It's hard to believe, but we are closing out not only another year, but another decade. Here come the Roaring 20s! Life just goes by way too fast. It seems like yesterday that we were having the so called “melt down of society” with the Y2K hoax. I know a lot of computer programmers who were able to retire after that one! My father died nearly two years ago now, and during his last few years, he reminisced constantly about stories from his childhood and early life. He always closed each story by saying, "How long ago was that? That was 60 years ago now. It just seems like it was yesterday. Where do the years go?" This reminds me of the lyrics from a classic song by Kenny Chesney, Don't Blink;

You Would Think By Lori Joiner You would think getting kicked out of school during my sophomore year of high school for five weeks would have gotten my attention. But it didn’t. I was headed in the wrong direction, trying to impress the fast crowd I was running with at the time. I was partying my dreams away all the while sinking deeper and deeper into trouble. Then there was a sudden move … a chance to start over! My family transferred from a small East Texas town to Missouri City, just outside of Houston. You would think I would have taken this opportunity to turn over a new leaf, to reinvent myself and get on the right track. But if you thought that, sadly, you would be wrong. I quickly found another party group and signed up a high school dropout who raced cars illegally to be my boyfriend. I was now teaching younger girls how to party, lie, steal and cheat. The Turning Point Then, there was an invitation. I was invited to a local church by some neighborhood friends and it was there I first clearly understood
the Good News of Jesus Christ. God loved me and had a plan for my life, but because I was a sinner and separated from God, I could not know this plan or love. I slipped to my knees and confessed that I was a sinner in need of salvation. I trusted Christ to be my Lord and Savior. I asked God to forgive me of my sins and make the person He

had meant for me to be. I recall our youth group venturing out to the Galleria in Houston, going to the food court to talk to other kids our age about salvation in Jesus Christ. I was a new follower of Christ myself and yet, I was able to share what God had done in my life. A young woman placed her faith in Christ with me that night and the question crossed my mind, “Now what? What happens to her now?” I had a loving youth group and a dedicated youth minister to help me learn the ropes of reading my Bible and learning about my new faith in God. But what about her, all the way across town? Who would help her? A Calling Ever since that evening, seeing women place their faith in Jesus Christ and helping them grow and mature in Him have driven my life and ministry. After graduating from college, I went directly on staff with Cru and served with them for 22 years as a full-time career missionary. I was able to travel the world, sharing the love of God in many countries. I founded a women’s discipleship home called The Faith House and even trained other women to be missionaries here in the United States and abroad. Three years ago, I launched Lori Joiner Ministries. We serve the global body of Christ with discipleship resources such as articles, blogs and free e-materials on the Lori Joiner Ministries website. “The Discipleship Starter Kit” is one such free resource that helps a woman know where to start when discipling another woman. It is packed full of helpful materials including an eight-week daily calendar so you know exactly what to do for the first eight weeks of meeting with someone. The deep desire to transfer what I had learned about leading women to Christ and discipling

them compelled me to write “Discipling Women.” Filled with personal stories, humorous examples and helpful advice, “Discipling Women” guides readers in how to invest spiritually in women. It also includes nine issues women face that most likely will come up when discipling women. The most commonly asked question I received after the publication of “Discipling Women” was, “What Bible study should I use when meeting with my disciples?” This question was answered with “Start Here Six Foundational Lessons for Growth in Christ.” These six straight-forward Bible lessons are the perfect place to start when meeting with a woman one on one, in small groups or even on your own to ensure your foundation in Christ is solid. It covers topics such as God’s love, who is the Holy Spirit and how to pray. What a joy it was to see the Bible study translated into Spanish, called “Empieza Aqui,” and watch it be taken into multiple Spanish-speaking countries on mission journeys! One of the highlights of this ministry is the amazing women I am able to meet as I travel and speak to groups of all sizes for women’s retreats, events and conferences. I speak on a variety of different topics with “The Time is Now Retreat” being one of my most popular. It is a four-session weekend where I help women’s ministries, in a retreat setting, increase the effectiveness of their discipleship ministry. Continuing to Grow The future is bright for Lori Joiner Ministries as we are in the middle of several projects that will further help people grow in Christ. Another version of “Start Here” is in development to be used with couples and youth groups. Another six-week

