the fourth quarter of 2021 and the fourth quarter of 2022. While that would mark a slowing from the extreme price growth we’ve seen this year, it would still represent strong growth by historical standards. (On average, U.S. home prices have climbed 4.1% on an annual basis since 1987.) So, put another way: The housing market, at least in the eyes of Fannie Mae, is set to return to a normal-ish level of price appreciation.”1

Inventory levels in Area 47 (Hawthorn Woods, Lake Zurich, Kildeer, Long Grove) dropped 52.5% from October 2020. While it is true that the once hot market is cooling, it’s important to remember that lulls in market activity could also be due to buyers not

s we head into 2022, the market is predicted to be active and prices will continue to rise. Home prices have been on a rise since the start of 2021, and with high demand, they are not likely to fall soon. This is also likely due to an influx of first time home buyers/millennials, low interest rates, and low inventory, although interest rates are predicted to rise to at least 4%. However, many experts predict that 2022 will bring balance to the housing market. This could

his double issue, moving from holiday into the New Year, is one of my most favorites yet. Our Buzz section starts with a new book on the glamour of Gstaad from Assouline and continues on with noteworthy items. Our Country vs. Town, Allison Murray, welcomed Country into her home for a glamourous winter wonderland shoot on her farm in Barrington. And Terrah Gavrilos shares a bit of her background and what’s Trending for her. In what can only be described as a magnificent coincidence, when Feature story Pat McKillen was connected with Country writer, Bill McLean, he unearthed an archived photo of McLean interviewing him in the early 2000s when he was at Barrington High School. What are the odds? You’re sure to love the story on McKillen’s music career as much as I love this amazing connection. McKillen’s new three song EP is called Nowhere, Illinois—a reflection on growing up in the Barrington suburbs. And this season, as we reflect on all the blessings in our lives, be sure to read the story on foster parents Eileen Turkot and Carolyne Osterhues and their work with Let It Be Us—a nonprofit organization dedicated to changing the

Our guest fashion editor this issue is Mija Knezevic, a creative director who shares her favorite looks to stay chic in during Barrington’s cold winter months. And continue on a dream vacation with a travel piece on the Maldives part deux. I wish you a very merry holiday season and a wonderful start to the New Year. Until 2022!

In the southwest corner of Switzerland, nestled among the snowy mountains of the Swiss Alps is the picturesque, upscale resort town of Gstaad. Teeming with exclusive ski clubs and a fur coat–clad jet set, Gstaad is the definition of Alpine chic. From the luxurious, family-owned Gstaad Palace, the members only restaurant The Eagle, to the high-fashion boutiques that line the town’s main promenade, it is this combination of opulence and quiet that has made the town a longtime escape for so many. U P F R O N T | TRENDING Terrah Gavrilos, Nurse Practitioner at Pinnacle Dermatology, is a dual
Board Certified Nurse Practitioner in Family Practice and Pediatrics with specialty training in dermatology, aesthetics, and plastic surgery. After obtaining her Doctor of Nursing Practice at Rush University in Chicago, she began to practice a blend of dermatology and aesthetic medicine as a nurse practitioner. With years of experience in both dermatology, plastic surgery, and aesthetic medicine, Gavrilos has refined her practice at Pinnacle Dermatology (previously VanDam Dermatology) in Barrington at the Foundry. Now a Barrington resident, Gavrilos spent her teenage years figure skating at Barrington Ice Arena. “Everything about the Barrington community is delightful—the people, the little white fenced horse farms, and the country living,” says Gavrilos. “I grew up on a farm in Gilberts, so I have a habit of stopping to smell the roses. I need to feel the wind blow through the big oak tree leaves, I love to drink coffee, and hear the birds singing. My family lives on a five-acre plot in Barrington and I finally feel like I am home.” Being in medicine and health care for decades, Gavrilos has a detailed understanding of anatomy; stating that “safety within my practice is paramount.” When consulting with patients looking to slow the aging process, she first appreciates their own unique beauty and looks to enhance it. As an artist in many different mediums over the years including pencil, charcoal, and photography, Gavrilos has a detailed understanding of light and structure. Skin health is a priority and Gavrilos recommends an annual skin exam to every patient. “To me, beauty and health are interchangeable,” says Gavrilos. “I love dermatology because I am often able to take care of everyone in the family from babies with eczema, teenagers with acne, to adults’ full skin exams, and elderly with skin cancer.” “Plastic surgery, dermatology, and medical aesthetics is about both treating disease as well as complementing natural beauty with cutting edge medicine and medical therapies,” says Gavrilos. “The skin, being the largest organ of the body, protects us from external elements on a daily basis and it is our responsibility to care for our skin like any other organ. Our life, our health, and our confidence is dependent on the wellness of our skin,” says Gavrilos.

