There are light shows. Then there are light shows. For the third consecutive year, the Chicago Botanic Garden (CBG) will stage Lightscape, a holiday show that lights up a 1.25-mile trail along the garden property. The show, which was first held in 2019, is produced by the garden along with Sony Music and UK-based WAD Entertainment. “They came to us over from London and they’ve done this show at Kew Gardens, which is obviously well known, and other places over there,” says Jodi Zombolo, CBG’s associate vice president of Visitor Events & Programs. “They asked us if we’d be the first venue to have it in the United States, we talked about a lot, and said, ‘Of course’.” Zombolo says CBG sent a couple of staff members over to London to look at the installation by WAD Entertainment in Kew Gardens and they liked what they saw. “They treat the grounds and the plants because that’s very important to us as an institution, and we felt it was a Continued on PG 10

It’s something that we feel really good about.” Zombolo says that while Lightscape doesn’t align exactly with CBG’S core mission of teaching about horticulture and conservation, it does bring visitors on to the garden property during a time of year they

might not otherwise come. Lightscape runs along a 1.25-mile trail and features installations by artists from France, the UK, Australia, as well as local artists from Chicago. “It’s such an engaging show that we really don’t need anything else to go along with it. There’s music, and every installation is an immersive experience,” Zombolo says. “It engages all of your senses, so you really don’t need anything else.” There are installations that are upbeat and will get visitors “all excited and jazzed,” she says. And there are quiet and reflective types of installations that make visitors calm down and think. To say Lightscape is a “light show” is an understatement. “You can’t put a finger on how many lights are involved because there’s a laser show at one installation and then there’s a fire garden,” Zombolo says. “It’s not a light show like your typical Christmas light show. According to the Centers for Disease Control, 136 people die every day from an opioid overdose. Roughly 21 to 29 percent of patients prescribed opioids for chronic pain misuse them. At Northwestern Medicine, efforts have been made to reduce the number of opioids providers prescribe, while also offering safe disposal options for patients, particularly after surgeries. Dr. Aaron Epstein, Vice Chair of the Department of Emergency Medicine at Northwestern Medicine Lake Forest Hospital, says the give-back programs are an important component of the ongoing battle against opioid addiction. “I've been working at Lake Forest Hospital in the emergency department for 18 years and almost daily we see the misuse or abuse of medications, especially opioid medications,” Epstein says. “We’ve made tremendous strides, but unfortunately a couple of hundred people die every day in this country

senselessly from the overdose of opioids.” Epstein says that while he has more tools available to him to help him determine if opioids are being abused—a state database tracks how often prescriptions are being refilled—the give-back is an opportunity to simply get more opioids out of cabinets and off streets where they shouldn’t be. “It's a great amnesty day, if you will, of cleaning house—a fall cleanup. Even in my house. You have a little procedure, and you get 30 Norcos and you take one or two of them and the rest sit in a bottle for three years in my cabinet,” says Epstein. “It's a great opportunity for even myself to clean house.” Epstein says the give-back day also helps to reduce the chances that people will take the wrong medicine. “I've seen, especially in the elderly, where they think they're taking their blood pressure medication and they accidentally take a Norco and all of a sudden Grandma's not acting right,” he says. The give-back day also reduces the chances that people will abuse drugs prescribed for others. Epstein says that particularly

during the pandemic, depression and other mental illnesses emerged that prompted people to peruse the prescriptions cabinets of friends or family looking for a way to ease their mental anguish. While a lot of the focus lately is on opioid medication, the give-back is applicable for any non-liquid medications (for safety reasons) and there are no questions asked. The idea is to get medications that aren’t being used or shouldn’t be used out of circulation. “It's a safe way of disposing dated medications. Some of these medications are found in our drinking water,” Epstein says. “It's a safe way of prohibiting misuse or potential abuse of getting medications in the wrong hands.” The give-back event at Northwestern Medicine Lake Forest Hospital will take place on Saturday, October 23, from 10 a.m. to 2 p.m. at the Bays Medical Building entrance, 900 North Westmoreland Road, in Lake Forest. CHILI CON CARNE WITH HOMEMADE CHILI PASTE BY MONICA KASS ROGERS THE NORTH SHORE WEEKEND

