“ Here comes the sun...” - THE BEATLES

O

into the room. When we stage a home, I like to put things away and rearrange or remove extra furniture. For showings, we can bring out the coffeemaker as well as other essential items.

ne year ago, we were on track for a robust spring market but with COVID-19, the entire world shut down. When the Spring lockdown was lifted, homes began selling before they even hit the active market. There still is little inventory, and the market is thriving all over the country, including right here in 60010.

A

s much as it is a “Seller’s Market” right now, buyers still want to make a wise investment. If a house looks beaten up or not taken care of, it is going to deter a buyer. There is no detail too small when it comes to staging a home, as this is your opportunity to really sell your home and showcase its best qualities.

S

o, what can you do? If you are thinking about selling your home, now is the time to get top dollar for it. Make a checklist of the deferred maintenance in your home and start tackling those things one at a time so you are prepared when the time comes to sell.

I

f you are thinking about selling your home in the Barrington Area, take advantage of this seller’s market. To Buyers, interest rates are rising as I write this article, which will affect your buying power. Buy now!

W

hat comes after you address the checklist? When you actually put your home on the market, you will realize just how much work is involved. There are many aspects of a home that are factored in when determining the home’s value. Current and local market conditions, condition of the home, location, square footage, etc. Nowadays, one of the most important factors that goes into preparing a home to sell is Home Staging.

W

hen it comes to Home Staging, it is best to listen to your realtor’s advice. I tell my clients that a house can look 3 ways. The first way is “the real way” - this is how your home looks when it’s not on the market. The second

Warm Regards, Connie way is the “most artificial way” – how your home looks when it is staged for photography and videography. I liken the second way to a hotel room. I tell my sellers, “If you walked into a hotel room and saw a hairbrush sitting out, would you be able to ignore it?” We want the home to emulate the cleanliness and togetherness of a hotel room. The third and final way a house can look is how it will look for showings. This is where we can allow a little more personality

T

his might be one of my most favorite issues yet. Full of the promise of spring, you’ll find gorgeous and colorful updates to your home wares, bold new fashion for the change of season, and decadent beauty products. In Country vs. Town, we learn about the work Barrington’s Jennifer Trombatore is doing serving on the Board of Directors at Second City Canine Rescue—truly a worthy cause. Keeping current with the changes of the past year, Christine Jurs with Advance Design Studio lends her expertise to share with us the newest trends in home remodeling for the way we live now. Moving to One Last Thing, chef and Girl and the Kitchen founder Mila Furman talks about her new master class, “The 4-Step Cooking Method.” For our story on the Field Museum’s Women in Science event, we spoke with Barrington locals Jeannie Tisbo and Wendy Paulson, after which Henry David Thoreau’s famous phrase, “In wildness is the preservation of the world”

came to mind, resonating loudly. In our Living & Giving section this month, we include a smattering of photos from Motor Werks of Barrington’s “First Look” auto show where gorgeous cars were the perfect backdrop for a wonderful evening. And leaving the hills of Barrington, we travel to the American Riviera—Santa Barbara, California. Encapsulating the best of both worlds, each day in this beautiful coastal town can be full of mountain and beach adventures, spa relaxation, or shopping the boutiques and dining locally. We explored two beautiful locations to stay during your trip, the San Ysidro Ranch in the hills to the Rosewood Miramar Beach on the sand. Enjoy, Megan Weisberg Editor-in-Chief megan.weisberg@jwcmedia.com

