JANIS MVK

is a firstgeneration, Filipino-American with a rich Filipino heritage. Her father was the son of a police officer, her mother was the daughter of the mayor, and her ancestor, Jose Rizal, is the national hero of the Philippines.

Janis was born in Chicago and grew up in the Western Suburbs. She spent five days a week in Hinsdale training in professional dance at Hinsdale Dance Academy, under Yvonne Brown Collodi (not affiliated with the current HDA). Through the studio’s Chestnut Street Dancers, Janis and other company members traveled to London and Paris to train and perform. Her childhood summers were spent at a family a cabin in the country where Janis and her sister swam, attended corn festivals, and roasted marshmallows around campfires.

Janis modeled professionally from her early teenage years through her mid-20s—but can still be spotted on the runway occasionally.

Today, Janis is a professional journalist and the founder of a content creation and marketing agency.

She has carved out an illustrious career that spans across different channels, from producing a healthfocused radio talk show to spearheading marketing and sales initiatives for a prestigious international luxury Italian fashion house. Janis works with area businesses including Sweet William, where she leads marketing efforts and manages social media. She says, “Through Sweet William’s involvement, I support Scoreboard Charities where I have the privilege to assist in producing fashion shows for a good cause—most recently, Scoreboard’s Uncorked event. I also assisted in producing Sweet William’s 35th-anniversary celebration where we shut down a street to turn it into a runway!”

When she’s not writing, she’s Supermom juggling the joys and challenges of raising her two little ones, Ophelia and Matilda. “It’s just my daughters and I living a very girly life. We try to frequent local restaurants and shops regularly. My daughter, Matilda, is with Premier Martial Arts in Gateway Square where we have built an amazing group of local friends; and my other daughter Ophelia makes jewelry and has had the opportunity to sell it at Kelsey Resale. We regularly visit Oak Brook Park District’s splash pad and pool.”

Do you have a mantra? My mantra changes depending on what stage of life I’m in or how I’m feeling, but recently, one quote really resonated with me. “The girl became a soldier, the soldier became a leader, and the leader became a legend.” This may or may not have come from Disney’s live-action Mulan movie that I recently re-watched with my daughters! It spoke to me that some of life’s plans can make you tough, but what you make of it shows your true strength and character. On your reading stack? I couldn’t put any of Colleen Hoover’s books down—Verity being my favorite. But after I finish up The Lost Girls of Willowbrook, by Ellen Marie Wiseman, A Court of Thorns and Roses, by Sarah J. Maas is up next. I like a little bit of thriller and a little bit of romance. What organizations do you support? I support and advocate for women-owned, local businesses. It’s so empowering to get women together and see the incredible impact we can make. In addition, I wanted to equip myself to support my kids, my family, and my friends in their times of emotional and mental distress, so I became a trained volunteer crisis counselor for Crisis Text Line. It’s amazing how a little bit of empathy can go a long way. I also support Scoreboard Charities. I have family and friends who have been affected by cancer, and if there is any way people can come together to fight against this disease is a cause

that’s close to my heart. What’s your signature entertaining style? I love to laugh and there’s nothing better than getting family and friends together for good times, storytelling, and some serious bonding. I love creating a great food spread, setting the mood with decor and scents, and dressing up for the occasion! Don’t count on me to be cooking in the kitchen though. I’m known to cater from somewhere local. But I’ll have the wine and bubbles ready! Any daily rituals that make you feel centered? I make it a priority to meditate in the morning before the kids get up, taking deep breaths while reciting 11 mantras to get me through the day. When I look back and account for all that I’m grateful for, I realize what I’ve manifested through meditation. Music you love? Right now, it’s whatever my kids are listening to. That’s Olivia Rodrigo, Sabrina Carpenter, and Billie Eilish. But on early Sunday mornings, my playlist is all over the place—from 80s freestyle and punk to 90s R&B and 2000s hits, and The National and even French singer Édith Piaf. Favorite autumn traditions? Until the kids won’t allow me to take them, we go to a pumpkin patch with the family for some rides, games, and corn mazes. We come home with a wagon full of pumpkins to paint and carve, along with apple cider donuts to eat!

