Along the way, civilization has amassed lots of laws and rules. Some, like the Seven Natural Laws of the Universe, can never change. The law of cause and effect, for example, says that for every action, there is an equal and opposite reaction. Or take the law of rhythm, which affirms that change is constant. Or the law of polarity, which holds that everything has an opposite; the Taoist yin-yang symbol, for example, features a dark swirl associated with shadows and femininity, and a corresponding light swirl associated with growth and passion. And then there are the countless other laws—rules, really, if that—that say you can’t wear white after Labor Day (What about winter white?), or mix stripes with plaids (Fashion designers would beg to differ), or sport open-toe shoes in winter (Well, that’s just common sense). At this time they need extra energy as the males define and defend territories and the females build the nests and produce eggs. Attention to detail makes all the difference in this Kitchen Tune-Up remodel that brings the entire kitchen and dining areas to life. Opening the kitchen and designing it to blend with the rest of this lovely west-side home created a new space that truly works.
T
his kitchen had dated oak cabinetry, but more than anything the homeowners felt that once in the kitchen they were trapped. The layout was a standard u-shape, with one side a peninsula attached to the far wall. They wanted a free-standing island, and cannot be happier with the results. They did a lot of research before starting, and when they began working with Rachel and Adam Phillips, owners of Kitchen Tune-Up, they knew they had made the right choice. “Kitchen Tune-Up knew exactly how to create a space that we could use and bring everything up-todate. They reconfigured the cabinets, and even added a small specialty cabinet. In fact, they took advantage of every inch of space, and it was this attention to details that made all the difference in the world.” The bi-level peninsula was a huge factor in making the kitchen feel cut-off, so creating a single level island was one of the most transformative changes. “Kitchen Tune-Up opened up the kitchen so now it’s a great area where we can all congregate. They rebuilt the wall where the peninsula was once attached, and the island is now a favorite place for my husband and myself when here alone, but also for our grandchildren when they visit. No longer is there a wall between us.” The homeowners were also pleased to find they could rely on Rachel’s discerning eye for selecting the best colors and materials. For example, she chose a beautiful Bradshaw quartz for the countertops and a striking marble and crackled glass accent band that also provided a natural break for the porcelain tiled backsplash to be placed two ways—horizontally below and diagonally above the band—another detail that made a real design difference. The cabinets were refaced with curved frames and raised panels, in a Bisque color given a walnut glaze, all adding an elegant look. The cabinets were kept level to provide a pleasing space for displays. New, larger tile, in a staggered pattern, was used for the floor, carried into the walk-in pantry, and to the entry of the home, creating a cohesive look. New appliances were also installed. “We wanted a kitchen that was bright, sunshiny, and open,” says the homeowner. “Now the whole family is happy here. We’re no longer trapped behind the wall, there’s a natural flow from preparing meals to entertaining. Crazy for Quilts Quilt-making arguably began in ancient Egypt, only one of the many countries worldwide that even today sustains a quilting tradition.
P
ilgrims brought English quilts with them on the Mayflower in 1620, transplanting the quilting culture to the New World. Quilts were an integral part of everyday life in the colonies; family members scrupulously saved every scrap of cloth to make quilts. In the brutal cold of a Massachusetts mid-winter, warm quilts meant survival. Given that all the quilt-piecing, blocking, and sewing were done by hand, quiltmaking was necessarily labor-intensive; quilts at first were simple utilitarian coverings that, over time, evolved into increasingly more patterned, vivid, and fanciful bedding. Usually, it was the women who gathered ’round to quilt. A revolutionary new invention advanced the craft of quilting by leaps and bounds: Right: The 2018 Opportunity Quilt. Sue Daley’s English paper-pieced pattern, Quattro Colour, with a uniquely made appliquéd border, was chosen as the Opportunity Quilt for the 2018 Common Threads Regional Quilt Show. The original pattern made a 60” x 60” quilt. An appliquéd border was designed to make a finished 85” x 85” bed-sized quilt. Nearly 40 Prairie Quilt Guild members, many of them award-winning quilters, were needed to create the 100 paper-pieced blocks and the 20 appliquéd blocks. PQG member Jan Hutchison, a nationally acclaimed longarm quilter, did the quilting. The quilt brought home the Grand Champion ribbon from the 2017 Kansas State Fair, and it will be given away on the last day of the Common Threads Regional Quilt Show, June 23, 2018.

