RECIPE FOR GOOD MOTHERS TRUST FOUNDATION KICKS OFF ITS ANNUAL SUMMER CAMP CAMPAIGN WITH A VIRTUAL “COOKALONG” FEATURING RESTAURATEUR, JOHN DES ROSIERS. EDITED BY KEMMIE RYAN THE NORTH SHORE WEEKEND

A mother’s love is endless. So, it’s only fitting this Mother’s Day that an organization founded by Lake Forest’s Barbara Monsor—a mother of six, grandmother of eight, volunteer, and philanthropist— would partner with local chef, John des Rosiers, to give back to the children of Lake County. Mothers Trust Foundation, a nonprofit supporting Lake County children and families in need, will host a virtual “cookalong” fundraiser—Recipe for Good—on Sunday, May 16, to support its annual Mother’s Day Summer Camp Campaign. The gift of time together—in the kitchen—makes this virtual event the perfect Continued on PG 14

PRESERVING MEMORIES LAKE FOREST’S KATHY RAFFERTY BEGINS 21ST YEAR OF FINE ART FRAMING. BY MONICA KASS ROGERS THE NORTH SHORE WEEKEND

Kathy Rafferty looks brilliant in a new blue blazer. With the sun streaming into her Lake Forest Frame & Design Studio, the jacket brightens the blue sparkle in her eyes—and just happens to match twin paintings from artist Amy Pais-Richer that are on special exhibit. “I just love Amy’s work,” says Rafferty. Cocking her head, she studies the paintings, heads back to her work area, and quickly returns holding three different sections of fine wood framing. Holding them up to the paintings, Rafferty shows how each treatment lends a different finished feeling to the artwork. “Framing is an art itself,” says Rafferty. “There’s so much to consider—texture, color, the period and style of the work, and then, of course, the personality of the owner, and where they hope to display the piece. Everything can’t go in the living room, you know. Some things you want to wake up to.” So often, says Rafferty, an artist will put a frame on something just because that’s what they have on hand—whethContinued on PG 12

From day one, Cory guided us through our decision making with not only comprehensive market data, but also his personal and extensive knowledge of the community and potential buyers. NEWS From PG 1

er or not it’s right for the piece. In addition, “I get so many people who come in initially asking for just a black frame with a white mat.” But after consideration? “They rarely leave with that,” she smiles. Taking the time to understand clients’ wants and hopes before beginning each framing job is something Rafferty truly enjoys. “I love what I do and I’m very, very fortunate to have the clientele I have,” she says. “People are so interesting and fun. Everybody has a story, and I really enjoy that. Spending time to learn where they are with the artwork—what the piece I am framing means to them, is so important. They’re taking the time to have something framed because the piece matters to them. I want them to be really happy with the finished work, because that’s what makes a house a home, preserves memories, and shows personality.” Rafferty signed the lease for her studio on April 1, 2000, after many years as a substitute teacher at area grade schools, and teaching art at Lake Forest High School. Some of Rafferty’s partners in the studio venture have come and gone, but Kathy, who just celebrated her 80th birthday March 3, kept at it, even throughout the pandemic. “When I think of all that has happened since we started the studio: 9/11, the economic crisis of 2008, and now

the pandemic, who knows what’s coming next?” says Rafferty. “But during times of crisis, preserving memories—which is what we do here, becomes so much more important.” The eldest of longtime Lake Forest alderman Herbert R. Faulk’s eight children, Rafferty grew up in the home her father built on Sheridan Road. She then raised her own family in a house across from West Park where the Lake Forest Day carnival her dad headed was held for decades. “I have so many good memories of Lake Forest Day,” she smiles. “I did the Tilta-Whirl with all of my grandkids, and I can remember how much my kids used to love to just sit on the curb in front of the house and watch all of the goings on.” Actively participating in many roles as she raised her children, Rafferty even became a squadron and group commander (she is now a lieutenant colonel) in the Civil Air Patrol—the civilian auxiliary of the U.S. Air Force, as her children participated in CAP’s cadet programs. But beyond her family, Rafferty’s most enduring passion has been art. “I’ve always had that interest, even as a little girl. I remember the thing I loved most about geography class was coloring in the maps,” she laughs. Rafferty studied art for two years at Northern University, transferring to Southern Illinois University where she

earned her degree. “Then, when we bought our home in Lake Forest in 1966, the population here was about 10,000. Today, it’s nearing 20,000. And so much has changed,” she says. “It’s nice that they have been able to redo the square, preserving some of the historic character. You hate to see things torn down and replaced with buildings that don’t fit.” Rafferty points to a house across the street. “You see that little white house?” she asks. “It’s the last one now, but there used to be houses like that all around the block. There’s something to be said for holding on to things like that. It doesn’t mean you can’t have businesses. But doing that thoughtfully in order to preserve the history and character of Lake Forest actually enhances business.” With that, Rafferty turns to preserve another memory: A return client has brought in an antique tile mosaic for framing. “Now this should be interesting,” Rafferty muses. “…so many possibilities.”

