Scottie Pippen’s rich baritone is the envy of any DJ looking to land a gig at a smooth jazz radio station. But Pippen didn’t need his deep voice to personify smoothness on basketball courts worldwide during a highly decorated career, gliding his lean, chiseled 6-foot-8 frame as a six-time NBA champion forward for the Chicago Bulls and as a two-time U.S. Olympic gold medalist. And now he’s one of two accomplished men behind Digits, a five-year-old Tennessee bourbon whiskey [46 percent alcohol by volume, 92 proof ] that he launched with famed wine and spirits maker Dave Phinney earlier this summer. It’s Pippen’s first foray into the beverage industry, and it happened to coincide with the 30th anniversary of the Bull's 1991 NBA championship. Picture Pippen soaring effortlessly toward a rim to drop a graceful, finger-roll layup through twine. Smooth. courses, including Exmoor Country Club in Highland Park, Lake Shore Country Club in Glencoe, and Lake Bluff Golf Club. “I’m excited about this next chapter of my personal journey,” adds the Basketball Hall of Famer who was named one of the 50 greatest players in NBA history during his 1996-1997 season with the Bulls. “I get to work with one of the greats in Dave Phinney, who’s humble, very creative, and a true visionary.” Pippen’s business partner, Trinidad native R.C. Mills, has an extensive culinary background and has been aware of Phinney—named Winemaker of the Year by Wine Enthusiast Magazine in 2019—since a brief encounter 12 years ago. Almost a year ago he arranged for Phinney, a Napa Valley winemaker and the spark behind the acclaimed flagship blend “The Prisoner,” to head nearly 400 miles south of Napa Valley to have dinner with Pippen in Santa Monica, California. “I liked the potential fit,” Mills says. “Both

are passionate people, and Dave Phinney has always been known for his attention to detail.” Phinney, who also owns Orin Swift and produces wines from his vineyards in France, Italy, Spain, and Greece, opened his Savage & Cooke distillery in 2016 on the island that was the location of the Pacific Coast’s first naval shipyard in 1854. Pippen and Phinney, 47, ate dinner at their initial get-together and talked spirits and collaboration and hoops—for six hours. “Instant relationship, instant partnership,” Pippen recalls. “I believe we have created a superb bourbon.” Teaming up with Pippen—the fifth overall pick in the 1987 NBA draft, out of the University of Central Arkansas—off the court thrilled Phinney to no end. “Savage & Cooke, since its inception, has been a place of discovery and a home of opportunities for great spirits to come to life,” Phinney comments in a statement. “Little did I know I would have the opportunity to Continued on PG 12

One could easily pass as his right mitt, pinky askew, above a basketball rim and awaiting the descent of a ball on an alley-oop play. Pippen, who retired from the NBA at age 39 in 2004, could have introduced Digits in southern California. Or somewhere in his native Arkansas. But the eight-time NBA AllDefensive First Team member chose to do so in Chicago, where he starred for dynastic Bulls teams that captured three NBA championship from 1991 to 1993 and three more from 1996 to 1998. “Chicago has meant so much to me, from the experiences of playing here professionally and living here to the wonderful people who inspired me and cheered me on all those years,” Pippen says. “Bulls fans and sports fans in Chicago and all along the North Shore are the greatest. I wanted to toast them first and foremost.”

NIGELLA + SESAME CRACKER CRISPS WITH SIMPLE SALAD BY MONICA KASS ROGERS THE NORTH SHORE WEEKEND

I was delighted to get a letter from my sister-in-law Tonia that included a special gift: Nigella flower seeds to grow in my garden. Nigella flowers bloom a gorgeous pale blue, followed by pretty pods full of crunchy little edible seeds. These have a unique somewherebetween fennel and nutmeg flavor used world-round in cooking. In fact, Tonia’s letter included memories of the nigella-sprinkled bread sticks her Armenian aunt used to make. Sometimes called black cumin, black caraway or simply “black seeds” and labeled “kalonji” in the Assyrian market near my home, nigella pairs nicely with sesame seed. I prefer crunchy thin crisps over doughy bread sticks with my salads, so I’ve made these crackers very thin. The tiny bit of yeast in the dough makes them bubble up nicely in spots as you bake them, for an even crisper crunch. Brushed with a bit of olive oil and sprinkled with sea salt, these are very good as a snack, or, with salad.

