D

avid and Andrea Tombs picked downtown Kamloops for their Terra Restaurant, and history is built into the fine dining experience at 326 Victoria St. The building first housed the Strand Theatre, and its long-dismantled marquee still resides in the basement. “We like the feel of downtown,” says chef David, whose family restaurant venture follows his time as head chef at a major Sun Peaks hotel. Tombs began his culinary career in 1994 at Dubrulle Cooking School in Vancouver.

“We started thinking seriously about the restaurant in 2010,” he says. “We opened on July 18, 2011.”

 With a menu that changes monthly throughout the year, Terra offers patrons select dishes featuring naturally-raised or organic local meat, game and produce. The emphasis is on seasonality.

“We don’t have a specific style,” David says. “We let the ingredients dictate the style, and this depends on what’s available.”

 Selections on Terra’s varied Mains menu for October include “a daily selection of fresh, sustainable seafood,” along with steak, free-range chicken, pork, duck and risotto entrees. They’re imaginatively partnered with colorful and flavorful seasonal vegetables.

 “Our aim is to give our guests a really exceptional experience,” says David. “We’re not interested in trying to be like other restaurants - and we’re getting there.”

 Aside from its culinary art, Terra is a business. “Each year Andrea and I make a list of 20 things to make the restaurant better.”

David credits Community Futures Thompson Country as an “invaluable resource” when Terra was in development. “Starting a small business is always difficult, they helped us with business planning, marketing, all sorts of things,” he says.

 In addition to the restaurant operation, David and Andrea offer off-site catering for weddings and special events. On the morning of this interview, David and his kitchen crew were preparing for restaurant customers as well as an off-site wedding the next day.

 Like all new businesses - particularly restaurants, Terra is often challenging. “We wouldn’t have it any other way,” said David.

Sales manager Doug Kristjanson is excited about the changes that have taken place, saying, “Now the building can reflect the way we do business.”

He knows that you can buy a vehicle anywhere, but the organization itself is unique. Zimmer Wheaton GM has a large clientele and exports vehicles from as far away as Alberta and Saskatchewan, where Rob and his sister Darla, the business manager at Zimmer Wheaton, previously lived. Kristjanson says, “We have people calling us from 1,500 kilometres away because they know they’ll be taken care of and treated fairly. It’s this dealer’s principles and reputation that Rob prides himself on. He drives all of our mindsets and we try to emulate his principles.” A strong advocate for supporting fellow local businesses, Zimmer selected all of the renovation contractors locally. “Most of the contractors we hired had been existing Zimmer Wheaton customers,” said Darla. Zimmer commends his staff for sticking

through the difficult task of remaining open during the renovations. “There were times when you couldn’t even drive into the yard. I kept saying there is a light at the end of the tunnel. We want to maintain our high level of service and professionalism no matter how big we are. Our commitment and confidence in the community is why we did the $3.5-million renovation. “And in our commitment to GM we have set some lofty sales goals and we’ve ordered the inventory to back our goals. We’ve also stepped up our used car superstore and have the biggest GMC truck inventory in the interior, and possibly the province,” says Zimmer.

f you’ve driven by the Zimmer Wheaton dealership on Notre Dame Drive over the last 18 months, you’ve probably noticed some changes taking place. Having been on the corner of Notre Dame since taking over in 2001, owner Rob Zimmer said, “This is the busiest intersection in Kamloops, and when people drive in to town we want them to say, ‘Wow is that ever innovative and cool.’” The location ties in with Zimmer’s Mercedes and Smart dealerships, located on Laval Crescent just behind the GM dealership. The area has become Zimmer’s own miniature auto mall. One of the first things you’ll notice is the landscaping surrounding the dealership. Zimmer said he wanted it to reflect themes from Kamloops, so large rocks and boulders were brought in and native grasses planted. At night spotlights light the features. Picnic tables give staff and customers a place to relax. “We gutted the whole building — the

So what’s your favourite?
 MR - Grass-fed tastes natural to me— what beef should taste like. Eating grass from start to finish means the cow is eating what cows are designed to eat. It means the end product is very lean and healthy and that’s important to me. There’s research about the health benefits of grassfed beef to back this up. I also think cows have better lives spending more time on the grasslands and not being transported long distances to feedlots. That’s important to me too. What about this latest E. coli scare? MR - I feel terrible for everyone affected. We’ve never had a problem with our meat

Produce market and local farm

H

erman Hothi grew up on a Heffley Creek farm and has grown food his whole life. Owner of Nu Leaf Produce Market, when he saw the huge demand for local food in Kamloops, he decided it was time to offer his expertise to customers. In September 2011 he opened the store, which carries as many local produce and grocery items as possible. The goal is to minimize carbon footprints associated with eating, and to provide the freshest, high-quality produce available— which naturally comes locally. Instead of produce from Kamloops following a distribution loop

that would take it by truck through warehouses in Vancouver, Hothi wanted to see it come straight to a store in the city where it would be immediately available to local customers year-round. “We grow as much as possible of our seasonal produce or deal with other local farms,” Hothi said. “During the season 85 per cent of our produce is local.” In the winter, of course, the percentage is lower, but Herman said Nu Leaf will carry as much local product as possible. If it can’t be found locally, it will be imported as a last resort in the off-season. Nu Leaf works with local farmers and companies, and as Nu Leaf grows, it will support local farmers’

growth to cover the demand. Besides produce, Nu Leaf also carries locally produced baked goods, dairy products, honey, eggs, Fresh is Best products and locallyroasted coffee beans. Produce is picked daily from farms in the area, as compared to being trucked thousands of kilometres before it’s on the shelf. Nu Leaf’s goal is simple: sell local food and support local growers. he Big Boot Inn has been a familyrun operation for 61 years — the first 58 with the DiGeso family, and the past three years with the Gentile and Windsor family. Ryan and his wife Kristen took over the business at 241 Victoria St. because it offered them the opportunity to do something enjoyable, and stay in the community they’ve come to love. “We’re imported into Kamloops but call this our home. This is where we want to spend the rest of our lives,” Ryan says, adding that in his former career he was one promotion away from a transfer out of the city. The meeting was the largest annual meeting for family physicians of its kind in North America. It presented multiple educational opportunities and updates on medical practice for the medical profession, and the team from Beautiful U were thrilled and honoured to be asked to attend. The pair was contacted by the AAFP and asked to present a workshop on chemical peels because of their recognized expertise in the field of aesthetic medicine. It’s important to tap your social networks to get the word out about job openings. But don’t forget traditional methods, including tried-and-true word of mouth. How can you avoid costly hiring mistakes? Take the time to do a thorough job screening candidates. Do several interviews with a prospect, and arrange to see them in action. For example, you can ask them to complete an assignment or make a presentation of the kind they would be doing in the position. Check references.
