ello! Welcome to what I find to typically be the coldest month of the Midwestern year. I hope you’re all staying warm and healthy. As we put together our February issue, we had health and wellness in mind. And with an ongoing pandemic, who better to celebrate than the doctors who are all working to keep us healthy. Our second annual Premier Doctors feature includes some of the most talented physicians in our area— helping us to keep us healthy, both physically and mentally. On our cover we have Hinsdale psychologist Dr. Colleen Napleton— otherwise known as a “toddler and baby guru” by many. Napleton recently opened The Center for Balanced Parenthood to help parents as they navigate the difficulties of the pandemic. Another “supermom” appears in our Mother of Invention story highlighting Hinsdale’s Leslie Danford and her new nutritional food and beverage company geared toward kids (but enjoyed by adults
alike)—Vitaminis. The HINSDALE HISTORICAL SOCIETY’s newest exhibit—Remembering Pearl Harbor & WWII, Hinsdale’s War Efforts at Home & Abroad— opened this winter at the Hinsdale History Museum. As the U.S. entered World War II, Hinsdaleans were among the many who stepped up, eagerly serving their country both at home and overseas. Hinsdale was home to almost 1,500 active-duty service members and the civilians who stayed home contributed to a nationally recognized canning organization and scrap metal drives—all to serve the war effort. Hinsdale’s contributions were significant, especially given its population of only 7,836 in 1940. The exhibit features the faces of the locals who served abroad and supported war efforts from the Hinsdale community. The exhibit is open on Saturdays from 10 a.m. to noon, and by appointment. Can’t leave the house without? A crossbody bag so I can be hands free. Transportation? Currently loving my Jeep Grand Cherokee. Driving music? Running around town, I prefer a little silence to reenergize. Place to eat? We love dining in Elmhurst! Our favorites are Mata Ne, Gia Mia, and Roberto’s. Shop? Sweet William for me and Learning Express for Jack. Best thing about country? The people—everyone is so warm, thoughtful, and happy. Worst thing about country? There is not much to do after 9 p.m. The perfect day is? Playing with Jack at Burns Field, a walk over to my parents’ home, lunch outside on First Street, and having friends and their children over in the backyard with Doug grilling. RE-DEFINING A “SUCCESSFUL” DIVORCE During Jessica Bank Interlandi’s 20year career at Schiller DuCanto & Fleck LLP she has redefined what a successful divorce outcome looks like. Today, her focus is on providing advocacy while empowering her clients with knowledge and control over both process and outcomes through mediation, a form of Alternative Dispute Resolution. essica Bank Interlandi has practiced exclusively in the area of family law for two decades at Schiller DuCanto & Fleck. Interlandi watched her mother attend law school and become one of the most well-regarded family law attorneys in the Washington D.C. area, setting in motion her own career aspirations; she never considered a different practice area. Interlandi was trained as a litigator and successfully advocated for clients at trials and in other contested court proceedings on countless occasions. She observed a pattern over the years, regardless of the outcome: clients almost universally expressed anxiety about litigation stemming from a lack of control over the judicial process and the outcome of their case. As a result, Interlandi’s clients have increasingly chosen Alternative Dispute Resolution over litigation as a more cost-effective and less adversarial choice to resolve their issues. The final resolution is agreed to by the parties with the help of the mediator to facilitate the process. The attorneys provide legal advice throughout; this involves explaining the law and the potential outcome in court as well as other more creative resolutions which a judge may not be able to order because the law does not provide for them. Because mediation occurs in a more controlled environment and at a pace dictated by the parties, Interlandi’s clients experience reduced anxiety and uncertainty. In the hands of a skilled mediator and under the guidance of experienced attorneys, both parties are given the opportunity to express their financial and child-related needs and interests and to have them addressed in the resolution. This is far less likely to occur in court, where the result can be unpredictable, inequitable, or both due to congested court dockets and the constraints of the laws under which judges must operate. Alternative Dispute Resolution and litigation are radically different methods for resolving family law disputes, but Interlandi believes she is more effective as an attorney in a mediation setting because of her training as a litigator. Courtroom experience is the only way to truly understand the probable outcome in court on a given issue and to use that knowledge in mediation as leverage, to develop strategy or to help a client understand the costs and benefits to taking a certain position. Regardless of the forum, Interlandi’s approach is to develop a strategy informed by the client’s goals. Interlandi is committed to providing her clients with as much knowledge as possible to allow them to make informed choices. “I always talk to clients about all options for resolution, and I go through the potential pros and cons with them, including the potential difference in cost and time between mediation and other options,” she says. Interlandi believes that the most effective family law attorneys are responsive and have a high degree of emotional intelligence and empathy. “It is my job to answer questions and address concerns quickly in plain English. Clients should not be left wondering about their children or financial life and I respond with the timeliness and sensitivity that those issues deserve,” says Interlandi. ith 2022 officially underway, Hinsdale’s Leslie Danford can hardly believe how much can change in a year. For her, it included a new home, a new baby, and a new business. Before the world had shutdown, Danford had accepted a new job with SoftBank-backed OYO Hotels. At the time, she had three young boys and was living in Chicago. Like many working moms, balancing home and work demands was a challenge. Still, when she was hired for that job, it was an exhilarating opportunity to build a team and business. Then COVID-19 hit. The pandemic wreaked havoc for the hospitality industry, and within a year, Danford’s dream job ended. “I had never been let go from a job before,” Danford says. “It was a complete shock to me.” Danford lost her childcare around the same time and found herself like many moms during the pandemic—juggling housework and online schooling for her kids, who were 3, 4, and 6 years old. There were many moments when she felt completely overwhelmed and wondered what had become of her former life.
“It was during this really tough time that I had this idea for a children’s supplement,” she says. “I found that my kids’ food and drink options were loaded with sugar and generally lacked any nutritional value. With my background in beverage and consumer products, I thought I could develop something for this space.” With her skillset, as well as being University of Chicago and Harvard MBA-educated, Danford knew she was up for the challenge of solving this wellness puzzle. Her goal was to create an easy-to-serve, fun-to-drink food and beverage brand that also played a functional, positive role in kids’ health and development. T
he Hinsdale Auxiliary’s signature fundraiser, Tablescapes, which benefits the Infant Welfare Society of Chicago, is themed “Gather,” and will take place March 13 to support the Angel Harvey Family Health Center. For the past 20 years, Tablescapes has gathered Hinsdale Auxiliary members to carefully curate tables and vignettes with a variety of elements that will be up for raffle. Groups of friends and supporters are anticipated to attend for lunch and boutique shopping, along with both live and silent auctions. There will also be a grand raffle including Heritage Bikes and spring’s most coveted luxury handbags. The event will be emceed by WGN-TV news anchor Ben Bradley. The new Fogo de Chão Brazilian steakhouse is a churrascaria like no other.