PHYSICAL ACTIVITY IS ESSENTIAL TO HEALTHY AGING WORDS BY CHIRAG PATEL, MD PHOTOGRAPHY BY MONICA KASS ROGERS

A

s we get older, our energy levels decrease, our bones become frail, and our risk of falling increases. Having a smart exercise regime is an important health recommendation we instruct our senior patients to prevent some of these problems. It’s important for seniors to stay active and move more and sit less during any given day. Moderate intensity-activities include walking briskly (three miles per hour), water aerobics, biking, tennis, ballroom dancing, and general gardening. Vigorous-intensity exercise includes race walking, swimming laps, jump roping, heavy gardening, or uphill hiking. A good way to measure your intensity is by the target heart rate. We estimate between 64 to 76 percent of the maximum heart rate. For moderate-intensity physical activity, the age-related heart rate would be calculated as 220 – 50 (your age) = 170 (your max heart rate) beats per minute (bpm). Sixty-four to 76 percent of that level would be 109 to 129 bpm. For vigorous-intensity physical activity, the percentages are higher at 77 to 93 percent or 131 to 158 bpm in that same example. It is important to know how to take your heart rate. First, stop exercising briefly to take your pulse. You can take your pulse at your neck, wrist, or chest. We recommend the wrist. You can feel the radial pulse on the artery of the wrist in line with the thumb. Place the tips of the index and middle fingers

over the artery and press lightly. Do not use the thumb. Take a full 60-second count of the heartbeats, or take for 30 seconds and multiply by 2. The recommendation for older adults is around 150 minutes per week of moderate-intensity activity like brisk walking. Along with this, two days a week of muscle strengthening and improving balance type exercises. Seniors may have limitations to exercise from medical problems like hip fractures, stroke, or osteoarthritis. Physical therapy can be an important resource to help design a specific exercise program that fits the limitations. Many of the senior communities where we visit our patients have great exercise programs, gait and balance activities, and on-site physical therapy. There are great ways to be physically active while still socially distancing. These include household chores, increased activity or exercise while watching TV, or outdoor activities like walking, light to moderate yard work, and house cleaning. Working closely with your physician is also very important. This will help maximize exercise goals while protecting you from further potential injury. WHY GUMS

MATTER WITH THE CONNECTIONS BETWEEN GUM DISEASE AND ALZHEIMER’S DISEASE, KNOWLEDGE IS POWER. WORDS BY DR. JAMES T. GAVRILOS

A

CO UNTRY MAG.NET

lzheimer’s disease has touched the lives of so many. Researchers have not been able to clearly define a cause and effect for it. Despite the billions that have been spent on research, thousands of people are diagnosed with the disease each year and are given little hope for a cure. A recent study has given researchers new hope in getting to bottom of this complex disease. Bacteria that cause gum disease have been isolated in the area of the brain that is believed to be causing the symptoms of Alzheimer’s. A complex plaque of bacteria builds up in the brain in this region and the “gum disease” bacteria are among the findings. It is thought

BC_0421_Master_Ads.indd 35

that the bacteria act to destroy that area of the brain in the way they destroy gums and bone around teeth. We have known for years that gum disease increases your risk of cardio vascular disease. The same “gum disease” bacteria flow through the blood stream and attach themselves to the arteries and valves in and around your heart. With time, the plaque builds and closes off the arteries and gives rise to the threat of cardio-vascular disease. Past research has shown a link of cardiovascular disease and Alzheimer’s. Researchers knew that the two were correlated but did not have answers as to why. With the new information being brought to light, the studies are following the possibility of gum disease being the causative factor for both. In other words, the cardio vascular disease does not cause Alzheimer’s but rather gum disease is the contributing factor to both cardio-vascular disease and Alzheimer’s. There is a lot left to do in this area of research. If future findings can show causation instead of correlation of gum disease and Alzheimer’s, then research will begin on methods to help stop or cure this horrible disease. In the meantime, you can help protect yourself by flossing every day and having your gums checked for gum disease by your dentist. Any sign of bleeding when you brush or floss your teeth is usually an indication of the presence of gum disease. Dr. James T. Gavrilos is located at 129 Park Avenue in Barrington. arlier this year, American conservationist Kristine (Kris) McDivvit Tompkins helped reintroduced the jaguar to Argentina’s Iberá wetlands—70 years after hunting and habitat loss drove the species to extinction—through Rewilding Argentina, the partner organization to Tompkins Conversation, which Tompkins co-founded with her late husband, Doug. Mariua and cubs in Iberá Mariua, an adult jaguar who was rescued as an orphan in Brazil, and her two cubs were released into Gran Iberá Park in January 2021, the first of nine jaguars slated to repopulate the species in the protected area, which was created in part with lands donated by Tompkins Conservation. Dubbed rewilding, the process fights the extinction crisis by reintroducing native species that are endangered or locally extinct. At any given time, Tompkins and her team are working on the rewilding of a dozen species, from giant anteaters to red-and-green macaws and Darwin’s rhea, as part of their worldwide conservation efforts. “It has taken 10 very complicated, costly, and nerve-wracking years to make this happen,” says Tompkins of the jaguar rewilding in Argentina. “All reintroductions are tough, but the benefit, then, is that you really feel each of the victories.” No stranger to trials and tribulations, Tompkins is the former CEO of Patagonia, Inc., a world-renowned ‘anti-corporation’ known for its commitment to fighting the climate crisis. In 1993, however, Tompkins retired and married her match in Doug, founder of The North Face and co-founder of Esprit. The nature-loving duo decided to leave corporate America and instead devote their funds, time, and passion to biodiversity conservation, specifically with national parks. In the years both preceding and following Doug’s death in 2015, Tompkins Conservation has protected approximately 14.5 million acres of parklands in Chile and Argentina, adding more than 10 million acres of parkland to Chile, which has been billed as the largest donation of land from a private entity to a country in history. Tompkins sees the creation of parks, however, as a starting point. Just as important is to restore their ecosystems to be whole and functional. This includes bringing back missing species, which have key ecological functions. JWC | COUNTRY 37

