HIS YEAR, more than any in recent memory, I am longing for the rituals and simple pleasures of summer. As a quintessential morning person, waking up extra early to birds singing through open windows is an absolute joy. This is almost always followed by a barefoot-in-the-grass walk, coffee in hand, to check on our garden beds while the robins hop silently about in search of breakfast. Another favorite summer ritual involves weekly trips with friends to Elawa Farm’s Garden Market and the Lake Bluff Farmers’ Market. I love discovering what is in season, then gathering ingredients for casual weekend dinners on the porch. While we’re on the subject of dining outdoors, in this month’s issue, Elawa Farms prepares for another Summer Solstice event. Staying in the theme of dining outdoors, check out House & Garden as our three talented contributors share their summer entertaining tips. I hope these recipes and tabletop styling inspire you to set a beautiful, relaxed table for your next al fresco meal. Much of this June issue is dedicated to time spent outdoors, from the above mentioned Elawa Farms summer festivities to the nature-inspired story of Lake Forest Open Lands Association’s new President, Ryan Landon and Chairman, Brett Paschke. So much outdoor fun to be had for all! The What to Wear Guide will

get you ready for the championship tournament at Wimbleton beginning June 27, widely regarded as the most prestigious of tennis tournaments. For nearly two decades, Tom and Susie Beck have dedicated their summers to the beloved PASTA camp at the Gordon Community Center. Read all about it In the Neighborhood’s “Final Bow.” Also turn to our other two features this month, each one sharing the inspiring career journeys of local residents to leave a legacy and trailblaze pathways for the next generation. This inventive restaurant chain has been bringing Japanese bigcity dining to the North Shore for nearly a decade. words by Janis MVK

F

OR NEARLY 10 YEARS, Roka Akor has brought its big-city approach to the North Shore—elevating palates with mouth-watering, modern Japanese fare meant to be shared (although not required). Nestled in Westfield Old Orchard Shopping Center, this Skokie hotspot is one of three Chicago locations. The first opened in Chicago’s River North and the newest location is in Oak Brook’s Oakbrook Center—with nationwide fixtures in Houston, San Francisco, and Scottsdale. The restaurant’s name was derived from two Japanese words: Ro and Ka. Ro means a gathering place where people come together to take in an ambiance and Ka means burning fire. Together, Roka, translates to “fire gathering” and Akor is just the inverse of its forename. Japanese fishermen traditionally get together around a fire after returning from a trip, so patrons will understand the choice in name upon entrance to the dining area. Right away, Roka Akor’s signature 12-foot robata grill greets diners with a full view along with an open kitchen—luring you to gather around the heart and fire of the restaurant. The robata grill uses mesquite charcoal with flames reaching temperatures up to 1,900 degrees, filling the dining room with the savory aroma of zesty steaks and scrumptious seafood. The dining room features a timeless, yet comfortable, contemporary design—filled with earthy and natural elements finished off with bonsai trees and flowers. As Tom and Susie Beck direct their final show of the beloved PASTA camp at Gorton Community Center this July, they have only good memories of making theater magic for nearly two decades. words by Ann Marie Scheidler

I

F YOU’RE A LOCAL who has had a child in the last 20 years, you’ve likely been lucky enough to cross paths with Tom and Susie Beck, the duo behind a childhood favorite—PASTA— the Performing Arts Summer Theatre Academy at Gorton Community Center. PASTA has evolved over time to offer programming year-round and has become a favorite among the t’ween and teen set who’ve dreamed about being on stage. This summer, at the close of PASTA’s final performance of Alice in Wonderland on Sunday, July 10, the Becks will officially retire. “It’s time,” says Tom in his quiet way, a tone that has been undoubtedly shaped by his decades of working with children, having gotten his start at Lake Bluff Elementary School. “We love this program and working with the kids, but it’s time for a new adventure.” The Becks established themselves as an extracurricular juggernaut for parents. Typically, after a child had a taste of being in a Beck production, they returned season after season for a chance to perform. The Becks made Jungle Book, Joseph and the Amazing Technicolor Dream Coat, Wizard of Oz, Lion King, Seussical, and many, many other shows classics among the young theater set. “We often remember the kids by the characters they played,” Tom says. “Auditioning is so personal and I admire the kids who try out for specific roles. You don’t audition without hopes of getting something you want.” Such care goes into each performance, from casting, to set creation, to costuming, to choreography, and to overseeing the interns who are always graduates of the PASTA program. All of this was done by the Becks. “Tom and I talk a lot, a lot about each show,” Susie says. “There’s very little stress unless I tell him how to build a set or he tells me how to make a costume. I have this ability to see an entire show in a line, where Tom sees it in little pieces. We really work very well together.” Tom adds that the two of them are best at casting the show. “We absolutely do this together,” he says. “We each make a list of who we should think should have each part, we compare notes, and then we sleep on it. Sometimes, Susie will get up in the middle of the night to make some changes, but we always agree on who is doing what before we tell the kids. It just works.” Over the years, PASTA has taught many life lessons in addition to theater skills. One summer, there was a computer glitch and when PASTA reached its maximum number of students, it failed to shut off. “We ended up with 62 kids that summer for the Wizard of Oz,” Tom says, explaining 40 students is usually the sweet spot for the number of campers. “On the first day of camp, I asked for a show

