This column may also offend: • Single people hoping to get married so that they may register for all sorts of fun crap at Williams-Sonoma, • People with kids who received a lousy diaper genie at their baby shower, and • Single people with kids whose automobiles are worth less than a Bugaboo Cameleon-3 stroller. Warning Number Two: Readers should play the drinking game suggested in this column at their own risk. Dear BarTab Reader, In this column, I would like to raise a glass to all our single friends. Let’s toast to all the wonderful events and holidays that celebrate singlehood and childless lifestyles.

Oh, wait. There are none. Ok, well instead, let’s play a little game. Grab a bottle of liquor, a shot glass, a piece of paper and a pen. Find a comfortable place to sit and think about all the times in your life that you have helped a friend or family member celebrate a wedding, an anniversary, or the birth of a child. Now begin to write down each instance for which you purchased a gift for such an occasion and do a shot for each one. I’ll give you few minutes to finish……… Ok, I’m back. If you followed my instructions, and you are not socially inept, you will be super drunk as soon as all that alcohol hits your blood stream. The reason this game is getting you so inebriated is because you have spent your entire life celebrating other people’s relationships and other people’s children. Our culture applauds the traditions of marriage and family. We honor couples by giving them an entire day of the year, Valentine’s Day, to celebrate being lucky enough to have found love. We buy engagement gifts, and spend gobs of money on wedding presents. We send fine BarTabMag.com

dining gift certificates for anniversaries, flowers for Mother’s Day, ugly ties and golf accessories for Father’s day. We help new parents purchase the arsenal of baby gear required to care for a newborn. And yet, our single and child-free friends….What do they get? They get an onslaught of mail containing “Save the Date” cards, invitations with gift registries tucked inside, and marketing mailers from Zales and Jared Jewelers reminding them just how alone they are in mid-February. Society has excluded the Singles and NonProcreators from the “Rites of Passage Clearing House,” as if the path of marriage and family is the only path to domestic and social success. Well, I’m calling shenanigans on the whole process. It’s time to add single folks and child-free folks to the calendar. Now before all the hate emails flood in accusing me a being a bitter, cantankerous, old, single bitch who lives with too many cats, I should tell you, I am not single. Old, bitter, cantankerous, bitchy cat lady…..yes, yes, yes and yes, yet surprisingly, happily coupled for nearly eight years. I should also tell you that I am not “anti-gift.” In fact, I love giving gifts for birthdays, 20 BarTabMag.com

weddings, baby showers, promotions, anniversaries, new homes, you name it! Giving to others at landmark events in their lives is a joyous and awesome experience which everyone should get to experience. And in the spirit of giving, I believe the gift giving tradition should be extended to Singles and Non-Procreators. What I am proposing is a complete overhaul of the hierarchy of the rites of passage, socially expected norms of gift giving. For starters, Singles will get “Adult Freedom Day” on February 13th, (before all the good flowers and chocolates are taken,) and Non-Procreators will take June 1 (halfway between Mother’s Day and Father’s Day) which may or may not be called “I May Not Have Kids But I’m Still Relevant Day.” On Adult Freedom Day, Singles shower each other with gifts and cards bearing phrases like, “You’re so cool, all by yourself,” and “Don’t have to ask permission if you want to go out fishin’!” They also clog up all the restaurants and bars in town with their unabashed annual February 13th partying. Every June 1st all parents are expected to purchase a card and gift for each childless adult of significance in their life who is


over the age of twenty-five. Furthermore, all childless adults should be taken out to eat at a high end brunch. The best restaurants will give all non-parents a free glass of champagne and a corsage. In addition to these two new holidays, I’m proposing that Singles receive expensive presents from their coupled friends on their landmark birthdays from age 30 through 50, increasing exponentially in relation to their age. Starting on your 30th birthday, if you are single, your married friends should be expected to send you a birthday card with no less than $100 in cash. As an added yet unintentional side bonus, fewer people will marry too early as they will be holding out for the traditional 30th birthday “still single” cash. At age 35 you get to register for all the same traditional wedding accoutrements that your married friends felt entitled to put on their Macy’s, Pottery Barn and Crate and Barrel registries. Don’t hold back. You NEED a $99 electronic pepper mill and the $350 Belgian Linen napkin set. And no 35 year old should have to live without a stand up Kitchen Aid Mixer. On your 40th, you get to have a “Destination Birthday” at the vacation destination of your dreams. All your friends and family will be expected to drop everything, buy plane tickets, book hotel rooms and attend. If you want, you may select ugly resort wear in the birthday color

