S

UMMER. At long last! Its arrival feels sweeter this year with our country’s opening to near normalcy. Somehow the trees and flowers appear more vibrant, the food at our favorite restaurant tastes extra delicious, and running into neighbors on walks and chatting without masks seems downright celebratory. Simple moments that may have passed without notice prepandemic are now laced with joy. One of the silver linings to spending last summer at home is the rise of home gardening. Celebrated landscape architect and avid gardener Craig Bergmann builds on this movement, returning to the pages of F & B’s In the Garden this month with a piece on harvesting at home. From flowers to fruit, he encourages us to plant what we love in order to surround ourselves with delectable, in-season beauty every day—no dashing to the market required. Entertaining brings a table set for al fresco enjoyment along with a recipe highlighting some of summer’s favorite ingredients. I plan to close out my first outdoor dinner gathering with Chef Dominic Zumpano of The Gallery’s Sour Cream Cheesecake topped with seasonal fruit, following his recipe in The Dish. Another of summer’s great pleasures is time spent on the water. Seasoned sailors and beach chair observers alike will take enjoyment from reading of avid outdoorsman Bob Biddle’s boating escapades and accomplishments in The Sporting Life. And if the father in your fancies himself a water sportsman like Biddle or if he simply enjoys a beachside cocktail, this month’s Style section—guest edited by Trey Gonzales of Smith’s Men’s Store—will have you covered for gifts. Outdoor living abounds in our June feature, “The Nook,” which features images and stories from an historic property on Sheridan Road with showstopping THE LIFESTYLE LIST wrap-around and screened-in porches. Cover subject Susan Lawson Bouma of Lake Forest has a long and distinguished career painting bold, colorful, oversized abstract paintings infused with energy and movement. Bouma, whose work is influenced by American abstract expressionist painters Helen Frankenthaler and Joan Mitchell, shared a studio at Gorton Community Center in the ’80s and ’90s but now paints

GATHER GARDEN INSPIRATION The Junior Garden Club of Lake Forest to host a garden walk featuring seven spectacular gardens.

N JUNE 17, the Junior Garden Club of Lake Forest [ JGCLF] will hold their much-anticipated Garden Walk from 9 a.m. to 4 p.m., featuring spectacular Lake Forest gardens—several of which are included in Benjamin Lenhardt’s book, The Gardens of the North Shore of Chicago. The gardens included remain a tightly held secret until the morning of the Garden Walk. An optional lunch at Onwentsia Club will also be offered. Due to COVID-19 restrictions, the Garden Walk will be handled differently this year. Instead of ticket pickup at one location, the JGCLF will notify all guests of the starting location the evening before the event. Groups of 10 will proceed on a specific route to prevent large congregations of guests. Likewise, a limited number of guests will be able to attend the luncheon, which will be broken into three seating times. Current club president Judy Kernahan says, “Al-

though this year’s event will be challenging from a logistical perspective, we are excited to offer the community an opportunity to stroll through some of the most magnificent gardens in Lake Forest. After the past year of isolation, we are hopeful that people are ready to get outside in a safe environment and enjoy nature.”

Downtown Chicago’s famed French Vietnamese culinary hotspot Le Colonial to add a second location in Lake Forest’s Market Square.

