s we approach the holiday season and near the end of another robust year for real estate, I find myself reflecting on how much the luxury real estate market has changed recently. The pandemic forced many to work from home, and when the home also became the office, the gym, and even the classroom for some, homeowners had new needs to be met. Many needed more space and moved into properties more in tune with their new lifestyles.
T
hough it is true that a well rounded broker should be able to facilitate a real estate transaction at any price point, luxury real estate is best navigated with an agent experienced in that market. I often tell people it is important to stay in your lane. Your real estate agent should be navigating the market in which they are most experienced and well-versed in order to best help you, the client, achieve your goal(s).
O
ne change the luxury market has experienced is non-golfers buying within golf communities. Recently, I was quoted in Crain’s Chicago by Dennis Rodkin for an article regarding the recent boom in golf communities. Homes in golf communities offer the space that many buyers now want or even need amidst the “work from home” era. I told Rodkin that many buyers who were not previously interested in paying the fees associated with golf communities are having a change of heart. The features that golf communities have are appealing to buyers for different reasons now.

TOWN Amber Wirkus has held several leadership roles in the Barrington Chamber of Commerce, Lake Zurich Chamber of Commerce, and also with the Illinois Hotel Lodging Association. She is currently the Regional Director of Sales for a hotel management company and also does mentoring for hospitality professionals. When not busy with work and volunteering, Wirkus is kept on her toes by her two sons, Drake (6) and Dylan (4), who attend St. Anne’s and are both avid hockey and baseball players. Wirkus grew up in the Village of Barrington and her parents still live close by. Living in Utah for four years during college solidified her love of the state where she travels to often with her family. She was the co-chair of the Let it Be Us 5k, and is also on the executive committee for the Barrington Junior Women’s club where she has co-chaired the fall fashion show for the past two years. ental work has never been an experience that many find pleasing. Part of the experience used to include impressions. These are the trays that are filled with that messy silicone type of material that hardens as it sits in your mouth for five minutes. The great news is, those
impressions are gone forever. Digital scanners are changing the world of dentistry. The dentist can prepare teeth for porcelain restorations and immediately scan them to save the information that they would usually get from the impressions. Patients no longer have to feel that unpleasant sense of gagging as the impression material hardens in their mouth. Our office has been using the 3Shape Trios scanner for a year now and the results have been tremendous. The crowns, veneers, bridges, mouth guards, and implants have seen a significant in-
crease in their quality of fit and finish. The scanner takes approximately 1,500 scans in a three-dimensional mode. The scans are then all stitched together by the software. A 3-D model can then be printed and used for any required restoration. I have been able to use it to measure clearances, preview smiles, and communicate shape and color to the laboratory technician. Our patients have been very vocal about the scanner and they approve. This technology is not limited to just restorations. Multiple scans of the same patient can be grouped together. This grouping is of different scans over time. The software allows us to see how the patient is wearing down their teeth and how teeth have moved over time. This type of diagnosis helps the patient visualize what is happening with their mouth. fter debuting her first album this year, accolades for Leikyn Bravo rolled in, including being named to New York Weekly’s Top 10 Females of 2021 in whose company on the list included Beyoncé. But to know Leikyn Bravo is to hear the sounds of her music. “My mom used to tell me stories from when I was little that I was always singing,” Bravo says with a laugh. “We have so many videos from those days to prove it.” It’s more than a hypothetical guess that Bravo must have music in her DNA—her mother was once in the high school marching band and her dad was part of a garage band when he was growing up in the Philippines. So it comes as no surprise that the minute Bravo could get up on a stage—she did. “I was in choir in seventh grade. I was doing magic shows. I start-
ed taking ice skating,” she says. “I really loved performing.” Before Bravo even got to high school, she had her first role in the professional musical “It’s A Wonderful Life.” “I got a taste of what it would be like to make music a career and I knew that’s exactly what I wanted to do,” she says. When Bravo got to Barrington High School, she immediately found the theater. “I was super involved and did everything I could: musicals, choir, the acapella group. It all played a role in rounding me out as a musician.” After graduating from high school, Bravo headed to the esteemed Berklee College of Music in Boston. “It wasn’t lost on me where I was, this amazing school filled with all of this talent,” Bravo explains. “I went back and forth between feeling like I belonged there and feeling like I wasn’t good enough.” JWC | COUNTRY 39