of hands how many kids wanted to be Dorothy. Every girl and a handful of smart-aleck boys—who I got along with very well by the way—raised their hands. That’s when we had to have the talk that not everyone can be Dorothy and there’s a lot that goes into choosing the right person for the right show. We always want the kids to understand what goes into making that decision.” The Becks begin planning for their programs a year in advance. And last year, after navigating PASTA through Covid protocols, they knew that this year would be their last. “I started going through our storage locker last summer knowing that we would never be doing certain shows again,” says Susie. Susie, a retired art teacher from the Glenbrook School system, is looking forward to getting back in the classroom as a student. As for Tom, he is hoping to find himself doing more theater himself, as well as coaching future thespians. And both are looking forward to pursuing some of these dreams from a new home they purchased in Arizona. The Becks will close out their time at Gorton in the same way it began—with the musical production of Alice in Wonderland. They hope many of their alums will pack the house. “This is an exciting time as PASTA retires with us,” Tom says. “But we know this program will be back in some form, some day. Susie and I look forward to being in the audience.” The Gorton Drama Studio is currently offering camps and classes in acting at Gorton. IN THE NEIGHBORHOOD At the helm of the iconic Lake Forest Shop, Ellen Stirling celebrates the store’s 100th anniversary the only way she knows how—in style. words by Ann Marie Scheidler photography by James Gustin hair & makeup by Melanie Hart

I

T’S A SIGNIFICANT milestone for any retailer to celebrate 100 years in business. It’s even more so when you know that it’s a family-owned business that had to navigate its way through a pandemic in order to celebrate its centennial. “We didn’t lay anyone off,” explains Lake Forest Shop owner Ellen Stirling. “No furloughs and everyone stayed on the payroll. We did it right. And when we came back, everyone was wonderful and ready to go.” The Lake Forest Shop is an iconic North Shore institution—styling women for all occasions of life, from the everyday to the extraordinary. The Lake Forest Shop was opened by Stirling’s grandmother, socialite Margaret Baxter Foster. “I never knew my grandmother, but from what I hear she was a real pistol,” Stirling says. “I wish she was a customer of ours today because she couldn’t stop shopping. She would buy closets of clothes until she finally didn’t have room for anything more. So, my grandfather suggested she open a store.” The Lake Forest Sports Shop first hung its shingle in 1922. In many ways, the Lake Forest Sports Shop was ahead of its time. “My grandmother was a visionary, bringing separates to the shop—much like her friend Coco Chanel was doing in France. This was a different way of dressing in this community in those days.” The next several decades were an exciting time for this new retailer. A wonderful woman named Millie Duncan was hired to manage the shop. The store was wildly successful, leading Foster to open a second location in Hubbard Woods. “Condé Nast came into my grandmother’s life at a really critical time,” Stirling says of the media magnate (and publisher of such titles as Vogue, Vanity Fair, and The New Yorker) who married her aunt. “He was able to introduce my grandmother to designers and clientele that helped the store thrive and connect her to the fashion world in a way that wouldn’t have been possible without him.” Then, in the 1950s, Stirling’s parents Adair and Volney Foster took the shop over from her grandmother and launched the Lake Forest Sports Shop in Barrington and Hinsdale. “My parents ran the shops more like a hobby than a business,” Stirling says. “And in the ’80s, the brand really began to struggle and my father considered closing it. But I knew we had something special with our stores and I told my father

that I’d be interested in taking them over.” When Stirling stepped in, her first move was to close the satellite locations. “I had three little girls and I needed to focus my energies on the Market Square store.” By 1992, she paid off the store’s debt and set the retailer on the road to success. “If I could go back and change one thing about those early days, I would have dropped the ‘Sports’ from the name of our store sooner,” Stirling says. “We were always getting calls about golf clubs or tennis rackets. I still remember the Christmas Eve a man walked in with an empty bowling bag looking for a bowling ball. From then on, we were The Lake Forest Shop.” When asked what keeps her engaged in the store after all of these years, Stirling answers thoughtfully. “My family, my grandmother’s vision, our customers who are like family, our incredible team, and the opportunities we have before us. I also think all of the nonprofits we work with in our Shop Your Cause event—giving back and recognizing the effort and difference every one of those organizations makes to our community. All of those things really push me forward. And just wanting to succeed! My grandmother and father cared so much about this place.” Yet few things bring Stirling as much joy as seeing The Lake Forest Shop busy again. “Shortly after we reopened the store after it had been closed for COVID, I was sitting in my office when I heard this noise,” she says. “I was deep in thought, but I stood up and opened my door to see what was going on. When I did, I saw that there were all of these people in the store—smiling and laughing, looking so happy to be here. This is the way things are supposed to be and here it was.” The Lake Forest Shop has a number of events planned for the summer months, culminating in an anniversary celebration on Thursday, September 15. MITH’S MEN’S STORE has been a fixture for Lake Forest residents since 1937, styling men and filling their closets with everything from knitwear to dress shirts; blazers to trousers. It matches signature men’s looks with fragrances and skin care. And when the new owners, Kip Helverson and Trey Gonzales, took over in 2019, they made some modern updates while maintaining the classic aesthetic. Not only did they refresh the look and feel of the store keeping it fresh, yet familiar, they recently added a whole new, much-needed element—an in-house tailoring department. With more than 50 different brands focusing on men’s sportswear, business attire, casual pieces, and formalwear, Helverson and Gonzales saw the opportunity to offer custom tailoring, making it a full-service haberdashery. Although in the past two decades, there hasn’t been a high demand in suiting as there once was at the store before the millennium, the owners recognized a shift in mindset. Today’s sophisticated customers would rather invest in well-fit suits and individual quality pieces over mass-produced department store or off-the-rack clothes, increasing the longevity and cost-per-wear. Enter George Moya, a master tailor and the newest member of the Smith’s Men’s Store team. “George has built a tremendous career fitting and tailoring gentlemen for custom, bespoke clothing and we feel privileged to have him join Smith’s,” says Helverson. Moya is not just a master at his craft, but he’s also a great tutor, too. “We’ve learned a lot from him and he’s really helped us up our game,” adds Helverson.