DOWNTOWN CHICAGO mainstay for 25 years, Le Colonial, one of the city’s most stylish and well-regarded restaurants, is expanding to Lake Forest. Nationally acclaimed hospitality veterans Rick Wahlstedt and Chicagobased Joe King have announced they will bring their acclaimed ode to the cuisine and design of 1920s Southeast Asia to 655 Forest Avenue. ICK YEHLE wasn’t thinking about coffee when, at age 7, he started spending a few weeks during summers at Camp Kooch-i-ching in northern Minnesota. Even at a young age, Yehle loved the outdoors and relished the twoto-three-week trips to camp each year. “I went to camp every summer for 13 years in a row, from when I was 7 to when I was 21,” Yehle says. “I’ve spent a lot of time out in the woods or out in the middle of nowhere in Canada. I liked going to camp because I could do stuff that I couldn’t do at home.” At Camp Kooch-i-chang, Yehle enjoyed long canoe trips, riflery, archery, and woodcraft. He even learned how to wield and sharpen an axe. “When I was 16, we saw eleven polar bears on a canoe trip,” he says. “It was just experiences in life you couldn’t get elsewhere, and I loved it.” Yehle, 23, was born in Boston and moved to the North Shore as a toddler when his family relocated to Lake Forest. He’s lived on the east side of Lake Forest ever since, graduating from Lake Forest High School in 2016. While enrolled at LFHS, Yehle talked his way into an Innovation Incubator class (he didn’t technically meet the criteria to take part) where he learned about starting a business from area business leaders. After graduating high school, Yehle’s entrepreneurial spirit accompanied him to Denison University in Ohio. It was during his time there that the beginnings of his professional career would take shape, combining his love of the outdoors with his desire to be part of a start-up. During his years attending camp Kooch-i-ching, Yehle met his business partner and fellow outdoor enthusiast Joey Jones, and they connected over their shared love for adventure and coffee. In 2016, Jones embarked on a 2-year motorcycle trip from Minnesota to Patagonia and back. While traveling through Argentina, Jones was introduced to the bombilla, a straw used to drink yerba maté, a loose-leaf tea derived from the holly plant. Fast forward a few years and Jones and Yehle were working summers at Camp Kooch-i-chang leading camping and canoe trips. They were with a group of youngsters and after a long day and still a way to go on their journey, they both thought they could use a cup of coffee. “We had stopped for lunch on a cool little island in the middle of a river and we cooked up some tuna melts. There was a little bit of firewood on the island, and we made a fire and cooked the tuna,” Yehle says. “I looked at my watch and we had a lot of miles to go to make it to our campsite. So, I turned to Joey and said, ‘Joey, we’ve got to have a cup of coffee.’” But they were out of firewood and would’ve needed to paddle to the mainland to get more. That, along with the half-hour process to brew what they called, “Cowboy Coffee,” meant they had to huff it back to camp caffeine-free. Jones had been using a bombilla during the trip to drink tea. The proverbial lightbulb flicked on. “I said, ‘Joey, what if we use your bombilla and just see if

it works,’ and he and I definitely both captured the energy in that moment to try it and see what would happen,” says Yehle. “So, we tried the bombilla with coffee grounds in a cup and it tasted incredible. Right then I turned to Joey and said, ‘We can turn this into a business.’” Jones and Yehle took a picture right there on the island of the first ever cup of JoGo, the name they would eventually settle on for their coffee straw invention. Right away, Jones and Yehle began sketching designs for the JoGo. A week later, they had a Google Drive set up and the business was launched. They had to create a design, identify a manufacturer, and figure out how they would distribute the product. “It’s been two years and 11 months and we never gave up and never looked back,” Yehle says. Yehle and Jones started the business with just $2,500 of their own money and over time have received investments from friends and family. In early April, they launched a Kickstarter campaign with a goal of $10,000. The campaign has now raised more than $330, with more than 8,000 individual donors. The JoGo essentially acts as a French Press in a straw. Take a hot cup of water, fill it with your favorite ground coffee, put the filter end of the straw in the coffee, stir, and start sipping. The filter is removable for cleaning, and it fits in your pocket. The two partners are still working on other parts of the business, including securing international patents for the JoGo, and they’re continuing to build a following, which already includes many outdoor enthusiasts from around the world. It’s not just providing a good coffee-drinking experience that’s important to Yehle and Jones. Jogo will commit five percent of its annual profits to Survival International, a nonprofit organization that partners with indigenous and tribal communities to help them conserve their land and control their own futures. The commitment aligns with company’s ongoing recognition of the bombilla as the source of inspiration for the JoGo. “It’s really cool to hold the prototype in my hand, knowing that we made it even if nobody ever bought it,” Yehle says. “To know that all these people across the world are actually excited for it just blows my mind. NCLE AL ENJOYED a rather robust social life. He was a nevermarried, traveling perfume salesman. Uncle Al wasn’t related by blood; he was my father-in-law’s best friend. They met in the Army when my father-in-law underwent surgery to remove what was thought to be your basic, run-of-the-mill tumor. Turns out, the lump was an absorbed twin, you know, with bones and stuff. Al was the reluctant medical assistant assigned to tend to my father-inlaw’s backside. Despite Al’s lack of enthusiasm, they became lifelong friends. My husband has fond childhood memories of fishing trips near the Canadian border with his dad and Uncle Al. Around bedtime, Uncle Al would beg off to ‘sell perfume’. He’d return in the morning, disheveled and chain-smoking, completely unprepared for a Catholic school boy’s direct line of questioning: Who buys perfume in the middle of the night? What takes so long? Why can’t the lady just make up her mind? Years later, Uncle Al was ‘selling perfume’ at a lady friend’s house when he took a nap and never woke up. Long story, but Al never told his family he wore a toupee; secrets were a breeze to keep before the internet, I guess. When Al-in-a-casket rolled in from Houston, the toupee sparked sitcom-like confusion. The family couldn’t be certain it was Al in there. They panicked. Even the undertakers were low-key freaking out. A lot of people were perspiring. In the end, my husband and I positively identified Al’s body. That was 28 years ago. I found out I was expecting twins the day before Uncle Al’s wake. The twins were the first of four. This month, our youngest graduates from high school. Boom. Empty nest. Nearly three decades of handson parenting ends. We were driving past The Deerpath Inn recently when my son casually mentioned it was quite possibly

