I

am in a whirlwind of back to school with my junior in high school, becoming adjusted to having my son away at college, and as many of you know that read this letter each month, I had a new baby. While my baby doesn’t have legs, a mouth or arms, it is as needy as your average baby—maybe even more so Kelly Martinsen, because this baby cost me money. This baby took a lot of courage Publisher to have. This baby is my new business. Together with my niece, we have opened an infrared heated Pilates/yoga/barre and hip-hop (yes, HIP-HOP—SO FUN!!) studio. We started this business with a singular mission: to provide a space that is most importantly safe and fun. A place where you can sweat, laugh, dance and create a stronger, more confident, leaner version of yourself. We were charged with that mission, and thought that was all folks needed to hear to come and bust open our doors. That was naïve because there are a lot of business and financial aspects involved in providing a space that everyone loves. This letter is not a complaint; in fact, every day I am enjoying what I do (even the numbers part of it). It is simply a reflection. I am reflecting on the fact that I am perhaps holding onto too many things, which makes focusing on my “baby” difficult, and reflecting on the question, When is it time to let go? My son, who recently left for college, had to let go of the town he grew up in, the wrestling team of brothers that had been with him since fifth grade, and his family. But by letting go, he made room for a myriad of new experiences. My daughter just gave up swimming (she wasn’t very good, so it was fine), and has filled that time by joining soccer. By doing so, she has made a whole bunch of new friends and is learning a whole new set of skills. Sometimes, we hold onto things for too long, simply because we are comfortable, and we become stagnant. I have learned that to truly experience new things, you need to release the old—an old job you once loved that perhaps you were “retired” from (see a great article about life after 60 on page 32), or an old relationship that once was supportive and fun but has become jealousy based or stagnant, or an old home that has become too big for you. And then there’s letting go of a philosophy that no longer serves you. Perhaps your philosophy in your 20s and 30s was money focused, but now you have become financially secure and still find yourself chasing the “green.” Stopping that chase and pushing yourself to make time to connect with loved ones should now be your focus. As the saying goes, “Life is not measured by the number of breaths we take, but by the moments that take our breath away.” I think to find breathtaking moments, it is critical that we let go of some of the “old” in our life. Sometimes, like it says in the aforementioned article “Leaping into the Unknown … My 60s!” you may need to let go and JUMP!

Homeschooling—A New Chapter

H

omeschooling was never something I imagined doing, yet here I am. There is a stigma that involves sheltered children with little socialization; however, 4,500 Long Island families (26,000 total children in New York) are just about to show our communities how wrong this perception is. I have witnessed strangers coming together to help one another make homeschooling work for each other. Co-ops, tutoring centers and enrichment programs are popping up all around us. If you need help connecting to families in your area, we can help. You are not alone! If you feel that you are, please reach out. We are a community of freedom fighters—a “Modern Village,” and we must rise together to help teach our children in a new way. Reduce Kids’ Risk of High Blood Pressure With Maternal Vitamin D Children born with low vitamin D levels have an approximately 60 percent higher risk of elevated systolic blood pressure between ages 6 and 18, reports a study of 775 Boston children published in the American Heart Association journal Hypertension. Those with persistently low levels of vitamin D through early childhood had double the risk of elevated systolic blood pressure between ages 3 and 18. Higher systolic numbers increase the risk of cardiovascular disease later in life. Because infants’ vitamin D levels are determined by the mothers’ levels during pregnancy, researchers suggest exploring an official recommendation for vitamin D supplementation during pregnancy. 12

In a Brazilian study published in the Journal of Herbal Medicine, extracts of rosemary leaves and pomegranate peels, along with a South African herb known as misty plume bush, significantly reduced the ability of methicillin-resistant Staphylococcus aureus (MRSA) bacteria to grow and spread in the laboratory, a finding that may help develop new strategies against the superbug.