Bible study, “Next Steps,” will roll out in the spring of 2020. It will include lessons on your identity in Christ, the importance of plugging into a faith community, and how to write your personal testimony. Dreaming of all the future possibilities and expansion of this ministry it is thrilling to say the least! When I look back on my life as a wayward teenager, I am floored at all God has done in and through my life after I surrendered my heart to Him. I like how Psalm 40:2 says, “He brought me up out of the pit of destruction, out of the miry clay, and He set my feet upon a rock making my footsteps firm.” You would think I would be grateful every day that I was invited to a church where I heard of God’s love for me and surrendered my future to Him. Johnny Teague for Congress Johnny Teague is running to represent the 9th Congressional District. His values are informed by his strong Christian beliefs and experiences as a 20-year Pastor. After years of watching government detach from the people, he believes the nation has devolved to a ruling class. “In this time, our national debt has increased and our morality has decreased. We’ve seen marriage redefined, children devalued, and things once illegal made legal and even reclassified as rights and entitlements. John Adams said our form of government is only fit for a moral and religious nation, that it is inadequate for any other. I am running because I want to see us return to our Biblical values.”

While some candidates see education, income equality, and gun control as the answers to the nation’s ills, Teague believes the problems stem from the heart. “We will either be governed from the inside by our internal compass of faith or we will have to be governed from the outside with more laws and less freedom,” he said. “I am running because I want to see a government for the people, by the people, and of the people. If public officials had to go back and live under the laws they pass, they would make better laws.” Teague has a long list of accomplishments that he believes have prepared him for this position, including five college degrees and careers in the Oil and Gas industry for Shell Pipe Line Corporation, in the medical field for Pfizer Pharmaceuticals, and as a business owner. He is also a patented inventor and a published author. “In all these things, I have learned how to lead – by example as a servant. The Lord Jesus was the greatest leader ever and He washed the disciples’ feet. He loved and cared and He gave selflessly. This is what is greatly lacking in our government and what is so needed.” “I will try to motivate, influence, and impact our current officials to put the nation above party, and to do right even when it is against party platforms. I don’t seek to convert our leaders to the Lord nor require it in our nation, but what I long to do is to live for the Lord Jesus in such a meaningful way that it will cause others to want to know and follow Him.” Teague is willing to take unpopular stands to do what he thinks is best for the country. He feels it is his duty to get back the nation our Founding Fathers envisioned and many fought for. “Our nation

is messed up. We are squandering the freedoms that were purchased with blood and given by God. We must stand up and do something. The only way evil can succeed is for the good to do nothing. I choose to do something.”
Wesley Hunt for Congress Wesley Hunt, West Point graduate and former Apache Helicopter Pilot with tours in Iraq and Saudi Arabia, now wants to serve his country as a Congressman. Running for office in the 7th District, Hunt plans to face our nation’s challenges head on. “I take public service very seriously. After John Culberson lost last cycle, I started tracking our new representative and quickly realized that she wasn’t representing our district in Washington, but was instead voting along the Democratic Party line. Our values and our way of life are under attack from liberals in Washington. My wife, Emily, and I were blessed with our first daughter, Victoria, just 8 months ago. Unless we elect someone who will stand up for our values, they won’t exist for Victoria or future generations. I want to make sure that the Houston I’ve known my entire life exists for her.” Hunt grew up in a military family and personally flew 55 combat missions around Baghdad. He says his experience taught him that service, character, and leadership matter and that your word should be your bond. With those belief systems, he is set to tackle what he sees as our biggest local and national issues: keeping the oil and gas industry strong, investing in our infrastructure to prevent future

