Fashionistas who follow eyeglass and sunglass trends may recall a distinctive, antique crystal frame worn by Matt Damon in the 2019 film, Ford vs. Ferrari. Those were the sunglasses to have that summer. Everyone wanted them but only the world’s most prestigious optical purveyors had the luxury of carrying Entourage of 7's Beacon 1020 sunglasses. Fortunately for North Shore residents, their beloved Blink Optical boutique on Bank Lane in Lake Forest was among that elite group. “Our passion is to be in the top fashion of eyewear,” says Yuri Kisilevich, who has owned Blink Optical with wife Stella Sharts since 2005. “We bring in stuff that was placed in movies and we share that with our customers all over the world.” And when he says, “the world,” he’s not exaggerating. With frames purchased from independent designers in Israel, Milan, Germany, and Paris, and lenses hand-crafted in an on-site lab, you literally can find eyewear at Blink that is not available anywhere else. “People come to us from across the country,” he explains. “Today we had a customer with a high prescription who lives in Syracuse, New York, but only buys glasses from us. We also have customers in Switzerland who only buy glasses in the United States.” However, according to Sharts, there is another differentiating factor that goes beyond Blink’s exceptional collection of frames, sunglasses, and readers. “A lot of our customers who will read this article are going to think of Yuri,” she says, laughing. “He has this reputation for finding the perfect frame for every face. A person can come into the store and the first frame he will put on them is usually the one they end up with.” Kisilevich joins his wife in laughter, adding: “It’s a gift, and a curse!” What it really comes down to, he contin-

ues, is knowing the product and knowing your customer.

HIGH-INDEX SPECIALISTS One of Blink Optical’s specialties is serving customers with very high-index prescriptions. Anyone in that category who wears (or has ever worn) glasses knows the challenge that comes with the thick lenses such a prescription requires—regardless of

how glamorous your designer frames may be. “It’s not just important how the frames look; it’s how the lenses look as well,” explains Kisilevich. “Stella has been in this business for more than 30 years and I’ve been in the business for 28 years, so we specialize in this. We make our own highdefinition lenses so we know how the lenses are going to look.”

Sharts began working for her uncle’s optical stores in Chicago when she was just 16 years old. Meanwhile, Kisilevich became an expert in lenses, eventually connecting to his Israeli roots by finding a kibbutz to source lens materials from. Over the years, loyal customers have followed the couple in the same way Kisilevich says patients follow a favorite doctor or surgeon.

“It’s about trust,” he adds. “Our business specializes in people with very high prescriptions so it’s just as important to custom fit lenses as frames. It’s both fashion and function.” Those who wear glasses know what a crucial (and sometimes agonizing) decision it can be. “We have a lot of people who say they’ve gone into five stores in Chicago and can’t find a fit, but they come to us and we fit them right away,” says Sharts. “With us, it’s customer service first. We’re always there, showing them what we think is going to be perfect ... we’re almost like your personal shoppers for eyewear.” THE NORTH SHORE WEEKEND

SUMMER TRENDS Blink Optical exclusively offers frames by such designers as Caroline Abram, Alain Mikli, Lunor, Chrome Hearts, Cartier, and Anne et Valentin—high-end products that Kisilevich personally selects from trips around the globe. He also keeps a close eye on what is trending. Considering that your glasses are the first thing you put on in the morning and the last thing you take off, the right pair “can make or break you,” says Sharts. With summer right around the corner, the couple says fashion-forward customers should embrace a season of color. “The best color this year is going to be green. Last year was blue; this year is green,” explains Kisilevich. “But some people can also go red or navy blue or tortoise shell. It really depends on your personality.” Blink also fits customers for sunglasses, both prescription and non-prescription. “We specialize in polarized lenses, which are great for water, fishing, hiking ... whatever you do,” he adds. Sharts says larger frames will continue to prevail, along with the aviator look (which may be partially due to the recent Top Gun reboot). Another lesser-known specialty at Blink is fitting women who have smaller faces, which Sharts says is especially important when staying on the larger-frame trend. “We have companies who make those oversized sunglasses in smaller sizes and it looks very in-fashion and amazing,” says Kisilevich.

LONG-TERM RELATIONSHIPS At the end of the day, the couple says they are grateful to the customers who have trusted them with their eyewear needs for nearly 17 years. “Over the years, we’ve seen so many of the same people,” explains Sharts. “They’ve become friends—they’ve become family.”