here may be a temptation to assume that if you’ve experienced the Bacchanalian thrill of gorging, like a Gilded Age robber baron, on an allyou-can-eat feast of skewered meats at one Brazilian churrascaria, you’ve pretty much experienced them all. Maybe you’ve already done the math and come to the conclusion that consuming endless waves of baconwrapped filet mignon, pork ribs, and cheese bread runs slightly counter to that new gym membership you just secured. Or that the scientifically verified odds of stopping short and ordering only a single caipirinha cocktail—rather than two or three—is roughly 4,796,742-to-1. To which we can say, we sympathize. We really do. (We’ve been right there with you, even though we have enough self-control to banish those unruly thoughts before they ever take root.) But honestly, if you’re still asking yourself those questions, it’s clear that you’ve yet to visit the new Fogo de Chão in Oak
Brook, which introduces a slew of clever new twists on the traditional churrascaria experience. Maybe you know the general process already? Most stateside churrascarias (the word churrasco means “barbecue” in Portuguese) adhere to a similar template. While diners graze on a sprawling cold buffet of meats, cheeses, and veggies, various cuts of beef, chicken, pork, and lamb are slowly roasted over an open fire. Roaming bands of gauchos (a term synonymous with Brazil’s legendary horsemen and cowhands who were known to cook over an open fire) grab those glorious skewers and begin doling out slices to everyone in sight. Diners who choose to partake in what Fogo calls its endless “Churrasco Experience” are each given a dual-sided disk. Flip that token to green and you’re ostensibly telling servers, “Come hither and slice me off a little bit of what you’ve got there.” Red, by contrast, indicates one of two things: A) I need a break because I have enough meat on my plate to feed a