Skin care and anti-aging are a big part of my nighttime regimen. After putting my little ones to bed, I make it a priority to treat my skin with a little TLC. I first apply my prescription retinoid and hydrate my skin with ZO Growth Factor Serum.
What do I listen to when I do dermatologic surgery?! My go to is Nina Simone, Andrea Bocelli, and Ed Sheeran. I do take requests though.
What isn’t on my phone? I utilize medical resources such as UpToDate and Visual DX on a regular basis. I am also a photography hobbyist and utilize the mobile Photoshop Lightroom application. Of course, my Instagram is a big part of how I educate my community regarding skin cancer prevention and anti-aging. Check it out @injection_artist.

U P F R O N T | COUNTRY VS. TOWN Allison Murray was raised in Knoxville, Tennessee, where she and her brothers spent summers with their salt of the earth, God-fearing grandparents; wiling away the days helping tend their huge vegetable garden, picking and canning the fruit from the trees, bushes, and vines in their yard, gathering eggs, and camping in the Smokies. It’s no surprise then, that when in 2011 her family relocated to Illinois for a work opportunity for her husband, Jeff (an orthopedic surgeon specializing in sports medicine at Core Orthopedics), the family chose the farm they live still on. They filled the chicken coop and barn over the years with chickens, ducks, geese, guinea fowl, goats, an orange barn cat, and beehives for the back paddock. Murray, a physician assistant, has chosen to stay home with their children. Their two girls Charlie, 16, and Tessa, 15, attend St. Viator High School, and their son, Sam, 18, just began his first year at DePaul University. Murray serves on the auxiliary board for Samaritan Counseling Center and Second City Canine Rescue and is the Nature Lady Coordinator for Barrington public schools for the Nature Lady Program. DIVORCE AND FAMILY LAW PARTNER BEERMANN LLP
Q: How long will my divorce take? A: That depends on the complexity of the issues involved and how quickly the parties can reach an agreement. There are divorces that can be completed in just a few weeks, and those that take a few years. On average, the process is completed within 9-12 months after filing. Q: Am I “legally separated” while going through divorce? A: No. A legal separation is a different legal action that generally involves the same process as a divorce, only the parties remain legally married at the end. Many couples finalize their divorce while still living under the same roof. There’s a long list of questions at the start of the divorce process. But as these questions get answered, I see clients become increasingly hopeful about getting through it and thriving on the other side. Phone: 847.681.9600 Email: slvitek@beermannlaw.com

BLUEPRINT FOR
SUCCESS WORDS BY DR. JAMES T. GAVRILOS
C
osmetic and restorative dentistry is like many other fields. It requires planning and execution with a talented team that can perform their individual responsibilities. One of the members of this team is the laboratory technician that helps create the blueprint for a new
smile. When creating a new smile for a patient, the dentist listens to the patient’s concerns and reviews expectations with them. They will sit together and look at close-up photographs of the “before” smile and list all the changes that need to be made. This includes length, width, color, shape, translucency, position, and gum relationships. The patient is encouraged to bring photographs of smiles they like so we can use it as a communication tool. Once
BC_1221_Main_SoftProof.indd 35
the dentist has all of the information, the patient’s teeth are scanned and emailed to the laboratory for the next step. Dental technicians had to use impressions of teeth when making the blueprint for a new smile. They used wax that they added to the models of the teeth and then carved the wax into the shape of what the new teeth should look like. This was called a “wax-up.” Today we use a digital scan of the teeth and the blueprint is created digitally. The technician can merge the new design into photographs of the patient so that we can see if our cosmetic goals are being met. Once the dentist approves the digital blueprint, the technician digitally prints models and guides for the dentist to use while he is preparing the teeth for their new cosmetic restorations. This process is such an advantage for the patient. When they visit for their preparation appointment, they leave with temporary restorations that look exactly like the blueprint. They get an entire week to smile with them, eat with them and speak with them. At their one week follow up visit, we ask if there are any changes they would like to make. In most cases, the answer is no but if they wish to make a change in length or shape, we can make those changes in the temporary restorations. Once the patient approves, we scan the temporary restorations and send it to the lab so that they know exactly how to make the final porcelain restorations. This way there are no surprises and the patient ends up with the smile of their dreams. Dr. James T. Gavrilos is accredited with AACD. His office is located at 129 Park Avenue in Barrington. Let It Be Us Foster parents Eileen Turkot and Carolyne Osterhues share their stories this holiday season. WORDS BY ANN MARIE SCHEIDLER PHOTOGRAPHY BY BRIAN CAREY AND ROBIN SUBAR STYLING BY THERESA DEMARIA HAIR & MAKEUP BY LEANNA ERNEST, DISTINCT ARTISTS
E
ileen Turkot is a working mother to three young boys living in Barrington. She is also a licensed foster parent. When people hear that she fosters children, they often stop and tell her what she’s doing is amazing. “I always feel guilty when people say this to me,” says Turkot. “What they don’t know is how good it made me feel to give these children a family.” Turkot is a new board member for Let It Be Us, a nonprofit organization headquartered in Barrington that is committed to creating programs that recruit and support area foster families. “I’ve lived in Barrington almost my entire life,” Turkot says. “When I was growing up, I didn’t know of any families who fostered children.” In 2018, Turkot attended an event being held by Let It Be Us and learned how the organization was helping interested families go through the process required to be a foster or adoptive parent. “Let It Be Us dispelled a lot of misconceptions and myths for me,” Turkot says. “I thought because I worked full-time, traveled for my job, and already had young children of my own that we weren’t good candidates to be a foster family. But I learned that our family structure, routines, and especially our biological children, played an important role in giving children a stable environment to heal.” Turkot explains that Let It Be Us, founded by Susan McConnell in 2014, is dedicated to changing the landscape for Illinois children in foster care. The organization recruits families to be foster parents, coaches them through the licensing process, and sponsors several other programs to improve outcomes for children in foster care. Let It Be Us maintains a registry of waiting parents and connects those parents with caseworkers seeking a family in order to ensure that the match is successful. “Our first foster was a set of two girls,” Turkot says. “Let It Be Us shared the news with their community that our family with three boys took in these little girls and desperately needed girl stuff. little girls came to us in the winter and they didn’t even have coats.” By the following morning, Let It Be Us’s call for help generated more items dropped on Turkot’s porch than they could possibly use. “The outpouring of support was so kind and so generous,” she remembers. “We received so much that we ended up passing along a number of things to a foster care closet for other families to use.” This spirit for the heart of fostering and adoptions also runs deep in the Osterhues family from Tower Lakes. Over the last 20 years, they have fostered at least one child per year—having adopted five of them, the youngest who is now four years old. “We weren’t able to have biological children but knew we wanted a family,” says Carolyne Osterhues. “We had heard so many wonderful stories from families who fostered and were so intrigued by it. We knew that the goal of fostering was to ultimately have children rejoin their families, but if we could be their family for even a short time—we wanted to do that. Children are little warriors and fight for what they need, but they shouldn’t have to fight to be part of a family.” One of the things Osterhues loves most about fostering is that the system doesn’t discriminate against families who want to be a part of it. “It’s one of the many beautiful things of fostering,” she says. “You can be any age, any relationship status, or any gender to
“She was trying to figure out what was holding back a community like Barrington from fostering more children...”