POOP LOOP TEEN ENTREPRENEUR’S LEASH-ACCESSORY MAKES DOG WALKING MORE PLEASANT. BY MONICA KASS ROGERS THE NORTH SHORE WEEKEND

Like many teens home during the pandemic, New Trier Township High School junior Charlie Olesker found himself doing a lot more dog walking this year. Fresh air romps with Rowdy, the cockapoo his family adopted from a rescue agency six years ago, were a welcome break from the confines of on-screen classes. They also fulfilled gym class requirements. But as is always the downside to dog walking, each venture included the unpleasantness of having to carry that little blue bag of doggie doo on the way back. This got Olesker thinking: There’s gotta be a better way to carry the load. His solution? A handy little leash accessory he invented and dubbed the Poop Loop. Made with a length of parachute cord, a zip-tight cord lock to grip the knotted refuse bag, plus a carabiner clip to attach it to the leash--freeing dogwalkers’ hands, the nifty Poop Loop is now Olesker’s first home business. Since launching the venture last November, Olesker’s already sold over 200 units, all crafted in his home workshop. With 5 percent of every sale donated to each customer’s choice of five pet charities, he couldn’t be happier with the Poop Loop’s initial reception. “We are getting social media going and we have an Instagram page now @the.poop.loop, so it’s going pretty well,” he says. The idea to give a percentage of sales to local pet charities came when Olesker was watching an episode of The Profit, “where they were selling colored watches and donating a percentage of the proceeds to a good cause. I really liked

that idea,” he says. “Going through with the 5-55 model, I wanted to pick pet charities, but I wanted each one to be unique and different so that we could help pets in different situations.” Linking the loops to the supported causes via color coding was a fun product evolution: There are green loops for Paws for Patrick, which pairs emotional support animals with young people who have mental health issues.

Red loops are for Red Rover, which helps pets and owners after natural disasters. Blue loops are for Hope for Paws, an animal rescue nonprofit. Yellow loops are for House with a Heart, a sanctuary and home for senior dogs and cats, and camo loops are for PAWS Chicago, which places abandoned dogs and cats in no-kill shelters and facilitates pet adoptions. Getting the Poop Loop ready for market, Olesker went through several prototypes. Helpful inspiration came from watching his mother Rachel, a jewelry designer, create jewelry throughout his younger years. “When I first got the idea for the Poop Loop, I started with leather cording and hot

| SATURDAY APRIL 10 | SUNDAY APRIL 11 2021

glue. It worked, but it didn’t look so great,” Olesker says. “I just kept making prototypes until the loop worked better, looked better and was more durable.”The current version includes a cute, dog paw bead as a little decorative accent. But the Poop Loop is not Olesker’s first invention. “Charlie’s been inventing things since he was little,” Rachel Olesker laughs, pulling out the “T-Shirt Catcher” Olesker made from tape, foam core and a plastic bag that netted him one of the T-shirts tossed to the crowds at a Bulls game when he was very young. Nurturing that inventiveness at New Trier, Olesker took “Intro to Business” as a freshman, and the shark-tank-styled “Start-Up U” as a sophomore. The Shampanimals (shampoo bars in animal shapes) he invented last year did well in pitch competitions, winning the Celebrating High School Innovators (CHSI) competition in October of 2019, and putting him in the top five out of 40 entries at the Midwest Pitch Competition at UW Whitewater in February, 2020. This year, Olesker has the Poop Loop in more contests and the invention is doing well: It’s a finalist in the Illinois Math and Science Academy Power Pitch, a competitor in the Northern Illinois Big Idea Pitch, and is in the Top 50 in CHSI. Looking ahead, Olesker hopes to grow Poop Loop into a larger business, perhaps finding a manufacturer to take on the production as sales grow. “I’d love to see it go nationwide,” he grins. “Right now, it would even be awesome for me to see somebody in Indiana walking their dog with the Poop Loop on the leash.” For more info on the Poop Loop leash accessory, or the pet charities it supports, please visit pooploop.biz. NORTH SHORE FOODIE

