TRY THIS AT HOME: JIAOZI shrimp filling: lb. shrimp, peeled, deveined and diced

tsp rice cooking wine 1/2

cup water chestnuts, diced 1 2

tsp ginger, grated

garlic cloves, minced

tsp sesame oil 1

tbsp salt

tsp white ground pepper

combine above ingredients and mix well. cover and refrigerate.

dumpling: 1

pack age dumpling wrappers

line baking sheet with parchment paper. lightly dust with flour. hold wrapper flat in a slightly cupped hand and fill with 2 tsp of filling, leaving a 1/2 -inch border around the wrapper. fold, pleat and press to enclose, creating a half -moon shape. place on baking sheet. repeat with remaining wrappers. heat a large nonstick sautĂŠ pan on medium-high. add 1 1/2 tbsp canola oil. once oil is hot but not smoking, add dumplings one at a time, with sealed edges facing up in a circular pat tern ( not touching ) . fry dumplings until bot toms are light golden brown. add enough water to the pan to cover dumplings halfway. cover pan immediately and lower heat to medium-low. let dumplings steam until almost all water is absorbed (5 minutes ) . uncover and add 1 tsp sesame oil to fry dumplings for another minute. serve with fried bot toms facing up.