WHEN IN TOWN WHEN IN THE COUNTRY

What’s your go-to outfit? My go-to outfits are mostly quiet luxury with a touch of vintage. For daytime, I’m usually in jeans and a collared button-down, paired with pointed-toe shoes or elevated sneakers. I love finishing the look with a blazer, scarf, and some jewelry for that classic yet modern vibe. For evenings out, I’m not big on prints, so you’ll usually find me in black or solid colors for a sleek, monochromatic look. I always keep it simple but give it an edge—just like my personality! Is there anything you can’t leave the house without? I can’t leave the house without my cuticle oil, Byredo’s Hair Perfume—particularly the Rose of No Man’s Land scent, and my readers from Glimpse! I can’t see the menus anymore without my readers and a flashlight! Where do they know you by name? This might say too much about me, but I’m known by name at Sweet William, Virgil Catherine Gallery, and Kelsey Resale in Hinsdale. They also know me at The Rooftop Restaurant at RH, Breitling, and Chanel beauty store in Oak Brook. Do you have a favorite memory of living in the area? One of my favorite memories growing up in Hinsdale was spending Saturdays at the dance studio. My friends and I would walk to Kramer Foods between rehearsals, grab snacks, and eat them in the studio’s parking lot laughing and dancing the whole way through. It was such a great time, and those childhood friendships have stuck with us into adulthood. I love that most of us are still in the area and stay connected, too. Favorite festival or special event? I love going to Virgil Catherine Gallery’s artist receptions. Meeting the artists behind the art and seeing the community come together in the name of art always inspires me.

How do you approach city dressing? Nothing is ever too much! I believe in dressing up—when you look good, you feel good and if you’re comfortable and confident, nothing is ever over the top. And honestly, I’d rather be overdressed than underdressed any day! What’s in your bag? My bag ends up being my kids’ trash can, so I try not to carry one! But when I do, I keep it simple with my phone, keys, wallet, lip gloss, and readers! View that never gets old? The view of the skyline from Maggie Daley Park never ceases to amaze me. Even in the chaos of #momlife when I take the kids there, just looking at the skyline feels so peaceful. It’s wild to me how serene that park is set against a city backdrop. Best quick bite or hidden gem? My favorite city spots are all over the West Loop and Gold Coast. I’m all about Cecconi’s at Soho House, Sunda in Fulton Market, RL, NoMi, and Le Colonial. The food’s always top-notch, and each place has its own vibe that makes dining a total experience—full of things to see and talk about! Do you have a favorite museum? The Museum of Contemporary Art and the Art Institute of Chicago are both incredible, plus having these gems right in the city just adds to its rich cultural vibe. But Chicago’s architecture is amazing too—the whole city feels like a museum! What is your favorite movie filmed or set in Chicago? “This is my one chance at happiness. I have to be ruthless!”—Julianne Porter. How can you not love My Best Friend’s Wedding?

Legal Separation vs. Divorce in Illinois

Key Differences and Considerations

Although both Divorce and Legal Separation are governed by the Illinois Marriage and Dissolution of Marriage Act, they are not the same. In Illinois, couples facing marital difficulties have the option of pursuing either a legal separation or a divorce. While both processes involve a formal legal proceeding, they serve different purposes and have distinct legal implications. Understanding these differences can help couples make informed decisions about the best course of action for their specific circumstances.

Legal Separation allows couples to live apart and obtain enforceable court orders that control their interactions regarding child custody, child support, spousal maintenance, and the division of property without formally ending the marriage. The court can issue orders similar to those in a divorce proceeding, but the marriage itself remains legally intact.

BENEFITS OF LEGAL SEPARATION:

» Religious Beliefs: For couples whose religious beliefs prohibit divorce, legal separation provides an alternative that allows them to live apart without violating their faith.

» Health Insurance: Legal separation allows spouses to remain on each other’s health insurance plans, which can be a significant financial consideration.

» Reconciliation: Couples who are uncertain about ending their marriage may choose legal separation to allow them to step back and reconsider their marriage without ending it.

DIVORCE:

AN OVERVIEW

Divorce, also known as dissolution of marriage, allows couples to legally end their marriage and enter final orders that resolve child custody, child support, spousal maintenance and the division of property. Divorce allows both parties to remarry.

In both legal situations, the court makes determinations based on the best interests of the children, the statutory factors as they relate to support and principles of equitable property distribution.

BENEFITS OF DIVORCE:

» Finality: Divorce provides a final legal resolution, allowing both parties to move on and possibly remarry.

» Financial Independence: Divorce legally separates financial responsibilities, allowing each party to manage their assets and debts independently.