ASPARAGUS SALAD WITH MINT AND LEMON Nothing says Spring more brightly than fresh asparagus. And giving the vegetable exotic flair, the flavors in this salad add even more vibrancy. The recipe inspiration is all Yotam Ottolenghi, London’s famed chef, who creates amazing vegetarian flavors. My riff on one of his asparagus creations uses black lemon—dried lemons that you whir into a pungent powder—in a phenomenal dressing with cardamom, mint, jalapeno, and tamarind. Black lemon and the other spices are all easily available in the shops along Devon Avenue, often dubbed Chicago’s Little India.

RECIPE AND PHOTOGRAPHY BY MONICA KASS ROGERS

INGREDIENTS FOR THE DRESSING: • 1-½ cups fresh mint leaves, divided (You will use 1-¼ cups mint in the dressing and ¼ cup in composed salad) • 1 Tbsp rice vinegar • 1 Tbsp honey • 1 Tbsp tamarind puree • 1 anchovy fillet • 1 tsp ground cardamom seeds • 1 black lemon (Smash dried black lemon with mortar and pestle; transfer to a spice grinder and pulse into a powder) • 1 large jalapeno pepper, seeds removed, diced to make three Tbsp. •1 clove fresh garlic

22

METHOD • 1 tsp. Dijon mustard • 1 tsp. fresh lemon zest (You will use half of the fresh lemon for the salad) • Pinch of salt FOR THE ASPARAGUS SALAD: • 1 large bunch fat asparagus, woody bottom portion of stems discarded • 3 Tbsp olive oil, divided • Juice from ½ fresh lemon, divided • 2 tsp diced preserved lemon (optional) • ¼ cup of the reserved mint leaves, chopped • ¼ cup pistachio nuts, roughly chopped • Salt to taste

| SATURDAY APRIL 10 | SUNDAY APRIL 11 2021

GATHER INGREDIENTS FOR DRESSING. Smash the dried black lemon with a mortar and pestle to break it up; transfer to a spice mill and pulse into powder. Place lemon powder along with 1-¼ cups of the mint leaves, vinegar, honey, tamarind puree, anchovy fillet, cardamom, jalapeno, garlic, Dijon and lemon zest into a food processor. Pulse until smooth. Add a bit of salt to taste. Place in a small jar and refrigerate. (Unused dressing will keep for two weeks.) MAKE SALAD. With a mandolin slicer at thinnest setting and using great caution (they are very sharp!) push a spear of asparagus lengthwise through the slicer,

starting at the tip end, to make a long thin strip. Repeat until the entire spear has been sliced into strips. Repeat with all of the asparagus. Using a sharp kitchen scissors, snip strips in half. Add ¼ cup reserved mint leaves. Add diced preserved lemon (if using). Drizzle with one Tbsp. of olive oil and two tsp of lemon juice. Set aside. ASSEMBLE AND SERVE. In a small bowl, whisk ¼ cup of the dressing with remaining 2 Tbsp of olive oil and remaining juice from the ½ fresh lemon. Arrange the asparagus salad on plates, sprinkle with pistachios and dot with drips of the dressing. Serve immediately. THE NORTH SHORE WEEKEND

HOOKED ON ARCHITECTURE ENTHUSIAM FOR DESIGNING AND BUILDING CONTINUES TO HEARTEN NORTH SHORE NATIVE AND FC STUDIO INC CO-FOUNDER JULIE FISHER. BY BILL MCLEAN ILLUSTRATION BY BARRY BLITT

