Dining together with family and friends is something to be enjoyed and savored. It’s a time when everything else can be put on hold and your attention can shift to sharing food, engaging in conversation, and creating memories. Unfortunately, the pleasure of getting together for meals has mostly been relegated to holidays and special occasions. Today’s large, modern kitchens now have islands to accommodate members of the family as they hurry about, grab a bite, and return to their busy schedules. Continued on page 10.

The concept of a dining room arose in the Middle Ages. What was first a small room with planks or boards set upon trestles has evolved into highly stylized rooms, furniture, and accessories. She says, “I fabricate custom drapery, bedding, and accessories for the home. Most folks can’t think of one reason to appreciate a bat for a whole month, let alone invite them to live in their yard for even a night. Well, guess what, you probably have bats and don’t even know it. Ever sit out on your driveway or patio after dusk to watch a meteor shower? If so, you may have noticed something silently fly by and wondered if it could be a large insect or perhaps a screech owl. If there’s a full moon, you may see a dark silhouette that flits, dives, and twists in the air right in front of you, missing you by an inch, as if you are in the way. Don’t be afraid. One story holds that upper-class German families began decking their Christmas trees with status-symbol gilded fruit and nuts and that these decorations were soon superseded by even more expensive and exclusive silvered glass ornaments. F.W. Woolworth introduced the American public to these exquisite German decorations in 1890. More than likely, few families own any of these very old glass, tin, paper, or wood ornaments, but, just as likely, they do possess at least a few treasured heirloom decorations passed down from grandparents or parents. Many older pieces may still be acquired at estate sales and auctions, flea markets, antique shops, and on the Internet; reminiscences about who found them and where become the first of many memories that will eventually become part and parcel of their charm. And at least one company today is making quality reproductions of the venerated German blown-glass originals in addition to fetching designs both new and nostalgic, just waiting to become family memory-makers. No doubt there are a few people who collect vintage ornaments for their monetary value or for the sake of collecting, but for most, the inestimable value of Christmas ornaments, heirloom or not, lies in the intangible but significant recollections they represent. ■ Autumn 2018

She explained, in great detail, how bats fly, how they can cling with tiny feet, and how they use echolocation to hunt prey, maneuvering through the night with speed and agility. Saving the best for last, the naturalist reached into the cardboard box that we were all wondering about, and, ever so gently, brought up a tiny, quivering “big brown bat.” Mind you, the name does not suit a creature of no more than four inches in length but with a wingspan of more than a foot. She placed the bat on her sweatshirt, where it clung like a furry stickpin. His large brown eyes seemed focused on his job—education. No longer able to survive in the wild due to an injury, the little fellow showed us that there’s nothing to fear. Small and delicate, bats in our area are colonizing and living in large groups. Some bats migrate, and some hibernate. They hunt insects, nurse their young, are meticulously clean, and are not any more likely to carry rabies than any other mammal. My heart was won over! Here is a tiny beneficial creature that we should all invite to live in our yards, harbor no fear of, or discourage in any way. Want mosquito control in your yard? Put up a bat box! ■

uring the holidays, just about everyone receives a picture of the Northern Cardinal. He might just be the number one Christmas card pinup! The Northern Cardinal, as this bird is officially called, is popular for good reason. No other bird looks so good against fallen snow. Both the male and the female sing a pleasant, simple song that’s often counter-sung: The male answers the female on a slightly different pitch. Cardinals seem to prosper even with the habitat alterations accompanying our home-building efforts. Few other songbirds reward us so richly or so rapidly if we scatter a few handfuls of their favorite seed—black oil sunflower seed—on the ground or on a low feeding table. The Northern Cardinal is really not a hard bird to please. He will often be the first bird to feed at dawn, and the last at night. In spring, you’ll enjoy seeing the male offer the female a carefully selected seed as part of their “mate-feeding ritual.” They are ground feeders; however, they will feed on higher flat surfaces as well. Wood platform feeders, including hoppers, fly-throughs, and open platform feeders, placed five feet or so above ground level, are the perfect way to attract them. Perches on most tube feeders are too small to allow the Northern Cardinal to comfortably feed. Cardinals have greatly increased their breeding range over the past 80 years. They do not migrate, but simply keep pushing farther north and west as suburbs and bird feeders proliferate. Northern Cardinals are the one “red light” you’ll be happy to attract! Their geographical range is throughout most of the eastern and central states, the South, and much of the arid Southwest, since they prefer a dense, shrubby habitat. stir thoroughly, and bring to a low simmer. Continue to cook, stirring constantly, until thickened, approximately 5 minutes. Remove from the heat and stir in the vanilla and almond extracts. Let cool for a few minutes then pour into 4 individual serving dishes and cover with plastic wrap, placing it upon the surface to avoid a film from forming. Chill in refrigerator for at least 2 hours. Can be made up to this point the day before. When ready to serve, remove plastic wrap, and spoon 1 generous tablespoon of Amarena Cherries on top. Serves 4.