Very few men are built for off-the-rack clothes. “Properly fitting clothes are flattering to gentlemen regardless of their height, size, or weight,” explains Gonzales. “We frequently tell clients to focus on the fit, feel, and look of a garment when they try it on and not to focus on the size or label.” Now that the store offers ready-to-wear, made-to-measure, and bespoke suiting options, tailoring is an essential part of the shopping experience. Ready-to-wear can be purchased and worn off-the-rack, but many times, slight alterations are made to the garment to offer a perfect fit. “Made-to-measure enables a client to pick the style, fabrics, lining, buttons, and finishes,” says Helverson. “It’s then manufactured off-site for the first fitting and then finished in-house with George.” Enter bespoke tailoring, which offers the same options as made-tomeasure, but is a more iterative process and manufactured in-house by Moya. Fabrics at Smith’s can be sourced from almost anywhere in the world. Some fabrics Smith’s carries are manufactured in Italy, from ateliers like Loro Piana, or the British Isles, such as Harris Tweed. There will be additional brands and designers coming this fall, as well as Smith’s own private label items, which means Moya’s tailoring will be in high demand. Moya is in the store Tuesday through Fridays during store hours and to ensure a superior customer experience, appointments are highly recommended for tailoring or custom clothing. N

OTHING WOULD make me happier than to spend the summer “suckin’ on chili dogs outside the Tastee Freez,” but one chili dog at my age would be like shampooing with Nair. My insides would congeal and smell just terrible. I can’t get away with what I could when I was younger. I’m at an age where the gap between my Present Self and my Future Self has almost closed. It never occurred to me that one day I’d be knee-deep in middle age. I assumed I’d be like Keith Richards, eternally young, living in the present. Weirdly, I look more like Keith Richards every day, with my smudged eyeliner, stacks of bracelets, and stubble. My Future Self warned me this would happen. I ignored her. I admire people who honor their Future Selves. Maybe you’re one of them. Future Self-oriented people studied in high school, ate vegetables, didn’t perm their hair, and were home by 11:30. I preferred a less “detailoriented” lifestyle so I shoved my Future Self into a dark, shadowy corner of my soul where she couldn’t kill my vibe or make me read Excel spreadsheets. My Future Self, eyes bulging, often shrieking, watched helplessly as my Present Self called all the shots. My Future Self survived many years in an adrenaline-fueled panic like a driver swerving to avoid squirrels: ‘You’re going out with that guy? Baby oil instead of SPF 50? Lifting weights to the beat of pop music? Those shoes, that outfit? Kids so close together—what ... about ... your bladder?!’ Bless her, my Future Self has only ever wanted me to be a well-adjusted, svelte, and wrinkle-free person with no unread emails. My Present Self, however, is a hardto-motivate person who can eat those chocolate-covered blueberry thingies by the fistful. My Present Self is never mentally prepared to blow-dry her hair. She’d