Egyptian laboratory researchers tested fennel oil and eight other plant-based essential oils on 19 Candida albicans strains that were resistant to the antifungal medication fluconazole. They found that the fennel oil had significant antifungal properties against the strains, outperforming chamomile, jojoba, nigella, fenugreek, cod liver, peppermint, clove and ginger oils. When combined with fluconazole, fennel was effective on seven strains, theoretically lowering the need for higher doses of the medication.

A meta-review of 37 studies that included 7,887 mothers giving birth found that an injection of oriental motherwort (Leonurus japonicus), a Traditional Chinese Medicine herb used for thousands of years, decreased blood loss and other adverse events during birth at a minimal cost with few side effects.

As the years have gone by in my practice, I’ve noticed that what I would have prescribed more than 15 years ago to help my patients normalize their weight has slowly increased in intensity over the years. I realized that the healthy diet I would prescribe has gotten stricter, and the exercise regime I would advocate has markedly increased. Also, the amount of supplements I recommend is three times the amount or more. A study that was published in the journal Obesity Research and Clinical Practice confirms what I have seen clinically over the years. The research suggests that adults have a harder time maintaining a normal weight, even at the same levels of food intake and exercise as they did 20 to 30 years ago. Like other cultures, the ancient Chinese used what they observed in nature to explain daily life. The cycle of sunlight turning to darkness each day is the basis of yin and yang theory. Yin was assigned to darkness, while yang was assigned to daylight. If we look at the popular yin-yang symbol, we see yin, which is represented by the black, turning into yang, which is the white. Night becomes day and day becomes night. Yin is static, dark, cold, heavy and nourishes the body. This description comes together as we envision the night with its darkness, less activity and cooler temperatures. Some examples of things that are more yin in nature are water and the moon. In contrast, yang is active, warm, light and bright. The sun and fire are more yang than yin. Everything and everybody are a mix of yin and yang. In regard to the body, if there is a Victoria A. Routine Oral Health Treatments—A Way to Manage Type 2 Diabetes by Jonathan Richter, DDS, FAGD According to the 2017 National Diabetes Statistics Report, there are 30.3 million people in the United States with diabetes. There are two main types of diabetes: Type 1 and Type 2. Both types are chronic diseases that affect the way your body regulates blood sugar, or glucose. Glucose is the fuel that feeds your body’s cells, Jonathan Richter, but to enter your cells it needs a key, DDS, FAGD which is insulin. People with Type 1 diabetes don’t produce insulin. You can think of it as not having a key. People with Type 2 diabetes don’t respond to insulin as well as they should and later in the disease often don’t make enough insulin. You can think of this as having a broken key. Among all people living with diabetes, 90 to 95 percent have Type 2 diabetes. Epidemiological data confirm that diabetes is a major risk factor for periodontitis; people with diabetes are approximately three times more susceptible to periodontitis. There is a clear relationship between the degree of hyperglycemia (excess glucose) and the severity of periodontitis. The mechanisms that underpin the links between