INGREDIENTS FOR THE CRACKER CRISPS: • 1 cup warm (tepid) water • 1½ tsp active dry yeast granules (just about ½ a packet) • 1 Tbsp sugar • 2 Tbsp vegetable oil; plus 2 tsp for greasing bowl • 2½ to 3 cups all-purpose flour, plus a bit to dust your work top

FOR THE SALAD: • 2 cups fresh young arugula leaves • 1 small cucumber peeled and cut into chunks • 1 large heirloom tomato, cut into wedges • ½ cup pitted Greek olive mix • ½ bell pepper, cored, seeds removed and sliced into strips • ½ cup feta cheese, cut into cubes

• 1½ tsp salt

• 1 tsp freshly squeezed lemon juice

• 2 Tbsp sesame seeds

• Extra-virgin olive oil, for drizzling

• 1 Tbsp nigella seeds

• Salt and fresh cracked pepper to taste

METHOD MAKE CRISPS: In a large, shallow bowl, sprinkle yeast over tepid water and stir to dissolve. Add sugar, 2½ cups of flour and salt. Stir with a wooden spoon until dough pulls away from the sides of the bowl and gathers into a mass. Turn dough out onto floured work surface. Knead dough, turning and folding and pushing dough with the heels of your hands. Add small amounts of flour as you knead if the dough is sticky. Continue kneading about 10 minutes until dough is smooth and elastic. Shape dough into a ball. Oil bowl with 2 tsp of oil; place ball of dough in bowl, turning once to coat. Cover bowl lightly with plastic wrap and a kitchen towel and let rise in a warm, draft-free place until doubled in volume.

Preheat oven to 400 degrees. Punch down dough. Divide into four pieces. Working one piece at a time, roll a ball of dough into a very large, very thin rectangle (about one feet. x two feet) Using a fluted pastry wheel cutter, cut dough into long thin strips. Line a sheet pan with parchment and fill with the strips. Brush each with oil and sprinkle with nigella and sesame seeds and salt. Bake for 10 minutes in 400-degree oven, watching carefully to ensure strips do not over brown. Cool strips on a rack. Repeat process with each ball of dough. Decorated pastry chef and longtime Riverwoods resident Gale Gand could tell you stories about the time she made Carol Burnett laugh, about the time Aretha Franklin raved about her peach cobbler at Sam Zell’s birthday bash, about her project with Julia Child, and about the time she broke her mother’s sewing machine after making too many peasant blouses. Topping all of those might be her story about the time she roasted a marshmallow perfectly—a feat at a picnic that sparked a relationship with her future husband, Jimmy Seidita, nearly two decades years ago. (Spoiler alert: Jimmy’s impromptu roasting contest was intended for kids only). But the yarn that still triggers teardrops from the 64-year-old Gand, who hosted the Food Network series Sweet Dreams for eight years and collected a couple of James Beard Foundation awards, is the one about the 19-year-old waitress who arrived at work one day and was asked to fill in for an absent line cook. The teen’s name? Gale Gand. “I was a freshman in college (Cleveland Institute of Art), and my manager asked me, ‘Can you cook?’ Gand recalls. “The next thing I know, there’s an apron flying toward me. I was terrified at first. All of a sudden, after entering the kitchen, I looked around and felt a sense of calm. I’d found something comfortable. I’d found my home. I didn’t choose cooking…” Gand chokes up, pauses, apologizes. “Cooking,” she adds, her voice recovering, “chose me.” Take a bow, cooking, and hold on to your toque on the way down. You made a stellar selection. In 1999, Gand and her culinary partner and first husband, Rick Tramonto, with the backing of Lettuce Entertain You Enterprise’s Rich Melman, opened the French restaurant Tru in Chicago. Gand and Tramonto had launched another acclaimed eatery, Trio, in Evanston six years earlier. Her Sweet Dreams series was the first nationally televised all-dessert show. Gand, a Deerfield High School graduate, made appearances on The Martha Stewart Show, Oprah, Good Morning America, and Baking With Julia (Child), among other shows. She competed on Iron Chef America and served as a celebrity judge on several shows, including Top Chef and Last Cake Standing.