rather chew her own leg off than check emails. With all this internal chaos, frankly, I’m amazed I have the wherewithal to smile through the pain of the endless lines at Jewel. With the passage of time, my Future Self is not nearly as idealistic as she used to be. She has lowered her standards dramatically. “Svelte with no unread emails” is completely off the table now. My Future Self ’s expectations are so low, that she thinks finishing a lip balm before losing it is worthy of a social media post. It only took decades of chasing rainbows and unicorns on a hedonic treadmill to get me to reconsider my Future Self ’s desires. EWELRY IS MORE than just a dazzling accessory for one’s outfits—it is also full of stories celebrating important milestones and capturing cherished family memories. So often it is symbolic, acting as a little celebration of who we are. As a specialist in Hindman’s Jewelry & Watches Department, I have the privilege to hear so many clients reminisce as they unveil their jewelry boxes and consider what they might be willing to put “under the hammer.” I have always loved jewelry for as long as I can remember and have been fascinated by the idea of jewelry as a form of adornment. Growing up in Australia with two sisters, there was great feminine energy in our home, and jewelry and fashion were always keenly discussed topics. I became increasingly captivated by jewelry when I moved to New York City. I first worked as an assistant to a Broadway director but quickly felt myself being lured into the jewelry industry and all things sparkly. I achieved my GG (Graduate Gemology) diploma from the GIA (Gemological Institute of America), and from there, I found myself on Madison Avenue working alongside renowned diamond houses. It was a magical experience—I was absolutely in my element handling the most extraordinary gemstones. Now I’ve landed on the North Shore of Chicago and have been living here for almost 10 years. I have found my jewelry niche working as a specialist at Hindman. The auction world is so thrilling—after all my last name is Hammer, so it is absolutely where I am meant to be. POUSAL SUPPORT, also known as alimony and maintenance, is the financial support paid from one spouse to the other. It may be ordered on a temporary basis during a divorce and is often ordered following a divorce for a prescribed period. The purpose of maintenance is to enable a spouse who is not capable of supporting themselves to continue to have the lifestyle to which they became accustomed during the marriage. The Illinois maintenance statute requires the court to consider several factors to determine if an award of maintenance is appropriate. If the court deems that maintenance is warranted, the next step is calculating the payment’s amount and duration. The Illinois legislature has enacted a statute that provides a formula for calculating this amount in cases where the parties’ combined gross income is less than $500,000. This formula considers each party’s respective net income from all sources. The statutory formula calls for 33.333 percent of the payor’s net income minus 25 percent of the recipient’s net income. The outcome of this formula equals the yearly support that should be paid. The statute imposes a cap on this formula so that one spouse cannot earn more than 40 percent of the couple’s combined income. In cases with a combined gross income of $500,000 or more, the court has broad discretion in determining maintenance. Courts often follow the statutory formula described in the above paragraph on the first $500,000 and then often order a lower percentage to be applied to income over $500,000 per year. Even though there is a statutory formula, the calculated amount can be negotiated by the spouses if they agree or if there are unusual circumstances. However, it is unlikely that a court will deviate from the formula. Once the amount of spousal support is determined, then the question turns to how long that support must be paid. This question is answered by determining how long the couple was married. The years of marriage are measured from the ceremony date to the divorce filing date. Those years correspond to a specific multiplier. For example, for parties married less than five years, a multiplier of .2 times the number of years is used. For the parties married eight to nine years, a multiplier of .36 is used. These multipliers increase incrementally up to 20 years of marriage. After 20 or more years, the length of spousal support equals the number of years of the marriage. If the marriage lasted ten or more years, spousal support does not automatically end when this initial period is over. Once the initial period is over, the court will determine if support should continue based on the needs of the receiving spouse, the paying spouse’s abil-

ity to pay, and the total circumstances at the time of the review. Spousal support can be modified based on a substantial change in circumstances like a significant increase or decrease in either party’s income. The parties can agree to a modification of maintenance themselves through negotiation or mediation. However, if the sought-after change cannot be agreed upon, either party can file a petition with the court and a judge will decide how much, if any, change is appropriate. Prior to January 1, 2019, an ex-spouse paying support could deduct the expense from their federal taxes while the ex-spouse receiving maintenance payments had to claim the payments as taxable income. Following a significant revision of the Illinois statute, spousal support is no longer deductible by the payor or taxable to the recipient. This change is not retroactive and only applies to spousal support awarded after January 2019. If the spouse receiving support dies, remarries, or cohabitates, spousal support is terminated. OW AND SLOW. There is no better way to cook a nice, big pork shoulder roast—one that you have marinated in a delicious rub of garlic, rosemary, mustard, and miso. At 250°, the oven seems barely on. But as the hours pass, four … six … seven, the house fills with the most delicious aroma. And when you pull that roast from the oven and slice it, the meat falls off the bone, breaking up into tender morsels of savory goodness. Eaten that way, sauced with juices, and paired with vegetables, it’s irresistible. But you can also fill tacos with the meat as we like to do, adding some pickled onion and cotija cheese crumbles on top. To make this roast, we used a seven-pound, bonein, pork shoulder (also known as pork butt) with the fat cap scored, searing it for 20 minutes at 450° and then turning it down to 250° and roasting uncovered for the remainder of the time. If using a smaller-thanseven-pound roast, start checking for fall-off-the-bone tenderness at the four-hour mark. If larger than seven pounds—say, in the nine-to-10-pound range, you’ll roast from 8 to 10 hours. Recipe adapted from Katie Workman, with kudos to Tyler Wolff-Ormes for the idea of adding miso to the marinade. Serves 12 INGREDIENTS FOR PORK ROAST • 7 lb. bone-in pork butt roast, with fat cap on • 4 large sprigs rosemary, divided (You will remove stems from two of the sprigs, mincing leaves to make 3 Tbsp. Save two remaining sprigs to place on top of roast) • 3 Tbsp minced garlic (7 or 8 cloves) • 1 Tbsp white miso paste • 1 Tbsp anchovy paste • 1 tsp Kosher salt • 2 tsp freshly cracked black pepper • ¼ cup olive oil • 3 Tbsp country Dijon (coarsely ground) mustard FOR TACOS • 1 package fresh corn tortillas

3 cups shredded pork from roast recipe 1 cup pickled onion 1 cup crumbled cotija cheese Fresh cilantro, optional Hot sauce, optional