DINNER DATE family of eight or B) I’m done eating because I’ve grown three pant sizes in the last 90 minutes. We won’t deign to get into a debate— these things can get real heated—over what we consider to be Fogo’s best cuts, other than to say its beef options run gamut from bacon-wrapped filets and Flintstonesized beef ribs to two personal favorites: a intensely flavorful bottom sirloin and Brazil’s iconic fat-fringed Picanha top sirloin cut. Just make sure to save room for the house’s chicken legs (marinated in beer and brandy) and its Parmesan crusted pork, which remind us of tiny delicious nuggets of pork Milanese. What’s most noteworthy for seasoned Fogo vets is Oak Brook’s jaw-dropping dining room. It looks like a jewel box. Floorto-ceiling windows. The brilliant use of rope—note the chandelier—as central décor element. And a towering copper relief of a giant Brazilian cowboy as its centerpiece. Nasco Angelov, Oak Brook’s general manager, says our local Fogo is the first of its kind in the world. Internally, it’s referred to as a Center of Excellence, which means it’ll be a testing ground for new ideas and dishes. You’ll see some of those new attractions already out in full force. Note the bar space, which serves burgers, small plates and happy-hour bites. But our favorite dining room feature is Fogo’s open kitchen. We must have stood for 20 minutes watching Fogo’s gauchos spin around glistening giant skewers of meat as they crisped and sizzled over dancing charcoaled

If you’re interested in great drinks or lighter meal, Oak Brook’s Fogo bar is both elegant and romantic. Or if you prefer some tableside pyrotechnics wait for the restaurant’s roving caipirinha cart to come by, so you can glean some mixology tips.

flames. By the time you visit, you may also see giant dry-aged meat lockers bordering that kitchen. Those who wish to really splurge can order a 21-day aged tomahawk chop that will be removed from the locker, sliced up and presented to your table. If that’s not ritzy enough, Fogo now boasts the option to order a mouth-watering selection of uberindulgent cuts. Think ancho-dusted Wagyu ribeyes or a hulking 20-ounce Wagyu New York strip. We diverted from tradition by ordering an extremely mild Chilean sea bass as a stand-alone entree—pro tip, pair it with the house chimichurri or cold buffet’s basil dressing. We also saved just Wagyu ribeye enough room for dessert to fall deeply and madly in love with the triple-chocolate brigadeiro, which made it into our top 10 most decadent desserts of the year list. Imagine a giant chocolate truffle, fringed with an Oreoesque crust, that’s then draped in chocolate ganache and topped with chocolate sprinkles. It’s a belt-buster, but like Fogo itself, worth every glorious calorie.

There are a half dozen caipirinhas on Fogo’s menu— from strawberry hibiscus to mango habanero, but our favorite is the premium version. Aged cachaça (a liquor made from fermented sugarcane juice), lime, and cane sugar. Fantastic.
Caramelized Pineapple Old-Fashioned:
It’s not as treacly as it sounds. Muddled pineapple gets folded into a classic old fashioned made with WhistlePig PiggyBack 100 percent Rye. All that rye balances out the tropical overtones. Very coastal; very delicious.

A RIVER RUNS THROUGH IT Montana’s Paws Up luxury resort offers an oasis to stir the imagination and restore the soul. WORDS BY DUSTIN O’REGAN

T
here is something so restorative about being in nature. Especially when that nature is found on 37,000 acres at a critically acclaimed luxury resort with sweeping views of rolling meadows that reach the foothills of snow-capped Montana mountains. Paws Up Ranch is located 35 miles east of Missoula, Montana, and it takes just over a half-hour from the airport to arrive at the working cattle and bison ranch that feels like a world of its own. The Kevin Costner hit Yellowstone is filmed just up the road, and the valley’s beauty inspired Norman Maclean’s famed novel A River Runs Through it. The resort’s playful name—originated from how the owners’ dogs would greet visitors by putting their paws up in the air while thumping their tails enthusiastically—reflects its happy, easy-going, friendly vibe. After check-in at the Reception Barn, we were whisked off to our Big Timber Home, a spacious log cabin with a master