But Bravo was good enough and finished her college degree in songwriting in just two years. She graduated and was ready to take on the world. “I decided to sell everything I owned and buy a one-way ticket to Egypt,” Bravo says. “From there, I spent the better part of a year traveling to as many countries, cities, and rural areas as possible in order to really experience different lifestyles, music, and culture. I stayed in hotels, hostels, I camped, and I couch-surfed. The experience of traveling alone as a woman taught me so much about trusting myself, not fearing what the media reports, and creating communities wherever I was. I’m proud to say that I visited 45 countries across six continents.” There’s a fearlessness to Bravo that at first thought one thinks maybe comes with her young age, but on further examination it’s clear there must be something in her makeup that steels her. When asked if her parents were nervous about allowing her to travel to the other side of the world alone, she says “no.” “I think they saw it coming,” says Bravo. “I’d never been the girl that took a traditional path. They knew I couldn’t get the experiences I wanted if I didn’t see the world. They trusted me enough to let me go. It was one of the best years of my life.” After a year overseas, joining bands as she moved from country to country, Bravo came back to the states and landed in Los Angeles. “This seemed like the logical next place for me to be to pursue music,” she adds. But the world had other ideas. Bravo hadn’t been in California long before cities were in turmoil. to move home. “I think people thought I was sad that California didn’t work out, but I didn’t really feel like I was missing out,” she says. “I think that it helped that so many of us were going through the exact same thing.” When Bravo got back to Chicago, she took on a number of odd jobs, including trying her hand in real estate. But in December 2020, a friend of Bravo’s reached out and asked her to help him write a song and it changed her life. “It was so awesome to work on the song,” she says. “And I realized if I could produce a song for him, I could probably produce a song for myself.” And that’s exactly what she did. She spent countless hours reimaging her sound, filming music videos, and putting together a talented team to help make her ideas come to life. Her debut solo album “Songs You’ll Never Hear” shares a glimpse into her journey overcoming obstacles, having doors slammed in her face, and finding her love of music again. It showcases Bravo’s belief that you don’t need to wait on others to find your own success. “Coming home ended up being such a great thing for me,” Bravo says. “I’m so grateful to Barrington and the people who have been helpful in my journey. R ECIPE| F OOD & T RAVE L A gorgeous fall dessert for holiday dinner parties
A
s far back as the 15th century, English cooks discovered that wine-poaching hard pears made them tender and tasty. One abbey had cooks “pare wardens (hard cooking pears), clean, seethe them in red wine till they be tender, then take them up and put them in a pot; put thereto wine of Crete or Vernage (Verona) … powder of sugar and powder of ginger and let them boil awhile and then serve forth.” Paired with delicate vanilla panna cotta puddings,
FOR THE WINE-POACHED PEARS • • • • • • • • •
8 very firm small Bosc pears 1 bottle cabernet wine ½ cup water 1 ¼ cups sugar Zest from one fresh lemon Juice from ½ fresh lemon 2 cinnamon sticks, broken up 1 Tbsp ginger nibs or powdered ginger 2 star anise pods
and a syrup made by cooking down the spiced wine poaching liquid, poached pears make a delicious dessert. I love to make them for festive dinners, because you prepare the fruit, syrup, and panna cottas ahead of time. Assembly at service is simply drizzling the syrup over the panna cottas and adding a pretty slice (or slices) of the pear on top. You’ll make the panna cottas in individual ramekins with some of the sliced pear. I like to serve a few of the beautiful whole poached pears on their own plate.

FOR THE PANNA COTTA • • • • • • •
8, 7-to-8-ounce clear glass ramekins 2 cups whole milk 2 Tbsp gelatin granules ½ cup sugar 2 cups whipping cream 2 tsp vanilla paste OR vanilla extract ¼ tsp salt
PREPARE PEARS
In an enameled stock pot over medium-low heat, add burgundy wine, water, sugar, lemon juice, zest, and spices. Simmer while you pare the pears. Carefully peel one of the pears, leaving the stem intact. Slice a thin piece of pear off at the bottom, allowing the pear to stand upright without wobbling for pretty presentation later. Set peeled pear in the poaching liquid. Continue until all pears have been added to the pot. Cover pot. Simmer gently for 40 minutes. Carefully remove pears from pot and set into a large storage container. Pour the poaching liquids through a strainer (to remove zest and whole spice pieces) over the pears; cover the container and refrigerate for at least 24 hours.
MAKE PANNA COTTA
Add whole milk to a saucepan. Sprinkle gelatin granules over the milk. Allow to bloom for 5 minutes. Place pan on stove top over medium-low heat. Whisk milk until gelatin has dissolved for a scant 2 minutes. Quickly whisk in sugar and continue to heat until sugar has dissolved. Remove from heat. Whisk in cream and vanilla paste. Divide liquid evenly between the 8 ramekins, pouring carefully so as not to slosh onto the sides of the glass. Cover each ramekin with plastic wrap. Place in refrigerator overnight.
MAKE SPICED WINE SYRUP
Pour 3 cups of the poaching liquid into a pot over medium high heat. Bring to a slow boil. Simmer until the liquid has reduced to syrup consistency.
ASSEMBLE DESSERT
Spoon wine syrup over the top of each panna cotta to cover the surface. Slice through the circumference of several of the poached pears to make perfect rounds as shown in photo. Place one round on top of each syrup-topped panna cotta. Serve remaining pears sliced or whole at table, or reserve for future use. Note: If you like, you can add a spoonful of assorted diced fall fruits—apple and cape gooseberries are nice—to the top of each dessert.

