As we begin to put away the summer clothing and break out the warmer coats, the New Trier Township Rotary clubs would like us to think about others who are less fortunate. On Friday, October 15, the Operation Warm fundraising event at Valley Lo Club in Glenview aims to provide brand new winter coats to hundreds of Chicago area children living in need. Featuring R&B and soul music by Gerald McClendon, better known as “The Soulkeeper,” the event will feature a live and silent auction. A $60 ticket includes a buffet dinner and covers the cost of a new coat for three children. Local Rotary clubs and their charitable foundation organize the new coat project, acquiring coats from Operation Warm, a

A few years ago, David Avram was working on a proposed project for a brewery in the Western Suburbs. Avram’s family, originally from Aurora, has been in the real estate business for generations. “I found myself doing what I what I usually do when I start to learn about new things—I dive right in,” the Winnetka resident explains. “I learned as much as I could about the brewing process and as I got deeper into this project, I brought the recommendations to the group.” One recommendation was to look at options to contract out the brewing. Avram reached out to breweries in the Midwest that had been known for offering contract brewing services. He was not pleased with what he found. “Frankly. I had a series of bad customer service experiences with many of the contract brewers. So, I started to recruit a team and work on funding and financing for a company, with the idea that we could build something unique to the Midwest,” Avram says. Continued on PG 10

“I wanted to champion the local entrepreneurs and creative community to try and help them grow and thrive in the process.” After all, supporting a community and working in a collaborative setting is what fueled his real estate career. “I'm third-generation in my family's real estate company, which is Avram Builders,” he says. “I grew up working along my grandfather and my father and learned a lot about business and a lot about the trades from them.” Though his expertise was mostly in real estate, Avram was always interested in the food and beverage industry. That real estate development background was key to his launching of Great Central Brewing Company. “I saw that there was a wonderful community of creative entrepreneurs in the brewing space that were all struggling with some similar issues, which is how to scale, finance, and manage growth opportunities,” says Avram. While Great Central was being launched, Avram, his wife Monica, and baby son moved to Winnetka. The family entrusted long-time @ properties broker Louise Eichelberger to help them find a home. That connection would serve as a launchpad for Avram’s business network on the North Shore. “I think we were trying to find a space that was like home to both of us, but similar to the New England area, where Monica is from,” he says. “We like the focus on education and safety, and people really being proud of their hometown area and working together, supporting locally owned businesses. That really spoke to us.” The values of the North Shore community dovetail nicely with the values Avram infuses into his brewer business, which is headquartered in the Fulton Market District in Chicago. The company brews beers under its own label and also brews beers for other companies and restaurant groups. “Great Central was founded with the idea that we could serve as a crossroads within the community. We wanted to build a facility that was state-of-the-art, highly scalable, and would function at an incredibly high level from a technology standpoint,” Avram says. “We just believed that if we built something of that caliber, we could be really aggressive about our opportunities to support a growing number of businesses but also to bring our own brand to the market.” Great Central focuses on German-style beers, including lagers, pilsners, and an Oktoberfest brew. Avram says the idea for the name of the company is derived from the Great OPERATION WARM

national charity that provides for over half a million American children each year. Coats are given out during special events at Chicago libraries to economically disadvantaged students in Highwood and through a number of Chicago area nonprofits that directly support needy families. The planning committee includes Wendy