flooding, providing aid to those still suffering from Hurricane Harvey, and securing our southern border to stop illegal immigration. “Illegal immigration is an issue of national security, and it’s resulting in a humanitarian crisis. We are a generous country, but we also believe in the rule of law, securing our borders, and protecting American workers. Where it makes sense to build a wall, I believe we should do so. In other areas, I believe we should utilize technology such as drones to assist. The bottom line is that we need to send the funding requested by our border patrol to allow them to effectively enforce our borders.” Locally, Hunt is concerned about the industry upon which Houston thrives. “The 7th District is the energy capital of America and thousands of people rely on the income and benefits provided by the oil and gas industry. One of my top priorities in Washington would be protecting those jobs from attacks by a Democratic party that is becoming more and more hostile to cities like Houston.” Hunt added, “I believe in sacrificing to protect our city and our nation. We need people who are willing to stand up and enter the arena.”

We’ve worked with TXDOT to accelerate the construction of FM 1093 / Westpark Tollway, as well as the construction of more main lanes on 99 / Grand Parkway. We’ve partnered with our local ESD 100 to provide funding for flyover direct connects between the Westpark Tollway and the Grand Parkway, without using property taxes. I pushed hard to work with my fellow Commissioners to present a comprehensive drainage bond to voters
on the November 2019 ballot, and it was overwhelmingly approved. This will allow Fort Bend County to leverage upwards of $264 million in funds with the help of the State of Texas and federal government to protect our communities with new flood infrastructure.” Myers joins his fellow Republicans in encouraging voters to fight the Blue Wave that hit Fort Bend County in the 2018 elections. “Now is the time for Republicans to come together and unite for victory in 2020. Tony woke abruptly. Sitting in bed, glaring at the clock, noticing the time read 3:00 am, and his wife Connie also wasn’t in bed. Fighting his sleep and rubbing his eyes, Tony stumbled out of bed, yawning and scratching his stomach, leaving the room. “Babe?” he called out, walking down the hall. In the living room, he was startled by Connie, who was standing completely still in the middle of the dark living room. She looked to be in a trance; her head tilted down like she was talking to someone shorter than her. “Honey, are you ok? I thought maybe you were checking on our baby.” He said, approaching. “I’m fine… I was only thinking … that’s all, you can go back to bed.” Connie said, looking at Tony like it was the first time they met. She smiled strangely, walking past him, it wasn’t like her, She was very affectionate and flirty and loved to kiss on Tony. Her odd behavior came off a tad eerie to him.

people to fight – so rest assured I will use discretion on where our troops end up and whether it is necessary.” Walz was raised in Fort Bend, in a home where the family often went without necessities. “Luckily, we had family to assist in those troubled times. We had churches. We had good neighbors. We learned to persevere. I know there are constituents living the same life I did, and I understand their struggle. I could have easily fallen victim to democrat principals. But my parents raised me on Texas values like working for what you desire in life.” After 9/11, Walz enlisted in the army at age 19 and served for 11 years in aviation. He learned teamwork as he worked side-by-side with people who didn’t look like him or come from his background. As he said, all that mattered was staying alive. He went on to supervise large units in combat operations all over the world, study criminal justice and aeronautical technology, receive his helicopter pilot ratings, and return home to his wife and children in Fort Bend. There, he started a business that showed him the impact the global and American economies can have on businesses and families. Writing manuals and earning FAA Certification gave him unique federal policy experience he feels will serve him well in this position. The issues of utmost importance to him include the federal debt, the federal budget, term limits, and immigration reform, for which he says, “We must support the requests and needs of U.S. Customs and Border Patrol. Without strong border security, the country we have will one day not even be worth immigrating to. We have to protect it for the citizens and LEGAL immigrants who are here already.” Walz prides himself on being a regular guy, but like the members of the Second Continental Congress, someone who can enact great change. “We need a loud, conservative, active, and energetic voice