Books? Gand’s pen is as mighty as her spatula. The author has written eight cookbooks. Gale Gand’s Lunch! (2014) features 150 recipes. The book blurb notes that the “kidfriendly fare was tested and approved” by Gand’s 16-year-old twin daughters, Ella and Ruby, when they were 9. Gale Gand’s Brunch! (2009) is in its fifth printing Gand, who frequently teaches cooking classes at Eataly Chicago, Blackberry Farm in Tennessee, King Arthur Baking Company (formerly King Arthur Flour) in Vermont, and Zingerman’s in Michigan, took part

in a cooking demonstration in Las Vegas August 17 to 19. “It amazes me, still, meeting 25-yearolds who come up to me and tell me, ‘I’m a pastry chef because of you,’” says a laughing Gand, possessor of her Hungarian great-grandmother’s rolling pin. “I guess you could say I influenced them; it’s all my fault. My career in the food industry, approaching 40 years, has certainly been a rewarding one. I’ll never forget, after my first day as a line cook all those years ago, I ran home to my apartment and called my parents (the late Bob and the late Myrna). The first thing I told them was, ‘I know what I want to do! I want to be a chef!’” Myrna G a n d , Gale’s first culinary m e n t o r, must have

nodded. Nobody’s aroma from cherry pies stirred the neighborhood like Myrna’s did. Bob Gand—the Bob Gand who owned the Village Music Store in Deerfield for decades, beginning in 1968, and taught guitar lessons and other instrument lessons—wanted Gale to pursue a career in music. His daughter, after all, had performed, at the age of 6, as a guitarist at the University of Chicago Folk Festival and entertained audiences across the United States— and at Expo 67, in Montreal—as a member of the Gand Family Singers. Dad Gand and Gale attended a Janis Joplin concert together and capped the experience with a visit backstage. That Beatles concert in Chicago, staged at old Comiskey Park in 1965? A 9-year-old Gale Gand was there as a first-time concertgoer. Guess who could bake a to-die-for cake or an otherworldly pie in the morning and play the ukulele for an audience in the afternoon today. The same woman whose 25-year-old son, Gio (whom Gale shares with Tramonto), met Julia Child at the age of 6 months and started cutting off the tops of strawberries for Mommy at the age of 3. “There’s still some guilt,” Gand says of having thrived in a highly demanding, fulfilling profession. “I have a lot of friends—talented chefs who work as hard as I do, some harder, but have not been as fortunate as I have been. I’m one of the luckiest in this field. Yes, it’s tough, sometimes working 16 to 18 hours a day. My shoe size was 6 when I started; I’m now a size 9. But I love what I do, love everything about it.” A holder of a Bachelor of Fine Arts degree (silversmithing and goldsmithing) from Rochester Institute of Technology and a culinary school attendee at La Varenne in Paris, Gand was inducted into the American Academy of Chefs Culinary and Chicago Chefs halls of fame. “Doing what I do has put me near numerous Hollywood stars and politicians and other famous folks,” a grateful Gand says. “I’ve cooked alongside so many interesting people through the years. To be able to tell a joke and hear Carol Burnett laugh at it … what a memory that was for me. So was hearing that Aretha Franklin liked my peach cobbler. “You’re not going to believe who opened for Aretha at Sam Zell’s birthday party,” Gand adds. “James Brown.” What makes Gand feel good? “Cooking for others,” she says. “The restaurant business, I discovered, can be stressful. Twenty diners might show up, late. Or the restaurant’s cooler is down. Or the cream goes bad. But what I’ve learned, and what I’ve told others, is that everything works out in the end. “Believe that, no matter what, and you’ll never be stressed.” THE NORTH SHORE WEEKEND
