Good Chocolat Our secret ways to create fantastic chocolates are not-so-secret really‌ and there are only two.
1. No compromises on ingredients
Nasties are banned. Our mantra is Less Sugar More Cocoa™. Sugar is the cheapest ingredient and too much of it masks the true personality of cocoa.
2. Imagination and Flair
Chocolate is the perfect medium to express true creativity. We are driven by original thinking and our legal team is kept pretty busy stopping the big boys from copying us!

At our historic Rabot Estate on the lush island of St Lucia in the West Indies, we are close to the mystical cocoa tree, the origin of chocolatiness. This knowledge, denied to virtually all other chocolatiers, gives us a reverence for cocoa and a realisation that the complex flavour notes are formed long before the final stages of chocolate making.

We are still owned and run by the original founders, Angus Thirlwell and Peter Harris, who are committed to re-building the bridge between cocoa growing and fine chocolate as well as bringing British quality and innovation back into chocolate. This is the name we give to our “roll-up-the-sleeves and get-involved� ethical programme. Sustained investments of know-how, sweat and passion as well as dependable funding really does make a difference to cocoa communities in Ghana and St Lucia. www.hotelchocolat.co.uk/ethics St Lucia has real poverty in the agricultural sector. Our efforts to lead a renaissance of cocoa growing amongst our neighbours has created an estimated 100 new jobs in 12 months, with more to come. Cocoa communities need more than just our money to make projects endurable and self-sustaining. We send our top team to Ghana to transfer knowhow and give practical assistance.