of your choosing and demand all your guests purchase and parade around in these matching outfits. You, however, should look stunning. It’s YOUR day! At 45 you get to register for a luxury watch. Rolex, Cartier, Tag Heuer,.… Whatever your 45 year old heart desires! Select your couture watch from the jeweler, then mail out the gift registry cards to all your loved ones. Your friends and family will be so grateful they get to come together to collectively buy you such a beautiful timepiece. When you turn 50, you get to choose a sports car. Many of your friends will be divorced by your 50th birthday, so don’t expect them to contribute towards your registry at the dealership. As a nice gesture, for all the gifts they previously purchased over the years (while married) for your single ass, you should offer them a ride in your new car. It’s the least you can do. Perhaps all this mandatory luxurious gift giving seems odious and excessive. Even I think so and I am the one suggesting such ridiculousness. But I do believe our culture needs to even the score. Our worth should not be measured solely by the children we bear and the individuals we marry. The lives of Singles and Non-Procreators are also significant and full of landmarks. Jägerbomb Jello Shots

Ingredients • 1/2 cup Jägermeister • 1 cup cherry limeade • 1 envelope of plain gelatin + 2 envelopes of plain gelatin [divided use] • 2 cups beer Directions Lightly spray mold with bake spray then gently wipe it down with a paper towel [a little non-stick spray goes a long way when it comes to jello shots]. 1. Stir and combine Jägermeister and cherry limeade. Pour half of mixture into a small saucepan and sprinkle 1 envelope of gelatin on top. Set aside for 1- 2 minutes for gelatin to bloom. Place pan over low heat stirring 24

constantly until gelatin has dissolved (mixture will resemble syrup consistency), about 3-5 minutes. Stir in remaining 3/4 cup of mixture until combined. Pour into mold and chill for at least 30 minutes or until slightly set. In the meantime, open beer and pour into a shallow bowl to flatten some of the carbonation while the J채germeister portion chills. 2. Pour half of 1 cup of beer into a small saucepan and sprinkle 2 envelopes of gelatin on top. Set aside for 1- 2 minutes for gelatin to bloom. Place pan over low heat stirring constantly until gelatin has dissolved (mixture will resemble syrup consistency), about 3-5 minutes. Stir in remaining cup of beer until combined. Pour beer mixture over J채germeister layer and chill for at least 3 hours or until set. 3. To remove jelly shots, firmly press finger in the center until jelly shot pulls away from the side walls of mold. Then use an offset icing spatula, gently guide jelly shot out of mold. 26

I’ve been in Key West, probably 8 or 9 years already. BT: How long have you worked at Willie T’s? V: Approximately 6 or 7 years. BT: What other jobs have you had in Key West? V: I’ve been all over. Painting, busing, serving. BT: How many flavored mojitos did Willie T’s have when you started? V: Around 40. Not much more now. BT: What’s your favorite part about bartending? V: Everything. I love it. I just love it. Meeting people, fucking love it. BT: What do you do when you’re not working? V: Going to the gym. Working on my house. Having good times. BT: Do people ever staple bills larger than a dollar to the wall? V: Oh, I had one guy who put almost thousand dollar in $100 bills on the wall. He put “Fred is an asshole”, “Bob suck my d---.” That kind of stuff.

BT: How long did those $100 stay on the wall? V: It stayed for a long time. We took it down & we donated it to charity. BT: What’s one thing that tourists should not do when they come to Key West? V: Don’t get that wasted and that stupid. BT: What’s the longest drinking streak you’ve ever had? V: When I went back home after 5 years, I was drunk 25 days out of 30. It probably was my longest marathon. BT: What should you order to drink / eat when you come to visit Willie T’s? V: Drink, for sure, mojitos. Because they’re best on the island. You can start from classic and go all the way down. We have more than 40 flavors. They’re all the best. Honestly, they’re all the best. And food-wise, I like filet. BT: Full name, age and originally from? I: My full name is Ira Granite. I’m 58 years old. And I am from Brooklyn, New York. BT: How long have you been doing the chef thing? I: I’ve been a cook for 36 years. I’ve been a chef for about 25 of those years. I wasn’t ready to call myself a chef until I felt I was, I had the ability to be a chef, and to stand by the name chef. BT: How did you get introduced to the restaurant biz? I: I was born in the business. When I was 8 years old, my father opened up a bakery in Brooklyn. At a very young age, I was brought into the bakery to be taught a trade, because I told my dad I wanted to be in the food service business. It’s not what they wanted for me, but I took to it like a fish to water. The joke around the family is that it was born out of a flower sack. Because my mom went into labor in the bakery and she fell back on a flower sack. And I was born 12 hours later. [laughs] BT: Do you not make home-made bread at Sunset Tiki? I: I do make breads here. I do make cakes. I make everything fresh. I make muffins every morning. Scones sporadically, depending on what kind of mood I’m in that day. Croissants. I have fresh muffins out ready to go, to be sold to the public, and fresh breads.