The late Norman Fisher had no problem with his daughter Julie’s plea to wear GUESS jeans in the 1980s. “Go get them,” he’d tell the youngest of his two daughters. “But you’re going to have to pay for them.” Julie Fisher was an Evanston Township High School student and, she says, “a ‘Y’ rat at the local McGaw YMCA,” at the time. Norman’s determined, resourceful daughter served as a lifeguard, a swimming instructor, a Camp Echo counselor, and Rec Room desk worker at McGaw. “I had 9,000 jobs in my youth,” Fisher, 52, recalls. “My father raised me on tough love and lost his New York accent when he moved to Illinois. His best advice to me was, ‘You’ll get anything you want with hard work.’ He’d also tell me, ‘Don’t depend on anyone.’ ” Julie bought those GUESS jeans all right, with every cent coming from one of her paychecks. Her job today? Sturdier than denim and a super fit. Still. Fisher, a principal architect, is a co-founder (with Virginia native Rachel Crowl) of fc STUDIO inc, a multifaceted, Chicago-based architecture and design firm specializing in the hospitality, commercial, and luxury residential sectors with an impressive portfolio that spans North America. It’s known for its architectural prowess and comprehensive services. The women launched the firm in 1999. “They say in architecture in takes 20 years to find your stride,” Fisher says. “I remember waking up one morning, not long after the 20th anniversary of our company, and realizing I had pursued something I love and stuck with it. Designing had always interested me, but building did, too, during my college years. I took courses in construction management. Being interested that field—that was my way of rebelling. “We’re a full-service company. At fc STUDIO we’re not just interior designers. We do everything, from the beginning to the end of each project; we’re holistic. And we respect our clients and become friends with them. Women partnerships in business … they’re amazing. My partner, Rachel, is talented and smart and the greatest human on earth.” Among fc Studio inc’s acclaimed projects is the WNDR Museum in Chicago; Fisher was the lead designer/architect for a new 14,500 square-foot art & science pop-up museum, featuring a Yayoi Kusama Infinity Mirror Room located in the West Loop. Wrigleyville’s Hotel Zachary houses the upscale cocktail bar and restaurant Mordecai, named after former Chicago Cubs pitcher and Hall of Famer Mordecai “Three Finger” Brown. Fisher’s fingerprints—and creativity—are all over that project, too. Fisher and Crowl’s roster of projects also includes the exclusive L.A. eatery The Arthur J. and celebrity chef Art Smith’s Homecomin’ restau-

rant located within Town Center at Disney Springs in Lake Buena Vista, Florida. “We’re excited to take on bigger projects,” Fisher says. “We solve problems, and we have the ability to manage clients and their expectations. We’re good at listening to our clients and communicating effectively. I’m chatty and energetic, just like I was in high school; I’m pretty much the same person now as I was at (ETHS), when I was really into graphic design and printed out detention slips for the school’s administration. But if I were to go back and relive my years in high school, I’d be more confident.” Fisher—a sister of the actor, director, producer, writer, and Academy Award winner Fisher Stevens (born Steven Fisher)—earned a Bachelor of Fine Arts degree at The School of the Art Institute of Chicago and a Master of Architecture degree at the University of Illinois at Chicago. She was a Presentation Team member for Zaha Hadid in London and served as an adjunct professor at the University of Illinois at Chicago School of Architecture before teaming up with Crowl and attracting clients with fc STUDIO inc’s hallmarks of approachability, innovative design, and attention to detail. Fisher lives in Evanston with her husband, Highland Park native Jason Rosenthal, and their children: daughter Parker, 17, and son Meyer, a freshman at ETHS. Parker and Meyer are legitimate threats to match the industriousness their mother evinced as a teen. Parker holds down two jobs, and Meyer started his own company, Silver Feather Sticker, which is dedicated to bringing hand-drawn, quality and colorful stickers to customers. “Both,” Fisher says, “are wildly ambitious.” Fisher talks with older sister Tracy, of Ravenswood Manor in Chicago, at least three times a day. She’s also super close with her brother, who won the Oscar for Best Documen-

tary Feature (The Cove) in 2010. Fisher Stevens was raised mostly by the siblings’ mother, Sally Fisher, in New York, but Norman Fisher rarely put on a coat that didn’t contain at least one crumpled article about his son, whose televi-

sion credits include Columbo, Frasier, Friends, and Law & Order. “I’d planned three trips to New York to see my brother last year,” Fisher says. “Had to cancel all three because of COVID-19. Heart-wrenching, each time.” Julie Fisher’s stepmother, Andrea— “hilarious, with boundless energy,” says Julie— was a schoolteacher in Glencoe before moving to Delray Beach, Florida. Fisher loves to listen to audiobooks, take long walks along Lake Michigan, travel with family and friends, and hang with her girlfriends. “I’m a workaholic,” she admits. “I know, I know … that’s a terrible thing. But hard work got me where I am today. My father was all about hard work and stressing the importance of using that trait. “You have to carve your own path,” Fisher adds.