Central Market, a moniker for Chicago more than a century ago. “We are hoping to kind of capture and preserve some of that history in the city,” he says. “As you know, manufacturing and tech startups came into town and we want to honor that heritage, that history, that Chicago ‘can do’ spirit.” It was Louise Eichelberger who helped connect him to Matt Halack who, with his wife, owns Grateful Bites Pizza in Winnetka. Halack knew Eichelberger’s sons from their younger days and Eichelberger told Avram that the two should meet. “I had told David that when you’re local here, when you plant your flag, there's people who are going to want to have your beer because local brewers don't exist,” Eichelberger says. “That's exactly what he found.” Halack was a trader in the pits of the Chicago Board of Trade for 15 years but when trading started to shift online, he decided to look at other career options. “The trading kind of dried up and so I had to choose a new career path,” Halack says. “We started a catering company in 2012 and it just kind of grew from there. In 2014, we launched a mobile pizza oven, and 2017 is when we opened the restaurant here in Hubbard Woods.” The classic combination of beer and pizza— and wanting to support local businesses and residents— is where Halack and Avram found common ground. You can find Great Central’s beers on the Grateful Bites menu. “He's a good guy,” Halack says of Avram. “I enjoy visiting with him when he comes in. It’s really nice, kind of word-of-mouth community networking. It’s been a positive experience.” Earlier this year, Avram strolled into Good Grapes, the Winnetka wine shop owned by Theresa Lucas. Baby in tow, Avram struck up a conversation with Lucas. It wasn’t a sales call, but Lucas was intrigued by Avram’s business. Good Grapes sells wine, beer, and a selection of canned mix drinks, including some serious martinis. While Good Grapes is a retail shop, Lucas offers an outdoor space for snacking and drinking. “People pick out what they want and then I make it up and bring it out for them. I'm in the process of expanding that line, because now I'm getting orders for private parties,” Lucas says “So, they come in and get a bottle of wine and sit down, and I have some chips and some food, including charcuterie boards.” Thanks to Avram, Good Grapes customers now have an expanded beer list to choose from. “David dropped off some samples and

customers do my tastings,” Lucas says. “All four people who tasted each of the four beers hands down loved them and said they would buy them.” Along with her husband, Lou, Julie Rubin owns and operates Hometown Coffee & Juice in Glencoe, and another location soon opening in Winnetka. She runs the shop with values that are rooted in community and treating her employees with respect. “We have a basic business philosophy, basic fundamentals of business and core values, which we put in place early on,” Rubin says. “Really important to us was that we create a community spot, a place that would be welcomed by customers, both in the neighborhood and from the outside neighborhood, which we've done.” Hometown started primarily as a coffee shop but over the years has built out an expanded food and drinks menu, and sources much of its menu locally. It maintains relationships with local, independent bakers for its pastries and breads. In 2019, it obtained a liquor license. “We got the license pretty quickly and we started a small alcoholic beverage program which we incorporated within our happy hour,” Rubin says “So, we started doing a happy hour in the spring and summer of 2020, when we were opening up from 4 to 7 p.m.” After Avram moved to Winnetka he just happened to pop by Hometown, not to pitch, but just to get coffee and a sandwich. Avram introduced himself and he and Rubin chatted about business. A few days later he dropped off some samples of Great Central beer. “He brought us a couple of his beers and we tried them out. which we loved. Then it took off from there,” Rubin says. “I told him I’m always willing to try a product for a couple of weeks or a month and see how it sells. That's how we got
started. He's been up with his with his baby and his wife and she comes at least weekly to just patronize us. It’s been really nice, just getting to know him and talking about small business.” It’s not often that a laundry service plays a role in bringing businesspeople together, but that’s exactly what happened with Fred’s Garage, a restaurant and bar located in an old, renovated service station in Winnetka. Cary Michael, Operating Partner and “Head Mechanic” at Fred’s, met Matt Halack a few years ago when the owner of the linen service they shared introduced them. Through the usual relationships that develop within business industries, Halack connected Avram to Michael and, wouldn’t you know it. Great Central brews are now on Fred’s drinks menu. “In this industry, if you have a proven track record you have good relationships,” Michael says. “You just kind of find each other. David took an opportunity to swing by and we sat down for a brief discussion. He brought a couple of his beers and we cracked them open and just kind of hung out for a minute.” The tale of Great Central and its beer distribution is reflective of what many North Shore residents already know and love about “Mayberry on the lake.” “When you move to the North Shore, you're buying a village,” Eichelberger says. “You're buying a school district, you're buying neighbors, and you’re buying community.”