“We know them, we know what fits them,” adds Kisilevich. “Sometimes I go in on Sunday to cut lenses because our customer needs to leave for emergency. Those are the kinds of relationships we have with our customers.” With a 31-year-old wedding anniversary coming up this year and both sons (21-yearold Michael and 19-year-old Ethan) thriving at college in Florida, the Deerfield couple says they are grateful for the business and life they have built together. “I’m still excited to go every day to work,” he adds. “We love what we do and that’s our passion.” Blink Optical is located at 654 Bank Lane in Lake Forest. GLUTEN-FREE CINNAMON ROLLS OR COFFEE CAKE BY MONICA KASS ROGERS THE NORTH SHORE WEEKEND

America’s love affair with cinnamon baked treats is alive and well. I’ve featured recipes for cinnamon rolls, sticky buns, coffee cake, and more. But lately I’ve had more queries for a good, oldfashioned-tasting, gluten-free version. Lots of test batches later, with help from dear friend and pastry chef Tory O’Haire, yielded this delicious result which you can make into cinnamon rolls or a coffee cake. Including a mix of potato flakes, almond meal, rice flour, and tapioca starch, the dough bakes up soft and moist, with rich buttery flavor and a nice contrasting crunch from the walnuts in the cinnamon-sugar filling. Plus? There are wonderfully crackly butter-toffee-like shards that bake up around the edges from the filling that oozes out. As with other gluten-free recipes, this dough is delicate so you’ll need to handle with care. INGREDIENTS FOR THE DOUGH: • 1 1/3 cups whole milk, warmed to 110 degrees • 6 Tbsp unsalted butter • 5 tsp yeast • 1/2 cup granulated sugar • 1 1/3 cup Idahoan potato flakes • 1 1/3 cup brown rice flour

METHOD PROOF YEAST: Combine warmed milk, butter, yeast, and sugar in a large bowl. Set aside in a warm place to proof for 30 minutes until foamy MAKE FILLING: Combine dry ingredients and then pour in the hot, melted butter, stirring until smooth. MAKE DOUGH: Combine the dry ingredients for the dough in the work bowl of a stand mixer. Set aside. When the yeast mixture is foamy, add the egg coconut oil and vanilla to the yeast mixture. With the

• 2/3 cup finely ground almond flour (almond meal) • 2/3 cup tapioca starch • 1 tsp. baking soda • 3 tsp. xanthan gum • 5 tsp. baking powder • 1 tsp salt • 2 large eggs plus 2 egg whites • 1/2 cup coconut oil, warmed to a liquid

stand mixer running at a very low speed, pour the liquid ingredients into the dry mixture in a steady stream. Increase speed to medium and beat for 5 minutes, stopping to scrape the bowl as needed. If making the coffee cake: Gather the dough into a soft ball and set in a large oiled bowl in a warm place to proof for 15 minutes. If making cinnamon rolls: Divide the dough into two portions and proof. Spread work surface with two, overlapped pieces of parchment paper. Spray with vegetable oil. If making the cake: Place dough-ball at the center.

• 2 tsp vanilla • non-stick vegetable spray • parchment paper for rolling out the dough FOR THE FILLING: • 2/3 cup unsalted butter, melted and still hot • 1 cup brown sugar • 3 Tbsp cinnamon

Gently flatten the ball to make a rectangle with your hands. Cover the dough with two more vegetable-spray-coated sheets of parchment (sprayed side down) Roll out until 1/2 inch thick. (Be careful not to roll too thin.) Spread filling over the dough, leaving a 1-inch border along the far edge. Using the parchment paper to help, gently lift and roll the dough into a spiral. Slightly flatten this to make a five-inch-wide oblong coffee cake. Tuck ends under. Wrap and refrigerate for 1/2 hour. If making cinnamon rolls: do this process twice, using each portion of dough

• 4 Tbsp potato starch • pinch of salt • 2/3 cup finely-chopped walnuts FOR THE GLAZE: • 1 cup confectioners sugar • 1/2 tsp vanilla • 1 Tbsp half-and-half (or a little more or less to make glaze to the consistency you prefer)

and rolling up into a "round" log rather than the flattened one used for the cake. Remove chilled cake OR cinnamon roll logs from refrigerator. If making cake, place entire loaf on parchment-lined half-sheet pan, seamside down. If making cinnamon rolls, butter two cake pans. Slice each cinnamon-roll log into 12 rolls and place in each pan. Set aside to proof for 12 minutes. While rolls OR cake are proofing, preheat oven to 350°. Place rolls OR cake in center of oven and bake for 25 minutes until puffed and golden. SET FOR THE RACE OF HIS LIFE FORMER OHIO PREP DISTANCE RUNNER GREG OSTDIEK IS ALL REVVED UP TO SERVE AS THE NINTH PRESIDENT AT LOYOLA ACADEMY. BY BILL MCLEAN ILLUSTRATION BY BARRY BLITT

