Or, you can spark your creativity with the exceptional enrichment and arts programs. “I remember when my daughter so badly wanted to take karate,” says Anwar with a laugh. “I wasn’t sure how we could make this work with our schedules, but the Community House offered a karate class three days a week that my daughter loved. This is how I ended up joining the Community House’s Fitness Center. I worked out while my daughter was in class—it was great.” Anwar is a wonderful example of people who find their way to the Community House through its family programming and then stay on as a board member to ensure its continued success. “I’ve always been very involved philanthropically, and I tend to plant my flag in places that I have a personal connection to,” she says. “The Evanston Library where I learned to read or Northwestern University where I went to college are two examples. The Board of Governors at the Community House was a natural next step for me after being a part of its programs and serving on the Woman’s Board and taking on a number of its leadership roles.” Like Anwar, Peter Eatherton, the vice chair of the Board of Governors, discovered the magic of the Community House after he moved to Winnetka. “Peter and I served together on the board

It’s back! The Annual Tree Lighting Ceremony is returning for 2021 in Lake Forest’s historic Market Square. Celebrating its 37th year, this community event presented by the Friends of Lake Forest Parks and Recreation Foundation (Friends Foundation) will feature an abundance of family-friendly fun. From performances by the Lake Forest High School Choristers and the Lake Forest Dance Academy Performance Company dancers to ice sculpting and food trucks from Rosati’s and Taste of Paris, Market Square will have something for the entire family to enjoy. With activities all afternoon leading up to the tree lighting, the day begins at 3 p.m. with ice sculpting by Art Below Zero, arts and crafts activities courtesy of Sage Explorers, food trucks, cider, donuts, and TALA coffee (courtesy of The Oertel Group/Compass), hot chocolate, and snacks (provided by Lake Forest Bank & Trust). Santa will arrive by 3:15 p.m. for visits, and the caroling begins at 4:30 p.m., followed by a performance by the Lake Forest Dance Academy at 5

DARING DESIGN NORTHWESTERN LAKE FOREST’S CAITLIN SARVER SHARES HER ARTISTIC JOURNEY IN PURSUIT OF A CAREER IN THE DIGITAL WORLD. BY RYAN HUDGINS THE NORTH SHORE WEEKEND
During a digital age where many teens habitually snap endless photographs on their iPhones, Caitlin Sarver’s artistry transcends that of her peers. The Lake Forest native, who won a digital photography award for the North Suburban Arts Conference in 2019, recalls being in middle school and photographing her friends in the forest donning flower crowns, drawing inspiration from Pinterest for the shoots. “I’ve always planned and styled photoshoots in the backyard with friends,” says Sarver. “A lot of my early work was reflective of the impact of social media on body image and self-esteem. I wanted to pursue those issues through my photography.” Sarver explored these themes further by experimenting with various makeup techniques on her subjects. One of her favorites was a series of a friend with white makeup accompanied with a bold red lip and popping blue eyeshadow. “My friends go through a lot for these photoshoots,” Sarver says. “For this project, I wanted to shoot in the Lake Forest ravines in the middle of winter. Ice covered everything and I had to slide down the ravine carrying all the camera equipment. It was freezing and I couldn’t feel my fingers after three hours; in the end, it was definitely worth it.” The budding artist also enjoys uncovering new environments for her photographs and laughs about a time when she traveled to a mansion in Staten Island as part of her abandoned building series, which she later discovered was haunted. School of Design in New York City, was pursuing photography. “As I began taking other art classes, I realized I wanted to explore more than just photography, because I discovered how much I like creating projects with Illustrator and Photoshop,” Sarver explains. Sarver transferred to the University of Miami and is now in her junior year pursuing a dual degree in graphic design and creative advertising. “Last year’s spring semester, I had a project where I had to make a booklet inspired by song lyrics,” Sarver recounts. “I chose one of my favorite musicians, Tame Impala, and it took hours and hours because I didn’t have an iPad and had to draw everything out by hand ... I am really proud of that piece.” In fact, the piece helped Sarver land an internship opportunity with JMA promotions in Chicago. An integral component of the company’s mission is to mentor and grow the next generation of music industry executives. Each year since 2007, JMA has produced a Lollapalooza after-show called Nelarusky. The annual event during Lollapalooza week is held at Metro Chicago and has raised more than $400,000 for Special Olympics. Sarver was tasked to tap into her graphic design toolbox to design the promotional materials, this year headlining the artist Omar Apollo. She also interned as part of the JMA team in their “Lollapalooza University,” a partnership between C3 Presents, JMA, and DePaul University. The program is designed to include a full festival immersion experience and a broad look at the inner workings of different areas of the music industry. Sarver attended classes introducing her to different