» Closure: For many, divorce offers emotional closure and the ability to start anew without legal ties to their former spouse.

KEY DIFFERENCES BETWEEN LEGAL SEPARATION AND DIVORCE

» Marital Status: The most significant difference is that legal separation does not end the marriage, whereas divorce does. Legally separated spouses remain married and cannot remarry, while divorced individuals are free to remarry.

» Property and Debt Division: In both legal separation and divorce, the court can divide marital property and debts. However, in a legal separation, the division is not necessarily final. If the couple later decides to divorce, the court may revisit the property division.

With its new service center in Naperville, Napleton Westmont Porsche continues its reputation as the premier Porsche dealer in the Western Suburbs.

THE DRIVE

Too much work and not enough space. That was the challenge for Napleton Westmont Porsche before it built its soon-to-open Porsche service center in Naperville. It’s a good problem to have.

“It’s not a retail center as far as they don’t have sales, but it will provide our customers a different option to get their car serviced closer to where they live,” says Jeff Witham, General Manager at Napleton Westmont Porsche.

Witham has been with Napleton for 26 years and says the Westmont showroom was redesigned and expanded in 2018 and along with the new service center will build on the company’s reputation for providing top service in the region.

“At Westmont we have 17 certified technicians, offer courtesy vehicles, and free pickup and delivery,” he says. “We’re starting with four techs in Naperville, but the facility is big, so we’ll be adding more.”

With the Porsche brand being so unique, Witham says dealerships must go over and above to meet buyer and customer expectations. There is also a new generation of buyers who might want a little extra.

“A Porsche is a want, not a need. You don’t need a Porsche. The big thing that we emphasize now is that a younger generation is coming up who has money, including more women, and they see it as a lifestyle,” Witham says, “We don’t build many cars. There are only 200 Porsche dealers in the United States, so it’s very limited.”

Witham says Porsche’s motto is to build one car less than the market demands. Not everybody can have a Porsche, and Porsche drivers want to feel like they’re driving an exclusive brand. Porsche will sell between 70,000 and 75,000 cars this year in the United States. Selling an exclusive brand requires providing an exclusive experience.

“People are looking to be catered to. We are making the process simple,” says Witham. “Come in, drop your car off, grab a courtesy vehicle, and follow the process to get the car back from us with quick, efficient, and excellent service. To top it off, we hand wash every car. We don’t use a car wash.”

Witham says he’s hiring a new customer experience manager who will introduce amenities such as gift bags in cars after they’ve been serviced. It’s also important to keep customers informed.

“We want to make sure they are always up to date on what’s going on with their car. We send videos now, which is different from previous generations,” he says. “The newer generation wants to see why they need to spend $500 for an oil change. Well, it’s not just an oil change. There are other things we check. We charge a premium because it’s a premium car but you’re going to get a premium experience.”

Another new addition to Napleton Westmont Porsche this year, and to all Porsche dealers, is the electric Macan, Porsche’s first allelectric SUV. It’s a sign of the car company’s ongoing commitment to advanced technology.

“Some buyers like all the newer technology. We have the new Macan Electric coming out soon,” Witham says. “It’s electric and the range is great. They really listen to the consumer about what they want, and I think it will be a home run for us.”

The Wellness House Ball Unites the Community Once Again to Raise Funds for Free Cancer Support

Hinsdale resident Pamela Pontikis can’t attend the Wellness House Ball without thinking about her late father.

“My father passed away from lung cancer,” Pamela tells Hinsdale Living quietly. “It will be five years this year since we lost him, right around the time of the ball.”

It was his untimely passing that ultimately brought Pamela and her family to seek out the priceless services and support of Wellness House, which has provided free cancer support to nearly 50,000 people throughout Chicagoland since its inception 34 years ago.

“During the time of my father’s illness, my mom called Wellness House to see if she could volunteer with them,” she remembers. “I think it was the first time somebody listened to her side of the story, and it was the first time that, as the caretaker of the person going through cancer, she felt seen and heard and really cared for.”

It was this vitally important interaction that also drove Pamela and her husband George Pontikis to take on the role of Co-Chairs at this year’s Wellness House Ball, set to take place on Saturday, October 19 at The Old Post Office in Chicago. Without a doubt, the Wellness House Ball serves as one of the year’s most anticipated, most elegant, and most moving events on Hinsdale’s social calendar.