the last time I’d drop a high schooler off someplace. Anyplace. Like ever. I went from zero to existential crisis in a flash. My stomach flipped. I had this vision: parts of me were calving off like a glacier, melting into a giant, murky puddle of Worn-Out Mother right there on the street in front of The Deerpath. Poor Doug, that adorable valet. They’d make him come out and sprinkle the mess with a bag of that sawdusty stuff the custodians in grade school used to cover barf. ‘This is how 28 years of parenting ends’, I thought to myself, ‘With me being absorbed into weird-smelling sawdust, then run over by a stream of Land Rovers, squirrels, and the heels of ladies lunching, until nothing of me remains.’ I suppose there are some aspects of parenting I won’t miss. Parent/teacher conferences immediately spring to mind; cocktails would have greatly improved those. I won’t miss the school drop-off/pickup lines; I found there simply weren’t enough swear words to cope. I certainly won’t miss those Unexcused Absence Notifications that blew up my devices during remote learning like air raid sirens: Alright, LFHS, take it easy. My kid isn’t winning any Perfect Attendance Awards, I get it. But you know what I will miss? Reading Goodnight Moon for the millionth time and warm toddler bodies climbing in next to me at 2 a.m. I’ll miss outside voices inside. I’ll miss stepping on Cheerios. And LEGOs. Just one more time, I wish I could witness my child’s unadulterated joy, driving through McDonald’s after an ortho appointment. I’ll miss the guilty look of teenagers pretending they weren’t into mischief. I might just miss it all. The truth is, I’m not sure 28 years was enough. In a large, heavy bottomed saucepan, heat remaining 2 tablespoons olive oil over medium. Making stock is a simple, unfussy task. If you have extra shells or cobs hanging around the freezer, throw them in the pot. If you only have Lobster shells, corn cobs, half an onion or no wine, that’s and thyme go into the pot for shellfish stock. okay too. Relax! Chef Dominic Zumpano of The Gallery in Lake Forest tells us this lovely sour cream cheesecake works well with a variety of crusts. We’ve baked it in a pecan-graham crust and added a luscious berry swirl on top, but you can make it with an Oreo cookie, shortbread, or other cookie crust if you prefer. The Gallery’s Sour Cream Cheesecake Makes two 6-inch cakes For the crust: • 2 6-inch springform pans • 1 package honey-graham crackers (9 whole crackers) to make 1 cup crushed • 1 cup pecan meal (pulse approximately 1 1/2 cups whole pecans into a fine crumb in a food processor or order online at Guidry Organic Farms) • 1/2 cup sugar • 1 stick (1/2 cup) butter, melted For the filling: • 16 ounces cream cheese (two 8-ounce chubs), softened • 2/3 cup sugar • 4 large eggs • 1 cup heavy cream • 1 cup sour cream • 2 teaspoons vanilla paste • 1 tablespoon fresh-squeezed lemon juice For the berry swirl: • 2 tablespoons each, seedless raspberry and blackberry jam