be a foster parent.” While the Osterhues family’s time fostering is coming to an end, they are channeling their energies for this cause by advocating for more local resources to support people who feel called to foster children. “When I met Susan and saw what she was doing with Let It Be Us, I knew she was on to something that I wanted to be part of,” Osterhues says. “She was trying to figure out what was holding back a community like Barrington from fostering more children and what resources they needed to help them be successful.” Both Turkot and Osterhues are working to enhance the supports for foster families. “We learned early in our fostering experience that getting medical or dental care for our fosters wasn’t as easy as it was for our biological children,” Turkot says. “Because accepting Medicaid benefits is so time consuming for local offices and there isn’t a big demand for Barrington providers to accept it, the benefit isn’t widely available. I had a foster child that I had to drive 90 minutes to get a routine medical procedure done for his ears because it was the only hospital that would take his insurance,” she adds. “The added pain this child had to endure because our system wasn’t set up to work for him was heartbreaking.” Child care is another resource that is lacking. “Our experience

is that the day care benefit that the Department of Children and Family Services (DCFS) provides is about half of what it costs to actually use an area day care center,” says Turkot. “We were lucky that our children’s school—Atonement Christian Day School—was willing to accept what DCFS paid and allow our foster to come to school. But most families are not this fortunate. “There is so much a foster child receives when they gain access to adequate resources like we have in Barrington,” says Turkot. “They get healthier, they try new things, and they catch up in school. But it in no way compares to what we get back as foster parents. It’s such a gift.” To learn more about Let It Be Us, how you can become a foster parent, or how you can participate in making Barrington more foster-care friendly, visit letitbeus.org. Pat McKillen finding inspiration in the mountains
‘Road’ Warrior Former Barrington High School baseball player Patrick McKillen—a University of Notre Dame graduate with a degree in finance—continues to feel right at home as a singer/ songwriter with recent release of his album For the Road. WORDS BY BILL MCLEAN PHOTOGRAPHY BY NORA LOGUE
T
he most impactful words a young Pat McKillen ever heard from his mother, Diane, at home in Tower Lakes weren’t, “Go to your room.” Nor were they, “Eat your vegetables.” They were, “Did you hear that?” “My mom liked to listen to music in our house when I was growing up,” recalls McKillen, a 2006 Barrington High School (BHS) graduate. “I remember the day Bruce Springsteen’s ‘Better Days’ was playing, and in the middle of it she asked me, ‘Did you hear that?’ I hadn’t, so she backed it up and played the part of the song again for me.” The lyrics Diane wanted Pat to absorb: Now a life of leisure and pirate’s treasure/Don’t make much for tragedy. “We’d discuss the meaning of those lyrics, along with others in the song,” McKillen continues. “Since then I’ve always been more interested in lyrics than in music. Messages through songs are important to me. The first song I memorized was Don McLean’s “American Pie,” all eight minutes of it.
“I’m a nerd.” But McKillen, 33, is also a bona fide singer/songwriter. His first album, Stagefright, dropped in 2011, and he released his latest, For The Road, in June. The latter, based on a trip McKillen took in 2018, is a 12-track LP, with mostly Americana offerings. It’s essentially an amalgam of country and folk and rock. “It’s incredible, especially the song “Fool’s Gold,” and features a full backing band,” says Denver-based real estate investment manager Sean Logue (BHS, ’05), a baseball teammate of McKillen on the Barrington High Broncos’ team (35-7) that finished third at the Class AA state tournament. “He’d send me snippets of songs before the release, asking for my thoughts. I was blown away. I’d been asking him for a while, ‘When are you going to release a vinyl?’ “The lyrics, as usual, are super powerful in all songs, but he’s also a talented guitarist,” Logue adds. “That ‘Fool’s Gold’ is emotional; it made me cry. I texted Pat to tell him, ‘Hey, I’m so proud of you.’ ” McKillen was a BHS freshman when he got his first music gig— an art show in Tower Lakes. The member of the rock cover band