Building a Family By Caitlin Richards After Robert and Sonia Rossi walked through the passing of a loved one, they realized how tender and treasured those final months and days are with a loved one. As a nurse for over 22 years, Robert felt God’s calling on his life to use his acquired skillset and knowledge in the end of life setting. “My background was in oncology at MD Anderson,” says Robert. “With oncology comes the good of being cured, and sadly the death and passing of patients too. So, I have learned, and had the privilege of caring for individuals at the end of their life. This time is not only important to the patient, but their family members as well.” When Sonia’s grandmother was placed on hospice care, the Rossi’s saw firsthand what was needed to provide patients with the highest quality of care. It was then that Robert felt God drawing him towards starting a hospice business of his own. “I told my wife, we can do this, and actually do it with a purpose,” says Robert. “We can do it in a way were patients and their families are treated more as a people versus a number, with love and dignity, and not just out of routine, but as family members, the Blue Star Family.” Sonia owned an insurance company and was skilled in finances and managing a business. Jumping Into Family Fun By Caitlin Richards Family fun and creating memories is important to every family. When two brothers and their childhood friends wanted to create a one of a kind place to have family fun and create memories, Cosmic Air the trampoline park was born. “We are all fathers with our own families,” says Shawn Meghani, one of the Cosmic Air owners. “We didn’t want to be like just any other trampoline park. We wanted to be a place families could come to have a good time and create special family memories.” Cosmic Air not only offers trampoline activity areas, but additional attractions, as well, all at no extra cost. They offer an indoor zipline, a three-stage ninja warrior style course, rock climbing, a battle beam and dodgeball. “We take the trampolines and actually add an extra layer of fun to it by adding attractions with it,” says Meghani. “We were also very thoughtful in planning our park and choosing the location.”
Besides the added attractions, Meghani and his co-owners designed the park with families in mind. Open to ages two and up, they wanted younger children to have their own dedicated area. They designed a dedicated toddler area separate away from the main area

to ensure the safety of toddlers and the big kids. “We actually designed our facility to cater to all age groups,” says Meghani. “You can be two years old to 52 years old, and you can come to our park and have a great time.” When choosing a location for Cosmic Air, they wanted to ensure families felt safe and had easy access to parking. It is why they choose 1210 Fry Road Houston, TX 77084. “We made sure to have it right off the freeway so all of our guests would have easy access to it, and the parking lot has ample lighting to ensure families feel safe when they come to Cosmic Air,” says Meghani. Opening Cosmic Air in Katy was also important to Meghani and his co-owners. They wanted to start in area with a strong community and that was Katy. They felt like Katy was the perfect fit for their business. “We want to be involved in the community as much as possible,” says Meghani. “It has been really neat to see how everyone in the Katy community has already reached out to us to be involved, and we really want to be involved in the community because we want to be here for the long haul.” Since opening in February, Cosmic Air has been supporting the Katy community through sponsorships, running specials and hosting special events for the community. From Easter and Halloween to Thanksgiving and Christmas, Cosmic Air is hosting something fun for the community. Some of their deals include toddler playdate and cosmic nightlife, plus daily deals and a membership. “We are lucky and blessed the Katy community has given us such a great response at such an early stage,” says Meghani. “They have come out, and they keep coming out and supporting us. We hope it will continue more in the future.”

Calvary Cheerleaders along with sponsor Ms. Julianna White decorated tress for the Fort Bend Women’s Center, Santa’s Store. 2) Calvary students, Karsyn Jones and Langely Guidry, decorate trees for the Fort Bend Women’s Center. 3) Aristoi Classical Academy earned its first State Champion title in Varsity Flag Football this past November. The championship game was played in Austin against IDEA Public Charter from Mission, TX. The Griffins (12-0) wrapped up their undefeated season in excellent fashion with a 40-34 score over the IDEA Phoenix. 4) Katy United’s 11 Adidas team finished in first place in the Gold Bracket at the WSC Classic at Willowbrook. The local Katy girls defeated many of the top teams in the area for their first tournament of the club volleyball season. 5) The months after surgery tend to be the most difficult for those undergoing treatment for cancer. The GEST Foundation Inc., provides financial grants for people that they can use towards things like grocery delivery, home cleaning, home wound care, transportation or even counselling to help with the internal wounds that come with facing the news “you have cancer.”