“Cancer is not just about the disease and it’s not just about the person going through the disease, it’s also about the entire family that is going through it,” she stresses. “Wellness House became such an important place for us that we knew we wanted to help in any way we could.”

It’s a similar story for fellow Wellness House Ball CoChairs Katie and Michael Isadore, who, too, have dealt with watching family members struggle through the physical and emotional pain that comes with a cancer diagnosis.

“My husband and I can’t think of a better cause to put our time, energy and financial backing and support to,” says Katie of the organization that now offers programs not only online and at the Main location in Hinsdale, but also at more than 23 partner locations throughout Chicagoland including UIHealth/Mile Square in Chicago, RUSH MD Anderson Cancer Center and Loyola’s Cardinal Bernardin Cancer Center. “We were really touched by their mission, which is why we wanted to get involved.”

This involvement has resulted in some exciting changes to this year’s ball, including its location. “The fact that it’s at a different venue every year keeps it fresh and exciting,” remarks Pamela, whose work has been further supported by an array of event sponsors including Burke Beverage, ReDesign, Corporate Fleet Services, Curi RMB Capital, The Hallstar Company, Holiday Transport Group/Fire Science Techniques, Ed Napleton Automotive Group, Nvidia

and William Blair. “The last few years, the location has been spectacular, and we want to make sure the Wellness House Ball continues with its typical grandeur, but also put a fresh perspective on it.”

There is also an innovative theme for the night.

“We wanted a theme that was going to resonate back to the mission of Wellness House,” says Katie, who has essentially taken on the role of ‘décor expert.”. “With the theme ’Hope Grows,’ we wanted to keep with natural elements like trees and seasons of life and journeys. And while some seasons might be difficult, spring is on the way and there’s a light at the end of the tunnel for these individuals going through and battling cancer.”

golds,” adds Pamela. “The idea of The Old Post Office having been renovated and reimagined and brought back to life goes with our theme that life is cyclical and everything is about growth and growing.”

And while both Pamela and Katie say they have taken on a huge responsibility when it comes to the Wellness House Ball, they stress that they couldn’t do this alone.

“Seeing everyone rally together for such an important cause makes everything worth it,” says Pamela. “We’ve formed an amazing Committee that has ties into many different ecosystems in the Chicagoland area. It’s been great to see a competitive spirit of trying to match what the co-chairs and committee raised last year with this year’s sponsorships and support.”

“We live in an amazing community that always rallies around incredible causes,” adds Katie. “It’s going to be a fantastic evening.”

Scoreboard Charities will hold its 8th annual Uncorked fundraiser for cancer research on November 15 at Ruth Lake Country Club.

There are many motivations that contribute to our charitable instincts. A childhood obsession that develops into a lifelong passion; the death of a friend or family member and meeting the needs of their loved ones; the desire to contribute to research and other efforts to eradicate diseases that cause debilitation or death. All are reasons many people are willing to spend their time and resources to make the world a little better place.

Thirty years ago, in November 1994, Rick Heinz’s mother passed away from non-smoking lung cancer. Her experience inspired him to start Scoreboard Charities 10 years ago to raise funds for cancer research, mostly through auctioning off his significant sports memorabilia collection. Not long after, Heinz, a CPA with Heinz and Associates in Clarendon Hills, and Scoreboard Charities launched an event, Uncorked, to boost fundraising efforts.

The 8th annual edition of the Uncorked fundraiser, Pull a Cork for Cancer, will be held on November 15 at Ruth Lake Country Club. Guests will be treated to an evening of sipping, shopping, entertainment by the Keithen Banks Band, and fashion shows by Sweet William of Hinsdale.

When he was growing up, Henz’s parents instilled in him the value of helping out the less fortunate, another reason he started Scoreboard Charities. The goal for the funds raised is to support critical cancer research and opportunities for kids with cancer to participate in camp.

To date Scoreboard has raised $1.7 million for two charities, Northwestern Medicine Robert H. Lurie Comprehensive Cancer Center and Camp One Step, which is run by Children’s Oncology Services, Inc. The goal for this year is to push the total over $2 million.

“We fund cancer research and studies and also Camp One Step for kids who have cancer,” Heinz says. “It’s several weeks of camp each year near Lake Geneva and also smaller camps and virtual camps in the city.

Over the years Uncorked has grown into a community event thanks in part to a close partnership with the Clarendon Hills Fire Department.