By 1880, most households owned one, and quilters, newly emancipated from the tedious work of hand-sewing, began to create quilts that bordered on works of art. One popular quilt that collectors perennially love is the crazy quilt. Quilters use such exotic fabrics as velvet and satin, festooned with lace, beadwork, and ribbons. Other types of collectable specialty quilts include friendship quilts, upon which the quilters signed their names; wedding ring quilts, often gifted in marriage; and album quilts, which featured nine blocks of quilted fabric portraying discrete motifs, such as bouquets, birds, and landmarks. It’s said that making an album quilt was the first time quilters bought—bought!—fabric to quilt. A century later, quilting made another quantum leap via the long-arm quilting machine. In the 1980s, several companies began manufacturing these large programmable machines, and quilters went crazy for them. Instead of having to deal with three layers—the quilt top, the intermediate layer of batting, and the quilt backing—the long-arm sews all three layers into a finished quilt. Even better, the quilter can program the long-arm to create a huge variety of decorative over-stitching, including loops, flowers, waves, quatrefoils, paisleys, and scallops that add another dimension to the quilt. For quilt collectors and quilters alike, the Internet is also a vast treasure trove. Quilt collectors have endless on-line possibilities at their fingertips. And, beyond the local fabric store, quilters can choose among literally thousands of materials, patterns, motifs, and embellishments. On-line tutorials, quilting blogs, and esoteric advice are readily available, very like the quilters of yesteryear who gathered to chat and sew ’round the quilting frame. Save the dates! The Prairie Quilt Guild presents the Common Threads Regional Quilt Show, June 21-23, at Wichita’s Century II Expo Hall. An Opportunity Quilt, entitled “Quattro Colour” and awarded the Grand Champion ribbon at the 2017 Kansas State Fair, will be given away on June 23rd.

Images include the horse, the dragonfly, the gecko, Kokopelli, and the roadrunner. Its bright colors are also evocative of the sun-filled hues often found in Southwestern Native American art.

Selvages are a record of who made the fabric and sometimes, the designers’ names and colors used, details only seen when you’re up close. Dresden Plate is a circular quilt pattern that began in the 1920s; it’s a very old pattern that remains as popular today as it was then. This is a detail of an appliquéd and embellished quilt. The butterfly is actually three-dimensional, and the beads are sewn onto the quilt.

My oh my, it's time for pie. Creamy coconut pie is the stuff that dreams are made of!
I
n the winter we enjoy pies filled with loads of nuts, such as pecans and walnuts, or the heady flavors of cinnamon and pumpkin, but when spring comes around it’s time to lighten up the tastes—say, with a freshly baked coconut cream pie. A lot of bakers have their favorite version of coconut cream pies, and fortunately, the Internet gives us easy access to as many different types as we might possibly want. This particular recipe comes from our own personal taste test at the restaurant Modern Love, located in Omaha, Nebraska. The owner is the well-known restaurateur from New York, Isa Chandra Moskowitz, and hands-down leader in the plant-based food revolution. She hosted her own cooking show, Post Punked Kitchen, that aired on Brooklyn and Manhattan public-access television cable TV from 2003 to 2005. In a small bowl or measuring cup, whisk together 1/2 cup of the nondairy milk with the arrowroot powder. Set aside. In a large, heavy-bottomed saucepan, whisk together the remaining 1/2 cup of nondairy milk with the agar powder. Over medium-high heat, bring the mixture to a boil, stirring constantly. Allow it to boil for about 1 minute, then lower the heat to medium-low. In a slow, steady stream, pour in the arrowroot mixture (you might need to give it a brief stir before pouring), stirring this mixture constantly. Pour in the coconut milk, lemon juice, and sugar. Using a wire whisk, stir constantly as the mixture cooks until thickened, 3 to 5 minutes. Remove from the heat and stir in the vanilla, coconut extract, salt, and shredded coconut. Immediately pour into the pre-baked graham cracker pie crust. If you have any leftover filling, pour that into a small serving dish and there you go, bonus coconut custard! Allow the pie to cool on a countertop for 15 minutes, then carefully transfer to the refrigerator and allow to chill for at least 2 hours. Cover tightly in plastic wrap, lightly setting the wrap on the custard, to avoid water from forming, until ready to serve.