game hens are a nice addition to festive fall dinner tables. Weighing in at a pound-and-ahalf each, they plate beautifully for one-perperson service. For this recipe, I’ve marinated the hens in a spice rub of paprika, herbs, and garlic, filled them with a nutty blend of wild
and brown rice, toasted pecans, dried cherries, herbs, and mushrooms, and roasted them over onion, sage, and rosemary. The pan juices make a nice gravy, and the roasted onion is a good accompaniment for the stuffing.

Note: I use a rice cooker for most consistent rice results. Follow your rice cooker instructions for correct rice to liquid ratio. Mine calls for 1 part rice to 1 1/2 parts liquid. If yours is different, please adjust the amount of chicken stock accordingly. THE NORTH SHORE WEEKEND

INGREDIENTS FOR THE POULTRY:
• Four cornish game hens • 4 teaspoons salt, divided • 3 cloves garlic, minced and crushed to a paste • Juice from 1/2 fresh lemon • 2 tablespoons olive oil • 2 teaspoons pepper • 1 tablespoon each finely minced tarragon leaves, chives, and parsley • 2 tablespoons paprika FOR THE WILD RICE STUFFING:
• Rice cooker (follow manufacturer instructions for liquid-to-rice ratio; mine calls for 1 cup rice to 1 1/2 cups liquid) • 2 cups brown rice blend (I used Lundberg Countrywild long grain brown, red, and black rice blend) plus 1/2 cup wild rice (I used Reese Minnesota Wild Rice) • 4 cups low-sodium chicken stock • 3 tablespoons each finely minced fresh rosemary leaves, thyme leaves, and sage leaves, divided • 1 stick (½ cup) butter • 1 large yellow onion, peel discarded, chopped to make 2 cups diced • 2 cups finely diced celery • ½ cup dried cherries, chopped • 1 cup water • 8-ounce package cremini mushrooms, very finely chopped • 3 ounces shiitake mushrooms, tough stems discarded, sliced thinly • 1 teaspoon sugar • 1 teaspoon soy sauce • 1 teaspoon salt • ½ cup finely minced flat leaf parsley • ½ cup white wine • ½ cup toasted unsalted pecans, chopped FOR ROASTING:
• 2 tablespoons butter, softened, to spread under skins of birds • 6 to 8 sprigs fresh rosemary, divided (you will save a few for plating later) • 6 to 8 sprigs fresh sage, divided (you will save a few for plating later) • 2 yellow onions, peels discarded, sliced into wedges and separated THE NORTH SHORE WEEKEND
METHOD MAKE MARINADE:
Remove any excess fat from around bird cavity areas. Pat birds dry. Rub birds inside and out with 1/2 of the salt. Combine remaining salt, garlic, lemon, olive oil, pepper, minced herbs, and paprika. Coat birds with mixture. Allow to marinate for two hours or longer in the refrigerator. MAKE WILD RICE STUFFING:
In rice cooker, combine rice with chicken stock. Cook rice according to your rice cooker instructions. In a sauté pan over low heat, melt 1/2 of the butter. Add onion. Cook until tender and translucent. Add celery, chopped cherries, and 1 cup water. Partially cover and cook until tender; about 10 minutes. Remove lid and continue cooking until most of the liquid has evaporated. Move vegetables to a large bowl. Add remaining 1/2 stick of butter and mushrooms. Cook stirring over medium heat until mushrooms have released liquid