The organization has served more than 1,300 communities and given 4 million coats through its fundraisers. Earlier this year, it added shoes and Operation Sole to their organization—gifting more than 30,000 pairs of shoes as of last month. In a time where so much is uncertain,
programs like this are helping to give kids a brighter future.

BRUSSELS SPROUT PETALS WITH BACON AND ONION

This week’s recipe is the result of an impulse buy. But seeing those beautiful, almost prehistoric looking stalks of Brussels sprouts, I couldn’t resist. I love them! In years past, I had relegated the little green globes to the bottom of my vegetable list. Why? Because during my childhood, my mom overcooked them, thinking the result would be milder and more palatable. But overcooking Brussels sprouts leaches out their sulfuroussmelling, cancer-preventative compounds, making them soggy and less nutritious. Searching for better ways to prepare them, I perfected this simple, delicious recipe: A delicious quick sauté of Brussels sprouts petals, with diced onion, bacon and the tiniest drizzle of maple syrup. To make it, the only fiddly part is removing the tiny cabbage cores. You just poke the tip of a sharp knife in the base of each one, twist and cut that little piece out. Then, you can easily pluck the petals apart, wash them well, and sauté. As a side dish, this is fantastic with poultry. Or just pile them over whipped potatoes for a simple warming lunch.

• 3 cups small, fresh Brussels sprouts
PREP SPROUTS: Trim and discard sprout bottoms and tough, outermost leaves. Poke the tip of a sharp knife into the base of each of the Brussels sprouts and cut the tiny core out. Discard the cores. Separate as many green petals as you can from each cleaned sprout. Shred the remaining bits of sprouts. Soak petals & the shredded bits briefly (10 minutes) in lightly salted water to remove any insects or debris. Drain well; pat dry.
• 3 or 4 slices uncured, smoked bacon • 1 Tbsp olive oil • 1 small onion, peeled, cored and finely chopped • 2 Tbsp water • Drizzle of 2 tsp maple syrup • Salt and fresh cracked pepper to taste • Optional garnish: sprinkle of toasted, chopped pecans

MAKE BACON: Set oven rack to center position. Preheat
oven to 350 degrees. Place bacon on cookie sheet and oven-fry several slices of bacon.

SAUTÉ VEGETABLES: While the bacon cooks, heat 1 Tbsp olive oil in a sauté pan over medium heat. Sauté onion over medium heat in the oil until soft. Turn heat to high. Add 2 Tbsp of water and the Brussels sprouts petals to the pan. Toss and shake the pan until petals are bright green and tender. Set aside. ASSEMBLE: Remove bacon from cookie sheet and blot
with paper towels. Chop and crumble bacon over cooked sprouts in a serving dish. Drizzle with maple syrup. Add salt and fresh-cracked pepper to taste or, if you prefer, add a sprinkle of toasted, chopped pecans on top. Serve. THE NORTH SHORE WEEKEND

AYE, AYE, KAREN CURTISS A SAILING BUFF AND LAKE BLUFF NATIVE IS DOING WONDERS FOR OTHERS BY TAMING HEALTH CARE’S OFTEN CHOPPY WATERS VIA HER NONPROFIT, THE CARE PARTNER PROJECT. BY BILL MCLEAN ILLUSTRATION BY BARRY BLITT
It’s probably safe to assume no one learned how to sail like a 9-year-old Karen Curtiss did on a lake in Michigan decades ago—all by herself, on a Sunfish, with a Sailing 101 book. And Karen’s mother, Margaret, fully endorsed the baptism by dire straits. “My mother,” Curtiss recalls, “handed me the sailing book. She encouraged me to figure out sailing on my own. I remember, while I was on the boat, opening the book, seeing a picture of a boat part, looking for that part on the boat, and thinking, ‘OK, so this is the tiller.’ “I also went sailing the next day, this time with an 8-year-old. We kept capsizing. But we laughed a lot and had fun. Sailing was a family sport back then, and I try to sail as much as I can today.” Karen Curtiss—who grew up in Lake Bluff, graduated from Lake Forest High School, is the mother of two sons and two stepdaughters, and lives in Lake Forest— navigates aplenty on land, too, helming The Care Partner Project that she founded in 2009 as a Board-Certified Patient Advocate. “It’s not easy, navigating our health care system,” Curtiss says. “Any patient, no matter what kind of insurance coverage they have, can fall through its cracks, because most of us have never been trained to self-advocate. Nothing prepares us for such a task. But it’s critical that people get the care they want for the people they love. The Care Partner Project provides guides and the tools for preparation and peace of mind. “Hospitals,” she adds, “work hard to make care safe, but it’s no secret that our medical providers are stretched and stressed. You’ll never get a 1:1 patient-tonurse ratio at a hospital; you have to expect a 5:1 ratio, or an 8:1, or even a 10:1 Inevitably, cracks in care occur, which accidentally harm more than 12 million patients every year in the U.S.” Her nonprofit’s mission is dedicated to demystifying care (hospital stays, surgeries) with plain language and simple “To Do” checklists (downloadable for free, at thecarepartnerproject.org) to help Care Partners support loved ones’ care with confidence and grace. Patients, therefore, are spared preventable harm during hospital care and get the correct