“If I’m proud of one thing, I’m very proud of my husband and what he did with his life,” says Tompkins. “We are known for being a relatively small team, and we push the throttle non-stop. I’m turning 70 this year, but I live with a giant clock on my shoulder. The clock is ticking on the natural world and with species going extinct.” On May 6, Tompkins will keynote the Field Museum’s annual Women in Science event, hosted virtually by the Museum’s Women’s Board and co-chaired by Barrington native Jeannie Tisbo along with Beth Glass, which funds ten high-school and undergraduate summer internships, a graduate fellowship, and a postdoctoral position. Jeannie Tisbo co-chairs the Field Museum’s Women in Science event. Peserico blouse, saksfifthavenue.com

Since the program’s inception, proceeds from the event have directly supported more than 80 women at various points in their scientific careers. Tompkins will be in conversation with Wendy Paulson of Barrington, who has dedicated her career to education and conservation action and is known in Barrington as the ‘nature lady’ thanks to the ecological literacy work she has done with Barrington Public Schools. “My husband Tom and I raised our two daughters in Barrington and have been on many nature walks with Wendy in the past,” says Tisbo. “She personally opened the gates of nature for many children in Barrington and is so well-regarded in our community.” A longtime participant in native grassland restoration, Paulson chairs the Bobolink Foundation, which focuses on advancing the conservation and stewardship of biodiversity through the protection of natural areas, education, and building local constituencies for nature. She recently stepped down as founding chairman of the Cook County Forest Preserve’s Conservation and Policy Council. “Wendy is a good friend of mine, and I want us to talk about the next generation of conservation,” says Tompkins. “We are best known for creating national parks, but our strategy now is rewilding. I hope we can make the case for working fast and for acting, rather than sitting on the sidelines. Conservationists today have to work extremely quickly. I’ll definitely be sharing more about my experience and what I’ve learned so far.” Adds Paulson, who co-chairs the Field Museum’s Keller Science Action Center Advisory Committee, “I am a huge admirer of what Kris has done and find her vision—and ability to follow through— enormously impressive. Our conversations inevitably focus on conservation—the challenges and opportunities—and are always a lot of fun, too.” The Field Museum Women in Science program actively advocates for the participation of women in science. So, female students from the Women’s Board partners in Chicago Public Schools—Orr Academy High School, Solorio STEM Academy High School, and ITW David Speer Academy—will have the rare opportunity to participate