and most of the liquid has evaporated. Add soy, salt, sugar, and wine. Cook five minutes more. Combine mushrooms with celery/onion/cherry mixture. Stir in cooked rice. Add toasted chopped pecans. Adjust seasoning to taste with salt and pepper. Preheat oven to 350 degrees. In a roasting pan, scatter the wedges of onion and sprigs of rosemary and sage to make a “rack” for the birds to rest on during roasting. (Reserve a few herb sprigs to add to serving platter, or individual plates for service.) Carefully loosen skin over each bird breast and spread a bit of butter under the skin. Loosely fill the cavity of each bird with stuffing. Place remaining stuffing aside to warm later. Tie bird legs closed with a bit of twine. Place the stuffed birds over the rack of onions and herbs. Place in oven for 50 minutes to 1 hour until golden brown and thickest part of meat reads 165 F on meat thermometer. Remove birds from pan. If onions are not completely soft, cover pan with foil and continue roasting for 10 minutes. Discard cooked herbs. Remove cooked onions to a serving dish. If desired, prepare gravy from remaining pan juices. Warm reserved stuffing in microwave. To serve hens, plate individually with spoons of stuffing, onion, and sage sprigs, or place birds on a serving platter, surround with reserved rosemary and sage, and serve the rice in a side dish. FRESH SUGAR PUMPKIN CREAM PIE BY MONICA KASS ROGERS THE NORTH SHORE WEEKEND
Turns out those cute pumpkins you purchased for Fall decorating are very easy to bake into delicious fresh pumpkin pies. With names like Baby Bear, Cinderella, and Early Sweet Sugar Pie, these 1-½ to 2-pound darlings stand about six to eight inches tall, have sweet, dense flesh and were cultivated specifically for cooking and baking. Our Sugar Pumpkin Cream Pie is made with Sugar Pie pumpkin, although you can use one of the other varieties. Simply cut in half, culled of seeds and strings, and roast for 50 minutes, the little pumpkin yields the perfect amount of smooth flesh to make two pies. To make this dessert extra special, we’ve included maple sugar and cream in the mix, plus cinnamon, ginger, and nutmeg. You’ll separate the yolks from the whites of the eggs in the recipe, whipping the whites to soft peaks and then folding them in to the filling for a luscious velvety result. MAKES 2, 9-INCH-DEEP DISH PIES
INGREDIENTS FOR THE ROAST PUMPKIN:
• 1, 1 ½ to 2 pound Early Sweet Sugar Pie (or another baking variety) pumpkin FOR THE PIE CRUSTS:
• 2 ¼ cups all-purpose flour • 2 tsp sugar • 1 tsp salt • 1 cup (2 sticks) ice cold unsalted butter, cut into pieces • 5 Tbsp ice-cold milk or cream (as needed) • 1 egg, whisked with 1 tsp water for egg wash FOR THE SUGAR PUMPKIN PIE FILLING
• 2 cups pumpkin flesh • Four large eggs, separated • ⅔ cup dark brown sugar, packed • 1/2 cup maple syrup • 2 tsp ground cinnamon • 1 tsp salt • ¾ tsp powdered ginger • ⅛ tsp grated nutmeg (plus a bit more to sprinkle over the whipped cream garnish) • ¾ cup Karo Brown Sugar corn syrup OR dark corn syrup • 1 ¾ cups whipping cream, or half-andhalf • Garnish with additional whipped cream and sprinkling of grated nutmeg