and local Battle of the Bands entrant For What It’s Worth was told he’d get to perform a 10-minute set. “I practiced for a month,” McKillen says. “After my set I wanted to play more. They let me.” McKillen headed to the University of Notre Dame in the fall of 2006, but not before he shoehorned his entire PA system into a vehicle. He’d major in finance and minor in performing at any South Bend establishment that needed a live entertainer. “In bars in South Bend … that’s where I fell in love with performing,” says McKillen, who sang “Pholk and Phollies” on the television show “Amer-

ica’s Got Talent” in 2013 (celebrity judge Howard Stern really liked McKillen’s song; Howie Mandel did not). “My favorite part of doing live shows is reading the room, reading the crowd. I know what’s working; I know what’s not working. I want my audience, no matter where I’m playing, to be able to relate to my lyrics.” McKillen graduated from college shortly after the global financial crisis of 2007-2008. Notre Dame graduates with finance degrees were no longer “gifted jobs,” McKillen notes. “You couldn’t find an investment banking job,” McKillen says. “You couldn’t find a consulting job. where. It was a good time and the right environment for me to take a chance in music. My plan was to try music for a year and then find a real job if I didn’t find it fulfilling.” McKillen hit the music scene in Austin, Texas, hoping to figure out how he stacked up against veterans in the industry. He looked. He listened. He came to a swift conclusion. “I thought, ‘Uh-oh,’ ” remembers McKillen, who has called Lincoln Park home since 2012. “I knew, almost right away, that I had to get better.” Some 10 years later he’s still plugging away, still entertaining, still sharing lyrics to move people, still finding fulfillment. After Stagefright he dropped “The Red Headed Enemy” (2013), the EP “Love Without Me” (2014), “Blood & Bones” (2016), and “Covers/’Coustics/Cuts” (2018). “Pat, the songwriter, leaves his heart and soul on the page,” Logue says. “If you’re listening you’ll hear what’s going on in his brain and in his heart. I’ve seen him perform live in shows. It’s amazing how well he connects with his audience. Such a caring guy, Pat. The Pat I knew as a kid who played an acoustic guitar near a bonfire in Tower Lakes, regaling all with covers and original songs, is the same Pat I know today. People stopped talking to listen to Pat’s songs.” “I wish him nothing but the best. The entertainment industry, it can be so wacky at times. My hope is somebody big will listen to him, talk to others, and then give him the big break he deserves.” McKillen’s two biggest fans? Easy. His parents, Pat and Diane, tied for No. 1. “They’ve been great, incredibly supportive from the beginning,” says McKillen, whose siblings are Ali (age 36), Katie (35), and James (32). “They’re the ones who kept telling me, ‘Whenever you’re performing, never stop believing that what you’re doing was meant
to be.’ ” McKillen hit one home run in his BHS baseball career, the round-tripper coming against Schaumburg High School. It cleared the fence, barely. “A quarter of an inch,” the former designated hitter/infielder says. “I sprinted around the bases.” Music artist McKillen is more than thrilled to settle for hit singles these days. Visit for patmckillen.com for more information. McKillen’s latest album, “For The Road,” is available on all streaming platforms.