these two conditions are not completely understood; however, there is emerging evidence to support the existence of a two-way relationship between diabetes and periodontitis, with diabetes increasing the risk for periodontitis and periodontal inflammation negatively affecting glycemic control. In a recent study published by The Lancet Diabetes & Endocrinology journal, the study assessed the effects of periodontal treatment on glycemic control in people with Type 2 diabetes. In this study, 264 patients with Type 2 diabetes, presenting with moderate-to-severe periodontitis and at least 15 teeth, were randomized to intense periodontal treatment or control periodontal treatment to assess the effects of periodontal treatment on glycemic control. After 12 months, the average HbA1c was 8.3 percent in the control group and 7.8 percent in the intense treatment group, which was significantly lower after adjustment for baseline characteristics. These findings suggest that routine oral health treatment is an important component for managing Type 2 diabetes. Type 2 diabetes can be prevented and reversed with a healthy lifestyle consisting of a good diet, regular exercise, and maintaining a healthy body weight. Poor diet contributes to chronic inflammation. Monitoring your blood sugar is an essential part of diabetes management because it’s the only way to know if you’re meeting your target levels. With careful monitoring, you can get your blood sugar levels back to normal and prevent the development of serious complications. People with Type 2 diabetes need to focus on healthy eating. Weight loss is often a part of Type 2 diabetes treatment plans, so your doctor may recommend a low-calorie meal plan; this could mean reducing your consumption of animal fats and junk food (especially sugar). Multiple sclerosis (MS), rheumatoid arthritis (RA), lupus erythematosus (LE) and scleroderma (S) are diseases that can all be partially or completely reversed! This is a bold statement. October Is Not Just About Pink Ribbons and 5Ks DR. KRISTINE BLANCHE is the CEO of Integrative Healing Center & Spa, with offices in Northport, Belmore, Mineola and New York City. Blanche practiced conventional medicine for the first 10 years of her career. It was the cancer diagnosis of her sisterin-law, Lori, that inspired Blanche to investigate integrative medicine. Blanche recalls that time vividly: “When it is someone you love, the blinders come off and you search for a cure no matter what your beliefs are.” She read every book on holistic cancer she could get her hands on, but Blanche’s desperate attempt to find an integrative doctor for Lori was too late. At 32 years old, Lori passed away from lymphoma nine months after her diagnosis, leaving behind a 2-year-old daughter. “Unacceptable,” Blanche calls this, “the dark night of my soul.” The medicine she had dedicated her life to had failed Lori, so Blanche went searching. Integrative medicine offered so much to health care that Blanche had not learned: nutrition; nutritional supplementation; prevention; and the connection between emotional pain, stress and illness. It was a whole new way to look at health. Blanche has since dedicated her life to learning this new medicine, which focuses on teaching patients to listen to their bodies and to optimize the body with nutrition and stress relief to prevent disease. Blanche reflected on the first few years in the field: “Living on Long Island, I took care of many women with breast cancer and one day I had a moment of clarity. I realized I was not doing enough to focus on prevention.” Blanche focused her Ph.D. thesis on studying the Blanche Breast Prevention Program (BBPP). Thermography is an investigative tool that has been offered at Blanche’s center

since 2008. Thermography is a digital far-infrared camera that measures inflammation in the body. “The picture is worth a thousand words,” she says. Inflammation is the root cause of most disease, from autoimmune disease, heart disease, dementia and cancer. “Thermography shows me where the inflammatory patterns are, how intense they are, and where we can focus the treatment,” adds Blanche. “The baseline thermography gives us so much information: the extent of fibrocystic density, lymphatic congestion, suspicious patterns, and neovascularity. We are not using this tool for early detection; we are using this tool in an effort to prevent disease.” Blanche feels strongly that women should be starting thermography at 23 years old as part of the toolbox to implement a breast cancer-prevention program to prevent the problems before they arise. “After we identify the status of the breast, we do not stop there.” Blanche’s Ph.D. research looked at women with extremely dense breasts, extensive lymphatic congestion, suspicious patterns, low vitamin D levels, and presence of MTHFR gene mutations. Blanche believed it was crucial to incorporate this genetic test, as studies show that the MTHFR mutations raise risk for breast cancer. “The mutation is common in my patients in New York,” says Blanche. “We know it is linked to the body’s ability to detoxify, and toxins are absolutely related to breast cancer. I use this data to help educate women on the use of toxins.” For example, if using aluminum deodorant, the aluminum toxin is being applied right over the lymphatics and vasculature of the breast, which is not ideal. The Art of the Nap Unplugging From Life Without Apology by Marlaina Donato

C

hildren, four-legged family members, Thanksgiving overeaters and the occasional squirrel on a branch have mastered an art that eludes most of us, and they engage in it without a shred of guilt. Defying our cultural habit of constantly being on the go and embracing the respite can be an active meditation, an invitation to cultivate uncommon stillness. Answering the siren’s call of a nap might very well be one of the most beneficial acts

of self-care we can give ourselves. Both body and psyche crave chill-out times for good reasons. Using study subjects ranging from NASA pilots to emergency room staff, curling up for a 20- to 30-minute siesta has been clinically proven to lower blood pressure, boost immunity, improve motor skills and enhance job performance and creativity. Power naps—the short-but-sweet kind—give us the opportunity to nourish the most neglected part of life, the inner life.