“The Fire Department has been friends of ours and friends of the event for years, says Heinz. “It’s a very small group of our committee that has worked hard over the years to put these events on and we’re confident we’ll hit our $300,000 goal this year.”

After a decade of dedicating his time (and sports memorabilia collection) to Scoreboard Charities, Heinz says it’s still his mother and being up close watching her battle with cancer that keeps him motivated.

“I’ve worn my mom’s cross since the day she died. I was 38 when she passed and I think at this point everyone knows someone who has had or has died of cancer,” he says. “Scoreboard Charities doesn’t cure all forms of cancer, but we make people’s lives better. My guess if my mom had that same kind of cancer today, she would’ve had another 10 years, and I missed those ten years.”

In honoring his mother, Heinz is also honoring her legacy of volunteering and giving back to the community.

“My mom was involved in every possible charity, church, and women’s society and I probably took off on that,” he says.

Tickets to the Uncorked event are $200 and entries for a raffle, Key to the Closet, are $100 with the winner receiving a $10,000 wardrobe makeover by Kristi Smith of Sweet William, Hinsdale. In addition to Sweet William, other sponsors include Savway Fine Wine & Spirits. Those who can’t attend but would like to support Scoreboard Charities can make a donation or purchase items from the organization’s eBay store.

Heinz says this year’s event is adding a sophisticated touch. In addition to the traditional fare, a tasting menu with dishes created by chefs from the Ruth Lake Country Club and with special wine pairings from Savway will be featured. It’s all part of Heinz’s vision to do good by honoring his mother.

“It is a big deal for us to hit $2 million. When my family came here in 1978, I never guessed a small-town kid from Indiana would be doing this,” Heinz says. “It’s been fun and exciting at the same time.”

Use team brainpower to fight homelessness

Sometimes the heroes among us move in silence. The mostly volunteer-run organization Love INC is an excellent example. Established 40 years ago, this group prevents homelessness by assisting those who are experiencing a temporary crisis. This might be an unexpected medical expense, a higher-than-expected utility bill, or a necessary car repair.

“A family can be doing fine, keeping everything together, but then a cost comes in that throws off their budget and puts them in a precarious position. It’s a bump in the road, not the end of the road” explains Executive Director Becky Bewley Rush.

That process begins with answering or returning every call received. “We often hear that we’re the only agency that answered. That’s where it all begins, by listening,” says longtime volunteer and board member Pat Bell-Daniels. She adds, “We make a connection with each person.” Oftentimes having someone listen with compassion helps release the stress and tension they’re feeling. Then it’s time to find help. Love INC funds the needs as possible and turns to outside partners when necessary.

Call center leader Lynda Wilson has cultivated one of the most impressive networks ever established. “We care connected to hundreds of agencies across DuPage County and beyond. That network is so valuable as we help people navigate what is often their first time needing assistance,” Wilson says, emphasizing , “We keep families together, safe, and moving forward.” A caller will receive connections to six resources and two food pantries to comprehensively meet their needs beyond the unexpected expense.

Love INC volunteers check in with clients several weeks after their initial need was raised. “We want to help them protect their financial future through balance,” Bell-Daniels says. This approach has helped the organization achieve great results in preventing homelessness. By providing counseling, coaching, and connections, the organization achieves an impressive rate of keeping people housed. Last year 100% of clients remained in their homes, turning setbacks into success with the help of Love INC volunteers.

While the work can be heavy, the rewards are extraordinary, with dozens of “Love Stories” like the gentleman who was referred to The People’s Resource Center and now teaches art classes there. In another case young mother of four lost income when her company ending a commission incentive. She used her savings to enter a training program that would boost her earnings over time but left her short on rent in the short term. Love INC assisted with $600 of lost wages to keep her current on rent. She is now earning more and doing well.