Bûche de Noël (Christmas Yule Log Cake) WORDS, RECIPE, AND PHOTOGRAPHY BY MONICA KASS ROGERS
A
mong our family’s holiday-making traditions, filling rooms with boughs of evergreen is one of the brightest and best. As we bring armfuls of snowy branches in, there is freshness and chill, that wild citrusy conifer smell, and always, a swell of gratitude for nature’s provision. This celebratory cake, with its cute caps of meringue mushrooms, is a woodland fantasy in just that spirit. In France, la bûche de Noël harks back to Medieval times and traditions. Then, placing a log on the hearth on Christmas Eve and burning it for three days was believed to bring good luck, and good harvest. Centuries later, cakes have replaced the log, with thousands of versions baked worldwide. Like those, ours—a chocolate roll cake with vanilla mousse filling, light-chocolate buttercream and dark chocolate “bark”—conjures memories of favorite flavors from childhood. An elevated Hostess Ho-ho perhaps? Or Little Debbie Swiss Roll snack cake. We’ve included a recipe for crispy meringue mushrooms that fit the woodland motif and add a nice crunch when eaten with the cake. To streamline assembly for when you bake the cake, the mushrooms, mousse, and dark chocolate bark can be made ahead of time. The meringue needs to be made on a dry-weather day—rainy weather won’t work. And for best texture and flavor, you’ll want to refrigerate the finished cake at least an hour, and serve it very cold.
BÛCHE DE NOËL Serves 8 to 10
INGREDIENTS FOR THE MERINGUE MUSHROOMS

R ECIPE| F OOD & T RAVE L METHOD MAKE MERINGUE MUSHROOMS
Place oven rack at center position. Preheat to 225 degrees. Line a large half-sheet baking sheet with parchment paper. In the bowl of a stand mixer, whip egg whites until they softly peak. Continue whipping as you add small amounts of the sugar, whipping between addition until meringue is glossy and holds firm peaks. Fill a round-tipped pastry bag (or, a large heavy plastic bag from which you’ve trimmed a corner) with meringue. To make the mushroom caps: Squeeze out round dollops of meringue in various sizes onto the parchment, carefully pulling the tip to the side as you finish each, to avoid creating a peak on top. For the stems, press out small amounts of meringue, pulling straight up to make a pointed top, like a gnome’s cap. Dust caps with cocoa powder. Bake for 1 hour in the 225 oven. Near the end of the baking time, melt the chocolate. To assemble: Use a pointed skewer or chopstick to poke a tiny hole in the bottom of each mushroom cap. Paint with a small amount of melted chocolate. Press the pointed end of each stem into each mushroom cap. Refrigerate lightly covered with plastic wrap for 15 minutes until chocolate hardens.
paper, leaving an edge of paper extending above the rim of the pan, all the way around, and tucking/creasing paper at corners to fit down into the pan. Set aside. Place the metal bowl of a stand mixer in sink and fill with hot water until bowl is warm. Dry bowl. Place warmed bowl in stand mixer fitted with whisk attachment and fill bowl with egg yolks, corn syrup, vanilla, water, ½ cup of the sugar and salt. Whip mixture on high speed until pale yellow and fluffy. Scrape mixture into a large separate bowl and set aside. Wash mixer bowl and place back in stand mixer. Add egg whites to empty mixer bowl and whip on high speed until soft peaks form. Continue whipping as you slowly add remaining ½ cup of sugar until stiff glossy peaks form into a meringue. Add ½ of the meringue mixture to the reserved egg yolk mixer and using a gentle over and under motion, fold together until no white streaks remain. In another bowl, sift flour, cocoa powder, and baking powder together. In three parts, slowly add dry ingredients into the yolk/meringue mixture, using the same gentle folding motion with each addition, folding until completely incorporated. Microwave oil a scant 15 seconds until warm to the touch and add to the batter, folding again until incorporated. Stir in the reserved ½ portion of meringue and fold again until no streaks remain. You will have a very glossy, light batter. Pour batter into the prepared ½ sheet pan. Sharply rap filled pan on tabletop to release trapped air bubbles. Repeat action twice. Bake at 350 degrees for 15 minutes. Meringue mushroom cuties
MAKE CHOCOLATE BARK
Line a large cookie sheet (half-sheet pan) with parchment paper. Melt chocolate for 1 minute in microwave. Using an offset spatula, spread melted chocolate smoothly all over the parchment paper. Refrigerate at least ½ hour until hard set and very cold. Note: the paper and chocolate will curl up slightly as the pan cools—this is fine.
MAKE VANILLA MOUSSE
Whip 2 cups heavy whipping cream just until soft peaks begin to form. Add 1/3 cup instant vanilla pudding mix and whip a few more seconds until firm peaks form. Place in bowl; cover and refrigerate.
MAKE LIGHT CHOCOLATE BUTTERCREAM
In the bowl of a stand mixer, with paddle attachment, whip butter until fluffy. Slowly beat in confectioners’ sugar and vanilla paste. Continue beating and add cream. Mix vegetable oil and cocoa power to a smooth liquid and whip this and salt into frosting until smooth, fluffy, and no streaks remain.
MAKE SUGARED CRANBERRY AND ROSEMARY GARNISH Wash and dry fresh cranberries. Dip one side of each cranberry in egg white. Dip in superfine sugar. Set aside to dry for 30 minutes. Trim rosemary to make attractive sprigs.