The Duet of Form and Function, from cover. “Dear, put on every piece of jewelry you wish, then take one piece off.” And as for other such beliefs, practices, or customs, it was the first-century Roman author and architect Marcus Vitruvius Pollio who first articulated the precept that, ideally, any man-made structure should be solid, useful, and beautiful. Some eighteen centuries later, in 1896, the lesser-known American architect Louis Sullivan, upon reading Pollio’s de Architectura, not only broadened this ancient axiom but also, for good measure, coined the phrase “form follows function.” Actually, Sullivan said, “form ever follows function,” but the simpler phrase just sounded catchier—and therefore stuck. Sullivan himself proclaimed it the truth by saying, in the grandiloquent cadence of his time, "Whether it be the sweeping eagle in his flight, or the open apple-blossom, the toiling work-horse, the blithe swan, the branching oak, the winding stream at its base, the drifting clouds, over all the coursing sun, form ever follows function, and this is the law. Where function does not change, form does not change.” And thus “form follows function” has become the mantra of industrial design professionals worldwide. But wait: Does this so-called “law” really hold true? Think, for example, about structures like homes and buildings. Sullivan was primarily an industrial architect who in 1930 wrote an article titled “The Tall Office Building Artistically Considered,” which at that time proposed an entirely new form: the office building. Today, urban dwellers can’t imagine a form different from the often tall and rectangular structures that define their cities. If form follows function, and if an office building is apportioned into smaller apartment units, can you always tell it used to be an office building, despite the makeover? Can you still discern the form from the function? Does, say, a gas station always look like a gas station, no matter what its subsequent function has become? Similarly, can a former warehouse ever look like a whole ’nother thing, even if it’s converted into smaller studio units, and even with lowered ceilings? The candid answer is “yes.” Form does follow function. But maybe it’s more like a duet, rather than a hard and fast singular rule, or law. If