The simple act of taking time to sit around a table and enjoy a meal with others, as a family, or with friends, is one of the easiest ways to lead a healthier and happier life. Slowing down is a great way to reduce stress. Eating in a relaxed and supportive environment is not only better for digestion, the food actually tastes better and, perhaps most importantly, eating together strengthens the bonds that keep us together as family and friends. Although sharing meals is common to every society, the customs and rules that are to be observed in each culture are as different as the types of cuisines. The concept of a dining room, and the accompanying special tables, arose in the Middle Ages. What was first a parlor, or small room, with planks or boards set upon trestles, has evolved into highly stylized rooms, furniture, and accessories. Continues on page 11.

Beyond the table, the sideboard is another piece of dining room furniture that has stood the test of time. First appearing in the dining rooms of the wealthy in the early 1700s, they continue to be must-have items. A Moveable Peace Now that summer’s temperatures have mercifully become more temperate, now that summer’s sun slants lower on the horizon, now that summer’s light no longer bleaches everything white-hot, now that the season has turned toward autumn’s beneficent shades and shadows, it’s time to go walking.

es, walking. Walking in honor of autumn, walking in celebration of the new season come ’round again, walking to find yourself anew in the quiet spaces of your mind. Depending on the scope of your ambition, you may decide to walk around your neighborhood— or beyond—to see what’s been going on lately while you’ve been hiding from all the relentless summer heat. Take the time to walk purposefully, not just schlepp along: Head up, shoulders slightly back, abdomen tight, rear tucked under. Wear real walking shoes or cross-trainers, not, definitely not, flip-flops. And walk slowly, even leisurely; this isn’t a race. Remember, the goal is to discover whatever the landscape provides. Although walking certainly has exercise benefits, you’re looking for something else: connecting with, drawing from, breathing in the natural world, which has always been mankind’s wellspring of inspiration, relaxation, and well-being. Look at the way the sun backlights that row of late-summer geraniums. Observe how oaks, having dropped their acorns for squirrels to find and bury, now seem to relax, gathering strength from the cooling earth for over-wintering. Be inspired by those Victorians, and stoop to examine the changing colors of fallen leaves. And, knowing it’ll all look different tomorrow, go walking again, discovering anew the primal source of your own quiet spaces. ■

It was not until the late 18th century, however, that the lamp came to have a separate chamber for the oil and a glass chimney. Next came gas lighting, which was used until the development of electricity, which began to light homes across the country at the turn of the 19th century. Dining rooms of today still benefit from this long history of various sources of lighting, and many of the ancient styles continue to be used. Sconces, candelabras, chandeliers, pendants, and lamps of every description are used to create multiple layers of warm diffused light to highlight meals. Whatever kind of lighting sources you choose, they should all coordinate and lend a sense of harmony to your dining room. World Famous Smithsonian New Mexican Apple Pie From The Daily Pie Cafe, located in Pie Town, New Mexico 4 large Granny Smith apples, peeled, cored, and sliced 1/2-inch thick 1 cup sugar 3 tablespoons flour 2 teaspoons cinnamon 3/4 teaspoon nutmeg 1/2 cup green chile, hot or mild 3/4 cup pine nuts 1 tablespoon fresh lemon juice 2 unbaked pastry crusts; your favorite crust, unbaked; or 2 pie shells 1 tablespoon soymilk 1 tablespoon natural sugar
Preheat the oven to 425 degrees. Put the apple slices into a large mixing bowl. Add the sugar, flour, cinnamon, nutmeg, chile, pine nuts, and lemon juice and mix well. Set it aside and prepare the crust. Put one crust into a 10-inch pie pan. Put the apple mixture into the pastry, mounding it in the center. Top with the second crust. Crimp, flute the edges, and cut several 1-inch vents in the top crust. (If you’ve made your own crust and have some left over, you can cut out some chiles for the top of the pie.) Brush the top with soymilk and sprinkle over the natural sugar. Place an oven rack in the lowest position. Bake the pie at 425 degrees for 15 minutes, then at 400 degrees for one hour. Place foil strips around the edge of the crust if it begins to brown too much. The pie is done when the juices bubble thickly around the outer edge; test for apple-doneness with a knife. Let the pie cool to room temperature before serving. You can make this pie the day before, lightly cover it, and keep it in a cool place.