Place oven rack at center position. Preheat oven to 350 degrees. Cover a large, rimmed baking sheet (half sheet pan) with parchment
Remove cake from oven. Using the parchment overhang, lift cake from pan and rest on clean work surface. Lightly dampen a large kitchen towel. Leaving the paper adhered to the cake, roll the cake from one short end to the other to make a jelly roll shape. Wrap the rolled cake, seam-side down, in dampened kitchen towel and rest until cooled. Gently unroll cake. Spread cake with vanilla mousse, leaving the last two inches unfrosted. (As you roll the cake, some of the mousse will move down to fill this space.) Separating cake from the parchment paper as you go, roll cake from one short end to the other, to make filled roll cake. Gently lift filled cake onto serving platter. Pipe buttercream over cake, using offset spatula to smooth over all. Using a sharp knife, trim each end of the roll cake, to expose the pretty filled cake pattern at each end. Remove the chilled tray of dark chocolate from refrigerator. Working quickly, begin to break pieces of the chocolate to form strips of chocolate “bark,” placing each strip over the buttercream, until the cake is covered with ridges. If the chocolate begins to soften from the heat of your hands, refrigerate again until firm and continue. Cover cake lightly with plastic wrap and refrigerate for at least 1 hour. To serve, top cake with meringue mushrooms. For individual servings, add one meringue mushroom, one sprig of rosemary, and sugared cranberry as garnish. JWC | COUNTRY 49

s our seaplane descended toward Niyama Private Islands, we observed two verdant oases rimmed by white beaches and floating in an infinite sea of blue. The two islands—aptly dubbed Chill and Play—are connected via a slim bridge. “Chill” is the island of choice for guests seeking complete relaxation while “Play” is for those desiring a bit more activity. Both are easily accessible via bicycle or golf cart depending on your daily mood. JWC | COUNTRY 50

Ocean Villa with pool on The Crescent

ACCOMMODATIONS Upon arrival, we met our Thakuru Wisham (aka villa butler), who escorted us to our lavish overwater villa on Chill. Our new home for the week was one of the five ultra-chic accommodations of “The Crescent”—the resort’s secluded crown jewel. Accessible via a private boardwalk, The Crescent’s five villas are often rented for large family gatherings. Our villa was extraordinary in every way—immense is the only term that could describe the living areas, the three pools (one an infinity pool running the length of the villa), and the many decks. Opening the massive wooden front door, we entered the foyer that unveiled a modern living space boasting a comfortable indoor seating salon, a dining area, and a full bar. The separate kitchen was stocked with a popcorn machine and every imaginable goody and libation (as if the setting wasn’t intoxicating enough). Passing through the foyer in the opposite direction, floor-to-ceiling sliding doors opened to reveal a spacious bedroom with a sumptuous bed crowned by a dramatic etched-glass work of art. The ultra-modern bathroom matched the bedroom in size housing an enormous soaking tub, an outdoor shower, and a translucent wall overlooking two decks and the spa pool. We often found messages written on the giant mirror above the floating dual sinks— notes welcoming us to the island, bidding us farewell, and a very touching note congratulating my daughter on her straight-A marks (we received her report card while visiting and the staff must have
overheard our excitement). Outside, we found a playground perched over the crystal-clear water. The far deck sported a staircase into the Indian Ocean allowing easy access to the warm lagoon from which we could see a distant reef rising from the ocean’s floor. Plush lounge chairs occupying the next deck and comfortable couches on the infinity pool’s veranda made for sublime sunbathing. When shade was our preference, we followed a walkway of stepping “stones” to a shallow pool. The villa’s glass walls encased the smaller pool on three sides, providing the perfect afternoon respite. Beyond the small pool which was separated from the infinity pool by the stepping stones, was another veranda with a plush round covered dais. The patio on the far end, we dubbed the “breakfast nook.” Here, shaded from the early morning sun, we dined on lavish breakfast trays. Many mornings we awoke as the sun rose above the foggy breath of the ocean, creating a sunrise worthy of Monet. Throughout the day, we were captivated by the sweeping ocean views visible from the verandas and through the villa’s floor-to-ceiling windows. Equally as beautiful, the island sunsets filled the sky with color as the sun slipped beneath the horizon. These scenes and everything about Niyama reminded us of Mother Nature’s extensive artistic repertoire. JWC | COUNTRY 51