METHOD ROAST PUMPKIN:
Preheat oven to 400 degrees. Wash pumpkin well and pat dry. Using a sharp knife, cut pumpkin in half. Using a serrated-edged spoon scrape out and discard seeds and fibers. Place pumpkin halves, cut side down in baking dish and roast for 50 minutes until flesh is very tender. (Make pie crusts while pumpkin roasts.) When roast pumpkin is cool enough to handle, scoop out flesh. MAKE PIE CRUSTS:
In a large shallow bowl, sift the flour and stir salt and sugar in. Cut the two sticks of butter into tiny pieces and scatter over the flour. Using two knives, one in each hand, pull knives in a motion from the center out to cut the butter into the flour. Then, with cool fingertips, toss and break up each of the remaining larger bits into the flour until it resembles damp sand. Pour in the milk or cream, a small amount at a time, and stir with a fork until the dough begins to gather up. Don’t add too much liquid, it’s OK if it’s not all one mass. Cover your clean worksurface with two sheets of overlapping plastic wrap to make a large square. Scrape the pie
dough onto the center of the plastic. Pull the ends of plastic up around the dough and squeeze to form a nice ball of dough. Cut ball of dough into two pieces. Cover work surface with another two overlapping pieces of plastic wrap. Place one of the dough balls on the center. Flatten with your hands to make a ½ inch-tall disk. Cover with two more pieces of plastic wrap. Gently pat out dough through the plastic and then roll out dough to make a large circle. Place plastic wrapped circle on a pizza pan and place in refrigerator. Repeat the process with the other piece of dough. Allow dough to chill for ½ hour. Once chilled, remove one of the plastic wrapped pie crust circles from fridge. Roll out a bit to ensure the circle is one inch larger than the circumference of your pie dish. Remove plastic from one side of the crust. Flip crust over pie plate and ease into the plate, removing the remaining plastic. Gently nudge crust into the plate, pressing down to make sure there are no air pockets, leaving the excess dough around the circle extending over the edge of the dish. Prick the bottom of the crust with a fork to ensure there are no air

pockets. Repeat process with second pie crust. Tuck and fold edge of crust under, and crimp attractively to form the edge of each pie. Brush both pie crusts with egg wash. Set aside. MAKE SUGAR PUMPKIN CREAM FILLING:
Preheat oven to 425 degrees. Measure 2 cups of pumpkin flesh into a large bowl. Using an immersion blender or whisk, whip pumpkin into a puree. Blend in brown sugar, maple syrup, cinnamon, salt, ginger, nutmeg and egg yolks. Whisk in cream and corn syrup until no streaks remain. In the bowl of a stand mixer, or by hand, whip egg whites until soft peaks form. Using a spatula and an over-under motion, fold whipped egg whites into filling until no streaks remain. Divide filling between the two pie crusts. Rap filled pie dishes on counter several times to release any trapped air bubbles. Bake for 10 minutes at 425 degrees. Decrease heat to 350 degrees and continue baking pies 35 to 40-minutes or until filling is set (just jiggles a bit) and crusts are golden brown. Cool. Serve with dollops of whipped cream topped with a light sprinkling of nutmeg. THE NORTH SHORE WEEKEND

The wooden floor in Aaron Umsted’s bedroom in Oklahoma never had a chance. Especially around Tony Awards time. As a teen growing up in Durant, Oklahoma, Umsted would plop in a VHS tape— remember those?—and record the televised awards show. He’d then marvel at the choreography of the nominated musicals and do his best to imitate every step, every movement, along his bedroom floor. “I scuffed up that floor, badly,” Umsted, now 35, recalls. Count on him to leave another indelible mark in Illinois—this time as Children’s Theatre of Winnetka’s first-year Artistic Director/Show Director. The Chicago-based teacher, actor, dancer, and director/choreographer can’t wait for audiences to delight in the production of CTW’s You’re a Good Man, Charlie Brown (this weekend, November 1821). “Dancing is in my blood,” says Umsted, who earned a Jeff Award nomination in 2018 for his portrayal of Will Parker in, yep, Oklahoma!, at the Marriott Theatre in Lincolnshire. “I approach everything in theater as a dancer. I’m a ‘choreographed’ director, a very ‘choreographed’ director. “I approach everything with joy and passion. I enjoy dancing; I’m passionate about dancing. It’s fun. If it’s not fun, what’s the point?” Umsted, back when he was the lone male dancer at Durant High School, had to have a blast in musical theater at Southeastern Oklahoma State University, also in Durant, because DHS didn’t have a theatre department. From his sophomore year until the end of his senior year at DHS, Umsted enrolled in SOSU math, history, nutrition, and government classes and snatched lead roles—including Billy Crocker in Anything Goes, as a 17-year-old—from college-aged actors. “I was a lonely kid in high school,” Umsted says. “It was rough going for a while. But I found happiness while training and performing as a dancer, first in jazz and tap as a 15-year-old, and later in ballet.” The University of Oklahoma welcomed him with open arms, and wide-open theater doors, next. The Musical Theatre major landed the lead role, Prince Dauntless, in