Rest-fueled “me-time” can be a daily ritual punctuated with both practical and aesthetic inspiration. Choosing a spot drenched in inviting natural light or close-curtained tranquility and reserving a favored pillow, chair or luxurious coverlet can usher in blissful time-out. Adding the presence of aromatherapeutic essential oils like lavender, Roman chamomile or tangerine or a vase of simple fresh flowers can signal the ever-diligent sympathetic nervous system to cut back on overtime. Dropping down into unhurriedness like an anchor into port can prompt deeper and longer breaths and offer us the shameless chance to invest in quality daydreaming. Playing recorded sounds from nature—ocean waves, soft rain or gentle wind in the trees—can set the stage for a satisfying nap. Inviting the resident cat or pooch for a sleep-spell can also effect release of beneficial endorphins. Scheduling a nap into the day like any other appointment not only ensures followthrough, but presents a succulent slice of something to look forward to. Putting the computer on sleep mode and turning off the phone signals the brain that it’s time to recharge. Social media interaction and phone chats can wait. What is the “attention economy” and why do you believe it’s important to resist it? The attention economy includes anything designed to capture and direct human attention. The entire history of advertising has been about exploiting attention. But the attention economy takes on new dimensions with something like social media, whose notifications, pop-ups and design are aimed at keeping someone on a platform…[contributing] to a general feeling that one needs to be always on… participating… available. Someone who participates deeply in the attention economy is liable to be kept in a loop of anxiety, fear and shallow reaction. Ironically, this feeling drives them back toward the attention economy, creating an unhealthy spiral of attention that could be more meaningfully directed elsewhere.

What inspired you to rethink conventional wisdom about productivity, progress and the mentality that we must have a constant return on our investment—including how we spend our time and where we direct our attention? Right after the election, in late 2016, a warehouse fire in Oakland claimed the lives of many artists. I became aware of how difficult it was becoming to step away and process anything, not to mention mourn. I found that it was only by stepping away that I was able to ask questions about what it was I really wanted and how I could act meaningfully. Both social media and the cult of productivity are seductive, and when we’re caught up in them, we don’t question them. Understanding anything requires perspective and standing outside of it; productivity is no different. Temporarily ascending to a broader, removed view, you might find that you’re struggling in all the wrong ways, or in the wrong direction.

I think the first step is simply a movement of attention. Addictive as social media may be, it is not difficult for me to move my attention from that to what is happening in physical space. Sometimes this leads to meeting other people; I’ve had great conversations with strangers when we were both peering up at the same tree, looking at the same bird.

What do you hope people will take away from the message of your book?

I hope it creates a space in which someone might begin to look at the ways they currently direct their attention and how they might want to change that. I also hope it helps people find each other. OUR LIVES REVOLVE AROUND SOME VERY COOL TECHNOLOGIES, and most people couldn’t imagine life without them. From the internet to cell phones, computers, laptops, tablets, apps, games, smart TVs, Wi-Fi and other types of technology, technology is an essential part of our lives. The amount of time people spend using wireless technology has increased greatly for both adults and children in recent decades. Just about everybody has a cell phone today. More than 5 billion people use cell phones worldwide. There are serious concerns about whether they are safe to use because cell phones and wireless expose people to radiofrequency radiation (RFR). The tissues in our body can absorb that energy. Public health professionals have concerns about high use and long-term exposure. Scientists are saying there’s a myriad of serious adverse health effects that can be caused by RFR, including short-term and long-term effects. The International Agency for Research on Cancer, which is part of the World Health Organization, has classified RFR as “possibly carcinogenic to humans.” The Food and Drug Administration, the Federal Communications Commission, the Centers for Disease Control, and the National Cancer Institute are looking for conclusive evidence, but agree more research is necessary because the technology and how people use this technology is changing so rapidly. Finding conclusive research about the harmful effects of a given product is often difficult, as we’ve seen with tobacco, asbestos and lead. The information available to the public can range from very little to plentiful yet conflicting. 30

