If it’s an accomplishment for a company to mark 50 years in business, it’s a singular achievement for a family-run travel company. Royal Travel & Tours of Winnetka is doing just that. Founded by Larry and Kay Berke in 1972, Royal Travel initially focused on the airline industry and ticketing flights for its customers. But as the industry changed and airlines slashed commissions for travel agents, the company evolved, and for the past decade or more has provided custom, luxury travel experiences for couples and families on the North Shore. “My mom had a lot of international experiences. She had lived in Mexico and Argentina, and she was fluent in Spanish, so that was the genesis of starting a travel agency,” says Kendra Berke Thornton, who took over running the agency when her parents retired in 2015 after working there a few years. “They started from scratch in 1972, and the business really took off in the ‘80s when they were the largest family-owned agency in Northern Illinois.” It was a fax delivered to the agency in 1994 that would in part shape the company’s future. Delta informed agencies that it was cutting commissions in half, and other airlines quickly followed suit. Thornton, who was a sophomore

studying at Northwestern University at the time, still gets choked up thinking about it. “It was such a blow to travel agencies and the whole valuation of the business was cut in half,” Thornton says. “There have been so many times when agency owners have had to pivot and that was the first big one because they had to introduce ticketing fees, which they had never done before. I tip my hat to my dad so much because he made some great decisions that allowed us to survive and thrive.” As the internet started revolutionizing the industry, making hotels, plane tickets, and other travel essentials easily accessible to consumers, Royal Travel faced a crossroads. It had to adapt. When Thornton moved to the North Shore from downtown Chicago, she began to understand the market and the types of travelers that lived in the area. Her father approached her, thinking he was ready to retire, and was considering selling the business unless she had an interest in getting involved. Thornton brought a new vision to Royal Travel, providing unique travel experiences tailored to the tastes and preferences of couples and families on the North Shore. It remains the company’s specialty to this day. Ironically, Thornton started her career working for the competition, orbitz.com, but she’s perfectly happy now running the family business. “Custom travel is why I decided to get involved with the business in the first place. My whole career before Royal was in public relations, and I worked as part of the team at orbitz.com in the early 2000s when it was being Continued on PG 6

built,” she says. “At the time we all thought online travel really was the future, the be-all end-all.” “It was almost like a light bulb went off, and I remember thinking, ‘Oh my gosh,’ and I felt like everything I'd ever done in my career was leading me to this moment,” Thornton says. “There were people who had the resources and had the appreciation for travel, and they wanted their vacations to be great, but they were strapped for time in terms of planning.” Thornton says a common practice at the time was for people to replicate a trip that some of their friends had taken, having heard the destination and experience was good. But she