To keep the love stories flowing, the tightly knit group of volunteers and board members find fun ways to fundraise. On October 24, the community is invited to join in their second annual Trivia Night at The Community House. Emcee Go 4 It Entertainment will lead 26 teams through a lively and competitive evening of

brain twisting questions. Guests will enjoy dinner, dessert, a raffle, and drinks. Costumes are encouraged and there will be prizes awarded for the best efforts. Can’t make it? ICHELLE MORENO was 5 years old when she began her construction career, building tree houses in her mother’s backyard. “To others it might’ve looked like pieces of wood from one branch to another but in my mind, I was building houses,” says Moreno, who now owns A XIOM Contractors LLC and is the founder of the Latino Contractors Association. “As a young adult, I was told I had to settle down and do ‘women stuff’ like getting married, having kids, and take care of a husband. But I always wanted to be more and do more so I rebelled against my Latin culture where women are limited to only do ‘women stuff’.” In 2012, she did two big things—became a business owner in the male dominated industry of construction, as well as the single mother of two boys. “It’s ironic because in my culture, if you are a single mom you are considered a failure,” Moreno adds. “But that’s how my success story began.” With just $6,000, she started her first construction company as well as an electrical company, ultimately selling both to establish AXIOM Contractors in 2018. In 2022, she married Emmanuel García, a CPA who has taken on the role of CFO for the family businesses and together, they invest in real estate and their community by helping contractors establish systems and structures, and obtain trainings they need to succeed.

Most rewarding part of what you do? Building homes and helping construction businesses is the most rewarding feeling in the world for me!

How should women support other women? I see women supporting each other though networks, collaboration, and working with eachother.

How do you inspire others? By sharing my story without embellishments and my experience on how I started from nothing. People can relate when I get invited to speak at events and on podcasts, and by reading my recent book, Latinas in Real Estate II.

Best piece of advice for anyone starting out? This applies to all industries, however when entering the veterinary industry in particular, it is really important not to let the small things you can’t control affect you. Don’t take these little things home with you every night. Sadly, it may be a little-known fact, but both burnout and even suicide are major issues in this industry. Learning to focus on the good and letting go of the small things that you should, is a very important and challenging skill to hone.

What did you dream of doing when you were younger? My childhood dream was to become a veterinarian, and I am so blessed that with hard work, determination, and support, I was able to achieve that dream!

It takes a strong team to make an animal hospital great with each member utilizing their strengths to support critical activities. But now, I feel like the stakes are even greater as I support not only my own family but also the families of my 30 employees. So, it always feels like a risk.

Be patient and persistent. Success doesn’t happen overnight—it requires years of hard work and perseverance. I began my business from a tiny Chicago apartment, working late nights and weekends for years. It’s still a lot of work but watching the business grow has been both exciting and rewarding.

Believing that a visit to the dentist should be both fun and empowering, she recruited a team of like-minded experts to deliver the best and most compassionate care possible to the families they serve—fostering lifelong oral health goals. A year after the practice opened, Dr. Albert met and became a mentor to MAGGIE RIZZO, DMD, who joined Brush as a pediatric dentist in 2019, recently became a partner at the new location in Downers Grove, and is expecting her third baby. With a commitment to offering young patients and their parents worldclass dental service and care, Dr. Albert and her expanding practice remains a top choice for families.

Most rewarding part of what you do?

Dr. Albert: Brush Pediatric Dentistry has helped in emergencies and watched kids grow up and go off to college. We’ve mentored multiple young women down a path from high school or college into a career in pediatric dentistry. How should women support other women?

Dr. Rizzo: I wouldn’t be able to do what I do and am supported every day by our amazing all-women team!

After years spent building chic cocktail lounges, burger spots and small intimate American bistros, Bourbon Belly Hospitality has gone all in on Proof No. 5 in Wheaton, a boundary-pushing restaurant that boasts one of the most stunning new dining rooms in the western suburbs.

Ican’t remember the last time a server—working in a packed suburban restaurant, on a Saturday night, in the middle of frenzied dinner rush—asked me if I’d like to spend a little more quality time with my cocktail before discussing my food order. Patience, in the restaurant world, is usually a financial liability. The fewer the fewer tables you turn, the fewer credit cards you can swipe.

Not so at Proof No. 5 in Wheaton, where our server seemed content to let us sip our aperitifs the way the Italians do—slowly, languidly, theatrically.

It’s shrewd strategy because Proof No. 5 is run by Bourbon Belly Hospitality, which operates two stellar west suburban cocktail lounges: Barrel + Rye in Geneva and Maize + Mash in Glen Ellyn.

Both have become meccas for single-barrel bourbon lovers. Proof No. 5 pays homage to the glories of the brown stuff in its own way—its 1.5-ounce bourbon, rye and Japanese whiskey pours are stellar—but this is the most eclectic and adventurous cocktail list Bourbon Belly has ever assembled.