Many towns, cities, states, governments and countries are taking precautionary measures and are recommending RFR exposure reduction, especially for children. For instance, the California Health Department recommends the following tips on how you can reduce your RFR exposure from cell phones:

n Keep devices away from the body.

n Carry phones in a backpack, etc., not on the body.

n Avoid holding the phone to your head when making a phone call; use speakerphone or a headset or text instead.

n Put devices in airplane mode, which suspends RFR transmission by the device; this disables Bluetooth, GPS, phone calls and Wi-Fi.

n Take off Bluetooth devices (like AirPods) when not using them.

n Don’t sleep near cell phones (turn off or put in airplane mode).

n Don’t use if you are in a fast-moving car, bus or train.

n Keep use low if poor signal.

n Reduce the time you spend in places where a lot of people are packed together and using cell phones.

a role I’ve applied for is “too junior for someone with my experience.” Finding the chapter two career has been a frustrating series of starts and stops. ● And let’s not even discuss the hair situation. But enough of the whining. As Red Redding (aka Morgan Freeman) said in The Shawshank Redemption, we all have a choice: “Get busy living or get busy dying.” I selected the former, and after bemoaning this approaching birthday for all the above reasons

W

hen I was 10 years old in 1969 a lot of awesome things happened. The New York Mets won the World Series for the first time; Neil Armstrong and Buzz Aldrin landed on the moon; the Beatles released their masterpiece Abbey Road; more than half a million young people celebrated music, peace (and mud) on Yasgur’s Farm at Woodstock; Sesame Street premiered; and last but not least, my youngest brother, Kevin, was born! And while I am very thankful to have vivid recollections of being 10 in 1969, it reinforced something else: I just turned 60! I never had a problem with turning 50 or any other age, frankly. Probably because I was fully engaged in a demanding career, commuting four hours a day and helping raise a family. But 60 was a different story and a milestone I was not looking forward to. I think I can hear the clichés already: “Hey, it’s just a number; embrace it.” Baloney. I think many of us that have reached this life phase share some common experiences that are not exactly embraceable. For example:

for a few weeks (okay, months!), I decided to embrace turning 60 by metaphorically and literally leaping into this new decade of life by jumping out of an airplane from 13,000 feet above Long Island! Spoiler alert: Since you are reading this, all obviously turned out well. But let’s just say my wife was not pleased, which is why my 28-yearold son, Danny, and I didn’t tell her about it until we ran out the door on the morning of September 8 to drive to Skydive Long Island, in Shirley, for our 9 a.m. reservation. Trying skydiving is something I’ve flirted with occasionally. The first time was in my mid-20s when I was an unmarried, part-time editorial assistant at Newsday (i.e., I had nothing to lose!). I approached an editor with the idea of writing a first-person account, to which he replied, “I’ve been waiting a long time for someone stupid enough to try that.” But for reasons that now escape my memory (another 60th birthday gift!), I never followed through. The next time was when