saw an opportunity to really tailor the travel experience for families, especially for children, based on their interests. Royal will plan one trip for a family to London and the next trip for a another family will be completely different. “You could see that things were changing in terms of mass-market travel and that is what the foundation of the agency was,” Thornton says. “But travel in general has evolved with the traveler package and the luxury traveler, in particular.” One of the things Thornton enjoys the most is the variety of experiences luxury travelers want, and the sophistication of the market. Over the years, requests—some of which the company is prohibited from fulfilling—include a client who wanted to secure a private jet to get them into a closed country, a request to find a polar bear trek for a client in the Norwegian archipelago of Svalbard, and to find a hotel with a special menu for dogs. “These are successful people. They know how to get information, but what they are really looking for us to do is to help them vet through the information and identify authentic experiences,” says Thornton. “They may not have the connections and that's our business, just putting all the pieces together for them.” Thornton says Royal Travel works with long-time partners that have established track records in the business, which is increasingly important in a travel industry landscape that is constantly changing, especially during the COVID-19 pandemic. I have always loved the earthy flavor and deep red color of beets. Roasted, simply boiled, tucked into salads, pickled or plain, beets are delicious. But of all beet preparations, I like borscht best of all. Borscht originated in the Ukraine, but the popularity of this hearty, beet soup spread across central and eastern Europe before making its way here, resulting in dozens of delicious variations, some vegetarian—others not. Borscht is also versatile—good hot or cold. Chilled with yogurt and chopped radishes mixed in, it blooms a pretty shade of pink. And hot, with lots of cooked vegetables and cubes of beef or smoked sausage, it’s a nourishing feast. Our version is made with oven-prepared, wine-enriched beef stock and meat, plus beets, carrot, onion, dill, and a little wine vinegar—with a dollop of crème fraiche or sour cream on top. We like to serve it with crusty bread and a little smoked sausage..
INGREDIENTS
• 4 lbs. meaty beef neck bones • 2 tsp salt • 2 tsp freshly cracked pepper • 32 ounces unsalted beef broth or unsalted beef stock • 1 cup red wine • 1 tsp vegetable oil • 2 onions • 8 medium-sized beets • 1 small bunch carrots to make 4 cups shredded • Salt and finely-ground pepper to taste • Fresh dill, 3 to 4 sprigs to make 3 Tbsp minced for soup–plus more to garnish) • 3 Tbsp red wine vinegar • 1/2 cup sour cream, labneh, or yogurt to garnish • Crusty bread and sausage to serve with the soup

METHOD MAKE BEEF BASE: Preheat oven to 400 degrees. Rub neck bones with salt and pepper. Roast in oven for about 15 minutes, turning so that all sides are browned. Cover browned bones with beef broth. Add wine. Reduce oven heat to 325 degrees. Simmer for three to four hours until meat is falling off the bones. PREP VEGETABLES: While beef base is
simmering, peel and finely dice onions. In a heavy skillet over low heat, cook onions with 1 tsp oil for about 15 minutes until soft, but
not browned. Peel beets and carrots. Using a food processor or hand grater, grate carrots. Wearing plastic gloves, grate all the beets. Add carrot to onion with 1/4 cup water. Cover skillet and continue to cook until carrots are al dente. Remove from heat.
COOK SOUP: In large soup kettle, just cover grated beets with water. Simmer until beets are cooked through. Stir in carrot and onion mixture. Simmer for 10 more minutes to combine. Remove from heat. Remove beef and bones from oven, strain broth from meat.

Cool beef and bones until you can handle them; remove meat from bones and cut into small pieces, discarding any gristle or fat. Discard bones. If you have time, chill stock overnight and remove any visible fat that solidifies on top. Combine beef stock with cooked beet/carrot/onion mixture. Add beef pieces. Heat soup until gently simmering and all flavors are combined well. Stir in vinegar; add salt and pepper to taste. Add dill just before serving. Serve hot with sour cream, more snipped dill, crusty bread, and sliced smoked sausage. THE NORTH SHORE WEEKEND