Once Upon a Mattress and intensified his love for dance under the tutelage of Lyn Cramer, a professor of Musical Theatre Dance at the school in Norman. “She’s a powerful person, full of passion, and she’s still there,” Umsted says, adding another mentor with heaps of musical theater knowledge, UO Professor of Performance Paul Christman, continues to send him

scripts and scores. “Lyn is all things dance. What a force.” Umsted returned to Southeastern Oklahoma State University, where he earned a Master of Education in Theatre Pedagogy. He then arrived in New York as a dancer, bent on scuffing up more hardwood and making a living along the way. Umsted toured North America with the Broadway companies of A Chorus Line, Disney’s Mary Poppins, and the Tony Award-winning revival of Anything Goes. His run in New York lasted six years. “I found there to be too much focus on Broadway in New York,” says Umsted, in his sixth year as a Chicagoan. “I wanted to dance, direct, choreograph, and teach. Do it all, basically. I’d met friends in Chicago, while touring, and I remember looking around and thinking, ‘OK, I love this neighborhood, and I love that neighborhood, too.’ “I was excited to move and work here.” Umsted’s Chicago-area credits, in addition to his stint at the Marriott Theatre Lincolnshire, include productions with the Chicago Shakespeare Theatre, Paramount Theatre, and Drury Lane Theatre in Oakbrook. He recently taught musical theatre classes at Roosevelt University and at the Chicago Academy for the Arts. And now he’s laser-fo-

cused on guiding and inspiring North Shore children who will entertain and enthrall audiences as cast members of a musical comedy that has a serious message amid a persistent pandemic: finding, and embracing, happiness. The late composer/author Clark Gesner created You’re a Good Man, Charlie Brown in 1967, after getting approval from Charles M. Schulz to base the light play on Schulz’s Peanuts characters. It addresses a slew of feelings, from wild optimism to utter despair. “It identifies what it feels like to be lonely, happy, loved, and sad,” Umsted days. “Each scene is set up on stage like a series of comic-strip panels, with a punch line at the end. Life, for many, has many ups and downs. Struggles in everyday life are real experiences, challenging experiences. Finding hope, despite difficulties, is a theme in You’re a Good Man, Charlie Brown. “You think of Charlie Brown,” he adds, “and you think, ‘This kid gets rejected so many times, yet he never loses hope.’ ” A winning combination? The Children’s Theatre of Winnetka and Aaron Umsted, in a landslide. The sense of community struck Umsted as soon as he met the genuinely enthusiastic parents of the genuinely enthusiastic performers. “It still amazes me,” Umsted says. “It’s been a wonderful project, this production, with everyone coming together, most of them more than willing to do behind-the-scenes work. Parents and volunteers are helping me with the sets and with the costumes, with rehearsal set-up and props and ticket sales. Their kindness is through the roof. “And the kids—I love how happy they are.” You can’t help but root for Charlie Brown, the kid with less hair than most newborns, the kid with a surplus of latent cheerfulness that’s longing, pressing, to surface and stick around until his happy eyes close at bedtime. Charlie Brown finds happiness (no spoiler alert needed). Happiness, he discovers, is loving something. Or loving someone. But you can’t express that love until you do something else. Something vital. Umsted knows exactly what that is. “Being ourselves,” he says, “is what we need to find happiness.” You’re a good man, too, Aaron Umsted.