I was turning 50, but the weather was bad that day. I had also made the mistake of telling my wife about it too far in advance. Sanity and her will prevailed, and I was frankly okay with that. My son had purchased this adventure for my pending birthday and had told me about it in the spring. I gave him strict instructions not to tell his mom, and conveniently compartmentalized any concerns I had about it until September approached. There was no conversation between us on our 30-minute drive from Westhampton to the skydiving facility on the morning of our jump, just the sound of the car radio. Our pensive moods finally broke as we turned into the tiny airport and suddenly heard the opening riffs of Van Halen’s version of You Really Got Me blasting from my Sirius station. We air-guitared as we parked. We were ready. My son checked us in, telling the woman at the desk it was my birthday, who replied, “And so you decided to throw him out a plane for it, eh? Great.” After checking in, we were first sent to a room full of iPads and fellow thrill seekers. The iPads were for us to sign the extensive legal waivers that would, in layman’s terms, essentially acknowledge that we were participating in an extremely dangerous, life-threatening activity and that if we die doing it, it’s all on us. And that’s when my worry wheels started turning. What if we did go splat? I wouldn’t feel it, but would my wife even be able to collect my life insurance? My son is only 28 and has an amazing life ahead of him. Yes, people do this safely every day, but is it worth the risk? After hesitantly signing the document, I sat next to my son in the waiting room. In front of us a monitor played a loop reel of a guy with a white beard down to his chest, who looked like he was auditioning for ZZ Top, telling us how incredibly dangerous skydiving is but to have a great time and be sure to smile for the camera! I asked Danny if he still wanted to go through with it. Without hesitation he said, “Let’s do this dad.” At that moment, the nitpick issues of growing older fell into an entirely new context for me in the face of jumping out of a plane. I thought to myself: “Yes, your body is getting older, but you are lucky enough to be alive and have the opportunity to exercise and live healthily.” “Yes, the first career has ended, but it was awesome. Be thankful for it, and you have the capacity to find your next path if you move forward without fear of failure.” “You have an amazing wife and life partner. Together you survived your challenges, have built a great life together over 33 years, and hopefully still have a long road ahead together filled with adventures.” “You accomplished your mission of supporting and educating your kids, and they are doing great and are actually out of the house!” In other words, appreciate your life and what you have. Stop sweating the relatively small stuff. And if you are going to jump, jump forward.

Minutes later, my son and I approached our idling red and white airplane with our instructors. My wife, two daughters and son-in-law had just arrived and were standing outside the airport fence and waved as we walked toward the plane. By the way, calling this thing an airplane is an insult to airplanes. Tiny. Loud. No seats. We were shoehorned inside and crouched inside our jump harnesses. I thought to myself, “Please don’t let me get a leg cramp now!” Seconds later, we were airborne and on our climb. Danny sat in front facing forward, and again there was no conversation. The only sound was the engine and our instructors occasionally videoing and checking in on us and asking for a thumbs up sign. Long Island quickly fell far below. My instructor, Raj, told me to turn around and back into his lap to connect our harnesses for our tandem, and joked, “Don’t worry, I’ll remember to hook you in.” Ha. The next minutes were an adrenalin-fueled blur. We reached our jump altitude, but since I faced the rear of the plane and my neck doesn’t work anymore, I had no idea what was happening with Danny. Then Raj asked me to slide to the door side. Danny’s instructor opened the hatch and then, silently, they were just gone. Raj instructed me to push backward with him toward the door and swing my legs outside, reminding me to bend my body like a banana when we jump. Okay, a 60-year-old banana! I got this. A push from Raj behind me into the rushing air and we were out and flying! Raj flipped us twice (he says!) and then tapped my shoulder; a signal to stretch my arms out wide. We free fell for 30 seconds, and I just instinctively started singing the chorus to Tom Petty’s Free Fallin’ at the top of my lungs. I have no idea if Raj heard me. It was exhilarating fun, and I never doubted our chute would open. When it did, Raj gave me a thumbs up and said a whole bunch of things as we gradually descended. I remember none of it, other than him pointing to Danny’s red parachute safely opened as he floated far below us. We made big, looping turns on the way down, and then softly came to a landing. There were high fives and hugs with Raj, Danny and my awaiting family. My wife was still not overly pleased with our little scheme but thankful we were fine. Skydiving was an amazing, life-affirming experience. My son and I keep texting each other saying, “I can’t believe we did that!” It was an incredible way to start my sixth decade of life. If you can jump out of a plane at 60, the sky is the limit. So, here’s to always jumping forward. For now, I will stick to doing it metaphorically, but you never know— check in with me when I turn 70! Slow Food Takes Root Global Movement on Fast Track by April Thompson