PEN & GERRY GLENVIEW’S GERRY LEKAS AUTHORS A BOOK, REALIZING YET ANOTHER GOAL HE’D SET MORE THAN FIVE DECADES AGO. BY BILL MCLEAN ILLUSTRATION BY BARRY BLITT
Gerry Lekas and his wife, Noreen, enter a movie theater in 1982. Night Shift, directed by Ron Howard and starring Michael Keaton, Henry Winkler, and Shelley Long, is about to start. It’s a good bet that only two of the moviegoers—the Lekas couple—know that one of the soundtrack’s songwriters sits in the darkness. None other than Gerry Lekas had written the lyrics to the country-and-western parody “They’re Tearin’ Down Tim Riley’s Bar.” “I had no idea when we’d hear my song in the movie,” recalls Lekas, now 73, a Glenview resident, and a retired schoolteacher since 2011. “In an early scene, the song starts to play, and a character yells, ‘Turn that awful music down!’ My jaw dropped. Then Noreen and I started laughing. “Later,” he adds, “I was able to check that off my list.” Not his bucket list. That wasn’t even a thing in the 1960s, when he devised his list and attended Lane Tech High School in Chicago. Among the other ambitious goals on The Gerry Lekas List: write a play, create a marketable board game, and author a book that he’d be able to spot on a library shelf someday. Check. Check. Check. “I’m just a guy,” says the self-deprecating Lekas, who, at the age of 62, sang and played the guitar, piano, and harmonica for The Rubys on the rock/country/Broadway-esque CD Down in Uptown. “Whatever I’m doing in life, it’s just me, playing a role I had set out to play.” The role of author—his latest role—started out shakily. Lekas, who taught at Jack London Middle School in Wheeling and at Friendship Junior High School in Des Plaines, tried his hand at fiction. One problem: crafting a paragraph took longer than he’d expected. “It took me … forever,” Lekas says. “I was awful.” But he took some simple and sage advice—“Write what you know”—and pivoted smoothly thereafter, needing only six months to complete Where the Tour Buses Don’t Go: Chicago’s Hidden Sites of the Mysterious, Macabre, Ghostly & Glamorous (2020, Black Lyon Publishing, LLC, 222 pages). “What I have tried to do here is to create a self-guided auto tour for you that takes you to the more eclectic Chicago area sites largely unknown (or at least little-

known) to most folks,” Lekas writes in the Introduction. “I am after a more quick-hit, fun read kind of thing here. “In short,” adds the aficionado of all things mysterious and bizarre, “I have attempted to provide kind of a whirlwind guide to the people, places and events comprising many of the darker (and, in the case of the celebrities/movie stars, glammy) aspects of the Chicago area.”

Lekas, a huge fan of the Beatles and Green Bay Packers great Jim Taylor while growing up on Chicago’s Northwest Side, kicks off his work with a “Creepy Sites” chapter, which includes a spine-tingling section devoted to Marion Lambert, the purported “Lonely Ghost of Sheridan Road” (between Westleigh Road and McCormick Drive) in Lake Forest. Lekas also provides details of what allegedly happened inside and outside the allegedly haunted Schweppe Mansion in Lake Forest after the death of Laura Shedd Schweppe in 1937. Lekas’s journey to a teaching career began at Wright Junior College (now Wilbur Wright College) in Chicago, though the 1967 Lane Tech graduate and Army National Guard Soldier had no idea what he wanted to do for a living at the time. He first met his future wife at a party held at Northern Illinois University and decided to enroll at the DeKalb school to study and woo Noreen, presumably in that order. Lekas transferred to Northeastern Illinois University in Chicago after a semester at NIU and double-majored in English and History. Gerry and Noreen got married in 1972 and raised children Elizabeth, 43, and Joe, 40. They’ll celebrate their 50th wedding anniversary in November. “The star I have always set my course by,” Gerry writes of Noreen on his book’s dedication page. Lekas taught for five years at Jack London Middle School before his 17-year tenure of teaching History and Language Arts at Friendship Junior High School. “I liked telling stories in the classroom,” Lekas says. “I know a lot of weird stuff, so I’d throw ‘weird’ at my students; the subject matter usually held their attention. Teaching is an art, not a science. It’s an art of people, specifically an art of reading students, and recognizing what’s best for each student.” A former student who had read Lekas’s book paid Lekas quite a compliment not too long ago, telling him that he writes exactly like he talks. “Hearing that,” Lekas says, “meant a lot to me.” Another former student, this one having caught up with Lekas at a recent Jack London Middle School graduation ceremony, had this to say: “Mr. Lekas, I can’t explain what you gave me, what you did to inspire me in your role as a teacher, but I do know that it was important. Thank you.” Lekas’s next role? That’s uncertain, for now. “There’s nothing crawling around in my head,” Lekas admits. But one aim remains on the original Gerry Lekas List, and Lekas—who briefly envisioned a career as a sponge diver—reveals it on the back of his book.