Paws Up entrance to The Village bedroom and two-bed loft, a great room with a wood-burning stove emitting a wonderful wood-smoke aroma, a full kitchen, and laundry room. In the large bathroom, an etched glass artwork serves as one wall of the shower. The cabin is outfitted floor-toceiling in Western chic—rustic yet contemporary—with furnishings and artwork hand-selected by the owners to give the house the feel of a dear friend’s home. Every room had one thing in common, magnificent views. We literally soaked in these views while enjoying the back porch’s hot tub. Relaxing in that warm bubbling tub overlooking the red Ponderosa pines outlined against the blue Montana sky and mountains in the distance would be a favorite pastime in the days to come. A luxury Lexus SUV is parked in the driveway of each house
for transportation. If you prefer to be picked up for activities or meals, the request can be made via Paws Up’s trusty app. We opted to hop behind the wheel for the short drive to the resort’s culinary headquarters located in The Village. Pomp, The Resort’s gourmet restaurant, offers continental cuisine with a Western flair for dinner. Grounded in the fundamentals of classic cooking, Executive Chef Sunny Jin (a veteran of The French Laundry and El Bulli) uses his background and imagination to create mouthwatering culinary innovations for the refined palette. Local ingredients are featured, so offerings change just like the seasons. The menu boasts a select number of carefully curated options for each beautifully presented course. One evening we enjoyed a salmon tartare with capers, horseradish, and herbs for a first course, followed by a succulent beef tenderloin with duck fat potatoes, petite carrots, and wilted spinach with aged sherry. The meal’s culmination was a chocolate and tahini concoction—so exquisite that I am still dreaming about it. Trough features a more casual menu and atmosphere for breakfast, lunch, and dinner. Next door, Tank provides a wide selection of the finest drink selections in the West and a casual environment complete with flat-screen TVs, music, breathtaking views, and a spectacularly large fireplace. One afternoon we headed to the Wilderness Outpost for a two-hour horseback trail ride. A dusting of snow covered the ground making the scene entirely idyllic. We rode along and through the emerald-tinted Blackfoot River. The trek through the river was quite exciting. Fancy, my horse, wasn’t too keen on the

idea originally but with a little encouragement, he headed into the deep waters and through a fast current. Fancy took to a run as we ascended the bank into the conifer forest—at that moment I felt like a wrangler in Yellowstone. Just before we entered a fragrant sage field, our guide pointed out a rock that Lewis & Clark used to survey the area. Post-ride we enjoyed an outing to the spa. In the summertime, Spa Town is nestled on the edge of a meadow with a colony of white tents with full baths and heated massage tables. During the winter, the spa migrates indoors to the Saddle Club where we were booked for Swedish massages, just what the doctor ordered after my hours atop dear old Fancy. My masseuse used a circular technique that I had yet to encounter but hope to experience again. Early one day we joined a naturalist for a two-hour nature hike to discover The Ranch’s diverse flora and fauna. There are 30 miles of marked trails to explore, and we covered only a fraction on our jaunt through the forests, meadows, babbling brooks, and up to James Pond. Our guide explained how the Indians used the Ponderosa pine in a myriad of ways from using its roots to dye textiles to boiling the bark for medicinal purposes. The pine bark’s reddish hue is accentuated by the chartreuse green moss that thrives on its branches. The entire floor of the forest is blanketed in amber pine needles, and darling little pines shaped like miniature Christmas trees pop up all over the forest floor. The crisp air has a palatable

pine scent with a hint of wild sage lying underneath. Montana black chipmunks, which I mistook for tiny squirrels at first, race around the forest. Although these bushy-tailed fellows are black from tip to toe, they dart around exactly like the chipmunks we are familiar with in Illinois. Famished following our hike, we visited Trough for chili con carne and a side of truffle fries. We lingered over lunch watching a herd of bison grazing in the meadow and an enormous flock of white snow geese undulating across the sky and over snow-capped mountains. It seemed as if the whole scene had