METHOD MAKE MARINADE In the bowl of a food processor, combine garlic, miso, and anchovy pastes with minced rosemary, salt, pepper, and olive oil. Pulse to create a paste, scraping sides of bowl as necessary. Stir in mustard. Pat pork roast dry. Place in a large Dutch oven, fat side up. Using a very sharp knife, score fat in a diamond pattern. Rub roast all over with the marinade. Place two remaining sprigs of rosemary on top. Cover and refrigerate roast for 2 to 24 hours. (Note: We marinated the full, 24 hours) ROAST PORK Remove Dutch oven from refrigerator to bring roast up to room temperature. Preheat oven to 450°. Place pork in preheated oven for 20 minutes to brown the top. Reduce heat to 250° and continue to roast for 7 to 8 hours, until a meat thermometer slides into the roast with no resistance and registers 180°. Remove roast from oven and allow to rest for 20 minutes before slicing, or shredding. Note: Slices will break up into tender pieces. MAKE TACOS Preheat oven to 325°. Wrap tortillas in foil and heat in oven until tortillas are soft and warm. Fill tacos with shredded or chopped pork. Top with cheese, pickled onion, cilantro and hot sauce (if using.) Serve hot.

Lake Forest resident Drew Naismith follows in his father-in-law’s footsteps as CEO of Helix International, a world leader in the spiral filter core production business. words by Mitch Hurst photography by Robin Subar

W

HEN DREW NAISMITH was a young boy growing up in San Diego his parents, immigrants from Scotland via Canada, separated. Not raised with a strong father figure, he found one decades later in Lake Forest. It’s an unlikely Father’s Day tale with a love story at its center. While Naismith’s father lived near the ocean, his mother moved to the eastern part of San Diego, and he attended Helix High School during the years football stars Reggie Bush and Alex Smith were running amok on the field. After graduating, Naismith attended the University of San Diego where he studied business administration. Just after his professional career began, a chance meeting in a nightclub would set the course of his life. “I was in the technology field working in San Diego when I met my wife, Johanna,” Naismith says. “When I became more of a staple in her life, I started chatting away with her father—just talking about business opportunities, hopes and dreams, and everything else.” Johanna, born in Switzerland, is also a child of immigrants. Her mother is Colombian and father, Jan Jorfald, is originally from Norway. In 1981, the family immigrated to the U.S., eventually settling in Lake Forest. Soon after, Jorfald founded an HVC company that would turn out to be highly successful. Jorfald was a civil engineer by trade but developed highly engineered machinery specific for the filtration

industry. There was a demand for high-volume production parts which he met utilizing his own equipment. As he was getting older, Jorfald began discussing the future of the company with Naismith and the possibility of Naismith joining him. Jorfald wanted Naismith to be involved in a new venture the company had launched manufacturing and selling spiral filter cores. The only problem? The Naismiths were still living in California. “He said, ‘Look, I’ve been there done that, and it could be something great for you, but you have to be here in Illinois’,” says Naismith. “So, I talked to my wife and oddly enough she wasn’t the one who wanted to move back. It was more me who wanted to explore this opportunity to basically start up a new business and have free reign and run with it.” After moving to Lake Forest, where Joanna was raised, Naismith went to work for his father-in-law and over some years, the two developed a tight professional and personal relationship. The couple traveled together, exhibiting at trade shows, and Naismith says his wife had to endure family dinners during which he and his father talked business. “It’s hard especially nowadays to find a business professional who you can get such close mentorship. I had him to myself in a business setting for ten years uninterrupted,” Naismith says of his father-in-law. “Whenever you go into business with family, you don’t always get the best of outcomes, but he and I had lunch every day

in the office together. There’s no question I felt like a son. “He was a real father for me. He took me in. My wife has two younger sisters, so I guess I’m the son they never had. He lost his father at a young age, so he didn’t really have a father figure either. Professionally, he was able to bestow his many years of knowledge and mistakes, because you learn more from a mistake than you do a success.” When Jorfald passed away suddenly four years ago, this transfer of knowledge was instrumental in his ability to continue his father’s legacy as CEO of Helix International. The decade of watching and learning from his father-in-law paid off. “When he unexpectedly passed away, he had already taught me to take over the whole business, which I’ve been doing the last four years,” Naismith says. “Fortunately, I was there, and the years of training had prepared me to just step in easily.” Johanna Naismith says that Drew’s tenacity and enthusiasm for her father’s business was an important part of what was then an unplanned, but ultimately successful, transition. “The company was my dad’s baby. He poured his blood, sweat, and tears into it, and I had never met a harder worker than my dad until I met Drew. I also have never met anyone other than my dad and Drew who could get so excited talking about tubes and filters,” she says. “The plan wasn’t supposed to fall like this. With my father’s unexpected and tragic death, we had no idea what was going to happen to the company. “But that next day, without any pause or hesitation, Drew did what he knew he needed to do. He took my dad’s legacy, his pride and joy, and wrapped his arms around every single part of it and made a commitment to himself, to me, to my family, and most importantly to my dad, to move forward and keep it successful.” The Naismiths now have two children of their own, daughter Ol-