Make crust: In the bowl of a food processor, break up 9 graham crackers. Pulse to grind crackers into a fine powder. Add pecan meal. Pulse again to combine crackers with pecans. Add sugar and melted butter. Pulse again to combine. Spray two 6-inch springform pans with non-stick vegetable spray; fit the bottom of each pan with a circle of baking parchment. Press the crumb crust up the sides and into the bottom of each pan. Set aside. Make filling: Preheat oven to 325 degrees. In the bowl of a stand mixer with paddle attachment, whip cream cheese with sugar until fluffy. Whisk four large eggs together briefly; add eggs to sugar cheese mixture and whip to incorporate. Add sour and heavy creams, vanilla paste and lemon juice. Whip until smooth and evenly mixed, scraping the mixer bowl to ensure there aren’t any clumps of cream cheese left at the bottom. Add swirl: Divide the filling into the two prepared pans. In two small bowls, stir each of the berry jams until very smooth. Dot surface of each cake’s filling with small dollops of jam. Using the tip of a chopstick, pull each dot of jam in different directions to create swirls. Place each cake on a square of aluminum foil to ensure there are no escaping drips from the springform pans. Bake at 325 for 50 to 55 minutes. Turn oven off, open oven and allow cakes to cool on the rack. Refrigerate cakes for 3 full hours. Serve slices of cake topped with fresh berries and a dollop of whipped cream. HERE ARE SO MANY limitations lately on how to get what we want at the store: Is it safe? Is it fresh? Is it expensive? Is this really what I want? Is it really what I like? It should make sense to us as gardeners that we plant what we like and harvest—as needed—what we want. Harkening back to seasonal harvesting seems to be the logical solution when planning our menus and our gardens. In this world of every fruit, cut-flower, and vegetable being available to us, we often lose the quality of ‘in-season’ produce.

Vegetables and Fruit • If organic is your mantra, why not control the what, why, and when your produce is ready? Microgreens are early crops and so easy to start as soon as the ground warms. • One can grow rotating crops almost year-round with a bit of cover. • There is nothing like a home-grown tomato. Somehow, they always taste sweeter. Try Sweet 100 as a glory of ever-present cherry tomatoes to snack on, roast, or toss into salads. • Too many apples? Bake a pie or share with family and friends! • A home-grown asparagus patch is such a delight to watch as it grows.

Cut Flowers Just about everything one can grow can be cut for arrangements in the house. These choices are so seasonal, personal, and so much more original than the standard bunch of grocery store roses or tulips. • Dormant branches can be used as future stakes for vining peas or beans, or as structural elements in floral arrangements. Cornus sericea ‘Cardinal’ (Cardinal Red Twig Dogwood) is a winter favorite! • Minute flowers are often more appreciated when cut and put in a vase on one’s nightstand, desk, or kitchen windowsill… a ‘bee’s eye view’. • We can tease the season by forcing branches into flower weeks before those in the garden.

HE MOST INTERESTING MAN in Lake Forest has to be Robert Biddle V—and not just because the highly competitive 48-yearold father of four whacks two-handed forehands and two-handed backhands in tennis en route to championships, and is quick to tell befuddled opponents at the Lake Forest Club, “I’ll tell you after the match,” whenever they ask, “Are you a righty or a lefty?” The same Bob Biddle, also a standout in paddle, has competed in 22—22!—Chicago Yacht Club to Mackinac races, the oldest annual freshwater distance (333 miles) race in the world; was a Chicago Board of Trade trader who started the corporate housing business At Home Inn Chicago with his wife, Elizabeth, in 2000; co-founded (and serves as president of ) Nevada-based Fuel Matrix LLC/Oxon2, which developed, patented, and commercialized a revolutionary approach to reducing harmful emissions from internal combustion engines in Europe, South America, and now the United States. Oh, and he’s also a co-executive producer (with longtime Lake Forest resident Paul Sundberg and longtime Lake Bluff denizen Anne Stewart) of a movie—Canyon Del Muerto—that is in post-production as we read. It’s a film about Ann Axtell Morris (1900-1945), a pioneer in archaeology and co-discoverer of Anazasi, North America’s first civilization. Scenes include excavating cursed mummies in sacred burial grounds, surviving flash floods, repairing monumental ruins while dangling from ropes, and pulling Model T automobiles out of quicksand. Get the feeling that Mr. Biddle did more today between 6-7 a.m. than folks will do for the rest of this decade? Thought so. “We’ve all been stuck on these ‘islands’ for the longest time,” Biddle, speaking in late April, says, alluding to the state of isolation many have had to accept and endure since the start of the pandemic. “Now, thankfully, it’s looking more and more like we’ll finally be able to navigate toward normalcy.” Biddle knows navigation. Biddle, as a youngster growing up in Nevada and the West Coast, got hooked on sailing at Camp Deerwood, in Holderness, New Hampshire—the setting for the 1981 movie On Golden Pond. “I remember being on a Sunfish at camp, taking in the serenity, looking all around me, and listening to the water as I sailed,” said Biddle, who played tennis and wrestled for teams at Reed High School in Sparks, Nevada. “I had no idea at the time that The crew readies Precarious, a Pearson 32, for sale.