The Duet of Form and Function, from page 11 you take the ’way-back machine to prehistory, you can imagine a cave-person rummaging around for a stick or bone or stone, something that would fit nicely into the palm for, say, defense. And this Paleolith might have discovered, by accident or design, that a pointy stick was great for poking holes in stuff. In both cases, the form existed before the function. In the end, whether form follows function or vice-versa, you’re missing the point. Both can easily co-exist: form and function. A pleasant duet, or even a flow, just as spring always follows winter. And, according to any Internet search, you’ll discover that the debate regarding form and function is apparently already beside the question, irrelevant, passé. Technology and all of its “intuitive” devices have pretty much rendered the original topic moot. Function, Repurposed Lately, Mark Wilkes and son Taylor have gotten into building custom urban farmhouse tables. The table legs are reproductions of 19th-century cast-iron jewelry manufacturing tables, and the wood is Douglas fir, reclaimed from the interior of an old grain elevator. Très Bon! The charm of mis-matched vintage china, polished silver, and fine linens, would make a perfect table setting for this rustic, French-inspired luncheon. These are classic recipes that never go out of style. What makes this the perfect menu de jour is that the food is casual, light, and easy to prepare. Plus, since much of it can be made the day before, and is served at room temperature, you’ll find these a great addition to your repertoire of recipes for taking to potlucks and get togethers all year long. Lentilles du Puy Salade with Dijon Vinaigrette Puy Lentils, or French Green Lentils, are called “the caviar of lentils,” and rightfully so. They have a distinctive peppery flavor, and hold their shape well, making them an especially good choice for salads. Make sure to use a good quality extra virgin olive oil. For the Salad Dressing 1/3 cup apple cider vinegar 1/3 cup extra virgin olive oil 1 tablespoon agave nectar 1 tablespoon Dijon mustard 1 teaspoon salt 1/2 teaspoon pepper 1 tablespoon finely diced shallot
Put all the ingredients in a jar with a lid, shake well, and pour into a large bowl.
For the Salad 1 1/2 cup puy lentils, washed 1 bay leaf 1/4 teaspoon salt 3/4 cup carrots, cut into 1/4” pieces 1 cup cooked beets, cut into 1/2” pieces 4-5 fresh beet leaves
Rinse the lentils and put into a large saucepan with water to cover by several inches. Add the bay leaf and bring to a boil, reduce the heat, and simmer for approximately 20 minutes, or until the lentils are just tender. Be careful not to overcook them. Stir in 1/4 teaspoon salt and let sit for a few minutes. Drain well, and toss them in the vinaigrette. The lentils will be warm when you toss them in the dressing, the full flavors will develop as the salad cools to room temperature. Prepare up to this point if fixing the day before. Add the carrots and beets before serving, and adjust seasoning to taste. Waiting to add the vegetables will keep the colors vibrant. Garnish with fresh beet leaves.
Pissaladière This French classic is essentially a pizza-styled tart. You can use white or whole-wheat flour, your favorite pizza crust, or puff pastry, and prepare it in any size pan you want. In keeping with the rustic theme, this crust is quick and easy to prepare using olive oil and a blend of white and whole-wheat flours. The key to its unique flavor is to cook the onions slowly, and to use freshly grated nutmeg. Pissaladière is traditionally served at room temperature. For the pastry 1 cup all-purpose flour 1 cup whole-wheat pastry flour 1 teaspoon dried rosemary 1 teaspoon dried oregano 1 teaspoon salt 6 tablespoons olive oil 3-5 tablespoons cold water ¼ cup flour for rolling dough out
Combine the flour, herbs, and salt together in a bowl. Add the olive oil, stirring with a fork. Add the cold water stirring quickly to bring the dough together, using only as much water as is necessary to form into a ball. Gently knead the dough in the bowl a few times. Remove the dough and shape into a disk if you are baking it in a round tart pan. For a rectangular tart, shape the dough into a block. Wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes. The dough can be prepared up to this point and baked the following day, prior to serving, or it can be blind baked at this point. For the topping 3 tablespoons olive oil 2 large yellow onions, thinly sliced 2 garlic cloves, crushed 1 14-ounce can tomatoes, chopped

Heat the olive oil in a large heavy skillet over a medium heat. Add the onions and sauté until they begin to turn translucent then add the garlic and cook for an additional 3–5 minutes. Stir in the tomatoes, sugar, thyme, and nutmeg. Add salt and pepper to taste. The onion mixture can be refrigerated overnight, and brought to room temperature before assembly. To assemble the tart Preheat the oven to 400 degrees. With a lightly floured rolling pin, roll out the chilled dough to the appropriate shape and size, and place into the tart pan, forming the edges. Prick the dough with the tins of a fork, line with parchment paper, add dried beans for weight, and bake for about 15 minutes. Remove the beans and paper for the last 5 to 10 minutes, baking until the crust is nicely browned. Remove and cool. Add the olives and capers to the onion mixture, and spoon into the baked, and cooled, crust. Garnish with the fresh parsley. Waiting to add the filling to the crust just before serving keeps the crust crisp.

Preheat oven to 350˚F. In a blender, put the sour cream and the next 8 ingredients. Blend to obtain a nice creamy texture. Remove pits from cherries. Mix cherries and blended contents in a bowl. Pour filling in piecrust and bake for 25-30 minutes.
