Ravinia Festival President and CEO Jeffrey Haydon has seen the 2008 movie Slumdog Millionaire twice. The number of times he’s listened to tracks from the film, including the vigorous “Jai Ho,” a song that typically yanks people out of their seats and forces them to dance hard? Too many to count. “The soundtrack of that movie made it to the top three of my rotation the year the movie was released,” Haydon says. “And it keeps coming back, every single year. I spent time in Europe and in Turkey in my youth, but never in Southeast Asia. Slumdog Millionaire was my introduction to Indian music, and I didn’t just enjoy the music in the movie. I also thought the movie captured both the spirit and the beauty of the country.” So, forgive Haydon if he’s having a difficult time containing his enthusiasm for A.R. Rahman’s appearance on the Ravinia stage August 20 (gates at the Highland Park venue open at 5 p.m.; concert starts at 8 p.m.). The Indian film composer, record producer, singer, and songwriter— also known as “The Mozart of Madras”— won two Academy Awards (Best Original Score, Best Original Song), two Grammy Awards, a BAFTA Award, a Golden Globe, and more for his work on Slumdog Millionaire. The movie centers around 18-year-old Jamal Malik (portrayed by Dev Patel), who answers questions on the Indian version of “Who Wants to Be a Millionaire?”

LADY OF THE DANCE BRIDGET MCGOVERN, A 10-YEAR-OLD DEER PATH MIDDLE SCHOOL STUDENT FROM LAKE FOREST, SHINES AT HER FIRST INTERNATIONAL IRISH DANCE COMPETITION. BY BILL MCLEAN THE NORTH SHORE WEEKEND

Bridget McGovern’s posture is ramrod straight, straighter than a wooden ruler positioned vertically in a student’s backpack. The fifth grader f rom Lake Forest also exudes composure, with an air of confidence that has been stuck in soar mode for at least a year. All because of Irish dancing. The 10-year-old McGovern, who attends Deer Path Middle School and trains at the O’Hare School of Irish Dance in Lake Bluff, finished 26th overall in the U10 division at the North American Irish Dance Championships in Montreal on July 5. She placed in the top 10 among Midwest competitors and in the top 5 among Illinois entrants in her debut appearance at an international event. But to Bridget’s mother, Maggie, her daughter’s commitment to the traditional dance form originating f rom Ireland also has translated into her success away f rom the big stages. “She’s now more comfortable speaking in f ront of a classroom while presenting a project,” says Maggie, whose husband, Eli, built a training stage for Bridget in the McGoverns’s basement. “I have to believe much of that stems f rom Bridget ’s experience as an Irish dancer. “It’s challenging and filled with pressure,” she adds, “It’s a lot on a individual. It’s a dancer, on a stage, in f ront of judges.” Bridget McGovern was a novice Irish dancer in 2021. She reached championship-level status this year and then qualified f rom a regional event to earn her first North American Championships berth. “That’s unusual, improving as much as she did in only one year,” says Veronica Lilja Brugioni, who owns and operates the O’Hare School of Irish Dance. “What separates her f rom many other dancers in her age group is her technical form. We drill a lot at the studio; that keeps her sharp. Plus she practices hard at home. “Bridget,” she adds, “has very good muscle memory.” McGovern got her start in the discipline at the age of 6, when she took an Irish dance class at the Lake Forest Rec Center under the guidance of Brugioni. can, maybe beyond high school,” says McGovern, who has sprinter’s speed and plans to try out for the track and field team at Deer Path Middle School. “I love meeting people, and I’ve met a lot through Irish dance. I got to know two dancers f rom England when I was in Canada.” McGovern advanced to the final round at the North American Championship after performing well enough in a pair of rounds: a hard-shoe segment, followed by a soft-shoe test. Survivors then had to endure an intense “recall” session, in which an official announced the finalists by blaring their entry numbers. McGovern was No. 116. “As soon as I heard Bridget ’s number, I dropped the booklet I was holding,” Maggie McGovern recalls. “But in my mind, I threw it upward as I celebrated.”

SOUR CHERRY HAND PIES BY MONICA KASS ROGERS THE NORTH SHORE WEEKEND

Hand pies take a person back. To fourth grade, maybe (or even earlier), when you’d bike to that corner grocery store with friends after school, finding the rack of pies, wax-papersleeved, sugar slicked, and skimpy on the filling, but easy to grip in one hand as you wheeled to somebody’s house before piano lessons. Home-made hand pies build on that nostalgia with better flavor and fresher fruit. Ours are full of fresh-picked sour cherries in a tender, flaky, oven-baked crust with optional sugar glaze.