in a private, virtual conversation with Tompkins and Paulson. And based on the success of past Women in Science Luncheons, like the 2018 event featuring Dr. Jane Goodall, DBE the Women’s Board has been able to allocate special gifts to name a Women’s Board Associate Curator for Invertebrate Zoology (Dr. Janet Voight) and provide startup funds to two female curators: Dr. Jingmai O’Connor, Associate Curator for Fossil Reptiles, and Dr. Sara Ruane, Assistant Curator of Herpetology. “I can’t speak highly enough of this dynamic and diverse group of women who are all working in support of the Museum,” says Tisbo, who joined the Women’s Board in 2007. “I’m so proud of what we have accomplished.” Paulson adds, “The Museum sets itself apart by not just being an institution on Lake Shore Drive. There’s a living dimension to it that is making a global difference.” Streamed live, attendees can even submit their own questions for Tompkins and Paulson to answer during the event. And sponsors and ticketholders can opt-in to select in-person events throughout May, including a guided bird and nature walk, an exclusive preview of the upcoming Becoming Jane: The Evolution of Dr. Jane Goodall exhibit, and more. “We all know that we are working toward something,” says Tompkins. “My goal is always to remind everyone that this work truly matters. There’s never a break. And we’re not finished yet.”.

DYNAMIC SHIFTS IN HOME REMODELING TRENDS Christine Jurs of Advance Design Studio takes the last year in stride and walks us through the current innovations in home redesign. WORDS BY ROCHELLE NEWMAN RUBINOFF PHOTOGRAPHY PROVIDED BY ADVANCE DESIGN STUDIO

I

Christine and Todd Jurs, founders of Advance Design Studio

t is the silver lining of a terrible time: The more time we are spending at home, the more we are paying attention to the spaces we inhabit and the more thought, effort, and funds we are investing in making our homes as comfortable, beautiful, and functional as they can possibly be. Christine Jurs and her husband Todd founded their company, Advance Design Studio nearly 30 years ago. “I was an interior designer and he was a carpenter/contractor by trade. I like to say the chocolate met the peanut butter when we met.” Their business, based in Gilberts, Illinois, has definitely seen an uptick in remodeling and design work since COVID-19 began. “It seems that the demand is there and is probably going to remain. Most of the experts in our industry are projecting a pretty strong year,” Jurs says. Obviously, everyone has been affected by the “new normal,” which by now, is no longer new. One of the first things homeowners are focusing on is the home office. “People are saying let’s get serious about the home office because they are now working from home almost permanently,” Jurs said. “One of the big shifts that we’re anticipating is that a lot of that won’t change because companies figured out having people work from home is a tremendous cost savings. We’re building out a real home office with cabinetry and crown molding, hiding those computer wires, and turning it into a JWC | COUNTRY 43

place where you actually enjoy hanging out.” Next on the docket, remote learning. “I don’t see this need going away any time soon. The idea may be looking at how we use technology and just kind of rechecking where that family technology station is because all the kids that are schooling at home now have laptop computers. They have iPhones. They have to have plug-ins and charging areas.” Jurs stresses that families are taking a hard look at how they actually function. The kitchen still remains the center of a home. “The kitchen is a family gathering space. Most of the time it’s needing a renovation so that families can entertain, fit more people gathering around that island. But now, we’re looking at how to build in area for kids’ schooling, hiding electrical outlets, and charging stations in cabinetry.” People are also rethinking how they cook in the kitchen. “Homeowners are cooking at home more than they ever have. There’s a return to that idea of renovating a kitchen for a well-functioning kitchen, even for people who maybe didn’t cook before decided, hey, guess what? We’re going to take up cooking more seriously because they kind of have to at this point, and they realized how much they hate their kitchen or how outdated it is.” Another area that has become a big focus is the mud room. “Mud rooms have really turned into multi-functional spaces,” Jurs says. “We just finished a really multi-functional one with storage for sports, craft areas, a space for potting plants and wrapping gifts. We also added built in laundry bins in the mud room in a beautiful, functional island. Especially now that everybody’s home, there’s more stuff, it seems. The backpack wall has been really big, but I think people are focusing on that functional storage.” Jurs says that there is an increased demand for the “family entertainment mecca. We’re doing a lot of family-type build outs in the basement because families are home.” Often these include a home theater, a game room, bars, refrigeration, and an oven or a microwave, much like a second kitchen. Jurs’ business has also seen a need to amp up outdoor entertainment space. “Those of us in the Midwest have a limited amount of time to enjoy the great outdoors—and when we do, we want to make the most of it. There has been a resurgence of indoor/outdoor spaces,” Jurs shares. “As people are home, that three seasons room has been huge. I think we did more of those last year than we’ve ever done. And there are many more coming for the year ahead. Because it’s a room that you can use almost year-round, especially if you put a fireplace in there, a nice ceiling fan. You can put a television in there too. We can do so much in our climate with three seasons rooms.” “People are definitely focusing and investing in their homes now,” Jurs says. With less being spent on travel and going out, this definitely seems like the perfect time to make some of those home dreams come true. For more information, visit advancedesignstudio.com.

