is located at 107 E. LEEK & POTATO SOUP

T

here is a delicious vegetable soup in this post. But first? Some grandfather tales. My Grandpa was a big believer in a vegetable diet, eating large quantities of carrots and beets, turnips and potatoes, green beans and cabbage, most of which he peeled and chopped while sitting on a little handmade wooden perch called his “stropping stool.” I made this soup thinking of him. Grandpa was a powerfully built man, who helped build the train cars for Pullman and was an amateur boxer. When he learned there was prizefighting at White City, an amusement park that used to stand at 63rd Street and South Park Avenue on Chicago’s South Side, he headed into the ring. That went fine until some beer-drinking buddies dared him to show his

strength by breaking a rope tied around his bicep. He broke the rope, but also busted his bicep. Grandpa started his vegetable regimen shortly thereafter, on the advice of one Dr. Brown who believed a vegetarian diet would cure all ailments (and had most of the relatives muttering, “quack.”) But Grandpa lived a very long time, passing on his love for vegetables to all of us. I still have his stropping stool, where I perched earlier today to peel the potatoes for this very simple, delicious soup. I adore leeks, preferring them over onions for their delicate flavor, buttery texture and beautiful color in a soup. If you like, you can add some cooked barley or couscous for extra texture and calories, but I think this soup—just vegetable broth, butter-sauteed leeks, potatoes and lemon—is perfect on its own.

Leek & Potato Soup Serves 2

• 2 medium Russet potatoes, peeled and diced into bite-sized cubes • 1 Tbsp unsalted butter • 1 large leek, (outer leaves discarded,) sliced in half lengthwise, white and yellow parts sliced into 1/8-inch rings • 2 cups homemade or high-quality vegetable broth • Salt and fresh-cracked pepper to taste • Juice from ½ fresh lemon

In a small, heavy bottomed pot, heat 2 cups water to a simmer over medium heat. Simmer diced potatoes in water until tender. Remove from heat. Drain. Set potatoes aside. Add butter to pot over medium heat. Once butter is melted, add sliced leeks and saute, stirring occasionally until tender. Add cooked potatoes and vegetable broth to pot; heat until broth is hot. Salt and pepper to taste. Serve hot in bowls with drizzle of fresh lemon.

esigned as a portal into the landscape, history, and rich multicultural identity of the region, the recently opened Conrad Punta de Mita is designed to offer immersion in Mexico’s Pacific coast. The resort’s layout pays homage to the traditions of the indigenous Huichol people who have inhabited the mountains of central Mexico for more than 15,000 years. “From thoughtfully designed rooms to unique restaurant concepts driven by age-old recipes and enriching programming, we tapped deep into the region’s local heritage to provide an experience driven by exceptional service that meets the demand of today’s discerning traveler,” notes General Manager Marco Tabet. Almost every resort vantage point, including guest rooms, offers views of the dramatic coastline, majestic Sierra Madre mountains, and palm trees that dance in the breeze. The resort’s nature-centric

design encourages wellness and reflects a core belief of the Huichol that transformation and personal development occur through connection to nature. This admiration of nature is mirrored in the resort’s open-air common spaces including its luxurious pools, four dining venues, and indoor/outdoor spa. A labyrinth of paths intertwines the shimmering swimming pools surrounded by woven wood cabanas and chaise lounges half-submerged in water offering the coolest way to sunbathe. The overall design of Conrad Punta de Mita nourishes the mind and soul, but it is the cuisine that nourishes the body. All four restaurant menus and spaces pay tribute to age-old techniques and flavors of the local region. Executive Chef Victor Palma takes great delight in his position researching ancient ingredients to incorporate into his aromatic and enchanting cuisine. The specialty restaurant Codex, lying at the resort’s edge, creates a sense of wonder and intimacy through a curated dining experience. Guests enter a forest of mangroves before reaching an entry with

four fountains. Here they are handed a candle and asked to turn to each source of water for a gratitude ritual. Next, guests enter the dining room which rests on an elevated wood deck beneath an intricate bamboo ceiling. An open “window” to the ocean completes the hypnotic embrace … and the culinary journey has not even begun. Codex, inspired by the ancient Aztec book of herbs, ‘Codice,’ features traditional Mexican fare prepared with locally sourced ingredients. The seasonal Full Moon Experience offers a menu directed by the phases of the moon, on-property fermented mezcal tasting, and a discussion with local farmers on the health benefits of their crops and herbs used to prepare the meal. This is not just dinner, this is a true culinary escapade. The open air Mezquite, one of our favorite restaurants, and just up the beach from Codex allows guests to dine on delicacies while toes rest in the sand. For lunch one day, we enjoyed a true seato-table affair, the Zarandeado experience, led by Executive Chef Palma. Fishermen from a local village brought their fresh catch for the chef to prepare one of Nayarit’s classic specialties, Red Snapper a-la-Zarandeado. This 500-year-old method of grilling fish over hot coals incorporates an abundance of spices and a “flipping” of the fish. We assembled fish tacos with the succulent grilled meat, salsas, guacamole, and pickled onions—Buena comida! Don’t miss Mezquite’s fresh grilled octopus and assortment of delicious salads (we recommend the quinoa with feta, green apple, and peas in a savory sesame dressing or the roasted squash with gorgonzola and arugula in a light dressing with a hint of vanilla). The traditional post-dinner charcoal popsicle is always a hit with guests and has the added benefit of aiding digestion. Start your mornings on Arbol’s patio and embrace nature while perched above the expansive grounds overlooking the pools and beach. delicious chunks of lobster or with the stuffed Chile Relleno, a popular choice. End evenings in the Agave Studio just off of Arbol’s entrance. Spirit aficionado and the resort’s Food and Beverage manager, Ana Martinez, will lead you on a journey of Mexico’s agave introducing you to the differences between Mexico’s well-known spirits with samplings of several different varieties including tequila, mezcal, and raicilla. You’ll even sample a sotol laced with a bit of viper venom. Last but not least and at the social heart of the resort, lies the open-air Paleta. A woven wood ceiling embodies a design in honor of the Huichol allowing light to enter and dance in patterns across the floor. My go-to here was the poke bowl with melt-in-yourmouth tuna, avocado, and Chile serrano—in one word—divine. The celebration of tradition and nature does not end with the resort’s overall design or with the restaurants’ cuisine. The indoor/ outdoor 10,000-square-foot Conrad Spa enhances wellness and mindfulness through indigenous rituals and natural elements. Upon entry, guests will find the air permeated with a customized smell that is spellbindingly glorious. Guests are then led through a vine encased tunnel to outdoor hummingbird nest-like cocoon treatment rooms handwoven from local wood. Therapists use a collection of rituals and therapies inspired by ancient traditions, local flora,