competitive racing was even a thing.” He eventually pounced—think of a tennis player near the net, transforming a tennis ball into a pile of yellow pulp with an overhead smash—on the opportunities to race atop water. Biddle “hopped from boat to boat” for battles on Lake Michigan after his days as a political science major at Loyola University in Chicago. “Being close to nature excited me; it still does,” says Biddle, who, six years ago, moved from the Chicago neighborhood Old Town to Lake Forest with his family (wife Elizabeth, a native of La Grange and a Lyons Township High School graduate; sons Robert VI, Owen, and Charlie; and daughter Caroline). “There’s nothing more exhilarating than being at the helm, finding a groove, and experiencing the magic onboard.” A member of the Chicago Mercantile Exchange beginning in 1998, he and one set of crew mates survived an epic storm during a “Mac” race in the 1990s. His best finish to date in the race that ends on Lake Huron off Mackinac Island in Michigan is a fifth-place showing aboard a Nelson Marek 36. Typical length of a shift at the helm: four hours. Biddle, who’s thinking of entering this summer’s “Mac” as a crew member of a boat named Turning Point, needs to complete only three more “Mac” races to land the coveted “Old Goat” (or, in some circles, “Island Goat”) status. Sailors who finish 25 races get to apply for membership in the Island Goat Sailing Society. A total of 390 sailors had achieved the distinction through 2019, according to islandgoats.org. The first “Mac” was staged in 1898. Last year’s “Mac” was not held because of the pandemic. Biddle’s favorite quote this year is one he’s treasured for many years, because he essentially lives by it. “(Country singer) Jimmy Dean said it,” Biddle says. “I love it—you can apply it to many areas in your life. It’s, ‘I can’t change the direction of the wind, but I can adjust my sails to always reach my destination.’ ”

When pandemic lockdown made it impossible for Susan Lawson Bouma to paint in her Vero Beach studio, the artist did not give up doing what she loves. Instead, she created a new place to work—steps from the front door of her Lake Forest home. words by Sherry Thomas photography by Katrina Wittkamp

F

OR NEARLY 50 years, Susan Lawson Bouma’s proverbial “happy place” has been in front of a canvas. The colorful, oversized abstract paintings she creates are bold, infused with energy and movement and often left without titles so those who acquire them can make their own artistic interpretations. “I rarely name paintings,” says Bouma, who moved to Lake Forest with husband, Robert, and their young family in 1979. “People can look at them and see what they see and feel what they feel. I believe naming my paintings is limiting because it influences the viewer.” She accidentally discovered a passion for painting in the 1960s when she was called in to substitute for a New York City public school art teacher who walked out after the students threw paint in class. She spent the rest of the year as the school’s art teacher and has been devoted to developing her skills as a painter ever since, studying art in America’s major cities: New York, Chicago and Los Angeles.

A native of Cedar Rapids, Iowa (also home to the legendary Grant Wood, most famous for his iconic American Gothic painting), Bouma started out by studying the masters in oil— drawing inspiration from visits to the Metropolitan Museum of Art and the Art Institute of Chicago, as well as Sotheby’s and Christie’s auction catalogs. Focusing on French impressionists Monet, Cezanne, Matisse, and John Singer Sargent, as well as American impressionist painter Frank Benson, she learned about color mixing and composition. About 15 years ago, Bouma became interested in abstract painting after watching an artist friend pour paint on an unprimed canvas on the floor of her studio. This led Bouma to study American abstract expressionist painters Helen Frankenthaler and Joan Mitchell. It also led her back to the classroom. Under the guidance of Deborah Gooch, a notable Vero Beach-based artist and teacher at the Vero Beach Museum of Art, Bouma began to hone her skills. After a few years of studying with Gooch, Bouma was invited work beside her in her studio—the Vero Beach studio she maintains today with three other artists. “When I came back from Florida early in the pandemic, I didn’t realize that I would be away from my studio for nearly a year,” explains Bouma, who majored in English and History at Coe College before moving to Manhattan, where she studied art at the New School and later earned a master’s degree at New York University. “I was anxious to paint but no room in my home was suitable. That’s what led me to the garage. While it’s a bit shabby, it has high ceilings and good light—even an old-fashioned sink. On warmer days, I could open the garage doors.”