Students from seven high school and junior high chapters across the region attended the workshop. Students participated in breakout sessions learning more about FCCLA, service learning projects, competitive events, running for officer, and ways to spread kindness. 2) On October 5, 2019, young men from the Missouri City - Sugar Land Chapter’s 2019 Beautillion Class, enthusiastically completed their class community service project at ‘My Brother’s Keeper’ where they stocked shelves with food and supplies for families in need within Fort Bend and Harris counties. 3) The Central Fort Bend Chamber hosted its highly anticipated Annual Gala & Awards Ceremony on November 15, 2019 at Safari Texas Ranch. The Winter Masquerade inspired evening brought together 330 business leaders and community members to help fund the Chamber’s mission of promoting growth and constructive change within central Fort Bend County. 4) In October, St. John XXXIII College Preparatory (SJ23) hosted its inaugural Middle School Fine Arts Frenzy. Flagship school participants included students in grades sixth through eighth from Christ the Redeemer; Salyards Middle School; St. Elizabeth Ann Seton; St. John Paul II; and St. Rose of Lima. 5) In October, the Central Fort Bend Chamber celebrated the ribbon cutting ceremony for Blanchard CPA. Blanchard CPA began in 2016, and was created to provide tax and accounting services to small businesses across the country.

Teaching Your Kids the Power of Forgiveness By Dr. Rebecca Deurlein As Christians, we are called to forgive, not just 7 times, as the Bible tells us, but over and over and over again. It may not be an official commandment; nevertheless, it may be the hardest. Forgiveness means doing the exact opposite of what feels natural and what we have learned our whole life - that we should see justice, that there should be some sense of fairness in the world, that people should have to deal with the consequences of their actions. In a fair world, your friend wouldn’t hurt you. In a fair world, there would be no betrayal. In a fair world, things would unfold exactly as they should, and always in a way that made sense. We don’t live in a fair world. We live in a world that requires forgiveness. Some is easy and some is downright unfathomable. We are so hurt, so disappointed in the other person, so abashed that they would wrong us the way they did, that it’s everything we can do to get past those emotions, let alone forgive. That person doesn’t deserve my forgiveness, we think to ourselves. She knowingly betrayed me, or He said the most hurtful thing he could possibly say to me, or They hurt my kids, or They conspired against me. Those thoughts plague us. They weigh us down and take up real estate in our heads and our hearts.
They can even consume us, leaving us permanently scarred and damaged. And that’s where lack of forgiveness truly begins to hurt us more than it hurts anyone else. St. Augustine said, “Resentment (aka: lack of forgiveness) is like drinking poison and waiting for the other person to die.” What an incredible analogy! When we refuse to forgive,

it’s like a slow poison, eating away at us until a part of us dies. Meanwhile, the ones who wronged us have gone on with their lives. While the wrong might have happened one time, a long time ago, we continue to let it hurt us, damage us, and change the person we were meant to be. It takes a long time to realize that we are giving all our power to the person who hurt us. Some people never realize it. If you have, the best thing you can do for your kids is to teach them about the power of forgiveness while they are young. They will have to forgive many, many times in their lifetime. If they don’t, it will change them, distance them from God and his plan for them, and make them unhappy people. As parents, we want none of that. We want strong, resilient kids who live out their Christian upbringing and obey God’s mandates, including that of forgiveness. The way to ensure this happens is to show your kids, consistently and with a grateful spirit, how to forgive. Let them see your hurts, and let them watch you overcome them. Teach them that humans make mistakes and can be cruel, but as a Christian and someone striving to be a good person,
you will forgive, even when it seems impossible to do so. You won’t allow someone to treat you as a doormat or diminish your spirit as a child of God. But you will accept that everyone will disappoint you, probably multiple times, and that you must forgive them just as everyone else forgives you for disappointing them. Because they do. Every healthy relationship involves forgiveness. And every healthy individual understands that forgiveness leads to freedom. Forgiveness isn’t weakness - it’s the utmost in strength. Make sure your kids see you forgiving, learning, and moving on. Give them the gift of learning how to forgive and you will give them one of the greatest strengths to sustain them throughout their happy lives.