One of my readers wrote in search of a recipe for bean-less chili that harkened back to her family's Sunday dinners 25 years ago. Chili without beans is a-OK with me, so I worked up this richly flavored version made with beef skirt steak (you can also add a bit of bison steak if you have some) and loads of handmade chili paste. I use a combination of ancho, New Mexico, cayenne, and arbol chilies for the paste, but you can vary the heat and flavor by experimenting with other varieties of dried chiles, such as pasilla or guajillo. You’ll soak the dried peppers first. Then, brown the meat and simmer it to tenderness in the chili-soaking broth. Finally, blend the soaked peppers, garlic, and spices to make the paste which you’ll add to the chili pot for a half hour more of simmering. That's when the flavor really blooms! Not burnyour-mouth spicy, this beautiful chili has a deep, dark warmth. It's good plain or served over rice with chopped white onion and shredded cheddar.

INGREDIENTS • 6 dried ancho chiles (1, 3-ounce package) • 8 dried red chiles (chile arbol) each about 2 inches long • 3 dried New Mexico chiles • 2 cayenne chiles (optional) • 1/4 cup vegetable oil, divided • 2 1/2 pounds beef skirt steak, cut in small pieces, divided OR combination of skirt steak and bison steak • 3 bay leaves, finely crumbled • 1 Tbsp. cumin seeds • 3 Tbsp. minced garlic • 1 tsp. dried oregano • 1 Tbsp. smoked paprika • 2 Tbsp. sweet paprika • 2 Tbsp. sugar • 1 Tbsp. salt • Optional: 1 to 2 Tbsp masa harina • Garnish with grated cheddar and chopped onion • Hot cooked rice

METHOD Wearing gloves, tear each dried chili open; brush out and discard seeds. Crumble chiles coarsely; drop in bowl and pour 3 cups boiling water overall. Cover with a plate and soak at least 30 minutes while you brown the meat. In a Dutch oven over medium heat, add 1/2 of the oil and 1/2 of the chopped beef. Sauté until browned, but not cooked through. Repeat with remaining oil and beef. Turn off heat. Strain chiles through sieve and save liquid. Set softened chiles aside. Add 2 1/2 cups of the reserved chili soaking liquid to the browned beef in the Dutch oven. Bring to a boil over high heat. Immediately reduce heat to low; add crumbled bay

leaves. Simmer, covered, for half hour or until tender, stirring occasionally. In small, ungreased skillet, toast cumin seeds over low heat 10 minutes, shaking pan frequently. Drop seeds into coffee grinder and pulse to a fine powder. In a medium-sized bowl, combine ground cumin, softened chiies with any remaining soaking liquid, paprika, garlic, oregano, sugar, and salt. Add 1/2 cup of the broth from the Dutch oven and blend chili mixture to a smooth puree. Stir puree into meat. Add 1/2 cup water. Simmer, partly covered, for 30 minutes. For a thicker chili, if desired, stir in one to two Tbsp. masa harina during last 10 minutes of cooking. To serve, ladle chili into bowls, or mound rice in serving bowls, and ladle chili over. WIZARDRY OF IZ HOSPITALITY WORKS FOUNDER AND BANNOCKBURN RESIDENT IZZY KHARASCH HAS BEEN FEEDING SOUND ADVICE TO RESTAURATEURS FOR MORE THAN 30 YEARS. BY BILL MCLEAN ILLUSTRATION BY BARRY BLITT