A bit of almond flour and red wine vinegar in the dough adds nice texture and flavor. We’ve sized the pies large enough to share, though you may want to eat one all by yourself as you linger over the weekend reading you’ve been looking forward to. Choose fresh sour cherries from your farmers market in season and use thawed frozen sour cherries when fresh aren’t available. One tip: To pit fresh sour cherries, a counter-mounted cherry-pitter is a huge help

METHOD

INGREDIENTS FOR PIE CRUST:

• 2 cups flour • ½ cup almond flour • 1 ½ sticks ice cold butter • 1 large egg • 1 ½ tsp red wine vinegar

• 2 Tbsp. dark brown sugar • 3 Tbsp pure cane sugar • 2 Tbsp cornstarch • 2 tsp red wine vinegar • 1 tsp vanilla extract • 1/8 tsp salt

• 1 to 2 Tbsp water

FOR EGG WASH AND FINISH:

• 1 Tbsp sugar

• 1 large egg and 1 Tbsp water,

• ½ tsp salt

MAKE PIE CRUSTS: In a large, wide, shallow bowl, sift flour, almond flour sugar, and salt together. Cut butter into the flour. Whisk egg with water and pour into center of the mixture. Sprinkle vinegar over. Using a fork stir together until dough comes together with a few crumbly bits still in the bowl. Spread work surface with two overlapping sheets of plastic wrap to make a square. Scoop dough and crumbly bits onto plastic. Lift the corners of the plastic up to make a bundle; squeeze and knead dough through plastic wrap until it all gathers into a ball of dough. (If still too crumbly, place back in bowl and add another teaspoon of water.) Spread plastic back out. Pat dough into a lumpy disk. Cover with two more sheets of plastic making a square over the dough. Roll dough out just a bit through plastic into a flat circular mound. Remove top plastic and cut disk into four parts. Spread work surface with two pieces of overlapping plastic wrap to make another square. Place one of the four dough pieces on the wrap. Shape into a circle. Cover again with two squares of plastic and roll out into a 7-inch circle. Place dough circle—still with plastic wrap squares on both sides--on round baking sheet. Repeat for remaining three pieces of dough. Place stack of dough circles on baking sheet in refrigerator while your make the filling.

MAKE FILLING: Place pitted cherries in a strainer. Lightly press to release some juice into a bowl. Place pitted cherries, sugars, salt, lemon zest, and vanilla in a heavy-bottomed pot. Set aside. To the bowl of cherry juice, add vinegar and lemon juice; whisk in cornstarch to make a slurry. Heat pot of cherries over medium-low heat. Stir in slurry. Heat to boiling, stirring constantly until mixture thickens, glaze clears, and cherries are

BAKE PIES: Place rimmed-baking sheet full of chilled hand pies in oven. Bake in preheated 375-degree oven for 30 minutes, until pies are golden brown. Remove to a cooling rack.

ASSEMBLE PIES: Remove one disk of dough from the fridge. Leaving plastic square on both sides, gently roll out dough circle to a level 1/8-inch thickness. Using a 6-inch bowl, trace a 6-inch circle onto the plastic wrap covered dough circle with a sharpie. Using kitchen shears, trim off the edge of the dough. (You can save the dough scraps and re-roll-out to make one more pie circle if you like.) Repeat process until all dough circles are trimmed. Cover a rimmed baking sheet with parchment. With oven rack set to center position, preheat oven to 375 degrees. Place one trimmed dough circle on work surface. Remove top sheet of plastic. Place 2 to 3 Tbsp of the cherry filling on one half of the circle. Fold other half of dough up and over the filling, using the bottom plastic to help you lift and fold. Using the tines of a fork, press down and around the now double-thickness edge of the pie through the remaining plastic to seal the pie. Lift finished hand pie toward the parchment-lined baking sheet, flip to place, and discard plastic. Repeat for remaining four pies. Brush pies liberally with egg wash. Cut slits in top of each pie to vent steam Place sheet pan full of pies in refrigerator for 1 hour, or in freezer for half hour.

GLAZE AND SERVE: Whisk powdered sugar with softened butter. Whisk in milk or cream and vanilla until smooth. Drizzle over hand pies. Serve warm or room temperature.