diagnoses and treatment plans. A frantic phone call from one of Curtiss’s friends more than a decade ago led to the formation of The Care Partner Project. The friend called after her husband collapsed on a golf course and was transported to a hospital. The friend was aware that Curtiss’s father, Bill

Aydt, who’d undergone a lung transplant in 2005, had endured a series of preventable medical complications—infections and a blood clot that traveled from his arm to his new lung, to name a few—in a “Super Star” medical center. Mr. Aydt, a serial volunteer and an expert in Organizational Development, died in the reputable hospital more than four months after his doctors had predicted he’d be able to resume playing golf. Heeding a Care Partner checklist would have prevented his death. “My friend told me, ‘I’m confident they can take care of my husband’s condition, but I’m worried about a hospital infection,’” Curtiss recounts. “She then added, ‘You have had a lot of experience in your family with them. How can I help prevent my husband from getting an infection?’” Curtiss was stumped. But she stayed up most of the night for her friend, researching Superbug infections prevalent in hospitals and protocols for warding them off. She visited the World Health Organization and Center for Disease Control and Prevention websites. Curtiss then created a checklist—which would become The

Care Partner Project’s first checklist—and delivered it to her friend’s doorstep the next morning, along with a bag of infection-prevention supplies from Walgreens. “Her husband,” Curtiss says, “was released, hospitalized many times after that, and never once suffered a hospital infection with my friend on guard.” Through generous donations, The Care Partner Project provides grants to professional patient advocates for service to patients and families with limited resources or no insurance. About 95 percent of donations go directly to helping patients who are alone and uninsured. The Care Partner Project helped an advocate arrange hospice care for a homeless woman dying of cancer. An impact grant from the project assisted a determined advocate who called and nudged and pushed organizations and manufacturers on behalf of a double-hand amputee who’d been told to “adjust to life without prostheses” by an insurer; the patient ended up receiving prostheses and undergoing an extensive rehab program. “As a patient advocate, I know that people are resilient when they have the tools to help them overcome challenges they face,” Curtiss says. A nursing school in South Korea contacted The Care Partner Project recently for more information about its mission and checklists. So did a patient safety organization in Australia. “Our mission,” Curtiss says, “is my passion, my reason for being, as is my devotion to my kids. I grew up in a household with parents who loved to tell me, ‘Follow your passion.’ I’ll never stop doing that.” Curtiss didn’t just attend Lake Forest High School. She loved attending it. It was where she stayed super busy, served the Student Council, and joined the school’s first environmental club, Clean Land Air Water (CLAW). She graduated from the University of Oregon, after designing her major—one with a concentration in statistics, “because I’m not good at math and statistics tell stories,” she explains. Curtiss launched a marketing research business and folded it (but kept a few clients) after the birth of her first child. She also worked for Abbott as a consultant. Looking for advice on sailing?