This would not be Bouma’s first home studio. When she and Robert bought the 1918 home more than 40 years ago, they created a space to paint on the third floor by adding a skylight. As time has passed, this room became the sewing room, and the wrapping room, and eventually the storage room. But Bouma had found a new place to paint: a studio at Gorton Community Center that she shared with a group of like-minded female Lake Forest painters in the ’80s and early ’90s. The group was critiqued weekly by the chair of Lake Forest College Art Department professor Michael Croydon, whose sculptures are displayed prominently around Lake Forest. Some of the work Bouma has completed over the last year will be on display at Arch + Fletcher & Fork, 913 Green Bay Road in Winnetka, through June 12. Bouma also donated one of her pieces to last month’s “Cattails and Cocktails” auction to benefit Lake Forest Open Lands Association. Given everything that’s happened over the last year, she is particularly excited to share her work with others. “I’m thrilled when someone connects with one of my paintings,” says Bouma. “The thought of my work on display in someone’s home is powerful and gratifying.” Bouma, who served on the Board of Trustees of the Vero Beach Museum of Art for six years and is still involved in the Vero Beach art community—including a solo show in 2019—feels she was fortunate to have a place to work during the pandemic. Artists rely on the community and camaraderie with other artists and Bouma was happy to paint on occasion with Lake Bluff artist Vanessa Clarke, a recent graduate of the MBA program at the Art Institute, who had to give up her studio

in the city due to the pandemic. Even her grandchildren came to paint— most often 8-year-old Nelly Herbert, daughter of Whitley Bouma Herbert, who lives around the corner. “She came over to paint a canvas for her mother for Christmas and I said ‘Nelly, would you like a few pointers?’ and she said ‘No, thank you.’ She wanted to do her own thing and I thought that was great,” Bouma explains. “But I know Nelly is proud of me. Whitley overheard her on a Zoom call for school and she was holding up a painting and announced, ‘My Nana is an artist’.” Thanks to becoming vaccinated, Bouma was able to return to her studio in Florida this past spring. “Having the garage space is what got me through COVID. It really did,” she adds. “I missed the give and take and energy of having other artists around but to be able to just walk out the door to the garage and look at the painting I was working on and put down a few strokes and sit down and think about it … it was truly a gift.” For more information about Susan Lawson Bouma, visit susanbouma.com. OW, ROW, ROW your … machine. For what would have logged 26.2 miles. That’s the bib-free marathon Caryn Africk completed in her Lake Forest back yard as a one-woman fundraiser. More than $16,000 went to the adoption agency The Cradle, based in Evanston, after her three hour, 43-minute feat on her seat. Maybe it was fate with a maiden name of Rowe. This passion and dedication should come as no surprise to those who know Africk, a lifelong health advocate and driven entrepreneur and philanthropist. Nor should they be surprised at the creation and great success of Cool Beans, the Lake Forest-based company she co-founded with Tyler Mayoras, Mike Brennan, and Eric Schnell in 2018. It offers whole food, plant-based, minimally processed ingredients and delicious globally-inspired flavors, all wrapped up snug in a gluten-free wrap. Cool Beans’ three plant-based frozen wraps—Spicy Chipotle, Tikka Masala, and Moroccan Gold—can be ordered online (eatcoolbeans.com) or found in some 800 grocery stores across the U.S., including local Sunset Foods, Plum Market, Pete’s Fresh Market and Foxtrot stores and online at Vegan Essentials. “Interest in whole, plant-based food is exploding,” says Africk, who also founded the marketing and business consulting firm Merit Advisors following her departure from Hewitt Associates in 2006. “More and more people are saying, ‘I just want to eat healthier. convenient?’ There’s vegan food out there but too much, way too much of it, is over processed junk food. Our health and climate, along with what we eat, are serious stuff, but we have to have some fun along the way, right?” Africk doesn’t just get stuff done. She GETS STUFF DONE, consistently and resolutely. She’s been a GSD’er her entire life. Soon after she got her exercise physiology degree—a brand-new major at the time—at the University of Michigan, she sometimes taught 17 health and fitness classes per week in and around Evanston. He was that guy who always said, ‘I can figure this out.’ He instilled that kind of thinking in me and in my siblings.” The pandemic attempted to bring down Africk and Cool Beans. It failed. “With COVID it’s been a hard year, personally and professionally for many of us,” she admits, adding she’s been blessed more than many others. “For Cool Beans, we did have to make some adjustments—cut expenses, alter our supply chain, revise our sales plan, and be patient. Grocery stores