Proof No. 5’s bar team has raided the company’s entire liquor cabinet, spiking vodka cocktails with shishito syrups, pouring exotic saffron and walnut liquors and whipping up a creative adaptation of the classic Cuban cocktail the bishop using rum, lime juice and a clever Cabernet reduction.

Management must also realize that the longer guests nest in this stunningly appointed dining room—almost Caravaggio-like in the way it throws long shadow and creates pockets of golden light—the

more likely they will just keep ordering food from a menu that’s every bit as daring and unpredictably creative as its tipples.

At first glance, the food offerings look almost too eclectic for their own good, as if the kitchen were auditioning to open up the group’s first international food hall and settled for a single dining room menu. During our visit, there were bulgogi buns topped with gochujang aioli, Philly cheesesteak empanadas made with a homemade “CheezWiz” and a flatbread topped with goat cheese, apricot-pepper jelly and speck.

Bourbon Belly Culinary Director Eric Olson, who oversees the menu with executive sous chef Stuart McLuckie, says the definition of American cooking is so diverse and all-encompassing that pretty much everything is fair game. As a result, many of Proof No. 5’s dishes were born from encouraging his kitchen staff to throw out ideas and then working collectively to gussy them up. “We wanted,” he says, “to really push our creativity.”

They’ve done just that. Sometimes, the addition of the simplest accent flavors can have a profound effect on a familiar dish. I’m a big fan, for instance, of sumac berries, which Proof No. 5 grinds down into a fine powder—imagine an earthy lemonade flavor—and then sprinkles this magical fairy dust on Mediterranean chicken skewers set atop couscous and feta.

I’m also a sucker for exotic compound butters paired with a hunky slice of really good bread. Olson’s team serves its focaccia with a brilliant mâitre d’ butter made with lemon, shallots, herbs and a hint of a white wine reduction. If the Greeks ever decided to experiment with flavored butters, it would end up tasting just like this.

No. 5 represents Bourbon Belly’s first attempt at running what I’d call a casual finedining restaurant. And it absolutely looks the part. You have to love what the team has done to the place. This is my personal definition of tall, dark and handsome. Sprawling SOHO loft ceilings. Lots of dark grays and black tones. Thin shafts of light stream in from skylights, back windows and the retractable doors in the front of the restaurant. The result is a space that feel almost spectral yet undeniably romantic—a special occasion restaurant with affordable date-night prices.

Given how many different genres and cultures Proof No. 5 is playing with, the kitchen’s hit rate is exceptionally high. You can’t help looking at the dining room’s showpiece art installations—a clever mashup of modern portraits with various vegetables and flowers concealing their faces—and not sense that many of Olson’s vibrant platings were designed to pair with those colorfully brushstrokes on the walls. I know some chefs claim that white walls make their food pop, but I’ve always believed that darkness imbues colorful dishes with a beautiful otherworldly luminescence.

Proof No. 5’s gnocchi, for instance, reads like Olson wreathed his dumplings with everything he had left in his walk-in fridge. There are almost too many elements to keep

Cocktails

In addition to 1.5 ounce pours of some smart bourbon, rye, scotch and Japanese whisky selections, you can’t leave Proof No. 5 without sipping one of their signature cocktails.

Japanese Old Fashioned: When I think of Old Fashioneds, I think of Wisconsin, supper clubs and warm fall evenings spent by a crackling fire. This is not that type of Old Fashioned. It’s a surprisingly light sipper made with Suntory Toki whisky, shishito syrup and a mix of curry and orange bitters. It’s clear bright and ultra-smooth and pairs brilliantly with Proof No. 5’s Asian-inspired offerings.

Lilikoi Margarita: It’s fruity and spicy and sweet, like smelling salts for your palate before the food arrives. The base spirit is tequila, but it has a Hawaiian soul, thanks to hints of passion fruit, lime and a dash of orange Combier liquor, arguable the world’s first triple sec.

track of: the gnocchi, Romanesco florets, an alabaster colored fenugreek cream, za’atar fried chickpeas and three different carrot preparations. It’s a stunning edible geodesic dome of bright colors and jagged shapes.

The brilliance of the dish is that it tastes like a deconstructed cream of cream of potato soup. The fenugreek cream acts as the base flavor, the gnocchi act as the starch and the remaining elements provide lilts of sweetness and spice. Every scoop seems to yield a different combination of flavors.