been orchestrated. According to our server, it was just an ordinary day in Montana. The Resort offers an array of unique accommodations. Glamping tents are available in six different camps and would be ideal for a summer visit. Green o, the newest addition to Paws Up, is an absolute dream. This adults-only property features twelve spectacular houses. My favorite was the glass multi-level “Tree Haus” appearing high up in the pines in a densely timbered hillside overlooking a picturesque valley. The Social Haus is the dining property for Green o guests, and the chef changes the menu daily. We enjoyed a nine-course tasting menu here; every course presented by the chef or sous chef was more amazing than the last. I must visit again as the Green o is a property unlike anything I have ever seen. Paws Up also boasts more than 100 miles of designated hiking, mountain biking, horse, and ATV trails. Outdoor adventures include fly-fishing, cattle driving, rappelling, whitewater rafting, bird and wildlife watching, and sporting clays shooting. Winter activities include snowshoeing, cross-country skiing, snowmobiling, skijoring, sleigh rides, ice skating, dogsledding, and downhill skiing nearby. One could visit Paws Up over and over and experience something completely new each time. Hands down, Paws Up needs to be on your travel list. Book early as the word is out. The Influence of Art on a Home Art enthusiasts gathered for an evening of beautiful works and a panel discussion on the influence that artwork has on the home. ou don’t have to travel all the way to Chicago to be seen by the midwest’s top women’s health specialists. The University of Chicago Medicine’s Comprehensive Women’s Health Center in Hinsdale has been located on Salt Creek Lane since 2018. Specializing in reproductive endocrinology, gynecology, urogynecology and pelvic health, the center is located just off Ogden Avenue. The medical team in this small, quiet office focuses on delivering a personal touch to their patients. Specializing in patient-centered gynecologic and reproductive healthcare, Dr. Julie Chor focuses on contraceptive care for young adolescents, young adults with complex medical conditions, menstrual irregularities, LGBTQIA care and sexually transmitted
infection screening and counseling. Dr. Laura Douglass performs a wide array of complex robotic and laparoscopic surgeries treating endometriosis, uterine fibroids, ovarian/tubal cysts, and Mullerian anomalies. She also serves as the director of the Transabdominal Cerclage (TAC) Program. Dr. Douglass is an expert in TAC surgery, a procedure that prevents pregnancy loss in patients. Dr. Dana McQueen specializes in reproductive medicine with fellowships in both reproductive endocrinology and infertility and recurrent pregnancy loss. She is passionate about using research to improve patient care. Her research on risk factors for recurrent pregnancy loss and improving outcomes for in vitro fertilization has made her an expert in the field. Fellowship-trained and board-certified urogynecologists Drs. Shilpa Iyer and Sandra Valaitis offer a number of office procedures and vaginal and minimally invasive surgical techniques to treat a variety of urogynecologic conditions. They specialize in the diagnosis and management of female incontinence, overactive bladder, pelvic organ prolapse, vaginal mesh complications and other urogenital system disorders. The Comprehensive Women’s Health center has on-site ultrasound and a fully equipped procedure room for urodynamic testing and office procedures. Even through the pandemic, the clinic is one hundred percent operational, adhering to established safety protocols. In-person appointments are standard, although virtual appointments may be an option upon physician approval or follow-up care. “W
e’re all things real estate.” That’s the motto of Cervantes Chatt & Prince (CCP). Serving Northern Illinois and Southern Wisconsin, CCP is a multi-discipline firm with robust practices in residential and commercial real estate transactions and litigation, and the legal needs of homeowners and condo associations. “We do the buys and sells and handle it through the contracting process. We do residential. We do condos. We do shopping malls and lending reviews for big commercial clients,” says Bill Chatt, one of three shareholders in the firm. “We do all things transactional, and litigation when there are issues such as withholding defects on a property.” CCP grew organically based on demand and the need to broaden areas of expertise. Chatt originally worked for a small firm on Chicago’s North side, moved to a firm in Naperville, and then eventually set up his own practice in Burr Ridge. Business boomed, so he called an old friend, Bob Prince. “I called Bob and said, ‘Hey, it’s going gangbusters and we have to work together on this’,” says Chatt. “We had been friends with Marc Cervantes who was then a partner in a Chicago office, and he eventually joined us. It was just kind of a natural progression. That’s how the firm grew to where it is now.” Cervantes handles real estate transactions, Prince heads up the association law practice, and Chatt handles the residential and commercial real estate litigation. CCP isn’t just a collection of attorneys, but a firm where each attorney does what they do best. ‘I don’t think we’re unique in terms of our practice area. A lot of attorneys do just real estate,” Chatt says. “But a lot of times, for example, people sell a house and don’t necessarily have an attorney who has all of the experience they might need. We have relationships with realtors and let them know what’s going on. We understand the process.”

CCP attorneys are often asked by real estate offices to present at meetings to educate realtors about changes in law, and Prince and Chatt are active in trade associations, speaking and writing articles about specific areas within real estate law such as condominium and homeowner associations. “I think we’re kind of known that way, and we try to get out there as much as we can because of our mix of practice,” Chatt says. “We aren’t afraid of the more complex transactions. Some practitioners just want easy transactions and want to get the contract done and just move on.” Because of its association experience, CCP can find the potential thorns in transactions and help clients avoid problems that might emerge down the line. “We can look at some of the more unique transactions and tell clients with confidence that we can handle them,” says Chatt. “We can advise clients they should ask for something they wouldn’t normally ask for. Chatt says CCP is not the cheapest option, but tough choices are often thrown back to the client and they are asked to make choices based on very limited information. “I can’t tell you how many times Marc Cervantes asks me to review something because he’s worried it could result in litigation,” he says. “Sometimes getting more than one attorney working on your file, depending on the need, is really beneficial.” The Burr Ridge office of Cervantes Chatt & Prince is located at 100 Tower Drive, Suite 120, 630-326-4930, ccpchicago.com.