W
ith autumn come memories of the time we called New Mexico home. Along the roadsides, vendors were busily roasting and selling the annual harvest of Hatch green chiles. The aroma alone was enough to get the taste buds working overtime. Fortunately, traces of the Santa Fe Trail have made their way into Wichita with what New Mexicans affectionately call “the pungent pod.” One local nursery, Johnson’s Garden Center, makes the annual trek to New Mexico for a supply of green chiles, which they bring back to roast right here. Whole Foods also sets up a fresh roasting stand. And when roasting is done for the season, they put up plenty in their freezers to accommodate those of us still hungry for more. If you’ve never tasted fresh roasted Hatch green chiles, you may wonder about its fans’ enthusiasm, but once you’ve pumped up a few recipes with the somewhat-sweet-yet-spicy New Mexican green, you’re bound to be a convert, too.
Black Beans and Rice with Green Chile Sauce Although brown rice works well, Lundberg’s “Jubilee” is a delicious mixture of 5 different rices including Black Japonica, which gives this side dish an amazing depth of taste and texture. As for the black beans, yes, you can use canned, but preparing dried beans is super easy and economical, and you can be certain the only ingredients in your beans are what you’ve added. 2 cups cooked black beans, prepared with 2 bay leaves 2 cups cooked brown rice
Prepare the rice and beans according to the package directions. To assemble, place 1/2-cup brown rice on each of 4 serving plates and top with 2–3 tablespoons of green chile sauce. Place 1/2-cup cooked black beans on top of the rice, and top with additional green chile sauce. May also be served with warm tortillas.

Harvest Corn Cakes with Roasted Vegetables and Green Chile Sauce You can make everything for this meal well before the day you plan to enjoy it. The green chile sauce will last for several days refrigerated or for several months in the freezer, as will the beans and rice. The roasted vegetables are best made the day of serving or the day before. You can make the corn cakes the day before, or since they freeze nicely, you can prepare and freeze them several weeks in advance. Roasted Green Chile Sauce It all begins with the sauce, made with New Mexico Hatch

green chiles, freshly roasted or frozen. 2 tablespoons olive oil 1 cup chopped yellow onion 1-2 garlic cloves, chopped 2 teaspoons dried Mexican oregano 1 pound roasted green chiles, chopped 1 cup chopped tomato 1/2 cup vegetable broth salt to taste
Sauté the onion in olive oil over medium-high heat until the onion begins to turn transparent. Add the chopped garlic and oregano and sauté the onion for another 2–3 minutes, just until it becomes fragrant. Add the chopped green chiles, tomato, and
broth, and bring the mixture to a simmer. Cover and let it cook for at least 30 minutes. Remove from the heat and add salt to taste. Once it has cooled slightly, put the green chile sauce into a blender and purée it for just a few pulses. You can keep some chunks in the sauce or blend it until smooth. Garnish: 1 avocado, sliced, and 1 tomato, diced

medium-sized bowl. When the mushrooms and sweet pepper are done, salt and pepper the vegetables. Add 1/2-cup water to the remaining liquid in the pan and stir to make a broth, then set aside. You can use it if necessary to thin the green chile sauce to the right consistency for pouring over the crepes.
Harvest Corn Cakes Thicker than crepes but thinner than pancakes, these corn cakes stand up well to the chunky roasted vegetables and chile sauce. 3/4 cup corn meal 3/4 cup all-purpose flour 1 cup soymilk 1 cup water 1/2 teaspoon salt olive oil spray
Blend all the ingredients except the olive oil until well combined. Refrigerate the thin mixture for at least an hour. Heat a large cast-iron skillet to medium-high and lightly spray with olive oil before you cook each corn cake. Pour 1/4-cup batter into the skillet and swirl it around so the cake is fairly thin. When it starts to dry on top and a few bubbles appear, flip the cake over and cook for 1–2 additional minutes on the other side. When the cake is nicely browned, transfer it to a plate, and cover it with parchment paper. Repeat until you have 8 nicely formed corn cakes.
Assemble Harvest Corn Cakes Placing the crepes on 4 plates, cover each generously with the Roasted Vegeetables and a couple of spoonfuls of the Roaasted Green Chile Sauce. Top each with a ssecond crepe and Roasted Vegetables. Spoon more sauce over each and serve with avocado if desired. ■

ative to India, China, and the Caribbean, ginger was one of the earliest spices introduced to western Europe, primarily for medicinal use: English pubkeepers used to set out little containers of ground ginger for patrons to sprinkle onto their beers as protection against the plague. Yes, that’s the origin of ginger ale! Nowadays, powdered ginger is pretty much considered a winter spice, since it plays such a piquant part in seasonal foods like apple pie, chutneys, jams, and gingerbread in all its many variations. But fresh ginger—properly called root ginger—is a whole ’nother phenomenon. While powdered ginger has punch, root ginger packs heat. Jamaican ginger root is currently the preferred variety. Essential year ’round for authentic Asian stirfrys, root ginger keeps for several weeks in the “fruit section” of the refrigerator. If the ginger root happens to sprout, just chop it up finely and add zip to a green salad.