CrossPoint Church Grows Through One-On-One Relationships By Mylena Sanchez “Someone else can do this better than me. I’m not the right person for the job.” This is how Lead Pastor, Paul Goeke, felt when facing a financial crisis and major leadership transitions at CrossPoint Church over a year ago. Goeke, born in San Antonio into a traditional Christian family and father of four kids, never saw himself as the person to manage this kind of situation. During the winter of last year, he just wanted to quit. However, the church board and fellow leaders encouraged him to keep going. In the midst of these challenges, Goeke received support and encouragement from deep relationships with other Katy pastors who not only spoke life into him, but also followed up with life-giving actions. Through this support, Goeke took part in a ministry in Montana, called Refuge. It was there that God prompted him to read the book of Haggai where he saw this, “My Spirit remains in your midst. Fear not… I will fill this house with glory… The latter glory of this house shall be greater than the former, says the LORD of Hosts. And in this place, I will give peace…” After reading this and in a chance meeting, Goeke got to know a man who became a mentor and dear friend. This relationship would prove to be life-changing. On the flight home, Goeke realized that even though he landed in Montana intent upon quitting, he was flying back to Texas intent upon “getting back in the game.”
For Goeke, “getting back in the game” involved a radical shift in church leadership. Rather than focusing on the difficult reality of severely reduced staff, the leadership of CrossPoint saw that God was leading them to a biblical form of church leadership in which the staff did not simply do ministry, but equip each person for ministry.

Fort Bend Family Promise: A Ministry to Families with Children Who Are Experiencing Episodic Homelessness “Keep on loving one another as brothers and sisters. Do not forget to show hospitality to strangers, for by doing so some people have entertained angels without knowing it….” – Hebrews 13 (NIV) Many churches throughout Fort Bend County have been in a partnering relationship with the interfaith ministry of Fort Bend Family Promise (FBFP) since 2005. The Mission of Fort Bend Family Promise is to meet the immediate needs of homeless families while empowering them to attain self-sufficiency. We serve children who are experiencing homelessness with their parents and family members. Our unique program model allows us to unify families, while traditional shelter programs separate families during episodes homelessness. Lamar Consolidated ISD is currently tracking over 700 students who have “housing insecurity”, i.e. shifting addresses, couch-surfing, sleeping in vehicles, and so on. Fort Bend I.S.D. has identified over twice that number of children in risky housing situations. The numbers are larger when we include younger non-school age children.