BT: What’s your favorite culinary style? I: South African and French, which turns into Creole. Is my favorite food to cook. My favorite food to eat is probably northern Italian. BT: What does your passion for food come from? I: It’s in my blood. Passion comes from within. It’s not something you can teach. Not something you can just all of a sudden wake up and have passion one day. It’s literally in my blood. And my favorite thing in the world is to give someone a meal and watch them smile and just give me the thumbs up. That’s my biggest satisfaction. That’s a high, to me. BT: When is the new menu rolling that out? I: I’ve submitted it and been approved. It’s just a matter of it being laid out. Eric Lindell’s music career began in New Orleans in the mid ‘90s. His style borrows from ‘70s blues-rock, soul, & R&B. His shows pack The Green Parrot - his last visit playing 9 shows in 5 days.

BT: Full name, age & zodiac sign? My full name is Eric Albert Lindell. Age 45. Scorpio. BT: Where are you originally from? E: I was born in San Mateo. Grew up in Northern California & lived in Louisiana, the Gulf Coast, since about 2000. BT: How old were you when you first picked up a guitar? E: I think I was about 10, probably. BT: Was it just laying around the house? E: No. A friend bought it for me & I just played it for a little bit & that was it. Got back to it maybe, I reckon, around 15 years old & started playing it again. BT: Did you ever take lessons or are you self-taught? E: I took a bass lesson, one time. But yeah, just still trying to get my head around it. You know. [laughs] BT: Do you remember your first paying gig? E: Let me think... I do kind of briefly remember playing at a club one time & making like $700 & thinking, ‘Oh man, this is amazing.’ 34 BarTabMag.com

BT: What was your first job ever? E: My first job ever? I had a few of ‘em. I had a few good ones. I was a baker for a minute. I worked at a rib place. Barbecue ribs. I made eyeglass lenses for a minute. Man, I’ve done it all, really. BT: Do you have a most memorable stage moment? E: One time, John Fogerty came & sat in with me. & that was pretty bad ass. [laughs] It was at Tipitina’s in New Orleans. He came up & played three songs with us, & he was the nicest guy. & it was so cool. Yeah. BT: What do you like most about coming to Key West? E: I really love John, [co-owner, The Green Parrot], & just his whole vibe. The fact that I’ve just been dealing with him for so long, & it’s just always such a nice scene here. You know. & to set up & just be here for a few days & play. I love the sound check matinee gig that he does. Just love it. I’m thinking about retiring down here. continued on pg 36

BT: Which of your albums are you most proud of? E: I think both Gulf Coast Highway was a really nice record. & then, I don’t know. It’s hard to say. It’s like little bits & pieces that you like from each one. BT: How long does it typically take you to get an album together? E: Usually like about a week or so. BT: Recording the whole thing? E: Usually, yeah. About a week. BT: How often does the inspiration to write a new song come to you? E: It’s kind of daily. Ongoing. You just gotta get in there & just, you know. [laughs] Just crank ‘em out. BT: What would happen if you covered ‘Back in Black’ by AC/DC? E: I would love that rendition. Seriously. I mean, you know what’d even be better? What if James Brown could’ve covered it? He could’ve killed it. BT: If you could play with anyone – living or dead – who would it be? E: Oh man. Maybe Curtis Mayfield. Junior Wells. I don’t know, so many. So many greats.

BT: Who are you listening to these days? E: I guess a lot of The Impressions, still. You know who I like recently, that we got into, is Lee Fields. Love him. He’s awesome. Great soul singer. Yeah. Check him out. BT: What are you doing when you’re not strumming the guitar? E: Mostly just romancing with my wife. [laughs] Just staying busy. BT: Any other shout outs, shameless plugs? E: You know, we just made a little thing with Steve Berlin. He’s a great producer. He’s also sax player from Los Lobos. He just produced two tracks. So we’re getting ready to put that out. & then I’m working on a new record right now that’s coming out. They’re both going to come out around the Jazz Fest time, end of April, first week of May.