Beach Villa bathroom
Epicure Infinity pool
On our departure date, the resort offered us a beach villa for the day as our flight wasn’t until midnight. As we ran down the white beach into the aquamarine sea, we agreed the beach villa did not disappoint. Floating in the soft water, we felt buoyant and deliriously happy with the sun on our shoulders. Our open-air bathroom— completely open to the elements—proved the perfect place to rinse off the sea’s salt. GLOBAL GASTRONOMY Niyama is a culinary destination. We dined on our patio most mornings with a few occasions at the resort’s poolside restaurant, Epicure. The breakfast menu offered an endless array of culinary treasures in a picture-perfect setting which overlooks a painter’s palette of ocean blue hues. It was at Epicure that my husband surprised us one evening with a “Destination Dining” experience. The resort created a lit pathway to an elaborate seaside table surrounded by torches and a lantern-laden tree. Dining on fine Indian cuisine under a bright moon while sitting in a ring of fire, dipping our toes in the sand and listening to the sounds of the sea was simply magical. Another memorable dinner was had at NEST, which offers avant-garde Asian cuisine atop Niyama’s tropical forest. Dining in the treetops surrounded by exotic birds chatting amongst themselves, we devoured sushi presented in the most imaginative ways. The showstopper was a platter of sashimi served in an ice shell—a gravity and heat-defying triumph. An evening at TRIBAL convinced us that we had entered the lands of the Sahara. From the Masaai warriors who greeted us to the spiced aromas floating through the air, we knew we were in
for a treat. Beneath a curved wooden dome, we feasted on heavy pots of stewed African game and hearty vegetables. The experience showered our senses with the tastes, sounds, and smells of traditional tribal cooking. Subsix, Edge, and Edge bar occupy a dramatic compound a half kilometer out to sea and are accessible via a short boat ride from Niyama. Edge’s chefs create contemporary masterpieces showcasing the succulent seafood found in and around the Maldives. Six meters below Edge, the underwater restaurant Subsix is outfitted in aquatic-themed décor. Seated in our anemone-like chairs, seashells tinkling overhead, and our reef friends swimming to and fro just beyond the glass, we enjoyed our favorite meal of the stay. A first course of Lobster Tataki with watermelon, rhubarb, and passion fruit dressing was followed by a warm Maldivian octopus carpaccio with sweet chili dressing, squid ink crackers, and a lemon confit. My husband and daughter chose the pan-seared seabass with eggplant caviar, cherry tomato, spinach, and yuzu gel while I feasted upon the braised lamb shoulder with taro, red wine shallots, glazed baby vegetables, and lemon. The darling Yuzu Delight—shaped like a small delicate apple and consisting of coconut Chantilly, yuzu curd, Thai basil, white chocolate, and coconut ice cream ended the meal perfectly. Venturing above the sea, we stopped at Edge bar a “hot” nightclub Edge bar & Edge restaurant

with a cocktail menu to make mixologists swoon. The club’s dramatically pitched roof hovered above an oceanside setting drenched in a hypnotic purple glow and throbbing with electronic beats—an entirely intoxicating experience. ACTIVITIES The resort offers a myriad of activities guaranteed to burn off those delicious calories. We toured the islands daily on our villa bicycles (each bearing a plaque inscribed with our names). On our morning rides, a long-legged heron greeted us with a slow flap of his wings as he gracefully rose from beneath the boardwalk and into the air. Leaving The Crescent and following winding sand pathways, we passed powdery white beaches, a ring of overwater bungalows, beach villas, shops, tennis courts, the kids’ club, snorkeling hot spots, and endless opportunities to capture that picture-perfect moment. In the early afternoon, we often stopped at the bridge connecting Chill and Play to see the blacktip reef sharks gathered for afternoon playdates. A favorite pastime was watching the surfers “hang ten” at Play. Many of these wave warriors had traveled from around the world to surf Niyama’s famous waves. This fun spot sported the Surf Shack, ocean-side swings, and the best waves on the island. If you are feeling food truck vibes, the Surf Shack serves burgers, small bites, and sweets. In the early evenings, we visited for sunsets, cool sundowner cocktails, and an even cooler DJ. In hopes of hanging ten ourselves, we took surfing lessons in the blue lagoon near the Water Sports Center. On more leisurely days, we opted for glass kayaks and paddleboards as we watched thrill-seekers enjoy jet skis, parasailing, and kitesurfing. One afternoon we jetted off in search of turtles. Our large double-decker speed boat offered a thrilling ride and glorious views of several other island resorts and the surrounding ocean. Surf Shack swings Visiting a distant reef, we donned our masks and fins and headed out on our quest. Before coming upon our first turtles, we encountered a 15-foot nocturnal nurse shark and several blacktip reef sharks. Most days we opted to take advantage of the excel-
SPA What better way to end our magnificent vacation than to be pampered at an overwater spa? Our visit to the Drift Spa—a paradise cocooned within a paradise—began with selecting an IV infusion of choice administering a customized blend of vitamins, minerals, and nutrients. We were then guided down a peaceful sandy path to an overwater treatment room. For the next 90 minutes, our expert practitioners worked wonders. Using a combination of Hawaiian lomilomi, Japanese shiatsu, Thai traditional massage, and aroma oils, muscles were first relaxed and then revitalized. After the treatments, we practically floated back to our villa. SERVICE Niyama’s service is impeccable. The staff strives to be on call for every wish, often anticipating a need before a word is even uttered. Our Thakuru Wisham noticed our original itinerary would result in a long wait in Malé before our flight home. He rearranged the itinerary so we could take a speedboat to a nearby island for a later domestic flight to Malé, shortening our layover by several hours, an option I had no idea was possible. When we arrived in Malé, we were greeted by another Niyama employee who took our bags, whisked us through check-in and customs, and set us up in a lounge with dinner before our flight. Again, completely unexpected and enormously appreciated. To our dear hosts, “shukuriyaa” or Maldivian for “thank you.” I treasure traveling with my family, often finding that escaping the everyday for adventures in foreign lands creates deep familial bonds. Whether the adventures are on a surfboard, on sand, or beneath the sea in search of hawksbill turtles, family trips are worth their weight in gold. Visit Niyama and see for yourself why it is rated #4 in the “Best Resorts in the World” category of Conde Nast Traveler Reader’s Choice Awards. We are pretty sure it will be #1 for your family, as it was for ours. For more information, visit niyama.com or follow on Instagram @niyamamaldives. Snorkeling adventures