were not taking in any new products, since they were focused on keeping the stores stocked with staples. As they should!” But Africk cited a study that found sales of plantbased fare increased 27 percent and sales of regular food decreased 15 percent in 2020. Cool Beans is “chillin” at the intersection of three of the fastest growing markets in grocery—frozen, plant based, and gluten free foods. “Tyler (Mayoras) is the originator of the Cool Beans concept,” Africk says. “Health-conscious, he became a vegan about four years ago, and he’s passionate about climate and the environment.” Brennan and Africk are vegan-ish, also known as flexitarian, and Schnell, also founder of New York City-based BeyondBrands, is vegetarian—showing that Cool Beans is for anyone wanting a convenient, healthy meal. “Delicious health food is important to me. More and more we learn how important our health is to quality of life. Just a few changes can be life changing,” explains Africk, continuing, “We’re excited, having completed the research and development for our next wrap flavors; we hope to introduce them in mid-2021. T IS NOT OFTEN THAT one of the most charming, beautiful, and historic homes in Lake Forest becomes available. Located just steps from both Market Square and Lake Michigan, this turn of the century Victorian provides both indoor and outdoor spaces that promise to provide the backdrop for years of family memory making. In fact, when the current owners, Lynn and Jim Bertram, purchased the home eight years ago, they were not even in the market for a new home. They had just finished remodeling their kitchen in Whispering Oaks and were perfectly happy there. But when Lynn saw realtor Suzanne Myer’s “sneak peak” listed on Facebook—well, she thought she’d just take a look. daughters finished growing up—the time has come for a new chapter in their lives, so the Bertrams are ready to pass this historic beauty on to the next deserving family. For history buffs, this may be opportunity impossible to pass up. In fact, Miller says that this may be the oldest substantial home in Lake Forest. “It was built in 1859, so that is before the Chicago Fire, before the Civil War; there is not much left like that along the North Shore. There was four years’ worth of inventory and people leaving the city to come back out to the suburbs, so the market has changed drastically,” Parnell says. “Now there is no inventory, but things get listed and things get sold immediately, so having an agent with inroads to inventory is helpful.” Having a broker that has deep roots in the community and a firm grasp of area amenities is also important. Parnell’s 20 years as a Lake Forest resident keeps her well-positioned to so serve both buyers and sellers. “Buyers definitely need a local real estate agent who has inside knowledge of pre-listings,” she says. “If you’re buying or if you’re selling it’s the same thing. You need a real estate agent who has inside knowledge of buyers to get the most bang for your buck.” While buyers might get deflated by the lack of inventory on the market, Parnell says it’s still worth looking as long as interest rates stay low. PLASTIC SURGERY UPDATE REVISION BREAST SURGERY words by Steven Bloch, M.D.

M

any women have undergone some type of breast surgery either for cosmetic or reconstructive purposes. Most of these surgeries are very successful but unfortunately for some either the initial outcome falls short of their desire or over time the breast becomes distorted or hard. In the case of breast augmentation, the body forms scar tissue around the implants, which is normal but sometimes the scar tissue contracts making the implant feel firmer. This is referred to as a capsule. The appearance also becomes distorted. Other complications include bottoming out, fold malposition, wrinkling and rippling, and symmastia. With time sagging of the overlying breast tissue is not uncommon creating a disconnect with the underlying implant. And of course, a woman’s breast naturally will change shape and contour as the body ages. Natural conditions such as lax skin elasticity, thin tissue, and multiple corrective procedures often pose technical and special challenges. If you are unhappy with the outcome of prior surgery, revision surgery may be in order. Patients need to understand that revision surgery is complex and technically demanding. There are limitations based on one’s anatomy and what can be achieved. Technologies have evolved over the years to help correct the described complications and deformities that can occur. Advantages provided by this internal support are: • Provides coverage and support of the implant • Significantly reduces the rate of capsular contracture • Acts as an “internal bra” to give better support and control implant location • Provides an additional layer to mask visibility of rippling and wrinkles • Becomes viable tissue without scarring or fibrosis The one drawback of STRATTICE is that it is expensive, but in my experience, it is well worth the cost if it significantly cuts down on the need for future revisions.