Izzy Kharasch didn’t wait very long to propose to his future wife, Kaye. Izzy popped the question before the end of their first date more than 30 years ago. A stunned Kaye said yes … three years later. Wedding Proposal II was staged at the Hyatt Regency restaurant in Chicago, during a dinner date arranged by the ever-patient Izzy. A waiter placed a plate, covered by a silver dome (cloche), in front of Kaye. Kaye removed the small igloo. An engagement ring—only an engagement ring—rested on the plate. The Bannockburn couple and parents of two (Eliana, 24, and Ariella, 22) will celebrate their 28th wedding anniversary on November 13. The other match made in heaven, involving Izzy, especially if you were to ask his Hospitality Works clients? The Izzy Kharasch-restaurant consultancy union. Kharasch—dubbed “The Restaurant Coach” by many and “The Restaurant Doctor” by others— launched Hospitality Works Inc. in 1987, back when anyone with a pager was an owner of a cuttingedge device and when the number of restaurant consultants in the country barely outnumbered the number of tennis players in a singles match. “Spent a lot of time using a typewriter and knocking on doors when I started the company,” recalls the 62-year-old Kharasch, a Army veteran who opened the business, in part, because “I didn’t love working for other people.” Now he loves working with other people. His clients, namely. The Culinary Institute of America (New York) product and former Harvard University executive chef has served more than 700 clients across four continents, helping bars, restaurants, casinos, and even universities transform into efficient, profitable food-service operations.

general manager—also the owner’s best friend—was embezzling. Kharasch was right. The former best friend will likely spend time in jail. About 60 days after Kharasch’s dark discovery, the restaurant started to turn a profit. Restaurant coach, restaurant doctor, restaurant “Columbo”—without the cigar and wrinkly raincoat. Izzy Kharasch, all of the above. “Hospitality Works (based in Deerfield) has always been all about education because education is the greatest tool,” says Kharasch, who has also helped restaurateurs choose locations, create menus, and design interiors. “Nothing is more professionally rewarding to me than knowing that our clients will be prepared to find solutions on their own after receiving assistance from Hospitality Works.” Kharasch appeared several times, as a consultant, on the reality television series Bar Rescue. Born in Chicago Heights, Kharasch attended now-defunct Rich East High School in Park Forest, where he

competed as an all-arounder in gymnastics for the Rockets, with still rings his favorite event, and, admittedly, occasionally focused more on his social life than he did on his social studies homework. He performed the lead role in the school play I Remember Mama and was named “Thespian of the Year” in his senior year. “Doing theater proved very helpful for me, especially as I entered adulthood,” Kharasch says. “I was never jittery around people after high school. I was comfortable in any kind of public setting. A big chunk of my business is sales, and to be successful in a field like that you’d better be willing to look at people in the eye at all times.” Doctors from a medical center looked to Kharasch to help them resuscitate their facility’s reputation not too long ago. A business seminar, conducted by Kharasch, led to the connection. The doctors couldn’t understand why scores of online reviews of the center kept coming up negative. Some of the scathing words shocked the docs. “They asked me,” Kharasch says, “ ‘How can we get better?’ ” Kharasch took a look at the Google reviews. And discovered a common thread. “The criticisms were about the receptionist, the people doing the prep work for surgeries, and the medical center’s accounting employees,” Kharasch says. “None of the negative reviews mentioned any of the doctors; patients were being treated badly by everybody else in the center. “It became clear to the doctors how important good, attentive customer service is in their industry,” he adds. Kharasch likes to walk in his free time these days. Often. He bought a Fitbit about six months ago, the device that keeps a running score of a daily steps competition he’s waging with his brothers. But the activity that counts the most to him is any one that involves the Midwest Veterans Closet, a North Chicago-based organization that’s “like a Goodwill for war Vets,” says Kharasch, who was introduced to Midwest Veterans Closet founder Mary Carmody by his wife, who runs the coffee shop The Wild Roaster in Deerfield. The Midwest Veterans Closet, according to its website, is a “super spreader of food, goods, and dignity for our military heroes.” It’s essentially a lifeline for veterans who are experiencing homelessness or are at-risk of homelessness.