TOUR GUIDE DE FORCE HIGHLAND PARK RESIDENT BRUCE BERTUCCI CONDUCTS HISTORICAL HIGHWOOD COCKTAIL TOURS THAT WILL ENLIGHTEN, STUN, AND ENTERTAIN. BY BILL MCLEAN ILLUSTRATION BY BARRY BLITT

Remember pay phones? Bruce “Buzzy” Bertucci, 74, certainly does, and one of his favorite Highwood stories features the one that stood across the street from the restaurant Sandy’s, a man named Wild Bill, and former President Lyndon Baines Johnson. “Wild Bill,” Bertucci begins, “used the pay phone to call the White House one day. He wanted President Johnson to end the Vietnam War.” He also threatened to harm the president if Johnson refused to do so. “Someone at the White House asked Wild Bill to stay on the line,” Bertucci continues. “And he did. Then he got arrested, right in the middle of downtown Highwood." Bertucci—born and raised in Highland Park, where he still lives with his wife of 25 years, Lynne—will continue his stories in Highwood on each of the remaining Wednesday evenings in August. That’s when the second Highwood historian (his late father, Bruno, was the first) serves as the tour guide for the Historical Highwood Cocktails Tour. “We stop by bars, restaurants, and other buildings in Highwood,” says Bertucci, who entered the bar business in 1976, as co-owner of the Hideout in Highwood, and left the industry in 2014, when he closed Bertucci’s (formerly Rainbows) in Highwood after a 24-year run. “I tell stories about the businesses and the history of Highwood, as well as the city’s characters. This city had, and still has, plenty of colorful characters. “Teddy Roosevelt visited Highwood before and after his presidency,” adds the former Highland Park taxi dispatcher and ex-manager of Carousel Linens in Highwood. “He called it ‘the toughest town in America.’ But it’s the most real town, with people who are real— that’s what I love most about Highwood.” Decades ago, more than a few Highwood bars opened at 6 a.m., Bertucci notes. Fights in bars? They reached the galore level in the 1950s and 1960s. But the establishments also doubled as packed venues for musical performances by the Ramones, the Plat-

ters, Koko Taylor, and other headliners. It costs $20 to take a tour; each journey in the city dubbed “Whiskey Junction” starts at 7 p.m., from the Celebrate Highwood booth at the Wednesday Evening Gourmet Market, and includes four stops. Bertucci conducted the first tour on June 15, with eight people in tow. The July 27 and August 3 tours sold out (limit: 15 people per date). Celebrate Highwood added a Wednesday (August 31) to its original tour schedule. Eric Falberg, co-owner of 28 Mile Vodka & Distillery in Highwood, came up with the cocktail tour idea. And he could not have picked a better tour guide than Bertucci, who’s part historian, part comedian, and blessed with a better memory than a horde of elephants.

“I love trivia, especially sports trivia,” says Bertucci, a movie buff (he’s seen Casablanca at least 40 times) and avid Chicago Cubs fan who worked security at 52 Wrigley Field games in 2018. “I remember everything, just like my dad did, though I wasn’t so good at remembering things in algebra and science classes. Dad owned Sun Valley Dairy, and he knew everybody’s address. “Friends would call me up at 2 a.m., sometimes at 3 a.m., before the invention of the Internet, and ask questions like, ‘Who won the World Series in 1968?’”

Answer: Detroit Tigers. Ask Bertucci about the trivia question involving a former Major League Baseball Most Valuable Player and a former Super Bowl Most Valuable Player. It’s his favorite. Ask him about the turtle races he announced for nine years, beginning in 1982, at a Highwood bar and the hilarious response to the order—“You can’t race turtles in here”— uttered by a health inspector. Or better yet: take a Historical Highwood Cocktail Tour this month and listen to Bertucci, extraordinary storyteller, recount the vivid details of the slow sprints while walking backward. “I got home from a tour one Wednesday, reached into one of my pockets, and pulled out a $100 bill,” Bertucci recalls. “It was a tip. I also pulled out a $50 bill, same night. “Spent all that money on golf balls,” he adds. The son of Bruno and the late Lena Bertucci (nee Mazzetti), Bruce was a 4-foot-9 Highwood Little Guys point guard who played before a crowd of 15,000 in a youth basketball game held at an outdoor court in Puerto Rico. The Highland Park High School graduate attended Miami Dade College in Florida for two years. Bertucci earned his Ph.D. in All Things Highwood at some point in the 1970s, maybe earlier. Continuing education in the field continues … daily. And the man is a huge fan of Celebrate Highwood and its mission to foster a great sense of community and spirit by producing ongoing events and festivals that cater to the wants and needs of the citizens, businesses, and visitors. Among Celebrate Highwood’s upcoming events and festivals are Pumpkin Fest, Margarita Night, Garlic Fest, Nashwood, Bloody Mary Fest, and Taco 5K Run, Walk and Stroll. Originally a collaboration between the City of Highwood and the Highwood Chamber of Commerce, Celebrate Highwood established itself as a separate entity and secured nonprofit status in 2016. “Celebrate Highwood turned this town around,” Bertucci insists. “The organization has unified Highwood and made its residents proud of their hometown. Highwood Mayor Chuck Pecaro got behind it from the start and fully supports what it sets out to do each year. “Highwood is fortunate to have an organization like that,” he adds. “I’m fortunate that I got the opportunity to serve in the bar and restaurant business in Highwood for nearly 40 years.