SPRING GREEN BRUNCH SKILLET A delicious dish prepared with local ingredients.

pring welcomes green into our landscapes and our kitchens. That means lovely fresh ramps, spring leeks, tender young asparagus, and more. In Barrington, we are lucky to have access to fresh farm produce from the more than 60 Illinois farms that are a part of Down at the Farms, LLC—all in a one-stopshop: Evanston’s Village Farmstand. Featuring items produced using chemical-free or certified organic practices, pastured livestock, and non-GMO seed, the unique grocery store was established by Marty Travis of Spence Farm (organizer of Down at the Farms) and filmmaker and sustainability advocate Matt Wechsler in 2020. The purpose was to create a more efficient connection between farms and the Chicago community during the hardships of the pandemic. The charming shop offers a wide range of seasonal farm products through online ordering for pickup four days a week. This light and tender medley highlights some of the fresh items you’ll find at Village Farmstand this month. The dish features fresh leeks and asparagus, plus lemony mint peas—all topped with farm-fresh eggs and a scattering of creamy French feta, mint, and herbs. INGREDIENTS: • 2 tablespoons olive oil • 4 small (or two large) leeks trimmed of outer leaves, white and light green portions thinly sliced into rings to make 2 cups sliced • 1 bundle fresh asparagus • 2 cups green peas (fresh or thawed from frozen) • 1 bunch fresh mint leaves, minced to make 4 tablespoons • 3 teaspoons fresh lemon zest, divided • 1/2 teaspoon each salt and pepper • 2 tablespoons butter, divided • 5 fresh medium or large eggs • 1/2 cup French feta cheese, crumbled • 1 small bunch fresh chives, minced

Add olive oil to a large skillet over medium heat. Add the sliced leeks and sauté, stirring constantly to prevent browning. Once leeks are soft, remove from heat. Wash asparagus. Snip the top two inches from each stalk; place these asparagus tips in a microwavable bowl and set aside. With the remaining portion of the asparagus stalks, trim off and discard the bottom inch. Slice the remaining portion of the stalks into tiny rounds. Add asparagus stalk rounds to the leeks. Sauté for a scant 2 minutes until asparagus bits are bright green and al dente. Remove from heat. If using fresh peas, place in a microwaveable bowl with 2 tablespoons of water, cover, and heat in the microwave for five minutes until bright green and cooked tender. If using thawed from frozen, do not cook peas. In a food processor, add 1 cup of the peas with 3 tablespoons of the minced mint, 2 teaspoons of the lemon zest, salt, and pepper; pulse a few times until chopped fine but retaining some texture. Stir pulsed pea/mint/lemon zest into the asparagus/leek mixture. Add the remaining cup of peas to the skillet and heat just until mixture is hot throughout. Taste, and adjust seasonings with salt and pepper. Place bowl of asparagus tips in the microwave with 1 tablespoon of the butter. Microwave for 2 minutes until cooked, but still firm. In a separate sauté pan, heat the remaining tablespoon of butter over medium-high heat. Sauté eggs sunny-side-up until set. Slip the eggs onto the pea/ asparagus/leek mixture, arranging attractively. Scatter asparagus tips over eggs; sprinkle feta cheese over all; and top with snipped chives, remaining minced mint, and remaining lemon zest. Serve immediately. Seasonal herbs and vegetables from the on-site organic garden highlight a menu of exquisite farm to table dishes. Forty-one vine-covered cottages are spread across the lush hillsides of the 550-acre property, which was originally established as a citrus farm in the early 1800s. Each cottage comes with its own private, gated entry, enclosed gardens and cottage-side parking. Three new cottages, featuring private backyards and gardens with rain showers and oversized sunken spas were recently added along the San Ysidro Creek. When ready to venture outside your plush accommodations, head to Coast Village Road for a bite at Jeannine’s Restaurant & Bakery where you can enjoy a cup of coffee as you wait for your outdoor table. Or head to Upper Coast Village Road to see California-cool personified in Jenni Kayne’s namesake store full of fashion and homewares. Farther afield, sample authentic Mexican tacos at La Super-Rica Taqueria on Milpas Street, or cruise down to East Beach grabbing lunch at East Beach Tacos while the kids play baseball in the batting cages next door. SAVORING SCREEN TIME TV appearances mount for cooking maven and boutique catering company owner Mila Furman, just as she had envisioned—nearly 30 years ago. WORDS BY BILL MCLEAN ILLUSTRATION BY BARRY BLITT