ivia, 8, and son Luka, 4. There are lessons from his father-in-law and others he’s learned along the way that he tries to convey to his kids. “Being in the position that I am, the president of a corporation with 40-plus people working or reporting to me directly, first and foremost you need a treat people with respect,” he says. “It goes back to the old saying to treat people how you want to be treated.” Naismith says education is also a must, and while it comes in different forms, it’s essential for success. The learning doesn’t just happen in the classroom. “Be a well-cultured individual. We’re in a very fortunate position and you have to go see other people, places, and things,” he says. “It’s important to convey that to your kids and make sure, as they’re growing up, they understand those different dynamics.” While the move to Lake Forest from sunny San Diego has worked out for him professionally, Naismith says he also sees the community as a great place to raise a family. “I grew up surfing and playing water polo and doing all these activities outside. Growing Up in Southern California, pretty much every day of the year you can go outside and pick your poison,” he says. “But the Midwest is a good place for raise a family, and this community is nice and strong. The schools are awesome, and Chicago is big city that has everything one would want.” Despite the challenges that being a corporate CEO brings to maintaining a work/life balance, Naismith remains deeply involved in his children’s lives, from attending his son’s soccer games to showing them the world. “We travel a lot and my wife and I decided that what we want to bring our kids with us. We were just in Central America, and before that we were over in Europe,” Naismith says. “We want them to be well, educated and cultural individuals, not only cultural with what’s going on here in the U.S. but overseas as well.”

Sustainable Solstice Elawa Farm Foundation is bringing sustainable, local flavor to this year’s summer solstice. words by Kelli Doremus photography by James Gustin hair and makeup by Leanna Ernest

UMMER’S HERE, and with it comes the chance to taste the best of what the season offers. Ripe heirloom tomatoes, plump squash, fresh greens, and more make for a delightful meal directly harvested from Elawa Farm’s own grounds. Elawa Farm Foundation’s Summer Solstice Party, an annual fundraiser in the property’s picturesque gardens, is set to take place on Saturday, June 25, from 6:30 p.m. to 10 p.m. It will feature dishes prepared by Elawa’s very own culinary team, including a chef and pastry chef. “We’ll take produce coming from our farm, as well as other locally sourced food, and share a beautiful meal together,” Elawa Farm Executive Director Laura Calvert says. “It’s such a unique experience that you can’t really find in the Chicago region.” A fun, casual event featuring a pig roast, cocktails, music, and lawn games, the Summer Solstice Party raises funds needed to continue stewarding Elawa Farm’s historic buildings and surrounding gardens, as well as the nonprofit’s ongoing work to increase food access, educational initiatives, and garden accessibility for people of all ages and abilities. Elawa’s 16-acre parcel of land was once home to a gentleman’s farm built in 1917 for A. Watson Armour, a member of one of Chicago’s oldest and most distinguished families. Designed by famed North Shore architects David Adler and Alfred Hopkin, the land and buildings comprising Elawa’s main farm group were purchased by the City of Lake Forest in 1998 to be pre-

served and maintained through a unique public-private partnership. One can feel, upon entering the grounds, that they’re stepping into a piece of history. “Seeing the transition of this property over the last two decades has been unbelievable,” says Elawa Farm Board Member and Co-Chair Susie Schlachtenhaufen. “It’s so nice to be able to see that some of it has remained unchanged, but other parts have been enhanced and improved.” While preserving the history of the farm, it had been adapted to today’s use to gather community through food and agriculture with a sustainable farm, weekly market, and educational programming for youth and adults. “It’s really special and rare to go to a farm where the buildings have prestige with architecture and restored in such a significant way,” Calvert says. More than two acres of Elawa Farm’s land is cultivated each year for flowers, herbs, and vegetables. Planted by volunteers and staff, the garden utilizes sustainable farming practices like field rotation, cover cropping, beneficial predation, and organic composting. Freshly harvested produce, flowers, and baked goods are sold at the on-site Garden Market, open Friday and Saturday mornings during the summer. “Elawa is like a little gem, and you feel so lucky if you stumble upon it,” adds Schlachtenhaufen, who’s also one of the beekeepers at the farm. “I was asked if I would help, and Elawa is such a meaningful and unique place, I didn’t hesitate to say ‘yes.’ It’s great that we’re supporting bees and offering fresh honey to the community, as well

as teaching classes about maintaining beehives and the importance of bees for the environment.” In addition to beekeeping, Elawa Farm’s year-round educational classes include plant propagation; gardening; cooking; poultry and fish butchery; and bread baking. And its bilingual programs make sure this education is accessible to the greater area, both on the farm and off-site. In 2021, 535 local families attended free educational workshops at the farm, and they’re hoping to create even more free, family-focused programs. Additionally, 10,600 pounds of fresh produce (15,150 servings of fresh fruit and vegetables) were harvested from Elawa in 2021. An estimated 825 families who were facing food insecurity in Lake County received free grocery bags of fresh, nutrient-dense food, and another 200 families and individuals received fresh produce and prepared meals. “Since the onset of the pandemic, we’ve made healthy food accessible by working with community organizations to donate produce to families in the community,” Calvert explains. Elawa also serves as a business incubator for other local farms, giving them a platform to sell their products