For the adventurous, the spa also features a traditional clay Temazcal or “house of heat” providing a cleansing experience for body, mind, and spirit that has been a tradition within Mexican culture for over 1,000 years. The resident shaman awaits your arrival. If you can tear yourself away from the spa, pools, and beach, the resort also boasts a 24-hour state-of-the-art fitness facility overlooking the perfectly manicured grounds. While all of the amenities are outstanding, I would be remiss not to extoll the tremendous virtues of Conrad’s people. We found everyone from the general manager and executive chef to our stewards at the pool ( Julio and Alfonso), to be extremely friendly and conscious of our every need. It is often the people that can make a place that much more special. Speaking of special, on our last evening my daughter suggested we walk along the beach despite the rain. Sea turtles favor this two-mile stretch of beach for laying eggs and earlier in the day we noticed several signs marking nests. On our sunset stroll (and to our absolute delight) we came across a nest of hatchlings making their way out of the sand and across the beach. My daughter dashed off to alert hotel staff and then we all spent 45 minutes shooing away crabs and

birds, watching these tiny turtles head to their watery new home. At first, the little creatures tumbled and tossed in the waves but as soon as they were upright they took off as if they had been swimming for years. We bid farewell to the turtles, thanking them for this extraordinary experience which was the penultimate moment for a trip full of truly magical moments. W

ith a combination of grit and determination, a little bit of luck and a lot of love, Jodie Diegel, founder of Soul Harbour Ranch Therapy Program, is literally living her dream life. She has created an organization that uses therapy dogs, miniature therapy horses and miniature therapy donkeys to share a lot of SOUL (Sharing Of Unconditional Love) throughout Barrington and nearby communities. “I’m a very positive person. I know that my mission, my purpose in life, as a nurse and as a giver, is to help others through animals,” Diegel says. In addition to being the founder and president of Soul Harbour Ranch, Diegel is also a registered nurse and legal nurse consultant with Kaveny + Kroll in Chicago. Diegel says that a difference is made when there is a soul-to-soul connection between humans and animals. She laughs while noting that her husband Jerry “is not really a horse person.” She credits him for the wok that he does at SOUL Harbour Ranch and his advocacy for her passion. “He sees the magic our animals bring to those we visit.” “People often ask, ‘What is a visit and what do therapy animals do?’” Diegel’s reply: “At every visit, when others meet our special animals, there is joy, laughter, smiles, and sharing of unconditional love…that is true healing.” All of the visiting animal teams are registered through the national therapy animal organization called Pet Partners. “They’re really the gold standard,” Diegel says. “We are Barrington’s most experienced and comprehensive animal therapy program. What that means is that many of our handlers have been working with our animals since 2012. We have grown to 35 registered handlers with a total of 85 registered therapy animal teams. “The inspiration for SOUL started with my dog, Buffet, in 2010. We volunteered at Northwest Community Hospital’s wonderful AAT (Animal Assisted Therapy) program, along with my second therapy dog, Dudley,” says Diegel. “I bought three miniature horses in 2012. And we’ve continued to grow. We have about 50 volunteers.” Before the pandemic, their registered therapy teams visit nursing homes, hospitals, schools, veteran facilities and more. “We have started many programs including the SOUL Buddies Animal Therapy Club, which is a

recognized club at Barrington High School. We mentor the Barrington High School students on a weekly basis to become registered animal handlers. We also kicked off the SOUL Veterans Animal Therapy Troops in September, thanks to a grant from BACF (Barrington Area Community Foundation).” What’s quite impressive is that even during the pandemic, they have been able to pivot and provide virtual visits to all of the places they normally would have gone to in person. They added an ongoing weekly “Friday Facebook Live at 5” segment so everyone can enjoy their therapy animals. “I even FaceTimed with a young girl in her hospital bed who finally took her medicine after ‘meeting’ our herd.” SOUL Harbour Ranch is a nonprofit, registered 501(c )(3) organization and is supported solely through personal donations, grants and sponsorships. Watching the animals, volunteers, and clients interact is beyond moving. It feels nearly impossible to capture in words the look of joy, delight, and amazement on patients’ faces as they watch these gentle creatures amble down the hallways of Loyola Medical Center or Barrington High School.