If you’re looking for a starter to pair with one of Proof No. 5’s spicier cocktails—as we did—the kitchen’s tuna crudo comes stacked with plenty of Latin American goodies: dimples of chimichurri cream, pickled Fresno chiles, candied orange peel, cilantro and tajin, the Mexican table’s chile-lime seasoning that’s sprinkled on everything from nuts and fruit to the rims of margarita glasses.

If there’s a throughline to the menu, it’s that all the creative little flourishes that brighten the cocktail list seem to be extended to the menu. The bar and kitchen are always playing chicken and egg, with one team launching a new treat and the other trying to create an equally unique pairing.

We were particularly impressed with our seafood entrees. Rather than pairing a plank of salmon with boring old mashed potatoes, the kitchen turned to the Mediterranean, whipping up a skordalia— a Greek garlic dip that’s so thick and creamy here it has the mouthfeel of mashed spuds—and dressing up its salmon with Aleppo oil and a wonderful artichoke and corn relish.

The house grouper is served with polka dots of sauce Choron (a tomatoey Bearnaise), andouille dirty rice and lemon balm leaves. You might think that adding a Southern-style chow-chow to all this would be too much, but the acidity it brings to the dish

counterbalances the dish’s richness. The result is like enjoying a high-end Southern fish fry if it were prepared by a classically trained French chef. Who could argue with that upgrade? Suffice to say: It all works. I could drink—and eat here—all night. And on our most recent visit, we almost did. The time flew by. And so did more orders, more drinks. And sitting there, in the dark with food and cocktails that literally and figuratively glowed in the dark, we were in no rush to leave, often glancing back at a neon sign on the far wall that red, “You’re like really pretty.” Looking back at our Proof No. 5 experience, I’d say that pretty much sums things up perfectly.

Upon arrival, I was immediately struck by the hotel’s facade, a vision in white brick accented with black wrought-iron railings and balconies. It felt more akin to a manor house in the English countryside than a hotel in the heart of the desert. Stepping into the sprawling lobby, I was greeted by a sense of timeless grandeur, with gray-and-white marble checkerboard tiles, antiqued plaster ceilings, and dark wood-paneled walls evoking Old World charm.

Despite its classical influences, the Global Ambassador exudes a modern flair, evident in playful touches like the glam mirror wall adorned with black-and-white photos in Le Market, the hotel’s casual breakfast and lunch spot. The ambiance is further enhanced by the old-school white jumpsuits worn by the servers at restaurant Le Âme, adding a touch of contemporary chic to the dining experience.

Throughout my stay, I couldn’t help but notice the palpable buzz of activity in the hotel. Mornings saw athleisure-clad locals stopping in for oat milk lattes and green juices, while the lobby hummed with the energy of casual business meetings and friendly gatherings. On weekend nights, the lobby bar came alive with guests and locals alike, drawn by the promise of cocktails and live music.

Behind the hotel’s seamless blend of old-world elegance and modern sensibilities lies a labor of love from its developers and co-owners, Brian Frakes and Sam Fox. Their meticulous attention to detail was evident in every aspect of the property, from its elegant guest rooms to its world-class dining venues.

Speaking of guest rooms, the accommodations at the Global Ambassador were nothing short of exquisite. My spacious Camelback Suite offered stunning views of the iconic mountain, along with a carefully curated selection of amenities. The in-room bar, with its gold and green wallpaper and crystal cocktail glasses, felt like a nod to a bygone era of luxury, while the boldly designed bathroom offered a refreshing departure from minimalist trends.

Of course, no visit to the Global Ambassador would be complete without indulging in its culinary offerings. With five distinct dining venues overseen by culinary mastermind Sam Fox, the hotel is a gastronomic paradise. From casual breakfasts at Le Market to rooftop dinners at Théa, each meal is a celebration of fresh flavors and innovative cuisine.

Summer In Paris

Oh la la, what a day raising more than $12,000 for Els for Autism, the organization founded by Ernie Els with a vision of a world filled with endless possibilities for individuals with autism spectrum disorder and their families. The Ruth Lake Women’s Association President Sue Sprovieri and event chair Jayme Devick created an entire day of fun. Members and guests understood the assignment, dressing to theme and decorating carts to participate in a Champagne welcome, light lunch, 18 holes of golf, and a Parisian-themed dinner. There was also a wonderful raffle benefiting ELS for Autism with generous sponsors including Neiman Marcus, Toni’s Patisserie, Kohler Spa, Capital Grill, and the Wine Cellar donating themed items. ruthlakecc.org