ocated between the Arabian and Laccadive seas, roughly 500 miles southwest of Sri Lanka, lies the Maldives, a country comprised of more than 1,000 islands. Our destination at Anantara Kihavah Maldives Villas was a quick 35-minute seaplane trip from the capital city of Malé. Flying over the Indian Ocean, we were delighted by the broad spectrum of blue hues appearing in more variations than a color wheel. The liquid landscape was dotted with circular islands cresting the water’s surface. The brightest blues radiated from the island
lagoons seemingly lit from beneath. The deep blues became even more striking upon our descent when juxtaposed against the white sand beach and lush island greenery. Just before landing, we noticed the ring of thatched roof overwater villas … one of which would be our home for the week. At the arrival dock, our Villa Host Ismail welcomed and whisked us off in a little green buggy. I can still hear the pitter-patter sound it made on the wooden planks en route to number 211, our deluxe overwater villa poised above the translucent ocean. Entering 211, light poured through floor-to-ceiling windows

and doors—revealing contemporary interiors with stunning views of our decks and aquatic playground. The bedroom’s south doors opened onto an ample deck with three overwater hammocks, a suspended bed, and a dining table and chairs. The east doors led to an infinity-edge pool and a lower deck with plush lounge chairs and a staircase leading into the ocean. Another favorite area of our new home was the bathing quarters consisting of an immense outdoor shower open to the ocean on two sides, a large glass-bottomed tub, a chaise, two floating sinks, and an indoor shower. The room’s glass floor panels and translucent wall overlooking the pool, deck, and sea created a seamless connection to our surroundings. Often hours drifted by as we enjoyed the hammocks and pool. The weather was perfect, warm but not unbearably hot, and the constant ocean breeze and sweeping views made the experience absolutely intoxicating. When venturing out of our cozy enclave, we found three bicycles next to the front door each bearing a small wooden license plate inscribed with our names. Cycling beneath canopies of palm fronds and over curving white sand pathways onto our next great adventure was utterly idyllic. Every day unveiled new breathtaking thrills; one favorite was the “Manta Ray
Snorkeling Experience” in Baa Atoll’s Hanifaru Bay. The Bay is home to the world’s largest manta ray feeding region where these enormous creatures congregate to gorge on the plankton-rich waters. The adventure began with an exhilarating 40-minute ride on a dhoni, the traditional Maldivian boat. It continued as we leapt into the water to get up close and personal with the majestic rays that can reach a wingspan of more than 16 feet. As I swam along, I turned to see a ray with its large mouth open, gliding swiftly toward me. Heart racing, I made a mad dash to get out of his way—I knew his mouth was open to capture plankton (not me) but it was pure instinct not to block his path. Although extremely large, these graceful creatures appeared to be participants in a ballet of sorts to an orchestra audible only to them. The experience was magical, heart-pounding, and soulful all at once. Closer to home, great water adventures were literally at our doorstep. With our fins and masks in place, we’d hop off our balcony and head straight for the house reef encircling the island. One morning, with our snorkeling gear strapped to our backs and feeling quite like “locals,” we biked to the dive shop to explore another snorkeling route along the reef to the overwater spa. To our utter delight, we came across an octopus. Such sightings are incredibly rare because octopi are highly intelligent and have the chameleon-like ability to alter their appearance and “disappear.” After our enchanting discovery, we descended further into the coral gardens of the house reef. An incredible number of colorful creatures inhabit the reef, but we took particular interest in the blacktip reef sharks, JWC | COUNTRY 49