M

ila Furman was 11 years old, maybe 12, when she first watched the Food Network show “Essence of Emeril” with her mother, Dora. Mila and Mom kicked back at home on that seminal day for the youngster, as celebrity chef Emeril Lagasse shared his “kicked-up” recipes with his viewers. Mila’s eyes grew, grew, and grew some more, morphing into the size of a pair of dinner plates. Bam! Just like that, Mila knew what she wanted to do when she was old enough—and tall enough—to stand behind a kitchen counter and whip up a dish for her sure-to-be-enthralled television viewers. “I saw myself on TV, as I sat on that couch next to my mom,” Furman, now 38 and a resident of nearby Lake Zurich, recalls, adding she and her mother also watched the show Great Chefs of the World together. “After that there was never a minute when I did not think I would be on TV someday, teaching people how to cook.” Mila Furman appeared on TV in 2020 often as the private chef in Girl and the Kitchen—which started as a cooking blog in 2013 and expanded with the launch of a boutique catering company, specializing in servicing homes in Chicago suburbs four years later. ABC7 Chicago’s Windy City LIVE featured the highly engaging, fun-loving wife of Mark and mother of two (daughter Charlie, 8, and son Marcel, 3) in a segment. So did WGN. And Fox Chicago. Windy City LIVE booked her for another segment. She squared off as one of four chefs in a competitive pop-up kitchen outside a grocery store on the Food Network’s show Supermarket Stakeout. Furman recently introduced her masterclass, “The 4-Step Cooking Method,” to Girl and the Kitchen fans. The four steps: learn, identify, apply, and practice. The course centers on technique, taste, and efficiency, rather than a specific recipe. “My goal with this masterclass is to combat the common misconception that cooking is stressful or scary,” says Furman, who considers herself a writer first and a chef second. “With my masterclass, even the most time-pressed home cook can pick up some great strategies and techniques to cut the 10 hours, on average, they currently spend cooking each week down to three, allowing them to fo-

cus on the things they love most.” With Girl and the Kitchen and its punchy mission: “Good Food. Done Right” or, in other words, “Eat well and wholesomely,” Furman has amassed more than 2.5 million visitors to her blog, more than 11,000 Instagram followers, and more than 10,000 Facebook followers. “I’ve been blessed,” Furman insists. “I was a little immigrant girl with a big dream. I can’t emphasize that enough. Nothing was ever handed to me. I work really hard for everything. I built my company from nothing but hope and charisma. I want to have my own TV cooking show someday; I want to go national.” “I also want to build a legacy for my kids.” For more information, visit girlandthekitchen.com including details about Furman’s new masterclass, “The 4-Step Cooking Method,” as well as registration for the free webinar.