T

he global Slow Food movement is fast gaining momentum, uniting more than 100,000 people in 150 countries with a shared passion for delicious food and a moral conviction about the people and places that sustain it. It satisfies foodies’ hunger for a deeper appreciation and understanding of their meals’ origins, from farm to fork. “The key principles of Slow Food are good, clean and fair,” says Laura Luciano, a board member for Slow Food USA and Slow Food Governor for New York State. “It’s the opposite of fast food, where you are in and out with no idea where your food comes from or the stories behind it.” Fair, says Luciano, means fair to farmers, and paying a fair wage to workers picking and growing food. “Fair also incorporates principles of equity, inclusion and justice. Good means good for the climate, the Earth and us as individuals. Clean means not using GMOs and pesticides in the food,” she explains. Slow Food has its roots in Italy, where food and wine journalist Carlo Petrini took up the cause in 1986 to halt the homogenous fast food chains encroaching on the country’s

rich, diverse food culture. Slow Food USA has taken off since its founding in 2000 with 150 chapters boasting 6,000 members nationwide. Many convene annually at Slow Food Nations, a food festival for all in Denver, to swap stories, share strategies, celebrate victories and of course, break bread together. The backbone of the movement is its local chapters. “Food has a regional identity, connected to history, culture and family,” says Luciano, whose blog Out East Foodie shares the stories of her Long Island edibles. For Bob Quinn, an organic wheat farmer in Big Sandy, Montana, and the founder of the heirloom grain company Kamut International, the Slow Food movement has been a kind of welcome homecoming and acknowledgment of his company’s efforts to protect workers and nourish consumers. “To me, Slow Food is a return to the roots of agriculture and the soul of organic, because it focuses on the food—the end purpose of agriculture—rather than profits and yields that are the focus of the industrial food system,” says Quinn, author of Grain by Grain: A Quest to Revive Ancient Wheat, Rural Jobs, and Healthy Food. “Slow

food offers an appreciation for farmers’ efforts to improve the soil and the nutrition, flavor and aroma of the foods we grow.” The Slow Food movement also connects producers like Quinn with chefs like Steven Satterfield, author of Root to Leaf: A Southern Chef Cooks Through the Seasons and board vice president of Slow Food’s Atlanta chapter. “As a chef, Slow Food to me means honoring your ingredients and going out of your way to get the freshest, most sustainable, seasonal ingredients,” says Satterfield, who came to Slow Food early in his career as a young line cook interested in the provenance of food and protecting its cultural heritage. At Miller Union, Satterfield’s awardwinning Atlanta restaurant, all dishes are made from scratch, mainly from farms in the region, to support seasonal eating and local growing. Satterfield’s dishes also feature traditional Southern varieties from Slow Food’s Ark of Taste, a catalog of more than 200 culturally significant foods in danger of extinction. One Miller Union favorite is a hummus made from sea island red pea and benne seeds, an ancient variety of sesame originally brought by slaves from Africa to the South Carolina coast and cultivated in hidden gardens as a staple food. Beyond engaging diners, chefs and producers, Slow Food also campaigns for big-picture policy changes, like farmto-school programs to introduce fresh produce and get kids excited about healthy eating, says Luciano. “Eating is a political act. The choices we make speak volumes about what we stand for,” says Luciano. “We talk about joy and justice. There is the joy in food and the justice and stories behind it. Yields: 4 servings 1 cup chicken or vegetable stock 1 orange, quartered, seeds removed 1 lemon, quartered, seeds removed 2 Tbsp unsalted butter 4 star anise pods 12 black peppercorns 1 tsp kosher salt 4 small bok choy, halved and washed Simmer the stock in a large, wide skillet or shallow braising pan over medium heat. Squeeze the citrus into the pan, then drop in the peels. Add the butter, star anise, peppercorns and salt, and bring back to a simmer. Place the halved bok choy cut-side-down in the pan in a single layer.