Triggerfish, Barracuda, and, of course, the ever-adaptable octopus. Just beyond the reef, the bottom of the ocean disappears into darkness creating a hauntingly beautiful scene. One afternoon, we were excited to find that the dive shop offered clear kayaks—something my daughter has often talked about. We spent hours atop the Indian Ocean in our see-through vessels. The experience was surreal as we felt suspended over the glittering water in some sort of gravity-defying act. The excitement of our days often left us famished. At these moments, our Villa Host Ismail picked us up for the quick ride to an overwater compound containing four dining options—Spice, Sea, Sky, and Fire. Spice introduced us to haute Asian cuisine, Maldivian style. We often chose an herb-laced salad, naan bread, and rich spicy curries, which were shared around the table. My husband and daughter (the culinary duo in our trio) guessed at the ingredients attempting to discern the enchanting combinations. Yet, our Sand bank efforts to recreate these delicacies at home have not been successful. Perhaps it was the open air, overwater setting and impeccable service that elevated our taste buds. One morning for breakfast we descended below the ocean, walking down flights of stairs,

through a beautiful underwater wine cellar, and into a glass octagonal wonderland aptly named Sea. In the Maldives’ first underwater wine cellar and restaurant, we feasted on a lavish presentation of meats, cheeses, delicate pastries, fruits, and lobster Benedict all while exotic sea creatures traveled to and fro. We marveled at two Clownfish. The father floated outside the anemone home guarding his son just as depicted in the Disney film Finding Nemo – I could almost hear the father warning his child of the dangers that lie beyond the reef. We noticed a Moorish Idol like Finding Nemo’s cantankerous Gill and a Regal Blue Tang like the film’s forgetful Dory. After observing these fish, we are sure the film’s screenwriters were well versed in the personalities of the character species as the Moorish Idol seemed a bit bossy and the Regal Blue Tang was not the cleverest of the underwater dwellers. Throughout the meal, we delighted in this conversation of aquatic personalities and pointed to an endless array of colorful fish, identifiable by a book our waiter shared with us. An entire world exists

beneath the water’s surface and the experience of being “part” of this world is one we will never forget. On our way out, the waiter described the ocean’s magical way of aging Champagne. I didn’t know a bottle of bubbly could possibly be sexier—but aged beneath the ocean floor? C’est Magnifique. For dining thrills Teppanyaki style, we visited Fire where the chef encouraged flames to pirouette across the grill and all manner of ingredients flew from her spatula. After the show, we devoured flamekissed Japanese specialties, sashimi, and on one occasion, handpicked lobsters from the sea. All enjoyed under Fire’s dramatically pitched roof with the intermittent caress of the ocean’s breeze. Seeking a celestial experience, we visited SKY for a starlit odyssey. Ascending to the highest of the compound’s restaurants, we entered the Maldives’ only overwater observatory. As we enjoyed a threecourse chef ’s choice meal, our SKY Guru shared fascinating insights and used a “lightsaber” to point to constellations and planets in the night sky. After dinner, we stargazed through the Maldives’ most powerful telescope and were even allowed to photograph the moon —a treasured keepsake. That evening, inspired by our SKY Guru, we decided to sleep under the stars on our deck’s floating bed. We were coaxed into a deep slumber by the lagoon’s gentle sounds and a distant whisper of the ocean’s roar. Many mornings, we dined beachside at Plates selecting Maldivian spiced courses, smoked fish, and detox juices. A particular favorite was the Kihavah Benedict accented with just the right amount of spice. We savored each dish watching as waves carried the sun’s reflection to the edge of the white sandy beach. On our final day, we left villa 211 and rode our bicycles pitter-pattering down the wooden planks one last time thinking how lucky we were to have visited this floating paradise. Peddling along under a canopy of tropical fronds, we burst from the greenery’s warm embrace to greet our departing seaplane. We ascended into the sky with our hosts waving goodbye until they disappeared from sight—just the white sand, the ring of overwater villas, and the vast array of the ocean’s blues were still visible.
Since our return home, I have noticed that every time I mention the Maldives the response is always the same … “That is on my bucket list.” And so it should be. On our vacation, we checked off many things on our bucket list—visit the Maldives, swim with sharks and manta rays, enjoy an outdoor shower, stay in an overwater villa, and dine under the sea. GREEN RESORT One of the first things my husband, a conservation advocate, noticed at our villa were the glass bottles and the absence of plastic. When he mentioned this to our Villa Host, Ismail informed us that Kihavah is the proud recipient of a gold Green Globe Certificate and is one of the greenest resorts in the country. He explained that not one tree was removed during the resort’s construction. On our many bicycle rides around the island, we noticed how the beach villas appear to have grown up around the trees. The resort is constantly reinforcing its commitment toward environmental conservation by reducing electricity waste, following a food waste management program, operating a water treatment plant on the island, and employing a zero-plastic policy. CANCER SCREENING GUIDELINES