Forgive Rev. Gregory Ostdiek, SJ, if he shows up for the first day of his tenure as Loyola Academy president in head-to-toe runner’s gear and a racer’s bib on July 5. The former cross-country runner and distance track boy at Carroll High School in Dayton, Ohio, is on his mark again and set to begin a challenging, and likely fulfilling, journey. “Right now, I have the same pre-race feeling that I had in high school, on the day of my team’s first cross-country meet in the fall,” recalls the 6-foot-3 Ostdiek, who lives in Evanston and still runs between three and four miles every other day. “But it’s not a nervous feeling, because I’m at the start, thinking, ‘I’m welltrained, having put in the miles all summer.’ “I’ll be doing a lot of walking and listening in my first semester at Loyola, and I’ll ask questions, all kinds of questions. I like listening to people, hearing their stories. I’ll ask the students, ‘Why Loyola Academy?’ because they could be anywhere. But they’re here. I can’t wait to hear their answers.” The highly successful run of Ostdiek’s predecessor, Rev. Patrick McGrath, SJ, at the private Jesuit high school in Wilmette lasted 12 years. Father McGrath will become the next pastor at Old St. Patrick’s Church in Chicago this summer. “An amazingly good speaker, homilist, and priest,” the 52-year-old Ostdiek says of McGrath, the academy’s eighth president. “Last November, after I had been appointed, Pat said to me, ‘Greg, you’re ready for this job. You can do it. And you’ll have fun doing it.’ “I’m tremendously excited to join Loyola Academy in its mission of forming women and men for others in service to the Church and the world.” Ostdiek, who holds B.A. degrees in mechanical engineering and English from the University of Dayton, was a lieutenant commander in the U.S. Navy in 2008 when it hit him—he’d been called to navigate another vocation. “I basically realized I was in the wrong uniform,” says Ostdiek, who, after a career in the Navy spanning 12 years, joined the Jesuits in 2008, teaching physics, coaching athletics, and serving positions in campus ministry at several Jesuit schools during his novitiate. “That’s the one-sentence answer to what actually was several years of discernment and then mustering up the courage to make the right decision.

“God,” he continues, “sometimes makes it abundantly clear to you what his plans—or expectations—are for you, and then you either make the gut check or you don’t.” Loyola Academy was one stop (2014-2016) on his path to ordination in 2019. Ostdiek taught physics and served as an assistant coach for a state-qualifying Science Olympiad team at the home of the Ramblers. He has served as a parish priest and a prison minister.

The number of degrees he now holds practically surpasses the total numbers on a thermometer: M.A. degrees in English (Penn State University) and philosophy (Fordham University); a Master of Divinity in theology and a Master of Theology in scripture (Boston College School of Theology and Ministry); a Master of educational policy and management (Harvard Graduate School of Education); and a Master in Public Administration (Harvard Kennedy School of Government). Ostdiek knew, as a senior in high school, that he’d pursue the unusual Englishmechanical engineering double major at Dayton. “Engineering appealed to me because I like knowing how things work, and I’d always loved English and admired those who had the ability to communic ate well,” Ostdiek says. “Math, to me, is a subject you can use as a language and as a tool.” Fritz and the late Rita Ostdiek raised Greg and his twin, Gary, in Beavercreek, the second-largest suburb of Dayton. Fritz was an allstate center and nose tackle in football-mad Nebraska in

the 1950s. He somehow played his entire senior season at those demanding positions with one good arm and one dislocated shoulder. Fritz served as a bomber pilot during World War II and worked as a research engineer at WrightPatterson Air Force Base in Green County, Ohio. “My dad was a jet engineer—a really cool job,” Ostdiek says. “He’s smart, knows how things should be done, and wants them done that way. Dad learned soccer and became a soccer coach at the age of 40. He coached my seventh-league soccer team to a 14-0 record and a league championship.” Rita died three months before Greg’s ordination. “My dad was the coach of our household, while my mom was the captain. Mom kept the house clean, organized, together.” Midway through Ostdiek’s freshman track and field season at Carroll High School, the school hired distance coach John Agnew, an electrical engineer at Wright-Patterson and a former all-Big Ten track athlete at Ohio State University. “I didn’t know who he was, but the seniors on my team sure did,” Ostdiek says. “He was approachable, loved the runners, and loved running. He’d complete workouts with us at every practice and then work out on his own after practice, going a hard 10 miles. Coach Agnew was a mentor and almost my third parent.” More mentors provided guidance for Ostdiek in the Navy. He served on a variety of ships, including as navigation instructor; a reactor training assistant on the USS John C. Stennis; and an executive officer and navigator on the USS Dextrous, which was deployed twice in the Arabian Gulf. “Two men in particular taught me so many elements of leadership,” Ostdiek says. “Captain Craig Langman had this gusto for life that was contagious. He’d bike to work and play water polo, hard. He was loud and passionate about life. Then there was Jim Kilby, second in command. He led by love, with a deep respect for his fellow sailors. “I learned a great deal from both men.” Father Greg pauses. He oozes gratitude. “Gratitude,” Ostdiek says, “is a key part of Loyola Academy’s mission.