Glazed Bok Choy with Citrus and Star Anise One of the qualities I love about bok choy is how easily the crisp rib absorbs the flavors of whatever it is cooked with. If it is not closely monitored, however, its tender leaves wilt quickly and the rib may turn mushy. I address this issue by quickly pulling the bok choy from the pan when it just begins to turn tender and succulent, allowing the sauce to reduce and intensify on its own. This recipe is perfect with a rice dish or with a delicate fish that could be poached in the cooking liquid for a full meal.

Continue to simmer over medium heat until the bok choy is tender, but still has texture and bright color, about 4 minutes. With a slotted spoon, remove the bok choy and set aside, but leave the citrus peels and spices in the pan. Continue to simmer until the broth is reduced by half or more. Taste the sauce for seasoning, then at the last minute, return the cooked bok choy to the glaze and reheat all the way through.

Mustard-Roasted Cauliflower Cauliflower and mustard are both members of the genus Brassica, so it’s not surprising that the seed of the mustard plant is compatible with its big-headed cousin. Try it for yourself in this incredibly simple vegetable roast, which makes a terrific side dish with fish or fowl and is also hard to stop eating straight out of the pan. If you come across the orange, green or purple cauliflower varieties, mix them together for a stunning presentation. Yields: 4 to 6 servings 2 Tbsp whole-grain mustard 1 small garlic clove, minced 1 tsp kosher salt ½ tsp freshly ground black pepper 2 Tbsp extra-virgin olive oil 1 medium head cauliflower, washed and trimmed into bite-size florets Heat the oven to 400° F. In a large mixing bowl, stir together the mustard, garlic, salt and pepper. Whisk in the olive oil. Toss the cauliflower in the mustard mixture to coat. Spread in a baking dish in a single layer and roast until it’s just tender and lightly browned on the edges, 20 to 25 minutes.

As if on cue, a 2-year-old black cat yowled persistently. During the adoption, Breunig learned that “Bubba” had been scheduled to be euthanized. He was saving a life. Fourteen years later, Bubba died, and Breunig knew he would miss the mischievous, playful companion that loved car rides more than most dogs. Crying, but surrounded by his second wife and kids, he realized, “I didn’t save Bubba’s life. He saved mine.”

Shelters share success stories of animals that get a “forever home”. Unfortunately, hundreds of thousands don’t and are euthanized. Best Friends Animal Society, in Kanab, Utah, is working to change this. By partnering with animal welfare organizations and shelters, Best Friends has a goal to “Save Them All” through an initiative to make all of the nation’s shelters “no-kill” by 2025—which means 90 percent of shelter animals might be saved. Euthanasia will be reserved for failed rehabilitation or when an animal has no chance of recovery from an illness or injury. In 1984, when Best Friends was founded, about 17 million animals died in U.S. shelters annually. As of August 2019, that number is down to 733,000, a nationwide save rate of 76.6 percent. Historically, no detailed data was kept on shelters. “For decades, we have worked in the dark to end shelter killing because we lacked accurate information about the problem we were trying to solve,” says Julie Castle, CEO of Best Friends. The organization recently launched the community lifesaving dashboard (BestFriends.org/2025-goal), a database that anyone can access to help save shelter pets. “With a better understanding of where the trouble spots are and the profile of animals being killed in a community, we can better deploy our collective resources for the greatest lifesaving impact.” Part of the success of the no-kill movement involves increased awareness that kindness toward all species is important. Bach points out that shelter animals are also the lower-cost option for people that want pets; most are vaccinated and neutered before they are adopted out and are often already trained.