elow are the guidelines for cancer screening for ages 50 and above. For both men and women, recommended screenings include colon cancer and in certain cases lung cancer. Men also test for prostate cancer and women for breast and cervical cancers. Colon cancer screening starts at age 50, although screening is recommended at an earlier age in high-risk family history cases and other medical factors. There are various testing options available including fecal immunochemical test (FIT), guaiac-based fecal occult blood test (gFOBT), stool DNA test, or MT-sDNA, CT colonography or virtual colonoscopy, and the colonoscopy. Capsule endoscopy is a newer procedure where the patient swallows a capsule with cameras on each end taking thousands of pictures, transmitted wirelessly to a recorder. Although less invasive than the colonoscopy, it is not the first choice for cancer screening and is more often used for small intestinal surveillance, where scopes cannot reach. Lung cancer is the second most common cancer in both men and women. Each year, more people die of lung cancer than of colon, breast, and prostate cancers combined. Lung cancer screening is considered on a case-by-case basis. In patients with a chronic smoking history, low-dose CT scans are recommended for early lung cancer detection. The frequency of these scans should be determined by your primary physician or lung specialist (pulmonologist). For men, prostate cancer screening is recommended at age 50
onward. The common blood test called the prostate-specific antigen (PSA) is often ordered with routine blood testing performed on a yearly basis. However, the PSA is not specific for prostate cancer as its level can be elevated due to other conditions such as infection, elevated parathyroid hormone, or an enlarged prostate. Physicians have varying opinions on whether to test and how frequently testing should occur. Women with an average risk of breast cancer should undergo regular screening mammography starting at age 45 years. Women aged 45 to 54 years should be screened annually. Women 55 years and older should screen every other year. Screening should continue biennially with a life expectancy of 10 years or longer. Other newer testing includes blood marker tests and MRI of the breast, although these tests should not replace mammogram screening. All women should begin cervical cancer testing (screening) at age 21. Women aged 21 to 29, should have a Pap test every 3 years. At age 30, a pap test is combined with an HPV test every 5 years. This interval testing should continue until the age of 65. The testing interval changes based on test results, high-risk factors, and other medical conditions based on your primary care and/or gynecologist’s recommendations. There are always exceptions to the rule, so be sure to discuss your personal health and cancer screening with your primary care physician. The Club at Wynstone offers a taste of resort living.

ocated in North Barrington, The Club at Wynstone offers a snippet of resort living right here in the Midwest. Most notably, the Wynstone community is home to the highly esteemed Jack Nicklaus Signature Course. The Club also features a family-friendly swimming pool, tennis courts, a fitness facility, and clubhouse offering superb dining both inside and outside. It is exactly what it advertises, a full-service private lifestyle club. “Well, it’s kind of a hidden gem. You can’t see it from the road, you don’t really know it’s there. It’s quaint,” says General Manager Jason Waters. Developed in 1987, today the Wynstone community has matured into 750 acres of tranquil terrain and 120 acres of scenic lakes. In 2017, nine families purchased The Club at Wynstone and it is now managed by Century Golf Partners Management. Adding to the unique nature of The Club at Wynstone, the ownership families have made it a priority to guarantee no assessments or minimum spending for its members. “Everybody seems to know everybody one way or another,” adds Waters. Wynstone is dedicated to creating a family-oriented feeling and is a membership by invitation club. The Club at Wynstone is also labeled a Residential Community including 437 homesites creating an incredibly special gated community. “The Members, especially those that live inside the Community joke that it’s their own little bubble,” says Waters. The championship golf course, ranked as a top 100 course by Golf Digest when it opened in 1989 is the only Jack Nicklaus Signature
Design in Illinois. In 2015, the course itself was updated with new greens and fairways and continues to follow the master plan of Mr. Nicklaus himself. The course is extremely beautiful including large water features, dramatic bunkers, and 007 bent grass greens providing a promising day on the links. “It’s always been a real crown jewel of the community and really a wonderful golf course to play on a day-to-day basis,” said Waters. The Club is constantly looking for new distinctive ways to advance for its Members. Whether it be services or amenities the club prides itself on custom branding to elevate the Wynstone experience. The Club impressively has its own beer, generates its own barrel-aged Old Fashioneds and Manhattans, as well as its very own Pinot Noir. The effort behind specific branding is really what sets the club apart creating the “Wynstone Experience.” As the seasons progress, The Club at Wynstone is preparing to offer activities in conjunction with the holiday season. Traditional Thanksgiving dinner, brunch with Santa, and New Year’s parties are all upcoming events that Wynstone is looking forward to.