and build their brands. Last year, 20 local farms and food businesses were supported with more than $100,000 in purchasing for Elawa’s weekly Garden Market and Take & Bake meal program. “Elawa is such an unbelievable and special resource that serves so many people in the community,” Elawa Farm Board Member and Co-Chair Jamie Pruett says. “For the last 15 years, I’ve used the farm and its surrounding resources a lot with my three kids, so it’s exciting to give back by serving as a board member and furthering the cause of Elawa Farm.” Through the support of sponsors and the community during the Summer Solstice Party, Elawa can deepen its impact in 2022 and focus on what makes it essential to the community as a vital source of local, healthy food, and engaging education. NE OF THE pillars of Lake Forest Open Lands is to grow conservation leaders. So, it should come as no surprise that the environmental nonprofit looked inward when it was time to elevate new leaders. This year, after 12 years of steadfast leadership, Lake Forest Open Lands’ President and CEO John Sentell is retiring. As part of the organization’s transition, Sentell worked closely with the executive search team to secure his successor. Ryan London, most recently the Vice President of Conservation at Lake Forest Open Lands, will assume Sentell’s role as President effective May 18, 2022. London has dedicated his entire professional life to Lake Forest Open Lands, beginning as a summer intern in 1999. “I came home from my freshman year of college at the University of Vermont and found my environmental studies major to be very depressing at the time,” remembers the Lake Forest native with a laugh. “But I decided to apply with Lake Forest Open Lands for a summer internship. I remember Marion Cartwright (who is now on the Board of Governors) interviewed me. That internship really saved me. It gave me hope and confidence in my ability to make a difference.” London returned in 2001 and has been with the organization ever since. Lake Forest Open Lands Association (LFOLA) is a nonprofit entity dedicated to conserving the natural environment through land preservation, habitat restoration, environmental education, and conservation advo-

cacy. It is supported completely by voluntary contributions, including membership dues and donations. Since its establishment in 1967, Lake Forest Open Lands has permanently preserved, restored, and maintained more than 900 acres of local native landscapes including prairies, savannas, woodlands, wetlands, and ravines for the benefit and enjoyment of the local communities. There are over 14 miles of walking trails that are open to the public year-round. Considered a leader among land trusts, Lake Forest Open Lands often serves as a resource to other emerging conservation groups in communities nationwide. In 2009, LFOLA became the first Illinois land trust to be accredited by the Land Trust Accreditation Commission, a mark of distinction in land conservation. “The Midwest isn’t always considered a trendsetter, but Lake Forest Open Lands is often recognized as a standard bearer for the work we do preserving and restoring our landscape,” adds London. “Conservation is such a part of our lineage.” London was instrumental in Lake Forest Open FO REST & BLUFF 71

Lands’ recent land acquisition currently called the Westfork Savanna —the largest land donation in the history of the organization. “Just last week, after 23 years of working with Lake Forest Open Lands, I had my first volunteer day on a brand-new preserve,” London says. “It was an incredible feeling to experience this after all of this time.” As London takes on his new role, Brett Paschke— a partner at William Blair—will take the reigns as the next Chair of the Board of Directors, succeeding Frederick Wacker. Paschke has served as a member of the organization’s Board of Governors and the Board of Directors and served on several committees with LFOLA since moving to Lake Forest more than 20 years ago. “We chose to live in Lake Forest over other North Shore suburbs because of all the open spaces,” Paschke says. “As just a resident, I appreciated how this was something truly unique and special to Lake Forest.” One of the first things Paschke hopes to do in his tenure is to have all of the former board chairs for dinner at his house. “There is so much to learn from the people who have held this position before. We are really fortunate to have a lot of people who are very committed to our community—including our city’s political officials,” says Paschke, who visited Lake Forest Open Lands’ first board chair—John Lillard—in Florida soon after he accepted his new position. “It was kind of like talking to the ‘godfather,’” he adds with great admiration. “It was important for me to hear from John himself what he would like to see for the organization going forward.”

Paschke is enthusiastic about moving into his new role as London takes on his. “We are so lucky to have Ryan. He knows every foot of our land and has spoken with every neighbor on every easement. He’s an incredibly valuable resource. Ryan, coupled with our amazing junior and senior staff—many of them who have been with us for years—as -BRETT PASCHKE well as some new talent we’re bringing in from the outside— has Lake Forest Open Lands well positioned to continue strong into the future.” One of the most exciting projects being unveiled this year will be the opening of the McCormick Ravine this fall. “It’s spectacular,” says Paschke. “People will absolutely love it. This project was a huge engineering undertaking and Ryan was involved in every detail.” Paschke and London are excited to usher Lake Forest Open Lands into its next chapter, knowing their success will be based largely on engaging private landowners in the organization’s mission and stewardship, as well as never forgetting how far the organization has come. “We will never be able to thank John (Sentell) enough for the extraordinary contribution he made to our organization and the one he will continue to make during this time of transition,” adds Paschke.