HEALTHCARE AND PREVENTION WORDS BY CHIRAG PATEL, MD PHOTOGRAPHY BY MONICA KASS ROGERS
O
ne of my goals, as a physician, is to educate my patients and their families about managing their health care. This includes a strong focus on prevention and empowering the patient by education. Being treated by a top doc or well-known specialist for a condition or an acute problem makes sense, especially when we are searching for cutting-edge treatments and the best outcome possible. However, my job as a primary care physician is to really focus on our patients’ preventive care, and hopefully, they won’t develop major medical problems. We do this with frequent visits and communication with our patients. Empowering our patients to take charge of their health, has been vital in keeping them healthier and leading a more independent lifestyle. Some of the more common health care preventive measures include mammogram, colonoscopy, PSA level checks, vaccinations, cardiac screening, blood work, exercise programs, and diet modification. Most primary care physicians are managing these points with their patients. If not brought up by your doctor, be proactive and ask and expect a plan to address these preventive measures. When dealing with a chronic condition like high blood pressure, chronic pain, or diabetes, ask for all treatment options, as no two patient cases are alike, and having tailored medical care provides better
BC_1221_Main_SoftProof.indd 64
focused outcomes. Sometimes getting a second opinion or a specialist involved can be helpful in providing a fresh perspective. There is a lot of information on the internet about medical diseases and conditions. Be careful of where you are getting the information. I always encourage patients to research, but to identify accredited websites that discuss evidence-based medical care. There are great sites on holistic approaches to treat conditions as well but should be discussed with your physician prior to starting any kind of over-the-counter supplement or treatment. Avoid getting false hope by reading one person’s experience or cure and assuming that will automatically work for you. There is also no exact way to verify that their story is even true. With COVID-19 now approaching two years, prevention has become even more important. In summary, work closely with your trusted primary care physician who should be able to navigate and assist you. Remember that preventing a health-related problem will most often have a better outcome than waiting for something adverse to occur and then trying to treat it. Barrington High School Alums Return For Christmas Sing-A-Long
A
WORDS BY ROCHELLE NEWMAN RUBINOFF / ILLUSTRATION BY ROBERT RISKO
round town, it’s beginning to not only look, but sound, a lot like Christmas. The critically acclaimed Nancie Kozel Tobison, longtime former Barrington High School Choral director, will be leading a Christmas Carol Sing-A-Long at Barrington’s White House, on Sunday, December 19, from 3-4:40. Yes, the wonderful family tradition that was started back in 2019 is now back. What a joyful opportunity to sing along with your favorite traditional carols while also enjoying performances from Barrington High School choral alumni. The program will feature at least ten former students who now have careers in music. These professionals are based in Los Angeles, New York, and Iowa and have arranged their schedules so that they are available to perform in this year’s program. Tobison says the afternoon will feature madrigal groups, solos and duets, and the beloved sing-a-long. In addition, Kathleen Wilson will be playing flute and her daughter Katelyn Wilson, a professional opera singer, will be performing. While she is nothing if not humble, some of Tobison’s many accolades must be mentioned. She was honored at Carnegie Hall in 2014 as the Choirs of America Music Educator of the Year. Additionally, her impressive background also includes 14 Christmas performances at that other White House, in Washington D.C., under three different Presidents. She also performed at the Sidney Opera House, Forbidden City, and the Cultural Overture to both the Beijing and London Olympics.
In addition to being the Barrington High School Choral Director for several decades, Tobison was also the director of three church choirs. “The Christmas season defined my whole year,” Tobison says. “I just love this time of year. Christmas music makes people feel good, hopeful. People come to feel uplifted, reminisce, and be enveloped in the sounds of the season.” “It is wonderful to revisit music that puts a smile on peoples’ faces. I think everyone is looking forward to getting together after having been locked down and not having had a celebration in so long.” Although Tobison moved to Arizona to retire, she says that she “failed retirement. I hated being retired.” Thus, she is even more grateful to return to Barrington to lead this special performance. Tobison says that she will always consider Barrington her home. “I lived there for thirty years and raised my four children there. There are wonderful people in Barrington, people who appreciate the arts. Barrington has a lot of history and many annual events. Arizona is my western retreat.” No one will want to miss this fun afternoon, enjoying the sounds of the season and surrounded by beautiful Yuletide décor. It is guaranteed to put everyone in the holiday spirit! Cookies, eggnog, and hot chocolate will be served. For more information, and to purchase tickets, visit barringtonswhitehouse.com/events.