parents in need. Church volunteers do this by serving meals each night and preparing temporary overnight shelter to selected families in the program. While our program works with each family on an individualized plan to secure permanent housing, the congregations in our Interfaith Hospitality Network (IHN) provide 1 week of overnight shelter and meals to 4-5 families every 3 months. FBFP’s Day Centers serves as a base for Case Management in the form of Housing Navigation that is focused on individual plans to attain and sustain permanent housing. Our East Campus in Missouri City (and soon to open West Campus in Rosen-
berg) have laundry and shower facilities and lockers for clothing and personal belongings. FBFP refers families to partner agencies for additional ancillary services. Meanwhile, we assure that the children are attending school and participate in extra-curricular activities. The success rate after two years is 80-85%, far exceeding that of other shelter programs. The power of the program is that the families we serve are surrounded by people of faith as they work through our program to attain self-sufficiency. National Day of Signing Madisen Skinner, a senior at Faith West Academy (FWA), signed a letter of intent to the University of Kentucky. Skinner will be joining the highly competitive SEC Division I Wildcat Women’s Volleyball Program in the fall of 2020. Madisen, middle blocker and outside hitter, helped lead the FWA Eagles to 1st Place in TAPPS District 7/ 4-A, winning Gold at Livingston Christian in Alvin, and placing 3rd in the McKinney Christian Academy Tournament.
Before signing ceremonies, FWA Head Volleyball Coach Dana Bass announced several prestigious awards that Skinner has received this year; Under-Armour Third -Team All-American, TAPPS First - Team All-State, and Skyline First Team AllAmerican. The 6-foot-3 Skinner accumulated 365 kills, 87 blocks, and 86 aces this season. Prior to heading to Lexington in fall of 2020, Madisen will continue to refine her game through practice at her home court at Houston Skyline Junior Club, under the tutelage of Kalani Rose and the coaching of FWA Coach Dana Bass. Skinner was the second player to be recruited in the nation and signed by one of the top colleges or universities. When asked why she selected UK as college of choice she quickly responded; “The coaching staff and the campus atmosphere.” The coaching staff at University of Kentucky, under Craig Skinner (no relation), took the Lady Wildcats to Southeastern Conference Champs. Madisen will pursue a degree in Health, Society, & Population (social science based approaches to understanding health outcomes and inequalities). Sports Medicine is an interest she has in furthering her education. Madisen is the daughter of Brian and Rebecca Skinner of Katy.

Roasted Sage Turkey with Vegetable Gravy
Ingredients • 1 turkey (14 to 16 pounds) • 1 tablespoon kosher salt • 1 teaspoon ground sage • 1/2 teaspoon garlic powder • 1 large onion, chopped • 3 celery ribs, chopped • 3 medium carrots, chopped • 1-1/4 cups water, divided • 3 tablespoons canola oil • 1/2 teaspoon freshly ground pepper • 3/4 cup white wine • 3 fresh sage sprigs • 4 fresh thyme sprigs For the Gravy • 1 to 1-1/2 cups reduced-sodium chicken broth or homemade chicken stock • 1/4 cup all-purpose flour • 1/4 teaspoon minced fresh sage • 1/4 teaspoon freshly ground pepper Directions 1) Remove giblets and neck from turkey. Reserve turkey neck and refrigerate, covered, overnight. Place turkey in a 15x10-in. baking pan, breast side up. Secure skin to underside of neck cavity with toothpicks. Mix salt, sage and garlic powder. Tuck wings under turkey; tie drumsticks together. Pat turkey dry. Rub outside of turkey with salt mixture. Refrigerate turkey, loosely covered, overnight.

Pour wine and remaining water into turkey cavity; add sage and thyme sprigs. 3) Place turkey in oven, legs facing toward back of oven. Roast, uncovered, 40 minutes. 4) Reduce oven setting to 350°. Cover breast tightly with a double thickness of foil. Roast until a thermometer inserted in thickest part of thigh reads 170°-175° (thermometer should not touch bone or fat), 1-1/2 to 2 hours longer. 5) Remove turkey from oven. Let stand, uncovered, 20 minutes before carving. Using a turkey baster, remove liquid from turkey cavity to a large measuring cup. Line a strainer or colander with cheesecloth; place over measuring cup. With a slotted spoon, remove vegetables from bottom of broiler pan, reserving 1-1/4 cups. Discard turkey neck. Strain cooking liquid into measuring cup. Skim fat, reserving 1/4 cup fat. Add enough broth to the cooking liquid to measure 2 cups. 6) In a large saucepan, mix flour and reserved fat until smooth; gradually whisk in broth mixture. Bring to a boil over medium-high heat, stirring constantly; cook and stir until thickened, 1-2 minutes. Add half of the reserved vegetables. Puree gravy using an immersion blender; or, cool gravy slightly and puree in a blender. Stir in sage, pepper and remaining vegetables; heat through. Serve with turkey. Prep: 30 min. + chilling ; Bake: 2 hours 10 min. + standing Makes: 16 servings (3-1/2 cups gravy)