TRAILBLAZER As one just over 200 female neurosurgeons in the United States, Lake Forest Resident Dr. Sheri Dewan is building a legacy of inspiring young women to pursue careers in medicine and neurosurgery. words by Mitch Hurst photography by James Gustin

S

TARTING AT A YOUNG AGE, Dr. Sheri Dewan spent a lot of time at the library. Her love of science, which would lead to a career in neurosurgery, was fueled by an appetite for reading. “I first became interested in science and neuroscience when I was a child of 9 or 10 years old, and it started with books,” she says. “I really loved reading and as a child I would go to the library every weekend and check out eight or 10 books and finish those, then come back the next week and get more. Eventually I started reading books about science and neuroscience, and that set the tone for me.” Dr. Dewan was born at Central DuPage Hospital in Winfield, where she currently practices medicine, but her family moved to Seoul, South Korea, when she was just in infant. Her father was in the oil business so after a few years her family moved to Saudi Arabia, returning the U.S. when she was 10. She did her undergraduate work at the University of Illinois in Champaign-Urbana and attended medical school at Northwestern University. She completed her residency in neurosurgery at Brown University in Providence, Rhode Island. In addition to her interest in science that was developed early on through books, a family situation became a key factor

that inspired her career. “When I was in my early twenties my mom developed a brain aneurysm and almost died, and her life was actually saved by a neurosurgeon,” Dr. Dewan says. “He was the first neurosurgeon I ever met and because he had such an impact on me and my family and our path. I became enamored with the field and the possibilities of what I could do to help people.” While there are several PhDs in Dr. Dewan’s family, there were no medical doctors. She says it was somewhat expected for her to pursue a career in science or engineering, so her choice raised a few eyebrows. “I was told many times by people in medical school, by family, and by friends, asking if it was really the path that I want to choose, because it’s a very difficult life,” she says. “It’s very high-stress, high-pressure. They asked if this is the life that I really wanted. But what propelled me really was the inspiration of being able to help people with neurologic disorders, and that really came from my mother’s illness.” Dr. Dewan says she was often told that a career in neurosurgery would mean she wouldn’t have time for marriage or children, that she wouldn’t be able to balance having a family

and taking care of her patients. She dismissed the warnings. “Like many things in life, I decided to follow my own path and follow what felt right for me. I did get married and have been married now for 16 years to my husband, who’s a biology professor at Lake Forest College,” she explains. “We met at Northwestern and now we have three beautiful kids.” While there are challenges, Dr. Dewan says she has plenty of help when it comes to achieving work/life balance. “I would say that I’m a product of a lot of love and support, and a village exists around me which includes my parents and extended family,” she adds. “They have helped and been there for us during times when it got challenging.” Only six percent of neurosurgeons in the U.S. are women, and Dr. Dewan’s commitment to increasing that number—and to supporting girls and young women as they pursue careers in science and medicine—is unwavering. “One of my visions for the next five or ten years is to really help grow and mentor and shape the futures of women and girls who are interested in the field or medicine in general,” she says. “I’ve also written a book titled Cut Your Own Path; I just found a publisher and it’ll be coming out next year about my story and my path to neurosurgery.” Through Northwestern and Brown, Dr. Dewan takes female medical students under her wing, helping them with the application process and making sure they have what’s needed to apply for the right programs. She also regularly speaks to women’s groups and serves on the board of Women in Neurosurgery, which works nationally to support women in the field. “These have been some of the things I’ve done in the last couple of years that I feel like have faithfully helped some girls forge ahead despite of adversity,” she says. “I do see more women in medicine being more visible or vocal about their careers.” Dr. Dewan, who resides in Lake Forest with her family, says her advice to girls and young women is not to be deterred when being advised or told what they can’t do. “If you have big dreams that seem formidable, you should follow them and you should follow your heart,” she says. “I didn’t want to look back in ten years and think about a situation where I could have become a neurosurgeon but didn’t do it, to give in to all of the reasons why I was fearful of doing it.”

others Trust Foundation (MTF) hosted its 2nd Pop Up Prom Shoppe for several days in March—a collaboration between Mothers Trust Foundation, Zengeler Cleaners, College of Lake County, and University Center of Lake County to give away more than 1,200 free dresses to Lake County high school students in need. Additionally, Lake Forest’s Smith’s Men’s Store is graciously partnering with MTF to provide suits for prom to the guys. M

any women have undergone some type of breast surgery either for cosmetic or reconstructive purposes. Most of these surgeries are very successful but unfortunately for some either the initial outcome falls short of their desire or over time the breast becomes distorted or hard. In the case of breast augmentation, the body forms scar tissue around the implants, which is normal but sometimes the scar tissue contracts making the implant feel firmer. This is referred to as a capsule. The appearance also becomes distorted. Other complications include bottoming out, fold malposition, wrinkling and rippling, and symmastia. With time sagging of the overlying breast tissue is not uncommon creating a disconnect with the underlying implant. And of course, a woman’s breast naturally will change shape and contour as the body ages. Natural conditions such as lax skin elasticity, thin tissue, and multiple corrective procedures often pose technical and special challenges. If you are unhappy with the outcome of prior surgery, revision surgery may be in order. Patients need to understand that revision surgery is complex and technically demanding. There are limitations based on one’s anatomy and what can be achieved. Technologies have evolved over the years to help correct the described complications and deformities that can occur. The use of STRATTICE™ is a soft, natural product that is designed to reinforce weak tissue and to support growth of your own tissue. Derived from porcine dermis, it is a strong and sterile product. Advantages provided by this internal support are: • Provides coverage and support of the implant • Significantly reduces the rate of capsular contracture • Acts as an “internal bra” to give better support and control implant location • Provides an additional layer to mask visibility of rippling and wrinkles • Becomes viable tissue without scarring or fibrosis

The one drawback of STRATTICE is that it is expensive, but in my experience, it is well worth the cost if it significantly cuts down on the need for future revisions.
